From the Editor Searching for normalcy

No matter where we find ourselves in the world these days, we all have one thing in common: uncertainty. We’re a global community; what happens in other countries affects us. What happens in other states affects us. There are no bubbles. We’re all taking some punishment from the effects of the COVID-19 pandemic. A vaccine is hopefully coming sooner rather than later, but in the meantime, governors are suing mayors, Walmart and other big chains are back-pedaling on mask mandates out of fear for their employees, and as of the deadline for writing this editor’s note, the Major League Baseball season might be over before it really even began. Yep, it feels pretty chaotic at the moment. If you decided to take a break from all this craziness and vacation in Las Vegas, my staff and I can promise you one thing of which you can be certain: We will work our hardest to make sure the information you read in the following pages is as informative, up-to-date and relevant as possible in making your stay here an enjoyable and productive one. This issue covers the entire spectrum of what Las Vegas is famous for. Were your Las Vegas wedding plans put on hold because of the COVID-19 crisis? Test Your Inner Foodie Do you know how they say that when you lose one sense your other ones are heightened? Check out that theory at Blackout Dining in the Dark, where you’ll need to rely on just four main senses: taste, touch, smell and hearing. When you enter the restaurant for your meal, you’ll sign in and make your culinary choices, then a guide will take you to your table. And, yes, it’s completely dark. Initially, you may feel a bit intimidated, but you’ll find conversing with your companion is way more focused. You’ll get appetizers, main course and dessert, and it’s quite the adventure and a challenge to see if you can figure out what is being served without seeing it. The dishes are really, really good, and touch on those salty, sour, sweet, bitter, umami notes. It may seem like an easy thing, but it’s much harder than you think to discern the difference between grains and pasta when you can’t take a look. Downtown steakhouse is all about an old-school experience When Derek Stevens opened The D in 2012, he had a vision of bringing over the spirit of his hometown of Detroit (where his property gets its name). You’ll find plenty of that at Andiamo Steakhouse, a classic steakhouse experience. The restaurant is the brainchild of Joe Vicari, whose restaurant group owns several Andiamo restaurants in Detroit. He stresses perfection at every one of his establishments, and at the Las Vegas location that includes buying the freshest ingredients and purchasing beef from top butchers like Pat LaFrieda and Stock Yards. From top to bottom, Andiamo oozes oldschool elegance, from the dark woods to the

servers who prepare your Caesar salad tableside. As you sip on an Old-Fashioned, try a true Andiamo classic guaranteed to turn heads: The Grande Meatball, smothered with tomato sauce and ricotta cheese. For a lighter starter, try the calamari fritti, flash-fried with banana peppers and ammoglio sauce. As you’d expect, the meat selection here is terrific, from porterhouse and filet mignon to veal osso buco. There’s plenty of steak add-ons, including bearnaise and gorgonzola dolce crusted, but we really recommend the signature “zip” sauce. You may never want your steak served with anything else again.

If your tastes veer more toward seafood, no problem whatsoever. Andiamo offers sensational pan-roasted scallops, served with ricotta gnudi, asparagus, sweet corn, roasted tomatoes and white truffle essence, as well as Chilean sea bass on a pea risotto cake and topped with a beurre blanc sauce, garlic and roasted tomatoes. How about pasta? An Original Lives On Thank Wolfgang Puck for ushering in a new era of dining in Las Vegas. When he opened Spago at The Forum Shops in 1992 he paved the way for other celebrity chefs to bring their culinary skills to the city. Fast forward almost three decades later and Puck has opened multiple restaurants across the Strip, with his newest endeavor being a reimagining of the original Spago. Spago’s footprint captures some of the best views on the property—Lake Bellagio and the famed fountains show. Many of the dishes are inspired by the chef’s trips to farmer’s markets, resulting in a menu of freshmade pastas, wood-fired pizzas, robust salads, top cuts of meat and creative seafood recipes. There are also the dishes that made Spago a staple like the smoked salmon pizza. Other highlights include the grilled prime beef burger with balsamic onion marmalade and desserts like the strawberry panna cotta with Tahitian vanilla cream. Spicy Stuff Take in weekend brunch or a relaxed lunch or dinner with the cuisine of Susan Feniger and Mary Sue Millikan at Border Grill. The chefs, who have been business partners since the early ’80s, became stars in the ’90s with their Too Hot Tamales show on The Food Network. Although the celebrity angle might have originally drawn fans to the Mandalay Bay locale, it was certainly the food that kept the restaurant buzzing. Brunch brings several worthy entrées such as huevos rancheros, chilaquiles and the spicy chicken tamale and eggs. Pair that with a mimosa or Michelada. For lunch or dinner, there’s a full menu, with everything from the Border ceviche to grilled skirt steak. To start, try the queso fundido or the crispy potato and ceviche tacos. Add a chicken poblano torta or Yucatan pork, which is slow roasted in banana leaves. The Simple Things Simplicity is supposedly the key to finding joy. If that’s true, then we could all do with a little simplicity right now, and it’s easy to find at Rockhouse inside The Venetian. The first thing you’ll want to do is order a drink. Rockhouse is famous for their gargantuan 100-ounce Rocktail Bowls, which are typically shared with a group. Considering the pandemic, however, that situation is not optimal. But don’t worry, you and your friends can easily socially distance and drink

by each ordering a 16-ounce Rocktail Bowl for one. Then sink your teeth into a delectable hamburger like the Mac Burger: two patties, dressed with all the typical fixings and slathered with a Mac-style special sauce. Spicy Flamingo “Spritz is poolside so it has that beachy, St. Tropez style,” Stiggins says. So the cocktail program includes many frozen, refreshing and tropical recipes. For something cool with a slight bite, the Spicy Flamingo is perfect. It’s mixed with Espolòn tequila, fresh lime juice, house-made agave syrup, fresh watermelon juice and a sprinkle of Tajín spice. “It’s a variation on a Tommy’s Margarita but we’ve added watermelon,” she says. “You get the spice but it doesn’t burn and the watermelon juice really cools the cocktail off.” –KM

Shannon Stiggins

Lead bartender continues to work her passion “The goal was always to end up in Las Vegas one day,” says Shannon Stiggins, who moved to town in December. “I just kind of showed up, reached to my contacts and it worked out.” Stiggins is currently the lead bartender at Spritz Restaurant & Bar at The Venetian. But she didn’t get to her current position at the newly opened outdoor, poolside eatery without some serious clout to back her up. The New York native has been at the helm of and helped launch more than a dozen bar programs in places like Manhattan, Chicago and Palm Springs, Calif. She has competed in some of the most-recognized bartending competitions in the country, including as a finalist in both Bombay Sapphire’s Most-Imaginative Bartender and Diageo World Class Northeast Regional. Even after more than a dozen years in the industry, and repeatedly being offered management positions, Stiggins still prefers to be behind the bar working her craft.

“I really do still enjoy making the drinks,” she says. “There’s something fun and exhilarating about making cocktails for people. Working and being in the weeds in the service well, it’s fun.” Besides mixing and creating cocktails, Stiggins’ favorite part of bartending has always been about the people she serves. “I like meeting new people,” she says. “And Vegas is fun because every person you interact with is going to be a new person. I like having people smile when they drink your drink. … Whether I’m talking to someone that I’ve known for 10 years or someone that I’ve known for 10 minutes, I’m making them feel comfortable and I’m able to connect with them quickly.” Reflecting on her long, successful career, Stiggins says no matter what the future holds, she sees herself in the industry for the long haul. “There’s always passion behind what I do,” she says. “And bartending has always been a passion. There’s plenty of hot spots where you can get a great cocktail The impact of COVID-19 continues in Las Vegas. The result: Nightclubs are still closed, and most recently the governor of Nevada reimplemented restrictions on bars. So, what’s one to do if they want to go out for a night of drinking in Las Vegas? Well, the good news is you can still do that. There are still plenty of places to get your cocktailing on and all of them have a great atmosphere that rivals any bar experience. A few lounges are still welcoming guests—the one big exception is that patrons cannot order cocktails directly from the bar. Take a seat around the lounge area instead, and a cocktail server will bring you the drinks and food. For

drinking with a spectacular view, head all the way up The STRAT’s tower to 107 SkyLounge. And the beautiful, spacious Casbar Lounge at Sahara allows guests a fun refuge off the casino floor. The multilevel Margaritaville at Flamingo is like spring break on the Strip, with tropical cocktails and food and patio seating. For dinner and drinks and a show, head to The Mayfair Supper Club at Bellagio. Enjoy the night in high style as the stage in the middle of the restaurant welcomes dancers and singers who kick the fun factor up to 11 at this vintage-Vegas-meetsmodern-flair hot spot. For some patio fun, a top spot is Beer Park at Paris. This picnic-style, sports bar-meets-casual lounge offers an expansive rooftop setting and plenty of brews, cocktails and fun eats to keep guests partying from day to night. If you’re visiting the Las Vegas Strip, odds are you’re spending most of your time indoors—after all, the temperatures are scorching, and that air-conditioning feels oh, so good. They also get that there’s a lot of Vegas locals who, because of COVID-19 concerns, might not be doing any traveling right now. Their vacation may very well involve the nearby Strip. For both groups, Smith & Wollensky is offering its “Summer Steak-Ation” menu, and it’s designed to take your mind off both the summer heat and the current concerns the world is facing. It succeeds on both counts, and there’s a good chance you’ll be back before you leave for home—wherever that might be. There’s no better way to feel refreshed than starting your meal off with a cocktail, and Smith & Wollensky’s selections are geared toward fans of every spirit. Whiskey lovers will want to try the Tennessee sidecar, featuring Uncle Nearest 1884 smallbatch, Martell Blue Swift cognac, crème de peche and lemon juice, while gin fans need to order the blueberry gin sour, a fizzy blend of Gunpowder gin, fresh blueberry syrup, lemon juice and club soda. Don’t worry, vodka fans—there’s a lot to choose from, although we recommend the strawberry sipper, Sobieski vodka, strawberries, pink peppercorn syrup and club soda. Your plans for a huge wedding may have been put on hold, but that doesn’t mean you can’t still tie the knot. Despite COVID rearing its ugly head—the shutdown interrupted Las Vegas’s busy wedding schedule, and Clark County Clerk Lynn Marie Goya says the county was issuing about 20 percent more licenses than the previous year—here in Las Vegas there are a ton of options for brides and grooms. In Clark County, you’ll need to go online and apply for your marriage license no more than 90 days before the event. “As far as I can find we’re still the No. 1 destination location in the world,” said Goya. “And so we wanted to make sure that we made life easier for everyone, including those who might be in a radically different time zone.” However, you must show up at the bureau with legal identification to pick up the actual license and sign the paperwork. You’ll need to arrange for an officiant for the ceremony, and at least one witness (both who are often provided by the venue). As to where to hold the ceremony and reception, there are many elegant and even exciting options here. Nearly all the resorts in Vegas have chapels and

wedding services, but there is much more available. “We have a lot of gorgeous outdoor locations for either the photography or the ceremony, as well as the standalone chapels and other facilities like the golf courses, you know, typical places like that that people go to have a big wedding, but that ability to have a very inexpensive wedding, still in a beautiful setting, is pretty unique to Las Vegas.” One thing you’ll find at many places is being able to live stream your ceremony, and share the happy day with family and friends who may not be able to be with you. Although this was an option before the pandemic kicked in, it’s widely offered now. “Pre-COVID, people had a lot of their family and friends around for that public declaration. Now, the weddings are much smaller. But Las Vegas is uniquely prepared to still allow couples to have that bigger wedding through streaming video and social media—some of the things that we’ve already set up before COVID, but that are really useful now so that we can include people who can’t necessarily travel anymore,” said Goya. Other changes may include limited occupancy and wearing of masks.

Whether it’s a finger gun or an AR-15, the love for things that go pew-pew or boom-boom is innate. Perhaps it’s because guns represent power or the ideals of rugged individualism, but the simplest explanation is most favorable: They’re just plain fun. The euphoria generated from pulling the trigger, hearing the boom, feeling the jolt from the recoil and accurately hitting a target is unmatched by most other experiences, except, quite possibly, for the booms that occasionally occur below the belt. Further, firing a gun is a tangible act of releasing tension. Some call it “brass therapy.” If that description stands, then Las Vegas is a Mecca for gun enthusiasts, for there’s no shortage of gun ranges that succeed in bringing the boom.

Outdoor adventures include firing a 105mm high velocity tank round, an 81mm mortar or five gallons worth of fuel in an M9 flamethrower. There’s even a land and air package where one can take the reins of an M113 armored personal carrier, shooting 25 rounds from a 50-caliber M2HB, then later hopping in the gunner’s seat of a low-flying helicopter for a full-on military-style assault.

The Range 702 (702.485.3232) is an apt name for what the facility offers. From experiences large to small, they’ve got it all. Have an affinity for only one gun? Cut to the chase and fire off a favorite with the One and Done package. Looking to pull out all the stops? The All In experience offers 13 of the most powerful firearms in the building. To call it a blast is a gross understatement. Fire off guns like a sawed-off shotgun, M249 SAW and Desert Eagle handgun, which are similar to guns used by the notorious crime duo. Is it ladies’ night? To hone your skills before the gun fight, you can fire weapons filled with non-lethal ammo in a variety of virtual practice sessions. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.

Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked and, if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.

There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.

Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.

There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.

Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.

One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.

While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like
