Nevada is definitely a focal point in national news these days. It makes sense when you think about it: The entire world comes here to relax and forget about its troubles, so when the nation tries to reopen in the wake of a pandemic, Nevada—and specifically Las Vegas—becomes a template in how to best accomplish that while still keeping everyone safe. After all, everyone wants to come here, so everything we do is under the most intense of microscopes. I wish I could say it’s all good news, but Nevada is in the same situation as other states. Despite a mandate to wear masks by Gov. Steve Sisolak, many are still resistant. Still worse, many insist on congregating in large numbers in small spaces without said masks. However, the outlook is much better on the Las Vegas Strip, where the mask policy is being strictly enforced. There are also many safety protocols in use to ensure cleanliness, and bars in Nevada are currently closed until our COVID-19 numbers begin to decline. If you’ve made the decision to visit Las Vegas at this moment in time, the good news is that there’s plenty to enjoy here while feeling safe. This week’s issue is chock-full of such options, not to mention plenty of introductions to personalities that are helping to reshape our city in the
new normal. Check out our Q&A with chef Lamar Moore, a Food Network veteran who’s leading the charge at Bugsy & Meyer’s Steakhouse at Flamingo; or get to know Nate Hedlund, the beverage director at Sahara Las Vegas. A Dinner Spectacular It’s a night of old-school glitz and glamour at The Mayfair Supper Club. A true throwback to the days of supper club ambiance, it’s more than just a meal, it’s an experience. New Kid On the Block
Circa bringing a fresh look to downtown It’s not often that Downtown Las Vegas steals the spotlight from the Strip, but there’s a flashy new kid on the block at Fremont Street that deserves everyone’s attention: The highly anticipated opening of casino mogul Derek Stevens’ latest resort, Circa, is almost here. When it opens on Oct. 28, it will be the first resort built from the ground up to open downtown since 1980, and it’s a welcome addition. Another perk: The resort is adults-only. The property is catered, and restricted, to those 21 and older. Moreover, imagine Circa as a 21st-century resort that embodies the spirit of Old Vegas, circa 1960. Although its opening is more than two months away (room reservations begin Dec. 28), it’s not too early to start planning your vacation around

the amenities to be offered at Circa. First, they will boast one of the most eclectic beverage programs in town. There’s Mega Bar, a 165-foot-long bar on Circa’s first floor; Circa Bar, a vibrant outdoor bar along the famed Fremont Street Experience featuring 24 frozen cocktail flavors; Overhang Bar, which overlooks the casino’s massive sports book; Vegas Vickie’s, an upscale lobby bar named after, and starring, one of the city’s most beloved neon signs; and Legacy Club (opening in December), a rooftop lounge that pays tribute to the founding fathers of Vegas. Then expect some good eats. Victory Burgers & Wings, Project BBQ and the pan-Asian restaurant 8 East will be among the first restaurants to
open, but the crown jewel will be one of Vegas’ longtime favorite chefs Barry Dakake’s vintage steakhouse, Barry’s Downtown Prime. As for the adults-only fun mentioned earlier, Circa will sport Stadium Swim, a year-round pool experience that includes six pools across three levels, multiple swim-up bars, spacious private cabanas, selfie walls and an impressive 40-foot HD television screen. Then, inside the casino, get ready to place some large bets at the World’s Largest Sports Book, which is no exaggeration. Not only is there a mammoth 78-million-pixel screen, but the three-story sports book can hold up to 1,000 spectators. No matter your preference, steakhouse has what you want Steak is like an aphrodisiac for some people, and like an aphrodisiac, what works for some doesn’t work for others. But at Ruth’s Chris Steak House, you’ll find a lot to fall in love with. The restaurant features much more than steak, of course, like starters of barbecued shrimp in white wine and garlic; a blue crab stack; a mammoth chilled seafood tower of lobster, blue crab, crab legs and jumbo shrimp; and veal osso buco ravioli with saffron-infused pasta. Nate Hedlund
A world away, beverage director finds success From the farm life to the neon lights. “When you’re a kid growing up where I did, you didn’t have a lot to do except for drink beer and go ice fishing,” says Nate Hedlund, beverage director for Sahara Las Vegas. “When you’re drinking Busch Light and talking with your buddies and saying, ‘How awesome would it be to get paid to be in beverage?’ And you dream of this glory job. Then once I moved out here and got introduced to wine and beverage and saw there’s actually a path to do this, I wanted to be in the business.” Born and raised in Northern Minnesota, Hedlund and his family were turkey and beef farmers. From the crack of dawn it was riding tractors and cutting hay. To celebrate his 21st birthday, he visited Vegas, and from that moment it was his goal to live and work in Sin City. Hedlund moved to town in 2007. “When you grow up on a farm, sitting by yourself all day, Vegas is on the other side of the planet, and I
wanted to be a part of that.” With no connections in town, Hedlund got hired at Mandalay Bay through a temp agency–eventually he got hired full time and his career took off. With lots of hard work and gumption, he worked his way up the ladder, was promoted to titles like wine director and beverage manager, helped launch beverage programs for multiple properties, and in February of last year he joined Sahara. “It’s been more than 10 years in hospitality,” he says. “I’ve been a beverage director for four properties now. I’ve worked in every category of beverage. Given all types of budgets, programs, corporate, non-corporate–and still my favorite part is watching a guest try a drink and say, ‘This is really good,’ or ‘This is delicious.’ ... when I hear that there’s just no better compliment.” What about the next 10 years? Answers Hedlund, “Some day I want to be the property president. … Yes, that’s definitely a dream.” Not bad for a kid from the farm. –Kiko Miyasato

New karaoke club lets everyone be a musical sensation One of the best things about Vegas is that there’s always something new to experience, like KAMU Ultra Karaoke. The newly opened entertainment experience allows you to channel your inner Jennifer Lopez, Britney Spears or Justin Timberlake and impress your family and friends to boot. When you enter KAMU in the Palazzo Tower wing of The Grand Canal Shoppes, you’ll pass through a thermographic disinfecting door, which includes a disinfecting vapor that’s already in use in other parts of the country, as well as temperature screening and UV lights. You’ll get a disposable microphone cover and hand sanitizer. The 17,000-square-foot venue features 40 socially distanced suites and private rooms,

which can accommodate from six to 40 folks at a time. (They are sanitized after every group.) Each room has a different, exotic or fun theme, from the Circus Suite to the Milky Way Suite. Offerings include a 40-ounce tomahawk steak, Korean fried chicken, kalbi tacos and, for the lighter appetite, tuna tataki salad and prosciutto and mozzarella flatbread. Dessert? Try honey toast or a massive sundae. To accompany your dishes, you’ll find a range of cocktails and even bottle service. If you’re shy or just tone-deaf, the small gathering suites may be just what you need to feel
comfortable. And what will you choose to sing? With KAMU’s large library of hits to select from, you’re sure to find something appropriate (or possibly inappropriate; you’ll need to get feedback from your group to tell!). The venue also allows you to sing from your own music library, and even stream music from your phone. Entertainers and shows we can’t wait to see again Yes, Las Vegas reopened following an initial total shutdown in March. But there remains a huge void in the city’s heart: entertainment (and as of deadline, no shows or entertainers had announced return dates). So while we sit patiently and wait for our favorite shows and entertainers to return, let us remind you of just a few reasons why our Strip is considered the Entertainment Capital of the World.

“X” Burlesque
Lady Gaga Her Park MGM residency singlehandedly redefined what a Las Vegas show could be. Not only does she play multiple instruments and sing her lungs out, Gaga engages in physical stunts that suggest she might have wanted to be a stuntwoman at one point. There’s just so much to look at here; this is a show many fans will be attending multiple times just to make sure they saw everything. Piff the Magic Dragon From his early days appearing in Rose. Rabbit.Lie at The Cosmopolitan to his star-making turn on America’s Got Talent (he now refers to himself as “The Loser of America’s Got Talent”), Piff’s appeal lies almost exclusively in his personality. True, he’s very dry and at times standoffish, but he’s brilliant at one-on-one conversations with his audience members during his show at the Flamingo. The fact that he’s a great magician just sweetens the deal. And we love, love, love Mr. Piffles! Purple Reign Jason Tenner embodies the spirit and physicality of Prince to perfection at this Tropicana Las Vegas show, taking his audience on a trip through the music
legend’s greatest hits. But this is no mere tribute act: Tenner plays his own instruments and busts some serious moves. KÀ This Cirque du Soleil spectacular at MGM Grand defies description. Its “stage” is an ever-evolving, constantly rotating, inclining, rising and falling marvel of technology, and as its story of royal twins fighting to find their way back home, it becomes the perfect tableau for all the trials and tribulations they face. David Copperfield I’ve seen this show at MGM Grand only once, but to this day it remains one of my most vivid memories of Las Vegas entertainment. From start to finish, Copperfield’s illusions had my jaw on the floor, my mind racing to comprehend what was happening in front of (and in some cases, behind) me. He’s a master showman who’s ascended to the top of his profession. He deserves every accolade he gets. “X” Burlesque This long-running Flamingo all-female topless revue is a perfect blend of sultriness and dance production. These ladies are serious athletes who have endless

energy as they whip and grind their way through current and classic rock hits. There’s also some comedy half-way through. This is just pure, unadulterated fun. The Magic of Jen Kramer She was a huge hit on the TV show Penn & Teller: Fool Us, and it’s easy to see why: She’s so charming and nice, it’s easy to be disarmed. One moment, she’s all smiles and sweetness; the next, you’re blinking in astonishment at what she just did. This is a show the entire family can enjoy; just don’t be surprised if your children decide they want to become magicians afterwards.

LAMAR MOORE IS HEAD CHEF at one of the Las Vegas Strip’s most exciting new restaurants, the eclectic Bugsy & Meyer’s Steakhouse at the Flamingo. The dynamic eatery pays tribute to the hotel’s historical legacy in several ways, including a hidden speakeasy known as the Count Room and an old-school bakery façade. But the menu blends vintage Vegas favorites with fresh, modern flavors, and that’s where Moore comes in. He was awarded with his gig by winning the Food Network’s Vegas Chef Prizefight reality competition show, filmed right here on the Strip, and the experienced chef can’t wait to continue the momentum at the new restaurant and his own personal culinary evolution.
Bugsy & Meyer’s Steakhouse was already one of the most anticipated new restaurants coming to the Strip, but with current circumstances, it seems like the opening is even more exciting. I would agree. We’ve been able to take care of our guests one by one while social distancing and we’re pretty spread out in the kitchen as well, finding ways to maximize taking care of our food and beverage and service. As this thing comes to an end, I think some of these systems we’ve established will definitely stay in place. Bringing sanitary practices to a higher level heightens our ability to execute better. You’re from Chicago and so is the restaurant’s design company, Studio K. Is there a little bit more of that city’s style influencing the experience here in Las Vegas? I think so. As I get more acclimated to Las Vegas—we’ve only been open for about a month—there should be more additions to the menu that are more inclusive to myself and some things I can bring from Chicago that I think Vegas would like to see. And there are people looking for items they saw on the show that were successful during the competition so I’d like to integrate some of those items, too, and put a little more Chicago love on there. Of course, you won Vegas Chef Prizefight to earn your spot on the Strip. What surprised you about that TV experience? A lot of those shows have you going to some restaurants but competing more in one central place, which we did in every episode, but I was surprised at how many of the Caesars restaurants we were able to

cook at. It was great and now that I’m (here) I realize that gave me a real bird’s-eye view of what we do as a company. It really gave me a heads-up of what Vegas is all about. You knew you wanted to be a chef from a very young age, cooking and tasting food with your grandmother at home. Was there a moment in your career when you defined your own cooking style or discovered your own food? That happened for me about five years ago (when) I took an opportunity to work at a barbecue restaurant as a partner and help that company change and get the food how I wanted it to be. That really helped me find my culinary point of view and where it was going because I started to hone in on dishes I grew up on. An example of that and one of the biggest dishes I did on the show was fried chicken, which I always enjoy cooking and do it very differently. I put rice flour in my mix which comes from time I spent in Peru, where they fry things a little lighter. It’s really about taking everything I’ve learned and honing in on my point of view. What are some of your favorite dishes on the Bugsy & Meyer’s menu? I really love the lobster mac and cheese and you can’t go wrong there. The crab cake is super light and has a summer feel to it. The shortrib is outstanding with gnocchi, wild mushrooms and a really great jus. And I’m a big fan of the tomahawk steak, especially if you’re looking to share something, and we like to do it with our bacon and eggs steak topper. I enjoy eggs day and night and this is like a cool little secret on the menu. We throw on some of our house dry-aged pork belly with maple glaze and a sunny side-up egg.

Steak tartare used to be the Rodney Dangerfield of the food world—it got no respect. In fact, it spent quite a lot of time being the brunt of jokes, including a particularly cruel bit courtesy of Mr. Bean, in which the titular character spends his entire meal trying to hide the dish in question wherever he can find space on the table, rather than just telling his server he really doesn’t want to eat it. Those days are fully in the rear-view mirror. Savvy diners know that

not only is steak tartare a must-try dish at higher-end restaurants, it can often define the dining experience. On its face, the dish can seem deceptively simple: It’s traditionally made with raw ground beef and served with any number of ingredients, from onions and Worcestershire sauce to capers and pepper. But take one bite of steak tartare at any of Las Vegas’ top steakhouses, and you’ll realize that description falls short. The only limits to steak tartare here are the chefs’ imaginations. There’s the sublime Prime steak tartare at Aria’s Bardot Brasserie, a visual feast with its orange egg yolk seeping into every crevice of the dish. A small bit of sauce verte (green sauce) adds just a bit more color and flavor, and the deep flavors of the meat pair perfectly with house-made waffle fries. Bazaar Meat by José Andrés at Sahara Las Vegas has a fantastic selection of tartares, each more inventive than the next. As good as Vittore 1950 is (small medallions of flawless tenderloin with black pepper, Parmesan, capers, brown-butter croutons and sherry dressing), fans—and especially vegetarians—will want to dive into Andrés’ beefsteak tomato tartare, which looks like the real thing but is a taste sensation all its own. Flavored with balsamic vinegar, cucumber and black olive, it will have you asking, “How did he do this?” Hank’s Fine Steaks & Martinis at Green Valley Ranch provides an excellent 7X wagyu beef tartare for its happy hour, and you won’t be happier than when you’re experiencing the flavor sensations of quail egg yolk and smoked paprika aioli on some toasted brioche. The newest arrival on the block, handcut Prime beef tartare at Bugsy & Meyer’s Steakhouse at Flamingo, comes courtesy of head chef Lamar Moore, and it’s easily one of the best things on the entire menu, who shared his secret to making the melt-inyour-mouth appetizer: dry-aged New York Strip. “When it comes to steak tartare, the quality of beef you buy matters more than ever,” Moore says. “If you have a local butcher or specialty meat shop, it’s best to purchase your meat there. The more tender the meat, the less chance you’ll encounter chewy bites of gristle.”

At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

Views Galore At 550 feet, the High Roller (The Linq Promenade, 888.328.1888) is the world’s largest observation wheel. At that height, along with its floor-to-ceiling glass cabins, the attraction offers incredible 360-degree views. Daytime viewing allows one to take in the mountainous scenery that surrounds the Las Vegas Valley, but the nighttime views are what really dazzle, because they capture the bright, big-city lights that makes Vegas so alluring. Caesars Entertainment is taking every precaution to make sure that your time on the High Roller is as safe as possible, which is why they are limiting each cabin to 10 riders and placing decals on the floor to remind guests to keep a safe distance. Despite social distancing measures, however, High Roller still offers one of the best ways to spend a half hour. Before you leave, be sure to check out its LED light show, which is synchronized to popular songs. Watch in awe as it rapidly changes colors, as if the big wheel were dancing along with the music, trying to stand out in the crowd. Thankfully, it doesn’t have to try hard. –Alex Haase
