Entertainment Is Back! It’s Time to Go See Shows on the Strip Again

This is a huge week for Las Vegas! Entertainment was one of the biggest casualties of the pandemic, and was one of the slowest sectors of the Strip to recover. When Nevada’s governor, Steve Sisolak, began lifting restrictions on capacity for restaurants and entertainment venues, shows were still at a disadvantage: While they could reopen, they couldn’t fill their respective venues with enough customers to turn a profit. But restrictions have eased even more since Sisolak’s first order, and shows are now able to resume business. And this month sees the return of some of the Strip’s most popular draws—David Copperfield, The Australian Bee Gees Show and Terry Fator. They join earlier returning shows like Fantasy, Carrot Top, Piff the Magic Dragon and Tape Face, and no doubt their dates are selling out as we speak. To help you make a decision as to which show you might want to see, Las Vegas Magazine has prepared two features for your enjoyment: A roundup of the returning shows (“Welcome Back!” p. 20), and a Q&A with Fator (“The Voice Returns,” p. 26). Whatever you decide, it’s the right choice; there’s just no substitute for live entertainment. Period. This week’s issue also has a special feature that is sure to appeal to any group:

decadent desserts on the Strip and downtown Las Vegas (“Sweet Tooth Swoon,” p. 22). Wait until you get a look at these seriously over-the-top noshes; we don’t often recommend choosing a place just for dessert, but we think you’ll agree with us that, in this case, exceptions must be made. But that doesn’t mean there aren’t plenty of other restaurants we recommend for the entire menu: Top of the World at The STRAT (“Reach New Heights,” p. 7); Mon Ami Gabi at Paris (“Beaucoup Flavors,” p. 8); Brera Osteria at The Grand Canal Shoppes at The Venetian & The Palazzo (“No Travel? No Problem,” p. 10); and Restaurant Guy Savoy (“French Decadence,” p. 15). We’ve also highlighted a great restaurant far from the Las Vegas Strip: Hearthstone at Red Rock Resort (“Spring Scenes,” p. 18). If you haven’t dined at Hearthstone or experienced Red Rock Resort, trust us: Both are more than worth the trip. There’s another terrific restaurant downtown, Esther’s Kitchen, and this week’s “Friends With Benefits” ( p. 16) introduces you to Keith Bracewell, the general manager. Grand Canal Shoppes restaurant brings Italy to you Anyone watching Stanley Tucci’s wonderful CNN series, Searching For Italy, is no doubt longing to visit some of the regions Tucci highlights for their amazing cuisine. And since international travel is currently on hold, you’re going to have to be patient. But in the meantime, you can get the next best thing at multiple restaurants in Las Vegas, including the recently opened Brera Osteria, a celebration of the food of Milan’s Brera neighborhood. Brera features seating that offers plenty of people-watching opportunities at St. Mark’s Square in The Grand Canal Shoppes. It instantly puts you in a European frame of mind, allowing you to relax and immerse yourself in the culture

of the region, brought to delicious life by chef Angelo Auriana. Start off with a classic Aperol spritz (how could you not?) and work your way to other spirit-laden delights like the blood orange martini, which uses Ketel One vodka and Cointreau, and the Via Brera, a muscle-bound beast combining barrel-aged Whistlepig rye, Calvados Daron 5 yrs, Cynar liqueur and Drambuie, all sprinkled with nutmeg. Whatever appetizer you opt for, the smiles will come in waves. The beef tartare is one of the best on the Strip, using American wagyu beef, anchovies, capers, shallots and mayonnaise (and toasted crostini to spread on), while the Burra-

tina is a vegetarian’s dream, with roasted beets, mushrooms, green beans and frisée. Pasta fans will love the tortelli, stuffed with braised veal and served with butter, thyme and roasting jus. The perfect sea scallops are served with horseradish potatoes and a veal reduction. Vegetarian? Try charred cauliflower, served with couscous, almonds and bagna càuda. Make sure to try the tiramisu for dessert. It’s All New Again Historic El Cortez is in the midst of a $25 million makeover, brightening up everything from its casino floors to its rooms. The carpet blanketing the casino has gone from an old-school rose design to a colorful, tropically inspired leopard-and-leaf print. The 200 rooms in the tower got a fresh, light transformation. The hotel lobby is next. The casino even recently opened a high-limit room, something it hasn’t had in its nearly 80 years of existence. “When the idea of the high-limit room came up, it materialized quickly. It’s a focal point of our casino next to the cage and all this beautiful design,” said Adam Wiesberg, general manager of El Cortez. Inside the boutique high-limit room are three slot machines—the Dragon Cash machine from Aristocrat and two Super Charged 7s from Ainsworth. As anyone who has been in a casino in the last few years knows, Dragon Cash machines are some of the most popular around. The Ainsworth Super Charged 7s features a bonus wheel that players love. There are two high-limit blackjack tables as well. –Nina King

Hank’s Fine Steaks & Martinis gets right to the point, which is likely what late newspaper editor and publisher Hank Greenspun would have wanted if he’d known there’d be a restaurant that honored his good name and high standards. The Swim of Things

Lush attraction offers lots to explore Lions and tigers and … dolphins? In Las Vegas? Oh, my, it’s true. At Siegfried & Roy’s Secret Garden and Dolphin Habitat (which is part of Las Vegas Magazine’s 2021 Hall of Fame class), you’ll be immersed in a lush oasis filled with exotic animals such as white tigers, white lions and dolphins, including the adorable Lady Ace, the most recent addition to the dolphin clan. Since its opening in 1990, this enchanting habitat has not only served as a sanctuary for some very big cats (some of whom once performed in the Siegfried & Roy magic show) and sea creatures, but it also focuses on scientific research, education and conservation outreach. With the Secret Garden’s guided educational

programs, it’s the perfect place for parents to take their curious, animal-loving kids to learn about these beautiful animals and their habitats. You might learn a thing or two also. Once entering the Secret Garden, you’ll feel like you’ve been transported to some distant jungle or African veldt, replete with abundant grassland, greenery, trees and waterfalls. Within the habitat, you’ll find lions, tigers and leopards lounging and grazing in the grass. Perhaps you’ll even see a tiger dip their paw into the waterfall. Throughout the exhibit you’ll also find plaques with fun facts and information; for instance, did you know that the frosty coats of white tigers and white lions is due to a condition called leu-

cism, which means they lack dark pigmentation? So, be careful not to call them albinos! Majestic as these animals may be, they’re pretty lazy, and there’s not a lot of action happening. Yet, once you move into the Dolphin Habitat, you’ll see those incredible aquatic creatures swim and splash around in their pools. If you’re lucky, you might catch the trainers working with the dolphins, and you’ll witness the tricks and aerial feats they’re capable of. Rumor has it these dolphins are so skilled that you’ll never see them do the same trick twice. If you want to snag a picture, the dolphins are incredibly photogenic and they’re always camera ready, for they always look like they’re smiling. –Alex Haase

Feel the Heat Las Vegas is beginning to see the return of many of its successful shows, including male revues. Joining those ranks is Aussie Heat, featuring some of Australia’s most popular, talented— and, obviously, sexy—dancers to the Las Vegas Strip. For dining at its finest, it doesn’t get better than the long-standing Restaurant Guy Savoy. The acclaimed French chef brings all his edible masterpieces to the plate at this fine-dining establishment. For those with mad green, the Celebration Menu offers a multicourse experience with wine pairing for $555 per person. Dishes include octopus terrine with caviar and saffron, seabream with Mediterranean flavors, Savoy’s signature artichoke and black truffle soup, A5 Japanese wagyu with lobster and a caramel-and-popcorn dessert. If a prepared menu is not up your alley, go à la carte with starters like the famous soup, seared foie gras and caviar service, then follow with selections from the sea (roasted wild Atlantic turbot, lobster or salmon) or land (Muscovy duck confit or veal chop). Every dish is an indulgent flavor experience in French cooking. End the memorable meal with the dessert trolley. Have your server wheel the decadence on over to your table and peruse plates of ice cream, sorbet, Mason jar desserts and traditional and modern French pastries. Bon appétit, indeed! –Kiko Miyasato

Sweet Rides If you are looking for a little spring break feel, visit Adventuredome at Circus-Circus. The indoor theme park (it’s located under an iconic see-through pink dome) features rides and attractions that appeal to every age group. The thrill seekers will love coaster rides Canyon Blaster and El Loco, and the newest ride, NebulaZ, which spins riders up, around and every which way on two massive arms with cars at both ends. There are also clas-

sic rides like Sand Pirates, which swings you through the air, Disk’O and the Inverter, which spin and flip you, respectively. A 4D theater brings you along on the antics of classic cartoon characters. For the younger set, you’ve got Drifters, (a mini hot air balloon ride) a carousel, the Thunderbirds plane ride, Miner Mike (a coal train ride), plus others. The Magician’s Assistant If you’re a mezcal fan, The Magician’s Assistant will engage your senses in more ways than one. This take on a Black Manhattan is concocted with 400 Conejos mezcal, Cynar amaro and sweet vermouth with a blackberry garnish—and is served in a glass that’s been inverted over smoking rosemary. It’s a fragrant, tasty, smoky drink that encourages slow sipping. Each season, the restaurant introduces a new cocktail menu, a process that, Bracewell says, allows the bar staff to be creative. –NK

Keith Bracewell

General manager hits the right notes For Esther’s Kitchen general manager Keith Bracewell, working in hospitality has been a natural adjunct to his career in music. The Baytown, Texas, native spent his early years focused on music, studying audio engineering at San Jacinto College. Working in the Houston restaurant industry afforded the aspiring heavy metal musician the flexibility to schedule gigs while also paying the bills. In the years since, Bracewell has lived in several cities, from Austin to L.A. and San Francisco, playing rock music and trying his hand at acting and modeling, and all the while building his chops in the restaurant biz, with managing gigs at House of Blues and other venues. About three years ago, he decided to move to Vegas, and was hired at chef James Trees’ hot Arts District restaurant, an eatery that serves up fresh Italian cuisine. Since then, he has worked in several positions and moved up to general manager. In that role, Bracewell

oversees everything from cocktails to customer service. “Our big thing is that we’re service-oriented—with James, it’s just putting people first,” he says. During the pandemic, Bracewell saw that firsthand, as Trees fed his staff even while the restaurant was closed. Like Bracewell, much of the staff has other pursuits such as art or music, so that support was invaluable. And that spirit of community is something Bracewell tries to make sure is evident at Esther’s, where employees at surrounding businesses are as well known to him as his own staff. During lunch recently, Bracewell stopped to chat with a set of regular customers. He says, “Taking care of people really is the main thing, making people feel comfortable… It’s a very communal, family-oriented place. People come in sometimes three or four times a week. It’s amazing. I’ve met some of my best friends here.” –Nina King

Tapping In

Strip restaurant supports local breweries Yardbird Southern Table and Bar opened at The Venetian in January 2015, and from day one committed to supporting local beer. Its backing goes so far as to devote every single one of its taps to Nevada breweries, making it only one of two establishments on the Vegas Strip to do so. The decision to spotlight local brews came from 50Eggs (the restaurant group Yardbird is a part of) CEO/founder John Kunkel. “We started as a local restaurant in Miami and embraced the local audience,” he said. “Vegas beer is awesome, and we have great local artisans who are doing great stuff, so why go elsewhere?” Beers flowing from the 12 taps currently include Able Baker Chis Kael Impale’d ale, Astronomy Hawking hazy pale ale, Bad Beat Gutshot

stout, Big Dog’s Dirty Dog IPA, Great Basin Wild Horse ale and Tenaya Creek pilsner. One of the standouts is Yardbird’s house beer, Unforgritable, made by Able Baker and served exclusively at Yardbird. After pitching the idea and brewing pilot batches for the Yardbird leadership team, Able Baker co-founder James Manos struck gold, or maybe grits, with this rendition, rendering the flavor of grits through additions of bread, biscuits and hominy to complement the grits and the shrimp and grits on the menu. Manos describes the beer as a Southern pale ale.“It’s a bit more hoppy than a traditional light ale but not quite to the pale ale level.” Speaking of his relationship with Yardbird, Manos added, “Yardbird has been extremely

supportive of local beers since their opening. I’m friends with many of their servers, bartenders and management, and they always go out of their way to recommend my beers and support me both personally and professionally. Great spot full of great people.” While you may come for the beer, do yourself a favor and stay for the Southern-inspired grub. Topping the list is Lewellyn’s Fine Fried Chicken, named for the mastermind behind the recipe: Kunkel’s grandmother. For food fans, one of most exciting things is the introduction of new and seasonal menus at their favorite restaurants. At Hearthstone Kitchen & Cellar in Las Vegas, chef Lee Davidson’s newest menu changes added a multitude of new appetizers and entrées, plus some plant-based options, perfect to shepherd spring into summer. Hit the restaurant up for weekend brunch, head into the happy hour on weekdays or get in for dinner and try some of those new dishes. What’s a great dinner without a great cocktail? And there’s an excellent menu here, with classics like the Aperol Spritz and the Sidecar, mocktails, beer and a sizeable wine menu. Hummus is a favorite of many, and Hearthstone’s new spicy curry hummus pairs the creamy dip with crunchy chickpeas with vadouvan spices. Tuna fans can indulge in yellowfin crudo in a colorful Thai leche de tigre or the equally colorful tuna pizza with

black garlic soy aioli and white truffle. So good! Those with lighter appetites may want to indulge in the hearts of palm salad, with shaved Hawaiian hearts of palm, kohlrabi and a jalapeño vinaigrette, or roasted tomato soup with a salami and cheddar grilled cheese. You can get a casual cheeseburger here, with a certified Angus beef patty and pimento cheese, or with an Impossible patty, vegan cheese and avocado spread. A new offering, the banh mi pork belly buns fold roasted pork belly and crispy mushrooms in a soft bun. Hearthstone also features several pizzas: braised short rib

and Calabrian chili; prosciutto and arugula with mozzarella, Parmesan and aged balsamic; and a vegetarian truffle mushroom pie with gouda. There’s even a vegan cheese option, with vegan mozzarella and marinara. Entrées range from new, lighter seafood dishes like the roasted Scottish salmon and the Baja striped bass to the decadent spaghetti lobster with brandy cream, maple smoked bacon and chives. Rotisserie chicken is served with salad, but the braised short rib comes with butternut squash and charred Brussels sprouts. A new offering is the crispy duck, served with steamed pancakes and a hoisin sauce. Another hearty new grilled dish is the double-bone tomahawk pork chop, served with roasted apples and onions plus a smoked bourbon au jus. To fill in those cracks, order garlic mashed potatoes or the creamed corn, with the flavors of street corn—cotija cheese, crema, jalapeños and Tajin. If you still have room after those sides, dessert is what you need. The glazed doughnut bread pudding comes with custard, a warm cherry compote and ice cream, and you may find yourself wondering if you should have skipped dinner and just ordered dessert instead. Carrot Top has had his share of detractors in the past, but he continues to prove them all very, very wrong. There are few better stress relievers right now than laughter, and Carrot Top tirelessly delivers them in boatloads. When you’re not doubled over with laughter over the oh-so-inappropriate things coming out of Gaz’s mouth, you’ll be gasping at the feats of strength, balance and athleticism taking place in the small ring in the middle of the tent.

THERE’S AN OLD SAYING: “STRESSED is desserts spelled backwards.” After this past year, I reckon there’s not one person reading this that hasn’t experienced stress in some form. Amiright? So, in honor of the past, let’s indulge just a little bit more by brushing that continued stress off by enjoying some of the most decadent—and fun—desserts in Las Vegas. Over at Sahara Las Vegas, a longtime local- and tourist-favorite restaurant, Bazaar Meat by José Andrés, recently welcomed executive chef Candace Ochoa to the kitchen, and she’s created a new whimsical dessert for the menu, mini mousse doughnuts. Served like flowers blooming on a re-created silver tree branch, each doughnut is filled with mousse and then dipped in a variety of Valrhona chocolate flavors like coffee crunch, dark chocolate and dulce. In the MGM Resorts International realm, several hotel restaurants offer choice desserts sure to satisfy sweet tooths. At Mayfair Supper Club at Bellagio, a dining-meets-entertainment establishment, a guest favorite is The Cigar dessert, which comes in an ashtray. It’s made with milk chocolate, hazelnut and pear. (This is a fun Boomerang for Instagram!) For an ode-to-French-cuisine dessert, visit Bardot Brasserie at Aria for its large-and-incharge chocolate macaron. On the menu since opening, the rosé cake for two is a rosé-infused sponge cake coated in a sumptuous strawberry buttercream. At The Cromwell, celebrity chef Giada De Laurentiis’ eponymous restaurant isn’t only serving up her fabulous California-influenced Italian pastas—her knack for creating sweet sweets is impressive. Try the light yet rich mascarpone cheesecake, made with an almond biscotti crust and served with raspberry sauce and mascarpone whipped cream. Multitalented singer, comedian and ventriloquist Terry Fator is returning to live performances on the Las Vegas Strip. His fresh new production, Who’s the Dummy Now? debuted March 18 at the New York-New York Theater, a few blocks away from The Mirage, where he made his mark as a superstar headliner for more than a decade. He was in the process of finalizing the details on this new show when the pandemic put a halt to all things entertainment. Now that he’s back doing what he loves and what inspires him—connecting with a live audience—Fator couldn’t be more energized or excited.

How does it feel to be back in Vegas? I am so excited about getting back onstage live. I think I’ve continued to be creative this year, but it’s so much harder when you don’t have a real live audience in front of you. And it was such a disappointment for my last show at The Mirage to be: You do your thing on a Thursday and then get a call Sunday night saying all shows in Vegas are canceled. We had this whole thing planned where I was going to move to New York-New York, and we would have moving trucks with my poster on the side saying, “Terry’s Moving!” None of that got to happen.

What can we expect from this new show at New York-New York? Will we see a lot of the familiar songs and characters from your act or more new stuff? The format is completely different than anything I’ve done before. It’s kind of a whimsical origin story delving into the psychiatry of a ventriloquist and showing the interesting connections of how and why I created different characters. For example, the annoying neighbor, Dougie, he’s kind of the stoner dude. He’s really based on a friend from high school, but the guy turned into a successful businessman. Every time I’ve seen him in his

Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.

There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

COVID-19. It’s also considerate of fellow guests and resort workers.
