Every week, Las Vegas Magazine seeks to become your official headquarters for planning the perfect Vegas experience— whether it be for an afternoon, a day or a week, we want you to turn to us for the insider information that helps you get the maximum amount of enjoyment out of all this town has to offer. Which is why I’m excited to unveil the second installment of our “Day Planner” series, in which managing editor Nina King selects a particular part of the Strip and breaks down the best things to do in that location over the course of a day. This time, she’s selected the intersection of Spring Mountain Road and the Las Vegas Strip (“Seize the Day,” p. 22). Features like this are the essence of Las Vegas Magazine, and even if you aren’t staying near this intersection during your trip, trust me: There’s great, helpful info here. Ditto for Alex Haase’s “Vegas 9s” story on how to really take care of your body while you’re here (“9 Healthy Ways to Experience Las Vegas,” p. 26). Yes, we get it—many of you come here to do the exact opposite, but hey, we all know that “morning after” feeling, right? Turn to this collection of options to help recharge those batteries. Many production shows went dark for a few weeks after Governor Steve Sisolak
issued a statewide “pause” on large gatherings (some of those shows are due to return after Dec. 15), but some shows on the Strip stuck it out, including Extravaganza— The Vegas Spectacular at the iconic Jubilee Theater at Bally’s. This is a family-friendly show on a grand scale, and you should definitely check it out while you’re here—if only to remind yourself what a Vegas show looks like! Then get out there and enjoy a fantastic meal. This issue is crammed with some of the best options in town, including a feature on Gordon Ramsay’s super-popular Hell’s Kitchen at Caesars Palace (“On Fire, p. 20), StripSteak at Mandalay Bay (“A Constant Classic,” p. 14), and Andiamo Steakhouse at The D (“Dining Done Right,” p. 12). In addition, Brock Radke will introduce you to some of the greatest restaurants both on and off the Strip (“Holiday Cravings?” p. 18) And of course, don’t forget to enjoy yourself at some of our world-class attractions, including the Big Apple Coaster (“Twist and Shout,” p. 7) and SpeedVegas (“Watching the Wheels,” p. 10). Twist and Shout With all the twists and turns we’ve experienced this year, is there not a more perfect metaphor for 2020 than a roller coaster? Ironically, if you’re looking for a way to take your mind off this year, a roller coaster might be your best bet, and there’s no better place for such thrills than the Big Apple Coaster.

But first, you’ll have to prepare your mind, and your stomach, for what’s about to go down. The coaster starts with two huge drops, which lead into twists and loops alongside the faux Manhattan skyline. One such loop is the heartline twist and dive maneuver, a move that quickly flips the
cart upside down and settles into a tummy-tingling drop, so be sure to ride on an empty stomach. If the coaster isn’t enough entertainment for you, head over to the arcade to play some old-fashioned games like Skee-ball, air hockey, and more. –Alex Haase

Brunch On Although it’s a New York City import, Sadelle’s has become a very Vegas brunch spot. Plus, the inside is Tiffany blue, so it might be the closest you’ll ever get to actually eating breakfast at Tiffany’s. As you peruse the menu, you’ll find delicious dishes fit for the NYC-style diner of your dreams, including eggs Benedict, Western omelets, matzo ball soup, Waldorf salad, steak and eggs, and crispy fried chicken with truffle honey. But if you can’t decide, here’s a pro tip: Order the house salmon, which is plated on a serving tower with trimmings like tomato, cucumber and capers, and served with possibly the best bagels outside of NYC. Whatever you decide, pair your meal with a hot cup of the house coffee, or if you need something stronger, brunch the right way with a classic cocktail like the Bloody Mary, Bellini or mimosa. Throughout your meal, you’ll notice a pastry cart rolling throughout the restaurant. When it stops by your table, grab a delectable baked good like a half-moon cookie or a danish. It’s Fabulous, Darling Get as close to the life of a Real Housewife as you can when visiting Vanderpump Cocktail Garden. Watching the Wheels
Get your adrenaline rush on a variety of race courses SpeedVegas is the only racing facility in Southern Nevada to include both a racing course and a world-class dirt track (and a spot where you can do all the donuts you want in the muscle car of your choice!). Make sure you get here early, because you’re going to want to experience everything that’s offered. Start by taking your pick from SpeedVegas’ lineup of dream machines—Lamborghinis, Porches, Ferraris, you name it. There’s also any number of American muscle cars like the Corvette C8 Z51 and Shelby GT500, not to mention street racers like the Acura NSX (a particular fan favorite). Then hit SpeedVegas’ 1.5-mile course,

designed to push these babies to their limits. Once you’ve figured out the basics of each car, you’ll find yourself returning to the track over and over to best your previous time. But make sure to set aside some time for the off-road experience on the 1.4-mile custom-made dirt track. Each off-road vehicle is state of the art, including a new fleet of 6100 class custom-built trucks (which offer up to 500 horsepower, as opposed to the 300 horsepower of the original vehicles). After a quick video and some basic lessons, drivers are set loose on the course, with SpeedVegas technicians feeding you information through radio communication
in your ear. Then get ready for serious air as you take off from a variety of jumps. The best part is you know you’re safe during the SpeedVegas experience. Acrylic glass shield protectors are used in every vehicle, and there’s a UVC lightbox sanitation and disinfecting system for helmets. In addition, a rigorous cleaning schedule is maintained, including all high-touch surfaces and highly trafficked areas like the clubhouse, cars and back-of-house areas. Also, all cars are driven with the windows down to ensure a constant supply of fresh air—but, honestly, isn’t that how you want to experience SpeedVegas anyway? –Ken Miller

A Constant Classic
Michael Mina’s steakhouse remains a favorite If renowned chef Michael Mina had a list of his culinary accolades, it would be longer than the Cheesecake Factory menu. Getting his start in the California cooking scene nearly three decades ago, the Michelin-starred chef and James Beard Foundation inductee brought his skills to Las Vegas in the early ’00s. Today, Mina’s name and cooking creativity is enjoyed by visitors at Bardot Brasserie at Aria, International Smoke at MGM Grand, his eponymous eatery at Bellagio, and StripSteak at Mandalay Bay. When Stripsteak opened in 2006, it was Mina’s first venture into the steakhouse realm and, nearly 15 years later, it remains a favorite among meat enthusiasts, mainly for the way steaks are cooked—butter poached and then finished on a

mesquite wood-burning grill. It’s also worth noting that StripSteak offers a fantastically curated menu of more than 100 single-malt Scotches. The modern, warm, upscale environment is the perfect setting for a meal of memorable proportions. Fan-favorite starters include the hamachi and ahi poppers, chilled lobster tacos and the “instant” bacon, a five-spice pork belly served with tempura oysters that will have you wishing all bacon was served this way for the rest of your life. While Mary’s brick chicken, diver scallops, Scottish salmon and ginger-scallion sea bass are all worthy options, the happy belly-filling goal here has to be the steaks. Bone-in ribeyes, New York strips, filet mignons and dry-aged ribeyes
come from the grill, but the star is the Mishima A5 Japanese wagyu rib cap—flavorful, memorable, melt in your mouth. If so inclined, punch up any of your meats with accompaniments like black truffle butter, crumbled blue cheese or half a lobster tail. A must-try dessert is the light, fluff y and perfectly sweetened beignets, served with dipping sauces like chocolate, vanilla crème brûlée and Macallan butterscotch pudding. Sooo good! Top off the meal by perusing that long list of single malts. If you want to try several, order a whiskey and Scotch flight. Criminally Good Bugsy & Meyer’s Steakhouse offers not only a fantastic meal, but transports its guests to a bygone era when mobsters ran Las Vegas. As its name implies, it’s a tribute to Bugsy Siegel and Meyer Lansky. The property is filled with touches harking back to their time, including a “back-way” entrance (the way gangsters used to enter high-end properties), which leads to a variety of dining areas, including a raw bar. Designer Jonathan Adler provides the decorative ‘20s and ‘30s touches throughout, and you’ll feel like you’ve really gone back in time as you enjoy a drink from a menu of various Old-Fashioned recipes—you can have it made with rum, mezcal, brandy or, of course, bourbon. A terrific appetizer—one of our favorites on the Strip—is the hand-cut Prime beef tartare, served with foie gras aioli and pan-toasted country bread. Main course options are steak-heavy, naturally. But there’s plenty for every palate here, including pan-roasted lamb chops, free-range roasted chicken, pan-seared sea scallops and plancha-seared salmon. Gliding Through Find yourself in another country when you step aboard the gondola ride. Specifically, find yourself in Italy, with gondoliers serenading you as your boat navigates the canals of Venice. Glide past streetside cafés and shopping boutiques, under bridges, under balconies and around curves. Rides are offered both indoors and outdoors, and with Vegas’ pleasant weather, the outdoor option is nothing to sneeze at, and the views are still striking. Either way, it’s a lovely, romantic ride. A Place for the Sports Fan If you are looking for a sweet place to while away an hour or so while catching a game, head into The Still. Inside, an old Airstream converted into a kitchen sends out plenty of dishes like crispy-style chicken wings, a tuna poke bowl, grilled fish tacos, steak tacos, a Philly cheesesteak panini and deep-fried birthday cake Oreos with cream cheese icing. Burning History One would be remiss not to start with a cocktail at Zuma’s bar. “I always encourage our guests to try our cocktails,” says Kougl. Specialty cocktails are all handcrafted with a Japanese-inspired twist, and all ingredients are freshly sourced. One perfect example of Zuma’s cocktail creativity is the Burning History, which is completed tableside. Mixed with Suntory Whisky Toki, honey water, ginger syrup, yuzu juice and egg whites, it’s infused with a Scotch barrel smoke and then poured over ice. –KM

Josh Kougl
Zuma’s general manager has arrived Be one of the first to welcome Josh Kougl to Las Vegas. It was just six days before sitting down for this interview and photo shoot that he moved to town to take the position of general manager of Zuma, a modern Japanese restaurant, at The Cosmopolitan. Kougl, however, has been a part of the Zuma brand for almost five years. Zuma has locations all over the U.S. and abroad, and Kougl began working with Zuma in Miami as the assistant general manager. From there, he helped launch the Boston location as the opening general manager, and now he’s running the Vegas outpost. “Las Vegas is the mecca of hospitality in the U.S.,” says the Indiana native. “I knew that it had to be on my career path.” Kougl’s career spans two decades in the hospitality industry, starting with positions like dishwasher, busser and server in California, then moving into bartending and eventually management in cities like Phoenix, Los Angeles and
even Playa del Carmen, Mexico. “But I always knew that I’d make it to Las Vegas one day,” he says. “I knew that I had to work here to get that key experience on my résumé.” It’s safe to say that Kougl has arrived, literally and figuratively. As the general manager, he explains his job with this analogy: “The GM is the brains of the operation. You have managers that are essentially the shoulders, then the rest of the team that are the arms and the fingers. And I provide direction and culture for the restaurant and manage the business as well.” While Kougl settles into his new role at Zuma, he can’t wait to settle into this new city he now calls home, and the first thing on his to-do list is, “No joke, eating and drinking,” he says with a smile. “I’m so enamored by the amount and the caliber of the restaurants in this city. My wife and I are ecstatic to get out and try all these amazing restaurants.” –Kiko Miyasato

By now you should be feelin’ some fine holiday fun, so step over to The D and the first stop at Bar Canada. Here, you’ll do more warming up with the Naughty but Nice cocktail, a delicious mix of Knob Creek bourbon whiskey, amaretto, ginger ale and a couple dashes of Angostura bitters.
The last stop, also at The D, is the Vue Bar, where you’ll end your bar crawl with the Maker’s Mistletoe, another Maker’s Mark-based cocktail with peach schnapps, orange juice and a splash of grenadine. latest restaurant concept is creating buzz and drawing crowds to Harrah’s Las Vegas. Pizza Cake (800.214.9110) is hard to miss when you’re walking the Strip thanks to its cake-slice ATM machine, but there’s plenty more to enjoy at this casual eatery. Stay on the sweet side with unique dessert pizza options or lunch it up with big slices of New Jersey-style pie that really hit the spot. Something special is happening at the Silverton casino resort south of the Strip. With the popular Twin Creeks Steakhouse temporarily shuttered, its talented kitchen crew is working behind the scenes to offer a special greatest-hits menu at the adjacent Mexican restaurant Mi Casa Grill Cantina (702.263.7777), also a steady favorite of locals around the Vegas valley. Shrimp cocktails, petite filets mignon, New York strip steaks, roasted garlic mashed potatoes and mac and cheese are among the available steakhouse selections, and diners can order from both menus to mix things up. It’s essentially two great restaurants at one vibrant location. On the west side, neighborhood hangout Kona Grill (702.547.5522) recently launched a new brunch program featuring bottomless mimosas in seven flavors and fun plates such as the Daybreak Sandwich, a fried egg masterpiece served in a Spam can. But the expansive restaurant with two levels of patio space also added new dishes to its standard menu including shrimp tacos, ribeye meatballs, a Korean tuna roll and a turkey and Brie sandwich. And speaking of sandwiches, the breakfast beauties at Egg Sammie (702.204.8881) run the gamut from soft scrambled eggs on fresh-baked brioche with your favorite toppings to flavor bombs like the buttermilk fried chicken sandwich with dill pickles, “crack sauce” and jalapeño bacon. Downtown favorite Carson Kitchen (702.473.9523) is serving up a renovated seasonal menu that includes the return of a few beloved dishes like the chicken riggies pasta with gin tomato cream sauce and grilled oysters with Vietnamese nuoc cham sauce. Among the new offerings are a beer brat banh mi sandwich with chicken paté and sambal aioli, Pacific cod with lemongrass coconut milk and chili oil, and a Reuben chopped salad with corned beef and rye croutons. These comforting, familiar flavors are par for the course at Carson Kitchen, which remains a big reason why downtown Vegas dining is so exciting. –Brock Radke

and mandarin purée, braised bacon, pickled apples and pomegranate seeds. For the vegetarians in your group, there’s a wonderful quinoa salad, chock-full of Honeycrisp apples, dried currants and cranberries, candied pecans, and ricotta salata. There’s no mystery at Hell’s Kitchen about the signature main course. Yes, it’s easily the restaurant’s best-seller, but once you’ve tried the beef Wellington,
you’ll know why. Ramsay has all but perfected this dish—a perfect piece of steak surrounded by a pastry shell—and it’s complemented by potato purée, glazed root vegetables and a red wine demi-glace. Obviously there are many other choices here, and all are worthy of your time, including crisy-skin salmon, served with warm white beans, seabean salad, Iberico chorizo and a citrus beurre blanc, and jidori chicken scallopini, accompanied by roasted pee wee potatoes, artichokes, lacinato kale and truffle chicken. Also a huge seller, the sticky toffee pudding stands tall as perhaps the best meal-ender on the Las Vegas Strip. Its velvety consistency practically melts in your mouth, but top it with a rich, caramel sauce and then some vanilla ice cream, and your tastebuds have no choice but to surrender.

walking); and getting reservations and tickets early is a must for restaurants, shows and many attractions. 8 a.m.: Coffee, coffee, coffee! Head downstairs and grab a brew for you and your significant other at the hotel coffee shop or kiosk. If you are staying at The Palazzo, for instance, Illy Cafe is on the way to Restaurant Row, and the killer Go Greek yogurt place (opens at 9 a.m.) is right behind the escalators to The Grand Canal Shoppes in the same general area if you need a little morning pick-me-up. Both are also nice people-watching spots. 9:45 a.m.: Head to your 10 a.m. brunch at Chica in The Venetian. The daily brunch features a menu that was revamped this summer, and plenty of faves, like the cachapa pancakes, got a redo. (They’re all corn now, meaning gluten free!) The marble potatoes are

stewed with chiles and onions, which rock. And with an 8 a.m. opening time, it’s tempting to make an early reservation and spend a little more quality time with the newly introduced makeyour-own micheladas and Palomas. Really, though, all the cocktails are freaking good. Noon-2 p.m.: We know, two hours is not enough time to do all the shopping you want, but it can get you started. Once you finish up brunch, sashay across the convenient pedestrian walkways past the Wynn’s gorgeous roses to Fashion Show, where you’ll mosey through shops like 7 for All Mankind, Attic Salt and Coach, plus bigger stores like Macy’s, Neiman Marcus, Nordstom and Saks Fifth Avenue. If you love those stogies, Davidoff of Geneva is right in the plaza, and putting a few in your pockets for later isn’t a bad idea.
2-3 p.m. Stash those shopping finds and put your feet up for half an hour, then head to Treasure Island. 3-6 p.m.: Football! Yeah! The Golden Circle Sportsbook at Treasure Island is an excellent hybrid between a sports bar and book, with restaurant-style seating and something like 60 TVs. There’s plenty of space for social distancing, and even comfy VIP areas. While you’re checking out your favorite team, check out the massive nachos—they are seriously delish and way bigger than your head. 6-8 p.m.: Toddle on down to Rhumbar at The Mirage for an hour on the patio drinking—yep—rum-laden cocktails and indulging your passion for cigars. On your way out, you’ll let your eyes be dazzled by the glory of the free volcano eruption (8 p.m.). 8-10 p.m.: Dinner, anyone? So many options, but for this trip, head back to The Palazzo, where Mott 32 gives you upscale Chinese cuisine. You might want to dress up a bit here, as it is seriously cool, with a custom interior by lauded designer Joyce Wang. 10 p.m.-late, late, late: It’s your holiday, so late-night gaming is a good thing. Head back to your hotel— tables and gaming devices have been arranged for social distancing, and your cocktail servers will bring you a beverage. Remember to throw her or him a few bucks. 8 a.m.: Whattt? Is it the next day already? Durn.

Celebrate the variety show on a grand scale at Extravaganza—The Vegas Spectacular By Ken Miller
Las Vegas is facing a tough challenge at the moment. A few weeks ago, our governor, Steve Sisolak, announced a statewide “pause” until Dec. 15 that required, among other things, to reduce the number of people who can gather from 250 to 50 or 25 percent of fire code capacity—whichever is less. This posed great challenges for many of the Strip production shows that decided
to return a few weeks ago; many of those shows decided to close until Dec. 15. But some soldiered on. One of those shows was Extravaganza— The Vegas Spectacular, a show that originally opened earlier this year, only to close a day later as the entire state was shut down. As a result, most visitors to Las Vegas have not yet had a chance to see this show. But if they’ve seen its sister show,

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
Although venues may differ, most will implement 25-foot spacing between performers and audience members and space between each party to encourage social distancing. Masks are mandatory. There is a limit to the number of people allowed in the venue, per current Nevada rules.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

Adventure in Dining David Chang’s sense of adventure is on full display at Majordomo Meat & Fish (The Palazzo, 866.659.9643). If you start with a cocktail, make sure to try one of Chang’s smoked versions of either an Old-Fashioned or Negroni (a recent addition). The smoke motif continues with the main courses, including a smoked prime rib dinner with bing, butter and honey, a market salad, mashed potatoes, au jus and, of course, horseradish. Or opt for the smoked whole plate bone-in short rib, served ssam-style (wrapped) with kimchi, soy daikon, ssamjang, bibb lettuce and rice. Sides are equally imaginative, including “B.S.” fries and marinated mushrooms. For dessert, make sure to try Chang’s ice cream sandwich, with small, fluffy pancakes substituting for the cookies normally used. The whole thing is dipped in chocolate, because that’s how Chang rolls. –Ken Miller
