From the Editor Still Plenty to Enjoy
Unfortunately, live shows have not yet returned to the Las Vegas Strip. If you made a trip here recently, you no doubt recognized the notable absence. After all, entertainment—which back in the city’s halcyon days used to be considered a loss leader, with gambling making up the majority of the profits—has become an enormous part of the Las Vegas experience. It’s hard to say the words “Las Vegas” and not think of Wayne Newton, Cirque du Soleil, Penn & Teller and countless other institutions that helped make our city The Entertainment Capital of the World. Trust us on this: Our live shows and entertainers want to return. Some of them are busily preparing their venues for when it’s deemed safe. It may be a while before they are back, but they will be back. In the meantime, the good news is that the city’s restaurant scene, which easily ranks as one of the best on the globe, is flourishing, serving up some of the best meals you’re ever likely to have. If you need an introduction to some of the more iconic restaurants in town, this week’s feature by Brock Radke (“Signature Style, page 20) will make you feel like an expert. He’s detailed 10 of the Strip’s most important restaurants, eateries that have either won prestigious awards or have stood the test of time to become mainstays.
Either way, prepare to have your appetite and interest stoked! One thing we know for sure about a lot of Strip visitors: They love, love, LOVE bingo! And Las Vegas Magazine’s Nina King provides some insider tips for getting the most out of your bingo experience while you’re here (“Big Money!” page 24). Earthly Delights If you are craving Mexican food, then Trece Eatery + Spirits has you covered. The greenhouse-style restaurant in the Planet 13 entertainment complex features a range of flavorful dishes, from burritos and huevos rancheros. And if you aren’t in the mood for Mexican food, no problem—Trece also has dishes like monster burgers and ricotta ravioli. There’s also a large beer selection with plenty
on draft, so start your meal with a frosty beverage and dive in. Carne asada fries pull in ribeye meat, cheese sauce, guac, sour cream and Mexican cheeses. And you can’t go wrong with tamales. Choose your favorite meat, and enjoy along with corn masa, sour cream, cheese and salsa. The spicy crispy chicken sandwich layers a buttermilk chicken breast, white
Vermont cheddar, green leaf lettuce, tomato and red onion on an onion brioche bun. Pie in the Sky Man, sometimes you just need a slice of pizza. Am I right? Head to Nunzio’s Pizzeria and try the restaurant’s new house-made dough, prepared with aged sourdough for a crispy crunch. The sauce has also recently been upgraded, made in-house with fresh San Marzano tomatoes. Order Nunzio’s classic pies like meatball and ricotta, spinach and ricotta, or Italian sausage and pickled pepper. A recently expanded menu features a baked Italian sandwich made with mozzarella and provolone cheeses, pepperoni, hard salami and pickled peppers, and a roast pork Italian sandwich with broccoli rabe, spinach and aged provolone cheese. Sides include fresh garlic knots and mozzarella sticks and a stand-out dish called baked pizza fries (an East Coast diner favorite). The fries are piled with Italian seasoning, spicy marinara, crisp pepperoni and melted mozzarella cheese. If one were to mention Las Vegas to you, it’d be a safe bet to assume that one of the first thoughts to flood your mind would be the Fountains of Bellagio. It’s an icon. And for good reason, for no matter how many times you’ve watched those streams of water splash and sway to the rhythm of a song, each time always feels like the first time. Restaurant lets you indulge in an eclectic menu Sit down on a Mediterranean patio tonight—can’t you picture the lemon trees and olive orchards in the distance? Crush in MGM Grand takes that relaxing scene and creates it in Vegas. The pretty restaurant is dominated by a large bar laden with wine on one side. You’ll want to start off with one of the specialty cocktails, although there are several craft beers, cider and domestics to choose from, not to mention plenty of wines. Beauty aside, the restaurant features an eclectic menu drawing from several cuisines, with an array of salads, cheesesteak dumplings and French onion soup to start. Short rib tacos

with pickled onions or Maine lobster rolls served with warm brioche, celery and herb mayo are sure to stoke your appetite. Pizzas come out of the oven hot and fragrant, making you glad you were tempted. The grilled chicken pie is elevated with roasted garlic and chili oil. If you want something a little more main dish-like, try the filet mignon or the New York sirloin. Togarashi sea bass and grilled salmon will satisfy seafood cravings, while chicken lovers can indulge in chicken Parmesan or fettuccine. Get ready to experience a little unexpected bite in the fettuccine with the addition of chorizo.
Crush can accommodate vegan and vegetarian diners with several dishes, including risotto with tomato fondue, and artichoke and date pizza. Side dishes include lobster mac and cheese and roasted cauliflower. The playful Nutella squeeze takes the summer ice cream sandwich standby and gives it new life, with Nutella cream and caramelized hazelnuts. A Three-fer Experience Las Vegas has several areas that in the last few years have emerged as hotbeds of culinary innovation—downtown, the Arts District and Spring Mountain Road. In recent months, Finger Licking Foodie Tours has introduced self-guided food tours for both Downtown Las Vegas and the Arts District, and its latest tour brings guests to Spring Mountain Road. Although the area has many Asian eateries and is also known as Chinatown, there are many other cuisines available. In this tour, guests head to Lamaii, chef Bank Atcharawan’s celebrated Thai restaurant; Sparrow & Wolf, famed for innovative dishes from chef Brian Howard and tasty libations; and Edo Gastro Tapas & Wine, which presents modern takes on small plates from chef Oscar Amador. At each one, you’ll sample three signature dishes. The 2 1/2 hour tours cost $125 per person, with a two-person minimum; gratuity is included. An additional cocktail add-on package is available for an extra $50. A prepaid Uber ride will take guests between the first and second restaurant, and you’ll walk to the third. Dynamic Duo Watch any of his television shows or visit any of his restaurants, and you’ll find out Gordon Ramsay is known for three things: risotto, beef Wellington and sticky toffee pudding. That’s a culinary trinity anybody can get behind. But that trio has also overshadowed the fact that Ramsay can cook a mean plate of fish and chips. Perhaps that’s why he built Gordon Ramsay Fish & Chips, a restaurant completely dedicated to the comforting British staple.

In Ramsay’s signature version of the dish, fresh Alaskan cod filets are battered and fried for one minute. The result is a crunchy, golden texture on the outside, while tender and flaky on the inside. Then they’re served on a bed of perfectly crisp chips. Touch of Tradition Each pasta dish at Matteo’s Ristorante Italiano is made fresh to order with ingredients freshly sourced from local farmers. The best recipes from Northern Italy inspire chef Angelo Auriana to combine tradition with innovation, resulting in pasta dishes like the mandilli di seta, light handkerchief egg pasta with almond basil pesto, or the modenesi, a parma prosciutto-filled pasta with pistachios, mortadella and truffle butter sauce. The menu is filled with both rich and light starters, with many vegetarian options. Main dishes explore sea and land, including braised rabbit leg, slow-roasted pork belly, Mediterranean sea bass, lamb chops, baked sea scallops, seared Prime New York steak and more. A Deep Dive A long time ago, Las Vegas had a famously bad zoo. Never heard of it? Be glad you didn’t. Because the city didn’t need it. There have long been alternatives to zoos in Las Vegas anyway, and for the last 20 years Shark Reef Aquarium has delivered a quality educational experience where one could view not only a variety of sharks, but other forms of aquatic life and exotic animals. Shark Reef starts off as a jungle of sorts. Its humid climate may seem a bit
uncomfortable at first, but it’s the perfect environment for the Johnston’s crocodiles and Komodo dragons. You’ll then walk through exhibits that include piranhas, pythons and stingrays until you reach the main attraction. In the shark exhibit, which resembles a shipwreck, you’ll find some of the bad boys of the deep, such as the sand tiger, bonnet head and blacktip reef sharks. –Alex Haase Mandalay Bay, 702.632.4555

Mother Superior The cocktail program was inspired by the founders of the Flamingo, Bugsy Siegel and Meyer Lansky, who traveled to Florida and Cuba frequently and brought back a lot of Cuban and rum influences. The menu is very rum-focused with more than 50 brands—everything from the novice to experienced palate. A favorite cocktail (a seriously delicious must-try) is the Mother Superior, a blend of Flor de Caña 4-Year Extra Seco rum, grenadine, Luxardo maraschino liqueur and fresh pineapple juice. –KM

Striving to give guests a memorable experience Jonathan Pacheco’s official title might be general manager for Bugsy & Meyer’s Steakhouse at Flamingo, but he describes his role as “an ambassador of fun,” adding, “I’ve been very blessed to have a great team around me, but at the end of the day my job really is to ensure that the experience from our guest’s perspective allows them to forget their worries for the hour and a half I have with them. I take that very seriously, and so does the rest of the team.” Pacheco is very familiar with making Las Vegas a great destination for visitors—he spent 15 years with the Wolfgang Puck Dining Group overseeing classic restaurants like Spago, and for a couple of years helped open and oversee restaurants for the Hakkasan Group. Pacheco moved to the city in 1980 with his family from Central America. Growing up here, he didn’t necessarily ever want to work on the Strip, but from the moment he landed his first job at The Mirage, he was dazzled by the world
of food and beverage. He hasn’t left the Strip since. More than a year ago he was approached by the Caesars corporation. “I was honored and humbled that the Caesars team chose me to assist in creating their vision for Bugsy & Meyer’s,” Pacheco says. “Senior leadership really wanted to pay homage to the founders, Bugsy Siegel and Meyer Lansky, and what they really brought to Vegas back then—the glamour and the glitz.” When asking Pacheco what the favorite part of his job is, his answer couldn’t be timelier. “I have this unique opportunity to impact someone’s life—especially now with the temperature of what’s the craziness of the times,” he says. “If I have the opportunity to allow the guest to suspend their worries and woes they have going on in their lives and just transport them and give them a great experience, enjoy a great meal and ambience—I think that’s really what this is all about for me.” –Kiko Miyasato

Everyone has a dream of winning the big bucks in bingo, right? But does it really happen? Yes, actually it does. While bingo wins are usually modest amounts—from $50 to $250 (or less if you have to share)—there have been big wins in the hundreds of thousands of dollars. Most bingo rooms include a jackpot tied to each particular session, plus special jackpots tied to other games, and these start out small but grow over time, generally based on attendance. Big recent wins include
one at South Point, for $88,036 in July; and another huge jackpot of $68,633 at Suncoast. At Sam’s Town, a lucky guy won $10,082 on Aug. 1 and another took home a nearly $37,000 jackpot on Aug. 5, but at bingo rooms all over town, you’ll find possibilities like this. In Las Vegas, you can play at 16 different bingo rooms. Here are some bingo highlights, tips and special games to ponder: In all rooms, social distancing means you generally won’t be sitting right across or
next to your neighbor; rooms are sanitized often and face masks are required. You can choose to play on paper, or choose electronic and have a machine do the daubing for you. If you validate bingo packs, you are eligible to win if you bingo on the special number (cash ball, hot ball, hall ball or other names). This usually costs $1 per pack per session and $2 for the second chance if offered. Do this—it does cost extra, but it could mean an extra $500 or more if you do win on that number. These prizes increase daily.
At the Plaza in downtown Las Vegas, you can play six times daily, with additional games to choose from in each session, with potentially big payouts, like the Dual Daub and Bonanzas worth up to $50,000, and the Bingo Millions game. That’s played along with the coverall game and is also played in bingo rooms across the country where, yes, million-dollar jackpots have been won. Jerry’s Nugget on Las Vegas Boulevard has a special game scheduled on Sept. 5, with four $1,000 coveralls. And in regular sessions, you could win up to $10,000 on the final coverall. In Summerlin, Rampart Casino offers several sessions that offer $1,000 coveralls, plus second- and third-chance coveralls. At press time, the special dual action jackpot stood at almost $48,000—wouldn’t that be a nice payday? Boyd Gaming’s Suncoast in Summerlin was the site of that huge $68,000 win at
the end of July and at press time, its Dual Daub jackpot was over $20,000. Other Boyd rooms—Gold Coast, Sam’s Town and the all-paper Aliante—each have similar special games; at press time, Sam’s Town Dual Daub stood at $48,000. While Boulder Station, Santa Fe Station, Palace Station, Green Valley Ranch and Red Rock Station casinos all offer paper and electronic bingo, its Sunset Station bingo room is paper only. But that doesn’t mean you can’t win big—the progressive coverall was $63,000 at press time. Although Arizona Charlie’s Decatur and Arizona Charlie’s Boulder no longer offer 24 hour bingo, they have eight sessions daily and special games and jackpots—one player recently won more than $72,000. And South Point gave away $88,036 in its Double Action game on July 23. Currently, the huge bingo room’s Double Action jackpot stands at more than $39,000.

Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Italian Delights Bottiglia Cucina & Enoteca (2300 Paseo Verde Pkwy. 702.617.7075) is exceedingly pretty, dressed up with delicate floral accents throughout, and a wine bar that the dining area curves around. Appetizers include squash blossoms or arancini with fontina cheese and Bolognese. Choose an entrée such as the gnocchi arrabbiata or the chicken marsala, and dinner is nigh on perfect. The gnocchi is suitably spicy with Calabrian chilis, and is baked with buffalo mozzarella cheese that adds great stretch to the enterprise. The marsala comes smothered in mushrooms and chicken jus, and is accented with edible flower blossoms. Vegans can chow down on an eggplant “parm,” wood-baked with a cherry tomato sauce. A chickpea Bolognese spaghetti with almond ricotta may also hit the spot. For dessert, you could try the tiramisu, cheesecake or chocolate pudding, or you could go for the “liquid dessert.” You can find a good range of after-dinner delights, like Frangelico, ice wine, port, amaro and grappa. –Nina King
