etting to know how some of the Bay’s best healthcare providers practice what they preach in terms of health and wellness was an eye-opening experience. After all, who’s busier than a doctor? From tennis court takeovers to intense strength training, each one we interviewed is a testament to how it is possible to make health a priority. From the validity of the vaccine to how overused the word “busy” is, many interesting conversations were had, and much was learned curating this issue (We hope you agree!). One fact was made crystal clear as we worked closely with some of USA Mitchell Cancer Institute’s (MCI) top female healthcare providers to create the special insert you’ll find in this issue celebrating women’s health. The lesson? MCI is a true gem — not only on the Gulf Coast, but for the entire nation. As an academic and research institution paired with unbeatable talent, MCI is leading the charge in cancer care. A

man comes home from a doctor appointment and tells his wife, “The doc says I have acute high blood pressure.” “Oh?” his wife replies. “Yep,” he responds. “I’m just glad it’s not ugly.” Badum tiss! All joking aside, high (or extremely low) blood pressure is no laughing matter and should be checked regularly by your primary care physician or at home with a personal blood pressure cuff. “Vigilance is key,” Dr. Jerry Gray Arnold of Alabama Medical Group shares. “When you have a diagnosis, YOU have a diagnosis — not the pharmacist, nurse, doctor, etc. You do not have make it pathologic, but at least have an awareness about you. Know how to check your own blood pressure and know that it is either controlled or out of control. Know what is normal and know what isn’t.” Dr. Arnold says it is one thing to find out your pressure at the doctor’s office once or twice a year, but keeping track of it in between visits is a whole other ballgame. “There are parameters and thresholds, but ultimately we treat an average; not a single number,” he shares. “It’s important to check regularly for significant fluctuations.” So, how do we identify our risk factors? “Risk is a function of predisposition and exposure,” Dr. Arnold explains. “Some of us have more predisposition than others, and some have less. I always think about Burgess Meredith from Grumpy Old Men. John and Grandpa Gustafson are discussing life, and Grandpa is upset that he was handed a light beer. Cigarettes, beer, and bacon make up the better part of Grandpa’s food pyramid, and he’s outlived all those flat-bellied experts. Some folks can walk past the various carcinogens in our environment and do all they can in the right way and still come down with various maladies associated with those agents that perturb our genetics in a way that generates neoplasia [new, uncontrolled growth of cells that is not under physiologic control], while others swim in them and live a life unaffected,” he details. “Whether it is avoiding cigarettes or overeating, we have to maintain a level of concern

that every action has a reaction. There are always consequences for the things we do.” Obviously, there are things everyone should avoid in the first place anyway. “First off, don’t smoke,” Dr. Arnold cautions. “Second, salt is everywhere, so try to buy groceries that say, ‘Reduced Sodium’ or ‘No Added Salt’ (and yes, sea salt is still a salt).” Wait, is salt ‘bad?’ “No, but if your body doesn’t tolerate it, it will drive your blood pressure up,” Dr. Arnold says. “While it may not have affected Grandpa Gustafson, too much salt will affect those of us with hypertension.” So, how much is too much? “Well, ‘Dr. Google’ says that the average American takes in an excess of 3 grams a day, but the Dietary Guidelines for Americans would suggest less than 2.3 grams per day,” Dr. Arnold says. But what does a metric measurement of salt look like? A dash? A pinch? “How about just using less?” Dr. Arnold jokes. “Salt can complement the taste of a meal, but you don’t want to taste the salt (though I guess if you’re like me, you do want to taste it, so you’ll just want to work on getting used to less).” Weight can also have a significant impact on your blood pressure. “They say that for every five to 10 pounds of weight you lose, you should see a drop in your blood pressure by 2 to 5 mmHg,” Dr. Arnold says, adding

that being overweight does not guarantee that one will have health issues (again, predisposition + exposure = risk), but the likelihood does tend to increase with added pounds. Speaking of adding on pounds, nothing else can do it quite like alcohol. “Mobile is a wet county, and I’m not referring to just the humidity,” Dr. Arnold jokes. “People often say, ‘Well, one drink isn’t going to hurt,’ but if one leads to six, then yeah, it is. There is an exponential escalation in the relationship between blood pressure and imbibing. One may not affect your blood pressure, but two will, and the affect is more pronounced the further you go.” Alright. Eat healthy, ease up on the salt, stay fit, avoid alcohol… this sounds harder than it looks. “Blood pressure in a general sense carries three general stages: I, II, and III,” Dr. Arnold explains. “These stages or classes give us an idea of how hard it will be to control. Average blood pressure control guidelines suggest that one would want to have a blood pressure average of 130/80 or so. Diagnosis of hypertension starts with having an average blood pressure greater than 140/90.” A hypertension diagnosis can cause future concern of organ damage such as heart disease, stroke, and kidney disease, Dr. Arnold details. “The longer one suffers with elevated blood pressure, the more it

translates to the degree of damage that occurs to the organs mentioned above (if not the body as a whole).” Think cardiac enlargement from the heart attempting to overcome the increase in pump pressure or elevated blood pressure; damage to the filtration system of the kidneys from the elevated arterial pressures exerted on the glomerular apparatus; and the thickening of the arteries in the brain from the same affect. “These are the impacts of elevated blood pressure,” Dr. Arnold says, plain and simple. “If you have elevated blood pressure despite being of normal weight, avoiding salt, and exercising regularly, then I’m sorry, but the only thing that there is left to do is to look at medications.” Dr. Arnold says that if you are just outside the “cone of normalcy,” you should do your best to work your way back inside the cone, but if your pressure is of such a level, you will more than likely have to rely on modern pharmacology until you get back into the cone. If it comes to that, know your medications, Dr. Arnold insists. “These medications ultimately are helping to lengthen your life, but there are events that can occur where you may need to be able to tell someone what you’re taking,” he warns. “Keep a list somewhere, like your wallet or purse. Always be prepared.” His parting advice? Pay attention to your body and speak up when something feels out of whack — the right doctor will be willing to help you figure things out. “I do my best to listen, no matter what,” Dr. Arnold says. “Even a broken clock is right twice a day.”

double board-certified facial plastic and reconstructive surgeon by trade, Dr. Kimberly Donnellan is as brilliant as she is beautiful. A cut above (pun intended) with more than a decade of experience serving the Bay Area, Dr. Donnellan shares she initially started out as a speech-language pathologist helping to treat patients with head and neck cancer, specifically those who required rehab on their speech and swallowing skills. It was during this season of life that she was first exposed to head and neck surgeries. “I was fascinated with the surgical aspects of their recovery and quickly made up my mind that I was going to apply to medical school in hopes of helping these same patients, but in a different way,” Dr. Donnellan shares. After medical school and a five-year residency in Otolaryngology-Head and Neck Surgery at the University of Mississippi, she decided to further her education and was fortunate enough to be chosen to complete a facial plastic and reconstructive surgery fellowship at the Cleveland Clinic. “While originally my intent was to focus on reconstructive surgery, much of my fellowship also included cosmetic surgery, which has allowed my practice to include those services as well,” she shares. “I have found that a balance between these two aspects has resulted in quite a fulfilling career.” Beyond rewarding, Dr. Donnellan’s services have literally changed thousands of lives. “I love that I can provide cancer patients with hope, without making significant scars on the face,” she shares. “Cancer can be a devastating diagnosis, but with proper diagnosis and treatment, the outcomes can be very good. Skin cancer, for instance, doesn’t have to disfigure a patient; there are techniques that can provide them with very aesthetically pleasing results when done correctly.” Indeed, much of Dr. Donnellan’s practice includes cosmetic surgery and related procedures. A great listener who strives to treat every patient like family, Dr. Donnellan shares that providing cosmetic patients with realistic expectations is key. “My focus is on natural looking results, because I want patients to feel good about themselves when they look in the mirror or see themselves on something as simple as a Zoom call,” she shares. After all, if someone gets a facelift or filler, they should look better — well-rested — not like someone that has had a facelift or had filler injected. “I want them to be their best selves,” Dr. Donnellan says. “Plastic surgery does not have to look fake.” A natural beauty herself, Dr. Donnel-

lan is married to an equally impressive surgeon: USA Health’s Chief of Trauma - Critical Care Dr. Jon Simmons. Together, the pair share a love for their pups (Roxie and Bella) and enjoy the outdoors, which means a lot of direct sun exposure. “Since my focus is on facial plastic surgery, a lot of my advice focuses on skin health,” Dr. Donnellan shares. “I encourage patients to use sunscreen every day and to try to do something monthly — big or small — to improve their skin health. Also, when done regularly, hydrodermabrasions, chemical peels, and laser treatments can keep your skin youthful, which is why I run monthly specials.” A bombshell with a killer backswing, Dr. Donnellan is also a tennis enthusiast, trying to hit the courts at least twice a week, and enjoys riding her Peloton often. When she’s not working, she enjoys hitting the town with her girlfriends for anything from a Beyonce concert to an ACCESS party and everything in between. Super fun and a lover of all things fashion and beauty, this femme fatale has the total package: brains, beauty, and brawn. Having recently joined USA Health, Dr. Donnellan says the role she plays as part of an academic medical center has afforded her the opportunity to treat her patients with the most technologically advanced equipment available. There’s also something to be said for working alongside the best of the best in a number of medical fields who share a common goal: to provide exceptional patient care to rival anything else in the country. “For example, my current collaboration with Dr. Andrew Bright and our regional burn center allows me to combine his expertise and passion for treating burn patients with my expertise in laser resurfacing to treat functional deficits for burn patients in our regions,” she shares. “We have been working on this collaboration for almost two years and I am honored to say that we treated our first two

burn patients last month and received excellent outcomes.” Clearly, her patients adore her. “I have so many stories,” she shares. “I have had holiday dinners with patients when I was alone in fellowship without family, and I have had cancer survivors at my wedding. My patients become family.” With the most advanced laser and radiofrequency microneedling technology in the region, Dr. Donnellan says her office is ever evolving, currently offering several new services that focus on minimal social downtime. The latest tech? “The Virtue radio-frequency microneedling system is one of the most advanced devices on the market and focuses on collagen production and remodeling,” she shares. “It's virtually painless with less than 24 hours of social downtime.” Their Tetra CO2 laser also has multiple uses. “It can provide traditional CO2 resurfacing for correction of fine lines and wrinkles, but can also utilize its unique cool peel technology to provide similar results of traditional CO2 with minimal downtime,” she shares. “The CO2 laser is also exceeding our expectations of treating burn patients that have persistent issues with skin pliability and range of motion.” Their Sciton BBL Hero technology offers patients the finest treatment available to address sunspots, broken blood vessels, acne, hair removal, and rosacea. “It can be used on the face and body and its results are unmatched by any other device on the market,” she shares. T

here are doctors who improve the lives of their patients, and then there are those who change their lives entirely. Dr. Aaron Wallender of Mobile Oral and Facial Surgery is one such surgeon, and for many, he’s a true Godsend. Serving alongside local industry celebs Dr. Christopher Mullenix and Dr. Michael Babston, Dr. Wallender is fellowship-trained in pediatric cleft and craniofacial surgery — the only such surgeon in both West Florida and South Alabama. With a passion for providing care for children born with (or who acquire at some point in life) face and/or skull deformities, Dr. Wallender says he was originally participating in an externship at Children’s Medical Center – Dallas when he was first exposed to his chosen field. “Witnessing the instant transformation in a child’s life and the impact it had on their families is what drew me to pursue a career in this field,” he shares. Now with five years in practice under his belt (and a staggering 11 years of postgraduate training), Dr. Wallender serves as the cleft and craniofacial surgeon for multidisciplinary teams in Mobile and Pensacola and says the best part of the job is getting to be a part of the lives of each family he assists, particularly those who have impacted his life in equal measure. “For instance, my patient Alijah was born with Apert’s Syndrome, which affects the skull, face, and hands,” Dr. Wallender details. “He has battled some respiratory problems throughout his life, but despite what we would perceive as ‘limitations,’ Alijah has persevered through so many interventions and surgeries with a joy that challenges me,” he says. “Thinking of him and his approach to life challenges me to face my own life with the same joy.” A daunting task, when it comes to discussing surgical options for a child, Dr. Wallender says he makes sure to be as thorough as possible from the very first meeting. “I try to educate patients and their families on their condition and what options they have to manage the condition,” he shares. “Surgery can provide great improvements in form and function, but is not always the only option,” he says, adding his goal is to efficiently communicate and equip patients to make the best decisions for the present and for the future before they decide to move forward with a procedure. Motivated to be part of everlasting change in the lives of his team and his patients, Dr. Wallender’s end goal is to serve others, and serve them well. “If I am not able to serve and change the lives of those around me through my service, then the impact I have is

only on my own life, which is a brief flash in eternity. I want to grow this unique service to the benefit of this community and want it to continue to be available to the generations to come.” An advocate of multidisciplinary team care, Dr. Wallender says he enjoys working in a setting where the care he is able to deliver involves the expertise of multiple providers from various training backgrounds. “This expands the scope and elevates the quality of care,” Dr. Wallender shares. “What I can provide alone is limited to my perspective and experience.” As devout as he is humble, Dr. Wallender says that his faith also greatly impacts his performance as a surgeon. “I try to love the Lord my God with all my heart, soul, and strength, because in doing so, I’m pursuing His excellent standard and desire to care for His creation,” he shares. Beyond the mental fortitude his faith reinforces, Dr. Wallender adds that maintaining a healthy lifestyle further allows him to consistently perform acts of service for a long period of time. “I want people to be able to rely on me for years to come,” he says. His resounding advice? “Everything in moderation. Eat a reasonable amount and exercise a reasonable amount, but don’t let either consume you. Deny your flesh and feed your spirit.” And feed his he does, often spending his free time discussing the Bible with other like-minded men, reading scripture, and committing it to memory. He even prays when he runs! “It’s how I deal when I don’t feel motivated or at my best,” he admits. In his personal life, Dr. Wallender is married to his beautiful wife, Kathrine, whom he says challenges him daily to be a faithful man of God. “I’m also blessed to lead, nurture, and learn from my 5-year-old daughter, Eliana, and my 2-year-old son, Josiah,” he shares. Deeply immersed in the community he loves so much, Dr. Wallender enjoys engaging his community and participating in civic service with his church and is an avid outdoorsman. Dr. Wallender also participates in multiple international cleft and craniofacial mission programs providing free care for the underserved in Vietnam, Honduras, Guatemala, and the Philippines.

s handsome as he is brilliant, Dr. James Koehler of Eastern Shore Cosmetic Surgery is a king among area cosmetic surgeons, revered by Mobile and Baldwin County residents far and wide for his precision and expertise in all things cosmetic surgery. Think everything from a neck or brow lift to a full-face lift and all the body sculpting a girl could dream of. Undoubtedly wellversed in his profession, Dr. Koehler insists that learning never stops (even after 15 years in the field), sharing that his interest in cosmetic surgery blossomed during his training in facial trauma surgeries — particularly in regard to improving the appearance of post-traumatic patients. “I can recall the enjoyment of doing elective procedures for patients that really want your services,” Dr. Koehler shares. “Making people feel good about themselves is very gratifying, and when a patient tells you how you have changed their life, there is no better feeling.” With an index of satisfied patients as extensive as his list of accolades and achievements, putting your trust in the skilled hands of a surgeon like Dr. Koehler is an easy choice to make — especially given his propensity for in-depth patient communication. “Communication is by far the most important part of what we do,” Dr. Koehler shares. “If a patient expresses expectations that are unrealistic, they may not be a good candidate for surgery. Understanding the patient’s concerns and goals is essential, and this only comes from good, open dialogue.” Beyond the operating room, Dr. Koehler regularly lectures for various courses around the country each year — something he says helps to keep him abreast of the latest technology in the field. “Staying current is important to me because we want to offer our patients the very best,” he shares, adding that not everything you see advertised on Instagram or TV is actually applicable or available quite yet. “Sometimes emerging technology is celebrated by media before it’s ready for real life applications, so being able to explain to patients why we don’t offer certain procedures is important, too,” he says. “I wish more people knew that every patient is different, and what may work well for one person may not be the best option for another because of their anatomy, tissue qualities, general health, etc. Although you can strive for perfection, it’s an elusive and frustrating goal. Nothing is ever perfect,” (though we think he can get pretty darn close).

A father of three very active children (Dawson, 20; Kaitlyn, 18; and Jaxon, 12) and married for the last 21 years to the love of his life, Laurie, Dr. Koehler also knows it’s important to keep a solid work/life balance and take care of himself physically to stay sane and perform at his best level day-to-day. Clearly, he’s doing something right (just peep that chiseled physique). “I currently do weight training three days a week and some cardio one to two times a week with Vince McConnell at McConnell Athletics in Fairhope,” he shares, adding he also enjoys cycling and scuba diving when he can fit it in. “My workout days and times are fixed, and I am not willing to schedule other things during my workout times. I try to be consistent with that, as working with Vince has changed my life and I’ve never felt better.” As for fuel? “My diet mainly involves avoiding fast food and empty calories, but my weakness is chocolate,” he admits. “I still enjoy it, but I generally try to eat well most days. When I do indulge, I make sure that the next day I am back on track.” But what about the days where that motivation is lacking? “I’m not allowed to have those,” he jokes. “I suck it up and make it through.” When it comes to general health, Dr. Koehler adds he wishes more people would realize that many of the body contouring procedures he offers such as liposuction and tummy tucks are NOT a healthy way to lose weight and are NOT weight loss procedures. “Although you may lose some weight with these surgeries, if you aren’t living a healthy lifestyle, this weight all comes back,” he shares. In truth, leading a healthy lifestyle is really something we all should be striving for, Dr. Koehler says, regardless of physical appearance. “When we are healthy, we feel better about ourselves, our relationships, and our jobs,” he says. His tip? Don’t give up on making positive changes in your life. “We all go through seasons where we aren’t as healthy,” he admits. “Getting healthy is something that takes time, so making incremental positive changes is important. Don’t expect results overnight, and don’t give up trying.”

in our 30s, 40s, and 50s) add up.” Personally, Dr. Strassburg says she does her best to make healthy food choices, joking, “though some days if it’s true that you are what you eat, then I’m either fast, cheap, or easy!” In all seriousness, Dr. Strassburg admits that though her culinary skills aren’t exactly five-star, she truly tries to think about what goes on her table, mostly to help her three children (Nate, 16; Livi, 13; and Luke, 10) learn to make healthy choices a habit. “It’s harder than I thought it would be,” she laughs, adding that finding time for exercise around the demands of family and career often poses its own set of challenges. “It’s next to impossible sometimes, but I try my best to do my aerobics classes in the morning before the day gets out of hand,” she shares. She’s also an avid proponent of Pure Barre. “It’s been an efficient and effective method of exercise for me, and that hour is the fastest in my day,” she shares. “I love how it’s an hour of allowing someone else to motivate and think for me, and it works all muscles using isometric, safe activities.” Having swum competitively from age 8 all the way through college (she swam for the University of Alabama and represented them at the NCAAs three out of her four years), Dr. Strassburg muses that she never thought exercising just three times a week would be difficult, but hey… life. “Life is busy and priorities shift,” she says. Still, little changes can make big impacts. “I never take the elevator,” she shares. “Taking the stairs in the hospital and in clinic is a small but significant change that I implemented about 10 years ago, and I think it has been incredibly helpful. Also, I learned in college it’s best for me to avoid eating after 8 p.m.” As for maintaining mental balance, Dr. Strassburg stresses the importance of open lines of communication with loved ones and proper sleep habits. “My husband David is my best friend and I think he’s funny, so we have been able to talk and even laugh through many difficult situations in our 24 years of marriage,” she shares. “Plus, getting adequate sleep is my superpower — our minds and bodies need adequate rest! My small group through church is an additional Godsend and helps me keep my eye on the prize.” But despite our best intentions, Dr. Strassburg reminds us that no one is at the top of their game every single day. “Prayer and daily exercises in gratitude help pick me up even on days when I’m feeling down,” she shares. “Also, I find humor in most situations, and laughter has been a great medicine for me. Plus, my work team is strong when I am weak, and they are an invaluable asset — the importance of enjoying what you do

n internist for more than 18 years, Dr. Amy Strassburg got her start training at Keesler Air Force Base during and after the 9-11 terrorist attacks. Part of a military quickly transitioning from peace time to war time, Dr. Strassburg laced up her boots and prepared to take on the complexity that would soon envelope the medical field. “Mental health attention quickly became equally important to physical health for all of us during that uncertain, tough time for our country,” Dr. Strassburg recalls. “It has shaped my career and my practice as a physician to this day.” Having initially entered medical school set on a career as a pediatrician, Dr. Strassburg shares she swiftly realized that adult medicine was more for her. “I enjoy it because grown-ups can make decisions for themselves for all kinds of different reasons,” she shares. “We are all a product of our experiences, and my favorite part of my job is helping patients navigate through hard medical decisions, all while respecting the cultural and familial experiences that make us who we are. I try to find common ground with every patient, no matter their gender, lifestyle, culture, or ethnicity. We are all a part of the human experience, and when we remove stereotypes and barriers and listen as a friend, sister, daughter, or mother would listen, then communication improves dramatically and medical recommendations and decisions become clearer.” Having worked in the field just shy of two decades, Dr. Strassburg says she often reflects on the changes that have been made in healthcare over the last 18 years. “Just since I started working as a physician, we have implemented electronic medical records, learned hundreds of new medications for chronic conditions, struggled with insurance complexity, and navigated through new screening modalities and healthcare recommendations,” she shares. “It’s exciting to watch the healthcare world adapt to technological advances, and I keep up as best I can with reading and talking with colleagues. Patients challenge me with questions that require research, and I learn from them every day.” In “keeping up,” Dr. Strassburg also works to stay abreast of healthy lifestyle suggestions and live by some of them herself. “There is a lot about our health that we cannot control (genetics, trauma, etc.), but our health habits are modifiable and little changes can have a huge impact,” she shares. Small, positive changes can have a major effect on our future, and if a healthy, happy future is the goal, then the actions we take (particularly

and with whom you do it cannot be overstated.” Overall, Dr. Strassburg says she wishes more people knew just how much those in primary care want to help. “I hear frequently that patients have avoided making an appointment because they’re afraid their physician will be upset or judgmental about their current state of health,” she shares. “I enjoy meeting people right where they are and helping them aim their health back in the right direction with each visit. Health concerns don’t develop overnight, and they won’t be turned around in one visit. It’s my privilege to motivate, encourage, and celebrate even the smallest positive health changes.” Further, she wants you to know you’re not alone. “When it comes to struggling through life, I am in the boat with you,” she says. “I am a busy working mom who is doing

her best to navigate the teenage world with her children, the technology changes in our work and school, and the unfortunate excesses of bad food choices at our fingertips. I often feel overwhelmed, unprepared, and inadequate in so many roles that I play. Life is hard, but it’s also beautiful, and for me, it’s most rewarding when lived in service of others and with gratitude for each day.”

but her faith and her unwillingness to give up was the most inspiring thing I have ever seen.” Happily, the couple eventually delivered a healthy baby. “It was the most magical day,” Dr. McCoy beams. “I can’t think of her without thinking, ‘Man… her faith, positive attitude, and determination impresses me so much, and I hope I can have even a fraction of that as I go through life.’” As for our own resolve, Dr. McCoy jokes, “Let’s be honest: it can be hard — especially with all the time commitments women have. We tend to take care of everyone else before we take care of ourselves sometimes. I see women all day long that are balancing a million things. Whether it’s work, driving kids to a million practices, taking care of elderly parents, or signing up for way too many organizations, women can end up burning the candle at both ends. I always say, ‘If you drive your car without any oil, eventually your engine will quit working or blow up.’ The same happens to us if we keep going hard without taking care of ourselves.” Of course, this correlates directly with mental and physical wellbeing. “I tell my patients to try to find 30 minutes for themselves at least two to three times a week, though daily would be ideal,” Dr. McCoy shares. “This is the time that you turn off your cell phone and decompress. We all do this in different ways. You can take a hot bath, read a book, take a walk, sit in silence, paint — whatever it is that lets you relax and decompress from the day.” Dr. McCoy adds it’s also important to do something that is just for you. “All too often we lose touch of who we are and just feel like we are a chauffeur or somebody’s mom, kid, or wife,” she shares. As wife to ALDOT Engineer Clay McCoy and mom to two active children (Jackson, 13; and Riley Cate, 11), she gets it. “While those are very important things, we can’t forget who we are and things we did prior that make us happy. I see women feel guilty for taking even 30 minutes to themselves, but you shouldn’t! This quick break can recharge us and make us better and more attentive when with others.” In her own life, Dr. McCoy says she tries to apply healthy habits in her day-to-day routine, no matter how crazy the day. Meal and snack prepping, drinking 100 ounces of water a day, and opting for the stairs over the elevator at work are all small yet significant ways in which she stays on top of her game. She’s also taken up tennis in her free time. “I get outside and get my Vitamin D in a setting where I am turned off from electronics,” she shares. “Texts and voicemails can wait until I am done.

othing impresses us more than a smart, beautiful, talented woman dominating her field of choice, which is why Dr. Amy McCoy of Bay Area Physicians for Women tops our list of B.A. females in Southern Alabama. A 15-year veteran in obstetrics and gynecology, Dr. McCoy takes care of the entire OBGYN spectrum, citing OB care and minimally invasive surgeries as her bread and butter. The kicker? It wasn’t even initially on her radar. “I thought I wanted to be a lawyer until my senior year of high school,” she laughs, sharing it was her AP Biology and Anatomy classes that year that steered her away from law and sparked her interest in medicine. “My AP Biology teacher told me about an early acceptance program that South had for medical school, and the rest is history,” Dr. McCoy says. With initial dreams of becoming a pediatrician, Dr. McCoy admits she was surprised by the allure of her OB rotation. “I liked how you got to stay with women throughout their life, from the teenage years to pregnancy, menopause, and all the times in between,” she recalls. “In OBGYN you never know what your day may hold. We do clinic, deliveries, and surgeries, so no day is the same, and I love meeting and talking with so many amazing women. I learn new things from them every day and I get to share in the joy of some of their greatest accomplishments and happiest moments.” Of course, not everyone feels the same about stepping into their gyno’s office. “Going to the OBGYN can be a nerve wracking and uncomfortable experience,” Dr. McCoy admits. “I strive to make people feel as comfortable as possible. The walls of my exam rooms are covered in funny and motivational sayings, because I think laughter is good medicine. I don’t wear a white coat for those that get nervous when they see one, and I talk to them about everything going on in their lives, which sometimes allows me to acknowledge things they didn’t know were relative to their issues.” As expected, some patients’ stories hit harder than others. “I had a patient come to me who had already had several miscarriages with other physicians,” Dr. McCoy recalls. “When she came to me, we tested her for anything and everything that hadn’t been tested, consulted specialists, and had numerous visits. She continued to have several more miscarriages, and each time I was so devastated for her. But each time, she would say, ‘Dr. McCoy, don’t be sad. I have faith, and it is going to happen for us.’ It was so hard for me to see this amazing couple going through these struggles,

eet Dan Palmier, CEO of UC Funds and ONE CLUB Gulf Shores. Sounds impressive, right? Well, it truly is. Think of all the times you’ve driven by a typical ramshackle. Within minutes, you’ve completely renovated it into magnificence in your mind. Well, that’s just what Dan did, only he made it a reality. So taken with our coast, Dan was simply visiting from Miami in 2016 when he found himself signing on the dotted line for a property so close to ruin many questioned his decision. Now a top resort destination in Gulf Shores, no one would dare question him today. While we locals know the magic of our beloved shores, we wonder how he came to pull the trigger. “The decision to rebrand as ONE CLUB and commit to being the best place to live and make life-long memories was easy,” Dan shares. “I had a vision to make lifestyle resort living available to everyone in America and took the chance when I purchased this 90-acre property literally minutes from the pure white quartz beaches and turquoise waters of Gulf Shores.” So, how bad was it? “The previous name, Emerald Greens, was really a

misnomer,” Dan jokes. “The Greens were actually brown, as well as the fairways and even the palm trees and landscaping. It was known in the community as a ‘broken condo’ and was very neglected by absentee ownership. When we committed, we committed to excellence and invested a tremendous amount of capital into the golf course, its surroundings, pool amenities, a 15,000 square foot clubhouse, a new restaurant, a state-of-theart fitness center, and many other onsite amenities and capital improvements. The best thing we did was to bring the most qualified and dedicated people to operate the residential community, food and beverage division, and our golf course,” Dan shares. A consummate perfectionist, Dan’s renovations define luxury. “Our vibe is upscale yet comfortable and friendly, as the environment was designed with a lot of open space and interconnections between all of the amenities,” he details. “The result is a welcoming place with many spaces for our customers to enjoy.” Outside, guests will find completely renovated luxury pools and cabanas surrounding the clubhouse and a mega-sized soon-to-be-open adult pool offering the only swim-up craft cocktail bar in Alabama. The result is what we call ‘The Best 45 Holes in Golf,’ as well as the best of all golfing worlds.” Run in partnership with Honours, The Best 45 Holes consists of ONE CLUB’s nine-

hole course where anyone can build their game. “Although shorter, it requires precision to escape the bunker and water hazards,” Dan details. Known as “The Home of Champions,” it was only fitting to build Bar 45 with more than 30 flat screen TVs to host the top NCAA women’s volleyball athletes, pro golfers, and young golfers such as the nationally aspiring 1st tee’ers. Having always had the heart of an entrepreneur, it wasn’t until the onset of the pandemic that she finally turned that dream into a reality, whereby combining practical fitness wear with fun, feminine colors and styles, Studio Style was born. aving come from a long line of successful business owners, Emily Scott Zeiger always knew she would one day follow in her family’s footsteps and start her own business, eventually leading her to turn her passions for both fitness and fashion into the fast-growing endeavor Studio Style is today. Having attended Auburn University where she majored in apparel merchandising and business and going on to earn her master’s in business administration from Samford University, Emily says it was during this period of transition that she truly fell more in love with fitness. “I have always been an active person,” she shares. “I grew up cheering competitively and loved it. Then I went to college and didn’t have cheerleading anymore,” she recalls. “It was a big transition going from a team and coaches and group workouts to being on my own.” Thankfully, she found her new home with Pure Barre in Auburn, immediately enamored with the music, workout, and community. Hooked on group fitness ever since, Emily eventually became an Ace Certified Group Fitness Instructor and coach at both Orangetheory and Pure Barre. All that, of course, was before the pandemic. Just like fitness, fashion has always been something Emily adored, with the thought of opening her own boutique ever in her mind. Weirdly enough, thanks to COVID, she did just that. “When COVID hit the U.S. in February of 2020 and my studios shut down, I knew it was my time to launch the boutique,” she shares. “It took two months of dreaming and planning, and I launched Studio Style in April of 2020. It’s a way for me to combine fitness and fashion and pour into people’s lives.” Being forced to stay home gave Emily the chance to devote all of her time to growing her business, and now her main mission is to deliver fashion-forward, performance-oriented clothing to women who want to feel confident about themselves from the gym to lunch. “My motto is ‘Styles for women who move,’” Emily explains. “I empower women of all shapes and sizes to feel good about themselves. The most rewarding part is receiving a review saying how much they love their purchase!” For Emily, working out is a way of life and something she truly loves doing and inspiring others to do the same. “I tell people all the time if you don’t love working out, try something new,” she says. “Try lots of new things and when you find one you love, stick with it. As a fitness instructor, it’s been

rewarding to help people on their personal journeys to their best selves.” Studio Style carries brands Emily has known and loved for years (think Beyond Yoga, Free People Movement, Nux, DYI, Beach Riot, and more). “Buying is so much fun,” she gushes. “It’s a blast to meet with my reps, see the next season’s line, and pick out what I think will be good for Studio Style. I go to market several times a year and am in constant contact with my reps,” she shares. Studio Style’s unique business model of an online storefront and the occasional pop-up in local stores has proven successful. “I have all of my inventory in my house,” she laughs. “It makes it really convenient to ship orders. I have a few part-time assistants that help me with unpacking new inventory and packing and shipping. I’ve learned I can’t do everything myself,” she admits. “I also love connecting with people in person. It’s so relational and I get to help them shop and pick out pieces that are perfect for their lives. I love the community aspect of pop-ups and how other women can connect with each other.” Emily is open to eventually having her own brick and mortar store, but for now you can shop online or if you’re in the Vestavia area of Birmingham, Studio Style has a permanent setup in Steel City Pilates. And for us local folk, Emily hints she will soon have a section in Private Gallery in Downtown Fairhope for all your in-person perusing! When it comes to the styles Emily is looking forward to most this spring and summer season, she says it’s all about printed workout sets, comfy sweats, and retro sneakers. “I’m currently obsessing over Beach Riot,” she shares. “The prints are so fabulous, feminine, and flattering, and the fabric is like butter. She is my righthand girl when it comes to running Studio Style.” Another best friend, Mary Maud Kirk (owner of Ruffled Rabbit Boutique) also teams up with Emily for a combined pop-up. “We love to encourage each other in our businesses,” Emily beams. Ultimately though, it all comes down to her customer base. “I would not be where I am without the lovely and loyal women who have purchased from my shop,” she gushes. “So many customers of mine are brand-loyal and only shop for workout clothes with me. It truly is a huge blessing and an honor! I’m so thankful for the people who have followed me on social media, liked my posts, shared them, purchased from me, and attended a pop-up.” When she isn’t enjoying an empowering workout or fulfilling orders, Emily says she loves exploring Fairhope and all it has to offer. As a member of Provision’s Wine Club, Emily looks forward to getting new and different wines to try each month, and as a self-proclaimed “coffee addict,” she loves snagging an iced latte from Refuge or Provision. In addition, giving back to the community is extremely important to Emily. One nonprofit, which means a lot to Emily is The WellHouse—a safe haven that provides emergency, short-term, and long-term care for female victims of human trafficking. Miraculous SIGN As parents, most will do anything to help their children make their dreams a reality. Living in football territory where much SEC talent is discovered, most of us know someone with dreams of a future in collegiate athletics. Busy with everything from practice and game schedules to cleaning uniforms, there’s not much time to consider the risks surrounding potential sports injuries along the way. Told he’d never play football again, high schooler Trey Parker opens up about his journey and how perseverance changed his life.

gifted athlete and graduating senior from Mobile’s St. Paul’s Episcopal School, Trey Parker’s life was picture perfect. A great student and friend to all, he started playing football in the 4th grade and never looked back. Incredibly athletic, he excelled at most sports and loved soccer almost as much as football. The dream of playing college football drove him in all he did, and he constantly pushed himself (and his teammates) in order to achieve his goal.

Fast forward to just before his sophomore year. Imagine Trey’s shock as everything came to a screeching halt when he was told he’d never play again due to an injury he doesn’t even recall getting. With his life turned completely upside down, a then-shattered Trey recalls, “I received this news when I went for my yearly run-of-the-mill physical before my sophomore year. I was expecting to hear I’d need physical therapy or something similar because I had shooting pains in my legs and was unable to bend over, literally only able to bend my neck,” he shares. “I expected that I’d be back to my old self in no time, but that was not the case. Hearing I’d never play again, my mind went blank, and I was in shock; my life and football dreams literally flashed before my eyes. I wondered, ‘How could this be when I didn’t even recall receiving an actual injury?’ I wasn’t hit hard, and I didn’t 64 ACCESS Magazine / May 2021

have any broken bones… I was just stunned,” Trey shares. As it turns out, Trey herniated the discs in his back while lifting weights without good form in the 9th grade, and a vigorous soccer season didn’t help. While it sounds so simple (and even common), his injuries were progressive and very serious. Naturally, Trey wanted to play through the pain, but his parents, Dean and Joanne Parker, knew they couldn’t let their son ruin his body for the rest of his life. Unable to accept the thought of his son never having the chance to play again, Dean did what any doting dad would do: he got busy. ly, he’s even invented and patented numerous spinal products used in surgeries throughout the world. Convinced he needed to follow this lead, Dean reached out to Dr. Theofilos and something immediately clicked. Dean just knew he could trust this doctor. From there, he sent Trey’s x-rays and a meeting was set. With an ounce of hope left, they met with Dr. Theofilos who revealed that Trey’s situation wasn’t hopeless, and that he could help. Overwhelmed and overjoyed, the family shed tears of relief as they began to feel those dark clouds begin to lift. “When my dad found Dr. Theofilos and he said he could fix my back, I said, ‘Let’s do it,’ as I had no other options,” Trey shares. “I remember coming out of surgery and the pain was just gone. It was unreal! Doctor Theofilos said my recovery was up to me and would take four to six months of really hard work. With lots of physical therapy (and not lifting a thing), I put in the work and was able to heal in approximately six months. I was even able to play soccer in the spring of 2019 and help lead my team to St Paul’s first state championship in soccer,” he beams. Today, Trey is totally healed and fully recovered... so much so that he will not only attend Samford University in the fall, but will also be representing his future college on the football team as a Samford University Bulldog, and on scholarship to boot! Naturally, being the second football senior class in St. Paul’s history to go undefeated and win the state championship in 2021 helped. “I really have to thank Covid-19 because I lost my sophomore and junior years when colleges would have been looking at me,” Trey jokes. “Because of the pandemic, we got to play on a nationally syndicated ESPN channel, and I had a fantastic game which resulted in several scouts following me from there. I even received multiple signing offers, ultimately choosing Samford because it’s Division I, my sister Jody goes there, it has the business school I wanted, and I love the football team,” he shares.

Following in his father’s footsteps, Trey will major in finance with the hopes of running a business with his dad one day. For Dean, it’s pretty simple: “Of course we were so worried about him getting back out there and getting hurt again, but that’s Trey,” Dean laughs. “He’s not a quitter. We even told him to take it easy and he went all in, because that’s just who he is. And of course, as his dad (like so many dads in the Southeast), I want this for him because it’s what he truly wants. I can recall asking him when he was just 7 if he’d rather play basketball like I did and he looked me straight in the face and said, ‘Dad, I would really miss hitting people out on that field!’ We never gave up out of love, and it’s truly a miracle that he was able to go from not ever playing football again to getting signed to play at the school of his choice.” Thankful for his parents allowing him to get the surgery and for his coaches who were beyond understanding, Trey’s best advice to those young men out there pushing through the pain is simple: “Know the difference between being hurt and injured,” he says. “If you don’t fix an injury, it will hurt you more in the long run. Also, do your physical therapy. It works!” As for his summer plans before heading off to college? You’ll often find Trey in Orange Beach, most likely at Whataburger with all his friends. Ah, the signs of a normal teen! Off you go, Trey… and know we’re all rooting for you (just be careful out there)!

For many women, hormone shifts can also simultaneously bring to mind the “M” word: menopause. “During menopause, some women experience extreme hot flashes during the day and at night, loss of libido, fluid retention, bloating, insomnia, and mood swings that affect their relationships and productivity, in addition to their quality of life in general,” Dr. Armstrong shares. “There is no controversy over the fact that hormone therapy reduces and can alleviate menopausal symptoms, but

what many don’t realize is that it can also help strengthen bones, maintain muscle mass, prevent urogenital atrophy, and reduce visceral fat (which, in turn, reduces the risk for developing type 2 diabetes, heart disease, and stroke).” As a hospitalist, common conditions Dr. Armstrong sees requiring hospitalization include hip fractures, urinary tract infections causing sepsis, complications of type 2 diabetes (including loss of limbs and kidney failure), congestive heart failure, ischemic heart disease, and strokes. “These conditions cause a significant loss of quality of life and can ultimately either directly or indirectly be prevented with hormone replacement therapy,” she shares. So how does it work? “Bio-identical hormones are manmade hormones derived from plant estrogens that are chemically identical to those the human body produces and come in various forms, including pills, patches, creams, gels, and injections,” Dr. Armstrong explains. “At LaBellaRx, we have our hormones compounded to meet the individual needs of our patients based on extensive bloodwork. Hormone therapy helps men and women reduce the risks of many diseases associated with aging, including cancer, heart disease, osteoporosis, stroke, and senility. Armstrong says the benefits are far-reaching. “There is no downside to bioidentical hormone replacement therapy compared to synthetic or retail hormone replacement therapy options,” she shares, though there are some relative contraindications or considerations that would need to be discussed with a knowledgeable healthcare provider prior to starting treatment. “There are relative risks for certain hormone replacement therapies for people with underlying clotting disorders and cancer,” Dr. Armstrong shares. “Those risks are considered and discussed prior to treatment if treatment is recommended.” However, Dr. Armstrong insists the benefits far outweigh the risks. “Some benefits of BHRT include increased libido, weight loss, improved memory, clearer skin/ complexion, revived mood/energy, reduced feminine dryness, a healthier digestive track, and improved quality of sleep. “It also reduces the overall risk of diabetes, tooth loss, and cataracts,” Dr. Armstrong adds. Though we’re less likely to seek medical advice when we’re “feeling fine,” Dr. Armstrong insists that it is exactly when you are healthy that is essential to start considering preventive measures for the future. “The first signs of chronic disease are the warning lights (signif-

icant weight gain, obesity, elevated blood pressure, elevated blood sugar, abnormal cholesterol panels, etc.),” she shares. “Any one of these mandates a change in your life immediately.” So, how long will it take to see results with hormone therapy? “Most people see results in the first few weeks,” Dr. Armstrong shares. “As your hormones are optimized, you will see the greatest benefits in three to six months. For increased bone density, results are seen in months to years.” There are multiple factors to consider before starting BHRT, she adds. “You should consider how important it is for you to maintain muscle mass and strengthen your bones as you age,” Dr. Armstrong shares. Do you enjoy hiking, skiing, biking, running, golfing, or other activities that may require more endurance and strong

muscles and bones as you age? Well, you should consider how important it is that you maintain a strong cognitive mind, she warns. “You should also consider how important it is that you enjoy intimate relations with your spouse,” she says. “You should consider how important it is that you minimize incontinence and UTIs, how you manage your weight, and if you want to prevent developing insulin resistance and/or type 2 diabetes (which is highly associated with kidney disease, heart disease, and stroke).” Further, a family history of breast and uterine cancer or clotting disorders should also be considered, and you should be prepared to discuss those risks at a consultation. But how does one know which hormones to target? “I use serum tests only,” Dr. Armstrong shares. “We can draw your blood at LaBellaRX and the turnaround to get results back is only a few days. Though you can detect hormones in saliva, it is not your saliva that transports your hormones to the cells. I find saliva tests to be cumbersome, and they are not necessary.” Once the results are in, the treatment options are discussed. “I spend time talking about potential side effects, past medical history, family history, and appropriate and inappropriate fears of hormone replacement,” Dr. Armstrong shares.

“The decision as to whether treatment will be short- or long-term is made on an individual basis, but it is not something that once you start you cannot stop,” she assures. Overall, Dr. Armstrong simply wants her patients to know they can put their trust in her. “In general, I just love people and want my clients to feel comfortable enough with me to share any concerns or questions,” Dr. Armstrong says. “Patients know what is wrong with them. They may not know the exact medical term, diagnosis, or appropriate treatment plan, but if I just LISTEN, they always tell me what is wrong.” It is this level of open communication that makes the practice of medicine that much easier. “My clients and patients become my family,” Dr. Armstrong says. “Even when they don’t listen to me, I love them! They fit right in with my kids, husband, and parents,” she jokes.

am sick and tired of being this way.” That is what 29-year-old Shannon Wheat of Mobile, Ala., said in a recording she made right before her first Profile by Sanford appointment in January of 2020. About a year later, she made another recording, only this time with a much more positive tone: “I have lost 100.9 pounds! I feel better than ever. Profile has been amazing.” It was the stress of life and work that caught up with Shannon. “I went to college and did the ‘freshman 15 turned 30,’” she shares. “Then I started working and was eating out every day. I thought it was fine. Nothing wrong. But then I started slowly getting fatigued doing things.

My coworker at the time was about 20 years older than me and she was outrunning me on everything. I knew I needed to do something.” Shannon’s mom was also in search of a weight-loss solution. “She was looking into weight-loss surgeries,” Shannon shares. “When her insurance didn’t go through for the surgery, she started looking at other options.” Around that same time, a woman from their church posted about Profile. “So, Mom went in for the health consultation and then she told me about it,” Shannon recalls. The pair decided then and there to join Profile together. It wasn’t easy at first, Shannon admits. “That first week was really hard, but I was determined to make it work,” she shares. And that she did. Today,

Shannon attributes her success to her dedication to her meal plan, learning to eat healthy, trying new foods (like veggies), and meeting with a Profile coach on a weekly basis. “The coaching is a complete game changer,” Shannon says. “Before Profile, I’d try to follow something on my own and I’d give up after a while. With coaching, I knew I had to go see my coach every week and that they were following my results on the scale. They really motivate you. When I hit a plateau or was getting discouraged, they’d remind me, ‘How bad do you want it? Do you want to go back to being tired?’” Doing the journey with her mom was another source of motivation that kept her going. “I’m real competitive,”

Shannon jokes. “I told myself, ‘If my mom is doing this, I’m going to do it with her, and I’m going to outdo her.’” Equally thrilled with her own personal success with Profile, Shannon’s mom is currently down 150 pounds and feeling better than ever. Practically a new woman, Shannon shares she has an entirely new outlook on life these days thanks to Profile. “Mentally I’m like a totally different person,” she says. “I look at pictures from last year and I’m like, ‘Who is that person?’ I have so much more confidence in myself. No matter what comes, I know I can do it. If I’ve lost 100 pounds, I can do anything!” With a newfound confidence that’s almost palpable, Shannon’s transformation has changed her life in ways


Her Profile that go far beyond the bathroom scale. “I can tell a huge difference when I’m drumming at church,” Shannon shares. “I’m keeping the tempo steady the whole time, whereas before I would get fatigued, and it’d slow me down.” She also does photography and notes how much easier it is to carry around 20+ pounds of equipment. Another big change in Shannon’s life centers around her new workout regimen. When Shannon reached 100 pounds lost, her Profile store in Mobile celebrated the milestone and 9Round Fitness gifted her a six-month membership. “I love it,” Shannon gushes. “I never thought I’d be into kickboxing, but it’s a fun challenge. FOOD FOR THOUGHT When Erin and Ben Akey opened 1031 Meals in May of 2018, they could’ve never dreamed of the overwhelming success they’d achieve in the Bay Area. Dedicated to providing fresh, clean food with as little processing and as great a flavor possible, 1031 Meals is dedicated to using food as a tool to treat the body with respect.

hether you eat or drink, or whatever you do, do all to the glory of God (1 Corinthians 10:31).” This Bible verse (paired with some serious self-reflection) is what inspired Erin Akey to change the landscape of local eateries, opening 1031 Meals alongside Personal Fitness Chef Ben Akey in May of 2018. Having branded her shop with the verse that started it all, Erin says 1031 Meals’ overall goal is to help people alter their mindset when it comes to food and fueling our bodies properly. “God gave us these amazingly complex bodies, and we tend to treat them more as trash dumps than temples with the amount of processed, fake food we eat in America,” she shares. Offering coaching in sports nutrition, kids nutrition, and starting keto, 1031 Meals works with a broad spectrum of clients, including everyone from high school and professional athletes to those who have had weight loss surgery to help them change their habits and break that addiction cycle through connecting them with a licensed counselor (if desired), nutrition coaching, and lots of prayer. Today, 1031 Meals also works with NCAA athletes training for the NFL draft with QB Country, providing clean meals and nutrition during their training. “We are currently the nutritionists and meal providers for former Alabama quarterback and current Atlanta Falcon AJ McCarronn and also work with Jake Fromm of the Buffalo Bills when he is in town,” Erin shares. Located in the heart of Springhill, 1031 Meals also offers both a clean food café for weekday lunches as well as meal prep. “Our prepared meals are stocked in our coolers daily and can also be purchased online via our pre-order service,” Erin shares. “We try to use as little processing as possible. often as possible, which Erin admits is hard with current health regulations. “We do not use any sugar at all,” she boasts. “Most of our food is gluten-free and extremely high in fiber and protein. We use locally made salsa and spice blends, and no white salt — just pink Himalayan, and very little at that.” They also use cage-free eggs and bacon and cold cuts with no nitrates or MSG and try to keep everything as fresh as possible. Specializing in clean, plant-heavy keto and carrying meals that fit most meal plans and eating styles, 1031 Meals truly has something for everyone, including everything from keto and vegan to vegetarian, clean, gains, and kids’ plans. But what

are the differences? Keto is a term we’ve all at least heard of. “Plantheavy keto is an eating style that is often confused with low carb, but it is quite different,” Erin details. “True keto is a style of eating that takes out the non-nutritive carbs and is higher in good fats and protein with nothing fake or processed.” Low carb is just LOW CARB, meaning you can eat meat and eggs forever and be compliant, or people can go to the drive through

and take the burger off the bun and poof! It’s low carb. “Keto would be eating a variety of healthy fats and oils as well as green veggies, nuts, seeds, and berries,” Erin explains. “Carbs come from good low sugar sources like berries, green veggies, and nuts. No fake oils or processed foods are consumed and there is no use of artificial sweeteners.” This form of eating was used in medicine for hundreds of years and is currently used to treat things like type 2 diabetes, epilepsy, dementia, and cancer symptoms. “The low-fat craze that went on for 50 years in America was so harmful to health and has led to an increase in disease,” Erin shares. But what about “clean?” “Basic clean meals will have more carbs than our keto meals, and we use carbs that are more nutrient-dense like sweet potatoes and brown rice,” Erin shares. “We also don’t use sugar or fake oils, which sets us apart from other meal prep companies. When we say clean, we mean clean. Many places claim to be clean, yet use lots of sugar, artificial sweeteners, white salt, white flour, white rice, and fake manmade oils like vegetable, corn, and canola,” she explains. “Those are all on our no-no list. Clean meals are high in protein and veggies with a clean carb component usually added.” Similar to clean, the gains style is very close to regular clean, but caters more to specific bodybuilding groups with less fat and more protein and carbs. With a passion for kids’ nutrition, 1031 Meals also offers specific kid-friendly options. “We are raising the second generation of kids with so many health problems caused by the amount of processed, fake food they eat,” Erin says. “God did not design our bodies to process all of this, and He gave us this perfect food supply which we have just adulterated over the last 50 years. So many industrialized crops are genetically modified, and now 80 percent of what we see in grocery stores is not even real food. Our grandparents ate bacon and eggs and fresh veggies and


home-baked breads daily and lived to be 100. We are now dropping like flies — often very early — and by 50, most are on some type of prescription. This is not normal.” Erin says it starts with those children who are not just eating sugary, fake foods every now and then, but daily. “One soda a day increases your child’s risk of obesity as adult by 60 percent, and diet sodas are just as bad,” she warns. “Kids are not born craving chicken nuggets, French fries, and juice pouches. If you feed kids real food from birth and teach them to eat real food, they will love real food.” Erin shares she believes “picky eaters” come from being given food at an early age loaded with sugar — the most addictive drug on the planet (now causing more disease globally than cigarettes). “We have to teach kids to eat real food from birth,” Erin insists. “Sugar is added to everything, and it starts with baby formula. We feed many expectant moms and get them eating real food so that their babies are not exposed to so many chemicals and processed foods while in

the womb.” Clearly, Erin is passionate about what she does. But how did all of this come to fruition? “I spent most of my life overweight and battling an undiagnosed food addiction,” Erin admits. “After trying every diet known to man and every fad (including weight loss surgery), I quickly realized that no surgery or drug would fix the fact that I had an addiction that left me sitting at over 350 lbs.” After getting into therapy for her addiction and finally realizing it wasn’t something she could control, Erin says she “gave it up to God.” “As I got healthy, I quickly realized how horrible our nutrition was, and this made me want to go back to school for food and nutrition,” Erin shares. She enrolled at the University of Alabama and obtained additional certifications in Sports Nutrition and Kids Nutrition along the way. “Now my passion is to help others with nutrition and gut health and teach them how eating real, clean food and giving the body a few good plantbased supplements can completely change your health and moods in a very short time,” Erin says. So, what mistakes are we (as a whole) typically making? “The biggest mistake is a low-fat, high carb lifestyle,” Erin warns. “The rise in disease correlates exactly with old advice that’s motivated by money and not science. Thankfully, most doctors who are younger and doing research are straying from this advice or sending people to nutritionists since doctors get little to no training in nutrition.” Erin shares that the low-fat craze also has a lot to do with the rise in dementia. “The brain needs good fat for functioning properly,” she shares. Boxed and frozen “diet” meals are another big mistake. “The frozen meals like Lean Cuisine and Weight Watchers and Atkins, etc. are just chemical nightmares,” she says. “The smoothie/juice drinks are also terrible and have more sugar than most candy bars. I could go on and on! You want orange or apple? Eat the whole fruit — not a glass filled with the concentrated sugar from four to five apples or oranges! We need to eat real, whole foods! We also don’t eat enough green veggies, nuts, seeds, berries, and citrus in America.” All in all, Erin just wants folks to realize that healthy food doesn’t equal boring or bland. “No way,” she insists. “People think eating healthy means baked chicken and brown rice and broccoli 24/7, and that is so far from the truth. If you use a variety of clean proteins, veggies, real butter, and spices, the combinations are endless! Take a look at our menus and tell me if they look boring!” With best-sellers like keto low carb lasagna, buffalo ranch chicken wraps, keto pizzas, chicken salads, pork eggroll bowls, and keto biscuits, “boring” doesn’t come close. “I just love seeing clients excited to have convenience without sacrificing health,” Erin shares. “We are a great alternative to fast food, and I love when customers come back by and tell us how good they are feeling since cleaning up their diets and cooking at home more.”

POSTCARDS FROM GREECE Dear Friends,

What do you do with a bushel of lemons dumped in your lap? Artist B’Beth Weldon makes lemonade! Like most, this past year has been one of challenges and hairpin turns. For B’Beth, it was time for a new adventure... this time in the form of a Greek revival. @bbethweldon bbethweldon.com

Having sold my home surprisingly fast, I suddenly found myself free of any anchor. It was then that I decided to listen to The Universe and my daughter already living in Greece (whom I hadn’t seen in nearly a year). She kept repeating, “Just come to Greece!” Over the years, I’ve traveled near and far for inspiration, private clients, and art shows to exhibit my paintings and drawings, but I was now craving a new creative project and just knew this was it. With my Greek visa secured, I found a fabulous flat online the very next day complete with a studio, terrace, and breathtaking views in the heart of Athens. A couple weeks later, Arthur (my Welsh Springer Spaniel) and I both boarded the plane during a pandemic to start this new adventure. After a few hilarious Ikea furniture fiascos, the flat was completed in time for the holidays, and since then we have had some wonderful adventures exploring many of Athens’ historic sites. This sprawling city with 3 million inhabitants was the heart of Ancient Greece and is still dominated by these infamous 5th-century BC landmarks, including the Acropolis and Parthenon temple. Now I don’t have to look very far for inspiration, as I see these hilltop masterpieces every day from my home. Seeing these sites in the early morning light, snow, and at dusk as the city comes to life — every bit of it motivates me to paint (and then to paint some more)! My favorite walks have been with Arthur through the lush National Gardens, sunset strolls around the Acropolis, and through the Friday markets buying the freshest fruits, vegetables, and eggs (“Laiki Agora” λαϊκή αγορά). We’ve also been enjoying leisurely lunches on the terrace with friends — Heaven on Earth! Bravely, I have decided to take Greek lessons, which has truly been the biggest challenge of my adult life, because it’s really “all Greek to me!” However, I remain determined and committed, as it’s the perfect time and place to learn and I know it will make life here so much easier. So far, I’m laughing at myself constantly and finding comfort that my path here was clear and instantaneous, making me feel like it was “meant to be.” Above all, I’m grateful to be able to write a new chapter. Greeks are slow to rise, so every morning I wake and feel I have the city to myself with Arthur, and it is the gentlest way to get to know this bustling, foreign city that I hope will one day become home. I hope you will follow this expat’s journey here and on Instagram!

consider myself an expert on only a handful of subjects, and of those, my oldest is the humble pajama. Always a fan and having worn them all my life, I’ve been utilizing them far outside the box of “modern mores” long before it was hip. I’ll even go so far as to say I do my best work while wearing a pair! Pajamas, or pyjamas (sometimes shortened to pj’s or jammies) are traditional loose-fitting garments worn during sleep. The word “pajama” is derived from the Hindi word “pae jama” or “pai jama,” which translates to “leg clothing” and dates back to the 13th century Ottoman Empire. Adopted from Middle Eastern day wear, the fashion was brought to Europe from India by British colonialists as loungewear attire in the 17th century. The wealthy wore them to show they were well travelled, worldly, and cultured. By the Victorian period, the two-piece pajama became popular as men’s sleepwear. Even German catalogs of the time featured depictions of the dapper Deutsche donning the “schlafenzuge for der modische Mann.” (Swoon!) As men’s and women’s styles merged in the 1920s, designers like Coco Chanel created the “beach pyjama,” a loose-fitting trouser that was casually elegant and less structured than the fitted fashions of the time. Avant-garde design houses promoted them as an alternative to the dowdy tea gowns and day dresses of the early 20th century. The style became so popular that Venice’s famed beach, The Lido, advertised itself to the upper crust as “the beach of sunshine and pyjamas.” This trending unisex design was even highlighted in the 1934 film, “It Happened One Night,” which featured a sexy Claudette Colbert sporting a striped silk men’s pair. Ooh la la! This modern evening attire re-emerged in the 1960s in the form of the “palazzo pyjama” and continued its reign with the androgynous fashion trends of the 1970s. Halston even referred to his iconic satin and crepe suits as “pyjama dressing.” Anyone who knows me well has most likely seen me in my pajamas. My neighbors, delivery people, yard man, and all manner of appliance repair technicians have heard my sheepish apology for having been caught in the light of day. However, the new casual work trends developed during the pandemic have ensured a place for this staple in your modern fashion arsenal.
