It’s no secret that Las Vegas is the place to be if you’re a foodie. Our restaurant experiences are some of the finest in the world, and we offer just about every type of cuisine you can list. So this issue is very much focused on food. We can’t wait for you to try some of the places we’ve featured in this issue, so let’s get down to it! It might surprise you that May is National Burger Month, but it probably won’t surprise you that Las Vegas has plenty of great ways to celebrate that month. We’ve collected some of the newest options available (“Meat Matters!” p. 22), including celebrity chef Bobby Flay’s newest Las Vegas venture, Bobby’s Burgers by Bobby Flay, at Caesars Palace. Check these places out—and don’t forget the fries. There are plenty of amazing bars up and down the Las Vegas Strip, but one stands out, as much for its decor and ambience as for its cocktails and its caviar: Petrossian Bar at Bellagio. And we’ve spotlighted the bar’s recent upgrade to its caviar program (“Raising the Bar,” p. 18). Trust us, this is something you don’t want to miss, especially for fans of the delicacy. Want more? Gladly! As Vegas continues reopening, so do its restaurants, and one of Las Vegas Magazine’s favorites, Harvest by Roy Ellamar, has returned to Bellagio (“Hunting and Gathering,” p. 15). Hot
downtown property Circa Resort & Casino has plenty of buzzworthy restaurants, particularly Barry’s Downtown Prime (“Food Is Just the Beginning,” p. 10). A newer kid on the block, Brera Osteria in The Grand Canal Shoppes at The Venetian and The Palazzo, is an ideal destination for fans of Italian food (“A Relaxing Break,” 12). And if you’re looking for a truly unique experience, veer off the Strip and head straight to Blackout Dining in the Dark, where you dine with a companion in complete darkness (“Sensory Appeal,” p. 8). But this week’s issue has so much more. Sensory Appeal Walk into the lobby at Blackout Dining in the Dark, and you’ll be walking into an adventure for the senses; well, except for the sense of sight. In this unique dining experience, patrons first make a series of choices that help guide the chef into the creation of your meal. Then they are led through an area that acts much like an airlock, but just for light, and into the completely dark dining room. You’ll get a complete, multicourse meal here, with the emphasis on really using those senses to try to figure out what you have eaten. You won’t be allowed to take your phone or electronics in, so dine with someone you can talk to for a whole meal without interruption. Once you’ve finished up dessert, you’ll be led back to the lobby, get a rundown of your meal and see how keen your sense of smell and taste really are. –Nina King

Stretching Out the Fun
In the Swim Here in the desert, the whole idea of seeing sea creatures swimming around seems a little far-fetched—until you enter Shark Reef Aquarium. On the way in you’ll see Komodo dragons and snakes, and get to read a little about the denizens of the attraction and about the Shark Reef itself, which is designed to resemble a temple being reclaimed by the ocean. The aquarium area is staged like a sunken ship, and a whole host of different

types of sharks, sea turtles, octopi, rays, piranha and jellyfish inhabit the various tanks in the attraction. An especially neat area is the glass-walled tunnel, where sharks of various sizes swim around you. Food Is Just the Beginning
Downtown steakhouse has quickly become a hot spot Longtime Las Vegas residents are very familiar with the name Barry S. Dakake. He’s one of the city’s preeminent chefs, known for years as the face and talent behind N9NE Steakhouse at the Palms (a huge celebrity hangout). That restaurant closed years ago, but Dakake has returned to the Vegas dining scene in a big way—at a new steakhouse at Circa Resort & Casino that bears his name. Even though it’s only been open a few months, Barry’s Downtown Prime has quickly become a must-visit destination for downtown visitors. For starters, it just looks fantastic—from the exclusive-feeling entrance to the retro interior, this place exudes quality and comfort. If the Rat

Pack was around today, you’d completely expect to see them here every night. What you’ll notice immediately is how special you’ll feel when you’re here—just like at his previous restaurant, Dakake gets personally involved with customers, walking the floor, checking on everyone’s meal and striking up conversations. His enthusiasm for food and the dining experience is infectious. You’ll be coming back here for his presence as much as the food itself. And what food it is! From appetizers such as the egg noodle bone marrow luge (served with crispy pancetta, sherry wine, Parmesan, Reggiano and garlic butter) to entrées such as classic surf and turf (accented with truffle aioli and red
wine sauce), everything on this menu needs to be tried at least once. That also goes for the steak selection, from Barry’s Steak (a 12-ounce rib cap from Creekstone Farms in Arkansas) to a 40day, dry-aged, 40-ounce tomahawk. The steak sauces are a must, from creamy horseradish and chimichurri to au poivre and roasted shallot red wine. Longtime fans of Dakake’s will immediately notice the side called George’s Cream Corn (a N9NE favorite). This is a revelation and a true classic. Try it and you’ll see what we mean. And vegans, don’t shy away! Dakake has prepared plenty for you, from vegetable meatloaf to a roasted heirloom cauliflower. –Ken Miller

Sharing His Talents Is he the hardest-working performer on the Las Vegas Strip? If not, he’s definitely in the running. Murray Sawchuck, better known to his fans as Murray the Magician, currently shows off his ridiculous talents at both the Laugh Factory at the Tropicana Las Vegas and during “half time” at Luxor’s adults-only production Fantasy. Sawchuck simply does it all—even without his illusions, he’s just a funny dude. He’s also extremely likable, appealing to all age groups. And Sawchuck learned a valuable lesson during the pandemic shutdown of 2020: He loves working with his fiancée, Dani Elizabeth. The couple performed plenty of illusions at their home for social media, and Sawchuck now performs illusions with her on the Fantasy stage. Las Vegas Magazine owes Sawchuck a great debt as well: Some of those social media videos he and Elizabeth created were contributed to Las Vegas Magazine as part of its Vegas at Home series, a welcome respite from the pressures of 2020 and a reminder that the Strip’s mega-talents were going to return. A Relaxing Break Take some time for yourself at Brera Osteria. There’s nothing better than starting your evening a little early and indulging in an apertivo, a pre-dinner drink stimulating your appetite for the main courses to come. And Brera, named for the neighborhood in Italy where the apertivo became an art, has a whole menu of dishes designed just for that stimulation, like bruschetta, cheese fonduta, marinated olives, tartare, meatballs, pizza and fish. Get yourself psyched up, because you’re about to fly through time and space on SlotZilla, the zipline experience that zooms right down the center of the Fremont Street Experience. SlotZilla offers two ziplines to choose from, one in a seated position and one in a superhero position. If that’s not your thing, you can still zoom through time and space by simply looking overhead, where the enormous VivaVision screens display a light-and-music show. Muster your courage for afternoon of thrills “You must be high.” Whether or not you’ve ever heard that term in your day-to-day life, you’ll experience it when you head up to the observation deck at The STRAT for a little fun in the sun. At the top of the iconic tower at the hotel-resort are three thrill rides that will leave you feeling brave and bemused, dazed and confused, all at the same time. The story of those amusement rides begins with the gala opening of The STRAT casino in 1996, where two rides were introduced: The Big Shot and the Let It Ride High Roller coaster. The drop tower ride Big Shot, looking like the biggest

ring-the-bell game you’ve ever seen, propels its riders straight up at approximately 45 mph from 921 feet to 1,081 feet. No, you can’t wear your flip-flops. Although the roller coaster closed in 2005, two other heart-pounding rides opened. The X-Scream actually emulates a roller coaster itself, as a car rolls back and forth on a piece on track. Of course, it’s not exactly the gentlest of motions, and it may just startle the heck out of you. And then, of course, it’s time to get tipped over the edge—and if that doesn’t freak you out, we don’t know what will.
Wait, we do know what will: The huge arcing arms of the inverted centrifuge ride Insanity, which hangs you 64 feet over the edge of the tower while rapidly spinning (3 Gs). And it’s not even level—you will be spinning at an angle. Oh, sweet geez. All the rides have separate requirements, from age to height, weight and medical restrictions. Bonus thrill points: Jump off the tower. Yes, you can, on SkyJump, a controlled plummet all the way to the bottom, 855 feet down. Chicken out? You? No way. –Nina King The STRAT, 702.380.7777

Hunting and Gathering It’s exactly as its name suggests—Harvest by Roy Ellamar is big on fresh, farmer’s market-inspired ingredients, local agriculture and sustainably produced proteins. Chef Roy Ellamar’s restaurant concept is a clean, nature-inspired space with beautiful wood décor and greenglass accents. Ellamar’s upbringing around farmers and fishermen shines through in a menu packed with creative herbivore and carnivore delights. Start with a specialty cocktail, particularly an option where spirits are mixed with cold-pressed juices. Appetizers include freshly made stone-oven pita bread with dips like smoky eggplant, tahini and roasted pepper; or opt to share a charcuterie board. Pescatarians can delight in raw kusshi oysters, or the sustainably caught Wild Isle salmon or diver scallops or a favorite, the crispy salt and pepper shrimp. Vegetarians can dig into grilled broccoli and fresh burrata or the English pea soup. Land lovers have to try the organic, Harvest roasted half chicken. Feel the Love There are few musical genres that offer more pure joy and fun than Motown, and hit tribute show Soul of Motown at Westgate Las Vegas delivers all the hits you remember, courtesy of CJ Jefferson, Sean Stewart, Mo Crosby, Anthony Bailey and Brandon Godfrey. Escape to Eden Towering palm trees and lush foliage cover the winding pathway down to this pool wonderland. It really does feel as if you’ve landed in paradise and you’re making your way toward your own private escape. Think Hawaii on the Strip. Bare Pool Lounge is a secluded, intimate and upscale European-style pool lounge where guests can book spacious lounge chairs, cushy daybeds or a well-appointed cabana and sunbathe topless all day.

Trustworthy IPA This is Trustworthy Brewing Co.’s original beer, created in its main brewery in Burbank, Calif. “A lot of tropical, hop aroma on the nose and the body is going to finish really clean,” Parekh says. “Our IPA is one that you can drink and feel like you can have another one without it fatiguing your mouth. You get a good amount of hop bitterness on the finish.” If you’re a fan of traditional West Coast IPAs, you’ll love Trustworthy IPA. Another favorite, says Parekh, is the Las Vegas-brewed signature amber ale, A Year in the Making. –KM

GM brews a passion for craft beer Robert Parekh is doing something on the Las Vegas Strip that no one else is doing—brewing beer. As the general manager for Trustworthy Brewing Co. inside The Grand Canal Shoppes on The Palazzo side, the restaurant and bar is also home to an onsite brewery. “When the opportunity for Trustworthy arose, I thought, ‘Now I can translate my love for selling craft beer to potentially producing craft beer,’” says Parekh. Before he joined the company in 2019, Parekh had a long career in food and beverage, which began in the Bay Area in California. He moved to Vegas in 2004 to expand his industry knowledge. Parekh’s resume is quite extensive and impressive—he’s helped launch lounges, build bar programs and served in management positions for spots including Rojo Lounge at Palms Place, PBR Rock Bar at Miracle Mile Shops, Diablo’s Cantina and The Pub (both were at the former Monte Carlo), Border
Grill at Mandalay Bay and Tap Sports Bar at MGM Grand. When he got the call to see if he’d like to join Trustworthy, “I thought it would be a very fun, cool thing to do because by then I had developed a very strong passion for beer,” he says. “I’ve always had a strong beverage passion—mixology, cocktails, spirits; I’ve always leaned toward that.” Not only does Parekh manage the day-today of the restaurant side of the operation, but you can also find him producing the beer that’s served at Trustworthy—and he’s a level two cicerone. “I fell in love with beverage, especially beer,” he says. “My passion has become about the beer, not just identifying styles and enjoying the flavor profiles but also the science and production behind it. As I’ve progressed in my career, I’ve found a lot of enjoyment not just in the daily interactions with staff and guests but also ... in the science behind the brewing process.” –Kiko Miyasato

Eat this bit by bit or all at once—there’s no wrong way. Up next is something which feels almost counterintuitive, but which might change your mind about caviar’s flavor profile forever: caviar pie. This time, the caviar arrives atop a tart made with green apples, lemons, crème fraîche and brown butter. The saltiness of the caviar perfectly offsets the extreme sweetness of the tart, creating something truly unique. We could eat this every single day (if we could afford it!). Now it’s time for dessert, and this is where Petrossian really puts things over the top. The dark chocolate “caviar” presentation has so many elements it’s hard to know where to start. This trick is the one that gives the show its name: Magic Reinvented Nightly. As Franco told me in an interview, “There’s something about the simplicity of it, the personal element of it. It’s based on an old trick called ‘Sam the Bellhop’ … I thought, ‘I’ve been doing this routine since I was a kid. Why don’t I customize it and make my own version?’ That one has a special place for me.” Just like Mat Franco himself now has a special place in the hearts of all those who have seen him perform.

There are plenty of inventive, original creations here, but a few you definitely want to check out: The Sickcilian, a sausage patty topped with marinara,

If you want a change of pace from the usual ground beef burger, you’ll want to check out the ultra-flavorful jerk turkey burger at Carson Kitchen downtown. It’s part of a new spring menu from chef/owner Cory Harwell and executive chef Scott Simon, and it’s a revelation, served with mango chutney slaw. For a truly over-the-top experience, order the Hangover burger at Favorite Bistro at the Linq Promenade. Made with a half-pound of Black Angus beef and smothered with caramelized onions, Swiss cheese, cheese sauce, fries with bacon, ketchup demi, mayo and a sunny-side up egg, it’s hard to tell if this is meant to cure a hangover or give you one. Either way, it’s unforgettable and, like the movie it’s named after, so Vegas! Some of you want that burger experience, but you’re vegetarian or vegan. No problem! There are options all over town, but for one of the best, head to Hearthstone at Red Rock Resort, where you can get an Impossible burger with some delicious toppings like vegan cheddar, fresh veggies, vegan mayonnaise and avocado spread.

ove and marriage certainly had a heck of a 2020. With the pandemic’s effects, many weddings across the world were postponed until this year. Here in Las Vegas, the Marriage Capital of the World, that means the rest of 2021 is likely to be busy, busy, even busier than a normal year. Reservations are key here for your nuptials, besides getting the actual marriage certificate. To get your marriage certificate, you’ll need to fill out and print the application, then head to the Clark County Marriage License Bureau (201 E. Clark Ave.) downtown. You must both appear in person, and it can be busy, so be prepared to wait. Make sure you have proper identification before you get in line. And although the Office of Civil Marriages can perform civil ceremonies, time right now is extremely limited and is by appointment only, so it might be wise to seek other options.

And options you have! From golf course clubs to gorgeous poolside weddings, walk-in venues to drive-thru delights, Las Vegas earns its title of wedding capital. (There’s even a Wedding Chamber of Commerce, so you know it’s big biz here!) There are more than 50 wedding chapels
around the city, and costs range from a bare-bones $39 to many, many thousands with many amenities included. Aria (702.590.5683) on the Las Vegas Strip has amazing packages and locations to choose from, accommodating up to 60-80 guests. Packages can include ceremony, officiant, flowers and much more. The retro Thunderbird Hotel (702.489.7500) downtown offers a ballroom, plus the beautiful, intimate Tree of Love chapel, with a natural tree providing the background to your nuptials. There’s also another tiny chapel for small ceremonies. At Westgate’s Chapel of Crystals (702.327.3600), find a wild number of options, from renewal of vows and commitment ceremonies to Elvis weddings in a beautiful, gold-accented chapel. It also has two other sister chapels conveniently located near the Marriage Bureau.
Vegas is known for its “quickie” weddings, and there are many places to simply tie the knot and go. The Little White Wedding Chapel (702.382.5943), near the Arts District, is known for its drive-thru weddings, and has married about 800,000 couples since 1955. The south end of the Strip plays host to the even older The Little Church of the West (702.739.7971), which opened in 1942. It was modeled after an Old West church, with wood panels and wooden pews and is listed in the National Register of Historic Places. If it’s not time for the ceremony yet, but it’s past time to pop the question, proposal packages can be set up at a variety of places, including Paris (702.946.4063), where the Eiffel Tower replica is the backdrop. Hand sanitizer, everywhere! Every hotel is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that some employees are masked and some are not, depending on vaccination status, and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Employees undergo a health self-screening daily.
Pools are open again, but operations are significantly different from before. For example, at Wet Republic at MGM Grand and Liquid at Aria, reservations will be required for all hotel and nonhotel guests, and VIP sections will be separated to allow for social distancing. In addition, rigorous cleaning protocols will be implemented.
What a difference a year makes! In 2020, there was little, if any, attendance allowed at sporting events across the country (and none whatsoever in Las Vegas sports venues once the shutdown of the Strip was announced). Now, not only are your favorite teams back, you can buy tickets! And popcorn! And beer!
Experiences will vary depending on venue, but every effort is made to make the experience as safe as possible. For example, at Miracle Mile Shops at Planet Hollywood Resort, you can now access a digital store directory on your phone. There’s also a digital coupon book with nearly 50 offers, which you can access by going to miraclemileshopslv.com. Another digital assist is available from Jules, the retail center’s chatbot, and she can be reached via text message, Facebook Messenger or the retail center’s website. And finally, QR codes make dining easy, as you can see the entire menu on your phone.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken depending on which casinos you are in. Some will still require some form of social distancing,some slot machines may not be available and plexiglass partitions may divide dealers and players. Casinos are required to have a plan to disinfect all the items needed to play.
The show experience will differ widely, depending on the venue. For example, at Absinthe at Caesars Palace, seating is staggered as of press time, all parties will be seated no less than 3 feet apart, and only parties who booked together will be seated together. Everyone must wear a mask. The venue is sanitized before and after every performance. You can learn more about every show by calling the box office.
Many restaurants require reservations, although not all; no more than 80% capacity is currently allowed. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers.

Although attractions in Vegas have really rebounded, sanitation is high. One-way access may be in force, such as in like Bellagio Conservatory & Botanical Gardens. And on New York-New York’s Roller Coaster, cars are loaded with the same party.
Nightclubs have returned, but the usual operations have significantly changed. For example, at Omnia at Caesars Palace and Hakkasan at MGM Grand, touchless menus are now the norm via scannable QR codes, and currently, the venues are operated as lounges, with social distancing and mask-wearing enforced.
Las Vegas is getting closer and closer to full operation, but your safety is still the top priority. Here are few more things you should know about efforts to make you as safe as possible. Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down, and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little
bottles of amenities, but amenities are still available. Housekeeping and other guest services might not enter your room unless requested. You must still wear your mask in public areas, including casinos, depending on where you are. While the vaccine
rollout has been successful so far, precautions must still be taken. It’s also considerate of fellow guests and resort workers. When you ride elevators and escalators, there may be a line, as guests are being asked to maintain adequate spacing between groups
