No doubt most of you visited Las Vegas this weekend for college hoops. I get it—we had to cancel the entire event last year, and a year without March Madness is— well, madness. Odds are most of you have a pent-up desire to get back to normal, and it doesn’t get much better than filling out a bracket (or 10) and watching games until you can’t keep your eyes open anymore. Luckily, Las Vegas has prepared plenty of options to keep you and your friends busy. I’ve rounded up just a few of the specials available (“The Madness Returns.” p. 17). Here’s hoping you all make it to the Final Four! Some of you might also be in town for St. Patrick’s Day revelry; again, that was all canceled last year as well, so some of you probably sleep at night with visions of leprechauns drinking green beer. Again, Las Vegas Magazine has you covered with a roundup of some of the best options on the Strip (“Go Green,” p. 20). Just remember: Party responsibly and safely! Speaking of which ... We here at Las Vegas Magazine are constantly thinking about your safety during your stay. After all, we are not out of the pandemic yet! So we’ve rounded up some of the best options that combine entertainment and worry-free conditions (“Vegas 9s: Activities for Small Groups in Las Vegas,” p. 24).
It’s no secret by now that a lot of Las Vegas shows are returning to the Strip and beyond. But some of the first shows to reopen were due to the efforts of Matt and Angela Stabile, the producers of such hits as Piff the Magic Dragon and the various “X” shows (“X” Burlesque, “X” Country, etc.) In this issue, editor at large Brock Radke sits down with the power couple to talk about the efforts it requires to mount a show during the current crisis (“Meeting the Challenge,” p. 22). Big-Time Flavor Although Las Vegas has transformed into a food mecca, there’s still room for the culinary scene to grow, and there may be no better chef to help guide Vegas into a new era of dining than David Chang, for his restaurant Majordomo Meat & Fish brings a fresh update to the standard steakhouse.

Start your meal here with a cocktail, such as the Majordomo Sour, a blend of bourbon, génépi, winter spice and lemon. But, honestly, any cocktail will pair well with an order of bing bread, a fluff y sort of pancake that’s dipped or topped with several accompaniments, such as chickpea dip or shaved foie gras. Other
appetizers include the crispy shrimp with cashew, sesame and honey butter, or the towering shellfish plateau. For the entrée, you’d be remiss to skip the smoked prime rib dinner, a massive hunk of Creekstone prime beef that’s smoked until medium rare. –Alex Haase

Twist and Shout There is no shortage of WTF moments in Las Vegas, but the thrill rides atop The STRAT SkyPod might top them all. At nearly 1,000 feet in the sky, a triple threat of death-defying experiences await: X-Scream, Insanity and Big Shot, all with their own unique brand of OMG that will stir you to the core. And if you can’t decide which ride to buckle into first, we can’t help you there, for they’re all equally terrifying. Best advice: Go with your gut, while you still have one. Undoubtedly, you’ll all scream on X-Scream, a roller coaster that resembles a seesaw, which teeters over the edge of the SkyPod and vigorously wobbles back and forth like a rock-a-bye baby gone wrong. As for Insanity, there’s no better name for this carousel (which is controlled by a monstrous mechanical arm) that dangles and spins 64 feet away from the tower. But the ride that really makes the STRAT SkyPod an adrenaline-infused cuckoo’s nest is Big Shot, a pneumatically powered ride that shuttles up and down the tower’s iconic space needle. Although it seems rather pedestrian now compared to the other rides, it’s still incredibly fun. And we all need a little LOL right now. –Alex Haase

California export Trustworthy Brewing Co. features a patio-style area perfect for catching the latest games and a bar that showcases the beverages made on-site. Do you ever put Pandora or Spotify on radio mode and just zone out to some of the greatest hits in rock history? Celebrity chef goes casual Before fiery chef Gordon Ramsay erected his popular Hell’s Kitchen restaurant located Stripside in front of Caesars Palace, he opened up his casual pub-style restaurant on the property, Gordon Ramsay Pub & Grill, almost a decade before. And, years later, it still draws in customers hungry for his elevated British-style pub food. And it never disappoints. The space is a mix of comfortable and lively, as the restaurant is located right in the heart of the casino-floor action. A blend of eatery and lounge, guests can opt to hang in the bar area, with a more laid-back vibe, or in the main dining room, with a patio-type area perfect for people watching and engaging conversation.

Beer fans will love the fact that there are dozens of beers on tap and more than 60 different labels of bottled beer. Enjoy a pint or two (or three!) of favorites like Stella Artois, Dogfish Head, Innis & Gunn, Guinness, Samuel Adams, Angry Orchard and Boddingtons. The restaurant also serves up specialty cocktails—try the Avon Came Upon Sin, a mix of Ketel One Botanical Cucumber and Mint vodka, St-Germain elderflower liqueur, rhubarb and lemon juice. Food here is the main attraction, though, and, of course, guests can consume Ramsay’s signature dish—the roasted beef Wellington. But try the master chef’s pub-inspired creations like the popular fish and chips, onion and ale soup,
crispy chicken paillard and the grilled pub burger made with English sharp cheddar and applewood smoked bacon. It’s a starter, but deserves the entrée spotlight—the short rib kettle chip nachos are served with English cheddar sauce, pickled peppers and sour cream. This is one British dish that gives the Mexican-food favorite a run for its money. End the meal, if your tummy can take it, with Ramsay’s classic sticky toffee pudding served with a side of vanilla ice cream. If you’re a fan of Giada De Laurentiis, a reservation at Giada offers a great way to sample the California-influenced flavors of the Food Network star. And the gorgeous interior is really welcoming! The menu has fresh seafood and antipasti choices such as bacon-wrapped dates with spicy Italian sausage and Gorgonzola cream and ricotta crostini with roasted tomatoes and Calabrian honey. Fresh salads with candied lemon peel, pancetta and Parmigiana-Reggiano can easily make a meal with the addition of grilled chicken or shrimp. Pasta and risotto come with a charming pronunciation guide next to each offering, so you are sure to be saying “spaghetti” or “bucatini” the Italian way. Entrées include veal chop saltimbocca or a 28-ounce bone-in Tuscan ribeye served with a sunny-side up egg. Italian fried chicken comes cacciatore-style. Joseph Cuellar
In the business of luxury and dream granting Joseph Cuellar and his company makes very specific dreams come true. As the operating partner for All Star Cars, he rents his clients some of the most coveted luxury cars on the market (like the brand-new Rolls Royce Cullinan he’s standing in front of). Cuellar and his partners opened All Star Cars at the end of last year. “It was the perfect time and opportunity for us to reinvent ourselves,” says the Boston native, who also split his time growing up in Colombia, South America. Cuellar has a successful background in management for the food and beverage and nightlife industries in both Miami and Las Vegas. He began his career in the Florida hot spot, working in restaurants and nightclubs. He eventually brought his talents to Las Vegas, first managing the city’s original daylife experience, Rehab at Hard Rock Hotel. He went on to manage nightlife at Park MGM at spots like On the Record and Juniper. Then he got together with his part-
ners last year, and the three of them decided to put all their nightlife and industry experience together to open All Star Cars. “We took all the knowledge that we learned from the hospitality and nightlife industries and put that into renting exotic cars in Las Vegas,” Cuellar says. “We also provide VIP concierge services, too—help book hotels, make reservations for restaurants, pool parties. We go above and beyond; we’re not just a rental car place. With our connections we just pick up the phone and make some calls or send some texts.” As the operating partner, Cuellar is responsible for overseeing daily operations, which includes taking inventory and training every position. “My favorite part of the job is when we show people the cars that they’ve always dreamed of and they get into the car and learn how to operate it,” he says. “And you can see the wow on their faces—see their dreams coming true.” –Kiko Miyasato

The Madness Returns
Catch college hoops action all around Las Vegas The pandemic put the brakes on March Madness in 2020, but it returns this year (albeit with safety measures put in place), and Las Vegas is again your party headquarters to enjoy all the hoops action. (Reservations are essential!) Westgate SuperBook and International Theater are available for “Hoops Central.” Tickets for the theater start at $50, which includes two free bottled domestic beers. The SuperBook has a limited number of VIP boxes, pods and reserved seating, and game day food and drink specials are available there as well as at The Court, I Bar, Westgate Ballroom and International Theater. Electra Cocktail Club at The Venetian hosts “March Mayhem” from March 18-21, with sta-

dium-style seating available to watch the action on a 40-foot digital screen while enjoying cuisine from either Moon Palace or Brera Osteria, coupled with a bucket of Stella Artois or Bud Light, a bottle of Jameson whiskey, Absolut Elyx vodka or Altos tequila, and six Red Bulls. Bold dishes like Thai basil beef fried rice, Hainanese steamed chicken and Singapore-style curry rice noodles display this new gem’s dynamic range. Just across the street at New YorkNew York, Italian institution Il Fornaio (702.650.6500) also returns to serving its diverse menu, running the gamut from pastas and pizzas to lightly fried baby squid and rotisserie rosemary chicken. And don’t forget the refreshing bellinis and mimosas on the faux patio for brunch to align with fresh-baked pastries from the in-house bakery. So much goodness! Speaking of weekend morning decadence, here’s a bonus brunch pick: Head west to Hearthstone (702.797.7344) at Red Rock Resort for buttermilk-fried chicken and bourbon maple syrup waffles, a chorizo-and-potato breakfast burrito, hand-shucked oysters and bottomless micheladas. Angela: We don’t have a set date just yet, but we’re waiting on (more) information from (officials). Hopefully it will happen in March when a larger (audience) capacity should go into effect.

While various Vegas shows are opening up again, the Stabiles have maintained performances by Piff and “X” Burlesque at
Matt: The new space came out to about 150 or 160 and it’s a cool little room. It will be a very intimate, close-up show, much like the old theater but much better technically, with better seats and acoustics.
the Flamingo and “X” Country at Harrah’s. We caught up with the behind-the-scenes powerhouse couple to look back on a challenging year and look forward to a brighter future. We’ve learned a lot over the last year about the resilience of the people in the Vegas entertainment industry. Was there something you’ve experienced in your different careers that helped prepare you to deal with the challenges you’ve encountered? Matt: I come from a TV background, and some of the big things you need in that business are to be resourceful and to really budget your money. You’ll have a couple great months and then have nothing for a month or two, and it’s all about learning to make things work and doing without. That helped me get through this a little bit, knowing what I’ve been through before, and also going through good times and understanding how to handle changes. Angela: Our shows weren’t nearly as successful as they are today, in the beginning. I think just learning from the entire experience, from our original opening of “X” Burlesque in 2002 and going through everything we have up until now. It’s been a long learning curve.
Your shows have been among the most popular and recognizable female revues on the Strip for years now. Do you think your ability to keep live performances going in recent months has increased their notoriety? Matt: It was a big move for us to stay open and it has worked out great, not just for us but for all our cast members and employees. It really boils down to a numbers game, and we’ve been fine-tuning the costs of each production every week. That’s a big part of what helped make it work.
You never got to put on that updated show in that new space. How different will it be? Angela: That’s right, we had just revamped the show. It’s never been seen. It will be brand new. There are some songs and choreography coming back because we don’t want to change the entire show. It’s classic rock, and rock is rock. The audience expects certain (songs). And I think that music may be even more popular now.

One big innovation was to change “X” Burlesque into a more intimate, VIP-style experience. It seems like that was a great move. Angela: It’s selling out now way in advance and although it’s only 30 seats, the audience has been giving us great feedback. Everyone loves the intimacy of the Private Edition and the Q&A session is really interesting. Audiences love it, the

And Nevada is no different, although its governor, Steve Sisolak, is slowly implementing these changes to make sure everyone is as safe as possible. Former Strip chefs find success and support in their ventures It is difficult to open a restaurant. You need a location, a lease, suppliers, staff— it’s daunting for a corporation
and even more so for individual chefs. But for former Strip chefs, owning a restaurant can be incredibly rewarding.

The route to opening and challenges inherent are different for every chef, including locals darling Johnny Church, who opened Johnny C’s Diner during the pandemic. “I signed my lease two weeks before all the closures … so I had to go for it. That was an unforeseen challenge for everybody, really, but to try to open up then was even more of a challenge,” said Church. Despite plans for a different style of restaurant (he was executive chef at Aureole at Mandalay Bay and a winner of Food Network show Chopped), Church pivoted to a diner to make the most of what was already there. When chef Gina Marinelli opened her Italian restaurant, La Strega, in early 2019, one of the most difficult things for her was “building a brand outside of the Strip! Taking that plunge and trying to create your own identity without the hotels is frightening.” Marinelli is known for her work at D.O.C.G. and Sage.

them from the Strip, like Marinelli’s work ethic, something that’s not surprising, considering the sheer number of covers a typical Strip restaurant serves on any given night. Daily experiences were very helpful, according to Blandino. “You gain an incredible amount of knowledge about all aspects of the business. Coordinating all the priorities involved day-to-day might have been the biggest thing.” Knowledge was key, too, for Church. “I just think, basically it sounds easy, but (knowing) quality, food costs and labor. They’re the three bases of operating your restaurant. I mean, obviously it’s a lot more deep than that, but having done this pretty much my whole life, I kind of know how to navigate those things.” That hard work pays off. Church’s restaurant weathered the harshness of 2020.
“The best experience is just the response that we’ve had locally has been amazing … in the last few weeks, we’ve just noticed that the business is getting better. We struggled for months now, but people are starting to talk about it, there’s buzz, and we’re appreciative,” he said. Blandino appreciates being part of the community, too. “When you’re on the Strip, you don’t necessarily have a lot of regular customers; in a neighborhood like this, it’s just the opposite. And I love it.” For Marinelli, showcasing her cooking skills is the beauty of opening her own place, “getting to cook and create with zero obstacles. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
