From the Editor It’s Time to Play
As someone who moved to Las Vegas in 2003, I look with some degree of pride on the growth of sports here. We had long been a host city for Triple-A baseball (including the Dodgers, Mets, Padres and more), and we also had a minor-league hockey team that played here for a while, but the prospect of major-league sports ever landing here seemed unlikely, if not impossible, 17 years ago. Fast-forward to 2020 and Las Vegas has become a major player in all areas of sports: WNBA (The Aces); soccer (The Lights); hockey (The Vegas Golden Knights); and football (The Raiders). The days when Las Vegas was a city only for gamblers is long gone. It’s now a destination for all walks of life. There’s never been a more exciting time to visit Las Vegas. This week’s issue of Las Vegas Magazine acknowledges the role sports has taken here. Yes, we are still unable to actually attend sporting events at the moment, but managing editor Nina King has rounded up a list of places to watch your favorite teams play while enjoying great food and drink (“Watch It!,” p. 24). Speaking of great food, we’ve covered both ends of the spectrum in this week’s issue. On one end, writer Alex Haase has rounded up a list of must-visit places for carnivores (“Nine Great Steak Destina-
tions,” p. 26), while Kiko Miyasato has compiled the best options for those who eschew meat (“Veg Out,” p. 20). Elsewhere in this issue, we’ll introduce you to some of the Strip’s best restaurants, including Jean George Steakhouse at Aria, Buddy V’s Ristorante at The Grand Canal Shoppes at The Venetian and The Palazzo, Bavette’s Steakhouse & Bar at Park MGM, Water Grill at The Forum Shops at Caesars, and Gordon Ramsay Burger at Planet Hollywood Resort. Hungry yet? Anyone who’s been regularly reading my editor’s note knows that I am fi xated on the return of the Strip’s iconic entertainers and shows. In this issue, I share my thoughts about some of the productions I cannot wait to return (“On With the Show!,” p. 22). Las Vegas needs its entertainment back, and once you take a look at my list, odds are you’ll be feeling the same way. We don’t know about you, but the current state of our country has us wanting a drink. Luckily, we give you plenty of options in this issue, including Miyasato’s story on how to celebrate National Mezcal Day on Oct. 21. The steak menu, obviously, is world-class, and whether you choose
a 32-ounce porterhouse or a 42-ounce Mishima tomahawk ribeye, you won’t be regretting your choice. Just make sure you accompany it with black truffle mac n cheese or trumpet mushrooms mixed with garlic, jalapeño and lemon. Delivered With Style Gordon Ramsay Burger breaks the mold of the conventional hamburger, but it also breaks the mold of the conventional Gordon Ramsay restaurant, for it’s one of the few where you can’t order beef Wellington, scallops, or risotto. Thus, even Ramsay realizes that most people prefer to roll up their sleeves and dig into a sloppy, overthe-top burger. And, at this joint, Ramsay delivers. Creative starters include the burnt ends poutine, French fries topped with cheese curds, pickled onions, black pepper gravy and tender burnt ends. For a burger with a kick, try the signature Hell’s Kitchen Burger, dressed with jalapeño aioli, roasted jalapeños, Oaxaca cheese and avocado. If you’re looking for something unique, the Turducken Burger tops a turkey patty with baby kale, honey mustard, fried egg and duck confit. Good news for vegetarians: Meat patties can be substituted with Impossible Meats burger patties. Win! And the crispy fries with chipotle ketchup is always a worthy accompaniment. After some renovations, Buddy V’s Ristorante has reopened, and its menu is still jam-packed with “Cake Boss” Buddy Valastro’s signature favorites. Valastro fans will no doubt recognize some of the dishes that have made him a household name, including My Wife’s Eggplant Parm, a terrific app with crispy eggplant, tomato, mozzarella and Parmesan. Pasta fans should not miss My Mother In Law’s Linguine Shrimp Scampi, a delicious amalgam of tomatoes, spinach, garlic, white wine, lemon and pecorino, or Valastro Sunday Gravy, a true Valastro family favorite combining meatballs, sausage, lamb and pork along with a bowl of rigatoni. Restaurant offers great people-watching and diverse menu The first thing that will strike you about Water Grill is its location: It’s probably one of the best people-watching spots in all of the Las Vegas Strip, perfectly placed along the promenade of The Forum Shops. It’s also one of the most welcoming restaurants you’ll frequent, with a brightly lit interior dominated by light-colored woods and a marine décor. And best of all, its menu is a perfect complement to the surroundings—full of options. The cocktail menu alone is dizzying, accommodating fans of every spirit type. Vodka fans can enjoy a Maritime Mule, a variation on the Moscow type, while rye aficionados get to try

the Campfire Sling, made with maple syrup and chocolate bitters. Appetizers include wild Spanish octopus, as great to look as it is to eat, served charcoal-grilled and served with fingerling potatoes, niçoise olives and roasted tomatoes. The Icelandic, beer-battered codfish tacos are a perfect shareable plate and guaranteed to get your tastebuds ready for the flavors to follow. Here’s where it gets difficult. You have your choice of sushi, an extensive raw bar, chilled shellfish, seafood and steak. Yeah, we don’t know what you should order, either, but highlights definitely include wild Columbian River
king salmon, served with heirloom carrots and vadouvan curry butter, the Double R Ranch 8-ounce filet mignon, farmed Ecuadorian shrimp and grits, served with merguez sausage ragout, and live wild Santa Barbara spot prawns, accompanied with black olive tapenade, toasted quinoa and citrus salad. Bottom line: You really can’t go wrong here. Color Me Pink Have you been noticing a pink flush recently? It’s not a light sunburn, but it is an opportunity to help with breast cancer awareness. During October, Vegas gets decidedly rosy with specials and events happening all month. This year, Sugar Factory at Fashion Show has come out with its Think Pink Insane Milkshake (pictured). The over-the-top shake is topped with a pink whirly pop and pink crystal sprinkles. For each shake sold, Sugar Factory will donate $1 to the Susan G. Komen foundation. Similarly, Pinkbox, the gourmet doughnut retailer, is making a Pink Ribbon doughnut pink-frosted with pink sprinkles. And 10 percent of every doughnut purchased will be donated to the foundation. Big Flavor Everybody knows why you’re going to Hooters. It’s because the wings are solid. And while those wings are the main attraction, you’ll also find breasts and buns, because there are a number of chicken sandwiches. Move over Popeyes and Chick-fil-A, for here you’ll find the Buffalo chicken sandwich, a juicy chicken breast slathered in Buffalo sauce and sandwiched between a toasted brioche bun. Italian Excellence In July, Marc Vetri’s Osteria Fiorella started as a pop-up inside Terra Rossa at Red Rock Resort. Turns out, the restaurant’s trial run was really more of an audition, because by the end of August, the casual Italian eatery became part of the property’s culinary lineup, permanently replacing Terra Rossa. Finally, Vetri can once again serve his delectable Italian dishes to the Vegas community. Here, Vetri focuses on the classics.
To whet your appetite, start with Sal’s Meatballs, which are served with whipped ricotta and a slice of garlic durum focaccia. Move on to homemade pastas like the pappardelle with duck ragu and black olive, the rigatoni with sausage ragu, or the delightful ricotta gnocchi served with crispy leeks. Project Idaho 2.0 Since Carson Kitchen reopened its doors they’ve adjusted their cocktail menu, bringing back some familiar ones but with a new twist. Such is the story with Project Idaho 2.0. Where does that name come from? “The mule is the fi rst animal that was genetically cloned, that project happened in Idaho,” says Harwell. “This cocktail is like a Moscow Mule that went back to school and got it’s masters.” It’s mixed with St. George California Citrus vodka, Velvet Falernum, Fernet Branca Menta, ginger ale, angostura and fennel bitters and fresh lime. –KM

Matt Harwell
GM runs a restaurant bigger than itself For Matt Harwell, general manager of Carson Kitchen, this story was about more than just him and the restaurant. So much so that he chose to have his photo taken out in the alleyway—that’s been decorated with street art—behind the restaurant. “I would hope, and I believe it to be true, that Carson Kitchen is an important part of this neighborhood,” says the Texas native. “We’re just one piece of a broader neighborhood and a culture of downtown that we didn’t make but are fortunate enough to be a part of. The character of this restaurant is deeply rooted in what downtown is and has become.” Almost seven years ago Harwell received the phone call to come out to Las Vegas to manage and help open Carson Kitchen with his cousin Cory, the owner and chef Kerry Simon, who passed away in 2015. Previously, Harwell worked several stints in the fine dining world in Omaha, Neb., both as a server and manager, and began his career as a busser at a small
mom-and-pop restaurant a block down from the house he grew up in in Oshkosh, Wis. “The first time I saw the restaurant space, Carson, it was still dirt; and it was the first time I saw downtown,” he says. “But, you could just feel that there was really a lot of momentum downtown, and the restaurant seemed poised to be a part of that.” And, Carson Kitchen truly deserves its reputation as a true downtown dining destination, for both locals and tourists. “Carson Kitchen is eclectic, fun, thoughtful, sometimes elevated, comfort food,” Harwell says. When Harwell isn’t working and he has some time off, he uses that time to spend with his wife, unwind on the golf course, and cook a good meal at home. “I love my family, I love my wife,” he closes the conversation with, saying he doesn’t really get that much time off though. “If you’re fortunate enough to love what you do for work, hey, then it’s all OK.” –Kiko Miyasato

But some might not be as familiar with mezcal. While tequila is only made from the blue agave plant, mezcal is made from more than 30 varieties of agave. While tequila is distilled in copper pots, mezcal is distilled in clay pots after being cooked in a pit lined with lava rocks, wood and charcoal. Tequila often gives off a sweet taste, while mezcal offers a more smoky, savory flavor. Thirsty yet? his battles—with his Korean-American family, with the restaurant establishment, with white America and, ultimately, with himself. The book, first scheduled for a spring release and derailed by COVID-19’s effects, is complicated, with disparate elements woven throughout

that add up to a compelling read. It talks about the #MeToo movement and what that awakened in the restaurant community; about his relationship with Anthony Bourdain; and about recipe development, among many other topics. Woven throughout the narrative is his passion about bringing Asian flavors to the
American table and about cooking food that was simply delicious. At Majordomo Meat & Fish, which was imported to Vegas from L.A., that passion resulted in a menu that channels those flavors and changes them at the same time, like the bing bread
and chickpea dip. Although you might think it’s a simple hummus, it’s not. It’s made with his own fermented hozon spice, which adds a lovely depth and earthiness to the dish. Tingly lamb dip does just that—it tingles. Do pair those with the Bonji Old Fashioned, made with Bulleit rye, orange and angostura bitters and Bonji syrup, another fermented Chang creation. The Palazzo 702.659.9643 The smoked prime rib is just one of the interesting dishes you’ll encounter on the menu, such as pork chop with a gribiche sauce, roasted black cod with hozon, a wagyu filet with béarnaise, and salt and pepper lobster. The macaroni has more of that almost-cheesy hozon, and black truffle just increases the earthiness. The ice cream sandwich pairs coconut sorbet with light pancakes dipped in chocolate. It makes a nice ending to the meal. For the fall, Majordomo has two intriguing options for you: Sunday Smokehouse, where the Chef’s Choice menu pairs three smoked proteins (everything from short ribs to pork belly) with three sides and dessert for $45. A tableside cocktail cart will bring a classic cocktail to you should you so desire. On Major Mondays, oak-grilled meats join with a 30 percent discount on the extensive wine menu. Both options present a great way to experience Majordomo. Eating at Majordomo Meat & Fish, like reading the book, is a great way to experience a little of Chang’s passion for cooking. But as you read and eat, you’ll come away with the thought that’s there’s still more to come in the Momofuku universe.

It’s official—the Las Vegas Strip’s famous entertainers and shows have been given the green light to return, courtesy of Nevada Gov. Steve Sisolak, who recently approved gatherings of up to 250. While there are still many hurdles for our shows to overcome before they can return (social distancing policies, safety protocols, limiting the number of patrons per show, etc.), it is now only a matter of time before we’re all buying tickets for shows once again. And in that spirit, Las Vegas Magazine has compiled a list of some of the shows we can’t wait to see again. CHIPPENDALES THE SHOW (Rio) There are many male revues in Las Vegas, but there’s only one Chippendales, and this version has been going

strong for a long time—and for good reason. It gathers the hunkiest men around who guarantee a good time is had by all. And while things will probably play out a bit differently during a time of social distancing, it’s a safe bet that Chippendales will still find a way to “connect” to its audience. CELESTIA (The STRAT) Variety shows and Las Vegas go together like Instagram and food photos, and Celestia, performed in a tent next to The STRAT, is one of the best, combining a wide variety of acts from around the world, including dancers, acrobats and contortionists (not to mention some from America’s Got Talent, including Deadly Games). It’s a family-friendly show like no other.

KÀ (MGM Grand) This Cirque du Soleil spectacular is as noteworthy for its various death-defying stunts as it is for its theater—a cavernous, wondrous space containing the Strip’s most unique “stage,” one that contorts and shifts to create the show’s next tableau. Mix into this wild spectacle an amazing soundtrack and you have an almost overpowering experience. WOW—THE VEGAS SPECTACULAR (Rio) Just like Celestia, this is a variety show for all ages, and it’s a breezy, fun ride from start to finish, its storyline concerning the voyage of Alberto as he discovers an alternate universe featuring mermaids, pirates, roller skaters and America’s Got Talent (yes, the show is represented every-
where on the Strip!) crossbow expert Silvia Silvia. AUSTRALIAN BEE GEES SHOW (Excalibur) Michael Clift, Wayne Hosking and David Scott have been delighting audiences for years as, respectively, Barry, Maurice and Robin Gibb in their tribute show. Their reverence for the original Brothers Gibb is evident, not only in their appearances, but their spot-on renditions of classics throughout the group’s career. Don’t be surprised to find yourself singing along during every song. JABBAWOCKEEZ (MGM Grand) From the time we saw this group perform on America’s Got Talent way back in 2007, we knew we were seeing

something special. The group didn’t win the NBC competition, but they’ve been Strip mainstays ever since, and they’ve changed with the times, evolving their show into exciting new iterations. Their newest show, Timeless, was launched this year just before the Strip shutdown. ATOMIC SALOON SHOW (Grand Canal Shoppes at The Venetian and The Palazzo) From Spiegelworld, the creators of Strip show Absinthe, comes the craziest Western-themed show you’re ever likely to see, full of bawdy humor, crazy stunts, hilarious songs and so much more. Make sure you grab a drink at the bar before taking your seat; you don’t need it to enjoy the show, but come on—when watching a nun twirl rings, do you really want to be sober?

Catch all the plays for your favorite games IN LAS VEGAS, there are more places to watch sports than warts on a frog. Way more. You can head to the sports books, but those aren’t only venues where you can catch the game. From intimate venues to huge screens, it’s all here. Possibly one of the best ways to catch the latest game is with a watch party package. At The D (702.388.2200), those packages include your own “Man Cave” or “She Den” on the 12th floor, with four highdef TVs letting you cheer for multiple games at the same time. Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino.
