It’s time for Las Vegas to enter a whole new era. While the vaccination program is still ongoing, our visitor numbers are about to grow dramatically. (We got a sneak preview of things to come during March Madness, in which many properties were inundated.) Some conventions are scheduled to return later this year, a true sign of things to come in a city that prides itself on hosting large gatherings. It means you are now visiting a “post-pandemic” Las Vegas, and things are going to be decidedly different than you remember. But Las Vegas Magazine is, has, and will always be the resource for making the most out of your stay. We continue that commitment with our new “Post-Pandemic Guide” ( p. 33), in which you will get a good idea of what to expect from every experience currently available on the Las Vegas Strip, including shows, restaurants, lounges, attractions and more. We’ll update this guide in the coming weeks and months as state guidelines change. After checking out our guide, start planning the ultimate Las Vegas vacation! We’ve got plenty to get you started, including a Q&A with one of the hardest-working entertainers on the entire Strip: Murray the Magician, who performs not only at the Laugh Factory at Tropicana Las Vegas but also as the “half-time” act at one of the
Strip’s longest-running adults-only revues, Fantasy at Luxor (“Twice the Illusion,” p. 22). In this issue, Murray talks to editor-at-large Brock Radke about keeping himself busy during a pandemic, and how his shows have changed as a result. Speaking of entertainment, we’ve also updated one of the Strip’s most popular shows, Absinthe (“Feeling Green,” p. 26). If you’ve never seen this show, we kinda envy you—experiencing it for the first time is something truly special. If you’ve brought the entire family along, you’re in luck—managing editor Nina King has rounded up some terrific options for you in this week’s “Vegas 9s” section (“Nine Places for Family Fun in Vegas,” p. 24). Surf, Turf and Views Although it’s off-Strip, VooDoo Steak will cast its spell, luring you to the Rio not only for its juicy, artisan steaks, but also for its stunning view of the Las Vegas Strip from the property’s 50th floor. You’ll want to start with a cocktail, and there may be no better option than the Witch Doctor, which is mixed with four types of rum and fruit juice. The concoction is then poured over dry ice, which makes it brim with smoke as if it’s a spooky potion. Move on to appetizers such as the jumbo shrimp cocktail, crab cakes or short rib bruschetta, which is prepared with rye batard, truffle ricotta and fennel citrus salad. A wedge salad or the popular lobster bisque may also catch your eye. But the entrées are simply mesmerizing. You’ll love the brick chicken, served with blue cheese au gratin, forest mushroom, yuzu caper beurre blanc, fennel and radish, or opt for the 12-ounce Australian lobster tail. But you’d be remiss if you skipped out on their cuts, such as the juicy 10-ounce filet, 14-ounce prime flat iron steak or the 32-ounce tomahawk for two. Bellagio exhibit heralds the arrival of spring Celebrate spring the proper way and head straight to the Bellagio’s Conservatory & Botanical Gardens for its new display, sure to both brighten your day and provide you with plenty of great photos for Instagram. Springtime Celebrations Around the World is exactly what its title implies, a collection of floral creations that represent springtime celebrations across the globe, from the Netherlands and England to Thailand and, of course, the U.S. Start with England and an homage to the Chelsea Flower Show, featuring two oversized hummingbirds overlooking roses, daffodils and clovers. A boat carrying pink, purple and blue floral arrangements floats past a custom-built greenhouse with butterfly sculptures flutter

overhead. The whole scene is lit with oversized garden lanterns. Then head for the large windmill, where you’ll find a re-creation of the Keukenhof Festival in Holland, Netherlands. The garden is lined with tulips, daffodils and hyacinths, as well as large flower sculptures created from preserved roses. There’s also some wooden clogs, hand-painted with the Bellagio’s iconic “B.” Thailand’s Songkran Water Festival gets its due here with a Buddha statue at the center of an opulent temple. Thai umbrellas hang over the whole enterprise, and the festival’s focus on water is represented by a water fountain surrounded by hand-blown blue glass flowers with copper stems and a golden elephant.
Washington, D.C.’s Cherry Blossom Festival is represented by 12 cherry blossom trees. You’ll proceed down a walkway surrounded by hundreds of blooming roses and an architectural element reminiscent of the city’s history. Flying above it all is a flag made of red, white and blue flowers for the stripes and white butterfly sculptures for the stars. “As we leave the dreary winter months behind, we spring forward with our beautiful new Conservatory exhibit, celebrating renewal and growth,” said designer Ed Libby. “Guests will be compelled at every turn by numerous blooming floral displays that reflect how the world celebrates spring.” –Ken Miller Bellagio, 702.693.7111

Floating Away Take a look overhead as you’re walking through the main lobby of Aria this spring, and you’ll see colorful hot air balloons drifting under a fabric sky. That’s just part of Aria’s spring art installation, Take Flight. The lobby balloons’ baskets are made of willow, woven into birds’ nests, and sculptural birds can be seen towing the nests. Around the perimeter of the lobby, ficus trees are planted under the blue sky, whose representation is created with superlong, ribbonlike stretches of fabric—more than 4,000 feet! One of the balloons and its nest has settled to the floor, creating a fabulous spot for a cute selfie. But there’s more to see—more balloons, whimsically decorated with flower pots, blossoms and other spring design elements in the north valet lobby. Around the property, you’ll see more than 1,000 kalanchoes providing color. Joining the art displays around the Aria is Unexpected Convergence, a striking piece by Vegas art team Living Edge (Aundrea Frahm and Shino Mullen), made of layered mirror acrylic and silk floral that resembles a lake of glass. A Twist on a Classic The Fiery One, Chef Gordon Ramsay, is more than his signature trinity of beef Wellington, risotto and sticky toffee pudding, and he proves it with Gordon Ramsay burger, a casual spot where you can roll up your sleeves and enjoy a classic. As you’d expect from Ramsay, this restaurant serves up a Hell’s Kitchen burger, packing some heat with toppings like roasted jalapeños and jalapeño aioli. While some

of that heat is undercut by a little avocado and asadero cheese, this burger is still going to sting your tongue. Some Las Vegas hotels have pretty cool front yards. Bellagio has its iconic fountains and The Venetian has its faux canals. Landon Besherse
Career change was a blessing in disguise When Landon Besherse was just a kid and moved to Las Vegas from Ventura, Calif., he witnessed his first hotel implosion. “It was that constant reinvention of the city and the food and beverage culture of the city that has kept me constantly engaged,” he says. During the crash of 2008, Besherse lost a construction job that he’d had for more than a decade. “I lost my home and was financially rock bottom; that wasn’t fun,” he says. “But in hindsight, back to the hotels being imploded, through destruction comes new opportunity for growth, and I couldn’t be happier with the end result.” Those results include a successful food and beverage career in Las Vegas, where he is currently the front-of-house and beverage manager for 8 East at Circa Resort & Casino. After Besherse lost his construction job, he used it as an opportunity to get behind the bar at some downtown hot spots, including Vanguard Lounge, a craft cocktail bar he joined as a
barback in 2011. He eventually worked his way up the ladder to bartender. (Vanguard closed in 2019.) “Coming from a trade background where there’s lots of complexity to the work you’re doing to create the finished product. I found it really appealing to be able to do that with beverage,” he says. Over the next nine years, he honed his craft working in some of the city’s top destinations for food and beverage. He met some star movers and shakers in the industry, and last year was approached to help open and run the pan-Asian restaurant and bar. When it comes to 8 East, it’s almost a culmination of all of Besherse’s hard work and pride in what he does, and it shines through. “It’s a multitude of great service, great beverage program, great culinary program,” he says. “We’re putting it all together as one full package. I don’t think you’re going to find a better food, service and beverage program in the whole city.” –Kiko Miyasato

A Swinging Good Time
Modern speakeasy offers fun, music and darn good spirits A night of fancy and fun awaits at 1923 Prohibition Bar, a semi-secret, sexy lounge serving up classic cocktails. The entrance is through a very nondescript bookcase, and once inside, guests are transported back in time to the Prohibition era in American history. “I think we kinda stuck to the hardcore Prohibition era,” says owner Noel Bowman. “We’ve got the barrels; we’ve got a lot of the Gatsby-type décor. We’ve kinda stayed true to that 1920s era. Wallpaper and art are from that era, chandeliers, Tommy guns, I’ve stayed pretty authentic with it. We call 1923 a modern speakeasy. While our look is somewhat authentic, we certainly have the classic drinks, but we’re toying around with some new, modern mixology.”

Standout specialty cocktails, many created by lead mixologist Devon Bennett, include highlights like the series of Old-Fashioneds, including butter pecan, peanut butter and jelly or maple bacon. Other classics include the Sazerac, mint julep or, for some spice, the Tajín Templeton. What’s more Prohibition era than bourbon? At 1923, you’ll find some of the best labels behind the bar. Order the bourbon flight with four selections: Buffalo Trace, Bulleit, Angel’s Envy and Angel’s Envy rye. Beloved restaurant Estiatorio Milos is back and better than ever By Ken Miller LONGTIME VISITORS to Las Vegas may know the name Estiatorio Milos, the Greek restaurant at The Cosmopolitan. For years it was considered a must-visit for its fresher-than-fresh seafood options, not to mention its impeccably appointed room and truly next-level service. That outpost closed last year, but fans of the brand will be thrilled to learn Milos has reopened in a stunning space at The Venetian, and it’s every bit as good as its forebear—perhaps even better.

The new space, dominated by light colors, has an open, airy feel—no matter where you sit, you can get a view of the entire room. There’s a stunning bar near the entrance that beckons you to spend some time and enjoy a drink, and as you make your way through, you’re struck by two “markets” near the end of the room—fresh fish on your right and fresh vegetables on your left. These “previews of coming attractions” are most certainly going to end up on patrons’ Instagram accounts.

could eat this dish all day long, but don’t act like us—save plenty of room for what’s to come. You’re at Milos, so you’re most likely ordering fish, and best of luck trying to decide between the myriad versions. If you prefer cooked fish, try dorade royale (grilled Mediterranean sea bream), but if you’re more of a raw fan, try the Faroe Islands wild salmon tartare, served with Fresno chili and cilantro. Want to go The Venetian really big? Go with a tasting 702.414.1270 of raw fish, featuring a chef’s selection of sashimi-style cuts. You’ll find putting yourself in the hands of the capable chefs here is the right call. However, it’s very possible you’re not in a seafood frame of mind. Milos has planned for that eventuality, offering a selection of cuts from Brandt Beef Family Farms, including ribeye, filet mignon and grilled lamb chops. We suggest pairing them with Santorini fava and steamed Salmon tartare crown broccoli. Finish off this amazing experience with some dessert. Obviously, the baklava here is a strong option (so light and flaky with pistachios, almonds and walnuts), but we also recommend the Greek yogurt, drizzled with thyme honey from the island of Kythira. Welcome back, Milos!

As you peruse the a la carte menu, take some time to enjoy a signature cocktail like Monks in Mexico, featuring Patron reposado tequila, green Chartreuse, St-Germain elderflower liqueur and grapefruit, or the Paper Plane, made for bourbon lovers with Maker’s Mark, Amaro Montenegro, Aperol and lemon. Either will help stimulate your palate for the delights to come. There are numerous wonderful appetizers like Greek ceviche (featuring loup de mer, Mediterranean fresh herbs and feta), but you would regret it if you didn’t try the Milos Special—lightly fried zucchini (they act as a sort of chip) with which you scoop up tzatziki, eggplant and kefalograviera cheese. One of the most celebrated restaurants in the history of Las Vegas made a big move over the course of the last year. Estiatorio Milos closed at The Cosmopolitan and just late last month reopened at The Venetian with a dynamic new space. The international sensation’s founder, Costas Spiliadis, took the time to get us all caught up on the evolution of this truly unique dining destination. Did you know from the beginning Milos would be such a success on the Strip? We came to Las Vegas fully understanding that Greek cuisine and food was either unknown or completely misunderstood. We also came with the strong conviction that people would appreciate and love our food as soon as they discover the virtues of true Greek cuisine: simplicity, extraordinary and fresh ingredients, honest, straightforward and healthy food. Las Vegas, like New York, London, Athens—where the story begins—soon embraced Milos and loved our food. What makes The Venetian such a great fit for Milos? True hospitality and emphasis on great food have been two of the key elements with which
The Venetian had changed things in Las Vegas. Historically, The Venetian has brought to the Strip some of the greatest chefs and has been the home of many restaurant landmarks. It was natural for us to want to be part of this tradition. How are you expanding on your food and wine experience at the new location? Over the 40 years since we opened in Montreal in 1979, Milos is constantly evolving. Our cuisine is not based on recipes but on ingredients that the land and sea can provide us with. This is endless. There are always new ingredients that we discover and incorporate. In our new restaurant, we want to take advantage of the proximity to Southern California and the amazing fruits and vegetables that we have access to. For this reason, we will feature a special vegetable market across from our fish market where guests can visit and choose from a large variety of fresh vegetables from small farms that we will be bringing daily. We would also like to introduce a new element with our raw fish bar. Drawing from ancient Greece and Rome, we will present certain small dishes, mezze, of cured and marinated fish. We will em-
phasize lakerda, cured bonito fish out of California, as well as small fish such as anchovies, sardines and Mediterranean mackerel. Finally, while we will continue showcasing the amazing renaissance of Greek wines at Milos, we will try to marry California wines to Greek wines and draw similarities and differences. Is the American diner becoming more familiar with this style of food? The truth is we have come a long way. The days that olive oil was a strange liquid, octopus was only known to zoologists, and presenting the whole grilled fish on the table was inappropriate, are over. Have you been able to stay in touch with your regulars during this transition? Since we served our last dinner in October, I have been overwhelmed with messages asking for the time Milos will open. Our local patrons miss our famous business lunch, the simple but delicious Milos Special, our Greek salad, grilled octopus, our beautiful fresh fish and the Greek wines. We have built strong relationships, and we are as excited as they are to serve them again our delicious food.

With shows at Tropicana and Luxor, Murray Sawchuck keeps the magic happening By Brock Radke Magician/comedian Murray Sawchuck is pulling double duty in two south Strip productions—his Murray the Magician headlining show at the Laugh Factory at the Tropicana Las Vegas and as the comic co-star in Fantasy at Luxor.
How did you prepare to return to two shows post-shutdown? It was more jumping right in. I’ve been super lucky and I’ve had people calling me from all over the world saying it doesn’t look like I’ve stopped (performing) at all. When something like this (pandemic) happens, you really learn how to survive. How has your show at the Tropicana Las Vegas changed? I’ve started to buy larger decks of cards so when the audience picks a card from a distance, they can still see it. I probably

made seven or eight major changes to the show because I’m used to working with people in the audience, but fortunately I’ve built up about three hours of material, so I can use different things when we had it narrowed down to what we can do. But one thing I’ve noticed, that’s the weirdest thing, is how I used to just say certain things during the show to the audience when you want them to work with you in a certain way. You can only rehearse that kind of thing so much, it just happens. And that first week back, I really had to change a lot of that patter.
Your room at the Trop, the Laugh Factory, has been one of the busier rooms on the Strip for entertainment. How does it feel and what’s the audience reaction like? It’s been shocking, actually. I love history and I keep wondering if this is how it was when Prohibition stopped, or if this is how it was after World War I with vaudeville. Entertainment thrives after something so detrimental happens in the world. But the audiences these days really want to be here. People are coming to Las Vegas and they want to live life as full as
they can. They’re playing by the rules, wearing masks and distancing, and the people in the audience have been really interactive. As the guest performer in Fantasy, you’re taking the stage with your fiancée, Dani Elizabeth, who is the host of another Strip show, Crazy Girls. How does it feel to be working with Dani? It’s great. I’ve never been one to work with my partner in that sense ... but we started this because of the pandemic, by shooting some stuff for TV and
(social media) in the driveway or in the street. We had nothing else to do after coffee in the morning, so I started showing her my tricks and we had a good time with that. And then when I got the call to go back to Fantasy, they wanted to bring in the bigger (illusions) because it’s such a big stage (at Luxor Theater) and … so we started practicing for real on a proper stage. She picked it up super quick and it’s kind of fun.

And I’m sure it’s great to add another element to that show, since it must be challenging to take something built for a 350-seat theater and perform in an 1,800-seat room. If you have 100 people in a small comedy club, you can destroy. But in that 1,800-seat theater all spread out, it’s almost like everyone’s watching their own individual show and they react individually. If you and I go to a show and take a couple friends, when one of us laughs, everyone else in our group is going to chuckle, too. It’s magnetic. When you’re onstage, you’re farther away from those reactions, and it’s interesting to see how it can still spread across the room when groups are (distanced).

At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for high temperatures.
Pools are open again, but operations are significantly different from before. For example, at Wet Republic at MGM Grand and Liquid at Aria, reservations are required for all hotel and nonhotel guests, and VIP sections will be separated to allow for social distancing. In addition, rigorous cleaning protocols have been implemented.
What a difference a year makes! In 2020, there was little, if any, attendance allowed at sporting events across the country (and none whatsoever in Las Vegas sports venues once the shutdown of the Strip was announced). Now, not only are your favorite teams back, you can buy tickets! And popcorn! And beer! For example, the Vegas Golden Knights can now allow up to 9,000 fans at T-Mobile Arena. Just make sure to be proactive in buying your ticket—demand is bound to be very high!
Experiences will vary depending on venue, but every effort is made to make the experience as safe as possible. For example, at Miracle Mile Shops at Planet Hollywood Resort, you can now access a digital store directory on your phone. There’s also a digital coupon book with nearly 50 offers, which you can access by going to miraclemileshopslv.com. Another digital assist is available from “Jules,” the retail center’s chatbot, and she can be reached via text message, Facebook Messenger or the retail center’s website. And finally, QR codes make dining easy, as you can see the entire menu on your phone.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
The show experience will differ widely depending on the venue. For example, Absinthe at Caesars Palace, which is performed in a tent, is currently not in the round. Rather, the audience faces one side of the theater, with the action taking place across from them. It has a 660-seat capacity, but currently offers 180 seats per show. And, of course, everyone is required to wear a mask, audience members and performers included. Temperature checks are still mandatory before entering, and the venue is sanitized before and after every performance. You can learn more about every show by calling the box office.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. Although attractions in Vegas have really rebounded, sanitation is high. Social distancing is evident, with seemingly omnipresent 6-foot markers in many locations, like Bellagio Conservatory & Botanical Gardens. On New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
Nightclubs have returned, but the usual operations have significantly changed. For example, at Omnia at Caesars Palace and Hakkasan at MGM Grand, touchless menus are now the norm via scannable QR codes, and the venues are operated as lounges, with social distancing and mask-wearing enforced.
Las Vegas is getting closer and closer to full operation, but your safety is still the top priority. Here are few more things you should know about efforts to make you as safe as possible. Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down, and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find
little bottles of amenities, but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested. You must still wear your mask in public areas, including the casino. While the vaccine rollout has
been successful so far, precautions must still be taken. It’s also considerate of fellow guests and resort workers. When you ride elevators and escalators, there may be a line, as guests are being asked to maintain adequate spacing between groups
and try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars. When in lines, practice social distancing. Stay 6 feet from people other than your
travel companions whenever possible. Be patient—even though you are 6 feet apart, you’ll still be moving. When you depart, one of the best ways is to check-out on the TV in your room. Some hotels have check-out kiosks that are sanitized often.
