Happy April, Wavers I want to thank everyone who came out last month and helped me celebrate my birthday at the best Birthday Party ever. What a Super Birthday Bash it was! Wavers are a fantastic group of people and they showed up in force. What a crowd! I want to especially thank my sweetheart, Lynda Watson, and my sister, Jean, for all their hard work, planning, and extra miles they went to make sure everything was perfect. Special thanks to Adam Lee and his terrific staff at Huli Huli Hut for providing our birthday venue. The atmosphere and food were outstanding. Thank you, Adam! Pet Care Advice From Richard D. Henderson, DVM

I
think if our dogs had a choice, their favorite time for a trip to the beach would be in the colder months. Most breeds of dogs are designed to handle cold and wet situations better than hot and sunny. Splashing around in the surf in December brings out joy for most dogs while the pet owners are left shivering on the sand. In April, the beaches in Galveston will start filling up with folks eager to catch some sun and play in the surf after a long spell of mandated social distancing. Many day trippers arrive before noon with plans to stay on the beach until sunset. Families, many times, bring along their dogs often not considering the effects

this outing may have on the pet. It makes me worry when I see trucks cruising on the island on hot days with dogs tied in the bed along with the supplies for their day on the shore. Sadly, I have seen too many pet patients presented to my hospital with emergencies from a beach trip gone bad.

Surprisingly the most common emergency is the result of dog fights. Some folks turn their dogs loose to have a good run. Some dogs that are normally well-behaved on a leash become aggressive to other pets due to their heightened level of excitement. I have treated many dogs injured this way and have seen a few owners bitten trying to break

No fun for dog or owner if it hits in the car on the way home to Houston. Always bring a large container of cool water and encourage him or her drink every thirty minutes.
It is unbearably hot! Although dogs’ pads are tougher than our feet, they can still be severely burned during a short walk at the wrong time of day. Best advice: no mid-day dog walks or jogs up on the wall from now until October. It is a good idea to test the surface with your own bare foot first. If it is too hot for you, it’s too hot for pooch. Plan you walks near sunrise or sunset. Never let your dog drink salt water. Not only is it dehydrating but some sensitive animals will develop severe diarrhea within an hour of ingestion.
Probably the saddest and scariest beach emergencies we see too often are heat strokes. The most vulnerable are the large guys with thick coats. Dogs cannot sweat like people. They depend mostly on panting to get rid of body heat. This system of cooling may fail if the day is hot and humid. The air temperature just above the sand may not be cooler than the hot air being breathed out by your dog. Combine that with warm water temperatures and an overactive pet, and disaster can strike. If you must have your dog down on the beach for longer than an hour in the summer heat a shade structure must be provided. Keep several wet towels in the ice chest. In the event of overheating the towels can be draped over the dog’s torso to help cool
him some. This is one emergency to avoid at all costs. It can be deadly. Bottom line - there are times of the year that taking dogs to the beach poses more risks than benefits. If the family plans for a long day down on the hot sand, it might be best to leave Fido at home on the couch in the A/C. He will be safer and still glad to see you when you get home. Just don’t tell him where you were all day without him.

ello everyone! Spring has sprung and April is here! And if you’re wondering, Gowk, Noodle and Gob will be explained at the end of this article. April brings some very exciting news on the island! Construction of a new floating hotel on the Gulf will begin this month! It will connect to the island at the same spot on the seawall where the Balinese room was. A new Zip Line is being constructed, going from the West End of the island to the Bolivar ferry. Only residents will be able to use the new Zip Line. Duck Tuesday! All the Tuesdays in the month of April will be recognized with a large duck parade down Broadway. It will start at 61st and will end at Stewart Beach. Ducks must be able to walk on a leash and quack obsessively.
Crab fishing changes. The island has mandated that all crab fishing must be done with artificial bait. No live bait, frozen bait, or pieces of live animal bait. FUN FACT:APRIL FOOLS! All of the things mentioned above are not true, just fun for April Fool’s Day. OK, now for the explanation of Gowk, Noodle, and Gob. In Scotland, April Fools’ Day was traditionally called ‘Gowk Day. Noodle and Gob came from England, both being slang for fool. So don’t be a Gowk, Noodle or Gob this April! I hope you enjoyed these Fun Facts this month. As I stroll down the beach or walk along the seawall and watch families at play, or drive down a tree-lined Broadway admiring the architectural masterpieces along the route, and all framed in colorful oleanders, I reminisce of the stories, incidents and variables that have come together for me. It is this amalgam of these things that congeal and form what I simply refer to as my “Galvestonism.”

F
orest Riggs is one of the original cocreators and contributors to OutSmart Magazine. He has contributed to numerous other publications including This Week in Texas, The Houston Press, Ranger Rick Magazine, The Texas Triangle, Catholic Herald, and Guideposts Magazine as well as many newspapers and journals in Texas, California, and the U.S. Virgin Islands. His popular column, Reflections and Recollections, appeared monthly for many years in Houston’s holistic magazine The Uptown Express. Since 2015, he has written a twice-monthly column in Houston’s Montrose Star. “Across the Causeway” has become a popular and well-received chronicle of life on Galveston Island.

HIGH MAINTENANCE PEOPLE IN THE STORES CHECK-OUT LINE
M
ost all of us have had this happen. After a long, hard day, we have to make a stop somewhere on our way home to pick up a few items that we need at a store. We know what we want before we go inside. We should be able to get right in and right out. But NOOOOO, we don’t get right in and out because a High Maintenance Person is in the line right in front of us.
We know the kinds of high-maintenance people we hate being behind. There are several types of them. Here is a partial list... I Have A Bunch of Expired Coupons Person: This person knows very well that some of their coupons are expired. They think, what the heck, I will try and sneak them through. When that doesn’t work, they want to sort through all of their bags and take out the items where they didn’t get the discount. This person could care less how long that process holds up the line. My Credit or Debit Card Doesn’t Work Person: This wonderful soul knows good and well before getting in line that their credit card is over its limit. They also know they don’t have any money in their bank account. Does that stop this individual from getting in line and trying to run their cards over and over again? Of course, it doesn’t.
Do we like a person that holds up an entire line? Do we like it when we know that person could care less how long the rest of us are having to wait?
NO! WE DON’T LIKE THAT! We have a solution to this situation. Don’t ask us to use the selfservice checkout. We have been over this before. What we are going to do is establish an EXCLUSIVE HIGH MAINTENANCE LINE. This line will be dedicated to the kinds of people listed above. They can take as long as they want. Ask as many questions and lodge as many complaints as they want. This line will be 100 % exclusive for them. Let the fun begin...

I Forgot an Item Person: This sorry individual is about halfway through checking out when they exclaim; “wait a minute, I forgot something.” They then proceed to leave the line in search of their Twinkies. Meanwhile, the checker and the rest of us are all left at a standstill. The Check Writing Person: Why in the world does this person still exist? It’s 2021 people, get with the program. Use that bank card. To top things off, this high-maintenance individual never starts looking for their checkbook until all of the items have been checked through and are bagged up. That’s Not the Right Price Person: This never fails. This person is going to question a price at some point. The item gets rang up at $3.99 and the person swears it said $3.89 on the shelf. 5 Ways To Maintain A Youthful Look

1. Smile, Often! Forget about aging gracefully! Age youthfully! Individuals in a study on the aging face were asked to guess the age of models with various facial expressions. Neutral expressions led to the most accurate estimates of age. Fearful expressions led to subjects being rated older than they were, and happy smiling faces were rated as younger than they really were. So, smile and take years off your appearance! 2. Take Care of Your Skin A simple skincare routine which includes a daily facial cleanser, toner, serum (particularly those with Vitamin A or C) and a hydrating cream is essential for healthy looking skin. Adding a weekly polish will help remove dead skin cells and promote skin cell turnover. Taking time for a monthly Hydrafacial©️ can keep your skin radiant and bright. As always, drink plenty of water and keep fruits such as grapes, berries, plums, and pears in your diet. They contain sorbitol which is a humectant, or substance that attracts water. And lastly, protect you skin from damaging UV rays. The best choice in sunscreens is one that is mineral based rather than chemical based. his month our Spotlight falls upon William L Bunch III. Mr. Bunch, better known as Billy to his many friends, has been a familiar presence in the Galveston restaurant scene for many years. Descended from Italian immigrant grandparents, Billy is a 2nd generation Born on the Island (BOI) Galvestonian. He has spent most of his life in the food service industry cutting his teeth at a young age working at his grandparent’s food store - the former Pic n Sav on Market Street. There, the young Billy stocked the food and learned the business. He also gained an appreciation for good cooking at the Sunday meals his grandparents prepared after church. Devout Catholics, the young Billy attended Guadalupe Elementary school and then graduated from O’Connell High School in 1984 where he was active in sports and served as an altar boy. Billy completed his education at the University of Houston earning a BA in Management in 1991. Working in his Father’s automobile repair business taught the young man engine rebuilding and repair

skills, but also helped him decide his true interest was in food service. Starting as an entry level bartender at Landry’s Seafood in Addison, Texas, the young Billy quickly rose through the ranks to become their youngest general manager by greatly increasing profits and guest satisfaction. Billy earned a reputation as a troubleshooter joining several turnaround task forces and traveling across the Southeast fixing underperforming restaurants. Billy’s career with Landry’s eventually brought him to Charleston South Carolina to open the company’s 100th restaurant. While in Charleston, Mr. Bunch was presented with an ownership opportunity to join a struggling local restaurant. For several years he increased profits and managed to open several outlets of his Charleston Crab House Restaurants. Returning to Texas, he opened and operated Saltwater Willy’s in Grapevine, Texas for several years earning the coveted 4-star rating from the Dallas Morning News. A longing for his Galveston home
took him back to the Landry organization and then to the Galveston Restaurant Group as operations manager for four years before joining Chef Eric Aldis and the team at West End Marina and Restaurants in Sea Isle - a resort community on Galveston’s West End. As general manager, Billy presides over a sprawling complex that includes several food and beverage venues as well as a full-service marina, convenience store, and bait shop. With Chef Eric’s culinary skills and Billy’s business acumen, this out of the way business has quickly morphed into a destination restaurant for fine foods and special occasions. Overseeing a huge capital improvement program, the restaurant is upgrading their dining facilities and infrastructure to support the increased business this dynamic duo is bringing. Expanded hours and capacity crowds put a heavy demand but Billy finds time for his family, his wife of 22 years, and his two daughters. The older daughter, Ashley, works with her father in the food industry while his younger daughter, Kelsey, graduates this year and plans to attend Sam Houston State and play college softball. A genial outgoing man, Billy attributes his personality to his mother. In his words “She worked full time her entire life and was the glue that held our family together. She always taught us to be polite to others and to say yes mam, yes sir, etc. to all persons, which I still do today.” Billy always has time to talk and listen to his customers. appy April!! Bunny’s favorite and busiest time of the year is here. This is a recipe I found in my Auntie’s recipe files. She always loved history and loved keeping recipes from generations past. This one is a knockout. One of our relatives knew Miss Kitty that ran the saloon in Dodge City. She would serve these to her gentlemen customers, among other things. Her recipe is as follows:
In the meantime, boil cubed potatoes, until done. Mash up the potatoes and whip till fluffy. When the cupcakes are done, let them set for about 5 minutes. Take the cupcakes out of the wrapper and place in new ones (because of the grease). Ice the cupcakes with the mashed potatoes.

I
Healthy To A Tea
have gained a new appreciation for the tea leaf in my quest to live my healthiest life. And I’m not alone. The 5,000-year-old plant-based infusion is the most consumed beverage on the planet after water. According to Chinese legend, the history of tea began in 2737 B.C. when the Emperor Shen Nong, a skilled ruler, and scientist, accidentally discovered tea. While boiling water in the garden, a leaf from an overhanging wild tea tree drifted into his pot. The Emperor enjoyed drinking the infused water so much that he was compelled to research the plant further. Legend has it that the Emperor discovered tea’s medicinal properties during his research. When you steep tea, you extract potent nutrients that work like a blanket for the cells of your body, nourishing them and shutting down active agents and precursors of disease. Studies have found that some teas may help with cancer, heart disease, and diabetes; encourage weight loss, lower cholesterol, and bring about mental alertness. Tea also appears to have antimicrobial qualities. Tea is a name given to many brews, but purists consider only green tea, black tea, white tea, oolong tea, and pu-erh tea the real thing. They are all derived from the Camellia sinensis plant, a shrub native to China and India, and contain unique antioxidants called flavonoids. The most

potent of these, known as ECGC, may consume free radicals in our bodies that can contribute to cancer, heart disease, and clogged arteries. All these teas also have caffeine and theanine, which affect the brain and seem to heighten mental alertness. While most in the medical world agree there is still the need for more research, here’s what some studies have found about the potential health benefits of tea: Green tea: It has a high concentration of EGCG and has been widely studied. Green tea leaves are oxidized more than white tea but less than oolong and black teas, creating a unique chemical composition of the leaf. Every year scientists are finding more and more health benefits in green tea. Green tea’s antioxidants may interfere with the growth of bladder, breast, lung, stomach, pancreatic, and colorectal cancers; prevent clogging of the arteries, burn fat, counteract oxidative stress on the brain, reduce risk of neurological disorders like Alzheimer’s and Parkinson’s diseases, reduce risk of stroke, and improve cholesterol levels. Matcha is a type of green tea on steroids! It is straight stone-ground tea leaves. When drinking or eating matcha, you are actually ingesting the whole tea leaf, not just the infusion from the leaf. A single serving of matcha can give you several times the antioxidants of a cup of infused whole tea leaf. Can’t quite handle the grassy, seaweed smell and taste of matcha? Try putting a teaspoon of it into a smoothie! Black tea: Made with fermented tea leaves, black tea has the highest caffeine content and forms the basis for flavored teas like chai, along with some instant teas. Black tea is known to banish
fatigue, stimulate mental alertness, and raise energy levels. It has been shown to reduce stress hormone levels and acts as a nerve sedative, frequently relieving headaches. It contains several vitamins considered essential for maintaining health, including Carotene, a precursor to vitamin A, has antioxidant and protective properties, Vitamin B1 and Pantothenic Acid, Vitamin C, and Vitamin B6. Black tea also contains antioxidants that may help protect your body from the ravages of aging and environmental effects. It also may reduce the risk of stroke. White tea: This tea is uncured and unfermented. One study showed that white tea has the most potent anticancer properties compared to more processed teas. White tea can create a calmer but more alert state of mind. Studies have shown that the amino acid L–theanine found in the tea plant alters the brain’s attention networks and can have demonstrable effects on the brain waves. More simply, white tea can help you relax and concentrate more fully on tasks. Buddhist monks drank white tea to keep themselves from falling asleep during meditation. Oolong tea: A semi–green tea results when the oxidation process is stopped just as the leaves start to turn brown. Oolong tea is in the spectrum between green teas and black teas. It combines the health benefits of both green and black tea and contains the full range of polyphenol antioxidants: catechins, thearubigin, and theaflavin. Chinese herbalists believe that oolong tea is highly effective in improving symptoms associated with weak kidney and spleen energy.
Pu-erh tea: This very dark, rich tea is fermented in addition to being oxidized. This gives these leaves a unique chemical composition. Hailed for its medicinal properties, pu-erh is commonly used in China to detoxify the body and aid digestion. Outside of the five traditional tea types, herbal teas are made from herbs, fruits, seeds, or roots steeped in hot water. Herbal teas have lower concentrations of antioxidants than green, white, black, and oolong teas. Varieties include ginger, ginkgo biloba, ginseng, hibiscus, jasmine, rosehip, mint, rooibos (red tea), chamomile, and echinacea. Limited research has been done on herbal teas’ health benefits, but claims that they help shed pounds, stave off colds, and bring on restful sleep are largely unsupported. Can Tea Be Bad For Your Health? Most teas are benign, but the FDA has issued warnings about so-called dieter’s teas that contain senna, aloe, buckthorn,
and other plant-derived laxatives. None of the claims is backed by science, and some of the herbs have led to bowel problems, liver and kidney damage, and even death. Although many questions remain about how long tea needs to be steeped for the most benefit and how much you need to drink, nutritionists agree any tea is good tea. Still, they prefer brewed teas over bottled to avoid the extra calories and sweeteners. The healthiest tea will be the one you actually drink. It doesn’t matter if green or black tea is the most beneficial if you hate how they taste. To reap the health benefits of tea, you need to consistently consume this beverage daily — something that becomes exponentially harder if you don’t enjoy the taste. Find teas that you enjoy, and don’t be afraid to experiment with flavors and different varieties of the same tea type. Stick to tea you like and try to avoid adding too many sweeteners that can turn
this healthy elixir into a calorie-packed dessert. Remember that loose leaf teas tend to be healthier than tea bags. This is because loose teas contain whole tea leaves, which contain higher amounts of polyphenols and antioxidants. On the other hand, tea bags have broken leaves and dust with fewer of these healthy compounds. For the best results, use high-quality loose tea whenever possible. Drinking tea every day can have a positive effect on your overall health. The importance of drinking plenty of water daily is well documented. Why not use tea as a way to stay hydrated AND get the added benefits of polyphenols at the same time? Mix it up, try new types and join the 5,00-year-old craze to find health through tea leaves!

he theater community reunited in Times Square March 12, exactly one year to the day since the Broadway shutdown, for “We Will Be Back,” a live pop-up experience and commemoration of the industry’s lost year. The event aimed to provide a sense of hope as the industry and city move forward from the challenges of the past year by shining a spotlight on the 97,000 arts workers who have suffered during the theatre’s literal darkest hours. It also celebrated the sense of community and diversity within the arts environment that mirrors that of New York City itself. “Live theater is crucial to the lifeblood of the city,” Times Square Alliance acting President and COO Tom Harris said. “Times Square sits at the main artery of the city. Together, Broadway and Times Square represent a crucial economic and cultural center of New York, and without these two thriving, the city can not rebuild.” Broadway stars Chita Rivera, John Leguizamo, André De Shields, LaChanze, Santino Fontana, Will Chase, Ingrid Michaelson, Lillias White, Patti Murin, Colin Donnell, BD Wong, Tamara Tunie, Jerry Mitchell and more served as hosts for the event -- which featured song, dance, costumes, musicians and more in Times Square, the heart of New York City. Their voices were strong and their hearts full, their souls restless after a full year of not being able to do what they love best. “It’s strange to see people again,” actor Matthew Broderick said. It’s great to see them.” The Actor’s Fund has helped many with

“I don’t think anyone of us expected it to last this long,” Brian Stokes Mitchell said. “That’s what’s been so shocking about it. It’s why I’m so happy I’ve been with the actors fund and to be able to help people get all through this terrible, terrible time we’re going through.” The $17 billion a year industry still doesn’t know when it will get back to work, but the feeling is certainly optimistic. “Please God, I hope this horrible thing has brought us closer together,” Chita Rivera said. “”I know it’s made me more determine to get out there and give my everything, what little bit I’ve got left after all these years.”
While the theater community has many months ahead before uniting in theatres once again, “We Will Be Back” provided the opportunity to safely and ceremoniously come together on Broadway, live and in-person, for the special one-timeonly performance representing a myriad of arts and culture workers, unions and individuals that comprise the Broadway community. “We’re thrilled to once again celebrate one of New York’s greatest institutions, Broadway, in the heart of New York, Times Square,” NYCNext co-founder Maryam Banikaram said. “Our goal is to help New York City recover and rebuild by fortifying its unique cultural community, and this event is emblematic of that mission.”

or decades, it has seemed that, when it comes to making fun of musicals, Gerard Alessandrini’s long-running (and ever-updated more than a dozen times) revue Forbidden Broadway has had the field to itself. Finally, some competition is provided by Eric Rockwell and Joanne Bogart’s The Musical of Musicals: The Musical! Premiering off-Broadway on December 16, 2003 at the York Theatre at St. Mark’s, it ran through October 2, 2004, for a total of 194 performances and 14 previews. Composer Rockwell and lyricist Bogart hit upon the idea of an evening of five mini-musicals, each done in the style of a familiar songwriter. The standard melodrama plot is expressed in the opening lines: “I can’t pay the rent!” (Ingenue); “You must pay the rent! (Villain); “I can’t pay the rent!” (Ingenue); “You must pay the rent!” (Villain); “I’ll pay the rent!” (Hero). In addition to these three characters, there is also an older woman. In “Corn!,” the story is given a Western twist à la Oklahoma!, as the singers spoof Rodgers & Hammerstein in familiar music and punning lyrics (“Shucks, what beautiful corn!”). “A Little Complex” moves the action to a New York apartment building and to the dissonant chords and tongue-twisting wordplay of Stephen Sondheim (“When you have to strain to explain the arcane, it’s bound to sound profound”). “Dear Abby!” turns the focus on the older woman, now a combination of Dolly and Mame in the style of Jerry Herman. “Aspects of Junita” enters the operetta world of Andrew Lloyd Webber, with particular attention to the composer’s tendency to “borrow” melodies from opera. (“I’ve heard that song before,” sings Junita, the ingenue. “You’ll hear it even more,” replies the Villain, now a Phantom.) Finally, “Speakeasy” mixes Cabaret and Chicago, among other shows by Kander and Ebb. The cherry on top of this confection is the closing number ‘Done” a la “One” from A Chorus Line, where the ensemble begs the audience to leave.
With my fellow musical fanatic friend in tow, I attended a Sunday matinee performance at ETC where we were pleased to see COVID protocols of masking and distancing still in place. The four cast members consisted of Brennan Ashley [Heroine], Matt Poole [Hero] Justin Gonzales [Villain] and Hannah Hayes [Wise Friend]. Having had the honor and privilege of working with Brennan, Matt and Justin before, I knew to expect superlative performances from them and they most assuredly did not disappoint. Hannah Hayes, a Houston actress, also rose to the occasion – her reach-the-back-row Mermanesque belt more than made up for her somewhat inaudible lower register.

Your Beach Bum’s favorite foods Hi there, Wavers. Hard to believe it’s April already. Your Bum likes to cook outside all year round, but it sure is fun to do in the Springtime. It’s no secret that I love to eat. I had an idea while I was riding around in my ol’ scarab the other day. It’s not like me to have many thoughts in a day, but here is what had me thinking... As much as your Bum loves great food, I don’t think I have really ever given much thought to what kinds of food I like best. I decided to put a little list together of my favorites. If you are looking for healthy foods, this won’t be for you. This list is in no particular order because I crave different foods from day to day. However, the list does include my top ten favorites. Pizza It’s estimated that over 3 billion pizzas are consumed each year in the United States. 350 slices eaten each second of every day. Your Bum contributes heavily to these numbers. I am strictly a Meat Lovers guy. If I wanted vegetables on my pizza, I would order a salad instead. Load my pizza up with all the different meats possible, throw on some extra cheese, and your Bum is one happy fella.

Fried Chicken In a recent poll, over 95% of Americans stated that they like fried chicken. Count your Bum among that number. Over $2.5 billion was spent last year at quick-service fried chicken restaurants alone. I like to fry mine in a castiron skillet. I love every piece of chicken except the thigh. I will save that piece just for you.

Chocolate Americans consume over 2.8 million pounds of chocolate annually. That’s about 11 pounds per person each year. Your Bum consumes more than that per month. I love fudge, brownies, cake, candy, and more. You name it and I love it. I should be a stockholder in M & M peanuts and Snickers.
Ice Cream Over 1.6 billion pounds of this frozen sweet treat are consumed in the United States each year. That’s about 11 pounds per person. Favorites are vanilla, chocolate, and cookies & cream. Your Bums favorite way to eat ice cream is to make myself a banana split. I have loved them since birth. Sinfully good.
Hamburgers Americans eat 50 billion hamburgers a year. That translates to 3 burgers a week for every single person in the U.S. Your Bum tops that number. Give me a big, juicy burger on a toasted bun. Add a little mustard, lettuce, tomato, and double cheese. Like Jimmy Buffet says, I love to have a Cheeseburger in Paradise.
French Fries The perfect complement to a great hamburger is golden brown French fries. The average American consumes 4 servings per week. That’s 16 pounds of fries per year. Again, I am sure your Bum tops that number. I even have them for breakfast sometimes with my sausage biscuit. Pure heaven.
Steak Steaks come in a variety of cuts & choices. NY Strips, ribeye, filet mignon, etc. It’s interesting to see how Americans like their steak cooked. 11% rare, 23% medium-rare, 13% medium, 16% medium-well, and 24% well done. I can’t imagine well-done steak. It’s un-American I tell ya. Give me a tender fillet mignon, cooked medium-rare with homemade Bearnaise sauce over it and you have pure joy.
Barbecue Another of your Bum’s favorites. One of the many treasures of living in Texas is our great barbecue. We do it the best. I love low and slowcooked smoked meats. I can’t get enough of it. Ribs, beef brisket, smoked chicken, and sausage. Bring it on! Throw in some delicious sides of potato salad and beans and you have a true Texan meal.
Tacos Americans eat 4.5 billion Tacos per year. Your Bum accounts for about half of that number. Another beautiful reason to love Texas. You can literally find tacos here 24/7, 365 days per year. I love the food trucks all around the Galveston area. We also have so many terrific family-owned Mexican restaurants.
Mac & Cheese 1.22 million Americans are eating Mac & Cheese each day. That’s how much we love it. Your Bum can make an entire meal out of Mac & Cheese. I also like it as a side dish, but I am perfectly fine having it as my main course meal.

L eashed Ling”? -Certainly not, but this horizontal reversal of line pressure is a tactic that lets you come close to it. This is a near-surface pressure application that also works to some degree in deeper situations. While ling are best known for their activity in the surface area, remember that most of their feeding is in the mid-depths as well as at the bottom. Near the surface, to say thirty feet down, is the strike area this piece is all about. I came up with this pressure application in May of 1994; at the time it just seemed the natural thing to do. I had a 78 lb. ling on the gaff about a minute after the hookup, and I’ve since used it on numerous occasions over the years on many ling from 35 to 65 Ibs. This doesn’t work on every ling, but it does have an extremely high success rate.
After your ling eats your bait presentation, the reel fun begins. Immediately after that hookup at (1) on the illustration. down or near the surface apply right side, horizontal rod sweep with max drag that 30% of line’s rated strength. The ling will come to near the surface. usually at an early point in the pulling. As the ling passes in front of you at (2), immediately “arc swing” switch to a left side horizontal pull. With each side pull you should be gaining line. Start with “short stroking” rod pumps and half tums of your reel handle. The vast majority of the time the ling will respond and turn and start swimming opposite to the pull, all the while coming closer to the boat. At (3), reverse the side pressure to the right; at this point you should be getting more that a reel handle turn per rod pump. (4) is left pressure, (5) is right pressure, (6) left, (7) your ling should be corning to the gaff or very near to it, below you at boat side -the gaff or gaffs had best be ready to strike. Missing this gaffing opportunity usually changes the fight to a deeper and long one. If you coax the ling back to the near surface area, try to start the line pressure reversal again.
Before getting into the fight tactic, I’d like to emphasize the importance of a properly set, smooth operating drag. A setting that’s about 30% of the line’s rated strength is a good number to shoot for. Set the drag using a securely anchored, accurate scale, line loaded reel on the rod, line through the guides and tied to the scale with the rod loaded at about a 70° angle. Star drag reel, paint mark a star point, back off fully, note turns. Say 3 turns is 15 lbs., mark rod 3-15. Snug drag slightly, when ready to fish it, back off completely, tighten 3 turns, you’ll be back to that 15# setting-an accurate, initial drag set point. This procedure is important, most folks don’t put near as much pressure on a fish as they think they do. With a lever drag reel I just would mark 15#, knowing that meant at the lever’s strike position.
How much pressure you put on the ling. how it reacts to this pressure and how far away from you the hookup was made are all factors in how many of those rod pressure reversals you will have to make. Maximin side pressure, immediately after the hookup, and its numerous reversals seem to disorient a ling and cause it to act as if it doesn’t realize it’s been hooked.
Before getting into the line pressure reversal procedure, here’s a few clarifications of some of the terms used: “Short stroking” is just what it sounds like, short rod strokes are designed to move the fish toward you just a bit, therefore the half turn of the reel handle. Bigger fish movement toward you, make more turns of the reels handle. The “Arc Swing” is a very fast, shallow, say 20° angle left or right motion of your rod. During the entire fight, including the “arc swings”, the rod never comes fully out of compression -the rod is always loaded from slightly to all you can put on it. The more time you can spend at “All you can put on it”, the better.

When initially on the gaff, step back, put the reel on the clicker and out of gear (star drag) or to free-spool (lever drag). If your ling comes off the gaff for any reason, now it runs off against the clicker, not a short line that either breaks or pulls the hook. The reel is then put back into gear and off the clicker and the fight is back on, usually for a while, unless the ling is insured. This procedure has saved numerous sizeable fish of a variety of species for me over the years. I use it on any fish that’s worth gaffing -it’s second nature and is a log easier to do than it reads -I guarantee it. Ling, with their active body mass on the gaff, are perfect candidates; tom out gaffs aren’t out of the ordinary and the clicker can save the day, it’s a lot smarter than an educated thumb -also guaranteed. Any “green” ling, regardless of its size, is a danger on the gaff or in the boat; the danger just goes up radically as the size of the ling increases. While they don’t have teeth, they do have 5 to 7 spines that are sharp, short and strong, ahead of their soft dorsal fin that will lay you open like a series of scalpels, wherever they come in contact with anyone on deck. This erratic thrashing around will and has knocked fishermen down, broken legs, destroyed tackle, etc. The best place for any ling brought aboard is for it to be immediately landed in a cooler or fish box and the lid closed. Is this side pulling reversal procedure sporty? -not exactly. But it can get any size to the gaff quickly. Whether it is an “’eater”, a record tournament winner or a personal best, this method is a tool/advantage that can be instrumental in your ling being in the fish box or on the deck! If the ling is more important than a long fight that you may lose, this ling trick is the way to go. Read all the details until they are burned in. Practice and do the total technique accordingly. Also, practice the rod pull reversal and arc swing on shore. It must be second nature when your ling is on the hook. Always remember that there’s always another way and this reversal of line pressure tactic will bring a ling of about any size to the boat quickly when utilized. It’s not a “leashed ling” but I firmly believe that a ling may feel as if it is. Give it a try -it’s tried and proven true -I guarantee it!

- 3-4 lbs chuck roast strips (I buy these at HEB) - 1 can fire roasted tomatoes
- 32oz box of beef stock - 2 cups water - 4-5 cloves fresh garlic whole peeled - 1 yellow onion sliced - 3-4 serrano peppers chopped with seeds
- 1/2 lime juiced - 1/2 bunch cilantro course chop
- 3-4 tbsp TSS

Sharing with neighbors in their Illinois neighborhood started the idea of turning it into a business and then came two successful pet shops. Bringing that love to Galveston was not in the original plan, but after searching for the specific food their dogs used, they realized a need for a pet shop that is more like a boutique for pets. Wagabonz at 2002 Strand Street, in the historical Hendley Market Building, opened November 3, in the middle of the global pandemic. The specialty bakery for pets, located in the back of the store, features treats and baked goods made in house daily. Special orders like birthday cakes and other celebratory baked goods are also available for order.

Wagabonz Opened as a Quick Favorite for Island Dogs Moving to be closer to family, Scott Tripp has visited Galveston many times. As pet shop owner in Illinois, he and his husband already knew of the special needs some pets have and especially after their beloved Saint Bernard, Tiberius, had led them down a road of baking dog treats without the usual digestive triggers, such as wheat, corn and soy. “That’s what started me on baking for dogs. Tiberius couldn’t process salts, potassium and other minerals and ingredients found in so many treats and foods for dogs”, said Scott.

“Dogs don’t want sugar and all the extra ingredients. We specialize in all-natural ingredients without the use of preservatives, soy, corn, wheat, etc.”, said Scott. Doggie Donuts, cookies, milk bone replacements, cupcakes and even PBJ treats are presented in a bakery case and always reasonably priced. “We always try to offer products not carried by the big box stores. I believe in every product we offer. If it breaks easily or just does not seem right for our pets, then we won’t sell it”, Scott said as he spoke of the vast array of products throughout the store. The trade in your bag of food program is one of a variety of ways Scott hopes to help the local community pets become
healthier and happier. Customers can bring in a bag of dog food and talk with Scott and his employees about the needs of their own dog and any nutritional concerns. Wagabonz employees will help to find the right food for pets and help make a plan for bringing the healthier food on board. The dog food brought in, by the customer, will then be donated to the Galveston Island Humane Society’s food bank for people in need of pet food. The round up to a dollar program will start soon and any customer wanting to round their purchase up to the nearest dollar will be contributing that rounded amount to the Humane Society. “We want to find more ways to help the island and the animals of the island. We are always up for talking with people about events that will benefit animals”, said Scott. Grooming supplies are also available in the store along with a grooming salon, known for a stress-free environment in which very few dogs would ever be present at the same time, therefore the noise level stays low and the groomer, who strives to help dogs learn to enjoy their grooming experiences, is able to give special attention to each of the salon visitors. Nootie Shampoos and products were previously only sold in veterinarian offices, but now has a consumer line and

Bandanas, collars, leashes, candy, treats, a complete line of chewy “body parts”, food, toys, the bakery and the salon have been great hits for the Galveston Island pets and their owners. “A side benefit has definitely been how friendly everyone has been and the relationships we’ve already built with the dogs and owners. We always make a point to greet the dogs first with a treat. They are the customers here”, said Scott. Wagabonz is open seven days a week. An island visitor, from Rosenberg, by the name of Sophie, loves to sit on the sidewalk of the Old Strand Emporium as her parents enjoy the weather and food. Fozzie and Nuna often visit favorite restaurants such as Taquilos, 2101 Post Office Street and Katie’s Seafood House, 2000 Wharf Road, along with Maceos Spice and Imports, 2706 Market Street.

Humphrey loves walking to 21st Street pier with local artist and mom, Catherine Stroud. “We love to walk downtown and to the pier to look for dolphins.” Proletariat, 2221 Market Street, another favorite spot for Catherine and Humphrey, is also known for hosting and loving all the pets. Dali, Jet and Mazzy Star can be found in their favorite shop, welcoming customers, and hanging out with mom, Britney Maynard, at Tippy Toes, 212 22nd Street. with Jan & D e a n Dear Jan and Dean, I have a husband, Bert, that brings his work home on a daily basis. I don’t mean he brings his files and computer home so he can conduct some work. I mean he brings his hate and anger from his job home. He totally hates his job, his boss, and his co-workers and he takes his frustrations out on me. Every single day when he gets home, he gives me a blowby-blow description of his whole miserable day. Then, when I try and say something, he will bite my head off. I have finally just quit responding to him. Once he is through ranting, he eats dinner, watches television, then goes to bed. Some nights, after all of his ranting and tirades, he wants to make love to me. Here I am, about to lose control, and he is now happy as a clam because he got things off his chest. He is ready to go. I am definitely not! He can’t really change jobs because he has two strikes against him. He is at the age where employers really don’t want you. They want someone younger and cheaper. He is also a person that can’t get along well with other people. I am at my wit’s end with these horrible, daily temper tantrums. Any suggestions for me Jan and Dean? If you are dependent, do you have family or friends that will take you in until the divorce is over? They must know how Bert is and be willing to take you into their homes for a while. ello Mary Anne - I have found myself agreeing with Jan a lot lately, but this is not going to be one of those times. First of all, divorce at this point seems like a way too drastic measure. You didn’t mention how long you have been married, but marriage to me is not something you simply throw away without any effort to save it. Many job places today can certainly have a toxic environment. You may have no idea what your husband has to go through daily. While I totally agree that Bert should not take out his frustrations on you, maybe you could try to be empathetic and show a little support. If he can’t turn to his own wife for support in serious matters like these, who can he turn to? Another area I disagree with Jan about is Bert getting professional counseling. There are many situations in which counseling can be very helpful. It may be exactly what Bert needs. If you want to try to save your marriage at all, I highly recommend it. Regardless of Bert’s age, he needs to find a different place of employment. Many fine companies are always searching for quality employees. Bert should not use his age as a crutch for staying at a place he hates. If he is really good at what he does, someone out there will want him. Maybe you could assist him in finding that place.
I personally am not going to tell you to go to counseling because I don’t think it would work. GROCERY CARTS
thought about calling this Reflection “doing the right thing”, but while visiting with a group of friends (socially distanced of course) our topic of conversation took us all over the place. You might wonder how we got on the topic of Kroger’s grocery carts, let me explain. As an Islander we love to have people visit because tourism is the lifeline of our economy, but we also notice visitors, and even some of our own community members do not take care of our island. People will break the law, act carelessly, leave their trash and of course, leave their grocery carts all over the parking lots. You may be reading this and wonder where I’m going with this reflection, let me continue. The last time you were at Kroger, did you ever notice the number of grocery carts scattered throughout the parking lot? I often wonder why people do not take the time to walk their carts back to their designated areas. Could it be they are in a hurry to enjoy their vacation, or do they have no respect for other people or other’s property? If the carts are not secured, the wind will surely blow them around. I recently came out from shopping to find a huge dent that actually cracked the paint, of course it did not take me long to figure out what happened.

By doing so, an elderly or handicapped person won’t have to look for a cart, workers won’t be scrambling all over the parking lot to gather the stranded carts and most important, if carts are in their designated spot, they won’t be blown around and used as a battering ram to dent or scratch another’s vehicle. I think it says a lot about the type of person you are by the action you take in where you leave your grocery cart. So, who are you? Do you think of others over yourself? Are you lazy? Are you selfish? Are you respectful? Do you have regard for other’s property? This reflection was not meant to judge, but I guarantee the next time you are at Kroger and you see a stranded cart, you might just wonder who left it there and why. Let’s all try to “do the right thing”.
This led to our conversation about people and how we see them. Who are these cart vagabonds? Are they people in a hurry trying to pick up children from school or daycare? Maybe trying to get home to cook supper for the family. They may have had a bad day at work. It could be visitors just trying to get their vacation started. For whatever the reason, do people just not care, or do they expect someone else to do it for them? All of these are plausible reasons but what is the right thing to do? I call it “doing the right thing.” It literally takes less than a minute to put your cart in a designated area. The minute it takes you to do the right thing can literally help someone else who may be in the same frame of mind as you. Others are in a hurry, stressed, had a bad day, need to get home to take care of an elderly parent or sick child, cook dinner,

Because there are blooms that need pollinating, you will be feeding all the great pollinators such as the butterflies. There are many other varieties of Holly’s and all of them are good choices.

Here are the top five Texas Natives that are well suited to the Gulf Coast Climate that are easy to grow and maintain. Not only are they easy to grow, they are full of color! • Eastern Purple Coneflower (Echinacea purpurea)- this is a drought tolerant native that loves sandy soils. This plant can thrive in difficult conditions such as drought, full sun, and salty air. A hard freeze won’t kill Purple Cone Flower it and neither will a Texas summer. It grows 2-5 feet tall and adds a lot of color to a landscape. Butterflies love it. • Rosemary (Rosemary offcinalis)- this is the original version of Rosemary, not Arp or trailing- even those varieties are great. This original variety is extremely strong, does not need a lot of water, has practically no diseases or pest problems. Rosemary can be grown as a shrub or hedge and smells wonderful. This is a perfect foundation plant. A hard freeze won’t kill it and neither will a Texas Summer.

Red Turks Cap (Malvaviscus abroreus var. Drummondii)- this spreading shrub makes gorgeous red blooms that hummingbirds LOVE. Shade or partshade is the best spot for this shrub – which is great because shade loving blooming plants are in short supply. This is another Texas native and well suited for our climate.
