From the Editor 100% Fun
By the time you read this, the city of Las Vegas will likely have reopened 100%. What does that mean for you? It really depends on what you plan on doing during your stay. There are many moving parts to the process of ramping the city back up to full capacity, and there are bound to be some growing pains along the way. For example, you may potentially have longer waits for things you used to take for granted—checking into your hotel room, getting a table at your favorite restaurant, or being able to snag tickets to your favorite show. But rest assured: Your enjoyment of Las Vegas and all it has to offer is about to grow exponentially. For example, live music performances are returning in the coming weeks and months, including residencies like Carlos Santana at Mandalay Bay’s House of Blues; buffets are reopening, including the popular Bacchanal Buffet at Caesars Palace; and more shows are coming back, including Cirque du Soleil’s “O” at Bellagio and Mystère at Treasure Island. So where do you start? Well, that’s where we come in. This week’s issue assembles a bit of something for everyone. If you’re planning on seeing a show while you’re here, head straight to our collection of shows guaranteed to provide some laughs, something that’s in tragically short supply these day (“Take Your Medicine,” p.
20). A Fresh Take Before they go away, you need to try some of Gordon Ramsay Steak’s spring menu delights. The restaurant recently introduced a variety of dishes ranging from sides to entrées, including seared Hudson Valley foie gras, which comes with pain perdu (essentially, a type of French toast), smoked almond granola, strawberry-white balsamic marmalade and rhubarb reduction. Pan-seared salmon is served with morel cream and fire-roasted artichokes, while Colorado rack of lamb is a satisfying morsel with manchego polenta cakes, trumpet mushrooms and mint-pea purée. And charred asparagus and artichokes is created with an unusual pumpernickel and Meyer lemon emulsion. But if you prefer one of the classic dishes on the menu, like the signature beef Wellington, it’s here for you. And steak comes in several forms, from a triple-seared Japanese A-5 (sold per ounce) to several sizes of American wagyu and Prime beef, in smaller filets and monstrous tomahawk cuts. And although Ramsay’s popular bread pudding is available, try the strawberry Scottish shortbread for a change of pace.–Nina King

Luxor attraction takes a deep dive into our anatomy You can view it as a learning experience. You can view it as entertainment. Either way you choose to view Bodies … The Exhibition at Luxor, you’ll walk away from the attraction with a better understanding and appreciation for that body that actually just carried you through said exhibit. Bodies is human anatomy come to life in a unique, curious and teachable way. Put through a method known as polymer preservation, 13 real, whole-body specimens and more than 250 actual organs and body parts are on display (as well as skeletal structures). The self-guided, walkthrough experience is also chock-full of facts you can read throughout the exhibit. Every drop of blood in the body passes through the heart

once per minute. The tongue is made up of 16 individual muscles. The kidneys filter impurities from the blood at a rate of 15 gallons per hour. See what a lung looks like after years of smoking (guests that do smoke have the chance to toss their packs of cigarettes into a clear plastic box as a sign of a commitment to quit); what a liver looks like from cirrhosis damage; what the brain looks like after suffering a stroke; what organs look like from overeating or lack of exercise. The exhibit is also divided into sections so guests can explore the body’s muscular, skeletal, circulatory and respiratory systems. A highly sensitive exhibit explains and shows fetal development (this is a room you can choose to skip entirely).
For an extremely timely exploration, Bodies recently added a few displays that explore the effects that COVID-19 has on the body. Read about what the virus does to the circulatory system, the reproductive system, the respiratory system, the digestive system and more. Perhaps the most meaningful quote on display says, “Why all this interest in the human body? The answer to this question seems quite clear to me: your body is the only thing you can carry with you from the moment you are born until your very last breath.” So why wouldn’t you want to learn as much as you can about your body, right? How the West Was Fun There’s a spirit of infectious fun that hums through the crowd even before Atomic Saloon Show starts. The setting—looking like a Wild West saloon, with audience members both at floor level and in the balconies—just immediately puts you in a mood to have a great time. And when the singing cowboy comes out, belting out one of the raunchiest tunes you’ve ever heard, you are all in. The show, produced by Spiegelworld, follows the slimmest of plot threads—a love story, yawn!—but it’s completely unimportant to the proceedings. It’s more a framework upon which various performers strut their talents, from naughty nuns to hand-balancing studs to super-sexy acrobats. Tying these all together is host Boozy Skunkton, the foul-mouthed proprietor of the saloon who’s not above insulting various audience members. Those who have been to Spiegelworld’s other Strip production, Absinthe, have a good idea of what to expect at Atomic: An anything-goes, un-politically correct good time. And make sure to grab a drink at the bar before taking your seat: alcohol is practically mandatory here! –Ken Miller
A Night to Remember For one of the classiest dinners you’ll have in a long time, make reservations at Edge Steakhouse in Westgate Las Vegas. A lush, elegant design with tall columns and a striking chandelier punctuates the dining area, and puts you in the mood. Take yourself into a gorgeous Greek restaurant When Estiatorio Milos closed in the fall at The Cosmopolitan, a deep sigh surely was issued from all the fans of Costas Spiliadis’ Vegas restaurant, where countless dishes and dinners were served up through the years. That sigh undoubtedly transformed into one of relief when they found out Estiatorio Milos was reopening in spring at The Venetian in a lovely new space on restaurant row. The Vegas outpost of the global brand entirely remodeled the space at The Venetian with wood and marble, creating a light peaceful environment that nonetheless buzzes with happy diners.

Past an inviting bar, there are two beautiful market areas displaying both the incredible array of fruit, veg and herbs, and the fresh fish used in Estiatorio’s dishes, all in front of a bustling open kitchen. In addition, you’ll find a room dedicated to making the restaurant’s yogurt. What should you be on the lookout for when ordering? A new raw bar offering such things as big eye tuna sashimi and tartare, plus ceviche. And the Milos Special piles thinly sliced and lightly fried zucchini and eggplant with accompanying kefalograviera cheese and tzatziki. It’s just superb.
A Greek salad has all the classic ingredients, plus barrel-aged feta. Grilled octopus and mushrooms, Holland pepper and fried calamari are all sure to whet your appetite for grilled whole fish or fish encased in salt and oven-baked. For the red-meat lover, ribeye, filet mignon and Colorado lamb chops all come with Greek fried potatoes, all available with sides such as a Santorini fava purée, asparagus and broccoli. For dessert, traditional baklava comes with ice cream and pistachios. The Greek yogurt with Kythirian thyme honey is delicious without being overwhelmingly sweet. –Nina King

Hot Ticket in Town It’s rainbow-colored skies above the Luxor’s North Pool as the famous LGBTQ+ pool party Temptation Sundays is back for its 11th season. The “instant” bacon (a five-spice pork belly) appetizer at StripSteak might be worth the trip alone. However, this widely popular plate is also just a precursor to the comfort-food delights combined with chef Michael Mina’s elevated culinary touches. The menu piles up steakhouse classics like a filling BLT wedge salad, oysters on the half shell, shrimp cocktail, gigantic seafood platter and a juicy Mary’s brick chicken entrée. But the star of StripSteak is, of course, the steak. All cuts—filet mignon, flat iron, bone-in ribeye, New York strip and dry-aged ribeye—are cooked over a wood-burning grill, so the sear and char are perfect. Big spenders and real meat lovers will want to order the Mishima A5 Japanese rib cap and slice it up like buttah! Guests can add the tasty StripSteak sauce or béarnaise or black truffle butter to any cut, too. If you still have room, we highly suggest the beignets for dessert especially since they come with a trio of delicious dipping sauces like vanilla crème brûlée and chocolate. –Kiko Miyasato

Brianna Lindabury
Cocktail server is having fun under the sun Born and raised in Las Vegas, Brianna Lindabury could not wait to work in the hospitality industry. As soon as she turned 18, she landed her first job as a hostess for a popular Stripside restaurant. Once she got her feet wet, she literally decided to get her feet wet by applying to be a model cocktail server poolside. In 2016, she joined the M Resort pool and later moved her customer service talents downtown, where for the past three years she’s been a model cocktail server at Citrus Grand Pool Deck at Downtown Grand. “I love being outdoors in the environment,” Lindabury says. “I like to be that one person that’s there for the guests to take care of them. It’s nice, too, because people come back to see me again. That’s what I love about the job.” She also loves how intimate and fun Citrus is. “I’m not a huge fan of the bigger dayclubs, but here I love it because you get locals and many returning visitors,” she says. “We have a lot of
pool parties, too. We’re a preparty for the Life is Beautiful festivals, we have live music at night and DJs on the weekends. It’s really fun.” For Lindabury, fun away from the job means country music and line dancing. She’s been line dancing for almost three years. Even during the pandemic, when all the country-music bars were shut down, a group of fellow dancers would gather in the parking lots of local parks, someone would bring the music, and they’d all kick up their cowboy boots and dance. But back at work Lindabury trades her cowboy boots in for a bikini—something she loves to wear because, as she says, she gets to work on her tan. And she also gets to do what she loves. “I’m very much a people person,” she says. “I love meeting new people and conversating, having a good time, making sure guests are having a good time. That’s the best part. Honestly, there’s no other industry that I would want to be a part of.” –Kiko Miyasato

Drink in the History
Bar serves up cocktails for more than 100 years What’s cooler than The Rat Pack? While the group of men dominated the Las Vegas Strip in both performance and play, they were also known to frequent a bar in the downtown area: Bar Prohibition! at Golden Gate. According to Mark Brandenburg, past owner of the Golden Gate and now Fremont Street Experience chairman, Sammy Davis Jr. drank at the bar often, as well as Dean Martin, because he often traveled by train (he supposedly preferred taking the train versus flying), and the train station was just down the street from the bar. Bar Prohibition! is more than 100 years old, as it was erected at the same time that the Golden
Gate was built in 1906.And while the property has been expanded over the decades and renovated many times over, the bar has remained in the same spot and has, for the most part, stayed true to the original design. Guests can even see the original plaster ceilings and old electrical panels from the 1940s (although certainly not in use!). In 2012, the bar was renamed to its current moniker. “We named it Bar Prohibition!—not Prohibition Bar—with a double play on ‘bar’ to mean ‘prohibit Prohibition,’” Brandenburg says. It’s here that you can taste the spirit recipes of the era with the bar’s specialty cocktails. Order the 1906 Spritz, mixed with Bombay Dry

Culinary titan David Chang has dropped one of his newest concepts on the Strip at The Cosmopolitan’s beloved Block 16 Urban Food Hall. Báng Bar (702.698.2663) is all about stuffing delicious things into Korean flatbread. You can opt for the burrito-style U-wrap with spicy pork, teriyaki chicken or spicy eggplant, or choose your favorite filling for the more compact fold-up sandwich. Add some pickled shishito peppers and creamy chickpea dip and you’ve found another unforgettable, easy-to-eat meal. Let’s keep it casual but graduate to a cozy sit-down dining experience at two of the newest and buzziest destinations off the Strip. Virgin Hotels Las Vegas brought in several brand-new experiences for Vegas visitors, and the street-style Thai food at Los Angeles transplant Night + Market (702.693.5280) has become a fast favorite. Chef Kris Yenbamroong has won universal acclaim for his authentic recipes and bold innovations, and he couldn’t wait to try his hand in Las Vegas. Whole fried catfish with sizzling ginger, chili and scallions, as well as pastrami pad kee mao noodles are turning heads and tantalizing tastebuds at this bright and energetic eatery. And out on the west side at the luxurious Tivoli Village, Ada’s (702.462.2795) has been reborn. Initially a neighborhood favorite for pasta, pizza and wine, it’s been renovated into a Spanish-inspired wine bar with a carefully curated selection and perfectly complementary light bites for an inspired yet relaxed experience. As a tourist destination, Las Vegas loves to make way for the new, shiny and monumental. What was once a small desert town has over the decades turned into a mecca for glitz—and with that, many of the city’s first hotels and casinos have been demolished to make way for what guests see in Las Vegas today. But there is one address—downtown, to be specific—that still has roots in the beginnings of this grand city: One
Fremont Street. This is where you’ll find Golden Gate, Vegas’ oldest operating hotel-casino, built in 1906. Back then, it was known as Hotel Nevada, then Sal Sagev (“Las Vegas,” backwards) and, finally, in 1955, after a group from San Francisco purchased it, Golden Gate. In 2012, the property received a thorough overhaul when then-owner Mark Brandenburg and brothers Derek and Greg Stevens purchased it (the Ste-

vens brothers are also owners of The D and the all-new Circa Resort & Casino). Today, guests are still in luck. While the place was given a fresh, contemporary feel, the historic character of the hotel was preserved. And what makes this property so exciting is that guests can step inside and discover original construction and pieces throughout the space. “A lot of existing structure is still here—we didn’t demo everything,” says Alice O’Keefe, director of design for Golden Gate, The D and Circa. “At this point, it’s very much the original bones.” Over time, the property has increased in size, with many add-ons, but wander over to the high-limit slots area—the wood arches are from a part of the original construction—and you’ll find a small peek-a-boo door where, when opened, you can see some of the hotel’s original concrete wall. Step further inside and you can also spot a fountain that still has the original tile—uncovered during construction—that would have been in the old courtyard area. More historic pieces can be found in Golden Gate’s lobby area, including old slot machines from the 1940s through the ’60s, gaming ledgers, poker chips, chip racks, hotel room keys, guest ledgers and even some old whiskey bottles from the early 1900s that were found

in the walls during renovations. While some re-created period-piece furniture is placed around the check-in area, there are also a few vintage pieces, like ornate mirrors from around the 1950s and an old hotel neon sign. It was once on the outside of the building, but was restored, brought inside and placed behind the registration desk. On the casino floor, where the gaming tables are located, as well as Bar Prohibition!, look up and you can see an original two-way mirror on the ceiling, where a crawl space was used so employees could keep an eye out for card counters and cheaters. Need even more nostalgia? Guests can rent one of 10 original rooms (back then it cost $1 per room). “These really highlight a part of history,” O’Keefe says. While the rooms are much smaller,
it’s cool to see original features like the tile in the bathrooms. “Personally, I think we don’t preserve enough. History is so important to capturing time. It’s about honoring where we’ve come from. And people can come to Golden Gate and see history—feel it, touch it. It’s not just a story.”

playing these small black box theaters to suddenly launched into this massive, beautiful, bespoke theater, and working with these exotic, talented beauties from around the world. We were very happy there. Are there similarities between working on Zumanity and Atomic Saloon Show? At SpyMonkey, we are very edgy clowns. So when we were doing it, it really was something else for the Vegas audience. Cut to when (Spiegelworld) opened Absinthe, we saw that and thought, boom, this is happening. The Vegas audience is now ready. I suppose in some ways there were all sorts of shows that paved the way for that step to happen. What was it like creating the character of Boozy Skunkton? It’s been an interesting journey and I’m still finding it, I find things every day and I’m always working on it. I’ve really fallen in love with her, but she’s me. When you work in clowning, it’s kind of like the heightened version of yourself. In one sense she’s like a ferocious dog, and in another she’s this vulnerable little piglet who desperately wants to be loved but isn’t quite sure, she doesn’t know how. But she’s an ongoing, longstanding love affair for me and I do enjoy playing her every day. We’re doing a lot of shows now, 10 shows a week, and it feels really good.

Hand sanitizer, everywhere! Every hotel was required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offered new handwashing stations. You’ll notice that some employees might be masked and some might not (depending on vaccination status) and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Employees undergo a health self-screening daily.
During the gradual reopening of shows in Las Vegas, many performers had to move to larger venues because of social distancing guidelines. Now those performers can return to their designated showrooms, including Carrot Top, Piff the Magic Dragon, Jabbawockeez and many more. In addition, it will be easier to get tickets, as all shows are now allowed 100% capacity. And from roller coasters to art exhibits andziplines, it’s all systems go for the Strip’s attractions. Keeping everything sanitary will still be a priority, but get ready to enjoy the Strip as you did before.
What a difference a year makes! In 2020, there was little, if any, attendance allowed at sporting events across the country (and none whatsoever in Las Vegas sports venues once the shutdown of the Strip was announced). Now, not only are your favorite teams back, there will be far more tickets available, as maximum capacity is now allowed.
Get ready to enjoy the Vegas dining like you remember. With the 100% rollout, not only are your favorite restaurants ready to fill to capacity, so are some of its buffets, including Bacchanal at Caesars Palace, MGM Grand Buffet and Wicked Spoon at The Cosmopolitan. And nightclubs have returned, but the usual operations have significantly changed.
