NON PUNTIAMO SUI FAMOSI MA LI SCOPRIAMO Isabella Bossi Fedrigotti Presidente della Fondazione Masi
Tutti i premi di questo mondo – forse d’Italia in particolare – anche quelli più importanti, tendono a indulgere in una tentazione: di incoronare, cioè, persone già note. Un po’ perché è, in effetti, molto più facile e sbrigativo puntare su un nome famoso, uno di quelli che accontenta tutti, che non su un illustre sconosciuto, un po’, probabilmente, per una certa forma di insicurezza della giuria che non vorrebbe mai sentirsi dire: “Ma chi è questo che avete premiato?”, e un po’ perché se il vincitore è illustre c’è maggior probabilità che giornali (e tv) parlino dell’evento andando oltre le due righe nascoste in fondo alle pagine della cultura. Ciononostante la giuria del Premio Masi – che nella scorsa stagione ha felicemente festeggiato il trentesimo anniversario – pur avendo nel corso degli anni riunito nel suo albo d’oro numerosi famosissimi, personalità di spicco anche internazionale, ha tuttavia sempre tentato di mantenersi fedele al cammino più difficile, scegliendo in base al merito, indipendentemente dalla notorietà. In questo senso possiamo sentirci particolarmente soddisfatti delle ultime edizioni che hanno visto tra i vincitori per un verso grandissimi personaggi poco noti in Italia come, per esempio, lo scrittore ungherese Peter Esterhazy e il monsignore pado-

vano Luigi Mazzucato (forse più famoso in Africa che da noi, terra per la quale da moltissimi anni forma personale medico) e, per l’altro, giovani ancora non così conosciuti al grande pubblico eppure da tempo meritevolissimi di fama e di ribalta, come, per esempio, il matematico informatico padovano Massimo Marchiori oppure l’attore udinese Giuseppe Battiston. E, a proposito di questi due ultimi vincitori del nostro premio, ci piace pensare che il successo e la conseguente notorietà toccate loro in questo anno abbiano misteriosamente a che fare con noi e con il nostro appassionato lavoro di ricerca. Lavoro appassionato e puntiglioso ma, in fin dei conti, non così difficile: come abbiamo infatti ripetuto tante volte, semmai c’è abbondanza di personalità venete meritevoli e certamente non penuria. Quando la giuria si riunisce e ogni giurato illustra le sue proposte il problema è, infatti, sempre lo stesso: a meno di non moltiplicare i riconoscimenti, chi di tanta messe salvare e chi, invece, rimandare agli anni futuri? Mai, in altre parole, ci si trova nella necessità di “grattare il fondo del barile”. I candidati non mancano, si moltiplicano anzi, ed è già questo un non piccolo e felicissimo miracolo della terra veneta che noi della giuria regolarmente possiamo misurare con mano.

All the prizes in the world – perhaps in Italy most of all – even the most important ones, tend to indulge in the same temptation: to give their awards to people who are already famous. A bit because it is actually much easier and quicker to concentrate on a famous name, one of those everyone will be happy with, rather than an illustrious unknown, a bit because of a certain amount of insecurity in the jury, who never want to hear someone say, “But who is this person you’ve chosen?”, and a bit because if the winner really is famous then it is much more likely that the newspapers and the TV will give the event more coverage than the usual couple of lines hidden at the bottom of the culture section. Despite this, while the jury for the Masi Prize – which happily celebrated its thirtieth anniversary last year – has always been ready to include famous and internationally celebrated personalities on its roll of honour over the years, it has also nonetheless always tried to remain faithful to the more difficult process of choosing prize-winners according to their merit, independently of their fame at the present moment. In this respect we can feel particularly pleased with recent editions of the Prize, which have seen winners include include, on the one hand, eminent eminent personalities who were practically unknown in Italy, like the Hungarian writer Peter Esterhazy
and Monsignor Luigi Mazzucato from Padua (who is perhaps more famous in Africa, where he trained medical staff for many years, than with us), and, on the other hand, young people as yet unknown to the wider public though famous in their own fields, such as, for example, the IT specialist mathematician from Padua, Massimo Marchiori, or the actor from Udine, Giuseppe Battiston. Speaking of these latter two winners of our Prize, we like to think that their success and the fame that has consequently enveloped them this year is something that in some mysterious way is down to us and our enthusiastic research work. Our work is certainly enthusiastic and punctilious, but actually in the end it is not so difficult. As we have said many times, there is certainly no shortage of worthy winners from the Venetian regions. When the jury assembles and each member puts forward his choice the problem is, in fact, always the same: unless we increase the number of awards, who can we keep in the list and who can we put off to a future year? In other words, there is absolutely never any need to “scrape the barrel”. Worthy candidates are not lacking, in fact they keep on multiplying, and this is already one of the happiest and most significant miracles of the Venetian lands that we jury members can can testify to regularly.

«Munari, poliedrico designer contemporaneo e Premio Masi Civiltà Veneta nel 1999» «Munari, multi-faceted contemporary designer and Masi Civiltà Veneta Prize winner 1999» L’inoxidabile Cleto titola la rivista d’arte e cultura « Kyoss » presentando “una nuova collezione di oggetti in acciaio di Cleto Munari”, e parlando di “oggetti nuovi per stupire ancora. Acciai con decori legati al mondo del design e ispirati dalle linee di Carlo Scarpa, con reminiscenze di Hoffman e Loss. Dettagli barocchi ma minimalismo nei colori, per una leggerezza che accompagna ogni singolo oggetto”. Eccolo qui, Cleto Munari, anche lui inossidabile come i suoi acciai, la sua ultima creazione. O forse no? Difatti, elegante e quasi smilzo, come sempre, egli precisa: “Veramente quella degli acciai è sì la mia ultima creazione, ma sto già preparando altre cose. Se non faccio qualcosa, non mi diverto, e se non mi diverto non faccio niente di bello”. – E allora? “Adesso sto preparando, su invito del Ministero della cultura della Cina, e con la collaborazione delle università di architettura delle tre più grandi città cinesi, Shanghay, Pechino e Nanchino, una grande mostra dei vetri veneziani di Murano. Non si tratta soltanto dei vetri classici, quelli famosi in tutto il mondo ormai da secoli, ma anche di vetri di nuovo design, come quelli che faccio io proprio a Murano con il mio atelier del vetro soffiato. Così sono capo commessa di aziende che con me vanno in Cina a far vedere l’arte italiana del vetro. Poi, 4

If I don’t work, I don’t enjoy myself, and if I don’t enjoy myself, I can’t create anything of beauty”. – Tell us more. “Just now I am preparing a big exhibition on Murano glass from Venice, at the request of the Chinese Ministry of Culture and with the collaboration of the university architecture departments in the great cities of Shanghai, Beijing and Nanking. The exhibition shows not only the centuries old famous classic designs, but also the latest creations, including productions from my own hand-blown glass atelier in Murano. This is how I have become the prime contractor for a group of companies that are going with me to China to display the art of Ital-

Then I am putting together a collection of glass jewels that I am taking to show at an exhibition in Chicago in the autumn of this year, while I am also involved in an big exhibition of carpets at “Maison et objects” in Paris this September, for which I have involved not only designers, architects, engineers and artisan carpet makers, but also poets, writers, painters, and people from the cinema. Jokingly, I have called this group of artists « ten people in search of an author ». They include John Malkovich, who is considered the artistic heir of the great Laurence Olivier, but there’s also Laurence Ferlinghetti, now 92 years old, who was a friend of Che Guevara and who wrote to me from Los Angeles recently saying that we ought to do something together. Dario Fo e di Tonino Guerra, prematuramente scomparso, il quale dipinge farfalle che io ho riportato fedelmente nei tappeti a lui dedicati, e non per ultimo nel programma di quest’anno ho ancora una serie di mobili con Mimmo Paladino, e proprio adesso, in aprile, una mostra a Bruxelles da Pierre Bergé, compagno di Yves Saint-Laurent, tutta di mie opere, dai tavoli ai lampadari alla collezione « for house », con un mezzo migliaio di oggetti, tutti frutto degli ultimi tre anni di lavoro, che si concluderà con una grande asta”.

Also in the programme this year I have a series of furniture exhibitions with Mimmo Paladino, and just now in April an exhibition in Brussels at the Pierre Bergé place. He is the partner of Yves Saint-Laurent and all my own work will be on display: from tables to lampstands in the « for the house » collection with thousands of other bits, the fruit of the last three years of work, and it will all finish with a great auction”. 5
– Da cosa dipende questa quasi ossessione del lavoro del fare delle cose? “Mah, non è sempre stato così, e del resto l’anno scorso avevo quasi deciso di smettere, di mettermi a riposo, come si dice. In fondo, pensavo, nella vita avevo fatto qualcosa, contando che le mie opere sono oggi in circa 120 musei di arte contemporanea sparsi per tutti i continenti, e che ancora oggi vengono fatte mostre mie in giro per il mondo. Per uno che non aveva aspirazioni, e che ha fatto le sue scuole all’Istituto industriale Rossi di Vicenza, che prepara soprattutto bravi tecnici, un qualche traguardo l’ho raggiunto. Va bene che l’Istituto Rossi, più o meno nei miei anni, l’ha fatto anche Federico Faggin, l’inventore del microchip, premio Masi Civiltà Veneta nel 1997, mentre io l’ho avuto nel 1999. E così, quando stavo decidendo di aver fatto abbastanza, nella vita e nell’arte, sono stato tirato per la giacca di qua e di là, e mi sono rimesso al lavoro. Per esempio, nell’ultima collezione di vassoi, alzate, centrotavola, segnaposti, candelieri, ed altri oggetti in acciaio, che una grande fabbrica mi ha chiesto di disegnare per loro, dandomi tre mesi di tempo, e promettendomi di raddoppiare la cifra se completavo l’opera in anticipo. Ho avuto la commessa al mercoledì, al sabato ho telefonato che era tutto pronto”. – È sempre stata sorprendente, questa capacità di lavoro, unita ad una invenzione sempre viva, sempre pronta… 6
– Where do you get this obsession with work, this desire always to be doing something? “Well, it’s not always been like that, and actually last year I almost decided to give it up, to take some rest, as they say. In fact, I thought I had achieved enough in my life, considering the fact that my works are on display in 120 contemporary art museums around the world, and exhibitions about them are still put on everywhere. For someone who never had any high ambitions, and who had gone to school at the Istituto Industriale Rossi in Vicenza, which specialises above all in turning out good workmen, I had achieved quite something. All right, it was more or less at the same time that Istituto Rossi also trained Federico Faggin, the inventor of the microchip and winner of the Masi Civiltà Veneta Prize in 1997, which I got too in 1999. But actually I was on the brink of deciding that I had done enough in life and in art, when I got my arm twisted behind my back, and I started work again. For example, my latest collection of trays, cake stands, table centre-pieces, place card holders, candlesticks, and other objects made of stainless steel, was commissioned by a large factory, giving me a deadline of three weeks to finish the designs, and promising to double my fee if I could complete the work in advance. I received the commission on Wednesday and telephoned them on Saturday to say it was all ready”. – It’s always been surprising this great capacity for work

“No, l’ho detto anche prima, non è sempre stato così. Gli anni della mia prima gioventù avevano pochi ma concreti interessi: le donne, i cavalli, il tennis, il biliardo e le carte. Poi capii che dovevo fare qualcosa di diverso, e presi contatto a Milano con Giò Ponti, con Marco Zanuso e con Ettore Sottsass, dei quali mi interessavano i primi lavori di design e di architettura industriale. Sottsass fu un grande maestro, e quando tempo dopo mi misi in società con lui realizzammo l’illuminazione del nuovo aeroporto di Fiumicino, con cinquanta chilometri di lampade, interne ed esterne, per cui ricevemmo sei premi internazionali tra cui a Chicago, New York e Francoforte. Ma la svolta fu nel 1972, quando presi a frequentare Carlo Scarpa, che allora abitava a Vicenza, nelle scuderie della villa ai Nani. L’incontro che mi ha cambiato la vita. Egli disegnava, e io lo guardavo disegnare. Da lui ho imparato il rispetto per i materiali, l’amore per le piccole cose, per i particolari, la ricerca della bellezza anche negli oggetti di uso comune, come una penna o un utensile da cucina. Ecco, nel catalogo delle mie ultime cose, sopra una mia foto che l’editore ha voluto, ho scritto « Ho dedicato la mia vita alla bellezza ». È una frase che mi piace ma soprattutto in cui credo. Vorrei che tra qualche anno qualcuno mi ricordasse proprio per questo mio, insieme piccolo e grande, insegnamento”.
combined with a lively and ever-ready sense of creativity, always ready… “No, as I said before, it’s not always been like that. When I was young I was not interested in a great many things apart from women, horses, tennis, billiards and card games. Then I realised I had to do something different, so in Milan I got in touch with Giò Ponti, Marco Zanuso and Ettore Sottsass, whose works on design and industrial architecture I found interesting. Sottsass was a great example for me, and when I went around with him in company later we picked up the task of doing the lighting for the new airport at Fiumicino, with fifty kilometres of lights, inside and outside, for which we won six international prizes, including Chicago, New York and Frankfurt. But the real breakthrough came in 1972, when I went to visit Carlo Scarpa, who lived in Vicenza at that time, in the stables of the Villa ai Nani. Meeting him changed my life. He elaborated his designs, and I watched him. From him I learnt respect for materials, a love for detail, and the ability to find beauty even in the things of common usage, such as a pen or a kitchen implement. Here, look at the catalogue of my latest designs: above the photograph of me that the publishers wanted to use, I have written, « I have dedicated my life to beauty ». I like this phrase because I actually believe in it. In years to come I would like to be remembered for this rule that I live by, among other things”. 7

IL POETA BANDINI “INDIGENO E FORESTO” E I SUOI 80 ANNI “NATIVE AND OUTSIDER” FERNANDO BANDINI THE POET CELEBRATES HIS 80 YEARS OF LIFE
«Bandini, coscienza critica di grande onestà intellettuale» «Bandini, a conscientious critic with great intellectual honesty» È stata una festa tipicamente vicentina, quella che la sua città ha dedicato a Fernando Bandini, poeta e scrittore, ma anche politico e docente universitario, che fu premio Masi Civiltà Veneta nell’ormai lontano 1992 e che poco dopo è stato inserito nella commissione che la Fondazione Masi ha ufficializzato per segnalare i candidati al Premio Civiltà Veneta: con un po’ di commozione, un pizzico di ironia, e molta composta e trattenuta amicizia, la consegna ufficiale a lui del volume Indigeno e foresto. Studi in onore di Fernando Bandini, con quarantadue saggi nelle discipline più varie, firmate da amici di lunga data ma anche da personalità della cultura e dell’arte suoi estimatori, con disegni di otto artisti suoi amici. Un grosso lavoro, ma soprattutto un lavoro fatto non soltanto di intelligenza e di saperi, ma di affetto e di riconoscenza. La festa, organizzata per gli ottant’anni felicemente portati da Bandini, subito dopo il suo abbandono della presidenza dell’Accademia Olimpica, una delle più illustri e antiche d’Italia, da lui vissuta non come una carica ma come un impegno quasi quotidiano per otto anni, ha avuto anche una cornice particolare: la sala del Consiglio comunale nella Loggia del Capitaniato in piazza dei Signori, la vecchia Sala Bernarda, restaurata con 8
The city of Vicenza has held an event to celebrate the life of Fernando Bandini in characteristic style. Bandini, a poet and writer, but also a politician and university lecturer, won the Masi Civiltà Veneta Prize in far-off 1992 before being appointed to the Masi Foundation commission for the selection of candidates for the same prize shortly afterwards. The celebration was emotional, spiced with a touch of irony, and packed full of Bandini’s long-standing friends. The man himself was officially presented with a celebratory monograph entitled Indigeno e foresto. Studi in onore di Fernando Bandini (Native and foreigner. Studies in honour of Fernando Bandini), containing forty-two essays on the various disciplines he was involved with, written both by long-standing friends and personalities who admire him in the culture and arts worlds, and with illustrations by eight of his artist friends. This enormous undertaking was intellectually impeccable, but just as much it was born out of affection and esteem. The party was held in Bandini’s honour as he stood down from his post as President of the Accademia Olimpica, one of Italy’s most illustrious and most ancient institutions, which he saw not as an honorific but as an almost daily commitment for eight years. The celebrations were held in a very appropriate place: the old

Anche il sindaco di Vicenza ha voluto rendere omaggio a Bandini, “coscienza critica di grande onestà intellettuale, e al finissimo poeta”. Per presentare il volume Indigeno e foresto, con un titolo preso da una delle più belle e note poesie di Ban-

His debut as a council member took place in this same room in the 1950’s, alongside the much-lamented writer and sculptor, Neri Pozza, who held the post of councillor for cultural affairs. Bandini’s career can be considered one of the most illustrious in the civic life of Vicenza, alongside Fogazzaro and Parise, and he can also be counted as one of the most refined apologists for Palladio’s home town in the last century. The mayor of Vicenza paid a tribute to Bandini, too, describing him as “a conscientious critic with great intellectual honesty, and a distinguished poet”.

dini, Farfalle e vischio, che intende lumeggiare i due lati caratteristici della personalità non soltanto culturale ma anche umana di Fernando Bandini, e insieme rappresentare le due correnti di studiosi, artisti, scrittori e poeti che hanno voluto partecipare da Vicenza e dal mondo a questo corale omaggio all’amico, si sono quindi alternati i curatori dell’opera, il vicepresidente dell’Accademia Olimpica Cesare Galla, collaboratore anche di questa rivista, e il poeta e critico Paolo Lanaro, mentre un intervento per ricordare la lunga, intensa e meritoria attività
The title of the book Indigeno e foresto is taken from one of Bandini’s finest and most beautiful poems, called Farfalle e vischio (“Butterflies and Mistletoe”), and is intended to highlight the two sides of Fernando Bandini’s cultural and personal identity and represent two worlds of scholars and artists, writers and poets, who came to Vicenza to sing the praises of their friend. These two worlds were represented by the monograph’s editors: Cesare Galla, the Accademia’s vicepresident and contributor to “Le Venezie” too, together 9

Franco Todescan. “Un viaggio solitario e coraggioso attraverso il variegato paesaggio letterario del secondo dopoguerra” è stata definita da Paolo Lanaro l’opera poetica di Bandini, mentre Cesare Galla ha sottolineato che questo libro è “un coro di voci diverse, per nascita ma anche per scelte culturali, stilistiche, di interessi, ma anche unite nel proporre un breve saggio delle loro competenze e nel raccontare un Bandini quanto più possibile a tutto tondo nella complessità del suo essere uomo, poeta, studioso, politico”. Così che a noi piace ricordare come in questo grande florilegio in onore di un poeta la cui umana disponibilità lo ha reso simpatico a tutti, anche nelle più aspre contese di carattere politico in cui egli ha dovuto imbattersi durante la sua lunga e intense militanza, figurano altri tre suoi e nostri amici, con Bandini insigniti del premio Masi Civiltà Veneta: il compositore Bepi De Marzi, il sociologo Ilvo Diamanti e lo storico dell’arte Lionello Puppi. Alla conclusione dell’incontro Fernando Bandini ha voluto ringraziare con il suo consueto stile, fatto appunto di un po’ di nostalgia, un accenno di commozione e uno spunto di arguzia il grande pubblico che gremiva la sala Bernarda, ricordando i tempi del sindaco Zampieri, che consentiva fosse portato ai consiglieri nelle torride sedu10
with the poet and critic Paolo Lanaro, and also there to record Bandini’s long, active and illustrious career as president of the Accademia Olympica, on the other hand, was vice-president Prof. Franco Todescan. “A solitary and courageous journey through the different types of post-war poetic landscape” was how Paolo Lanaro defined Bandini’s work, while Cesare Galla underlined that the book prepared to celebrate Bandini’s life was written by “a choir of many different voices, in terms of birth, culture, style and interests, but which came together to tell us a little about themselves and to describe Bandini in the round, giving ample space to his complexity as a man, poet, scholar and politician”. In the same spirit we would like to record how this great anthology in honour of a poet whose humanity has made him universally admired, even in the bitter political struggles that had to be fought in the course of his long and active career, contains works by three other friends who share the honour of having been given the Masi Civiltà Veneta Prize as well as Bandini. They are: the composer Bepi De Marzi, the sociologist Ilvo Diamanti, and the art historian Lionello Puppi. At the end of the meeting Fernando Bandini gave a speech of thanks in his usual style, mixing nostalgia with emotion, and some witty comments thrown in for the assembled company who packed the Sala Bernarda. Nel frattempo Fernando Bandini è diventato anche vincitore del premio Librex Montale 2012, considerato il “Nobel italiano”, il riconoscimento che ogni anno iscrive nel suo album d’oro il Gotha della poesia italiana e internazionale. La premiazione al Teatro Nuovo di Milano vede a fianco di Bandini un grande autore a livello internazionale, Derek Wallcott, premio Nobel per la letteratura nel 1992, al quale è stato conferito il premio Librex Montale International. « Il Librex Montale, ha detto Fernando Bandini alla notizia del premio a lui conferito, ha per me un significato del tutto particolare, per quel respiro internazionale che ne fa un punto di riferimento importante per quanto di meglio sta accadendo oggi nel campo della lirica ».

Bagnara, che è stato docente e preside nei licei statali, assistente universitario, assessore alla cultura nel Comune di Vicenza e presidente dell’Associazione nazionale delle città e siti Unesco italiani, è pubblicista e saggista, autore di varie monografie di carattere storico e scientifico.
This new column in Le Venezie, called The Art of Cultivation and of the Cellars, has been entrusted to Prof. Mario Bagnara, president of the Biblioteca Internazionale «La Vigna» in Vicenza, the richest cultural institution in the world for manuscripts, books and publications dedicated to agriculture and viticulture. Prof. Bagnara, who has had a career as a lecturer, school head, university assistant, town councillor for culture in Vicenza and president of the Association of Italian UNESCO Cities and Sites, is a publicist and writer, as well as being the author of various historical and scientific monographs.

Nato intorno al 1231-33 e morto dopo il 1320, fu studioso di filosofia, medicina, scienze naturali e soprattutto di diritto, per circa trent’anni impegnato come giudice nella sua città natale al tempo di Dante e assistente poi ai podestà di varie città italiane. More than seven centuries after it was first written, the manuscript Opus ruralium commodorum or Liber ruralium commodorum, put together by a certain Pietro Crescenzi or Pier De Crescenzi from Bologna remains a fundamental reference point in the history of agriculture, and therefore of viticulture, too. Its author was born around 1231-33 and died after 1320. He was a scholar of philosophy, medicine, natural sciences and above all of law. For thirty years he practised as a judge in the city of his birth at the time of Dante, before becoming an adviser to the ruling bodies of various Italian cities. Obliged to travel for his work, he was nonetheless able to indulge his passion

trentennale, a costruirsi una tenuta agraria nell’attuale Comune di S. Piero in Casale (BO) ove, tra il 1298 e il 1304-09, mise per iscritto, in modo sistematico, le esperienze acquisite in ambito agronomico. Dell’opera, accolta subito con grande interesse nel mondo occidentale, sorprende anzitutto il numero non solo dei manoscritti (ben 132 tra cui la prima traduzione in volgare italiano nei primi decenni del ‘300, in lingua francese nel 1373, richiesta da Carlo V di Francia, e in tedesco nel 1474), ma anche delle 60 edizioni a stampa in varie lingue (l’editio princeps in latino è del 1471, ad Augsburg, la prima in volgare del 1478, a Firenze, l’ultima è in tedesco, Heidelberg, 1995-2002). Un successo pienamente meritato, perché è il primo trattato europeo di agronomia che regge bene il confronto con gli altri due che, sull’agricoltura, videro la luce, durante il Medioevo, dopo i due capolavori della letteratura latina del I sec. d.C., De re rustica di Columella e Naturalis Historia di Plinio il Vecchio. Il primo, in greco Geoponica, è una summa di agronomia in 20 libri, compilata a Costantinopoli, all’epoca dell’imperatore bizantino Costantino VII Porfirogenito, sulla base di varie fonti latine, per cui risulta priva di originalità. Il secondo, il monumentale Libro di agricoltura in 31 libri, scritto in lingua araba a Siviglia nel XII sec. d.C. dall’agronomo-naturalista arabo Ibn al-Awwa¯ m, costituisce un’interessante sintesi fra la tradizione agronomica latina e quella araba, apprezzata anche per le osservazioni che precorrono la moderna agricoltura sperimentale, affermatasi nel XIX secolo. Un aspetto questo che proprio da allora penalizzò il capolavoro del Crescenzi, troppo legato alla concezione aristotelica, condannandolo ad un certo oblio: le edizioni in italiano infatti si arrestano a metà dell’ ’800 (l’ultima è del 1851). Negli ultimi anni però si sta assistendo ad un certo risveglio d’interesse non solo per l’esigenza di effettuare un’edizione critica del testo sia latino sia volgare, ma per il suo valore nella storia della lingua (già nel ’500 Pietro Bembo ne parlava nelle sue Prose della volgar lingua e veniva accolto nel Dizionario della Crusca). E proprio all’Università di Verona, presso il Dipartimento di Filologia, Letteratura e Linguistica, nell’ambito del dottorato di ricerca, curato dal prof. Giuseppe Chiecchi, è allo studio l’edizione critica del volgarizzamento. Di questo trattato sull’agricoltura che per il mondo occidentale conserva quindi la sua primaria importanza, la 14
in agriculture, and when he finished his 30-year career he started a farm located in the modern-day Comune of San Piero in Casale (BO) where, between 1298 and 1304-09 , he put his agricultural experience to good use. De Crescenzi’s treatise excited great interest in the western world with a surprising number of manuscript copies being made: at least 132 , including the first translation into vulgar Latin in the first decades of the 1300s, translation into French on the orders of Charles V of France in 1373 , and into German in 1474. There are also 60 printed editions in various languages – the editio princeps was published in Latin in Augsburg in 1471, and in vulgar Latin in 1478 in Florence. The most modern edition was published in German in Heidelberg, from 1995-2002. Success was richly deserved. The two classic agricultural treatises of Roman times were both written in Latin in the first century AD: De re rustica by Columella and Naturalis Historia by Pliny the Elder. Since then, two works had emerged in the Middle Ages. The first was written in Greek; called Geoponica this is a 20 volume summary of agronomy compiled in Constantinople at the time of the Byzantine Emperor Constantine VII Porphyrogenitus and based on various Latin sources, so it lacks originality. The other was the monumental 31 volume Libro di agricoltura, written in Arabic in Seville in the 12th century AD by the Arab naturalist-cum-agronomist Ibn al-Awwam. ¯ This is an interesting synthesis of Arab and Latin farming traditions that could be seen as the precursor for the modern agricultural developments of the 19th century. De Crescenzi’s treatise, however, was the first to stand comparison to both of these more modern works. One thing that stood in the way of success for De Crescenzi’s masterpiece, however, was the fact that it was seen as too closely allied to Aristotelian thinking, which meant that it was to a certain extent forgotten. Editions in Italian stopped in the mid-19th century – the last being in 1851. Recent years, though, have seen a certain re-awakening of interest in the work, and not just because of the need to prepare a critical edition of the text, both in its classical and in its vulgar Latin versions, but also because of its value in the history of language (Pietro Bembo himself cited it in his Prose della volgar lingua and his Dizionario della Crusca). Currently, the critical edition of the vulgar Latin version is being prepared as part of a research project supervised by Prof. Giuseppe Chiecchi of the Department of Philology, Literature and Linguistics at the University of Verona. Biblioteca Internazionale «La Vigna» di Vicenza possiede ben 18 edizioni: in ordine cronologico, la più antica in latino, edita a Strasburgo nel 1486, della quale recentemente è stata realizzata una anastatica, pregevolissima anche per le miniature dei capilettera in rosso minio, e un’altra in volgare, stampata a Vicenza da Leonardo di Basilea nel 1490. Il giurista/agronomo bolognese negli oltre 500 capitoli che compongono i 12 libri della sua opera, per la prima volta nella letteratura tecnica europea offre, in un linguaggio chiaro, semplice e quindi efficace, un quadro completo e ben dettagliato della realtà agricola del tempo, riportando nell’ultimo libro anche un calendario dei lavori consigliati mese per mese (Liber duodecimus breviloquus incipit de his que singulis mensibus possunt in rure agi). Tra gli argomenti più diffusamente trattati la viticoltura cui è dedicato l’intero quarto libro di 47 capitoli nei quali sono descritte in modo puntuale tutte le operazioni più importanti: dalla scelta dei luoghi e delle viti da piantare alla potatura, alla vendemmia, alla fermentazione e alla maturazione del vino… La qualità dei contenuti stimolò, già all’inizio del ’500, l’arricchimento del testo con belle xilografie di cui si offrono alcune immagini di un’altra edizione posseduta da «La Vigna», pubblicata nel 1511 a Venezia.

The oldest, in Latin and originally published in Strasbourg in 1486, has recently been republished in facsimile with its delightful miniatures of capital letters in red lead colour. Another edition, in vulgar Latin this time, was printed in Vicenza itself by Leonardo of Basle in 1490. De Crescenzi, the agronomist judge from Bologna, wrote more than 500 chapters in 12 books to make this treatise that, for the first time in technical European literature, presented a clear and simple, and therefore very successful, summary of agricultural practice in his time. In the last volume he even has a calendar of work he advised to be done, month by month, the Liber duodecimus breviloquus incipit de his que singulis mensibus possunt in rure agi. Of the agricultural subjects he dealt with, some of the most frequent were on viticulture, and he dedicates the entire 47 chapters of Book Four to a detailed description of its most important aspects: choice of vineyard location, choice of vines to be planted, pruning, harvesting, fermentation, and wine maturation… From the early 16th century, the quality of the contents encouraged publishers to embellish the text with attractive woodcuts, some of which are reproduced here from another edition lodged at «La Vigna», published in Venice in 1511.

«Nel Trentennale del Premio Masi, lo scultore omaggia la Civiltà veneta» «On the Thirtieth Anniversary of the Masi Prize, the sculptor’s tribute to Civiltà veneta» La Valpolicella come l’Arcadia, la regione greca nel Peloponneso anticamente popolata da pastori e così nominata da Arcade, eroe mitologico, figlio della ninfa Callisto e di Zeus, colui che trasformò i pelasgi “selvaggi” abitanti di quella terra in “civili” arcadi. “Arcadia” si chiama infatti la bella composizione scultorea in bronzo che si erge nel verde giardino antistante le cantine Masi a Gargagnago di Valpolicella, ed è opera di Pino Castagna, il grande artista d’origine vicentina ma veronese d’adozione (vive a Costermano). L’ha realizzata oggi, a 79 anni, per celebrare il trentesimo compleanno del Premio Masi per la Civiltà veneta, e l’inaugurazione è avvenuta proprio il giorno della premiazione, subito dopo la firma della botte di Amarone da parte dei vincitori. È Castagna stesso che ci spiega l’origine della nuova opera. “Ho frequentato per anni l’atmosfera creatasi intorno al Premio Masi che si concentra nella civiltà veneta e nella cultura in senso ampio, ed ho cercato di trovare un’immagine che concentri e condensi i 30 anni del Premio e lo spirito animatore della Fondazione Masi. Essendo io veneto, ho cercato qualcosa che potesse ricordare il passato di questa strana regione che è la nostra, e che, sottoposta lungo i secoli ad invasioni barbariche, ha alla fine mantenuto i propri valori. Valpolicella is like Arcadia, the Greek region in the Peloponnese inhabited in ancient times by shepherds and given its name by Arcade, the mythological hero and son of the nymph Callisto and Zeus, who transformed the wild Pelasgian inhabitants into “civilised” Arcadians. “Arcadia”, in fact, is the title of the bronze sculpture standing in the green garden next to the Masi cellars in Gargagnago di Valpolicella. Its creator is Pino Castagna, a great artist with origins in the Vicenza region, but now living at Costermano in the Verona area. The sculpture was made recently by 79-year-old Castagna to celebrate the thirtieth birthday of the Masi Civiltà Veneta Prize, and its unveiling took place on the day of the awards ceremony, just after the winners had signed their barrel of Amarone. Castagna talks about the origins of the new work himself: “I had experienced the atmosphere surrounding the Masi Prize for many years, concentrating on the civilisation of the Veneto and culture in its widest sense, and so I tried to find an image that would sum up and condense thirty years of the Prize and the guiding spirit of the Masi Foundation itself. Since I come from the Veneto myself, I was looking for something that could evoke the past of this strange region that is ours, which, after centuries of invasions by barbarians, has in the end succeeded in maintaining its fundamental values intact. What came into

Perché le Cariatidi? “Ho cercato l’emblema della civiltà greca – risponde Castagna – con le tre figure che sostengono il tempio e che sono donne; la donna è difensore e continuatore della civiltà, mentre l’uomo è

Why the Caryatids? “I was looking for something symbolic of Greek civilisation – says Castagna – and the three figures which hold the temple up are women; woman is the protector and continuer of civilisation, while man is the warrior. Lo chiediamo a Sandro Boscaini, vicepresidente della Fondazione Masi. “Ci sembrava – risponde – che valesse la pena ricordare i trent’anni del Premio, che non sono poca cosa, immortalando l’evento attraverso un’opera che rimanga nella storia, che rappresenti l’ambito culturale della Serenissima e la civiltà veneta che si esprime nel pensiero, nella cultura e nell’arte, con le opere che la mettono in pratica: imprenditoria ed agricoltura”. “Ci sembra che l’opera scultorea – aggiunge – sia una cosa molto bella sia per l’invenzione sia per la raffigurazione della Valpolicella come un’Arcadia defilata rispetto al resto del mondo, una terra di vita agreste e nobile”. Perché la scelta di Pino Castagna? “A parte il fatto che è Premio Masi per la Civiltà Veneta 2006, oggi è il più eclettico dei nostri artisti; gioca con la materia come fa un bambino col pongo; sa plasmare qualunque materia. Lo abbiamo lasciato libero nell’ideazione e realizzazione della scultura”. “Quest’opera – osserva Boscaini – nobilita il nostro mestiere ed arricchisce la Valpolicella. Dobbiamo ritornare qualcosa alle nostre terre che ci hanno arricchito con il vino. La Fondazione Masi ha perciò innalzato qui, davanti alla sede dell’azienda, il suo nuovo Eretteo, per rinnovare i fasti di un mito che ripercorre le grandi epoche della nostra civiltà fondata sull’amore della natura e sulla pace. Le tre cariatidi omaggiano la cultura, le arti e l’imprenditoria della nostra terra e sono un tributo a quei valori veneti che il Premio Masi ha esaltato nei suoi primi trent’anni e che continuerà a promuovere in futuro”.

The comments I have received, even from those who are not expert in art, are all positive. People have telephoned me with compliments not only from the Veneto and Italy itself, but also from America, Canada and Brazil. An American who collects my work told me that according to him the sculpture showed the continuing links between Greco-Roman culture and the culture with its tinges of the oriental to be found in the Veneto”. Why ”Arcadia”? We asked Sandro Boscaini, vice-president of the Masi Foundation. “We thought it was worth marking the thirtieth anniversary of the Prize – he replies – which is no mean thing, and that we should immortalise the event with an artwork based on history that should represent the cultural context of the Serenissima and the civiltà veneta, which expresses itself in thought, culture and art, with the activities that make it all possible: business and agriculture”. He went on: “We think this sculpture is very good, both for the concept behind it and for the portrayal of Valpolicella as an Arcadia hidden from the rest of the world, a land of rural and noble life”. Why did you choose Pino Castagna? “Apart from the fact that he was awarded the Masi Civiltà Veneta Prize in 2006, today he is the most eclectic of our artists. He uses material with the same facility as child with plastic dough; he knows how to shape any material. We left him completely free to shape both the concept and the form of the sculpture”. “This work – Boscaini says – ennobles our profession and enriches the Valpolicella region. We need to give something back to the land that has been munificent with its wine. Which is why the Masi Foundation has had its own new Erechtheion placed in front of the company headquarters, to renew the splendours of a myth that runs through the great epochs of our civilisation founded on love of nature and of peace. The three Caryatids are a homage to the culture, the arts and the entrepreneurialism of our land, and a tribute to the Venetian values that the Masi Prize has upheld in its first thirty years, and will continue to promote in the future”.

«La Fondazione Masi pubblica Le Venezie: le diversità di terroir riflesse nel bicchiere» «Masi Foundation publishes Le Venezie: the diversity of terroir as seen in the glass» Non teme smentita affermare che la viticoltura italiana deve le sue rinomate produzioni enologiche alle numerose diversità ambientali e culturali presenti sul suo territorio. Nel corso di oltre due millenni di intensa coltivazione della vite, si sono selezionati un numero altissimo di inimitabili fusioni tra vitigno e realtà pedo-climatiche che hanno dato vita agli attuali vini. Tutto ciò è stato reso possibile solo grazie al numero altissimo di varietà di uva da vino di cui l’Italia dispone. Più di qualsiasi altro paese al mondo l’Italia vanta uno straordinario patrimonio genetico, che gli ha permesso di individuare e utilizzare in ogni ambito ecologico il vitigno più adatto a quella specifica realtà. Come scrive in questi giorni il Prof. Attilio Scienza, questa eccezionale eredità deriva da una forte continuità sia genetica sia colturale tra la viticoltura romana e quella medievale. La prima si rifà ai numerosi vitigni nati dall’incontro, sulle rive del Reno e del Danubio, tra le viti selvatiche locali e le varietà senza nome portate dalle paludi della Pannonia dai legionari romani spinti dall’imperatore Marco Aurelio Probo a sviluppare la viticoltura al di fuori dei confini “nazionali”. Nel corso del medioevo si deve invece ai monaci benedettini una impagabile azione di sviluppo della vi22
It cannot be denied that Italian viticulture owes its fame for wine production to the numerous environmental and cultural differences to be found throughout the land. Over more than two millennia of intense viticultural cultivation, a huge number of unique combinations of vine type and pedoclimatic conditions have given birth to the wide range of wines to be found today. All this would not have been possible without the high number of grape varieties that Italy produces. More than almost any other country, Italy can boast of an extraordinary genetic patrimony in viticultural terms, which has meant that a suitable vine type has been found for every ecological situation. In a recent work, Prof. Attilio Scienza put this exceptional inheritance down to the strong genetic and cultural continuity between viticulture in Roman times and in the mediaeval era. The Roman inheritance is thanks to the numerous vine types that evolved on the banks of the Rhine and the Danube with the crossing of local wild varieties and the nameless varieties taken from the swamps of Pannonia by the Roman legionaries sent by Emperor Marcus Aurelius Probus to develop viticulture outside “national” boundaries. The mediaeval inheritance, on the other hand, is due to Benedictine monks who carried out inestimably valuable work in developing viticulture through conserva-

Ad oggi sono iscritti al catalogo nazionale delle varietà 456 vitigni, ma un numero ben superiore comprende i vitigni minori fortunatamente conservati nei giardini genetici dei numerosi Enti preposti al loro studio e tutela. L’altro elemento saliente è a questo punto l’incontro, come detto in apertura, tra il vitigno e il suo luogo di miglior espressione qualitativa frutto del sapere dei viticoltori antichi e moderni. Queste aree produttive prendono oggi il nome di terroirs in quanto si compongono non solo di materia (suolo, morfologia, clima), ma anche di cultura, di storia e di sapere produttivo. Quindi

Imponenti eventi geologici legati alle eruzioni vulcaniche, alle devastanti alluvioni dei fiumi, all’azione di trasporto e deposito dei ghiacciai, alle sedimentazioni stratificate, al sollevamento delle dorsali, hanno dato origine ad una vasta gamma di morfologie e di suoli (da calcarei ad acidi) che fungono ora da base per altrettante viticolture di pregio. Allora, se scomponiamo questa parte del nord-est italiano in tanti piccoli spazi ne seguirà un susseguirsi ininterrotto di comunità produttive dai caratteri unici per un fortunato e non riproducibile incontro tra caratteri geografici dell’ambiente e genetici dei vitigni. Pensiamo alla Corvina e al Corvinone della Valpolicella, alla Garganega del Soave, al Moscato dei colli Euganei, al Raboso Piave della pianura trevigiana, al Lison (ex Tocai) del Lison-Pramaggiore, al Marzemino del Trentino, al Refosco di Latisana e poi alle altre numerose eccellenze del Friuli. Tutte queste realtà viticole hanno però un elemento in comune che trova nel paesaggio un grande valore comunicativo e di unione. Dobbiamo quindi interpretare la definizione di terroir in modo più ampio considerando non solo gli effetti che il clima e il terreno hanno sul vino, ma si deve giungere ad una accezione 24

Just taking the example of the Triveneto area, here we find a large number of these specialist winegrowing areas, demonstrating the existence of a rich and well-established wine-producing culture. Epochmaking geological events linked to volcanic eruptions, devastating river floods, glacier movements, the formation of sedimentary strata and the emergence of whole hillside ranges have given rise to a vast range of morphologies and soils (from chalky to acidic) that form the structure for today’s most prestigious vineyards. So if we divide this part of north-east Italy into small sections we see a continuous succession of wine-producing regions with unique characteristics and fortunate, totally inimitable, combinations of environmental geography combined with viticultural genetics. Just think of Corvina and Corvinone in Valpolicella, Garganega in Soave, Moscato in the Colli Euganei, Raboso Piave in the plains of Treviso, Lison (ex-Tocai) in LisonPramaggiore, Marzemino in Trentino, Refosco in Latisana and all the other wealth of grape varieties in Friuli. All these wine-producing communities have something in common, something that unites them and helps them express them: the countryside. So we need to de-

più moderna che preveda una visione più ampia del ruolo dell’uomo. Il terroir deve apparire quindi come il risultato della complessità dell’interazione dei fattori ambientali resi armonici dalle capacità dell’uomo che crea una sintesi tra cultura e natura dando vita ad un paesaggio che funge da sintesi tra elementi ambientali, umani e biologici. Le realtà produttive delle Venezie, così ben definite e peculiari, possono fregiarsi non solo di grandi vini, ma anche di indimenticabili paesaggi, diretta espressione della natura e dell’uomo che con il suo intervento colturale e culturale trasforma generici ambienti in luoghi. La natura ha quindi bisogno della presenza e dell’azione quotidiana dell’uomo ed è per questo motivo che si viene a creare uno stretto legame tra uomo e paesaggio: per questo apparteniamo ad un luogo e con esso ci identifichiamo. Il senso di appartenenza è uno dei sentimenti più forti che ci legano ai luoghi di nascita e di abitazione ed il paesaggio diventa il punto di riferimento nel quale ritrovare noi stessi e la nostra identità. Ma come conservare un senso di attaccamento ad un luogo quando il paesaggio è in continua trasformazione ed evoluzione? Come non farsi prendere da un senso di nostalgia? Lentamente, con il fluire del tempo e in un perenne movimento il paesaggio ha cambiato volto, ma non è
fine terroir in a wider sense, taking into account not only the effects of the climate and the terrain on a wine, but also a more modern view that increases the importance of the role of man. Terroir then becomes the result of a complex interaction of environmental factors which is skilfully used by man to create a synthesis between culture and nature creating a form of countryside that acts as the synthesis between environmental, human and biological factors. The well-defined and distinctly different wine-producing regions of the Venetian territories can boast not only of the making of great wines, but also of the shape of their unmistakable countrysides, the direct result of the interaction of nature and man, whose interventions in the form of farming and mindset transform generic places into structured countryside. Nature therefore needs to interact with man on a daily basis, and it is this fact that leads to a close link between man and the countryside: this is what makes us belong to a place and to identify with it. The sense of belonging is one of the strongest feelings that bind us to our place of birth and where we live, and the countryside becomes the point of reference with which we identify ourselves. But how do we keep this sense of attachment when the countryside is in a continual process of transformation and evolution? How can we help being overwhelmed by nostalgia? Slowly, with the passing of time and in a never-ending 25

È da qui che dobbiamo partire, e se in molte circostanze il paesaggio si è impoverito, dobbiamo comunque sapere riconoscere le impronte della sua esistenza passata. Vorremmo che queste impronte diventassero custodi del passato e segno di autenticità che certamente non è stata perduta. Proprio il mondo agricolo e quello viticolo in particolare, hanno costruito un paesaggio nel quale ancora ci riconosciamo pur nella diversità di alcuni elementi e nella estraneità di altri. È inevitabile che la tecnica evolva e di conseguenza cambino anche le forme, le strutture, le opere, ma la fisicità del territorio, la sua ricchezza complessiva permangono e la cultura funge ancora da amalgama per dare autenticità. Vorremmo solo che certe azioni sommarie fossero meglio ragionate per trovare sempre un ottimo compromesso tra esigenze e priorità diverse; vorremmo che chi non ha mai abitato il paesaggio e non ne è mai stato protagonista, non prevalesse su chi nei luoghi ha la sua tradizione e la sua storia. Il nemico del paesaggio non è quindi il nuovo (vigneto compreso), ma è l’ignoranza, priva di base storica, che 26
process, the countryside has indeed changed, but it is not dead. We have lost some of its defining elements, but this is part of our life and our survival; in fact, the countryside is often more closely linked to time than space. It is not a sterile map, but rather something living and dynamic. This is our starting point, and if in many cases the countryside has actually become poorer, we need to be able to recognise the footprints of its past existence as well. We would like these remains to become the custodians of the past and a sign of the countryside’s authenticity, which certainly has not been lost. It is precisely the farming world and the viticultural world in particular that have created a landscape that we still recognise despite the differences shown in some elements and the extraneous intervention of others. It is inevitable that cultivation techniques change and that consequently so do the shapes, the structures and the work practices involved, but the physical shape of the territory and its value as an entity remain, and tradition brings it all together to endow it with authenticity. We would just like some hasty actions to have been better thought out, so as to find the best compromise between necessity and other priorities. We would prefer that those who have never lived in the country and who have never been decision makers in the country should not take precedence over those who know its traditions and history. Ritornando al mondo del vino è stato accertato da recenti studi condotti congiuntamente dal CRA-VIT di Conegliano e dall’Università di Padova, che il paesaggio genera stati d’animo ed emozioni e porta con sé un messaggio che si trasmette in modo inconscio fino alla qualità percepita del vino: infatti tutto ciò che nasce da una base che cattura, attrae e coinvolge i nostri sensi, viene immediatamente associato ad un maggiore valore qualitativo. Quindi, la contemplazione di un vigneto in grado per i suoi caratteri e per il contesto circostante, di creare intensi stati d’animo, produrrà nel consumatore una predisposizione inconscia a premiare il suo prodotto rispetto ad un vino del quale non si conosce il suo paesaggio d’origine. Vini delle Venezie allora, ricchi di qualità anche paesaggistica.

Turning back to the world of wine, recent studies conducted jointly by CRA-VIT in Conegliano and the University of Padua show that the countryside generates states of mind and emotions and is capable of unconsciously influencing a person’s perception of the quality of a wine. In fact, everything that comes from a world where our senses are involved immediately acquires higher quality status. So the contemplation of a vineyard which creates a positive emotional reaction because of its characteristics and its environment leads the consumer to the consumer to unconsciously prefer wines produced from this vineyard over other wines whose countryside origins are unknown. Wines from the Venetian regions are therefore rich in “countryside quality” too.

Prosegue l’affascinante viaggio dell’Amarone Masi, il « Marco Polo dei vini » sulle tavole dei Cinque Continenti. Come il mitico esploratore veneziano si avventurò negli angoli più sperduti della terra, così Masi intende sperimentare la versatilità dei suoi vini, Amarone in primis, con le cucine più diverse ed esotiche. Questo viaggio ideale ha consentito all’Amarone Masi di unirsi in matrimonio, a partire dal 1998, con la Cina, l’India, gli Usa, il Canada, l’Argentina, la Norvegia, la Svezia, l’Irlanda, la Svizzera, Israele e negli ultimi anni con le cucine regionali italiane di Emilia-Romagna, Lazio e Lombardia. Quest’anno protagonista e guest chef dell’edizione 2012 del « Marco Polo dei vini » a Villa Serego Alighieri di Gargagnago (tre serate di gala domenica 25, lunedì 26 e martedì 27 marzo in occasione di Vinitaly) è stato lo stellato Herbert Hintner, patron del Ristorante « Zur Rose » di Appiano (Bolzano), uno dei templi dell’enogastronomia altoatesina. La sua è la storia di un giovane di belle speranze con la passione per la cucina, che, lasciata la natìa e sperduta Val Casies, prende la valigia e parte con destinazione Europa dove prende contatto con le cucine creative di molti ristoranti. Rientrato in patria, in quel di Appiano conosce Margot Rabensteiner, figlia del proprietario della trattoria « Zur Rose », una Gasthof 28
From Valpolicella on a mission of world conquest. The fascinating voyage of the « Marco Polo of wines », Masi Amarone, continues around the cuisines of the Five Continents. Like the legendary Venetian explorer, the journey ventures to the farthest corners of the earth, where Masi tests the versatility of its wines, but Amarone above all, against the most foreign and the exotic cuisines. Since its start in 1988 the journey has in fact matched Masi Amarone with cuisine from China, India, USA, Canada, Argentina, Norway, Sweden, Ireland, Switzerland and Israel, with forays in recent years to regional Italian cooking from Emilia-Romagna, Lazio and Lombardy. This year the protagonist and guest chef of the 2012 « Marco Polo of wines » events at Villa Serego Alighieri di Gargagnago (three gala dinner evenings on Sunday 25 , Monday 26 and Tuesday 27 March during Vinitaly) was the Michelin-starred Herbert Hintner, chef-patron of the « Zur Rose » restaurant in Appiano (Bolzano), one of the temples of haute cuisine in Alto Adige. His is the story of an eager young man with a passion for cooking who left his home country in the Val Casies, packed his bags and set off round Europe, where he experienced the excitement of creative chefs in many restaurants. Coming back home to Appiano he met Margot

E fu, al tempo stesso, uno stimolo ulteriore per migliorare sia le proposte più squisitamente culinarie sia il servizio in sala curato personalmente dalla moglie. Oggi il ristorante « Zur Rose » costituisce motivo d’orgoglio per la ristorazione non solo altoatesina e un punto di riferimento per le giovani leve che cominciano a muovere i primi passi tra i fornelli.

In 1982 he married Margot and in the space of just a few years, thanks to his innate talent, transformed the anonymous trattoria, into a temple of Alto Adige cuisine. In 1995 he got the prize he wanted most: a prestigious Michelin star. This was the fulfilment of a dream that enabled Hintner to gain a reputation outside his immediate homeland, in the neighbouring Tyrol and Bavaria. And it was at the same time further encouragement to improve both his culinary presentation and the front-of-house service looked after personally by his wife. Ecco perché nei suoi menù, oltre ai prodotti del territorio (carni, formaggi, insaccati), troviamo spesso il pesce, le verdure dell’orto, le erbe aromatiche, prodotti che consentono di esaltare, attraverso cotture brevi con uso centellinato dei condimenti e delle salse, le varie pietanze senza snaturarne sapori e profumi. Alcuni esempi: la zuppa fredda d’insalata verde con i gamberi, i ravioli alle pere con il Graukäse (formaggio grigio della valle Aurina), i tagliolini con involtini di sogliola, i tortelloni ripieni di asparagi e prosciutto rosolato, il gröstl di rombo con carciofi alle erbe, la sella di coniglio, il cosciotto di capriolo al vino rosso. Parlavamo delle materie prime. This is why his menus include not only the produce of his locality – meat, cheeses and salami – but also fish, garden vegetables and aromatic herbs – all products that can enhance the flavours of the various dishes, with brief cooking periods and a light use of seasonings and sauces, without taking away any of their natural flavours and aromas. Some examples: cold soup of green salad leaves and prawns, pear ravioli with Graukäse (the grey cheese from the Aurina valley), tagliolini with rolled sole, tortelloni filled with asparagus and sauteed ham, turbot gröstl with artichokes and herbs, saddle of rabbit, and haunch of venison cooked in red wine. We were talking about the sourcing of raw materials. Hintner pays great attention to it: food should be local and fresh on the day of use. « Quality does not allow shortcuts – he says – even in hard times, while in the kitchen it is the skill of the chef that brings out the best in a dish». Ho avuto una simile fortuna il novembre scorso partecipando ad una verticale di Amarone Masi che comprendeva le migliori annate di ben cinque decadi del vino. Non si può dire che io sia uno dei massimi esperti di Amarone, ma ho un lungo e felice legame personale con un vino che in definitiva considero uno dei miei preferiti. In qualità di Italian Editor per la rivista Wine Enthusiast Magazine, ho avuto il privilegio di poter assaggiare e analizzare ogni anno dal 2005 l’intera produzione di Amarone della Valpolicella (circa 350 vini). Every once in a while, we are awarded the rare opportunity of new perspective on an object, place or person that we think we already know well. I was fortunate to experience this shift in perception in November 2011 at a special retrospective tasting of Masi Amarone spanning five decades of the wine’s most important vintages. Although I can’t claim to be a foremost Amarone expert, I do share a long and happy personal history with what is ultimately one of my favorite Italian wines. As Italian Editor with Wine Enthusiast Magazine, I have had the privilege of tasting through and analyzing Valpolicella’s entire production of Amarone (some 350 wines) each year since 2005. Masi Agricola’s Raffaele Boscaini says the history of Amarone spans from the 1950’s to today, with what he calls the current “era of the Amarone phenomena”. Like most of my peers, I am familiar with the “phenomena era”, but have little hands-on knowledge of previous years. The publication I represent has also demonstrated a unique editorial fondness for Amarone. In April 1997, we were the first major wine publication in the United States to put Amarone on its cover, therefore introducing the wine to many American consumers for the first time. In addition, Wine Enthusiast named Masi “Winery of the Year – Europe” in 2004 and awarded Valpolicella

Proprio per questo motivo l’assaggio “Cinque decadi di Masi Amarone attraverso le annate più significative” che si è tenuto il 9 novembre scorso, ha un’importanza particolare per me. L’assaggio mi ha offerto non solo nuove prospettive, ma mi ha anche dato modo di articolare una descrizione più dettagliata del vino Amarone.
“Wine Region of the Year” in 2009 during our prestigious Wine Star Prize ceremony held in New York City. Because I am a wine journalist, my emphasis is always on reporting what’s new: newly released vintages, new producers, new appellations and new techniques. This theme is reflected in the general tasting policy of Wine Enthusiast Magazine that shies away from reviewing wines that are not available to our readers, including out-of-market, older vintages. It is precisely for this reason that the tasting “Five Decades of Masi Amarone as Seen in the Most Important Vintages” held on November 9, 2011 holds special significance for me. Not only did the tasting give me new perspective, it gave me the tools to articulate a more detailed definition of the wine Amarone.

In truth, Amarone is not usually a wine that lends itself to elaborate tastings of old vintages. A significant number of brands are new to the scene and simply did not exist 10, 20 years ago. Many historic estates placed priorities on product turnover and never dedicated the space or the energy to creating a library collection of cellar wines. Commerce, sales and exploring new markets is central to the entrepreneurial tradition of the geographically well-positioned Valpolicella region, and only a handful of wineries can produce a flight of old 33

Un gruppo selezionato di giornalisti internazionali è stato invitato a trascorrere una giornata presso le tenute Serego Alighieri per far visita alle cantine Masi e partecipare ad un impegnativo assaggio di 11 annate di Amarone (1967, 1971, 1973, 1979, 1983, 1988, 1990, 1995, 1997, 2003 and 2007) interpretate dai cinque Amaroni di Masi (Costasera, Riserva di Costasera, Vaio Armaron, Campolongo di Torbe e Mazzano). “L’assaggio è originale perché verticale e orizzontale allo stesso tempo”, spiega Raffaele Boscaini. Prima della degustazione siamo stati invitati a visitare le cantine, che è sempre una grande gioia in novembre, perché si possono vedere le uve in appassimento (specialmente Corvina, Rondinella e Molinara). Ricordo la prima volta che sono stata alle cantine Masi molti anni fa. Il presidente Sandro Boscaini spiegò il sistema di produzione: “Ci sono due grandi scuole enologiche nel mondo. La prima è quella di Bordeaux, usata il 99% delle volte nella produzione di vini da uve fresche. La seconda, che rappresenta quel piccolo 1%, è la scuola di questo fazzoletto di terra che è la Valpolicella. Noi facciamo il vino con uve appassite all’aria”, spiega Boscaini. La bellissime cantine Masi piene di grandi botti sono decorate da pezzi d’arte moderna, manufatti artigianali e riconoscimenti alle varie iniziative di Masi, come il 34

A select group of Italian and international journalists was invited to spend the day at the Serego Aligheri estate for a winery tour at Masi Agricola and an intense tasting of 11 Amarone vintages (1967, 1971, 1973, 1979, 1983, 1988, 1990, 1995, 1997, 2003 and 2007) interpreted by five expressions of Masi Amarone (Costasera, Riserva di Costasera, Vaio Armaron, Campolongo di Torbe and Mazzano). “The tasting is unique in that it is both vertical and horizontal”, explains Raffaele Boscaini. Before the tasting, we were invited to visit the winery – always a special treat in November when the grapes used to make Amarone (Corvina, Rondinella and Molinara among others) are in appassimento. I remember the first time I visited the Masi winery many years ago. President Sandro Boscaini explained the process: “There are two main schools of winemaking in the world. The first is the Bordeaux school used 99 percent of the time in which wine is made from fresh grapes. The second school is a tiny one percent and only exists in this pocket of land here in Valpolicella. We make wine from air-dried grapes instead”, he said. The beautiful Masi cellars and barrel rooms are boldly decorated with pieces of modern art, cultural artifacts and museum-like dedications to various Masi endeav-

Premio Masi che ogni anno riconosce i grandi interpreti della cultura veneta. Quello che salta all’occhio, comunque, è che temperatura e umidità delle cantine sono controllate al fine di garantire la migliore conservazione dei vini che vi maturano per lungo tempo. “L’Amarone è un vino di lungo affinamento e il consumatore dovrebbe avere la possibilità di assaggiare annate di 10, 15 o 20 anni fa”, dice Raffaele Boscaini, figlio di Sandro: “Per questo noi mettiamo da parte circa un 10% della produzione nelle annate buone o molto buone per poi metterle sul mercato a distanza di anni”. Once we had settled into our tasting spots, with an impressive collection of balloon stemware filled with crimson-colored wine spanning an immense round table, Sandro Boscaini set forth the goals of our important, five-decade Amarone retrospective. First, he said he hoped this tasting would set a standard definition for the evolution of Amarone. Second, he hoped the wines would show the value of Valpolicella terroir and demonstrate that appassimento is a process that promises longevity. Lastly, he wanted to offer an opportunity for deeper reflection of wines from beyond the modern-day “phenomena era”. “This is my 42nd harvest of Amarone as a winery manager”, says Sandro Boscaini: “In many ways, my life reflects the history of Amarone. Starting with my grandfather, my father and myself, we have put aside 100 35

È emersa subito la netta acidità delle annate più vecchie, quali 1967 e 1971. I tannini erano diventati setosi, fini e lunghi, ma una naturale freschezza al palato ci dava la garanzia che i vini avevano le caratteristiche fondamentali per una salubre longevità. Il 1973 è stato un anno difficile, con basse temperature durante il ciclo vegetativo e un vero rischio per i produttori. In effetti, l’annata è stata scelta proprio per dimostrare che l’Amarone può tenere nel tempo anche in un’annata a due sole stelle. I vini del 1979, come quelli degli anni ’80, cominciano a mostrare i tratti distintivi dei vari stili di produzione e delle sperimentazioni in cantina. Il 1983 rappresenta un salto in avanti verso uno stile di Amarone più “moderno” e di grande concentrazione. In quest’annata abbiamo verificato anche una grande diversità tra vigneto e vigneto nei vari cru. La terza serie di vini, quelli degli anni ’90, consolida definitivamente l’identità stilistica di Masi secondo i principi dell’enologia moderna. Si sono evidenziate l’estrazione soffice, la maggiore concentrazione, la grande intensità e purezza aromatica. A tali caratteristiche ha contribui36

As we quietly concentrated on the wines in our glasses, a few themes started to emerge. Most noticeable was the bright acidity in the older vintages such as 1967 and 1971. The tannins had become silky, dusty and long, but the natural freshness in the palate assured us that the wines did indeed have the basic fundamentals for healthy longevity. The 1973 vintage represents a difficult year with lower temperatures during the growing phase and a challenge to winemakers. In fact, the vintage was especially selected to demonstrate that Amarone would hold up to the test of time in a two-star vintage. The 1979 wines, as well as the expressions produced in the 1980’s start to show greater individual traits in winemaking styles and cellar experimentation. The 1983 wines in particular represent a departure towards a more “modern” and concentrated style. Here, we also experienced greater distinction between the vineyard-designate selections. The third flight of wines, representing the 1990’s, definitely cements Masi’s stylistic identity to the principals of modern winemaking. Softer extraction, deeper concentration and brighter intensity and purity of aromas are evident. In 1996, the winery introduced the “Natu-

La Fondazione Masi è impegnata a promuovere e valorizzare il territorio, la popolazione, il patrimonio culturale, le grandi capacità dell’ingegno e produttive della Civiltà Veneta. Particolare attenzione è riservata alla cultura e alla produzione vitivinicola, che rappresentano caratteri peculiari del territorio veneto. Le finalità sono perseguite operando a livello nazionale e internazionale anche in collaborazione con Amministrazioni, Enti pubblici e privati, Fondazioni e altri organismi italiani e stranieri. La Fondazione Masi nasce nel 2001 dall’esperienza ventennale del Premio Masi, del quale intende assicurare la continuità e l’indirizzo, affiancandolo con una serie di iniziative in ambito culturale e ampliando così la propria attenzione a tutto quel mondo che ha fatto dei valori della civiltà veneta motivo ispiratore e stimolo per un progresso produttivo, culturale e civile su scala internazionale. Il 16 aprile 2007 la Regione Veneto ha conferito alla Fondazione Masi personalità giuridica, riconoscendone i valori e le finalità statutarie.
The Masi Foundation has as its aim the promotion and development of the territory, the population and the cultural inheritance of the Venetian territories, as well as the skill and productive capabilities that are part of the civiltà veneta (Venetian culture). Particular attention is given to the art of winemaking, which is a special characteristic of the Venetian regions. The Masi Foundation acts at both national and international levels in collaboration with governments, public and private institutions, foundations and other Italian and foreign entities. The Masi Foundation was established in 2001 as a product of twenty years experience with the Masi Prize to guarantee the continuity of the Prize. At the same time it began a cultural programme to highlight the values of the civiltà veneta that are the inspiration behind manufacturing, cultural and civil progress on an international scale. On 16th April 2007 the Masi Foundation was given official status as a legal entity by Regione Veneto, with full recognition of its values and statutory aims.
