appy St. Patrick’s Wavers. St. Patrick’s Day always brings back a lot of fond memories for me. It was one of the very few days a year that I saw my father take off from work. His grandparents immigrated from Ireland and my dad truly loved to celebrate St. Pat’s Day. Not a single green beer was safe on March 17th. March has arrived and with it we are hoping for some nice Spring weather. March is one of the best months of the year in my opinion. A little birdie has told me that there might be a big Waves Blow Out Party around March 21st. A party wouldn’t be a party without the very talented band Stranded playing for it. Stay tuned for more information to come. As always, I want to thank our wonderful readers and loyal advertisers for your continued support

of Waves Magazine. We couldn’t do what we do each month without you. We truly believe that Waves is the most entertaining and informative publication to be found on our beautiful island. Our Pet Cats

From Carnivores to Carb Junkies

O

ne of my own cats, Ghost, is a big, white, jolly fellow. A lovable chap but not too fond of playing or moving much. If offered some beef, chicken or shrimp he usually walks away. Pull out some dry kibble or his favorite treat, cantaloupe, his eyes light up. Why he loves cantaloupe to the extreme, I have no idea. His ancient ancestors would be ashamed. Gone are the predatory hunting behaviors and desire to eat fresh meat that is present in all modern-day wild cats. In the last seventy years humans have tried to reverse 30 million years of dietary evolution in our domesticated cat friends. We

have tried, for our own convenience, to change an obligate carnivore into an omnivore. How And Why Did This Happen? Up until the 1940’s, our pet cats received the bulk of nutrition from two sources. They lived mostly outdoors and spent their time roaming and hunting. They ate the rodents and small birds they killed much like their ancient ancestors. Their humans supplemented their diets with canned food. Both of these food sources are very high in protein and low in carbohydrates. This is the diet that felines have evolved over many of millions of years to digest.

Then came the advent of the dry cat food. This food was much more convenient to feed and more appealing to the human eye. No more stinky cans with whole fish eyes floating in the mush. The dry food could be left out without spoiling and could be packaged in bags so as not to waste valuable metal during wartime. Good marketing and entertaining commercials made us all believe this dry kibble was best for our kitties. Problem is you can’t change thirty million years of dietary evolution in seventy-five years. The dry food was quite palatable, so most cats enjoy it. However, in order for to it be baked into its crunchy texture,


The result has been a significant increase in diabetes, obesity, arthritis and heart disease in pet cats that live indoors and are fed mostly dry food. Interestingly, many human health problems in our well fed, sedentary society mirror the same problems we are seeing in pet cats in America. carbohydrates had to make up a much higher percentage than the feline digestive tract was designed to process. Cats are designed, unlike dogs, to use protein as their main energy source rather than carbs. Dogs are actually omnivores, not strict carnivores like cats. The excessive carbohydrate in dry cat food is converted to fat first rather than a primary energy source. Not an ideal situation for a cat that lives indoors without enough exercise.

I am not recommending that we suddenly let our cats outdoors to hunt and get more exercise. There are too many dangers outdoors and we don’t want our cats killing songbirds if they are hunters. If, however your own cat is obese, you may consider converting to the “Catkins” diet. This involves a gradual reduction in dry food and ultimately feeding one adult cat a six-ounce can of canned food spread throughout the day. The re-

sulting diet will be closer to that juicy rat a cat would eat out in the barn, high in protein and moisture and low in carbohydrates. Time for me to pull that cantaloupe out of Ghost’s mouth and open that stinky can of food. His ancestors would be proud.

ello everyone! March is Texas History Month as declared by the Texas Legislature in 1953. After a little digging, I found some very interesting Fun Facts that happened in March in the city of Galveston. Who Knew? MARCH 1928 - TEXAS MADE NAILS Galveston got its first business that made its own nails and wire. It was called Texas Nail & Wire Mfg. Co.

MARCH 12, 1920 - GALVESTON LONGSHOREMEN’S STRIKE A dramatic confrontation between organized labor and open-shop forces began in Galveston on March 12, 1920. It was a National walkout. The confrontation resulted in a clear victory for open-shop advocates and resulted in the enactment of an open-port law by the Texas legislature. Fun Fact: It continues today. MARCH 23RD - SPOOKY VISITORS Two instances of “flying saucers “were seen over the mainland.

Jerry Walker, an employee of the Texas City Son, said he saw the flying saucers at 9 PM. He saw “a round aluminum object flying in a bumblebee fashion “. Another sighting was reported at 6:45 AM. MARCH 31, 1878 - FAMOUS PEOPLE This is the day when John Arthur Johnson, an American boxer, was born. He was nicknamed the “Galveston Giant”. Fun Fact: He is the first African American world heavyweight boxing champion (1908–1915).

his month, we have way more than just a Pet Peeve. What we have is TOTAL OUTRAGE!

In February, millions of Texans suffered horribly for days, some even dying, because of a lack of power in our homes. We can land a helicopter on Mars, but we can’t keep the electricity turned on for our citizens’ residences and businesses. The culprit for this disaster is the Electric Reliability Council of Texas - (ERCOT). It wasn’t like ERCOT didn’t have enough advance warning to be prepared. Texas A & M University meteorology professor Don Conlee said that the forecasting of our bad weather, both private and public, was “probably the best I have seen in my meteorological career”. Government and private meteorologists saw it coming, some nearly three weeks in advance.

Do we like it when our family, friends, and neighbors suffer tremendously because of the incompetence of people that really don’t seem to care about any of us?

NO! WE DON’T LIKE THAT! We need our Texas legislators to be in charge and take the proper steps in order to make sure this never happens again in Texas. Heads need to roll and the people at fault need to be held totally accountable. Let’s all join in and make sure that the politicians we voted for do what we hired them to do, protect us and serve the publics’ best interests.

ERCOT obviously has a very poor institutional memory. In fact, their memory appears to be less than 10 years because this happened in 2011 and there was a comprehensive SET OF RECOMMENDATIONS on how this might be avoided in the future. This set of recommendations were never acted on and totally ignored. Now we are seeing that many board members of ERCOT have resigned. All of them live outside of Texas. These clowns should be held personally responsible for the harm they have done to our wonderful citizens. It’s going to be months before some of us recover from this disaster.

The Merits of Exfoliation

Let’s cut to the chase. Would you rather run your fingers over a smooth silk pillow or across a burlap sack? Exfoliate!

Hit the Hay or Have the Havoc

I’m not an expert in sleep but I am an expert in lack of sleep, at least I was. Our second child, born 12 years after our first child, was a non-sleeper from birth up to one month before he turned four…years…not months! He would go to sleep, just not stay asleep all night. Consequently, for 47 months I was up and down several times a night. Yes, the father of the child was right there every night, but curiously he “didn’t hear” our son wake and call for us. I can attest to the mayhem lack of sleep has on a body and mind. I learned first-hand why good sleep is crucial to us all. So, what is the science behind sleep? As soon as you begin your day, your body is already preparing for sleep. While you are awake, your body produces a chemical called adenosine which consistently accumulates throughout the day and eventually causes the sleepiness signaling that you’re ready for bed. Your sleep and its daily relationship with wakefulness are controlled by two systems: your biological clock (or circadian rhythm) and your sleep drive. Your circadian rhythm is the biochemical cycle that repeats roughly every 24 hours and governs sleep, wake time, hunger, body temperature, hormone release, and other subtle rhythms that mesh with the 24-hour day. Your sleep drive (the need for sleep) dictates the amount and degree of sleep you need based on how long you’ve been awake. Think of your sleep drive like hunger; it builds throughout the day until you get the rest you need. As natural light disappears in the evening, the body will release melatonin, a hormone that

induces drowsiness. When the sun rises in the morning, the body will release the hormone known as cortisol that promotes energy and alertness. While you’re asleep, your body is hard at work, restoring energy, repairing cells, and releasing essential hormones. Sleep serves as the ultimate time to heal and recover so you can take on the next day feeling rejuvenated and sharp. According to sleep researchers, a night’s sleep is divided into five continually shifting stages, defined by types of brain waves that reflect either lighter or deeper sleep. Toward morning, there is an increase in rapid eye movement, or REM sleep, when the muscles are relaxed and dreaming occurs, and recent memories may be consolidated in the brain. The experts say that hitting a snooze alarm over and over again to wake up is not the best way to feel rested. This on and off again effect of dozing and waking causes shifts in the brain-wave patterns. Sleep-deprived snooze-button addicts are likely to shorten their quota of REM sleep, impairing their mental functioning during the day. A lack of sleep at night can make you cranky the next day. And over time, skimping on sleep can mess up more than just your morning disposition. Studies show getting quality sleep on a regular basis can help improve all sorts of issues: a sharper brain, a better mood, a healthier heart, improved concentration, increased ability to refocus, improved decision-making, decreased error-making, better physical performance, steadier blood sugar level9, enhanced immune response, weight control, increased productivity, and improved memory.

Not getting enough sleep is just plain dangerous! According to a study from the AAA Foundation for Traffic Safety, you’re twice as likely to get in a car accident when you’re functioning on six to seven hours of sleep compared to if you get a full seven to nine hours. Sleep less than five hours and your chances of a crash quadruple! Your reaction time slows way down when your brain isn’t fully rested. These statistics are cause enough to get me to hop into my PJs and get the sleep my body needs! Sleep needs vary, but on average, regularly sleeping more than nine hours a night may do more harm than good. Research found that people who slept longer had more calcium buildup in their heart arteries and less flexible leg arteries, too. Your best bet is to shoot for seven to nine hours of slumber each night for peak health benefits. The bottom line: Sleep is good. And necessary. Need some help counting sheep? Create a nighttime routine to get your mind and body relaxed, maybe try meditating. Maintain comfortable temperature settings and low light levels in your bedroom. Make sure you have a comfortable sleep environment – including your mattress, pillows, and sheets. Abstain from caffeine, alcohol, and large meals in the hours leading up to bedtime. Refrain from using tobacco at any time of day or night. Exercise during the day; this can help you wind down in the evening and prepare for sleep. Oh, and stop looking at your phone or tablet — those social media alerts will all be there in the morning. Sweet dreams!

“Benno’s on the Beach”

o mmanding a prime location on Galveston’s renowned seawall, Benno’s has been serving up fresh Gulf of Mexico seafood since 1983. Multiple generations of islanders and visitors alike make a regular trek to this nondescript popular island restaurant to enjoy their delicious seafood. However, this restaurant’s roots begin much earlier than 1983. Galveston Native Benno Deltz started his culinary career working for the legendary Mike Gaido at his namesake restaurant. Benno and his childhood friend Wayne Gaido learned their trade well under the strict tutelage of the senior Gaido. A stickler for detail, Mr. Gaido’s reputation for excellence remains an island legend. Filled with youthful vigor, Wayne and Benno launched their first venture - a failing drive-in restaurant they renamed Wayne’s. After that early failure, they returned to Gaido’s where Benno managed the front dining room for almost twenty years before taking a lease on another failed Seawall

In his weekly copyrighted column for the Galveston County Daily News, Galveston native, author, and historian William S. Cherry related a story about how an unlikely encounter and an unconventional event saved the fledgling restaurant. It is a story uniquely Galveston and heartwarming. Here, slightly edited, is his story: “After a few months, Benno was out of money and failure was definitely ready to deal him the final blow. By chance, a prominent Galveston businessman walked in with his accountant to have lunch. It was 1983. “ How ya doin’?” The man asked before lunch. “I’m out of money and if something doesn’t happen quickly, I’m going to have to shut the doors,” Benno found himself admitting in a barely audible whisper, saying it for the first time, even to himself. The man and the accountant had a big lunch of fried shrimp and oysters, seasoned just right. Then the man and the accountant wished Benno well and left. Within the hour the man called. “Benno,” he said, there is $50,000 waiting for you at the bank. Go pick it up. It comes with only one string. If you make it, I want my money back. If you don’t, you won’t owe me a dime, and you won’t ever have to worry about hearing about it from me again.” And the rest, as they say, is history. That businessman was the late Rai Kelso. Another island legend. Today Benno’s is a thriving landmark with its busy restaurant and a large and thriving catering operation. Benno has retired and turned the operation over to his son, Tracy, who carries on the family tradition of excellence and community service. Long known for their generosity, Benno’s has contributed countless

Benno’s Cajun Seafood Restaurant meals over the past year to assist neighbors disrupted by COVID and adverse weather. Their menu remains firmly in the Cajun seafood camp. A little heavy on the deep fryer for some, there are plenty of grilled, blackened, and boiled options along with gumbo, etouffee, and jambalaya. There is a hamburger, chicken finger, and muffuletta option for those that prefer land-based protein, but this does not pretend to be anything other than a Cajun seafood restaurant - and a darned good one. Prices are reasonable and portions are large so come hungry. A very casual beachfront vibe blends effortlessly with a business lunch crowd with their more conservative attire. Counter service is the model here and sometimes the line to place your order can be long. However, it moves quickly and is soon forgotten over a platter of steaming crawfish, a mound of perfectly fried shrimp, or a bowl of hearty gumbo, and a frosty beer. A large patio is a perfect place to enjoy some sun and watch the beach crowd. Their dog-friendly policy is appreciated by many. Dine-in or takeout. Call ahead and your order will be ready. Now you can’t have St Patrick’s day without corn beef and cabbage. This is an excellent twist for serving your cabbage.

EASY Baked Cabbage Steaks Ingredients

Dirty Pickle Martini This cocktail is a different diversion of the Dirty Martini. You use pickle juice instead of olive juice. You will love it!

Directions • 2 ounces of dry gin • ¼ ounce of dry vermouth • ½ ounce of pickle juice • 1 slice of dill pickle for garnish Ingredients Put ice in a mixing glass. Then add the gin, vermouth, and pickle juice. Stir for one minute (you can shake it if that is your preference). Strain the liquid into a martini glass and then top it off with the slice of pickle.

• One large head of cabbage Directions Wash and remove the outer leaves of the cabbage. Cut the cabbage 1 to 1 ½ inch thick slices. Brush the slices with olive oil on both sides. Then sprinkle with garlic salt, and pepper. Spray a foil lined baking sheet and place the slices on the sheet. Preheat your oven to 400 degrees. Bake for 30 to 40 minutes. Folks, serve this with your corn beef and everyone will be happy. Stay safe and enjoy nature as it greens up outside.

Gumbo, crawfish boils, boudin, steaming pots of étouffée, the rhythmic blend of fiddle and accordion of Cajun music: This column highlights many of the similarities in cuisine, music, lifestyle and good folks that keep the roots of Cajun culture alive right here on the Island.

with his mother in the 1930s and began to play in the dancehalls and taverns of southeast Texas as a young man. In 1946, he had a big regional hit with “Jole Blon”, a song first recorded by the Breaux family in Louisiana in 1929. Choates’ rewritten version of the song was an even bigger hit in 1947 for Moon (Aubrey Wilson) Mullican, another Texan who was called “the king of hillbilly piano players,” born in Polk County but performed on both sides of the Sabine.

The fiddle was important to the music from the beginning, and later the accordion was picked up from their German neighbors in south Louisiana. In the 1930s, the strings came to the fore again, as Cajun bands were influenced by the Western swing style so popular in Texas at the time. The accordion reemerged as an important part of Cajun music in the 1960s as younger people began to return to the roots of the music. There has always been a rapport between Cajun and Texas music. In a cemetery in Port Arthur, written on a tombstone in French and English is, Harry Choates “Parrain De La Musique Cajun — The Godfather of Cajun Music.” It is the grave of Harry Choates, who in his lifetime was called “the fiddle king of Cajun swing.” Born in Louisiana in 1922, Choates came to Port Arthur 48

The real breakthrough for Cajun music into popular and country music came not from a Cajun, but from an Alabama singer: Hank Williams Sr. His 1952 hit, “Jambalaya”, was based on the melody of a 1946 Cajun hit, “Grand Texas” by Chuck Hank Williams Sr. Guillory. Guillory’s lyric, “tu m’as quitté pour t’en aller au Grand Texas,” is about a departure from Louisiana for “Big Texas.” Hank Williams’ lyrics were about “me cher amio” Yvonne. Some music historians say, Moon Mullican, who was on the Grand Ole Opry at the same time as Hank Williams, co-wrote the lyrics. When singer Jo Stafford covered “Jambalaya” in 1952, Cajun music was introduced to popular American culture. As Cajun music evolved throughout the 20th century, drums, electric bass, and electric guitars were included. The triangle, long used to keep tempo, has sometimes been replaced with the frottoir or rub-board, which is more closely identified with the fast-tempoed, syncopated back-


beat Creole folk music known as Zydeco. Clifton Chenier, a legend today in Zydeco music, wanted to replace the washboard in his band with a sheet of ribbed metal that Clifton Chenier did not have the wooden frame along the outside. From his drawing, fellow worker, Willie Landry, a Cajun, and fellow Louisiana native, made the first frottoir used solely as a musical instrument. Another influence on Texas dance halls and songwriters came from a special fusion called “swamp pop”, which reached popularity in the late 1950s and early 1960s. This blend of Cajun, Creole, rockabilly, rhythm & blues and rock ’n’ roll resulted in such hits as “Sea of Love”, the 1958 hit by Phil Phillips, a Creole artist from Lake Charles. Swamp Pop song “I’m Leaving It Up to You,” was a

hit for Dale and Grace (Grace Broussard of Ascension Parish). Huey P. Meaux, whose family, like many Cajuns, had moved across the Sabine River, produced the record along with many other Swamp Pop hits. In 1975, San Benito’s own Tex-Mex rocker Freddy Fender sought out Meaux, who convinced Fender to record “Before the Next Freddy Fender Teardrop Falls.” They followed that hit with a remake of “Wasted Days and Wasted Nights,” which, although first recorded in 1959 in the Rio Grande Valley, is still included in swamp pop collections today. On the stages of Texas today, you can hear variations of Swamp Pop, Zydeco and many of the signature sounds that make up the “Cajun music” style with a lot of Texas style in the forefront. The diversity and personal touches put on this great genre is what makes this area astounding in terms of sights and sounds.

Perhaps the most famous of which is The Mousetrap, which premiered in London’s West End in 1952 made theatrical history, staging its 27,500th performance in September 2018. The play closed in March 2020, when all UK theatres shut due to the coronavirus pandemic. A Murder Is Announced, originally published as a novel in 1950, was adapted for the stage in 1977 by Leslie Darbon first presented that year at the Theatre Royal, Brighton. In Chipping Cleghorn, a little town in England, where everyone reads the local newspaper, a murder is announced. An advertisement reads: A murder is announced and will take place on Friday, October 29th, at Little Paddocks, at 6:30 p.m.... All the residents of the town expect that it is a murder mystery party at Letitia Blacklock’s house, as she lives at Little Paddocks. Little do they know that they’ll all show up for it, one by one, only to have the power go out and have shots fired. None of the guests at the party die though; it’s the blonde man with a gun that is found in the doorway that has been murdered. Everyone assumes it’s suicide, but the police and a visiting Miss Marple have a different idea. With this setup, we are off on a whirlwind ride of clues, red herrings, secret identities, here-to-fore unknown relationships and mysterious maladies that unquestionably baffle the local constabulary but certainly not Miss Marple! As you may be tempted to pick up either the play or novel for a deliciously devious read, I won’t reveal the denouement but rather offer a clue

We were delighted to attend Clear Creek Community Theatre’s closing matinee performance in their new [temporary] venue – Bayou Theatre at the University of Houston Clear Lake. The cavernous auditorium is breathtakingly beautiful and, while I was a bit concerned about audibility upon entering it, the stage was unobtrusively well-miked so we could hear every word. Each member of the ensemble cast portrayed their stock ‘veddy-brittish’ characters well, most notably Barbara Windburn as the peskliy busy-bodyish Miss Marple and Alane Johnson as Little Paddock’s bedraggled hostess Letitia Blacklock. Teresa McLemore was an absolute hoot as Mitzi the cook/maid of undetermined nationality providing just enough comic relief without going overboard. Aprille Meek’s direction kept the action moving well on the properly appointed [albeit a bit vast for an English countryside cottage] set and costumes were spot-on period 50s. One technical note: There were a several scene changes signaled by the lowering and raising of the curtain [What a sight for sore eyes!] accompanied by dead silence. How about some incidental music? It was there for pre-show and intermission….

Described by TheatreMania as “A raucous good time! A

musical full of joy, a little bit of heartbreak and lots of hilarity. This tribute to life by the roadside, takes place on North Carolina’s Highway 57. Somewhere between Frog Level and Smyrna stands a rest stop. The four hard-working fellas at the gas station have been known to do some auto repairs, but only when aided by some great tunes and a few beers. Next door the Cupp sisters offer up their famous home cooking and gift for song. A celebration of life, love, Dolly Parton, and catfish!” – it was given a lively and enthusiasm-in-abundance rendering at COM Theatre recently. Let me start off this review with a disclaimer – this is NOT my favorite style of musical. You might call it more of a musical ‘revue’ - the show is basically a series of standalone songs rather than a conventional story tied together with music. The book for this musical is very thin and really only exists to get to the next song. Granted, it is one of the better precursors to the now-prevalent ‘juke-box’ musicals [Mama Mia! Disaster!] and its influence on them is obvious. It has no story to speak of, exhibits no character development, possesses no real depth, and never bothers to even have any actual pump or diner customers save on the phone. It exists simply to entertain. There’s nothing wrong with that and COM Theatre’s production certainly did that in abundance! To single out one of the performers in this tightly-bound ensemble is impossible – each was given a showcase ‘turn’ and blended effortlessly in the group numbers. One cannot help but be caught up in the infectious enthusiasm of these talented young performers – each and every one a COM Theatre major. Kudos also to Elizabeth Brown’s fun choreography and Curt Meyer’s always awesome set and Amanda Bezemek’s colorful costumes.

After 50 years of business in the Bay Area and with the changing times, I have made the difficult decision to not reopen Franca’s Real Italian Restaurant and Dinner Theatre. I was in the dark and cold like most islanders, so I feel your frustrations. We will come out stronger as we always do after a calamity. Most of you know that your Bum enjoys nostalgia. Most folks can look at an image from the past and recall exactly where they were, what they were doing, and how they felt at that moment. I remember things from my past all the time, but its amplified when I see certain images that are now labeled “vintage”. I had an idea the other day while I was out riding around in my ol’ scarab. It’s not like me to have many thoughts in a day, but here is what had me thinking...I wondered if I looked at a few images that are now labeled “vintage”, would I get the “oh man, I remember that” feeling. Boy, that question was answered 3-fold!

Break Time for 007 The original James Bond, Sean Connery (RIP), and the original “Bond Girl”, Ursula Andress (now 84 yrs. old), take a break during the filming of Dr. No, the first film in the historic spy franchise. On a budget of $1.1 million, this film grossed a whopping $59.5 million at the box office. I wonder if they knew this would be one of the most successful franchises in film history while they were breaking in the surf.

The Jackson 5 This 1972 photo shows the youngest Jackson5 members. From left to right are Randy Jackson, Janet Jackson, and Michael Jackson. M.J would have been 14 at the time the picture was taken. The youngsters’ first hit, “I Want You Back,” topped the Billboard Hot 100 chart in ‘70. Between ‘69 and ‘72, the group released a whopping six studio albums very quickly, which may explain M.J’s exhausted appearance.

Flight Attendants One of the most glamorous jobs a woman could have back in the 1950s, 60s, and 70s was being a flight attendant (stewardess back then). Widespread discrimination and the exploitation of female sexuality plagued the profession resulting in multiple lawsuits over the years. Airlines required the attendants to wear cleavage revealing tops and super short miniskirts as the uniforms. Strict rules also applied to the girls regarding age (under 35), weight, and martial status (must remain single).

Early ‘Weekend Update’ Bill Murray! One of your Bums all time favorites! The young comedian became a fan favorite on the popular late-night sketch comedy show Saturday Night Live. Murray was one of the first comedians to tackle the mainstay “Weekend Update” sketch. It’s still one of the most popular segments on SNL, thanks in large part to Murray’s hilarious deadpan delivery. I’m sure most folks can riddle off multiple Bill Murray movies off the top of their head without giving it much thought! What a legend indeed!

Pat Priest, Marilyn Munster Originally played by Beverley Owen in season one, Pat Priest took over the role of Marilyn Munster after episode 13 on the CBS sitcom The Munsters. Priest became wildly popular for her portrayal, thanks to her adorable blonde bob. The running gag of the show was that Marilyn was the “plain” or “ugly” Munster family member, compared to her ghoulish counterparts. Priest is pictured here in a photoshoot for Playboy, posing with the “Munster Mobile.” The photo became a popular pin-up image for men all across the country.


Barbara Bouchet, circa 1960 Out of all the extraordinary Bond girls, you may have forgotten about young Barbara Bouchet (now 77), who played Moneypenny in 1967’s Casino Royale. Bouchet is pictured here in 1960 at just 17 years old, seven years before her turn as a Bond girl and four years before her first major film role in 1964. The actress, born in Czechoslovakia, would end up having an illustrious film career spanning more than 50 years and nearly 100 films.

Behind the Scenes on ‘The Cannonball Run’ Burt Reynolds, Farrah Fawcett, Dean Martin, Dom DeLuise, Sammy Davis Jr., Adrienne Barbeau, Terry Bradshaw, and Jackie Chan; All favorites of your Bum. Released in 1981, star-studded Cannonball Run was a $100 million box office success (not too shabby for an $18 million budget) even after getting hammered by many critics. Here, DeLuise cracks up Reynolds, Fawcett, and the rest of the cast with his antics behind the scenes.

Cindy Morgan in ‘Caddyshack’ Any list covering “comedy classics” would certainly include 1980s Caddyshack, starring Chevy Chase and Bill Murray (one of his most famous roles). The film’s $6 million budget turned into a $38 million box office draw. Few fans will ever forget (I wont) Cindy Morgan as Lacey Underall, the promiscuous niece of Judge Smails. Morgan walking through the golf course in her tight golf polo, and the swimming pool scene, are two of the most memorable scenes of the film.

‘Ohhhhhh Yeah!’ Your Bum is a huge fan of wrestling, so this a favorite. This picture shows host Regis Philbin running into WWF’s Champion “Macho Man” Randy Savage (look at that giant championship belt!) and his then wife & manager, “Miss Elizabeth”, during a taping of The Morning Show. Macho Man soon becomes a legendary wrestling performer and spokesperson for Slim Jim, turning the phrase “Snap into a Slim Jim” into a universal tagline. Savage passed away from cardiovascular disease in 2011.

Staring Contest Oh!! Lynda Carter! Still best known for her role as Wonder Woman, the show was a smash success for the actress. But before T.V., Carter (now 69) got her start as a model. The Phoenix, Arizona native gained national attention after winning Miss World USA in 1972 and went on to be a runner-up in the international competition later that year. Carter returned to her modeling roots for this photoshoot in Los Angeles in 1985. This iconic swimming pool shot is still replicated today.

B A I T F I S H TA K E S I T O N T H E C H I N

G

etting your baitfish to take it on the chin, so to speak, is just another rigging method that will increase your chances of hooking up on one of our Texas offshore favorites...red snapper. This is a bait combination you’re really going to like — it’s simple and it works. I started using these baits together years ago, I don’t recall exactly when I came up with it or saw it for the first time. Spending a lot of time at the rail exposes you to varied methods and ideas; spinoffs are inevitable; this fishing method is probably one of them. The bait combination difference here is the part of the squid added to a baitfish, and where it’s placed. As it’s shown in the illustration, a head-hooked sardine has a squid head, with the tentacles still attached, on the hook bend below the sardine’s chin. Using a Daiichi D84Z Circle Chunk Light hook in size 7/0, carefully run the hook point between the eyes of the squid head, not through them. After sliding the head around the hook bend a bit, hook the baitfish through the bottom of its head and out the top. See the illustration. A “J” type hook such as the Mustad Ultra-Point 10827 or 9 BLN in size 9/0 to 11/0 will also work well. The squid head, with its tentacles, not only adds scent, but motion to your sardine presentation. The tentacles’ movement gives a living, breathing look to your dead baitfish. Eyes are an attractant, having them exposed, from the side, is the reason the squid head is on the hook between its eyes, not through

them. The large eye and motion of the tentacles are the major added strike generators the squid head brings to the combination. The scent it has also helps, but I think it’s a third-place contributor. The whiteness of the squid is also an added attractant because white represents a vulnerable fish’s white or light underbelly. This translates into being out of the ordinary — hurt, sick or distressed, and an easy meal. The below the chin squid head also adds its appeal to a head-hooked live bait fish. Fish this bait combination as you would a sardine or other baitfish, freelined or Carolina rigged. It should be weighted just enough to slowly get it at the same level in the water column as your target species. After the cast and while this combo rig is on the sink, I fish it with my rod tip pointed directly at my line’s entry point into the water. When using a circle hook, at the bite I let the line come tight, then load the rod; most likely the “C” hook is set, and the tug-a-war is on. When a “J” type hook is used, a harder, faster sweep of the rod tip may be necessary to set the hook. Remember, try to aggressively set a circle hook and you will most likely just reel in a “ghost” of a fish. The baitfish and squid head will “mask” the gap between the shank and point somewhat on a circle hook, but the soft squid head readily compresses at the strike. I haven’t had a problem hooking up when using it on a red snapper, kingfish, ling and dolphin, etc., over the years. Sardines have their plus points when being fished, such as a lot of silver flash and a relatively soft body mass that somewhat aids in hookups. Their shortcoming is when they thaw and come up to the air temperature of a summer day offshore. At that point, they are very mushy and hard to keep on a hook. Frozen ones should be thawed in a shaded area; don’t hasten their thaw by spraying them with water. This thaws them unevenly and washes out some of their scent. I usually take a 5 lb. Box and put it in a 2-gallon Zip-


loc bag; sardines only - no box or plastic liner bag. I take this bag of frozen sardines, bang it on the deck gently (yes, you can do that), and this separates the sardines from each other. I let them thaw somewhat in a shaded corner and ice them as needed to keep their firmness to a fish-able level. Squid on the chin of your baitfish may be the difference a picky predator is looking for; don’t forget that a critical element is the squid eyes placement. Even if hooked through the eyes instead of between them, the tentacles and the scent will do their job...right is better, go between the eyes with your hook.

Give this combination a look in the water at boat side, about 2 ft. down—a twitch, pull, fall motion will show you something of what your hoped-for target, red snapper or whatever, will see. You’ll be impressed too, it’s an edge that could turn a “looker” into a “biter”; give it a try, it works for me and it will-work for you...l almost guarantee it!

- lime juice - 1 tsp (for avocado spread)

Crispy Pork Belly Tostadas Directions For this recipe, I used a Camp Chef SG grill that has a “slide” option to expose the flames for additional heat, but any pellet or charcoal grill can be used. Wash and dry the pork belly leaving it in one piece. Scar the fat side to mark in four equal sections for reference after grilling. Spray duck fat on the pork belly fat side and season with only sea salt. Flip then spray duck fat on the meat side and season with a base layer of TSS Jalapeno Garlic Salt, a light layer of cumin, and then top with fresh ground mixed peppercorns to taste. i Jan and Dean. I have had a problem with my wife since we were married. I’ll be blunt. She is a gossip, blabber mouth, busy body, or whatever you want to call it. We married young, so I thought she would grow out of this, but after 16 years, she is still going at it. In fact, I think she has gotten worse over the years. The big problem is that I can’t talk to her about anything privately. If I say something that should be kept between us, and is personal, all her friends know about it instantly, and she even puts it on social media!! If she hasn’t heard anything “juicy”, she will make up something. I have learned to live with the fact that I can’t discuss anything important with her and it’s getting old and has changed my feelings for her over the years. Well, my uncle came down with Covid, and now is in the hospital. He is a very private person and doesn’t want many people to know. I didn’t tell my wife because I knew it would be all over town, and media in a second. Well, through the gossip chain she found out! She was furious and wanted to know why I didn’t tell her. Well, I just came out and told her she is a blabbermouth! Now she won’t speak to me and has stayed with her sister since the argument. I don’t think I’m at fault at all. She is the one with the problem. What should I do? Disgusted Daryl

i Daryl, You have truly struck my last nerve with your situation. People that constantly post extremely personal things on social media and other places are horribly aggravating. The worst part of it is, they don’t stop with their own personal information. They also include their family’s personal situations, including their children. Children should most definitely be off-limits. Your wife seems like the type that needs an abundance of attention, empathy, and sympathy from people she probably doesn’t even know. Unfortunately, there seems to be no shortage of these kinds of people. There are thousands, probably millions, of people just like your wife. People like your wife do not care one bit about how their posts affect their loved ones and others. As long as they get “likes” and an outpouring of sympathy from friends and strangers daily, they are fine and happy. They only care about themselves. Put your foot down, Daryl! It’s way past time you put a stop to this horrid behavior. It not only affects you; it hurts others also. If your wife refuses or is simply not capable of changing, I will say it’s time to split and go your own ways. She can post that too..

i Daryl, I kind of don’t know what to say?! Other than I don’t know how you have put up with this all these years. Face it, I think your wife loves to gossip more than she loves you. I don’t know. But I do know that I don’t think she will change. You would have thought that she would have grown out of it, but she didn’t. She is addicted to gossip it seems. Just like a smoker or someone that drinks. You said that it has put a strain on your relationship. Do you want to save the marriage? Or do you want to move on? Ask her if she will go to counseling. PUTTING ON MORE BLANKETS

hat the heck is going on? Islanders are used to preparing for, and rebuilding after, hurricanes. But this past year, we have dealt with Covid, two close calls with major hurricanes, and now a deep freeze. This is causing a lot of grief for us who aren’t used to temperatures in the single digits and teens! We can handle one or two days, ok, but a week or more is unheard of this far south. So, what do you do when you are confronted with adversity? Do you complain? Point the blame on others, or do you find ways to adjust and deal with the hand that has been dealt? Here is my take on everything that has transpired this past year. If you are 50 plus years old, there is a good chance you grew up in a time of humble beginnings where you were either poor (not even knowing you were poor) or of little to modest means. Some of you may have been better off, but you understood how the world worked and what your parents taught you about wars, the depression, medical breakthroughs, and how we celebrate those things as Americans.

They have access to social media, cheap clothes, streaming videos, music at a touch, every type of food delivery like WaitR and Door-Dash, Uber, Amazon one stop shop and delivery and Alexa. Let’s take this opportunity of COVID19, 2 monster hurricanes, and this deep freeze to teach our children lessons that America was researching and discovering the benefits they are enjoying today. Such as advances in medicine, electricity, communication, sanitation, clean water, and food production. America has had a big hand in many of these advancements and their improvements. Let’s appreciate the USA and all of the accomplishments we have pioneered through the decades. Stay safe my friends and if it’s cold, add another blanket, we’ll get through this...we always do!

Over the past 80 years we have had warlike conflicts in Korea, Vietnam, and the Gulf Regions of Iraq and Afghanistan. We had the culture wars of the 60’s, 70’s and 80’s. We’ve had the War on Drugs since the 60’s. Today we have the Social Justice Wars on early Americans, our Founding Fathers, and most recently the Political Wars between Conservatives and Liberals, all while enjoying the greatest prosperity of any country on earth. For many of us Island Old Timers, we have experiences with the early years and are adjusting to the current events of today. I can’t speak for everyone, but I think I can speak for a majority of Islanders. We deal with all these events by rolling up our sleeves, working the problem out, keeping the faith, and of course piling on

Composting on a Small Scale

W

e’ve talked about composting before, but compost is so vital to healthy plants and beautiful gardens that we are going to talk about itagain.

This time, however, we are going to talk about composting on a small scale. Many of us in Galveston do not have a large yard, if any, so a large composting bin or pile will not work. At my home on Winnie Street, there is no soil to dig in, it is all concrete. So, I have container gardens and a container compost bin.

dried vegetation that is high in carbon. What I use for my container is a large plastic pot that housed an ornamental tree from the nursery. When I first began the compost bin, I layered leaves 2-3 inches thick with kitchen scraps about 1 inch thick then topped with another layer of brown matter. You want a lot more brown matter than green matter. I wet this down and left it alone. In a few days, I stirred it. If it got dry, I watered it. My pot does have a few holes in the bottom so that it drains. Given time, the ingredients break down and look like black soil. There are a lot of myths about compost. If your compost smells, you are doing it wrong. Add more dry brown matter to the pile to correct the smell. Rodents are not attracted to a compost pile unless you are adding meat scraps or cooked food- which you shouldn’t do.

The average kitchen produces plenty of green matter for a compost pile. Green matter is fresh vegetation that is high in nitrogen. Fallen leaves and old newspaper or boxes provide plenty of brown matter. If you are using paper or cardboard, the smaller you tear or shred it, the better. Volunteering at the Ronald House brings a sense of satisfaction and fulfillment to those who are willing to give a few hours to perform minor but essential tasks needed in the every-day function of a home as large as this one is. Twenty bedrooms, nearly all occupied at the same time, some families staying for only a day or two while others come for much longer visits up to a month or more in some cases. If you have special skills, training, hobbies or speak any foreign languages, please come share with us…can you lead a group in singing along with your musical talent…can you teach the children to speak a few words or sing a song in your native or learned language…do you know a special dance (think “chicken dance” or the “cha-cha-cha” or “folklorico”) all children love to sing and dance. Duties that need to be done on a daily basis include acting as a receptionist and answering phone calls, preparation of rooms for incoming families, helping in the business office, cooking and baking, playing Bingo and hosting family activities as well as providing “arts and crafts” sessions. Host a party! Halloween, Christmas, Valentines, Easter, Birthdays…etc. We are always seeking friendly, energetic and creative volunteers…let that be you!
