Q&A with mark mackey

For chocolatier, success is tied to risk-taking By Rebecca Clifford-Cruz | STAFF WRITER

You can thank Mark Mackey if you have recently enjoyed the 1932 Mars or 1936 Forever Yours chocolate bars. It was Mackey, who is research and development senior scientist and chief chocolatier at Ethel M Chocolates, who was responsible for relaunching them. Mackey, with a patent for white chocolate processing and another pending for “enhanced white chocolate,” is responsible for developing new products at Ethel M. Why did you become a chocolatier and what are the qualifications needed to pursue a career in that profession? My passion for food reaches back to when I was just 11 or 12 years old, watching Graham Kerr, Julia Child and Jacques Pépin on TV. I knew I wanted to be a chef when I got my first job at 15 at a local restaurant in my hometown of Kent, Wash., but it wasn’t until my formal education at the Culinary Institute of America that I discovered my interest in chocolate and confections. What is the difference between making chocolate and being a chocolatier? My role is actually a hybrid of a traditional researchand-development scientist and that of a chocolatier/ chef. Chocolate can be an incredibly challenging and complex ingredient to work with, and in order to be successful, you need to be able to merge the creative elements of development and innovation with a fundamental understanding of food and chocolate science. I have always been interested in fashion and beauty. Early in my career, I represented France at the WorldSkills competition in Montreal, Canada, where I received a silver medal. That was a platform for me to go to St. Tropez and Courchevel in 2000. Soon, I was freelancing in some of the top fashion cities, including New York City, London, St. Martin and Geneva. I went on to establish luxury hair salons in St. Tropez and Courchevel, where one of my regular clients became Steve Wynn, who presented me with the opportunity to open salons in Las Vegas.

Through much of my career, I have been self-taught, so I have built my success in learning from my mistakes. I also believe in making people happy, from the artists working with me to my clients. It brings me so much happiness to have a happy client; to make someone feel beautiful is the most rewarding part of my career. What’s the best business advice you’ve received?

What sets your salon apart?

I developed a five-step hairstyle that is used by all of the stylists at my salons. The first step: We consult with a client and only move forward when we know exactly what the client wants. The biggest complaint anyone makes about their stylist is that they cut off too much length. If we are in agreement from the start, we always have happy clients. We also approach every style with a single premise, that beautiful hair begins with healthy hair. In France, we were always setting trends, not following them. I bring that background to Claude Baruk Salons, many times reimagining classic styles. What are some past hair trends you’d like to come back, or a current trend you’d like to go away?

I’ve been lucky to receive advice from two business icons: my client Tony Robbins and my employer, Steve Wynn. Robbins told me, “People overestimate what they can do in one year, and underestimate what they can do in 10 or 20 years.” Wynn has said, “Only people can make people happy.” What is the best part about doing business in Las Vegas?

There are so many things. One, it is a fun, high-energy and stylish city. People come to Las Vegas to dress up and have an unforgettable night, and we get to be a part of that experience. The nightlife in Las Vegas is unmatched, and we’ve become a popular salon for DJs like David Guetta, Andrew Taggart and Alex Pall of the Chainsmokers, Alesso and Kygo. We’ve had beauty icons in the salon, including Catherine Zeta-Jones, Beyoncé and Naomi Campbell.

Station files objections to union election By Thomas Moore STAFF WRITER

Station Casinos filed objections with the National Labor Relations Board this month, saying Culinary Union organizers tried to coerce Green Valley Ranch Resort employees into voting to be represented by the union in an recent election. In the election, conducted Nov. 8-9, workers at Green Valley Ranch voted to join the Culinary Workers local 226 and the Bartenders Union Local 165. Station Casinos sent its objections about the election to NLRB officials in Las Vegas and in the NLRB regional headquarters in Phoenix, as well as to a San Francisco law firm that represents the union. In the first of Station’s objections, the company said union agents told employees that they had to “sign up” to vote and that they must vote “Yes.”

State to spend $2.2 million to compile data on juvenile offenders

“Green Valley Ranch workers voted by a landslide of 78 percent yes to unionize,” Argüello-Kline also said in the statement. “The vote was a clear mandate. We urge Station Casinos to recognize their employees’ voices and votes, and negotiate in good faith.” Green Valley was the third local Station property to unionize. The union also represents workers at Palace Station and Boulder Station. This is second time complaints have been filed concerning an Culinary/Station election. In October last year, the union lost a unionization election at Palace Station. And in the wake of that loss, it alleged that Station had violated the National Labor Relations Act. The dispute ended in March, after Cornele Overstreet, regional director of the NLRB, began investigating the union’s objections and Station agreed to union representation at the property.

In addition, the company says union agents escorted eligible voters into the voting room, which prevented them from not voting had they wanted to decline, and prevented votes from being “insecret, voluntary and anonymous.” In an email about the objections sent to the VEGAS INC, Station Casinos President Richard Haskins wrote, “The Culinary Union’s behavior in connection with the election was improper and unacceptable, rendering it impossible to conduct a free and fair secret-ballot election as required by law, to the detriment of our team members.” Culinary responded to Station’s objections by posting a statement on its website. In the statement, Geoconda Argüello-Kline, secretary-treasurer of the union, quoted eight statements Station executives had made saying they would respect employees’ right to stage union elections.

The state is hiring a California firm to develop a uniform data system to track juvenile offenders to determine whether they commit later offenses and the results of drug testing. The Nevada Board of Examiners approved a $2.2 million contract for CaseloadPRO of Salida, Calif., to compile county-by-county information into a statewide system. Kelly Wooldridge, administrator of the state Child and Family Services Division, said counties collected data, but there was no central system to access it. The new system would allow the state to assess which rehabilitation programs were working. The Nevada Supreme Court also announced it had created a committee to study child custody issues.

Gaming panel grills software exec, rejects application By Thomas Moore STAFF WRITER

The Nevada Gaming Commission grilled executives and attorneys of gaming software company Table Trac this month, accusing an executive and an attorney representing the company of ignoring the instructions the commission gave at an earlier meeting. After a contentious hearing, the commission voted to reject the application of Brian Hinchley to be licensed as CEO and CFO of Table Trac, a company that creates and sells casino management software. The hearing was the culmination of at least three other meetings for the application before the commission and the Nevada Gaming Control Board, the other arm of Nevada’s gaming regulatory structure. Commissioner John Moran asked why Hinchley sent emails and edited documents for Table Trac after the commission expressly directed Hinchley not to have any involvement with gaming in Nevada while the ap-

plication process was underway. Both Hinchley and his attorney said Hinchley was only involved in an administrative capacity, forwarding emails and documents, and did not substantially edit them and was not working with Table Trac’s customers. In addition, the commissioners said they were concerned that Table Trac had altered emails before submitting them to the board for the investigation surrounding Hinchley’s application. Table Trac’s attorney said emails were edited only because the files would have been too large to send to the commission. Commissioner Randolph Townsend noted that Table Trac representatives could have worked with the board to submit the emails and should not have determined themselves that the files were too large. The commission’s questioning of Table Trac was marked by strong and sometimes confrontational questions. Moran, grilling Table Trac’s attorney,

asked, “Why didn’t you do what we told you to do and get this thing sorted out?” When the attorney explained that Hinchley was transferred to the Minnesota offices of Table Trac, Moran replied that “I’m not interested in his travel arrangements. What did you do to tell him he’s not to have any involvement in Nevada gaming?” Rejecting an application is a new option, passed into law by the Legislature this year. Previously, the commission could only approve or deny an application. Someone whose application has been denied can’t work for a licensed gaming company or any company that does business with a gaming licensee. This is because Nevada’s gaming law prevents licensed companies from associating with anyone who has been denied a license. Because Hinchley was rejected rather than denied, he won’t face that problem and can apply again for a license. In other business, the Nevada Gam-

More than 2,300 combined members — in the Las Vegas Urban, Asian and Latin chambers of commerce — including MGM Resorts International, Boyd Gaming and Wynn Las Vegas — bring billions of dollars each year for the Las Vegas economy. A board member of the Las Vegas Stadium Authority, Evans says the Urban Chamber takes a front seat at the political table on issues involving business. While many of the almost 1,500 members of the Latin Chamber are also food, beverage and restaurant owners, other members are from industries such as gaming and banking. “Construction has grown by billions of dollars here in Nevada, and we wanted to be ready to capture it — union and non-union construction work alike,” Guzman said. In addition to annual construction and business expos that feature almost 10,000 combined participants, the valley’s largest minority chamber also hosts the monthly networking event “Desayuno con Amigos” (Breakfast with Friends) and other regular social events. Guzman, like Vinuya and Evans, said admittance to a minority cham-

bers is not just for people of the ethnic groups the chambers represent. Membership to the Latin, Asian or Urban Chambers of commerce is open to people of all racial backgrounds wanting to network and do business with people of the respective chambers’ targeted groups. In the Latin Chamber, Guzman said 24 percent of the organization’s growth has come from outside the Latino community, from Las Vegas business owners wanting to expand not only to valley Latino businesses, but also companies in Mexico and those in other primarily Spanish-speaking countries. With gross domestic product for the U.S. Hispanic population estimated to be growing up to 70 percent faster than that of non-Hispanic groups, Guzman called the Latino sector of business “no joke.” “If you’re in business, you want to penetrate the Latino market,” he said. “It just makes sense.”
