From the Editor Best Laid Plans
Before the insanity of 2020 began, Las Vegas was poised for one of its biggest years ever. In addition to the completion of new properties like Circa in October and Virgin Las Vegas (at the former Hard Rock Hotel) later this year, not to mention the 1.4-million-square-foot expansion of the Las Vegas Convention Center, our city completed Allegiant Stadium to welcome the arrival of the NFL, specifically the Las Vegas Raiders. It was also to be a spectacular live music venue, with Garth Brooks as its high-profile first act. Needless to say, things haven’t quite worked out as planned. Las Vegas was hit hard by the COVID-19 pandemic, resulting in the cancellation of all conventions and live entertainment, not to mention our first home football game being played without its hardcore fans. Yep, it’s definitely been a trying time in Sin City, but that hasn’t stopped tourists from coming here. And our magazine remains more committed than ever in supplying you with the information you need to get the most out of your stay. To that end, this week’s issue features a look by Las Vegas Magazine’s Alex Haase of some of the best places to watch this week’s Raiders game against the New Orleans Saints (“Nine Great Places to Watch the Raiders,” page 20). Because even if you
can’t get into Allegiant Stadium, you can still enjoy the game at venues designed for that exact purpose. From March Madness to the Super Bowl, Las Vegas has perfected the fan experience. If you haven’t experienced it for yourself, you’re in for a real treat. And Las Vegas Magazine continues its celebration of celebrity chefs with two different features: A walk-through of the mega-indulgent menu at Guy Fieri’s Vegas Kitchen & Bar (“All or Nothing,” page 18) and profiles of some of the Strip’s most famous chefs (“Really Cooking,” page 22). The food goodness continues with short profiles of gems like Hank’s Fine Steaks & Martinis, True Food Kitchen, Mott 32 and Sadelle’s. If you aren’t hungry after reading this week’s issue, please consult your doctor. And what’s a great meal without a great cocktail? Las Vegas Magazine’s Kiko Miyasato has rounded up some of the best new happy hours in town (“Come On, Get Happy,” page 16). And we haven’t left out activities. A Roaring Experience One of the most unique attractions in Las Vegas has to be Siegfried & Roy’s Secret Garden and Dolphin Habitat. The outdoor nature area contains pools which are home to several generations of dolphins, including Bella and her daughter, Lady Ace, who was born about a year ago. Above ground, watch the dolphins swim and frolic and through underwater viewing portals. For an additional cost, you can participate in an up-close meet-and-greet program and get printed and digital photos with one of the dolphins. It’s a memory to cherish. In the big cat area, you’ll see a variety of white lions, white tigers and leopards hanging out in their daytime enclosures, which emulate a tropical environment, with waterfalls, misters, rocks and grassy areas. Don’t be surprised if you hear a roar or two echoing in the air as you meander through the park. Many of the big cats here worked in the Siegfried & Roy magic show (hence the attraction’s name). Raising the Steaks It’s only right that the restaurant built in Hank Greenspun’s name doesn’t bury the lead, which is the way the late newspaper editor and publisher likely would have wanted. Hank’s Fine Steaks & Martinis gets right to the point: Here, you’re going to get premium steak and high-quality cocktails. The menu is stacked with options, such as filet mignon, Kansas City strip and more. But Hank’s is also the only steakhouse in Henderson that has certified A5 Japanese

Kobe beef, which is served in two different ways: as carpaccio with cilantro chimichurri and sesame oil, or as a seared ribeye. However, don’t be afraid to stray from steak here, as the buttermilk fried chicken and Colorado lamb chops are worthy entrées. The same goes for the drinks. Take in one of the most beautiful, awe-inspiring sites in the natural world at Grand Canyon West. The Hualapai-owned attraction features the Skywalk, a 10-foot-wide, curved glass walkway that seems to hover over the canyon, whose bottom is thousands of feet below. Although it seems death-defying, it’s quite safe, and could support the weight of 70 jets safely. Restaurant delivers top-flight Korean barbecue, sushi and teppanyaki What do you get when you roll Korean barbecue, sushi and teppanyaki into one hot spot? Chosun Hwaro & Nara Teppan. So many choices, so little time. Guests that want the option of cooking up their own meal can choose the authentic Korean barbecue side. Seating comes with a tabletop grill to cook up your meats. All barbecue orders come with a full banchan (side dish) setup that includes spicy salad, Mandarin salad, sweet pumpkin salad, assorted pickles, japchae (stir-fry glass noodles) and white and regular kimchi. A Rare Find Vic & Anthony’s Steakhouse has long been lauded as one of the best steak spots in Houston, and, luckily, Las Vegas got to claim the brand as its own when a second location opened here. The downtown hot spot gives guests the ultimate steakhouse experience, serving one of the most coveted pieces of wagyu beef—Kobe. Vic & Anthony’s offers guests a cut of A5 100 percent Tajima Kobe sourced from the Hyogo prefecture located on Japan’s Honshu island. But the meat goodness doesn’t stop there. Fork-and-knife it into filet mignon, New York strip and prime ribeye with both on- and off-the-bone options. A Taste of Hong Kong
Upscale décor combines with inventive dishes Get some of the best Chinese food in Las Vegas at the celebrated Mott 32, which opened in early 2019. Named for the address of the first Chinese convenience store in New York and the hub of Chinatown, it channels Hong Kong’s vibrant spirit. The first Mott 32 opened in Hong Kong itself, and expanded from there. The restaurant is incredibly beautiful, with an industrial vibe in the lounge, hand-painted silk wallpaper adorning some walls, long leather banquettes and an accent wall with a window peeking to the kitchen in the dining area. As lovely as the décor is, the cocktails are even

better, with signature cocktails that put a twist on the classics. Try the Forbidden Rose, a blend of pisco, passion fruit, lychee and lemon flavors. A little chili adds spice. The Hanami is a favorite among Mott 32 enthusiasts, with rye, gin and umeshu, plus yuzu, ginger beer and shiso. Strong, yet sophisticated. The menu here is incredibly varied, with everything from dumplings to Peking duck. To start, try an unusual take on shishito pepper—this one is stuffed with chicken. Sesame prawn toast is a popular option also. Mott 32 offers two types of Shanghainese soup dumplings with Iberico pork.
Among other offerings, you’ll find A5 Japanese Miyazaki wagyu, a huge variety of seafood, from fun takes like lobster ma po tofu to whole fish and crab, plus delicacies like bird’s nest soup. But one of the more spectacular items on the menu is the Signature Mott 32 Cut—applewood-roasted 42 Days Peking Duck, which is cooked in a special oven designed just for it. Brunch Like a Champ It cannot be overstated: The Las Vegas outpost of Sadelle’s might have the best bagels in America outside of New York City. In fact, some of the restaurant’s cooks were flown to the original Sadelle’s in NYC to study the art of the bagel. If only there were a way to import the vaunted NYC tap water—the supposed elixir that makes the city’s bread-based products so much better than the rest of the country—these bagels would be as close to the real thing as one would find anywhere else. Bagels aren’t the only menu item, but they are ubiquitous, as they’re likely to be served as a side during breakfast and brunch. Order fish like the house salmon, smoked Scottish or tuna salad, and it will be plated on a serving tower loaded with all the expected dressings: tomato, cucumber, capers and, of course, bagels. A pastry cart will make the rounds, where one can grab a half-moon cookie, Danish and other decadent treats. And in the classic brunch tradition, sip on a bloody Mary or mimosa. Memories for Sale It’s advertised as “The World’s Largest Gift Shop,” and Bonanza Gift & Souvenir Shops certainly doesn’t disappoint. In fact, you could spend practically a whole day here and not see everything. There’s certainly no shortage of souvenirs for those loved ones back home, from mugs and key chains to snow globes and salt and pepper shakers. But few have been as purely fun to watch as Guy Fieri. He’ll never be mistaken for a Michelin-starred chef, true, but Fieri has figured out something very valuable over his years on such shows as Diners, Drive-Ins and Dives, Guy’s Grocery Games and Guy’s Ranch Kitchen: When it comes to restaurants, go big or go home. Given his massive success, it’s likely Fieri will be homesick for some time to come.

cally serve as your meal—bacon, sausage and Guy’s Fries fight for space with jalapeños, pickles, pepperoncinis, olives, lemons and lime. If this doesn’t prepare you for the flavorful delights to come, nothing will. Appetizers are ideal for sharing, although you may want the whole plate of Tuna Poke Won-Tacos, chock-full of sashimi-grade tuna, a mango-jicama salsa and seaweed salad, for yourself. Ditto with the tempura-battered lobster lollipops, served with SMC (super melty cheese) fries coated with roasted garlic and lemon aioli. SMC also pops up in Trash Can Nachos, a Vegas favorite
with house-smoked pork, as well as chipotle barbecue sauce. By the way, if you’re a vegetarian, you needn’t shy away. Yes, there are beef bombs like the award-winning Bacon Mac ’N’ Cheese Burger, piled with applewood bacon, six-cheese macaroni and cheese, SMC (of course!) and onion straws, but there are also healthier options like Morgan’s Veggie Burger, made with black and white beans, jalapeños, oats, garlic, chickpeas, black olives, red bell peppers and artichoke hearts. The “Big Eat” section of the menu is designed to fill you to the brim, highlighted by lobster tacos, tequila/lime-marinated lobster tail topped with mango-radish slaw, salsa verde and pink chili mayonnaise. What? You actually have room for dessert? Good on you, because finishing one of these at the end of a Guy Fieri meal will earn you some serious bragging rights. If you’re hardcore, The Cheesecake Challenge dares you to dust off an entire half of New York-style cheesecake piled with pretzels, hot fudge and potato chips. For something slightly less daring (and for those who are 21-plus), the Seven-Layer Dark Chocolate Whiskey Cake is exactly what it sounds like, covered in rich frosting, whiskey créme anglaise and salted whiskey caramel sauce.

At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
