PIZZA TRENDS

A look at what’s shaping menus in 2026 Pizza has long been one of the most versatile and popular menu items in foodservice. But as consumer expectations evolve, today’s guests are looking for more than just convenience. Across Canada, operators are seeing growing demand for premium ingredients, bold flavour combinations, customizable options, and elevated dining experiences that transform pizza from a simple comfort food into a destination menu item. Kevin Wong, Executive Chef at Foodbuy Canada, believes operators who understand these changing preferences will be best positioned to drive both guest satisfaction and profitability. To help operators strengthen their pizza programs, Foodbuy Canada recently launched the Foodbuy Pizza Solutions Directory, a resource showcasing supplier programs across key pizza categories, from dough and cheese to sauces, proteins, equipment, and packaging. Many of the trends Foodbuy is seeing are echoed by industry operators like Peter Stappas, Owner and Operator of Pizza Vimont and Prôtos Frozen Foods. A family business with decades of history, Pizza Vimont has built its reputation on authentic Quebec-style pizza, while Prôtos Frozen Foods manufactures federally licensed frozen pizzas for retail, foodservice, and private-label customers across Canada. Having experience in both restaurant operations and largescale production gives Stappas a unique perspective on where the category is heading.

Quality Takes Centre Stage

Consumers are increasingly willing to pay more for pizza that delivers on flavour, craftsmanship, and ingredient quality. “Guests are looking for better-quality pizzas rather than cheap and cheerful options,” says Wong. “They’re seeking out slow-fermented doughs, sourdough crusts, cleaner ingredient labels, and fresher toppings. People are willing to pay a premium when they feel they’re getting a superior product.” Stappas has seen a similar shift in consumer behaviour. “Consumers are becoming more valueconscious, but they’re still willing to pay for quality,” he says. “Whether it’s in a restaurant or a frozen product, customers want a premium experience.” For Pizza Vimont and Prôtos, that means focusing on consistency, generous toppings, quality ingredients, and authentic Quebec-style pizza that delivers the same great experience every time.

Sourdough Continues to Rise

One of the most notable developments in the category is the growing popularity of sourdough and long-fermented doughs. Beyond delivering a distinctive flavour profile, these doughs offer texture, complexity, and craftsmanship that resonate with today’s consumers. “Sourdough has become a major differentiator,” says Wong. “Customers are paying attention to the quality of the crust and dough in ways they didn’t before.” Stappas believes specialty doughs will

continue to grow in popularity, particularly as consumers look for restaurant-quality products they can enjoy at home or in foodservice settings. “I believe we’ll continue to see growth in premium frozen pizza, specialty doughs, and convenient formats that deliver a restaurant-quality experience,” he says.

Global Flavours and Premium Toppings

Consumers are increasingly seeking adventurous flavour combinations inspired by global cuisines. While traditional favourites remain popular, unique toppings are helping operators stand out in a crowded marketplace. Wong points to ingredients such as hot honey, chorizo, nduja, pickled vegetables, spicy peppers, paneer, pistachios, and figs as examples of flavours gaining traction. “Guests are looking for bold, Instagramworthy flavour combinations,” he explains. “They’re interested in trying something different and experiencing flavours they may not typically associate with pizza.” At the same time, Stappas notes that familiar premium toppings continue to perform well.

“We’re seeing growing demand for premium toppings, bold flavours, and higher-quality ingredients,” he says. “Customers want something special, but they also want great value.”

New Pizza Styles Gain Momentum

While Neapolitan pizza remains a menu favourite, other regional styles are attracting attention from consumers who are eager to try something new. “Detroit-style pizza and Tavern Cut pizza are becoming more popular,” says Wong. “Guests are exploring different formats and textures, which creates opportunities for operators to diversify their menus.” These emerging styles allow operators to introduce variety while still leveraging familiar ingredients and preparation methods.

Customization Remains Essential

Today’s consumers expect flexibility. Whether it’s choosing toppings, portion sizes, crust styles, or meal formats, customization has become a baseline expectation rather than a premium feature. “Customers want full customization,” Wong says. “They’re looking for a mix of classic options and premium add-ons that allow them to build a pizza that’s tailored to their preferences.” Stappas agrees. “It’s becoming increasingly important,” he says. “Customers want products that fit their tastes and lifestyles, whether that’s different toppings, portion sizes, or formats for retail and foodservice.” Offering personalization not only improves the guest experience but can also create opportunities to increase average cheque values.

Meeting Dietary Preferences As dietary needs continue to evolve, alternative crusts and plant-based ingredients are becoming increasingly important.

chickpea crusts, dairy-free cheeses, and plant-based proteins allow operators to appeal to a broader audience while ensuring guests with dietary restrictions can participate in the pizza experience. “Alternative crusts and plant-based options continue to gain popularity,” says Wong. “It’s about giving customers more choices without compromising on flavour.” Stappas notes that while these categories continue to grow, traditional pizza remains the dominant choice for most consumers. “We monitor these trends closely while focusing on delivering products that offer the best balance of quality, taste, and value.”

The Experience Matters

Perhaps the biggest trend shaping pizza in 2026 is the consumer’s desire for an elevated experience. “People aren’t necessarily looking for the cheapest pizza anymore,” says Wong. “They’re looking for pizza that’s worth it.” For Stappas, creating that experience comes down to consistency. “Great pizza starts with quality ingredients and consistency, but it goes beyond that,” he says. “Whether in a restaurant or from the freezer, customers want a product that looks great, tastes authentic, and delivers the same experience every time. That’s what builds loyalty.” As consumer expectations continue to evolve, pizza remains one of the most adaptable and profitable categories in foodservice. Operators who embrace quality, innovation, customization, and strategic purchasing will be wellpositioned to capitalize on the category’s continued growth. With evolving flavour preferences, new formats, premium ingredients, and increasing demand for convenience, one thing is clear: pizza isn’t just a menu staple anymore. It’s an experience.

WHAT’S YOUR STYLE? Not all pizzas are created equal. Discover the defining features of these iconic styles

CHICAGO DEEP DISH

Chicago-style pizza originated in Chicago, Illinois, in 1943 at Pizzeria Uno. It features a tall, buttery crust baked in a round high-sided steel pan — resembling a pie more than a traditional pizza. Layers are assembled in reverse order, with cheese placed directly on the dough, followed by toppings and a thick layer of chunky tomato sauce on top. Due to its depth and density, the pizza is cooked at a lower temperature for longer than traditional pizzas. This slow baking ensures that the crust cooks fully without burning.

6 | FOODBUY SOLUTIONS PIZZA

DETROIT STYLE

This rectangular, thick-crust pizza is known for its light, airy interior and iconic crispy, caramelized edges created by baking cheese directly against the sides of a deep steel pan. Traditionally topped with Wisconsin brick cheese and finished with stripes of tomato sauce layered on top of the cheese, Detroit-style pizza delivers a rich, cheesy bite with a satisfying crunch.

NEAPOLITAN STYLE

Neapolitan-style pizza originated in Naples, Italy, in the 18th and 19th centuries. Its uniqueness is its simplicity, strict traditional preparation methods, and incredibly hot cooking temperatures. Authentic Neapolitan pizza is hand-stretched, baked in a woodfired oven for just 60–90 seconds. The crust is thin in the middle, slightly chewy, and characterized by high, puffy edges with distinctive charred spots from the intense heat of the oven. The style is so important to Italian culture that the art of making Neapolitan pizza has been recognized by UNESCO as an Intangible Cultural Heritage.

NEW YORK STYLE

This is one of the most recognizable pizza styles in North America. The large, thin slices are soft and flexible enough to be folded in half while eating. It originated in New York City in the early 1900s. The crust is thin, slightly chewy, and crisp around the outer edge. Pizzas are typically large — often 18 to 24 inches in diameter. New York-style pizza is usually topped with tomato sauce and mozzarella cheese.

SICILIAN STYLE

Sicilian-style pizza originated in Sicily, Italy, and traces its roots to sfincione, a traditional pizza from the Palermo region. Sicilian pizza is known for its thick, focaccia-like dough and rectangular shape featuring a crisp bottom, airy interior, and hearty texture. Sicilian pizzas often feature a robust tomato sauce, herbs, and cheese, though topping arrangements can vary. It is typically baked in a well-oiled rectangular pan that creates a golden, crispy base.

AS A MATTER OF FACT... Slice into these 8 fascinating pizza facts

Canada’s first pizzeria was Pizzeria Napoletana, which opened in 1948 in Montreal, Que. Founded by Italian immigrants, it originally served as a cultural hub for the Italian community. They served two pie options — Margherita and marinara. The historic restaurant remains in operation today, having expanded its menu from the original two pie options.

Jeff Bezo’s two-pizza rule dictates that every internal team should be small enough that it can be fed with two pizzas. This equates to about 5-8 people. The core philosophy is that smaller teams are faster, more agile, and communicate much more effectively.

3

The official Guinness World Record for the highest pizza toss is held by American pizzaiolo Joe Carlucci, who tossed a 567 g (20 oz) ball of dough 6.52 meters (21 feet 5 inches) into the air, in April 2006.

Antica Pizzeria Port’Alba in Naples, Italy, opened in 1738 and is widely recognized as the world’s first pizzeria. It originally started as a humble stand for street vendors before evolving into a sit-down restaurant with tables and chairs in 1830. Today, it’s famous for its historic woodfired oven and traditional Neapolitan pies.

The pizza theorum: If two people share a pizza sliced into 8 pieces (or any multiple of 4 greater than 8), and take alternating slices, then they will each get an equal amount of pizza, irrespective of the central cutting point.

6

The World Pizza Games, held annually at the International Pizza Expo in Las Vegas, are Olympic‑style competitions for pizza makers. Events focus on speed, skill, and showmanship, not just cooking, and include: Freestyle Acrobatic Dough Tossing Fastest Dough Stretch Largest Dough Stretch Fastest Pizza Box Folding

The world’s most expensive pizza with a price tag of $12,000 US is the “Louis XIII” pizza created by Italian master pizza chef Renato Viola. This 20 cm pie boasts dough crafted from organic Arabian flour, aged for 72 hours, and dusted with Australian pink sea-salt from the Murray River. It’s topped with Italian buffalo mozzarella, three rare types of caviar, Norwegian lobster, and 24-karat gold flakes.

In 2001, Pizza Hut paid the Russian Space Agency approximately $1 million to deliver a 6” salami pizza to Russian cosmonaut Yuri Usachov on the International Space Station. This history-making pizza required some modifications: Extra seasoning: Because microgravity has a dampening effect on taste buds, the pizza was heavily seasoned with extra salt and spices. Salami instead of Pepperoni: Pepperoni does not have the necessary shelf life and would go mouldy during spaceflight, so salami was used instead. Vaccuum-packed: The pie was specifically formulated to remain fresh, vacuum-packed, and was heated in a small on-board oven before being eaten.

CUP & CHAR VS. FLAT PEPPERONI

A tale of two pepperonis Cup-and-char pepperoni and flat pepperoni may come from the same family, but they create very different pizza experiences. Cup-and-char pepperoni, often called oldworld pepperoni, curls upward during baking, forming small cups that trap flavorful oils. The edges become crispy and slightly charred, creating a bold flavor and distinctive texture. Flat pepperoni stays level on the pizza, providing even coverage and a more uniform bite.

What makes them different? The difference lies primarily in how the pepperoni is made. Cup-and-char pepperoni is typically produced in smaller diameters and natural casings, which contract during baking and cause the slices to curl. Flat pepperoni is generally larger and designed to remain flat throughout the cooking process. While flat pepperoni remains the classic choice for many pizzerias, cup-and-char pepperoni has surged in popularity thanks to its artisanal appearance, crispy texture, and concentrated flavor. Both styles offer the familiar smoky, savory taste consumers love, but each delivers a unique eating experience.
