From the Editor Happy Holidays!
By now, most of you have bought your holiday gifts, mailed out your cards, and are ready to just relax and enjoy your week. We hear you loud and clear, and this week’s issue of Las Vegas Magazine is designed with only your happiness in mind. Start your week off with something wonderful and, best of all, completely free—the winter exhibit at the Bellagio Conservatory and Botanical Gardens (“Winter’s Wonderland,” p. 20.) Bring the kids and your phone and get ready to create some lasting memories. You might expect that Las Vegas would be offering a ton of fun stuff to do during the holidays, and you’d be exactly right. Las Vegas Magazine’s Kiko Miyasato has compiled an exhaustive list (“Making Spirits Bright,” p. 24), and be careful—if you try doing all these, you will definitely be exhausted! What’s a visit to Vegas without a little gambling? But as much time as you’ve spent at the roulette tables or video poker machines, how much time have you spent playing bingo here? If the answer is “not much,” rectify that situation this week. Managing editor Nina King has laid out not only a bunch of different games in town, she’s also identified the ones where you could win huge bucks (“Spot On,” p. 26). Here’s one guarantee: Win or lose, you’re
going to have a lot of fun—and maybe even make a new friend or two. If you’re in the mood for a holiday cocktail, Kiko Miyasato will take you on a tour of two of the greatest bars on the Las Vegas Strip: The Dorsey at The Venetian and Electra Cocktail Club at The Palazzo. (“Drink, Eat and Be Merry,” p. 17). With the temperatures dipping considerably this month, make sure to stop and fill your belly with some delicious dishes at restaurants including Guy Fieri’s Vegas Kitchen & Bar (“A Taste of Flavortown,” p. 7), Lavo at The Palazzo (“A Decadent Experience,” p. 10), Oscar’s Steakhouse at The Plaza (“Sustained Greatness,” p. 12), and Border Grill at Mandalay Bay (“Time to Chill,” p. 15). How about some more fun with the kids? Head to Pole Position Raceway (“Speed Thrills,” p. 14), which features not only an amazing racing experience but a state-of-the-art virtual reality installation. How about a show? Leave the kiddies at home and head to Harrah’s for “X” Country, a topless revue that promises plenty of excitement, laughs and more (“Wild West,” p. 8). Wild West Let’s face it: Country music is very polarizing. But “X” Country, a topless revue that uses C&W as its backdrop, is anything but. It’s an exhilarating time, featuring some of the most athletic ladies you’re ever likely to see. Within 90 seconds of starting, tops are doffed—a frequent occurrence over the next 70 minutes of thrusts, gyrations, line-dancing and two-stepping. Sexy, limber ladies perform to a soundtrack ranging from Hank Williams Jr. and Garth Brooks to Tim McGraw and Taylor Swift. One must smile during the number set to Carrie Underwood’s “Before He Cheats”—come on, who would cheat on these ladies? One dancer luxuriates in an onstage shower to Patsy Cline’s “Crazy,” while another strips down from a wedding dress to the Band Perry’s “Better Dig Two,” and three gals frolic with a bed sheet to Little Big Town’s “Better Man.” During all of this action, social distancing is practiced, but it doesn’t detract from the sheer fun. –Las Vegas Magazine Staff Harrah’s, 702.777.2782

A Decadent Experience
Upscale Italian eatery impresses with design and superb menu The dining room is a mix of the divine and modish—candlelight casting shadows in the dimly lit room, Mediterranean- and Southern Italian-inspired décor, dark woods and modern hanging chandeliers. Part lounge, part restaurant and part expansive patio overlooking the Las Vegas Strip, Italian restaurant Lavo is a chic spot for date night or an upscale meal with friends. To start off any meal, it’s wise to order the restaurant’s star appetizer dish, “The Meatball.” This gigantic sphere is made with 16 ounces of fresh-ground Imperial wagyu, Italian sausage and veal, and is served with fresh-whipped ricotta. Also, not-to-be-missed appetizers include the popular charred octopus, crispy fried calamari and a creamy, spicy lobster bisque. For vege-

tarians, the vegetable minestrone and eggplant Parmigiano are both impressive. And a roasted beet salad with goat cheese seems decadent. Lavo also offers an incredible fresh seafood raw bar with both oysters and clams-on-thehalf-shell options. To impress with the best, opt for the seafood plateau grande, a heaping ocean of shrimp, oysters, littleneck clams, king crab legs, whole lobster, crabmeat salad, tuna ceviche and scallop salad. Pasta and brick-oven pizzas abound for the veggie, meat and seafood lovers at the table. House specialties include a thinly pounded chicken Parmigiano, roasted Chilean sea bass, a rack of veal chop, and chicken Marsala. From the grill, you can order a half-chicken, branzino, dorado,
red snapper or Maine lobster. Red meat options are all USDA Prime and dry-aged for 28 days and include a center-cut filet mignon, New York Strip and bone-in ribeye. Order any entrée with Lavo’s sides, or what they call trimmings—faves include truffle French fries, Brussels sprouts served with pancetta and shallots, roasted rosemary potatoes and a lip-smacking creamed spinach. Sustained Greatness There aren’t many living Vegas icons more popular than former mayor, and former mob attorney, Oscar Goodman. And that popularity is honored perfectly with Oscar’s Steakhouse, a classy restaurant with strong cocktails and classic steakhouse fare in the heart of Downtown Las Vegas. First, you’ll want to be like Oscar by ordering the Hizzoner, a hot (but it’s a dry heat) martini made to Oscar’s liking—a mix of Bombay Sapphire gin, more Bombay Sapphire gin and a slice of jalapeño. If you polish it off before dinner arrives, you might not need another drink the rest of the evening. Then dig into the dinner menu. Perfect starters include No Nose’s Mob Meatballs and Johnny Quinn’s crab cake served with a citrus remoulade. But if the jury’s out, you can’t go wrong with the shellfish platter filled with oysters, Maine lobster and king crab, with a shrimp cocktail. For an entrée, opt for the steak. Delectable cuts include Oscar’s 24-ounce bone-in ribeye and the mammoth Jonny’s 44-ounce tomahawk. Pair with a side of crispy Brussels sprouts or Fat Herby’s mac and cheese and you’ll have had a great meal, no objections. –Alex Haase

Creature Comforts For a step away from the indoor delights during your vacation, check out the Wildlife Habitat. Chilean flamingos are the big draw inside this lushly landscaped area, and they are splendid, standing on one foot in the pools dotted throughout the environment. Of course, that pink coloration against the greenery is striking and impossible to ignore. But flamingos aren’t the only residents here—swans and ducks abound, floating

along streams and waddling across paths. You’ll notice numerous types of small birdies flitting about as you walk, and occasionally dipping into a waterfall. Lean over a bridge and orange koi will become the star attraction for you. Watching a school of koi swimming up, down and around is mesmerizing and completely relaxing. Indoor racing experience offers endless fun and challenges When you first get into the state-of-the-art go-karts at Pole Position Raceway, it’s a bit … disappointing. You have no control of the speed of your vehicle for the first few seconds, as all racers are led onto the track on automatic pilot. But just as quickly as you’re wondering, “Is this as fast as it gets?” the autopilot is turned off, and … well, let’s just say you’re bound to be saying something to the effect of, “Holy poop!” (This is a family magazine, folks.) Suddenly you’re hitting speeds of up to 45 mph on the track’s straightaway, always wondering if you want to bother hitting the brakes at all. But of course,

you always do, because—and this is the very heart of the experience—you want to get the best time and leave everyone in the dust. For those racers out there who think they’re going to get away with dirty pool, be warned: If you do anything to affect your fellow racers (turn their car around, crash into one of the guard rails set up around the track, etc.), everything comes to a screeching halt, including your go-kart. It’s a gentle reminder that the top scores at Pole Position Raceway are earned, not taken by force. Odds are you’ll want to spend most of your time here getting the top track time, but you’ll
want to set aside some time to experience Pole Position’s latest addition, Omni Arena by Virtuix, a virtual reality experience contained in a built-in staging area. Its 360-degree motion platforms make you feel like you’re actually a pirate in Blackbeard, a zombie hunter in VRZ, or a military badass in Elite Force. Safety measures require that all participants book a trip, as only 20 people are allowed inside the 60,000-square-foot building every half hour. Time to Chill You could probably use a mimosa right now. Heck, you might need three. And there are few places better suited to drink a mimosa than at Border Grill’s breezy, laid-back weekend unlimited brunch, which recently returned after a brief, pandemic-induced hiatus. As you brunch, here’s a tip: Don’t decide which plates to order; your servers are willing and able to curate the brunch for you. Essentially, they’ll bring you everything on the menu, but they’ll space it out so you can enjoy your bottomless mimosas. Favorite dishes include the chef’s seasonal pancake, chilaquiles, steak and eggs, potato tacos and green corn tamales. But if you’d rather have lunch or dinner during the week, the experience is just as wonderful, for Border Grill is simply a nice place to chill. Settle in with a blanco margarita or an ice cold Modelo Especial and nibble on some chips with creamy Border guacamole or the ceviche. For main dishes, carne asada tacos are a classic choice, but if that doesn’t sound filling, go for the roasted chicken poblano enchiladas instead. You can sit at the bar for hours and time just slips away.” While there, try the Boulevardier, a specialty cocktail mixed with Knob Creek bourbon, Campari and sweet vermouth. “It’s bolder than a Negroni. It’s a little bit bitter, a little bit sweet, but really well balanced and you get that freshness from the orange peel,” Pulliam says. –KM

Aspirations led to a dream career As far as his career, Sam Pulliam got exactly what he was hoping for. From his days studying business management at Bradley University in Illinois to bartending at nightclubs and sports bars in his college town, Pulliam always knew he wanted to work in the hospitality industry, specifically food and beverage. And today, he is—as the beverage director for Circa and Golden Gate hotels in downtown Las Vegas. “Something about hospitality, the bar industry, always appealed to me—to be a part of a place where people like to have fun,” says the Missouri native, who grew up in Chicago. After leaving Illinois, Pulliam and his wife made a brief move to Denver, and eventually set their sights on Las Vegas, moving to town in 2015. “Vegas is the hospitality mecca of the world, and that’s always been my passion, so I knew I had to come here,” he says. Four months after moving here, he landed a beverage manager position at Golden Gate and
sister property The D; he also oversaw the beverage program for Downtown Las Vegas Events Center, also in the company’s portfolio. When Circa was built, Pulliam joined the new property and was promoted to his current title in June. It’s his responsibility to help create the beverage programs and oversee the bars at Circa and Golden Gate. “But I also love being with the staff,” he says. “That’s the biggest part of it. Motivating the crew and being a good sounding board for everybody and just keeping everybody energetic and happy to be here.” And what makes Pulliam happy, besides his job? Wailing on his electric guitar (he plays a mean Van Halen’s “Eruption”) and playing chef (he makes a mean gumbo and jambalaya). But much of Pulliam’s happiness does lie in his career, he notes. “I’m kind of awestruck sometimes because it all kind of happened relatively quickly. This is what I’ve always aspired to be from day one.” –Kiko Miyasato

All four signature cocktails will be available at both lounges through Dec. 31. Start with the Roman Holiday, mixed with Michter’s Straight Rye whiskey, Zirbenz Stone Pine liqueur, Petite Canne sugar cane syrup, Angostura bitters and a garnish of lemon twist and rosemary sprig. For gin and negroni lovers, try this twist on the classic, the Alpine Negroni. This bold-yet-smooth-tasting cocktail is a mix of Fords gin, Suze aperitif, Saler’s aperitif, Cocchi Americano aperitif, Génépy liqueur, crème de menthe and a pinch of salt. And for a hint of the familiar Old-Fashioned cocktail, try the Lion’s Tale Fix, a blend of Woodford Reserve bourbon

whiskey, fresh lime, simple syrup, allspice dram and Angostura bitters that’s then poured over a heaping mound of crushed ice and garnished with freshly grated cinnamon, a cinnamon stick and a candy cane. If there’s more than just yourself and your loved one imbibing (although safety guidelines mandate that no more than four people can be seated in your party), think about sharing the Yeats Punch Bowl. This giant cocktail is a blend of Jameson Caskmates Stout Edition blended Irish whiskey, Jamaican rum, fresh lime juice, pineapple juice, sweetened ginger juice, allspice dram and club soda. If you want to end or begin your night of drinking with some holiday sweets, you’re in luck, because also on both properties you’ll find
themed desserts at Tao at The Venetian and Lavo at The Palazzo. Lavo’s signature 20-layer cake gets a holiday spin with red velvet cake and cream cheese filling and is topped with sugar snowflakes and chocolate jingle bells. There’s also Lavo’s Grinch’s Tartufo, a Neapolitan gelato cake covered in a Valrhona white chocolate shell in the shape of a Christmas tree ornament and topped with fresh whipped cream and strawberries. At Tao, take a seat in the lounge and order its famed fortune cookie dessert dressed up for the holidays. I recommend starting your meal off with a drink, and a margarita never comes amiss. The Chica-Rita combines Espolòn tequila, lime, grilled pineapple and Elemakule Tiki bitters, which pull in cinnamon and allspice flavors. There’s also a nice wine list, with selections from all over the globe, including Spain, Argentina, Chile, California, Oregon, France and even New Zealand. Whet that appetite with a basket of arepas, little fried corncakes of many flavors, served here with nata butter, which is actually a creamy spread. You can also choose buñuelos (a sort of doughnut) for brunch with a white chocolate dulce de leche, or wild mushroom tostadas for dinner—perfect little bites with whipped queso fresco and salsa verde. The shrimp tacos come with a tasty habanero aioli for those spicy-food lovers for both brunch and dinner.

in its new “Hopeful Holidays” exhibit. It’s a wonderful way to spend an afternoon. Visitors start by checking out the frolicking of the Coca-Cola polar bears amid huge spire and ball ornaments near the entrance. They then move on to the main bed, where spire and starburst ornaments
hang overhead and surround the 42-foot silver-tipped fir tree from Northern California. It’s decorated with 2,500 red and gold ornaments and 7,000 white lights. A fivecar toy train races around its track below. Near the tree is the lovely queen in a white Dior-inspired dress with red accents.

Upon her hand perches a bright red cardinal, an element that designer Ed Libby drew over from the fall exhibit. It represents “a kind of message from the heavens that things were going to be OK,” says Libby. It’s actually the first time that a design element has been used from one exhibit to the next. That design continues in the next area of the display, where massive pine cones and huge floral poinsettias, fir trees adorned in white lights, and masses of live green plants and poinsettias set off a huge jewel-encrusted egg, which is open to reveal a pair of cardinals perched inside. Says Libby, “We’ve chosen poinsettias to represent a story in Mexican culture where little children went into the church and they ... didn’t have any gift to lay by the manger and they laid weeds. And then the next day the (weeds were) beautiful, spectacular, colorful flowers, and that’s kind of the background story of poinsettias. I think there’s something really special about flowers made out of flowers, and that really is something that I love. I’m an event designer in my outside world. I love bringing that component to my role here at Bellagio and doing these floral sculptures.” In the center bed is the queen’s fairytale-like carriage being drawn by a team of
four magnificent white horses. Inside, the plush area makes a good spot to capture an Instagram pic (or two), and windows and entrances let you glimpse the other beds. And in the south bed, a quick look reveals a team of elves decorating away, an homage to the hard-working team of gardeners, florists, designers, engineers
and electricians who make the exhibit come to life each season. “It takes six months to plan, and then it takes six days (to assemble),” says Libby. “Around the clock, 75 people, 24 hours a day for six days. There’s a team that’s worked so hard to stay together this year to produce the show … So that’s our kind of tribute to the camaraderie of the team.” Each little detail has a meaning, says Libby, from the tiaras on the polar bears, which match the queen’s, to the authentically painted ornaments. “It’s a much deeper dive than we’ve done before and a lot more detail that we’ve done in the past.”

I was! I won something! I won this TBS show called Tournament of Laughs where we went up against other comedians and somehow we prevailed and emerged the victors. I’ve been doing virtual shows as well, and also … when we were shut down, I thought there was a chance this would go on for a while and when we’d come back,
we’d have to do some shows with people sitting farther away. I thought there was a chance we might end up doing the show in the big room for less people, so why don’t we spend six months working on a brandnew show that will fit in a larger showroom. It turns out that was a good idea. What was that like, the process of moving from the smaller cabaret room to the big Flamingo Showroom? For the last two years, we’ve been playing these larger theaters on the road and coming back to the small room (at Flamingo). I’ve always loved playing those comedy clubs because of how close the audience is, but it does limit what you can do. Suddenly we can do all these huge things we’ve been doing on tour, which are much more like the material we’ve been developing. Creatively it’s great. Was it difficult to develop that new material and stay creative when you were basically stuck at home for months? It was difficult to stay positive. That’s what I found. Speaking to my friends from all walks of life, performers and people

outside the industry, no one was doing OK. The creative part was easy because we had a two-year to-do list and finally had the time to make it happen, even though it felt slightly crazy to be working on those things. It was a bit like building Noah’s Ark. I would be, “The shows are coming back!” And everyone was like, “Really?” But we did it, we built the ark, and we’re ready to sail. Did you bake bread or plant a garden or develop other quarantine skills? I realized I was either going to put on a hundred pounds and never leave the house again or I would have to get healthy; there was no in-between. So I got a trainer, put a gym in the other garage and over the last seven months I lost 40 pounds and learned how to do pull-ups. I’m glad I went in that direction.

In the Great Hall, catch the free holiday musical spectacular every Thursday through Sunday at 1, 3 and 5 p.m.; and snag a professional family photo with the man himself, Santa Claus! If you’ve got a car, drive over to the Industrial Event Space for “Journey to the North Pole” (northpolelv.com/tickets), a drive-through experience with a show of lights, lasers, music and projections, and then slowly drive down the Path of Lights, a tunnel filled with glittering lights and snow and scenes like the North Pole and Santa’s workshop. Celebrate National Bingo month with a game in one of Vegas’ halls If you are looking for a pretty safe option for gaming and gathering, bingo should definitely be on your radar. Although it’s long been thought of as an older person’s game, its appeal is growing among the younger set, who find it an ideal way to get out of the house, get a drink and maybe win a little moolah. And in honor of National Bingo Month, we’ve rounded up a variety of offerings, from holiday specials to big pots. Bingo rooms in Vegas are pretty large, with plenty of room to allow adherence to social distancing requirements. Even the smaller rooms here have plexiglass partitions and plenty of spacing between patrons. Masks are mandatory. All of the rooms offer free drinks, which is nice! Arizona Charlie’s Decatur and Boulder: One of the nicest things here is you can play a game and then head right down a close-by escalator to your reservation at Ron’s Steakhouse—it’s named after Ron Lurie, a former mayor of Las Vegas whose name has been synonymous with Arizona Charlie’s Decatur for years. During the holiday season (through Dec. 24), bingo
players at the Decatur location in one special session each day can take part in a gift raffle, for free play, bingo packs and more. And the Dual Daub is now over $21,000 at the Decatur location! Palace Station, Red Rock Resort, Green Valley Ranch, Santa Fe Station, Boulder Station and Sunset Station: Station Casinos bingo rooms (except Sunset, which is an all-paper room) feature a linked progressive game with prizes up to $100,000 (or more), plus individual progressive games where the prizes can hit in the tens of thousands of dollars. Plus, many rooms have a smoking room separated from the main room, and plush VIP seating. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

As its name implies, it’s a tribute to Bugsy Siegel and Meyer Lansky. Designer Jonathan Adler provides the decorative ’20s and ’30s touches throughout, and you’ll feel like you’ve really gone back in time as you enjoy a drink from a menu of various Old-Fashioned recipes—you can have it made with rum, mezcal, brandy or, of course, bourbon. A terrific appetizer—one of our favorites on the Strip—is the hand-cut Prime beef tartare, served with foie gras aioli and pan-toasted country bread. Main course options are steak-heavy, naturally.
