If you’re like me, you cannot wait for 2020 to be over. It probably doesn’t need to be said, but I’m going to say it anyway: Worst. Year. Ever. And as 2021 looms on the horizon, I’m looking forward to the positive things that next year will bring. Some of those include the opening of Resorts World Las Vegas, a 3,500-room megaresort that promises to be a stunner inside and out; Donny Osmond’s triumphant return to Las Vegas in his own residency at Harrah’s in August; and the opening of Virgin Hotels Las Vegas in place of the former Hard Rock Hotel on Harmon and Paradise. When planning your trip to Vegas next year, definitely put all three of these on your schedule. And there’s another reason to look forward to 2021: You’ll get to discover downtown’s newest jewel, Circa Resort & Casino, the brainchild of Derek Stevens, who’s already put quite a stamp on the area with his hotel The D. Trust us: Circa is going to change the face of downtown. We are so impressed by this property that we’ve dedicated most of this week’s issue to it; Las Vegas Magazine’s Kiko Miyasato will take you on a tour of this sensational destination (“A Legend is Born,” p. 18). We have no doubt that once you’ve seen what this property has to offer, you’ll make it your next must-visit while in town. And

Bold Clucking The Crack Shack at Park MGM makes some bold claims, both with its irreverent name and with its messaging: “We are not your average restaurant—and this is not your average chicken.” Fans of the breaded bird, however, don’t feel that the claims are unjustifiably bold, just honest. The restaurant’s “Southern Californian” fried chicken is made from free-range jidori chickens, which generally results in juicier meat. Get that chicken in large platters with five or 10 pieces (half or whole bird) and a choice of sauces for dipping—choose from sweet heat, spicy, toro and honey butter. You can also get those in large meals, which add in chicken nuggets and sides like mini biscuits and slaw. Sandwiches layer a variety of chicken forms, from the BAE, with bacon avocado and egg on a brioche bun, to the Señor Croque, with fried chicken, fried egg, bacon and cheddar on brioche. But you can also get a ground chicken burger, piled high with two patties, pickles, fried onions and avocado, or a grilled chicken sandwich that sports caper mayo and Caesar dressing. And there’s a varied range of bowls if a sandwich doesn’t appeal. We think you’ll agree— bold is beautiful. –Nina King

Head to Adventuredome to test your mettle on the newest ride—NebulaZ. Here, four arms with gondolas at each end turn end over end while also rotating along a center axis, creating a dizzying journey as the gondolas pass each other going up, down and around. It’s not for the youngest kids, but NebulaZ welcomes riders of many ages, as long as they are at least 42 inches tall. Venetian restaurant replicates the bistro experience If you’re a true connoisseur of fine food, the name “Thomas Keller” no doubt will give you goosebumps. After all, Keller is associated with some of the most famous restaurants in the world, including The French Laundry or Bouchon Bistro in Yountville, Calif., which between them have won every award known to man. And yes, getting a table at either is no easy feat. But just because you’re in Las Vegas doesn’t mean you have to miss out on Keller’s genius. You’ll get the full French experience he offers at Bouchon in The Venetian. Bouchon aims to replicate French bistro classics, all with Keller’s inimitable spin. Start your

meal by choosing from an enormous collection of starters, all equally flavorful and mouthwatering. We particularly recommend escargots de Bourgogne, featuring Burgundy snails in parsley-garlic butter and accompanied by a Bouchon Bakery puff pastry. (While you’re at the host property, make sure to pay a visit to Bouchon Bakery, where you can enjoy macarons and many other Parisian delights.) Main courses here are equally tempting, especially the truffle croque madame, a grilled ham and cheese sandwich on brioche smothered with truffle Mornay sauce and topped with a fried egg and served with truffle fries; moules au safran,
Maine bouchot mussels steamed with white wine, Dijon mustard and saffron and served with fries; and poulet roti, roasted chicken with carmelized Brussels sprouts, bacon lardons and Dijon chicken jus. As you would expect at a French restaurant, desserts here are delightful and the perfect end to your experience. Take your choice of a crème brûlée with vanilla bean custard, tarte au citron with lemon sabayon and pine nut crust, profiteroles with vanilla ice cream and chocolate sauce, and chocolate Bouchons, warm chocolate brownies served with vanilla ice cream, cocoa nibs and chocolate sauce. –Ken Miller

It’s All Good If you watch any of Gordon Ramsay’s TV programs, you know you can expect at least three signature Ramsay items on the menu at Gordon Ramsay Steak: risotto, beef Wellington and sticky toffee pudding. But those aren’t the only excellent dishes you’ll find at Ramsay’s flagship Vegas restaurant. Also on the menu is the delectable hamachi crudo, which is served with pickled mushrooms, puffed rice, miso vinaigrette and lime aoili. But if you prefer something meatier, several choice cuts make the menu, such as the 8-ounce American wagyu skirt steak, the 18-ounce bone-in New York strip and the mammoth 32-ounce royal long-bone chop; yet, you might want to order the latter if you’re with a date. Pair meals with wonderful sides like the mac and cheese, which is made with Gruyère, white cheddar, Parmesan, Emmental and Gouda cheeses, or the creamy potato purée. For dessert, the sticky toffee pudding is irresistible, but if you want to stray from greatest hits and dig into a deep cut, the caramel apple cheesecake is a delightful change of pace, each bite filled with apple compote, gold flake caramel and toasted streusel. –Alex Haase

The Club Scene If you are looking for an attraction where you really get to swing, look no farther than Topgolf Las Vegas. Is It My Body?
Eye-opening exhibit answers many questions There’s an old adage that perfectly sums up 2020: When you speak about the future, the Devil laughs. This past year was a reminder that tomorrow is not guaranteed; life can change in an instant. Yet, you didn’t come to Vegas to reflect on the nature of change and the fragility of life. You came here to distract yourself from such realities through fun and frolic. But REAL BODIES at Bally’s does a little bit of both: You can enjoy a fun, stimulating exhibit that explores the inner workings of the human body, while also taking the time to reflect on the precious nature of life. Perhaps you’ll walk away with a new outlook; perhaps you’ll never look at yourself the same way again.

Upon entering, there’s an eerie yet comfortable darkness, a seeming absence of time and space, similar to the womb. Then, a cool draft may send a tingle down your spine. But don’t fear, you’ll be soothed by life quotes from notable figures, such as Yoko Ono, who will remind you to “breathe.” Pretty soon, breathing is all you’ll be able to think about, and suddenly you’ll remember life is bookended by a breath. It’s deep. It’s heavy. But don’t hyperventilate. Remember, it’s all educational. By the way, did you know that the volume of air that your lungs inhale daily can fill two hot air balloons? That’s just one of the few fun factoids you’ll find plastered on the walls of the exhibit, a diversion from the stuff you really came to see.
As advertised, you’re going to find displays that feature real human bodies, which are preserved through a process called plastination. Besides breath, you’ll explore the digestive system, the rhythm and beat of the circulatory system, the complex muscular system, the brain, primal instincts and a poignant—and respectful—display on the stages of embryonic life. As a bonus, a new exhibit exploring COVID-19 and its effects on the body is on display. The final display ponders the question that stumps everyone—what happens when we die? You likely won’t find the answer here, but you’ll be guided to the exit by a light at the end of the tunnel, which ultimately serves as the perfect metaphor for the new year. –Alex Haase

Beer Me Boy, could we all use a beer about now! At Pub 365 at Tuscany, get that beer with traditional pub fare (plus plenty that strays outside those boundaries). Erica Kiewice
Helping to give the dolphins a safe, happy home On the Las Vegas Strip, Erica Kiewice has quite possibly the most awesome job. She’s the curator of dolphin care at Siegfried & Roy’s Secret Garden and Dolphin Habitat at The Mirage. Yup, that’s right, in the middle of a desert, Kiewice is in charge of caring for the 10 dolphins who call the habitat home. For 24 years, Kiewice has built relationships with each and every dolphin, watching four generations flourish. “They’re my family now, they’re my pod,” she says. “Twenty-four years went by fast. The dolphins really are my family. You worry about them. You look forward to coming in and seeing them every day. It’s always changing. You learn new things—new projects, new research. You’re always expanding your mind. There’s always that goal to make sure the dolphins have the best home and a safe home.” Before her tenure at the habitat, Kiewice, born in Pennsylvania and raised in Dallas,
attended the University of North Texas. After graduation, she got a job as a zookeeper at the Austin Zoo. In 1996, she moved to Las Vegas and heard that the habitat was expanding by building the Secret Garden portion for the big cats. She got the job as a tour guide, but a year later she found out a position in dolphin care opened up. Over the years, Kiewice moved up the ladder in dolphin-care specialists. Subsequent promotions included a lead in dolphin care, supervisor and, four years ago, curator. “I oversee the care of the dolphins, simply put,” she says. “I’m very grateful that I’ve managed to work through and work up and get to where I am. But it was a process. It didn’t happen overnight—it was a lot of hard work and dedication. There were a lot of goals that I set for myself. Even as a curator, I’m still looking to build my skills and to keep growing in my career.” –Kiko Miyasato

Indulge your yearning for live music and barbecue We know you’re missing live music, and at Gilley’s Saloon, Dance Hall & Bar-B-Que, you can recapture that feeling with their Bluegrass & BBQ nights. On Saturdays from 5-8 p.m., local bluegrass band Out of the Desert will provide ambient music while you dine and have drinks. The lip-smacking barbecue at Gilley’s may always have been the biggest draw, but live music has always been close behind, with some of the hottest artists dropping in and local bands finding a chance to shine bright on the Strip. Las Vegas band Out of the Desert has been playing together for 10 years now, and throughout the challenging past year have kept together,

playing live when they can and streaming some performances online. What’s live music without drinks? Enjoy a number of different specials on Saturday night, like five for $30 beer buckets with classic domestic beer choices and four for $30 buckets with imports and new-fangled options like hard seltzer and tea, plus selected drafts for $8 each. If you are more of a mule fan, get yours with either Deep Eddy vodka or Knob Creek single barrel reserve bourbon. The You-Call-It cocktail features Sauza Blue tequila, Jim Beam Kentucky bourbon, Deep Eddy vodka and Cruzan light aged rum. So yeah, you call it.
On any night, the best barbecue option here is the baby back ribs (of course). They come in half- or full racks, hand-rubbed in Gilley’s spices, slow-smoked and covered in barbecue sauce after cooking. But there are lots of other goodies to order, like Southern-fried chicken and rotisserie chicken; Gilley’s Lone Star burger, with all the classic toppings; beef chili with a little kick plus green onions and cheddar cheese; grits with white cheddar and green chili, buffalo wings in tossed in Frank’s RedHot Sauce; and even a Beyond Meat burger for vegetarians. Whether you’re rolling in for dinner or checking out the band, you’ll leave satisfied. –Nina King

We talk with owner Derek Stevens as he shares three of his favorite spots on the property. We check in with the property’s plush

“We always wanted to have some connection to the past,” Stevens says. “So, when we put all this real estate together to build Circa, one of the buildings that we bought was Glitter Gulch. Glitter Gulch is what Vegas Vickie was attached to for 30 years. When we bought it, Vegas Vickie came with the deal. When we demolished the Glitter Gulch, we made sure we took Vegas Vickie down safely and intact. We always thought that Ve-
gas Vickie was so iconic to Las Vegas. We felt that we wanted to take the sign down and evaluate the integrity of the sign and if it was in decent-enough shape—and it was. Now we get to have a little fun by saying, ‘We took Vegas Vickie down, shipped her off to rehab, got her all ready to go and while she was out we got her a knee replacement so her knee actually kicks every now and then.’ We got her all squared up for the next 30 years.”

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
