Eat, Drink and Be Weird! Las Vegas is truly a city where you can literally do a bit of everything. Whatever you’re a fan of, you’ll find a place to indulge in it here. This week’s issue is the ultimate representation of that, so let’s get started. We’ve got a lot of ground to cover! Obviously, a lot of you will be planning to enjoy a great meal during your stay here. Have we got some treats for you! In addition to our celebration of National Steak Month with a collection of some of the best steakhouses (and individual cuts) in town (“(Medium) Rare Finds,” p. 38), we’re going to really stoke your tastebuds with walk-throughs of some of the Strip’s finest restaurants, from International Smoke at MGM Grand (“A Well of Flavors,” p. 20) to Michael Mina at Bellagio (“Dazzling Presentation,” p. 10). And with all that food, you’ll surely need something in the cocktail department to wash it down. Again, watch out. This issue has not only a great collection of tequila-based drinks across the city (“Smooth Operator,” p. 42) but also the announcement of the return of Mayfair After Dark at Bellagio, a great evening of theater, dining and amazing drinks (“The Party Isn’t Over,” p. 18). Are you a fan of the truly weird? Make sure to keep this magazine with you at all times. In addition to an all-inclusive

Dazzling Presentation Taste and presentation are put into every plate that comes from the kitchen of Michael Mina. The James Beard Award-winning chef’s eponymous restaurant is a practice in modern cooking techniques combined with global influences, all concentrated on fresh seafood and the cuisines of Japan, the Mediterranean and France. Tableside preparations and grand entrances of signature dishes like Mina’s famed lobster pot pie are de rigueur here. But a must-try is fan favorite caviar parfait (pictured)—or start with the bright-pink, melt-in-your-mouth ahi tuna tartare served with a habanero-infused sesame oil. Class Meets History There aren’t many living Vegas icons more popular than former mayor, and former mob attorney, Oscar Goodman. And that popularity is honored perfectly with Oscar’s Steakhouse, a classy restaurant in the heart of Downtown Las Vegas. First, you’ll want to be like Oscar by ordering the Hizzoner, a hot (but it’s a dry heat) martini made to Oscar’s liking—a mix of Bombay Sapphire gin, more Bombay Sapphire gin and a slice of jalapeño. If you polish it off before dinner arrives, you might not need another drink the rest of the evening. Then dig into the dinner menu. Perfect starters include No Nose’s Mob Meatballs and Johnny Quinn’s crab cake. But if the jury’s out, you can’t go wrong with the shellfish platter with oysters, Maine lobster and king crab, with a shrimp cocktail. For an entrée, opt for the steak. Downtown hot spot’s pool offers endless delights There are many spots in Las Vegas that deserve major kudos. However, there are only a few that have earned “epic” status—and one of those is Stadium Swim. It’s a truly jaw-dropping experience to lay eyes on the 4,000-person-capacity, multilevel pool complex, open 365 days per year. It’s doubtful guests have seen a paradise like this anywhere else in the world, let alone in Vegas. Stadium Swim offers six pools on three different levels; each pool gives guests the option of sunbathing on one of more than 300 chaise lounges or nearly 40 daybeds. For an extra-special VIP experience, book one of 30 posh cabanas. Want to enjoy a cocktail in the water? No problem! There are two swim-up bars. And those

cocktails? There are plenty. Go for a pitcher full of one of the mojito flavors like strawberry, tropical, coconut, banana, or pineapple. Or cool down with signature frozen concoctions like Strawberry Fields Forever with Cruzan strawberry rum, sugar, and lime. The pool club also offers more than a dozen specialty cocktails like the Kentucky Tea with Old Forester bourbon, white peach syrup, black tea and lemon. It really is an inventive and delicious menu. Beer buckets, wine, sangria and bottle service are available, too. And sustenance is not an afterthought here. The menu packs a punch with lobster corn dogs, Impossible burger sliders, nachos, tacos, salads, breakfast burritos, vegetable crudites, meat and cheese boards and more.

Race to the Finish For fans of video games, it really doesn’t get better than HyperX Esports Arena Las Vegas, a venue that welcomes gamers of all ages for all sorts of video game action, and recently the arena celebrated its 100th Saturday Night Speedway tournament, in which gamers go head-to-head at Mario Kart. If you’ve never competed in or witnessed this event, it’s truly a world-class production, with 30 multi-use cameras getting all the action, including robotic, pole-cam, handhelds and POV; four studio control rooms with 30-plus production stations; and commercial audio, video and lighting. Each tournament includes a prize pool and is broadcast live on YouTube and narrated by live casters. In addition to honoring the winner at the event, HyperX Esports Arena celebrated the past 99 SNS winners by bringing them onstage. But There’s a Twist With all the twists and turns we’ve experienced last year, is there not a more perfect metaphor for 2020 than a roller coaster? Ironically, if you’re looking for a way to take your mind off that travesty, a roller coaster might be your best bet, and there’s no better place for such thrills than the Big Apple Coaster. Chill in the Pub The spirit of Ireland is certainly alive in Vegas— there are quite a few Irish pubs here, but if you want one right on the Vegas Strip, Rí Rá is the place to go. You’ll find traditional drinks like Guinness, Murphy’s and Smithwick’s, but also craft beers from local Nevada breweries. And the food definitely channels those flavors from across the ocean, with fish and chips, chicken curried and corned beef hash all holding places of pride. Mirage attraction is a great learning experience Lions and tigers and … dolphins? In Las Vegas? Oh, my, it’s true. At Siegfried & Roy’s Secret Garden and Dolphin Habitat (which is part of Las Vegas Magazine’s 2021 Hall of Fame class), you’ll be immersed in a lush oasis filled with exotic animals such as white tigers, white lions and dolphins, including the adorable Lady Ace, the most recent addition to the dolphin clan. Since its opening in 1990, this enchanting habitat has not only served as a sanctuary for some very big cats (some of whom once performed in the Siegfried & Roy magic show) and sea creatures, but it also focuses on scientific research, education and conservation outreach. With the Secret Garden’s guided educational programs, it’s the perfect place for parents to

take their curious, animal-loving kids to learn about these beautiful animals and their habitats. You might learn a thing or two also. Once entering the Secret Garden, you’ll feel like you’ve been transported to some distant jungle or African veldt, replete with abundant grassland, greenery, trees and waterfalls. Within the habitat, you’ll find lions, tigers and leopards lounging, playing and grazing in the grass. Perhaps you’ll even see a tiger dip their paw into the waterfall. Throughout the exhibit you’ll also find plaques with fun facts and interesting information; for instance, did you know that the frosty coats of white tigers and white lions is due to a condition called leucism, which means they lack dark pigmentation? So, be careful not
to call them albinos! Majestic as these animals may be, they’re pretty lazy, and there’s not a lot of action happening. Yet, once you move into the Dolphin Habitat, you’ll see those incredible aquatic creatures swim, jump and splash around in their pools. If you’re lucky, you might catch the trainers working with the dolphins, and you’ll witness the tricks and aerial feats they’re capable of. Rumor has it these dolphins are so skilled that you’ll never see them do the same trick twice. Knight Moves The vibes when you get Vegas Golden Knights fans together is simply electric, so, light up the evening by checking out Red Rock Resort’s newest pop-up lounge experience, Crimson at Knight. Set up for both Golden Knights biggest hockey fans and party people, the space is an homage to the Battle Born team. Activations and photo opportunities abound, like snagging a pic with a life-size Marc-Andre Fleury decked out in all his goalie gear. Guests can kick it outdoors, too, where cabanas provide lounging comfort for larger groups, or sit back and relax on furniture spread throughout the space dotted with large flat-screen TVs making any spot the perfect spot for watching the game. Celebrated nightlife experience returns to Bellagio A night of pure, unadulterated revelry is surely in order. (Insert 2020 here!) “After sitting at home for over one year, we all need the most positive sounds and beats that make us want to get up and dance again,” said Kim Willecke, co-owner of No Ceilings Entertainment. Enter Mayfair After Dark, a revival of the hot spot nightlife experience at Mayfair Supper Club. Fans of fun and flair, food and cocktails, and dance and live music need to get themselves over to this weekly party that begins at 11 p.m. every Friday and Saturday and runs into the wee hours. “Mayfair After Dark is a unique nightlife experience inspired by the first nightlife venues in the 1920s in New York City, Paris and Berlin,” Willecke said. “It combines not only a classy, seated, late-night, cocktail-and-dining experi-

Candice Vergis
Painting a beautiful picture If you ask Candice Vergis, gallery director of Park West Gallery at The Forum Shops at Caesars, she’d say that life has been quite serendipitous. After studying vocal performance, specifically opera, at college in her home state of Kansas, and performing professionally for five years, in 2012 Vergis ended up in New York City auditioning for a performance spot on Holland America’s cruise ships. She spent seven years sailing the world. “That’s when I met Michael, my husband; he was the art director of Park West on the ship,” Vergis says. (Park West is huge in the cruise ship industry, auctioning many art pieces onboard.) “I’d been making friends with and helping the gallery for many years at that point,” Vergis says. “So, I left entertainment and went over to Park West. They gave me a shot.” That was more than four years ago, and since then Vergis and her husband helped launch Park West’s first flagship Las Vegas location at the end of last year.
“What’s funny is we got married, eloped to Vegas in 2017; and we stayed at Caesars Palace, had our wedding dinner at a restaurant in The Shops,” Vergis says. “And here we are—it’s really serendipitous how it happened.” As the gallery director, Vergis makes sure everything is tip-top. “I take care of the sales, take care of the team. (All) the little details, from open to close. I treat this as this is my own personal business.” Looking back on how her career path changed, Vergis says she’s definitely developed a passion for art and for Park West in particular. “I just kind of fell into this; it’s not something that I really set out to do. I knew in my heart, when I was a performer, I wouldn’t do it for the rest of my life. Little did I know that the fateful moment when I auditioned and got this job out of New York on cruise ships would change my life. Hofbräuhaus Las Vegas (702.853.2337) reopened on June 1, bringing back its classic Bavarian beers, live entertainment, world-class hospitality and all the potato pancakes, jumbo pretzels, schnitzel and savory sausages you can handle. No matter where you’re from, Hofbräuhaus is a must-have experience in Las Vegas and is always worth the trip. When it comes to hearty, family-friendly fare in the neighborhood, there’s one longtime local favorite that has expanded to serve both sides of the valley. Amore Taste of Chicago (702.463.9163) specializes in deep-dish and thin-crust pizza, Italian beef sandwiches, barbecue ribs and other Windy City delicacies. Its original location on Durango Road in the southwest part of town is wrapping up a bigtime renovation, but its newly opened Henderson restaurant on Sunset Road is serving up all the good stuff, from sausage and peppers to sweet cannoli, in a spacious and comfortable dining room fit for a feast. On the Strip, there’s plenty of buzz for a new brunch at Catch (877.230.2742), the glamorous sushi and steak spot at Aria. Offered on Saturday and Sunday starting at 10 a.m., the innovative brunch menu includes everything from Catch favorites like truffle sashimi and the tuna tartare trio to indulgent cinnamon roll pancakes and a waffle tower with ice cream and chocolate ganache. And an entirely new brunch cocktail menu has flavors to satisfy all. Another Strip spot for resplendent daytime dining is just off the famed Bellagio Conservatory. Sadelle’s Cafe (702.693.7075) is renowned for its bagels, eggs and other breakfast and brunch dishes, but don’t ignore the rest of the menu. the story for you. While Las Vegas is jam-packed with all types of experiences, there are a few in this city that cater specifically to fans of the weird and bizarre. These are guaranteed to hold interest and spark curiosity.

How about a grocery store that is a front for a nefarious company? And with every turn, path, door opening and crawl space, you fall deeper and deeper into the rabbit hole? Omega Mart, the 52,000-square-foot interactive art experience at Area15, is the latest testament to all things creative, wonderful and weird from artist collective Meow Wolf. If you want to fall deeper into a more macabre-type situation, there are a few awesome spots you’ll want to stop at. Fans of Ghost Adventures will get more than spooked when visiting Zak Bagans’ Haunted Museum, owned and operated by that show’s host. The attraction—in what used to be an old estate owned by one of the city’s most-prominent families—is a dark labyrinth of some of the creepiest and strangest pieces collected by Bagans, such as the Dyb-

buk Box, Michael Jackson’s propofol chair and Dr. Jack Kevorkian’s death van. Speaking of macabre and strange, Bodies ... The Exhibition at Luxor is also filled with teachable moments about the human form. Thirteen human bodies have been preserved and put on display, as well as hundreds of organs and partial body specimens. And who can forget the effects of an atomic bomb? The fatal images are soul-shaking, but you can learn all about America’s nuclear weapons testing program at the National Atomic Testing Museum. Also learn about the Nevada Test Site, where non nuclear activity such as above-ground bomb testing happened just miles from the Las Vegas Strip. When it comes to dining, strange might not be the best word to associate with food, but it works in two situations. At Blackout Dining in the Dark, it’s pitch black, and only your server can help guide you—we say it’s definitely got to be strange not seeing what you’re eating! And while you don’t necessarily have to dine here, you can get married inside the Denny’s on the Fremont Street Experience. Yup,

unusually, there’s an actual chapel inside the diner, and couples can score two original Grand Slam meals included in the wedding price. Talk about starting married life off right! While many fascinating, fantastic shows are in Vegas, the weirdest show has to be Puppetry of the Penis at the Erotic Heritage Museum. Two grown, naked men take the stage and proceed to mold their members into incredible positions, one position even mimicking a sailboat—think about that. Now, if you’re lucky enough to score a peek or tour inside The Underground House, you won’t regret it, because this might be one of the city’s most unusual and simply fascinating spots (you can take a virtual tour online). Yes, right off the Strip, there’s a nondescript house, and 26 feet below it lies 15,000 square feet filled with a Cold War-era, two-bedroom, three-bathroom home with artificial greenery, pool, hot tub, putting green, barbecue and so much more. The house was built in the 1970s by philanthropist Jerry Henderson, a pioneer in underground living. Stay weird!

says Fisher. “There is a backstory—we offer ways to discover it,” he says. “For those that look, there’s a way to discover Haley’s story. Haley is part of the backstory. There’s ways to delve into that story if you want to seek it out. There’s mythical, mystic particles that help enlighten people, and I’ll leave it at that.”

Step inside an immersive light and sound experience called Museum Fiasco on the mezzanine level. Created by Corner Bar Management founder Ryan Doherty, this 5,000-squarefoot reimagined museum hosts various exhibitions like the current Cluster, an installation by Playmodes Studio that transports guests into an audio-visual voyage through technology and wonder. The completely immersive, 360-degree world will trick your visual and auditory senses and have you wondering which way is up and which is down. The installation marries different technologies to create astonishing effects while evoking emotion.
The first experience you’ll come across at Area15, before you even enter the building, happens the minute you step out of your car and take a look at Art Island. The outdoor gallery houses a number of large-scale, festival-style artworks. (And each piece is actually for sale and starts in the six figures). The artworks include a 14-foot-tall mirrored polished steel piece of an embracing couple called In Every Lifetime I Will Find You by Michael Benisty; a reimagined shipping container called Infinity Ship (No.1) Perception by Matt Elson; a half-buried massive robot called Mechan 9 by Tyler Fuqua Creations; a neon-lit, large-scale wise owl named Omah by
Alchemy Arts; Pulse Portal, a 20-foot archway by David McCarty made up of dichroic filters that shine iridescent light; a 15-foot tall, fire-breathing dragon named El Scorcho by Ivan McLean; and a re-imagined Welcome to Fabulous Las Vegas sign made up of metalwork called Long Live Las Vegas by Tomas Toulec.

Haley’s Comet is a dual-track, zipline-type ride where two guests glide through the air at almost 10 mph around the district and can even race one another back to the starting point. The thrill-seeking suspension ride has also been described as hang gliding meets free-falling.
For dessert lovers, this ice cream shops offers unique flavors like salted caramel chocolate pretzel, toasted s’mores and black raspberry chip. There are even vegan options like mint chocolate and coffee fudge. And you can get your scoops inside a variety of visually tempting, cereal-dipped cones!
On the first floor you’ll find the airy dome of tranquility and peace called The Sanctuary. Impressionist Gordie Brown returns to downtown stage Musician, comedian, singer and impressionist Gordie Brown has been a Vegas fixture for more than 15 years, entertaining audiences from a variety of different venues on and off the Strip. But the majority of his tenure here—about 10 years’ worth of performances, he says—has been at the Golden Nugget in downtown in the classic showroom he is proud to once again call home. Lasting Impressions is his newest production, and after being forced to take a break by a sudden, scary bout with a pulmonary embolism, Brown recently returned to the stage. You opened a new show at the Golden Nugget in March then had a bit of a health scare. How are you feeling now? Much b etter; every day I’m feeling better and stronger. I’m just so excited to be back doing what I do and I feel I’m where I need to be. It must have been reassuring when your first Vegas gig coming out of the pandemic was back at the Nugget. It was kind of surreal stepping back into that place. The showroom is wider and bigger than I remember. But I look at the dressing room

and I’ll always think about meeting Paul Anka, who has been a mentor and inspiration. I ended up meeting him years ago after bluffing my way backstage, and that was sort of the start of a friendship. But that was the dressing room where it all happened and I’ll never forget that, being this young kid with big dreams, and now being back in that room where I met my mentor. You’ve played at quite a few different Vegas venues. Is it all the same to you onstage or do you notice major differences? My fan base is super supportive, but I feel like the showroom makes a difference as well, not just in what you’re doing onstage or the presentation, but in the energy you can feel from the room. Certain rooms are incredible at capturing that energy. There’s just something about it. At the Nugget, I love that room and it has the right energy. You are known for so many different, precise impersonations. What’s the process and time frame like when you’re working on perfecting a new impression? When you take the time to work on your skills, it always gets a little

sharper. I spent time (during the shutdown) working on some of the voices I was doing and looking at little things I can do to really nail the impression more, but I put a lot of focus on comedy writing and developing those skills. You probably have more material than ever to create different parts in the show. Is it tough to make decisions about which impressions and music to include? I think I’m at the point now where I definitely like to find new ways of modernizing the show. I did a joke about Post Malone recently. I saw some kids in their early 20s in the audience, in the front row, and I said, “I was going to do a Post Malone impression but I didn’t bring my Sharpie.” And that’s a joke about his tattoos. And they got it, but there are older people in the audience who don’t know what I’m talking about. So I’ll make fun of that moment, start talking from the other perspective, like “I don’t know what that the hell that meant.” It’s really just coming up with new ways to make things better. The blooming of tequila and mezcal extends to Las Vegas
Although Mexico produces a number of distilled agave products, the two it is known best for are mezcal and tequila. Both spirits are made from the agave plant, with tequila distilled solely from the blue agave plant in Tequila in the state of Jalisco (and a few other very limited areas) and mezcal from more than 30 agave varieties in nine Mexican states, primarily Oaxaca. Both harvest and use the heart of the plant (the piña), roasting it to get it ready to ferment, and it’s been done that way for hundreds of years. After it ferments with yeast and a few other ingredients, the spirit is distilled at least twice (by law), then bottled or aged. Many of the distilleries are small, although many are also owned by larger companies. Both tequila and mezcal are regulated by the Mexican government and the industry itself, with

the term “tequila” being claimed as intellectual property by the Mexican government in 1974. Mezcal, similarly, is governed by laws that certify the origin of the product. Tequila has a strong, pure taste, but the flavor can vary depending on where the blue agave is harvested, and how long and in what the tequila is aged. The three types are blanco (silver), reposado and añejo. Both añejo and reposado are aged, often in oak barrels sourced from U.S. and French spirit makers. That aging imparts a range of notes, from floral to woody or herbal. Mezcal also has a strong taste, and the flavor varies by type of agave used, the region grown and the roasting of the piña. Mezcal can also have a variety of flavoring agents added, although many do not. One of the most appreciated aspects of mezcal has to be the smokiness of

the spirit, imparted through the roasting process. In the last few years, both have made huge leaps in popularity worldwide, due both to the increased availability of the products (there are hundreds of brands of tequila and mezcal now available in the U.S.), and to the tireless efforts of its proponents. Well-known tequila brands such as Sauza and Herradura have been around more than 150 years, while Patrón was formed in 1989. Years later, George Clooney cofounded Casamigos, which became prized in the U.S. and eventually branched out into mezcal. In L.A., restaurateur Bricia Lopez is known for her passion for Oaxaca and its

culture. She owns Oaxacan in L.A. and helped popularize the mezcal in the last few years. In 2019, she came on board in Vegas to curate Mama Rabbit at Park MGM, which opened with one of the widest collections of tequila and mezcal in the country. A premium tequila brand in the market, Casa Dragones, was co-founded by CEO Bertha González Nieves, the first female master tequilera. Casa Dragones has only arrived in Vegas in the last few years, and it appears in many bars’ tequila lists. One of the most popular ways in Mexico to indulge in tequila is neat, and many people in the U.S. learned to drink it that way also, albeit with salt and lime standing by.

PT’s Margarita
Both añejo and reposado are aged in oak barrels from U.S. and French spirit makers. It imparts a range of notes, from floral to woody or herbal.
But Nieves advocates treating it as a sipping alcohol, much like a fine whiskey, that you might enjoy over the course of an evening. Last summer, Casa Dragones introduced its first añejo tequila, the Casa Dragones Barrel Blend, which is excellent as a sipping tequila. It is made from blue agave, aged in both French and American barrels and blended after aging. You can find it at locals favorite Más Por Favor Taqueria y Tequila. Of course, in Vegas pretty much every bar that serves cocktails has tequila-inspired drinks, from margaritas to the tequila sunrise of lyrical fame. But as the popularity of mezcal and tequila continue their meteoric rise, so have the number of drinks that use the spirits. Here are some of the places to try them out:
Ruby Heart
AREA15 At the Emporium Arcade in the immersive, art-based, interactive experience known as Area15, try the Ruby Heart, an unusual tequila-based draft cocktail that made its appearance on the spring cocktail menu. It combines Cazadores blanco, Domaine de Canton Ginger liqueur, blackberry and lemon. PARK MGM Bring the friends for a night at Mama Rabbit and get a pitcher of the Valley Mule, with blanco tequila ginger, mint, lime and soda. The Color of Fun When Blue Man Group (Luxor, 702.262.4400) first came to Las Vegas in 2000, it was as a quirky performance-art troupe that seemed like a risky proposition for the glamour of the Strip. But 21 years later, BMG has become a Vegas institution, with its identity firmly tied to the Strip even as productions continue and are launched in

other cities. With Cirque du Soleil’s purchase of BMG in 2017, the show has become part of one of Vegas’ largest entertainment entities. At heart, though, it’s still the same scrappy, offbeat show conceived by friends Chris Wink, Matt Goldman and Phil Stanton in 1987, with silent performers in simple black outfits and faces and hands painted blue. Specific ele-
ments have changed and evolved over time, but the Blue Men always recruit audience members for onstage participation, and they use basic elements like paint, marshmallows and PVC pipes for their absurdist set pieces. It’s a unique production with broad appeal, so there’s really no surprise that it’s found success in Vegas. –Josh Bell
