GC&M News was recently chatting to our awardwinning local food blogger Amanda Smyth, better known as the Cooker and a Looker. We asked Amanda for a Christmas cooking suggestion for our readers. Once again she has come up with something that could be mastered by just about all of our readers – what she describes as the world’s simplest Christmas cake. Amanda first heard of this method of making Christmas cake from Kim McCosker’s (‘4 Ingredients’ fame) mum, who told her it’s a recipe from her neighbour. Amanda made a couple of slight adaptions, one is the two-thirds cup of grog, which Amanda suggests is optional, and a cup of almonds, which she uses to decorate the cake, so that’s all about the presentation. There’s no (additional) sugar in the recipe so it’s diabetes friendly and is also dairy-free. However, dietary considerations aside, the real reason why Amanda loves this cake so much is that it’s ridiculously easy. Photography by Emma Ruddle from Maleny

Amanda Smyth | Cooker and a Looker Prep: 10 mins Cook: 2 hours, 30 mins Inactive: 12 hours Total: 14 hours, 40 mins Ingredients 1kg dried mixed fruit 3 cups orange juice 2/3 cup grog (rum, whiskey, whatever floats your sleigh) 3 cups self-raising flour 1 cup blanched almonds to decorate Instructions In a large bowl combine the mixed fruit, orange juice and booze. Cover and allow to soak overnight. Preheat oven to 150C and prepare a 22cm cake tin. Stir flour into the soaked fruit and mix well. Spoon mixture into the cake tin and bake for 2½ hours in the bottom of the oven or until cooked through. Remove from tin and leave to cool. Wrap in foil or place in an air tight container where this cake will keep nicely for 3-4 weeks. The Landsborough Seventh-day Adventist Church will provide a free Christmas Day brunch for members of the community from 9-11am at the Adventist Community Centre, 27 Maleny Street, Landsborough. Christmas breakfast in Maleny
There are still a number of vacancies on the volunteer's roster for the Maleny Neighbourhood Centre’s Christmas breakfast. Shifts are for two hours starting from 6am and finishing at 1pm. Volunteers are also needed on Christmas Eve to set up and on Christmas Day for tasks including barbeque/food preparation, cereals/cold breakfast as well as table serving, cleaning up and hosting duties. To volunteer call the Maleny Neighbourhood Centre on 5499 9345 or come in and place your name on the roster.
Christmas Tree Festival
Each year as part of Maleny Uniting Church’s Christmas Tree Festival, which runs from Wednesday, December 19 to Christmas Eve, December 24, a charity is nominated to receive funds raised from the event. This year they have chosen the Maleny Neighbourhood Centre as the beneficiary. To support this great initiative the Neighbourhood Centre is asking for volunteers to be available for two-hour shifts at the entrance desk for the festival at the Uniting Church. There are three shifts per day - 2-4pm, 4-6 pm and 6-8 pm - on most days. If you can help, give the Neighbourhood Centre a call on 5499 9345.

Christmas Events ... 12th day before Maleny ... Christmas this week Traditionally the Maleny Christmas Festival and Street Party is held on the last day of the school term, which this year is Friday, December 14. This means the event is the 12th day before Christmas, which will be the theme of this year’s competition for kids. They will need to find the ‘12 signs of Christmas’ within the town centre, hidden in the front windows of 12 participating shops. The competition will open the week before the event and will be concluded on the night with a random drawn for the prize of a kid’s pass to Australia Zoo. Santa (and Mrs Claus) will be in attendance for kids to meet. Santa photos will be a gold coin donation for parents to take with their own phones or cameras. Money raised goes to Greyhound Rescue. Maleny Community Centre will once again be the main music hub with Christmas carols from 6-7pm, followed by live music by talented local musicians from 7.30-9.30pm. The hall’s bar will be open and run by Community Centre volunteers. Local children’s dance groups will be performing outside MCU from 6–7pm and The Unusual Suspects will have everyone dancing in the street outside IGA at 7pm. This year’s free kids activities will include laser tag in Cooke Park, sponsored by Andrew Powell, as well as face painting and kids activities in the hall provided by Maleny Neighbourhood Centre. Some shops will extend trading hours to join in the fun with 26 stalls down the centre of the road to encourage movement in and out of shops. These will include lots of delicious food stalls and community groups. There will be more action at the Riverside Centre where they will have stalls, music and food. The event is on from 6–10pm.

As the countdown draws closer to the 2018 Glasshouse Country Christmas Carols, to be held at the Beerwah Sportsground this Saturday night, those involved are getting pretty excited. This free, family–friendly gathering offers something for the whole community and is a wonderful mix of familiar songs and traditional interactive carols by candelight. Everyone is welcome, so come and sing-a-long and share the community Christmas spirit. There will be great local acts, musicians and three wonderful choirs to enjoy. Don’t forget to bring your appetite as there will be an awesome array of food and drinks, as well as plenty of activities for the kids. Get your family photo taken in the giant Snow Globe. The carols are organised by the Landsborough School of the Arts Memorial Hall, with a highlight for the night being internationally renowned vocal conductor Brian Martin on centre stage. Entertainment starts at 4.30pm with musicians and dance, then the carols stage show starts at 6.30pm, with the grand finale leading into the fireworks at 8.15pm. And don’t forget to bring your blankets and camp chairs so you can get comfy and enjoy!

Libraryland Village comes to Maleny High Students entering the school library on the first Monday of December were entranced by the arrival of the Libraryland Christmas ginger bread village. The Christmas fantasy land was the result of many extra hours of creative work and inspiration by librarian Desley Newsham. A number of students helped create components of the decorations but had no idea of the extent of the final creation.
Desley said that what started as an idea for a small cabinet display just grew and grew. So when students arrived Monday morning they were wowed by the extent of the display. The display is made from recycled cardboard and paper, which fits with the school’s environment committee recycling activities. Environment committee teacher Amanda Edwards said the Libraryland display has been an inspirational kick start for students to make creations with a Christmas theme from recycled materials as part of the alternate program activities in the final week of school. To add some extra interest a number of staff have been ‘elfed’ and cleverly incorporated into the displays as elves in various poses. It is a bit like ‘Where’s Wally’ for elves. Students have just loved the fun atmosphere the display has created with students coming to take photos and using the village as a backdrop for filming assessment pieces. Well done to Desley Newsham and Sharon O’Farrell and their band of helpers from Ms Rigg’s year 7 enterprise and Ms Collis’s year 9 humanities classes for making Maleny State High School a fun place to work Teachers Isabel Riggs and Natasha Collis with the Year 7 and learn. Santa drops in to Downtown Caloundra
A special guest from the North Pole has confirmed the reindeers are bringing him to Downtown Caloundra on Saturday, December 15. Everyone is invited to this free event to kick start the Christmas celebrations on Bulcock Street and to officially welcome Santa to Caloundra. Bulcock Street will be transformed into a Christmas wonderland, with roving entertainers, live music, face painting and sausage sizzles, along with free Santa photos. Adding to the celebration will be the special release of the Caloundra song and poem, which has been created to celebrate all things Caloundra. The gifts continue with free parking in the CBD throughout the Christmas period.
