As more and more people are getting the COVID-19 vaccine and Las Vegas begins its slow but steady ramp-up to full operations, things are beginning to feel—dare we say it?—a little less crazy. They’re certainly a long way from “normal,” but that’s OK—we’ll take what we can get when we can get it! And in the meantime, it’s time to remember that for millions of us, there’s that special someone in your life, someone maybe you’ve unintentionally neglected over the last year or so while you were focusing on the craziness that was 2020. Luckily, Las Vegas Magazine has got not one, but two different stories on how to best enjoy Valentine’s Day. After all, if there’s one thing this world needs more of right now, it’s love, love, love. Start with associate editor Kiko Miyasato’s spotlight roundup (“Love Me Tender,” p. 10). Then turn to managing editor Nina King’s latest installment of our “Vegas 9s” series (“Nine Places to Celebrate Valentine’s Day in Las Vegas,” p. 20). You may think you have a good plan to celebrate this special holiday, but trust us: We can help you top it. Our “love” theme continues with Miyasato’s feature on the Bellagio Conservatory and Botanical Garden’s latest exhibit to help celebrate Lunar New Year (“Love Is All Around,” p. 26). It’s a lovingly curated
exhibit titled “A Season of Love,” and it will engage your heart and mind as you contemplate the nature of love and how it’s manifested itself in art over the years. And who doesn’t love music? Las Vegas Magazine’s Alex Haase has rounded up some of the greatest albums ever recorded in Las Vegas (“The Sound of Vegas,” p. 22). Read this article, pull out your phone, pull up your favorite music app and get ready to really get—and stay in—a Vegas state of mind while you’re here. Shakespeare wrote about how music is the food of love. We’re not sure what he would say about actual food, but we certainly have plenty to say about it in this issue. We’ve rounded up some of our favorite restaurants to help you plan that next special meal, from Mott 32 at The Palazzo (“Your Lucky Day,” p. 8) to Osteria Fiorella at Red Rock Resort (“Classic Italian,” p. 12). We know something the ladies out there will love: Thunder From Down Under, the all-male revue featuring hard bodies from Australia, makes its return to the Excalibur (“The Blokes are Back!” p. 7). Love Las Vegas’ attractions? How about a visit to Siegfried & Roy’s Secret Garden and Dolphin Habitat (“Rawrrrrrrrr!” p. 15). Yes, we’ve filled this issue with love. Your Lucky Day If you’re celebrating Chinese New Year, you have a lot of options in Las Vegas, including at Mott 32, a study in luxury with incredible decor. Order specialties like a Peking-style spicy crispy duck rack, the applewood roasted 42 days Peking duck “Signature Mott 32 Cut,” or the signature 36-month acorn-fed barbecue Pluma Iberico pork off the barbecue menu. Other options include varieties of bird’s nest soup, whole Dungeness crab, a signature smoked black cod and A5 Japanese Miyazaki wagyu. One of the best ways to get the most out of your visit to the restaurant is to opt for the tasting menu. Current selections on that menu include sesame prawn toast, shrimp wonton soup, king prawn clay pot or sweet and sour pork, duck fried rice and guava pudding. It’s $58, with an optional $58 wine pairing menu. That’s pretty sweet. This week, Mott 32 has planned a menu to help celebrate Chinese New Year, including such dishes as pan-fried prawns, whole Maine lobster, crispy fried squab, steamed fish head with chopped red chili and a fried pumpkin rice ball. Feel the Rush Take a drive about 30 minutes from the Las Vegas Strip out into the desert for a seriously fun adventure, Vegas ATV Adventures, to be exact. The company provides guests with offroad ATV tours. Rip it up and down across the desert floor for an hour, enjoying miles of rolling bumps, sand and gravel, in your choice of a Polaris 330, 450 or RZR. All ATVs are automatic and there’s no clutch and no shifting, so the vehicles suit every skill level.

Classic Italian Chef Marc Vetri’s restaurant at Palms, Vetri Cucina, was a casualty of the pandemic (as Palms remains closed indefinitely). But in July, Vetri and his team set up shop at Terra Rossa at Red Rock Resort for a quick culinary takeover with Osteria Fiorella, a popup restaurant based on Fiorella, Vetri’s popular pasta joint in Philly. Then, by August, Osteria Fiorella went from popup to permanent, replacing Terra Rossa. With classic and unpretentious Italian favorites, along with fresh pastas, breads, wood-fired pizzas, meats and more, there’s no doubting why the restaurant continues to impress diners. A few favorites include Sal’s meatballs served with whipped ricotta and a slice of focaccia; rigatoni topped with sausage ragu and Parmigiano-Reggiano; classic Margherita pizza; and a veal Parm with buffalo mozzarella and San Marzano tomato sauce. Other worthy bites include the prosciutto with red wine poached pears, the endive Caesar salad and the fried Brussels sprouts with maple glaze. Transport yourself into the tropics with a stroll through Siegfried & Roy’s Secret Garden and Dolphin Habitat. The lush attraction features several exotic species of white lions and white tigers (as well as other types, too, like leopards), which are likely to be seen lounging here and there, playing a bit, and even swimming. When you first enter the complex you’ll see the pools with four generations of bottlenose dolphins. The pools feature connecting passageways and an underground area where you can get a peek. Once you experience the beauty of The Mirage’s creatures, check out the Sustainability Discovery Center, where you can find out all sorts of information about wildlife preservation, ocean pollution and water conservation. The complex opened in 1990, a perfect home for the big cats of magicians Siegfried Fischbacher and Roy Horn, who were passionate about the creatures. (One story goes that the two magicians met when Horn smuggled a big cat onto a cruise ship Fischbacher was performing on). The Secret Garden became the perfect place to extend their message on conservation to the masses. –Nina King

Chris Leavitt
All roads lead to Las Vegas for this mixologist Some call it fate—the way life unfolds as you connect the dots. When one thing leads to another and brings you right where you want to be. When it comes to his career, that’s how it happened for Chris Leavitt, mixologist for Barry’s Downtown Prime at Circa Resort & Casino. After graduating from Penn State University, Leavitt got a job in pharmaceutical sales and was sent to Las Vegas on a business trip. While he was in town, he decided to visit the many bars (he worked as a bartender while he was putting himself through college) and wanted to check out the local industry. “I got a sense and a feel for what this town was all about from that point of view, and realized the caliber and skill was so much higher than I had ever seen before,” Leavitt says. After he went home, he couldn’t get the idea out of his head; he knew at that point he was done with sales and wanted to bartend full time. So he made the move to Vegas in 2016.
Over the next few years, Leavitt sharpened his skills, bartending for hot spot Carson Kitchen, then working as a mixologist consultant for Red Rock Resort and Palms, where he helped launch the cocktail program for Scotch 80 during that property’s multimillion-dollar rebranding. Then, for personal reasons, he returned to his home state of Pennsylvania. A couple of years later, he got an offer to come back to Vegas from the team he worked with at Scotch 80, which was now opening Barry’s. He jumped at the chance to come back. “I’m super lucky to be a part of this team, just on the level of passion that everyone has here, from the kitchen to the front of the house,” Leavitt says. “My career—it’s been a crazy ride, honestly. Every step I’ve taken, every job, to be a part of all these great things. To work where I’ve worked. It’s all been more than I’ve ever expected. It’s all led to Vegas and my career. A Monster Hit
Beer Zombies is lighting up the craft scene The name zombies may conjure up images of the undead; in the case of the Beer Zombies, the name references founder Chris Jacobs’ background in art, as his company’s logo over time merged into an image of a zombie’s face with a beard in the shape of a hop cone. A self-described beer geek, Jacobs grew up near Chico, Calif., home to the craft brewing pioneer Sierra Nevada. After moving to Las Vegas in 1995 and overseeing various craft beer programs, he shifted gears to go all in on creating his own brand that now encompasses a contract brew, craft beer bottle shops in Las Vegas and Salt Lake City, a future brewery in the works, and an annual beer festival (temporarily put on hold due to COVID-19).

His bottle shops sell beers exclusively from breweries that are 100 percent independent. A recent visit to the Warm Springs/Durango store found several of the 21 taps and 100-plus cans representing Nevada-brewed beers from Able Baker, Astronomy, Lead Dog and Revision; and gems from craft breweries such as Evil Twin. A new upcoming location in Downtown Summerlin will differ from the other two Vegas SkinnyFats collaborations by offering an eclectic menu by chef Marc Marrone, pairing foods that go well with beer (think pizza, tacos and bao buns). The initial beerfest in 2017 drew 200 attendees, and grew exponentially to attract 3,500 in its last rendition in 2020. Unlike most other fests, the beers are selected and paid for by
Jacobs, and represent beers he deems worthy of being imbibed by his paying customers. He hopes to resurrect the fest by the end of 2021. The monthly Beer Zombies releases, available in 18 states and four countries, are contract brewed by California-based Mason Ale Works, but in early 2022 Jacobs plans to open his own 15-bbl brewery next to his Dean Martin Drive location. The future of Beer Zombies looks quite bright. You definitely have your work cut out for you deciding what to order for your main course, given the wide range of styles of barbecue available. A great option is the Carolina pulled pork sandwich, featuring delicious slices of seasoned pork butts, slow-smoked for up to 14 hours and pulled with barbecue sauce and dry rub. You can’t go wrong with dry-rubbed and hickory-smoked Memphis-style pork spare ribs, and ditto for sliced Texas beef brisket, slow-smoked and drizzled with barbecue sauce.
But here’s the best part: If you want all three, you can do that. Just order The Pig Out! This beast, which feeds two, puts together the Memphis-style ribs, Texas brisket and Carolina pulled pork, not to mention one half of a smoked, barbecued chicken. Don’t forget the dessert! As you’d expect at a great barbecue joint, Virgil’s features a killer banana pudding, piled high with vanilla wafers and chock-full of big banana slices. If that’s not your thing, no problem—there’s also carb-crazy chocolate cake and apple pie, not to mention milkshakes (with chocolate straws, of course!). IT’S BEEN A TOUGH YEAR WITHOUT VEGAS SHOWS. And as the pandemic rages on, it’s unclear when the city’s wonderful entertainers will make their long-awaited return. In the meantime, however, there’s an entire recorded history of Vegas entertainment, all of which can be accessed with a quick YouTube or Spotify search (and if you can find these performances on vinyl, bonus). Not only can you reminisce on concerts you may have seen in the past, such as Celine Dion or Diana Ross, but you can take a nostalgic trip back to the classic days of Vegas when the Rat Pack and the world’s most popular lounge singers reigned.
Sinatra at the Sands by Frank Sinatra (1966) It’s hard to argue that this isn’t the quintessential Vegas concert album. Not only is it the legendary collaboration between Sinatra, the Count Basie Orchestra and Quincy Jones, but it’s a musical time machine that transports listeners to the zenith of Vegas entertainment. Live at the Sands (Before Frank) by the Count Basie Orchestra (1966) A great companion to Sinatra at the Sands, this album showcases the legendary big band that backed Frank. Play the two albums one after another, and you’ll know what an
evening at the Sands during the ’60s felt like. Elvis In Person and On Stage (1969 & 1970, International Hotel) For any fan of The King, these two albums are required listening. In Person is the familiar Elvis, with lively versions of songs like “Blue Suede Shoes,” while On Stage is the Elvis in transformation, singing unfamiliar tunes that would become signature songs, like “See See Rider.” A New Day… Live in Las Vegas by Celine Dion (2003, Caesars Palace) Dion helped usher Vegas into

a new era of entertainment, and A New Day… was the show that started it all (inspiring entertainers like Elton John and Rod Stewart to try out Vegas reseidencies of their own). Live in Las Vegas, by Dave Matthews and Tim Reynolds (2009, Planet Hollywood) People either love or hate Dave Matthews’ music, but this concert features such masterful guitar playing and singing, one would be stubborn not to appreciate the musicianship on display between this duo.
Las Vegas Prima Style, by Louis Prima and Keely Smith (1958, Sahara) No one embodied the word “fun” more than Prima. Here, he, singer Keely Smith and saxophonist Sam Butera go full throttle, creating a lively atmosphere that makes it impossible to sit still.
Farewell by Diana Ross & the Supremes (1970, New Frontier) In a goodbye to lead singer Diana Ross, who later embarked on a successful solo career, the Supremes run through all their biggest hits and enjoy banter with several celebrities in attendance, such as Smokey Robinson and Marvin Gaye.
Vider Las Vegas, by Gary Vider (2019, Rio) Recorded at the Las Vegas outpost of New York City’s Comedy Cellar, Vider’s debut comedy album showcases the distinctive low-energy, deadpan style that found him modest success on America’s Got Talent. His jokes are punchy, well-written and deserve to be heard above ground. At the Sands, by Nat King Cole (1960) “Cool” accurately describes the vibe of Las Vegas in the late ’50s and early ’60s, and no singer was cooler than Cole. In this album, which is Cole’s only official live recording, his voice is mesmerizing, tender, vibrant and, well, undeniably cool. The Rat Pack: Live at the Sands (1963) In this compilation, you get a taste of the Rat Pack everyone remembers, with performances from Dean, Frank and Sammy, as well as several exchanges between all three where they schmooze, sing and joke with each other and the audience. Tom Jones Live in Las Vegas (1969, Flamingo) It’s Jones’ highest-charting album in the U.S., and the reasons why are not unusual— he’s in top form in this recording, singing energetic renditions of “Turn On Your Love Light,” “Hard to Handle,” “Hey Jude” and other popular songs of the day, including his own big hit, “It’s Not Unusual.” Live at the House of Blues by Jethro Tull (1999) Within the first few minutes of this concert, it’s not clear if it’s a rock show or a renaissance fair, but this album helps exhibit
Vegas’ musical paradigm shift from aging lounge acts to aging rock stars. Live! at the Desert Inn, by Bobby Darin (1971) Darin was a consummate entertainer, and his stage presence is palpable in this recording. Here, he gives the goods like “Mack the Knife” and “If I Were a Carpenter,” as well as politically charged songs like Laura Nyro’s “Save the Country.” House of Yes: Live from House of Blues by Yes (1999) Even if you’re not a fan of the prog-rockers, this album is difficult to turn off. The recording quality is superb, there’s an unmistakable energy between band and audience, and the group is in tip-top musical shape. Noël Coward at Las Vegas (1955, Desert Inn) Whimsical, surreal and irreverent, the legendary playwright masterfully showcases his biting English wit while singing his own show tunes. He also throws in a truly hilarious version of Cole Porter’s “Let’s Do It.” Lena at the Sands by Lena Horne (1960) The beauty of listening to this album is it reminds you of the days when great singers were great interpreters of songs, and not just pretty pop stars to ogle. Horne wasn’t really known for these tunes, but she makes them her own, singing with elegance and grace. One Night Only, by Bee Gees (1997, MGM Grand) Although it was the farewell show that eventually became a see-you-later concert, the group
performed like it was the end, throwing everything they could at the audience, singing hit songs from every decade during their career, such as “To Love Somebody,” “I Started a Joke” and “Stayin’ Alive.” Jackpot! by Dave Brubeck (1968, Tropicana)
Brubeck’s Vegas set really plays up the gambling theme (“Ace in the Hole,” “Jackpot,” “Win a Few, Lose a Few”), but hey, when in Rome, right? The record is hard to find, but for audiophiles who love the Dave Brubeck Quartet’s classic lineup and Vegas, it’s definitely worth tracking down.

ry designer Ed Libby. Stroll and let each scene sink in, like the impressive centerpiece of the conservatory, the West Bed’s tribute to “a very beautiful interpretation of an ancient
Asian love story of two lovers who crossed over on magpies each year to meet,” Libby says. Bonsai and willow trees, a towering jade temple, rain fountains, metallic cattail plants and a giant moon stamped with the Ox symbol add to the whimsy and wonderment of the display. A Feng Shui master, brought in to help lay out the flow of good energy throughout the Conservatory, recommended that the North Bed pay tribute to children and travel. This is where the floral replica of the Temple of the Six Banyan trees stands tall and symbolizes family as traditionally, “this is a temple where children are taken to be blessed when they’re adopted,” Libby says. You’ll also find oversized statues of children, made with fresh-cut flowers, and a boat sailing across the waters that lends to the display’s theme. This is also where a large koi fish springs from the water and represents the Conservatory’s dedication to the use of cutting-edge technology—it was created using a 3D printer. (More 3D-printed technology can be seen hanging from the ceiling in the form of giant jade medallions.) The East Bed is a perfect picture spot— honestly, the whole space is filled with Instagram-worthy moments—as two giant
golden oxen stand on top of an expansive red bridge. Above, gold cherry blossom branches spread spectacularly across the display. Below you’ll find a pond with live koi fish—these are second- and third-generation fish, born in the property’s holding facility, where a dedicated animal specialist oversees their care. Each display at the Conservatory is built three to six months in advance, with the design process taking a full year. It’s all drawn out by hand first, followed by a more detailed hand drawing, then renderings are made, then builders and artists are brought in to bring each scene to life. The horticulture team tends to the gardens every day, hand-watering and pruning the flowers and foliage. For this particular display nearly 63,000 plants and flowers were used with more than 46,000 fresh-cut flowers and more than 12,000 blooming plants. “I always encourage the public to see the display during the day and at night,” Libby says. “There’s such a beautiful lighting system in here, and the props light beautifully. Coming back in the evening is a completely different experience. Seeing it illuminated at night is really special. (It) can be more tranquil and romantic.”

At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
