This spring, Oklahoma City becomes the meeting ground for some of the most influential voices shaping the future of health and longevity. The Oklahoma Health and Wellness Summit, taking place March 9-10 at The Skirvin Hotel, gathers physicians, researchers, innovators, and civic leaders for a two-day experience focused on preventive care, human performance, and wellness solutions. At the heart of the Summit is Gary Brooks, founder of the Healthy City Initiative. The Summit serves as the launch of that 14-year commitment. “For 35 years, I was a commercial real estate developer who thought health was someone else’s department,” says Brooks. “Heart surgery changed that. Now I believe helping Oklahoma City become one of the healthiest cities in America is the most important project I’ll ever work on.”

• Approximately 2 cups of mandarin oranges, sliced

• 5 oz. mixed baby greens (spring mix, baby spinach, arugula, or baby kale)

• 1/3 cup dried cranberries

• ½ cup almonds (chopped, slivered, or sliced)

• 1/4 cup goat cheese, crumbled (optional)

• Salt & pepper (to taste)

Dressing

• 1/4 cup olive oil

• Lemon juice from half of a lemon

• 1 Tbsp. white wine vinegar

• ½ tsp. garlic powder

• Salt & pepper (to taste)

Instructions

1. Prep the Oranges: If using fresh mandarins, peel them and remove as much of the white pith as possible. If using canned, drain them thoroughly.
