From the Editor Some Very Good News
This coming month is going to be very exciting for Las Vegas! To start the very good news, the Hakkasan Group announced that it will reopen three of its venues in March: Omnia at Caesars Palace, Wet Republic at MGM Grand (a recent recipient of a Las Vegas Magazine Hall of Fame honor!), and Liquid Pool Lounge at Aria. In addition, MGM Resorts International had all sorts of amazing announcements. In addition to returning to 24/7 operations at Mandalay Bay, Park MGM and Aria, a bunch of its shows will start up again in March: David Copperfield at MGM Grand, Carrot Top and Fantasy at Luxor, The Australian Bee Gees Show at Excalibur, and Terry Fator at New York-New York. For both our workforce and our tourism, this is a huge step toward returning to the Las Vegas everyone knows and loves. We’ve got a way to go, but this is huge progress! And rest assured: Once these venues and shows are back up and running, Las Vegas Magazine will be there to provide you with all the info you need to get the most out of the experience. In the meantime, there’s still plenty to feast on in this week’s issue. Yes, there are shows returning soon, but there are still plenty that you can see this week. I’ve rounded up some of the highlights for you (“Shows You Need to See Right Now,” p. 22).
Odds are you’ve come to Las Vegas partly for its food scene. If so, get ready to be seriously informed! We’ve got three great roundups, from great places for tableside presentations from managing editor Nina King (“Picture Perfect,” p. 20), restaurants that focus on vegetarian and vegan menus from associate editor Kiko Miyasato (“‘V’ For Victory,” p. 24), and a look at great restaurants both on and off the Strip from editor at large Brock Radke (“Tasting the Classics,” p. 18). One of the best things about Sin City is the sheer number of “bucket list” experiences. I’ve compiled a list of just some of them for this week’s issue (“9 Attractions You Can See Only in Vegas,” p. 26). Get that list out and begin checking off boxes! Rounding out this week’s issue: A look at an exciting new garden party-inspired lounge at Red Rock Resort, Crimson in Bloom (“The Spring Scene,” p. 17); an introduction to the general manager of a new sports bar at Palace Station, Tailgate Social (“Friends With Benefits: Ashley P,” p. 16); and a Spotlight on the new Legacy Club at Circa Resort & Casino (“Everlasting Influence,” p. 12). Italian Favorites Buddy V’s Ristorante at The Venetian equally combines upscale dining and home-cooking for a comfortable menu that Nonna would be proud to serve. When you visit, Grandma’s Meatballs may be the starter for you, with pork, veal, beef and topped with marinara and Parm. But speaking of Parm, My Wife’s Eggplant Parm may be right up your alley, breaded and fried, and covered in mozzarella, tomato and Parm. Although Cake Boss’ Buddy Valastro may have his faves, my boss’s choice is the Toscano salad. He raves about it, how each element—prosciutto, roasted artichokes, baby arugula, pecorino Romano and lemon vinaigrette—perfectly complements the next. Believe him. For the main event, My Mother-In-Law’s Linguine Shrimp Scampi combines garlic, spinach, tomatoes and white wine with lemon and pecorino for a fab dish, and Nonna’s Lasagna al Forno layers up ricotta, mozzarella, provolone, Italian sausage, beef and pork. Valastro’s Sunday Gravy piles a rich sauce with sausage, pork, lamb and meatballs over rigatoni. For dessert, Buddy’s Lobster Tail is magnificent, a pastry shell filled with custard cream and served with fruit. But you can’t go wrong with any choice here. –Nina King
Kick It Into Overdrive The pandemic has probably left you with a lot of pent-up energy and excitement, and one of the best ways to let it all out is at Pole Position Raceway. The vehicles at this indoor facility aren’t your average gas-up-and-go-karts—these babies are equipped with an 18-horsepower electric motor and can reach speeds up to 45 mph. Plus, these karts are only a few inches off the ground, so 45 mph feels much faster than you’d expect.

Since the name of the game is getting the best track time, accuracy is key. So while you may be tempted to go full-throttle in these karts, the 1/4-mile track has several sharp turns; therefore, braking, although less fun, is equally important as speed. The experience extends to the menu, a symphony of flavors that combine familiar and unique fare. Start with a classic cocktail—or two. We suggest the Melonball, a blend of Citron vodka, Midori liqueur, fresh citrus, honeydew, egg white and basil dust, or the champagne cocktail, served with a split of Veuve Clicquot champagne, Angostura bitters and a puff of cotton candy. Starters include classic caviar service, chilled shellfish like oysters and an impressive seafood tower. A popular dish is the wagyu and caviar hand roll topped with gold leaf and a soy glaze. So attractive and so delicious!
The supper club classics include lobster thermidor, Mary’s organic chicken and the 40-ounce dry-aged porterhouse, served with Mayfair’s own steak sauce. Pescatarians can delight in grilled black sea bass and roasted salmon; and vegetarians have entrée options, too, like a squash schnitzel with pomegranate brown butter or a cauliflower steak grilled in a pistachio vinaigrette. The cigar dessert is also an experience—a faux-smoking stogie made of milk chocolate. Or opt for a glass of brandy or whiskey (the spirits menu is extensive) alongside the cheese board, a blend of chef-selected cheeses, honeycomb and candied peanuts. Float On When The Venetian was built, its planners knew right away one element they could not do without: A replica of the Grand Canal in Venice. After all, without it, how would they replicate the gondola ride? It’s arguably the most iconic, romantic experience one can enjoy as part of a trip to Italy. So it would have been sacrilege to not replicate it in Las Vegas. And very romantic it is! It’s still one of the most popular attractions in Las Vegas after more than 20 years. But it’s not just couples—entire families can also be seen enjoying a song (or two) from their gondolier as their boat floats down the man-made waterways, snapping photos aplenty. And this is one attraction you’ll want to experience more than once— there are both indoor and outdoor options available. Here’s a “secret” tip: There’s a Gondolier March twice a day, at 9:50 a.m. and 4:20 p.m. Catch a team of gondoliers serenading the crowd along the indoor canal near the gondola turnaround. Bring Your Senses to Life If you are looking for a way to experience something totally new, try Blackout Dining in the Dark. This combination of gourmet restaurant and exciting attraction gives even the most jaded person something to talk about. When you enter, you’ll fill out a menu with your food preferences of sweet, savory or spicy, and make sure any allergies are known (you can also indicate this when making your reservation, but double-checking with the host is always a good idea).

From there, drop off your phone and belongings and let yourself be guided into the darkness within. It’s lightless in the dining room, and you are encouraged to use your senses of taste and smell to decipher what you are eating and drinking. In a nod to all the Vegas movers and shakers who helped shape Las Vegas, the swanky Legacy Club glorifies luminaries like Howard Hughes, Benny Binion, Sam Boyd and many more with custom metal busts and beautifully painted portraits. A Tour to Remember
Exhibit fully immerses you in ship’s fateful story You’ve seen James Cameron’s impressive blockbuster movie about it. (Actually, you’ve seen it multiple times, haven’t you? Admit it!) The story of the Titanic remains one of the most fascinating in history, partly because of the sheer scope of the ship itself, and partly because of the seemingly endless storylines of the passengers. And if you want to look inside the stories of the real people involved (sorry, Jack and Rose never existed), then head straight to Titanic: The Artifact Exhibition. Partly museum and partly interactive experience, this attraction is absorbing to the point of distraction. No detail is left out: the design of the ship (and the efforts to get it built); re-creations

of cabins; profiles of some of the famous people who stayed in those cabins; a simulation of the deck of the ship on the fateful night it sank, complete with accurate air temperature; and a large piece of ice you can touch to give you an idea of just how cold it was that night. The information you take in during this unforgettable tour will stay with you for some time. What makes it particularly powerful is that, upon entering, you are given the name of one of the passengers, and must go through the whole exhibit before you’re able to ascertain if your passenger survived. (There’s a large wall at the end that lists those who survived and those who did not.)
One thing the movie got right: That amazingly ornate grand staircase, here immaculately re-created to give you some sense of how opulent and grandiose this whole project was. It’s almost like they tried to put Las Vegas on a boat! Perhaps the most striking part of Titanic is The Big Piece, a huge section of the actual ship. Regardless of how you’ve seen it in your mind, nothing can compare you for the absolute reality of this spectacle. In an instant, you are transported to that night, wondering how it must have felt as this beast began to sink. Hot Dishes It’s March in Las Vegas, and that means pleasant weather, and the stroll through Caesars Palace’s Roman Plaza puts you in the mood for an excellent meal at Hell’s Kitchen. Inside, you’ll feel the energy both in the vibrant red-andblue decor and in the open kitchen that emulates the Red and Blue Kitchens of TV fame. The menu, too, reminds you of the show, with some of the most famous dishes being served here. Starters include the pan-seared scallops, a dish Ramsay is emphatic about chefs getting right (perfectly cooked, neither over nor under); golden beet salad; and lobster risotto (another one that the chef gets testy about). For your entrée, beef Wellington, possibly Ramsay’s most well-known dish, is an easy choice, tender beef wrapped in puff pastry with mushroom duxelles and a potato purée beneath. Other great choices are crispy skin salmon or filet mignon. And for dessert, of course you need to order the signature sticky toffee pudding that anyone who has tried it raves about. Chill Out Baby, it’s cold inside! Wall-to-wall and seat-toseat, it’s all ice inside Icebar. With 90 tons of imported Canadian ice making up the lounge and bar, guests are treated to a wintry wonderland with impressive ice sculpture and experiences, like sitting on a sculpture of a throne or snapping photos with Vegas Golden Knights memorabilia framed inside ice. Since the temps are freezing, every guest is supplied with parkas or faux-fur coats and gloves. A Little Off the Top Ready to cut loose a bit? Yes, you are, and SkyJump Las Vegas lets you literally jump off a building. The attraction, situated on the 108th floor of the iconic STRAT, gets you suited up into a parachute-style harness that allows you to reach a speed of up to 40 mph during your descent. Don’t worry, though, you are securely attached to a cable that controls your descent, and guide wires that ensure you stay on course—straight for

the ground. If you want family or friends to check out your jump, there is an area where they can watch you. They might not be the only people to see you, though, as you’ll jump right past diners enjoying cocktails within the Top of the World restaurant. It’s pretty wild. Ashley Oglesby
Moving past the pandemic towards success Like a lot of people, Ashley Oglesby found herself without a job after the pandemic hit. “I didn’t know what was going to happen, especially with the restaurant industry,” she says. “At that point it was scary because this career is my passion—it’s what I’ve done for so long.” Oglesby flourished within the Las Vegas food and beverage industry, working her way up from a hostess to her previous position as assistant general manager at Searsucker at Caesars Palace. She’s worked in hot-spot restaurants on and off the Strip for more than a decade, but she found herself out of a job at the end of last year. And just when she thought she might have to switch careers, she got a call to come help open and manage Palace Station’s new sports bar, Tailgate Social. “It was an amazing opportunity,” Oglesby says. “It’s the strongest leadership role I’ve had, and I take so much pride in it. It’s been so rewarding, especially during a time like this.”
As the general manager, she’s responsible for the whole Tailgate team, keeping up on trends in the industry, helping with menu creations and brushing up on her sports knowledge. “Every day I’m constantly learning and growing; there’s always something new going on,” she says. “I’m just so grateful and humbled by it. I’m just amazed how far I’ve come in this industry. I’m a pretty young female and I didn’t think I’d be this far before my 30s, into a GM position. That strong work ethic has always been there.” Oglesby is also grateful and happy to be working at a place where locals and visitors alike can come and enjoy themselves in a fun yet safe environment. “People are grateful just to have a place to come out to,” she says. “Have that environment for people to go to where they can cheer on their favorite team, have a cocktail, some food, some fun. We’re trying to take people’s minds off of what is going on in the world for a little bit.” –Kiko Miyasato

Garden party-inspired lounge offers gourmet cocktails It’s official! One of the biggest trends of 2020 was the yearning for a garden. And although the official start to spring is a few weeks away, you can still take advantage of pleasant springlike nights at Crimson in Bloom, and indulge your plant-loving self with a night out. This indoor/ outdoor lounge at Red Rock Resort celebrated the holidays with festivities this past winter, and is now blossoming with its newest incarnation Friday through Sunday (through May 16). The terrace lounge is adorned with garden-inspired decor, and that starts with a canopy in the entrance tunnel, and flowers, greenery and those guardians of the garden, gnomes, rounding out the interior. While those are undoubtedly a breath of fresh air (and perfect for your

Instagram posts), you may be more inspired by the Flower Cart that trundles around, prepping for tableside service with rosé, champagne, and rosé cocktails. Better yet are the DJs playing Friday and Saturday, and the drinks created with a natural theme. Those come in several mini themes such as the Herb Garden, the Botanical Garden and the Produce Garden. From the Herb Garden, choose the Lavender, concocted with Absolut Elyx, lavender, orgeat, Red Bull blueberry and lemon. It’s topped with an edible flower lollipop! How many licks before you bite? The Orange Blossom hails from the Botanical Garden and features Roku gin, lime coconut, orange blossom and soda, with a garnish of fondant flowers.
Other standout cocktails include the Thyme and the Vanilla Orchid. You’ll need sustenance, of course, whether it’s a picturesque charcuterie board, filled with meats, cheese, fruit, crackers and honey, or a decadent dessert from the resort’s bake shop. There are two decorated bars at the lounge, one indoor and one outdoor, both complemented by lush hanging floral arrangements. The family behind ever-crowded Fremont East eatery Le Thai has opened 8 East (702.726.5508), a versatile pan-Asian spot on the casino’s second floor. Bold flavors are creating big buzz here with addictive bites like ginger chicken dumplings, pork belly bao, salt and Szechuan pepper chicken wings and cumin lamb lollipops. And check out the deals at 8 East’s happy hour. The “other side” of downtown dining can be found in the Arts District along Main Street, and the restaurant everyone is talking about is Main St. Provisions (702.457.0111). Created by industry veterans Kim Owens and Justin Kingsley Hall, MSP is one of the most highly anticipated openings in recent history, making its debut during challenging circumstances in the winter and finding full support from affectionate locals. Hall’s comfort cuisine includes venison tataki, charcoal-roasted quail, New Orleans-style barbecue prawns and rabbit boudin sausage, demonstrating a range of influences and seasonality. This is the place to settle in and warm up. When you’re talking comfort food, pizza is always at the top of everyone’s list of cravings. San Diego’s landmark Landini’s (702.205.2249) just opened its first Vegas location in the southwest valley, bringing its beloved thin-crust pies from Little Italy to Sin City. Other favorite dishes on this family-operated restaurant’s menu include meatballs with marina and ricotta, Buffalo chicken pizza, pasta puttanesca, baked eggplant parmigiana and unforgettable tiramisu. Tableside dining creates exciting scenes for sight and olfactory senses Doing things that you might not do at home is one of the best reasons to come to Vegas. Whether it’s a massive cut of meat brought sizzling from the grill, dressing made from the freshest ingredients, or dessert that lights up your night, tableside dining experiences make your Vegas trip so much more ... Vegas! Why don’t we start with dessert, specifically bananas Foster? This classic dessert was invented in the 1950s in New Orleans, so it seems fitting that it is a feature at Delmonico Steakhouse (The Venetian, 702.414.3737). Your server will bring the ingredients tableside and cook the bananas along with other ingredients, such as sugar and, of course, rum, which creates an impressive flame as much of the alcohol burns off. The smell is incredible, and the presentation will have everyone looking your way. This dessert is meant to serve two. Speaking of fire, Zuma (The Cosmopolitan, 877.893.2001) brings that to you, too, in an impressive cocktail known as Burning History. Here, your cocktail is carried to you tableside in a shaker with ice and garnish. Then, a wooden barrel stave is persistently torched until it catches fire, the fire is gently put out with a wave of the hand and an upturned glass catches the resulting smoke. Ice and the beverage mixture—yuzo, Japanese whiskey and other ingredients—is placed and poured in the glass, which is topped with an orange slice garnish. The flavor? Fabulous.

El Dorado Cantina, near the Strip (3025 Sammy Davis Jr. Drive, 702.722.2289), is a favorite of Las Vegas locals and in-the-know visitors, serving up regional Mexican cuisine with healthy, fresh ingredients in a picturesque inside, perfect for a pic or two. It’s de rigueur to order tableside guacamole when you dine here. When the cart pulls up to your table, it’s hard to pull your eyes away; fresh Hass avocados are crushed in a stone molcajete with serranos, onion, tomato, garlic and cilantro to create a delicious starter. Even diners who have previously professed their dislike for avocados may be tempted by this beauty of a dish. If you love your beef, the tomahawk at Andiamo Steakhouse (The D, 702.388.2220) is a long-bone, 32-ounce, charred steak presented to you and carved tableside. You’ll want to share this with your dining partner, but might want to hog up the signature Zip sauce for
yourself. The Caesar salad here is also prepared tableside (two-guest minimum), a classic with egg, anchovy, lemon, garlic, olive oil and Parmigiano-Reggiano briskly whisked to the perfect consistency. Tableside Caesar salads are also available at Carbone (Aria, 877.230.2742), where plush seating sunk into a circular dining room complements the attention to detail from your server. You could go full tableside circle at Rat Pack-era Golden Steer (308 W. Sahara Ave, 702.384.4470), where Frank Sinatra and crew were frequent patrons. Start with the Caesar, get chateaubriand carved tableside, and let the flambée of cherries Jubilee end the night right.

It will still be quite awhile before Las Vegas sees the full return of its production shows, stars and music acts. Restrictions on crowd size, coupled with social distancing guidelines, have made it a challenge for many shows to come back right away. But the survivor spirit is strong in Las Vegas, and there are still a handful of fantastic shows more than worth the price of admission. And let’s be honest: You can’t put a price tag on the memories you get from a Las Vegas show.
Two of the shows feature former America’s Got Talent contestants, and while neither won the grand prize of $1 million, they did get the other half: A headlining show in Las Vegas. Piff the Magic Dragon (Flamingo, 13+, 702.777.2782) had to move his show from his usual venue to the larger Flamingo Showroom in order to accommodate more fans and still allow for social distancing, but his sardonic wit, deft sleight-of hand-and the ever-present Mr. Piffles (his tiny, super-chill dog) are still as entertaining as ever. Another major difference: Now Tape Face, famous for his nonverbal skills, takes the tape off and talks! At least for the beginning of the show, after which things go back to normal—well, as normal as they can be when Tape Face is involved. The laughs continue at Brad Garrett’s Comedy Club (MGM Grand, 21+, 888.740.7711), where the legendary funnyman rounds up some of the most talented comedians of the day for a night of stand-up. If you ever watched HBO’s Young Comedian specials way back when and wished you could have seen the stars of tomorrow, now’s your chance. Topless entertainment has also made its return, in the form of two shows: “X” Burlesque (Flamingo, 18+, 702.777.2782) and “X” Country (Harrah’s, 18+, 702.777.2782). Both feature amazingly athletic ladies dancing to some of the greatest hits of pop, rock and country of the last few decades. Their energy onstage is infectious; you’re likely to keep telling yourself, “I’ll bet I can do that!” (Although deep down you know you can’t. You really can’t.) If your tastes veer more toward hot men than women, Thunder From Down Under (Excalibur, 18+, 702.597.7600) is just the ticket, mate. These Aussie hunks fulfill your wildest desires in the garb of firemen, policemen, construction workers, and … well, we’ll let you fill in the rest with your overly fertile imagination.

Family entertainment is still alive and well in Las Vegas with the return of Extravaganza—The Vegas Spectacular (Bally’s, 702.777.2782), a throwback to the days of the variety show. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
