From the Editor A hard truth
Show of hands among the adults out there: Who likes being told what to do? Hello? Bueller? No one? Well, it’s hardly surprising. As children, we’re bombarded with commands from our parents and teachers; who can blame us for celebrating adulthood by doing exactly what we want? In normal times, I’d back this attitude 100 percent. Hey, I’m like that myself much of the time. Yes, I’ve intentionally left unwashed dishes in the sink overnight. I’ve waited weeks to pull weeds in the back yard. I’ve seen dust piled an inch thick on a kitchen cabinet and just kept walking. All just because I could. But these aren’t normal times anymore. It’s a fact. The way we lived our lives a year ago is in such stark contrast to the present that it barely feels recognizable. We tried business as usual briefly in some states across the country following the initial coronavirus pandemic shutdown, only to see those states have to shut down businesses again because of a spike in COVID-19 cases. Clearly, something has to change. Steve Sisolak, the governor of Nevada, acknowledged as much in late June when he announced a policy making wearing masks mandatory, which directly affects casinos (the exemption is when you are eating or drinking. )
Properties across the Strip are on board with this policy. In fact, Caesars Entertainment enacted a similar policy before Sisolak, stating, “the scientific evidence strongly suggests that wearing masks and practicing social distancing may be the most important deterrents to spreading COVID-19 from person to person.” But Sisolak is a realist; he recognizes the inherent difficulty of enforcing such a mandate. Whether this mandate works isn’t up to the government. It’s up to us. So please, let’s not mince words anymore on this subject: If you want do to something about this pandemic, if you want the country to financially thrive again, if you want to have fun in a responsible way, you simply have to be willing to follow a command and wear a mask. It’s been said thousands of times by people far smarter than I am, but it bears repeating until everyone understands it: This is not just for your safety; it’s for the safety of those around you. One final thought: Those commands our parents and teachers gave us as kids? They were generally in aid of putting us on a path to a better, more productive life. As much as we might want to exert our individuality at a time like this, maybe it’s time to admit a hard truth: We could all use a good command now and then.

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked, and if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to step away from the game if you remove your mask to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re required to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? You must now wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like

Ramsay continues the fun with
Scotch eggs using duck eggs, definitely not the norm for Brits. Here, the egg is covered with duck sausage and topped with foie gras. Unconventional yes, but you won’t hear a soul complaining. Splashdown! It’s pool season here in Vegas, and although it’s a more socially distanced experience, you can still get your splash on. At Influence, the Pool at The Linq, soak in the sun, indulge in a frozen cocktail or a beer and dip your tootsies in the waters. Cabanas line one wall of the vibrant complex, with a separate above-ground pool at one end (the Shark Tank, haha!). Daybeds surround both pools, with loungers lining the other three (6 feet apart, of course). A

It’s as if restaurant creators Mario Carbone, Rich Torrisi and Jeff Zalaznick took a New York Italian restaurant from the mid-20th century, put it in a time machine and transplanted it to Las Vegas. You’ll know you’re going to experience something special from the moment you enter. A captain is assigned to your table, and they attend to your every need and desire, providing you with detailed menu descriptions and more than a little

personality in the process. Before you even order a cocktail, you’re feeling a bit tipsy from the rush. But you definitely want to order some booze here, especially with the rum program that Carbone curates. If you really feel like splurging, try the Samaroli 1999 Trinidad rum aged in Scotch barrels from the vintage rum cart. You cannot go wrong with the appetizer menu here, but we strongly suggest starting with the carpaccio Piemontese, featuring truffles, walnuts and mushrooms atop thinly sliced beef tenderloin, brushed with a white truffle emulsion. We’re particularly partial to veal Parmesan,
and this version is pretty much the reason. It’s enormous and enormously satisfying, accompanied with cheese-crusted, deep-fried rib. If fish is more your style, the dover piccata, drizzled with a lemony brown butter sauce and finished tableside by your captain. It’s awesome enough that you’re given a free bottle of limoncello just before your departure (along with seven-layer cookies), but don’t skip the bananas flambe for dessert—everyone in the room will be looking your way when your captain fires up the dish. –Ken Miller Aria, 877.230.2742

French Accents For a little taste of France on the Las Vegas Strip, you can march up the Linq Promenade to Favorite Bistro, where they serve “French fare with American flair.” If you’re heading in for breakfast, indulge in a Belgian waffle with berries or Nutella. The Elvis sandwich layers peanut butter banana, bacon and jelly on brioche bread. A lobster eggs Benedict is just right, with a croissant acting as the bed for spinach, poached eggs and hollandaise sauce. Or to really get the day off to a good start, try the Bloody Mary—and this one’s a doozy. A beef slider, chicken wings, bacon, mac ’n’ cheese are only half of the presents piled high on this glass. Lunch and dinner selections include burgers, the vaunted croque monsieur, a French dip, pizza and pasta. Desserts are amazing, as is fitting for a French restaurant. The showstopper here is the crystal ball, a selection of sorbets served in an amazing teardrop shaped ice sculpture. Get out the camera! And if you are still thirsty, one of most entrancing cocktails is the crystal cranberry drink, served in one of those ice teardrops. There is a wide selection of beer, wine and other cocktails if that’s not your thing. Never-Ending Flavors
Celebrity chef’s seafood restaurant is an enduring classic Emeril Lagasse has the honor of having one of the longest-standing restaurants on the Las Vegas Strip, Emeril’s New Orleans Fish House at MGM Grand. And after one bite it becomes clear why: When something is done right, it never gets old, and few celebrity chefs do it better than Emeril. “Bam!” indeed. Start your visit with some signature dishes like Emeril’s barbecued shrimp, tangy and addictive and served with a rosemary biscuit and chives, or the Creole poached shrimp remoulade and fried okra, served with heirloom tomatoes, cucumber and capers, and habanero-spiked remoulade. So delicious. So comforting.

Whether you’re in the mood for a sandwich or a salad, Emeril has you covered. You can’t get more Emeril than his crystal fried shrimp po-boy, dripping with Southern goodness thanks to Creole aioli, vine ripe tomatoes and shredded lettuce and pickles, all served on toasted French bread. Vegetarians can enjoy a meal here too, thanks to salads like the red and gold beet, smothered with goat cheese, toasted walnuts, mache and a citrus vinaigrette. Arrive at your entrée destination with either meat (take your pick of 16-ounce Prime beef ribeye, 10-ounce Prime flatiron or 8-ounce filet of Angus beef) or seafood (so many solid options,
but we would suggest either the lobster pot pie with spinach, mushrooms, leeks, heirloom tomatoes in an herb puff pastry crust, or the Creole seared Atlantic salmon, served with black-eyed pea succotash, deviled potato creamers and a Creole mustard beurre blanc). More a chicken fan? Emeril’s Shelton Farms chicken breast, served with a crispy potato cake, smoked mushroom soubise and green bean and frisee salad, will more than satisfy. More Than Steak The first thing that strikes you about Ruth’s Chris Steak House is the exclusive feel: You have to take an elevator to reach it. And once you arrive, you’re instantly struck by the ceiling-to-floor windows that offer some of the best people-watching on the whole of the Las Vegas Strip. But the best is yet to come at this restaurant that, unlike its name would imply, is about far more than just steak. Classic appetizers like the chilled seafood tower and crab stack (blue crab mixed with avocado and mango) are surefire starters, and sure, you could go with a steak here and be more than satisfied (whatever your preference, from New York strip to porterhouse, they have it!), but if you want to be adventurous, try the Chilean sea bass, stuffed chicken breast or barbecue shrimp entrée, served New Orleans-style in reduced white wine, butter, garlic and spices. Float On If you could visit several world landmarks in one place, why would you go anywhere else? That’s the beauty of Las Vegas: You get a little bit of everything. At The Venetian, you get their version of the Grand Canal in Venice, a serene water channel that winds throughout the property and houses the popular Gondola Rides attraction. Just like you might do in Venice, hop in a gondola and coast along the canal, floating beside cafés and underneath bridges, while a gondolier serenades you (from a safe distance) along the way. A Quiet Garden Vacation, ironically, can be exhausting. Especially in Las Vegas. Even now, with the city’s lack of nightlife and entertainment options, there’s still so much stimuli that it’s easy to feel like you’re being pulled in multiple directions. Nick Barlow
Blending cocktails and characteristics Gourmet bartender Nick Barlow fits in nicely with the overall character of Oscar’s Steakhouse—an old-school joint with a vintage-Vegas vibe at downtown’s Plaza hotel and bears the name of Vegas’ one-time mayor Oscar Goodman. Barlow is a third-generation Las Vegan; his grandpa was a silver miner and his father, to this day, works in the hospitality industry. As the gourmet bartender, Barlow brings with him many years of experience working at some of the city’s hot spots for spirits. He worked his way up the ladder from barback to bartender, spending the biggest chunk of his time at the now-shuttered Public House at The Venetian. During more than seven years there, he immersed himself in all things alcohol, eventually becoming lead bartender and a certified cicerone. After a few more years,
Barlow headed downtown and joined the team at Oscar’s Steakhouse. “You can feel the buzz in the downtown scene and I feel the Plaza is at the heart of it,” he says. “And at Oscar’s you get to see the cool neon lights flashing while you’re enjoying the best steak in town.” What Barlow loves most about the bar is “the interaction that I get to have with guests every single day,” he says. “I enjoy service. It’s fun to be able to make those connections and friendships and then to create something for them on the spot that’s original and delicious and watch them enjoy it—that’s the fun of it.” But Barlow isn’t just behind the bar all the time. He and his wife are also bona fide West Coast swing dancers, and that fits in quite nicely with the old-school vibe at Oscar’s. Go see for yourself. –Kiko Miyasato

Downtown hotel has the city’s only Sigma Derby game Las Vegas is filled with unique experiences— dining, shopping, shows, attractions, nightlife, the list goes on. But when it comes to gaming, there’s only one place that you can truly have a unique experience, and that’s at The D—nowhere else in the city can visitors try their luck at the old-school Sigma Derby game. It’s a mechanical horse-racing game where players can bet money on different horses, and the game pays out according to the winning horse and the odds. One very cool feature is that guests can still bet with actual quarters—no paper tickets here! So, just how did The D end up with the city’s only Sigma Derby game still in operation? “This is a story that goes way back,” says Derek Stevens,

owner of The D hotel-casino. “My first time in Las Vegas, a long time ago, I stayed at The Dunes hotel and the very first game that I played was Sigma Derby. My very first wager in my life was betting on Sigma Derby. So (the game) was always something special for me.” After a long search, Stevens says, he finally got his hands on one that had been out of commission for more than a decade. After it was purchased, it was completely restored to its former glory, even to putting the original canopy on it. “There’s no better game, I thought, that represented vintage Vegas than Sigma,” Stevens says. “It was such a fond memory for me and I thought about all the fun that I had and the camaraderie playing this machine.” And Stevens
is right. The game can seat up to 10 players and it really is a fun, communal experience. On the second floor of the casino, where you’ll find the Sigma Derby game, guests can also enjoy some of The D’s most popular cocktails at the Vue Bar, such as the D Punch, a blend of four different Skyy vodka flavors, Pacific Blueberry, Bartlett Pear, Raspberry and Citrus, plus orange, pineapple and cranberry juices. Delve into tequila and mezcal in Las Vegas
Mexican spirits are seriously trending in the liquor world right now, with tequila and mezcal being chief among them. And Las Vegas has embraced that trend, creating cocktails and offering sips from some the best brands around.
Although Mexico produces a number of distilled products, the two it is known best for are mezcal and tequila. Both spirits are made from the agave plant, with tequila distilled solely from the blue agave plant in Tequila in the state of Jalisco (and a few other very limited areas) and mezcal from more than 30 agave varieties in nine Mexican states, primarily Oaxaca. Both harvest and use the heart of the plant (the piña), roasting it to get it ready to ferment, and it’s been done that way

for hundreds of years. After it ferments with yeast and a few other ingredients, the spirit is distilled at least twice (by law), then bottled or aged. Many of the distilleries are small, although many are also owned by larger companies. Both tequila and mezcal are regulated by the Mexican government and the industry itself, with the term “tequila” being claimed as intellectual property by the Mexican government in 1974. Mezcal, similarly, is governed by laws that certify the origin of the product.

Tequila has a strong, pure taste, but the flavor can vary depending on where the blue agave is harvested and how long and in what the tequila is aged. The three types are blanco (silver), reposado and añejo. Both añejo and reposado are aged, often in oak barrels sourced from U.S. and French spirit makers. That aging imparts a range of notes, from floral to woody or herbal. Mezcal also has a strong taste, and the flavor varies by type of agave used, the region grown and the roasting of the piña. Mezcal can also have a variety of flavoring agents added, although many do not. One of the most appreciated aspects of mezcal has to be the smokiness of the spirit, imparted through the roasting process. In the last few years, both have made huge leaps in popularity worldwide, due both to the increased availability of the products (there are hundreds of brands of tequila and mezcal now available in the U.S.), and to the tireless efforts of its proponents. Wellknown tequila brands such as Sauza and Herradura have been around more than 150 years, while Patrón was formed in 1989. Years later, George

Clooney cofounded Casamigos, which became prized in the U.S. and eventually branched out into mezcal. In L.A., restaurateur Bricia Lopez is known for her passion for Oaxaca and its culture. She owns Oaxacan in L.A, and helped popularize the mezcal in the last few
years. Last summer, she came on board in Vegas to curate Mama Rabbit (not yet reopened), which opened with one of the widest collections of tequila and mezcal in the country. A premium tequila brand in the market, Casa Dragones, was co-found-

ed by CEO Bertha González Nieves, the first female master tequilera. Casa Dragones has only arrived in Vegas in the last few years, and it appears in many bars’ tequila lists. One of the most popular ways in Mexico to indulge in tequila is neat, and many people in the U.S. learned to drink it that way also, albeit with salt and lime standing by. But Nieves advocates treating it as a sipping alcohol, like a fine whiskey, that you might enjoy over the course of an evening. Recently, Casa Dragones introduced its first añejo tequila, the Casa Dragones Barrel Blend, which is excellent as a sipping tequila. It is made from blue agave, aged in both French and Amer-
ican barrels and blended after aging. Find it at Más Por Favor Taqueria y Tequila, Zuma at The Cosmopolitan, Elio at Encore and at Total Wine & More (if you want to take it home). Of course, in Vegas pretty much every bar that serves cocktails has tequila-inspired drinks, from margaritas to the tequila sunrise of lyrical fame. But with the rise in popularity of mezcal and tequila, so have the number of drinks that use the spirits. prickly pear margarita, a classic version with lime and agave nectar, and a peach margarita. Mesa Grill serves Casa Dragones as well as Don Julio 1942 and several others. Montecristo Cigar Lounge features the Maestro, with Maestro Dobel Diamante tequila, orange curaçao, lime juice, yuzu and ginger syrup. Vista Lounge offers the Smoke & Spice margarita, with Kimo Sabe mezcal and chili liqueur. For a fancy libation, Vanderpump Cocktail Garden serves up the Vanderpink margarita, with tequila, orange liqueur, hibiscus and white peach, plus Puff the Magic Dragon with mezcal, dragonfruit and Firewater bitters. THE VENETIAN Chica boasts several margaritas with ingredients and a huge selection of tequilas and mezcals on the spirits menu, from Casa Dragones joven (which is incredibly smooth) to La Niña tobala mezcal (the name speaks for itself, but it is distilled from the tobala variety of agave). GOLDEN NUGGET Cadillac Tequila Bar features 35 tequilas as well as some mezcals, and offers flights including the El Presidente, with Avión añejo, Maestró dobel, Casamigos reposado and The Players Choice with Don Julio añejo, Espolón blanco, Partida reposado tequilas.
