From the Editor Slowly but surely
Since moving here in 2003, I’ve seen this city go through some difficult times, and each time it rebounds, finding ways to adapt and endure. The depression of the late 2000s had a profound impact on the city—this year’s opening of Circa downtown marks only the second time in 10 years that Las Vegas has seen a new casino being built from the ground up (the last two were Lucky Dragon in 2016 and The Cosmopolitan in 2010). But it’s a promising start; next year will see the opening of Resorts World, and Las Vegas’ housing market, which bottomed out during the recession, is now healthy, with new construction across the Valley. Just as Las Vegas came back from that disaster, it is coming back gradually from the coronavirus pandemic shutdown. It began with a handful of casinos reopening at limited capacity, and it continues with the careful reopening of other properties. On June 18, Westgate Las Vegas and Paris cautiously opened their doors. On June 25, Luxor began operations again. And this week will see the reemergence of Mandalay Bay, Four Seasons and OYO Hotel & Casino (July 1), Nobu (July 2) and Aria (July 4). And yes, we have yet to receive any word on when your favorite entertainers and shows will return, but it’s all part of
Las Vegas’ concern for your safety that such decisions are not being taken lightly. Opening anything too early at this point could backfire and cause further delays in the eventual complete reopening of the Entertainment Capital of the World. But don’t worry—there’s still plenty to do here. You’ll find dozens of pages following this one that detail all you can experience. In addition to restaurants, attractions and bars, many properties have reopened their bowling alleys, pools and spas. And with the Fourth of July coming up, you might wonder if fireworks will be affected by the shutdown. Wonder no more; at the time I write this, Red Rock Resort and Green Valley Ranch Resort will hold fireworks shows at 9 p.m., with the Plaza downtown following up with their own display at 10 p.m. There were no other updates available for other properties, so check with the property you are currently staying at for further details. The longer I live in Las Vegas, the more convinced I am that there’s no problem this town can’t handle. Yes, the Las Vegas you are currently visiting is not like the one you visited last time you were here, but it’s by design. Your safety is our primary concern, and, just like our fine city, we just ask that you find a way to adapt.

You may notice some guests (including yourself) headed straight to the elevators. That’s because contactless check-in is no longer a thing of the future. At MGM Resorts International properties, check in on your phone when you get close to the resort, and you’ll be able to pay and get a digital key. You can also check in with a contactless option on a kiosk and a more traditional front-desk option. Caesars Entertainment has rearranged front-desk areas and lines to accommodate social distancing, and provides hand sanitizer. Some hotels also have plexiglass installed at the front desk.
Hand sanitizer, everywhere! Every hotel that reopens is required to have stations for hand sanitizing throughout. MGM Resorts’ properties even offer new handwashing stations. You’ll notice that many employees are masked, and if their job requires it, gloved. This goes for those employees you see and those who labor behind the scenes, in restaurants, loading docks and other areas. Those employees undergo a health self-screening daily and most are also screened for temperature.
There may be a line, as guests are being asked to maintain adequate spacing between groups and to try to ride with their own party, or ride with fewer people. Employees often clean and sanitize the buttons and commonly touched areas inside the cars, and clean escalator rails.
Feel good in knowing your room has been thoroughly sanitized. Surfaces have been wiped down; and linens and towels completely changed out. You’ll probably find extra towels in your room, and can always request more if needed. You may not find little bottles of amenities but amenities are still available. Housekeeping and other guest services may not be entering your room unless requested, and at some hotels, won’t be entering during your stay.
Many venues have plexiglass at payment stations, and marks to encourage social distancing while waiting. In addition, fewer patrons may be allowed in at one time.

OK! It’s time to release a little tension, and maybe win a few bucks. Go grab some cash, and head to the floor. While you’re here, you’ll see a variety of measures being taken to increase social distancing, such as slot machines not being available right next to each other, congregating behind each other not allowed, a limited number of players at the tables and plexiglass partitions between dealers and players. You may be asked to wear a mask or step away from the game if you need to smoke. Casinos are required to have a plan to disinfect all the items needed to play, such as chips, cards, balls and dice.
There is a limit to the number of people allowed in the area and there is space between each party to encourage social distancing. Each area is sanitized between each party.
Most restaurants require reservations, although not all. Many will text or call when your table is ready, saving you the hassle of waiting in line. You’re encouraged to wear your face mask until you reach your table. It may feel much more intimate, as tables have 6 feet between them and the number of customers is fewer. Menus may be digital or one-time use paper menus. At some restaurants, permanent menus are sanitized between each use. Condiments won’t simply be stored on the table, and are sanitized between customers. Bars will also be spacing patrons’ parties 6 feet apart.

Although the number of attractions in Vegas isn’t as high as a few months ago, sanitation is still high on those that are open, and social distancing is easily seen. For instance, on New York-New York’s Roller Coaster, cars are loaded with the same party, and alternate cars will be empty.
One of the best ways is to check-out on the TV in your room, and hotels have been using this option for many years now. Look at your bill, OK it if all is correct, and get a copy emailed to you. If you have a physical key, most hotels will allow you to leave it in the room. Some hotels have check-out kiosks that are sanitized often.
While you’re here in Las Vegas, there are several things you can do to help keep yourself well and decrease the chances of you or someone else getting sick. Give yourself a self-check before you arrive. Do you have a fever? A cough? Is your sense of smell normal? Wear your mask in public areas, including the casino. It helps stem the spread of potentially deadly viruses like COVID-19. It’s
also considerate of fellow guests and resort workers. You’ll notice hand sanitizer stations in multiple locations. Give yourself a squirt before and after playing slots or the tables, and anywhere it seems you might need it (after touching elevator buttons,
holding escalator rails or getting money from the ATM). If you start to feel sick, get it checked out. Many hotels have medical professionals onsite or can get you medical help quickly.

Bobby Flay keeps the fiery flavors going Since you’re in the Southwest, why not have a few dishes inspired by the region? At Bobby Flay’s Mesa Grill in Caesars Palace, the flavors of ancho chile, cilantro, jalapeño, chipotle and habanero take center stage. Celebrity chef Flay opened the original N.Y. Mesa Grill in 1991, and the Caesars Palace outpost in 2004, and it’s begin a sought-after destination ever since. At Mesa Grill, although there have been numerous changes to the menus over the years, some of the most popular dishes remain. If you’re a fan of the restaurant or the chef, you’ve proba-

bly had the tiger shrimp and roasted corn tamale. This appetizer may be the most well-known, and with good reason—the presentation is beautiful, and the corn-cilantro sauce enticing. A more recent addition to the menu, the goat cheese “queso fundido” with rajas, gives you that classic chip-n-dip feel, but a whole lot better. Rajas are strips of poblano peppers, and the Serrano vinaigrette gives the dish a tiny bite. You may want to order a couple of margaritas to accompany them, and there are some pretty special ones here. The cactus pear margarita features Corazon blanco tequila plus cactus pear syrup and fresh
lime. It’s simple and simply good. A selection of wines and beer will make sure you are hydrated, even if the margarita does not appeal. New Mexican spice-rubbed pork tenderloin comes accented by bourbon-ancho chile sauce, plus a sweet potato tamale and crushed pecan butter. Sounds decadent, doesn’t it? For a little different flavor, the cornmeal-crusted chile relleño comes stuffed with porcini mushrooms and cotija cheese. A Swingin’ Good Time As hotels, casinos and restaurants reopen, so too are some of the city’s funnest attractions, including Topgolf, a multilevel entertainment complex offering a swinging good time. And they’re doing it safely. The 11 feet between tees was already enough to practice safe distancing, but Topgolf has added plexiglass dividers in between booths for added safety. Each hitting bay is also be thoroughly sanitized, from the golf balls to game screens. This isn’t your average driving range. First, all of the balls are microchipped to track distance and velocity, offering real-time results after each hit. Then, in the distance, targets abound, and they’re used for fun, challenging games. In most challenges, the farthest and most accurate shots earn the most points. But if you’ve never held a golf club before, don’t worry, because there’s no golf experience required to have fun at Topgolf. With their bar and kitchen, which serves up delectable food like nachos, burgers and injectable donuts, you’ll feel content simply sitting back, enjoying a drink, marveling at incredible views of the Strip and watching the balls fly. –Alex Haase 4627 Koval Lane, 702.933.8458

To Your Health! It seems inconceivable that vegetarian and vegan restaurants were almost impossible to find in Las Vegas at one point. And one of the most recent arrivals to the Strip is True Food Kitchen, which promotes anti-inflammatory foods in order to promote better disease prevention. The results are stunning—and delicious. Even the cocktails here have a healthy twist to them. Try a citrus skinny margarita, made with organic tequila, cucumber and
mint, or a Causemo, made with organic vodka, prickly pear and lime. Classics mingle in a gorgeous setting When Bottiglia Cucina & Enoteca opened at Green Valley Ranch, it excited a lot of taste buds. Who doesn’t love a zucchini blossom stuffed with lemon ricotta? Oh, my, my. Oh, hey, yes. The restaurant is exceedingly pretty, dressed up with delicate floral accents throughout, and a wine bar that the dining area curves around. Appetizers include the aforementioned squash blossoms or arancini with fontina cheese and Bolognese. Feel free to add on a glass or two of wine, because the variety here is quite nice. Choose an entrée such as the gnocchi arrabbiata or the chicken marsala, and dinner is nigh on

perfect. The gnocchi is suitably spicy with Calabrian chilis, and is baked with buffalo mozzarella cheese that adds great stretch to the enterprise. The marsala comes smothered in mushrooms and chicken jus, and is accented with edible flower blossoms. Vegans can chow down on an eggplant “parm,” wood-baked with a cherry tomato sauce. A chickpea Bolognese spaghetti with almond ricotta may also hit the spot. For dessert, you could try the tiramisu, cheesecake or chocolate pudding, or you could go for the “liquid dessert.” You can find a good range of after-dinner delights, like Frangelico, ice
wine, port, amaro and grappa. That could be the perfect ending to the meal! If you love what you’ve had, you’ll be happy to know that Bottiglia does family-style take home meals and catering, too, starting at $50. Family-style meals are great for smaller groups, with two pick-and-choose menu options available, and catering meals serve anywhere from eight people on up, perfect for treating an office or large family. Be Whisked Away If you want one of the quintessential dining experiences at Mott 32, look no further than the 42-day Peking duck. Mott 32 specializes in the Cantonese cuisine of Hong Kong. It begins with brick oven-smoked duck being carted to your table. The crispy skin is served first, after which the fowl is sliced thin and served with steamed pancakes and hoisin sauce mixed with peanut and sesame sauces. But don’t stop there. Your journey has only just begun. Other destination dishes include smoked black cod (served underneath a smoking dome) and barbecue pluma Iberico pork (a marbled cut from the end of the loin). You can also enjoy Iberico in a pair of soups: a traditional and hot and sour rendition. Get Experienced The Fremont Street Experience is one of Las Vegas’ best bets because it costs almost nothing to experience it. First, the bustling promenade is filled with street vendors, shops and restaurants. Then, from the canopy above, there’s Viva Vision, a free light show that plays every hour on the hour. You’ll see some mind-blowing visuals paired with songs by The Killers, Imagine Dragons and more. While you’re looking above, you might notice people flying by. Pour It On For the moment, shows are few and far between in Las Vegas, but if you need to wet your whistle with a cocktail, you can get a show to boot. The Tipsy Robot’s mechanical mixologists shake it up, baby, if you don’t want it stirred. (But it’s not just you and the tin man; there are human servers and bartenders around to help out, if needed.) Download an app and you can not only decide which drink you’d like, but you can

also change it up! Add and delete spirits and garnishes at will, and then watch as robotic arms do everything living arms can. You’ll be able to keep track of where your drink is in the process on the app, and get an estimate of how long it will be before your cocktail appears. Break Your Fast It’s been a go-to breakfast spot in New York for years now, and it was pretty exciting when Sadelle’s Cafe, owned by Major Food Group, decided to open up a café in the Bellagio in December of 2018. Although getting a table in New York was hard, it’s considerably easier in Vegas. And the view is gorgeous! The restaurant offers breakfast and lunch , the go-to dish has to be the bagels, which are made in-house. You can get it with salmon, whitefish salad, tuna salad, smoked Scotch salmon, salmon salad and egg salad, or opt for the tower and get them all. Make sure you pair that with a Bellini or mimosa for maximum effect. Sadelle’s has plenty of cocktail and wine options also. There are a number of egg dishes such as omelets, huevos rancheros and several egg sandwiches. For lunch, choices run the gamut, from tuna melt to grilled salmon. If you want to eat light, try one of the classic salads, like the Cobb, where chicken, bacon and egg will satisfy your protein needs. Last year he was the recipient of two special awards: the Nevada Restaurant Association award for drink specialist of the year, chosen by his peers and recognized for his drink quality and creativity; and the USBG Tony Abou-Ganim Paragon Award for his mix of creativity and knowledge of bartending, named for the famed mixologist. “There’s people smarter, with better personalities, probably make better drinks,” says Rains, who now practices his craft as the lead bartender and tiki-attaché at one of the city’s most unique watering holes, the Golden Tiki. “I personally just think that I have a love for it. I have a love for the game, the craft.” After more than two decades of bartending in both San Diego and Las Vegas, last year Rains joined the Chinatown hot spot. “We have a really good collection of spirits, and the
cocktails run the gamut: fruity tiki cocktails, to approachable, to complex, and we get to light stuff on fire—I mean, come on,” he says with an infectious laugh. Besides his lauded skills behind the bar, you can catch Rains in front of the microphone singing and playing guitar for his party time punk rock band, The Rhumones (he even performs at Golden Tiki occasionally). If you’ve never had the pleasure of going to the Golden Tiki, put in on your calendar now. It’s pure, unadulterated fun, and employees like Rains are a huge part of that. “Golden Tiki is the essence of escapism,” Rains says. “It brings Vegas more Vegas. It’s 24 hours. It’s live entertainment every night. Different vibes depending on the time of day. Irish pub continues to show visitors a good time Looking for a fun place? A fun place that’s casual, cool and you can gamble, too? Thankfully, with the construction of The Promenade in 2013, O’Sheas was given a second life and reopened, continuing its legacy of spreading that Irish cheer. When it’s your turn to order, O’Sheas offers three bars within its venue. One of those, The Blarney Bar, sits outside so guests can catch the people-watching action on the Promenade. To keep the Irish cheer in check, O’Sheas hands the reigns to its mascot, Lucky the Leprechaun, played by Las Vegan Brian Thomas, who has donned the green tuxedo and top hat for more than a decade. WHEN CHEF LORENA GARCIA opened her Las Vegas restaurant, Chica, in 2017, she was the first Latina chef with her own restaurant on the Strip. That venture paid off, as since then she and her partner, restaurant group 50 Eggs, have opened another location in Miami. The Las Vegas location is loved both for its brunch menu and for dinner. Just recently, the Las Vegas restaurant introduced a revamped dinner menu, with new dishes joining classic favorites. To start your meal, try one of the new cocktails, such as the Chica-rita, made with Espolón tequila, lime, grilled pineapple, sage and Elemakule Tiki bitters or the Pisco spritz, a colorful glass of Barsol pisco, chicha morada juice and prosecco. Then, you may want to order shareable items such as guacamole or the new wild mushroom tostada. Each light tostada is just a bite or two, with roasted mushrooms, epazote, shaved radish and a whipped queso fresco. Go ahead and sneak the last one; it’s understandable. It’ll be hard to choose just one appetizer, so get a few. The classic grilled Peruvian octopus has been a winner since day one, enticing seafood lovers with tender octopus laid over blistered Padrón peppers (they are a lot like shishito peppers) and crispy quinoa. Some of the newer items include carne asada tacos, with adobo-marinated steak, salsa verde and cilantro. Forget sneaking the last one here—you may come to fisticuffs over who gets the most. Potato and cheese empanadas, with avocado crema and a corn poblano pico join another classic, grilled beef empanadas. Sweet plantains, a staple ingredient in many Latin cultures, join the meat and black beans in the stuffed pocket. Another addition, the grilled quesadilla, lets you choose your filling—mushroom, chicken or steak, and smothers that with

Oaxaca cheese. Vegetable frito will remind you of tempura, but it’s very light, and the chipotle aioli is a perfect dipping option. If you’re a vegetarian, you may want to continue that theme to your entrée and check out the half roasted cauliflower, a wonderfully spiced, beautifully charred dish that’s new to the menu. It’s perfectly firm-yet-tender, unlike the dreaded cauliflower steak, which can be mushy outside and raw inside. You can get grilled cauliflower as a side also, but grilled sweet corn elote makes an excellent foil to the main dish. For meat eaters, the anticucho mixed grill features skewers of beef and chicken, served over hot coals for an impressive fragrance and presentation. They come with several dipping sauces and grilled sweet peppers, too. Sautéed prawns, a chicken enchilada and grilled salmon round out the new offerings. Chica also offers several steak options. Dessert here can be a simple-yet-elaborate affair, as the churro tower stacks a boatload of cinnamon crusted rings high in the air. It’s served with chocolate sauce that seems to demand to be poured over the whole thing. You’ll be happy to oblige.

The Las Vegas Strip is almost completely reopened, with many of its world-class restaurants, attractions, bars and more returning with social distancing measures to ensure safety. Only one thing is missing: The Strip’s beloved production shows and performers. Most have not announced a return date yet, but it can’t be much longer before we are being entertained once again. Until that happens, here is our wish list for the shows we’ll be buying a ticket for once they come back. CARROT TOP Scott Thompson is one of the most successful comedians Las Vegas has ever seen, and once you see his show at Luxor, you get why: From beginning to end, the 55-year-old prop comic works the
room harder than almost anyone we’ve ever seen, zooming jokes past you at a breakneck pace. Sure, he’s got some clunkers (which he fully acknowledges, thank you very much), but it’s part of his brilliant pacing: When he hits you with the truly funny stuff, you’re a fan for life. And we are. BRONX WANDERERS Pound for pound, these are some of the Strip’s most talented musicians, delivering pitch-perfect renditions of some of their favorite performers through the years at The Linq Hotel. There’s plenty of Frankie Valli and Dion, but there’s also some Queen and Bruno Mars sprinkled in. We dare you to try to stay put in your seat. Can’t be done. He’s expanded out to providing multiple tours up and down the Strip and downtown, with guides leading
diners from hot restaurants at Aria and The Cosmopolitan as well as The Venetian and Wynn, plus specialized tours including steakhouses and brunches. In one tour, you’ll even cap your night off with a helicopter flight over the Strip. Although these offerings were curtailed due to the shutdown of the Strip, most resume in July. To give people even more options, Contursi recent-
ly announced self-guided online walking tour options for downtown and the Arts District through Lip Smacking Foodie Tours’ sister company Finger Licking Foodie Tours. The downtown tour, about 2 1/2 hours long, currently includes stops at Carson Kitchen, Therapy and 7th and Carson, with three signature dishes to taste at each venue. Your table will be waiting for you, and shortly after you enter, get ready to try some truly memorable dishes. In between stops, you’ll get a lot of information about the area via the online tour, complete with a virtual guide, and a walk through Container Park, the shopping and dining area consisting of colorful, stacked shipping containers. The Arts District tour has a similar format, in an area that is undergoing a renaissance, with plenty of antique stores,
galleries, clothing boutiques, bars and restaurants. There is a two-person minimum for the self-guided tours, and that allows a level of intimacy the bigger tours don’t have. “I wanted to really focus on couples and date night,” Contursi said. “People that want to get out after some time of being in a home, and for a reasonable price point. The flexibility is really nice because you could choose whatever day you want and whatever time you want, because it’s a private tour. You don’t have to be set to our schedule, and you could go with whoever you’re comfortable with.” If you want to order another dish at the restaurant, you can, and it will be 15 percent off. The tour is $79 per person. So let somebody else do the heavy lifting—you deserve to fully enjoy this vacation.

Las Vegas has built its reputation as one of the great global dining destinations on the strength of certain restaurant styles. At first, it was the buffet, complemented by cozy casino coffee shops. In the modern era, the city’s steakhouses and French-influenced fine dining rooms have emerged as signature culinary experiences. The current landscape is less easily defined by genre, but it’s never been more exciting to taste and learn.
Few American cities offer an eclectic variety of Japanese restaurants the way Las Vegas does. On the Strip, taste the legendary flavors at Nobu (Caesars Palace, 702.785.6628), where the sake and sushi selections are unparalleled. That’s just the beginning of this experience as original creations like miso black cod and tuna tataki tempt along with tempura, lamb chops and lobster with wasabi pepper. Off the Strip, it’s all about choosing your dish and finding the restaurant that does it best. For charcoal-grilled skewers of meat, seafood and vegetables, it’s Raku (5030 W. Exotic exploration is fun but the sheer popularity of these foods in the United States is hard to top.
