These days, a big reason why people visit Las Vegas is more because of what it represents than what it actually is. After all, while we’ve reopened several properties, restaurants, lounges, pools and attractions, a lot of what represents Las Vegas to our readers is not currently up and running. The most notable absence is our shows and our entertainers. In one fell swoop in March, every single show went dark, and while some entertainers promised to return later in the year (even announcing performance dates), those shows are as up in the air as everything else, as our Governor, Steve Sisolak, has not given the OK. Until he does, there are some promising signs here and there. Absinthe, Spiegelworld’s ridiculously entertaining and successful production at Caesars Palace, recently announced that its Spiegeltent has been thoroughly cleaned inside and out, and had an air purification system installed in anticipation of Sisolak’s green light. They’ve also promised to reduce the capacity inside from 600 to 220. In other words, at least one show is champing at the bit to give tourists some of that live entertainment they are so desperately seeking. In the meantime, Las Vegas Magazine’s Alex Haase reminds everyone reading this week’s issue just how much of an impact entertainment has had on the city’s
history and culture. He’s assembled a list of the headliners, past and present, who helped to make Las Vegas into the tourist destination you associate it with (“Best in Show,” page 20). Check it out, and then feel free to hit us up on Instagram, Twitter or Facebook and share some of your own favorite entertainers or shows. We may reprint some of your responses in an upcoming issue. Once you’ve enjoyed that feature, there’s plenty more to delve into to help you plan your itinerary. We take you through some of the Strip’s best restaurants, including Majordomo Meat & Fish at The Palazzo, Old Homestead Steakhouse at Caesars Palace and Libertine Social at Mandalay Bay. Las Vegas—and the country—have a long road ahead before things are back to “normal,” but don’t let that stop you from enjoying the Las Vegas of the present.

Scoring Major Points From the mind and palate of popular L.A. chef David Chang, the creator of Netflix’s hot series Ugly Delicious, comes Majordomo Meat & Fish, a new restaurant that opened at the end of last year to great fanfare. The 11,000-square-foot ode to a modern steakhouse also shines the spotlight on Chang’s culinary expertise of Korean barbecue.

Guests can dine on raw bar selections including king crab legs and the towering seafood plateau piled with lobster, shrimp, oysters and king crab. A cool starter called bing, a flatbread, is served with a variety of topping choices like chickpea dip, shaved foie gras, beef tartare, tingly lamb and butter and honey.
The meat and fish selections are where Chang’s imagination shines, combining his love for Asian flavors with Brazilian and American steakhouse favorites. Skirt steak, wagyu filet, roasted black cod and Maine lobster are cooked with ingredients like chimichurri, kimchi and barbecue sauce, resulting in a combination of worldly flavors. –Kiko Miyasato

Steakhouse exudes charm and sophistication When it comes to a blend of fine dining and history, it’s hard to beat the meal you’ll get at Old Homestead Steakhouse, a brand that goes back to 1868 in New York City. One of the restaurant’s best nods to the past is “Annabelle the Cow,” a decoration that topped the original restaurant’s roof for decades and was brought over to christen the opening of the Las Vegas outpost. Brothers Marc and Greg Sherry have been with the Old Homestead group of restaurants for decades, and their passion for the traditions of yore shines through in every dish you’ll enjoy here. Start your adventure off with a cocktail, and Old Homestead’s menu reads like a “greatest hits” with a twist: the Old-Fashioned can be prepared with your choice of bourbon, rum or tequila; the 9th Ave. Manhattan is prepared with rye, Carpano Antica sweet vermouth and Australian chocolate bitters; and the Pearfect Martini uses Grey Goose Le Poire vodka in addition to green Chartreuse, rosemary honey syrup and pear purée. The appetizer menu favors seafood, and Old Homestead uses nothing but top purveyors of delights like fresh-shucked oysters, Alaskan king crab legs, crispy calamari and Petrossian caviar. Odds are you’re in the mood for a steak if you’re dining here, and there’s certainly no shortage of choices, from ribeye and filet mignon to porterhouse and Japanese A5 strip loin. Mexican Accents If you are craving a taste of the sea but want something out of the ordinary, Javier’s is the place for you. The Mexican restaurant presents an array of seafood dishes and flavorful ceviches including octopus, fish tuna and shrimp. Other great starters include totopos de mariscos (seafood nachos with shrimp and crab) and an appetizer plate loaded with empanadas, seafood quesadillas, taquitos and sopes. Order a margarita or cocktail to start or sip a glass of premium tequila—there’s plenty to choose from. Gastropub brings a little whimsy to the table For a weekend retreat with incredible dishes and drinks, head to Libertine Social. The relaxed space has always been a chill place to hang out with friends and fam, enjoy stellar cocktails and marvel at the delicious food coming out of the kitchen. Chef Shawn McClain’s New American gastropub opened originally in 2016 to plenty of buzz, with a superb cocktail menu designed by mixologist supreme Tony Abou-Ganim. The space is light, bright and welcoming, with a dining area sandwiched between a peaceful patio and the kitchen. This weekend spot (currently open Friday through Sunday) features such drinks as the Bees Knees, with Juniper Grove gin; the Dark ’N

Stormy, with Gosling’s Black Seal rum and ginger beer; and a barrel-aged Negroni with Ford’s gin. But there are many wines for you to choose from also, whether your taste runs red or sparkling. The dishes here may seem familiar, but McClain imbued each menu item with a little twist. For example, a simple hummus becomes a production with the addition of balloon bread. Just as in its name, it comes out light and air filled, perfect to pop and dip with. Yellowtail cones look like whimsical mini ice cream cones with a scoop of cherry ice cream—but with a certain seafood flavor. Entrées include whole roasted branzino, roasted Petaluma chicken and a 10-ounce wagyu skirt steak.
Salad, sandwiches and pizzas run the gamut of flavors, from a roasted beet salad with feta and a fried chicken sandwich with Calabrian chili mayo to a decadent black truffle pizza with potato and a farm egg. And making a point of dessert here isn’t wrong at all. Basque-style cheesecake, traditionally a crustless dessert cooked at high heat, is accompanied by strawberries and a graham crumble. Palate Pleasing Chayo Mexican Kitchen + Tequila Bar features a variety of margaritas concocted with multiple tequila types and brands, from Patrón to Casa Noble. House margaritas are available with blanco, reposada and añejo, in case a tasting is in order. There are plenty of other options as well, including daiquiris, mojitos, sangria and a michelada. One of those will pair perfectly with traditional chips and salsa, guacamole and chipotle wings. For your main course, try entrées such as a grilled shrimp burrito with Anaheim green Chile sauce, spiced chicken fajitas or sweet corn enchiladas. A Fun Dimension If you’ve felt like the last few months you’ve been living in the Twilight Zone … well, there’s actually a spot in Las Vegas where you can embrace those feelings and have some fun to boot. Lemon Drop It’s all about the classic cocktails at The Steak House at Circus Circus. One cocktail that has been on the menu since day one—and even been featured on TV, including shows like Oprah and Rachael Ray—is the Lemon Drop. Served with a sugar rim, it’s mixed with Absolut Citron vodka, simple syrup, triple sec and fresh-squeezed lemon juice. General manager part of steakhouse’s charm In a city like Las Vegas, there are some spots that have become an institution. It’s those spots that visitors shouldn’t miss checking out when they come to town—and on that list is The Steak House at Circus Circus, a restaurant that has been operating on the Strip for nearly 40 years. At the helm of the restaurant for 35 of those years is general manager Ron Randazzo. “Over the years I’ve made relationships with the people that come here,” says the Brooklyn, N.Y., native. “People came with their babies and now their babies are coming in with their kids.” Randazzo moved to Vegas in 1981 to attend UNLV’s hospitality program. While attending school he got his first job on the Strip as a busboy at the Desert Inn. By 1983, he joined Circus Circus as the assistant buffet manager. One evening he was asked to fill in for management at The Steak House, just until they could find a replacement. “We always say the joke is, ‘They’re still looking,’” he says, with a laugh.
“But more seriously,” Randazzo says. “Sometimes I think to myself, ‘Did I do the right thing staying in the same place in the same position?’ Like I could have moved up the ladder, been director of food and beverage somewhere. Honestly I wouldn’t change it for the world.” About his role in the restaurant, Randazzo says, “I consider myself like an orchestra leader—making sure everything is in harmony.” The sweet sounds and smells of the wood-burning mesquite grill in the middle of the dining room allowing guests to watch the chefs cook exhibition-style, the throwback sounds of Frank Sinatra, and the sounds of laughter are all important parts, says Randazzo. “We sometimes say, ‘It’s a dinner and a show,’ ’cause guests walk out laughing ’cause we give them a good time. You can’t last 35 years without the laughter. Come and visit us to revisit the good ol’ days. A lot of old jokes and lots of laughter.” –Kiko Miyasato

Lounge offers cocktails, conversation and a cool hang Electra Cocktail Club is a night of mixed drinks, mixed sounds of music and a mix of company, all in a swank setting that’s spacious enough to practice social distancing. The Palazzo’s lounge sits near the casino floor, but once you step through the curtained doorways it’s a world away from the ringing of slot machines. The design is sleek and modern, a mix of blues, blacks, grays and silver furnishings with technically innovative touches throughout, like the giant digital wall that displays images and artwork throughout the evening. Guests can delight in the cocktail program created by world-renowned bartender Sam Ross that focuses on tropical-tasting cocktails and a celebration of rum and mezcal spirits, with Electra having one of the largest collections of

mezcal offerings on the Strip. Frozen cocktails are a specialty, like the Cucumber & Elderflower Daiquiri, perfect for summer, with white rum, fresh lime, cucumber and elderflower. Some of the tropical cocktails fall under the “tall” category of the menu, like the fun Unicorn Tears, a mix of gin, fino sherry, fresh lime, pineapple and absinthe. On-the-rocks favorites include the Disgruntled Mai Tai, a blend of two different rums, Aperol, fresh lime, curacao, orgeat and Underberg, and the Age of Aquarius, mixed with mezcal, passion fruit, lime, honey and Campari. A special Golden Hour menu, served until 8 p.m., includes buy-one-get-one bottles of champagne and $18 champagnes by the glass. Menu. If you know your zodiac sign, locate it on the menu and find treats like this month’s Leo cocktail, a mix of rum, Campari, lime, simple syrup and strawberries. Are you a biting Scorpio? Its cocktail is made with rye, Jamaican rum, Amaro CioCiaro, Carpano Antica, absinthe and a maraschino cherry. There’s the love-for-family sign, the Aries, mixed with Campari, mezcal, aged rum, lime and pineapple juices and ginger syrup and ginger candy. Carson Kitchen adds new items to an already sterling menu By Ken Miller Sure, there are plenty of amazing restaurants on the Las Vegas Strip, and odds are you have reservations for more than one of them as we speak. Celebrating the headliners who helped shape Vegas entertainment There’s no real formula that determines how residencies succeed in Las Vegas. Some stars coast on name recognition, or they find themselves able to capitalize on nostalgia; some stars learn that audiences are yearning for their return to the spotlight, while others just happen to be in the right place at the right time. Yet, one thing all successful, groundbreaking residencies seem to have in common is that they’re different. And while that may sound simple, if it were, a lot more stars would be doing it.

In Las Vegas’ rich, storied history of entertainment, some headliners have stood above the rest. This is not to say one entertainer is better than another, but that what he or she accomplished helped elevate the idea of what a Vegas residency could be. We at Las Vegas Magazine want to celebrate the entertainers who helped shape our cultural landscape into what we know today; thus, the following is our list of some of the most influential headliners to grace the Vegas stage.

RAT PACK Vegas Personified If one were to describe the founding fathers of Vegas entertainment, the list would likely include Frank Sinatra, Sammy Davis Jr., Dean Martin, Peter Lawford and Joey Bishop—that’s the Rat Pack that ruled Vegas in the ’60s. All were individually successful in Vegas, and while it would be good-natured to say they all have their place in Vegas history, it’s Frank, Sammy and Dean that everybody remembers. With that said, the Rat Pack personified Vegas. They were the total embodiment of the boozy, schmoozey, smokey, classic Vegas that many long and lust for, and their performances at the Copa Room at The Sands are the stuff of legend. It’s an attitude that helped build this town, which makes their influence almost inescapable. And who would want it any other way?

BRITNEY SPEARS Fountain of Youth Some may call Britney Spears’ residency a byproduct of Celine Dion’s. Perhaps that’s true, but their impact was starkly different. While Dion paved the way for older stars, like Elton John and Rod Stewart, to reinvigorate their careers through a Vegas residency, Spears proved there was a market in Vegas for younger acts, which ultimately brought in a younger clientele. The earlier construction of The Cosmopolitan and City Center, along with a few modern casino renovations, hinted that the Strip was trying to adopt a more contemporary aesthetic. Arguably, Spears’ residency helped Vegas fully realize that venture, and it’s mostly been successful. If Spears had flopped, Backstreet Boys, Gwen Stefani, Christina Aguilera and Lady Gaga residencies would have been, at best, unlikely.

SIEGFRIED & ROY Tiger Kings In his book God, No!, Penn Jillette made one of the most astute assessments on the impact of Mirage headliners Siegfried & Roy: “When you take something easy and safe and make it look difficult and death-defying, you are a cheesy circus act. When you take something impossible and make it look easy, you’re an artist … What they do looks easy and simple and, well, it just happens to be close to impossible and stirs your heart to the very depths.” Siegfried & Roy elevated the typical Vegas magic show, so much so that the typical Vegas magic show became a copycat of Siegfried & Roy, replete with gaudy showmanship, tigers and dancing girls. Their run ended prematurely due to a tragic onstage accident, but no one did it better than them, and no one ever will.
DAVID COPPERFIELD Game Changer Not only is David Copperfield one of the most influential magicians in Vegas, he’s one of the most influential magicians ever. If making the Statue of Liberty disappear and levitating over the Grand Canyon are any indication, Copperfield brought large-scale, illusion-based magic into the mainstream, which clearly inspired fellow magicians like Criss Angel and David Blaine. But what makes his Vegas show so endearing is his ability to weave stories together through his magic, whether it involves a heartwarming tribute to his father, or an encounter with aliens inside the MGM Grand. And, most of all, even though he’s performed magic professionally for more than 45 years, he’s still not afraid to challenge himself or take risks, and that’s why his Vegas show never gets old.

SANTANA Art of Intimacy Santana is known for being the first true rock band to have a Vegas residency, and the group has been in Vegas for more than a decade. Since then, we’ve seen other rock acts find their place in Vegas, such as Aerosmith, Billy Idol and David Lee Roth. But more than simply ushering in a new wave of Vegas entertainment, Santana has mastered the art of intimacy. They perform in one of the smaller venues in town, House of Blues, making the band feel more up close and personal than if they were playing at, say, The Colosseum. It allows for a reciprocal relationship between artist and audience, making each individual performance unique to each audience. PENN & TELLER Truth Seekers What Penn & Teller do so well is demystify magic. Yet, somehow they still find a way to make magic mystifying. To them, magic is not an illusion, it’s a trick. They don’t want audiences to think for a moment that magic is real, because everyone knows that it’s not. Rather, they want their magic tricks to be good enough that even when audiences know they’re not real, the tricks are still interesting. That may seem subtle, but it makes a difference, because some modern magicians all too often make a mockery out of magic. Newcomers to the Strip, such as Piff the Magic Dragon and Mat Franco, seem to follow the Gospel of Penn & Teller, for they similarly strive to

make magic fun and meaningful, rather than something one has to believe in to enjoy. WAYNE NEWTON Mr. Las Vegas Everybody knows Wayne Newton is the unofficial ambassador of Las Vegas. His name is synonymous with this town. But how did he achieve such wild success? He had a few hits, a boyish smile and a distinctive high voice. Other than that, there doesn’t seem to be any concrete reasons one can pinpoint that would account for such triumph. Yet, like other successful Vegas headliners, he was a highly charismatic entertainer who displayed top-notch showmanship. At age 16, he started playing in town with his brother Jerry—six shows a day for 51 weeks. While kids his age were busy being teenagers, he cut his teeth
in showbiz at Vegas clubs, eventually learning how to masterfully work a crowd. Unlike Liberace, he was successful without gimmicks, and unlike Elvis, he was successful without colossal fame. What he achieved in this town was unprecedented, and Vegas likely won’t see anyone like him ever again. ELVIS PRESLEY The Comeback Kid By the late 1960s, The King had lost his groove. His music wasn’t selling, and he spent much of his time making unwatchable movies. At the time, it might have even been accurate to have called Elvis a joke. But, little did people know, he was on the verge of a resurgence. Elvis’ iconic ’68 comeback special on NBC reminded everyone that he was still cool. Soon after, he inked a deal with the Interna-

CARROT TOP Prop Culture Icon While many great comedians have graced the Vegas stage, such as Danny Gans, Don Rickles and Redd Foxx, Carrot Top doesn’t get enough props for being the most successful comedian in Vegas history. He’s performed his brand of prop comedy in town since the mid’90s, and he’s had a residency at Luxor since 2005. That longevity is rarely attainable for a Vegas headliner, let alone a comedian. How does he do it? He adapts. Though his schtick stays the same, the material constantly

changes. He has a few greatest hits that stay in his act, but on the whole, the material is fresh, for he’s constantly taking notes on pop culture and incorporating it into his props.

FRANK MARINO The Ultimate Diva While he wasn’t the first drag queen in Las Vegas, it wouldn’t be a stretch to say Frank Marino helped popularize the modern drag show on the Strip. As the emcee of An Evening at La Cage and, more recently, Divas Las Vegas, Marino became known for his stellar impersonation of comedian Joan Rivers. Not only did he create a fun, vibrant environment for his audiences, but so did his team of drag queens. And since the cast all played Vegas-headlining divas like Cher, Celine Dion, Lady Gaga, and Britney Spears, if you couldn’t

get a ticket to one of their concerts, you could always find the next best thing at Divas. LIBERACE The Flash Liberace routinely annoyed stodgy music critics with his grandiose piano playing and showmanship. But it’s that flashy, excessive persona that made him so endearing, as well as excessively rich. Regarding the criticism, he’d often quip that he cried all the way to the bank. (By the late-’70s, he was reportedly making up to $300,000 per week at the Hilton.) His over-the-top antics, such as riding across the stage in a Rolls-Royce and wearing exotic (some may say ridiculous) costumes, essentially defined what the Vegas residency would become: an in-your-face spectacular. But, more importantly, he had an innate ability to connect with audiences, not only making them think they were seeing a show, but rather the performance of an old friend.

CELINE DION The Revitalizer As the saying goes: If you build it, they will come. And that’s exactly what happened with Celine Dion and The Colosseum at Caesars Palace. Before Dion, Vegas not only needed some star power, the city needed an attraction that could draw crowds from all over the world. Sure, Vegas had Cirque du Soleil and a few Broadway productions at the time, but people could see similar performances elsewhere. For a time, if you wanted to see Celine Dion, you could only see her in Las Vegas. Suffice it to say, her original residency, A New Day…, was a massive success. What was supposed to be a three-year residency, turned into two successful residencies over 16 years, and changed the shape of Vegas entertainment to come. In addition, The Colosseum has since become the home of other famous residencies, most notably Elton John’s Red Piano shows.

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
COVID-19. It’s also considerate of fellow guests and resort workers.
