Lighthouse, Poole’s Centre for the Arts has announced that this year’s winter family show for younger children is Lyngo eatre’s magical production Snow Play, with performances in the venue’s intimate Studio from December 1st – 24th. Snow Play is a showdown between Spring and Winter over who gets to stay and who has to go! When Mr Green comes back from holiday to find Mr White in his house it's the start of a brrrrilliant series of adventures as Mr White covers the whole house in snow and Mr Green does everything he can to get him outside into the garden. e audience gets stuck in with making a snowman and joining a massive snowball fight! – it really is fun for all the family. ITV1’s Dancing on Ice star Michael Zenezini and professional figure skater Lina Szakal dazzled guests when they officially opened Bournemouth’s first-ever outdoor ice rink on December 4th. To open the Christmas season attraction, Michael and Lina took to the real ice rink to perform a three minute festive opening routine, with impressive jumps and twists, in front of a VIP audience. Commissioned by the Bournemouth Town Centre BID company with support from Bournemouth Borough Council, and operated by BH Live, the ice rink is located under the trees in the town’s Grade-II Lower Gardens and has a capacity of 100 skaters at a time. Skaters of all abilities have the opportunity to take to the ice until January 6th 2013. e ice rink is the perfect destination for a festive experience and features a café, serving tasty hot chocolate and a range of warming drinks! 18 years after its conception at the 1995 Glastonbury Festival “e Circus Of Horrors” show has gone on to tour the World achieving cult status and dragging Circus screaming and shouting into the 21st century and beyond. e new sensation, which stormed into the finals of Britain's Got Talent is packed with new shocks that will take you on a whirlwind journey through 1927 Berlin, this was the roaring twenties, a decedent decade, the birth of the Cabaret & the home to e Ventriloquist’. e new phantasmagoria twists and turns, sending a shiver down your spine as the demonic dummy seems to take on a life of its own - featuring fangtastic, Dare Devil & Bizarre Circus acts from all four corners of the world that will have you sitting on the edge of your seat when not falling off them with laughter & all of course blighted by THE CURSE OF THE DEVIL DOLL If Quentin Tarantino had directed Cirque Du Soleil then you would be only half way there! – we take a look at the show which is loved by celebrities. HOSPICE CELEBRATES ITS 20TH ANNIVERSARY WITH FUNDRAISING RECORD! LEWIS-MANNING HOSPICE STAFF, VOLUNTEERS AND SUPPORTERS CELEBRATED THE CHARITY’S 20TH ANNIVERSARY IN STYLE AT ITS ANNIVERSARY BALL AT THE PRINT ROOM RAISING A RECORD £21,500 IN ONE EVENING.

he charity has been providing free care and support to local people living with cancer and other life-threatening illnesses for two decades. is year staff opened a purpose built state of the art facility on Evening Hill in Poole to expand the hospice’s services and to provide a bedded unit for respite, rehabilitation and end of life care. e glamorous Ball was hosted by singer/songwriter Paul Kinvig and entertainment was provided by e Rat Pack and a DJ. Guests enjoyed a ‘money can’t buy’ auction with original artwork, signed scripts, and the opportunity to pledge money for equipment needed for the hospice. A casino table was also on offer for entertainment as well as a luxury raffle. Maria Tidy, Fundraising Manager at Lewis-Manning Hospice said: “Our Anniversary Ball was a night to remember and certainly marked our milestone year. We were amazed at the generosity shown by our supporters who raised a record amount for the hospice. Everyone looked fabulous and enjoyed a good dance to e Rat Pack.” e Ball was sponsored by Care Dynamics which meant all funds raised on the night was pure profit for the charity. e hospice provides day services, a breathlessness clinic and a Lymphoedema clinic and will open its bedded unit in 2013. e hospice receives one third of its funding from the PCT, and the remaining £50,000 is raised through fundraising initiatives, the hospice lottery, gifts in wills, hospice charity shops and corporate and community support. Maria added: “We are extremely grateful to the Ball committee Charlotte Warren, Rachel Byrne, Sarah Patient and John Beukes who organised the evening and sourced our sensational auction prizes. It truly was a night to remember.” e hospice thanked Utility Advice Bureau who sponsored the cost of e Rat Pack and Flowers at 166 for the table decorations and balloon raffle. ’s Dancing on Ice star Michael Zenezini and professional figure skater Lina Szakal dazzled guests when they officially opened Bournemouth’s first-ever outdoor ice rink on December 4. To open the Christmas season attraction, Michael and Lina took to the real ice rink to perform a three minute festive opening routine, with impressive jumps and twists, in front of a VIP audience. Commissioned by the Bournemouth Town Centre BID company with support from Bournemouth Borough Council, and operated by BH Live, the ice rink is located under the trees in the town’s Grade-II Lower Gardens and has a capacity of 100 skaters at a time. Skaters of all abilities have the opportunity to

take to the ice until January 6 2012. e ice rink is the perfect destination for a festive experience and features a café, serving tasty hot chocolate and a range of warming drinks. Tony Brown, chairman of chairman of the Town Centre BID Board and chief executive of Beales, said: “We are thrilled to have made the ice rink one of our essential attractions for Christmas 2012 and wish to thank Michael and Lina for such a memorable routine. he Furlong has welcomed another new store to its charming courtyard. Family owned children’s boutique, Belle Enfants, opened at the end of November. e boutique sells designer clothes and footwear for boys and girls from newborn right through to the age of 10, as well as selling design led toys, gifts and accessories from all over the world. What makes their shop unique and special is the personal shopping experience they offer each customer. e mummy of the business – Amanda- was the brain and inspiration behind the business. She saw a gap in Christchurch High Street’s shops and the lack of baby & children’s wear available in the local area. Amanda and her daughter kick-started the business plan into action and opened their first store in Christchurch in October 2011, closely followed by their second shop in Lymington in April 2012. Alongside the opening of the shops they set up an online store and now with their third store opening in Ringwood, the mother and daughter double act have had quite a busy year! Amanda’s daughter, Hannah Arkell, at only 17 had already been awarded the ‘Business Woman of the Future’ accolade by the Venus Women in Business Awards. Hannah is a partner in Belle Enfants but she juggles this alongside full time education. Hannah comments; “Setting up the business has taught me so much in such a little time, improving my ‘people skills’, learning to negotiate and buy, even the boring bookwork! My advice to anyone starting up a business – although my experience is capped – would be to make sure you are passionate about what you are doing. Having your own business is all consuming; it will steal your spare time, the work never stops at 5pm and the workload is constant. However, the rewards are far greater than a 9-5 job – so not all bad! Interacting and selling to customers is my favourite aspect of the business. You get to see first hand the success of the company which definitely delivers a real a sense of pride and accomplishment. scape the cold weather this December at Dorset’s largest undercover shopping centre, with 120 shops to choose from, get all the Christmas shopping done under one roof. e centre is open for late night shopping until 9pm every ursday from November 29 to December 20 and there will be an entire week of late night shopping from Monday December 17 until Saturday December 22. But if you prefer to leave the glitter and sparkle for the Christmas tree, then look to lipstick for a festive beauty boost. "Lipstick provides an easy way to change your look, taking you from girl-next-door to sexy siren with just a swipe of colour," says Jemma Kidd, make-up artist and author of Jemma Kidd Make-up Secrets. "It's an instant pick-me-up." Prime your pout for mistletoe kisses with irresistible statement lips. WEARING IT WELL e power of your pout should never be underestimated it's the main focus when we talk, laugh, drink and kiss, making lips a prime candidate for a party makeover. "A fully made-up mouth can be the finishing touch to your look, and some women feel naked without their signature lipstick," Kidd says. "It is probably the safest way to go bold. e rest of the face must be flawless, with minimal make-up in neutral tones so that the statement colour really stands out and you don't look overly made-up." Take your lip size and shape into consideration when you're choosing textures and colours. Satin-finish lipsticks are flattering for most due to their creamy coverage and slight glossy finish. "Matte colour can make a bold statement that looks stunning on fuller mouths, especially in classic Hollywood starlet red, but be careful if you are older, or if you have small/thin lips as matte finishes can look harsh and ageing," Kidd warns.

CREATIVE COLOUR Unless you're working a strong eye, give the nude tones a wide birth if you want your lips to be the star attraction this Christmas. "For the most wearable brights on the mouth, go for red, pink, purple or orange," Kidd advises. If you have porcelain skin, stick to cool pinks and blue-toned reds. ose with olive complexions should opt for berry or plum tones, oranges and warm, orange-toned reds. If you have dark skin, Kidd recommends experimenting with rich browns, strong oranges and deep plums. When trawling the lipstick stands in search of your perfect pout match, avoid testing on the back of your hand. Kidd explains: "If you can, try a lipstick on your lips to test the true colour (use a cotton bud to apply), or try on your fingertip, which is closer in colour to your lips because of the concentration of blood vessels there." LIP LONGEVITY All that prosecco supping and mistletoe pecking calls for extra staying power during the party season. With the right preparation, you can make your lipstick last longer. "Use a lip primer, or a dab of foundation or concealer," Kidd reveals. "After outlining your lips, apply lip liner over the whole surface to provide a smooth, even undercoat of colour and a waxy base for the lipstick to adhere to." It's winter, so think layering. One coat of lippy isn't sufficient so apply your lipstick once, blot with

a tissue and then layer on another coat. If it feels too bold, blot with your finger for a pressed-in stain effect. Kidd recommends a light dusting of translucent powder or blusher patted on top of the lipstick for a matte finish and extra staying power. Pigment-packed lipsticks can be drying on the lips, especially long-lasting formulas. Use a lip balm under your lipstick to avoid the dreaded cracked look. POUT PERFECTION If you're ready to take the pout plunge, Jemma Kidd has these golden lipstick rules: n Dark colours are generally harder to wear than paler shades. ey can be more draining and ageing, and you also need to be more accurate in your application as any slips will be obvious. n Bright lipsticks will be more flattering if you have a small mouth or thin lips. n When you are wearing a dramatic, bold lipstick, keep the rest of your make-up minimal. n If you buy a shade that turns out to be too dark or bright, blend it with another lipstick or gloss to achieve a bespoke colour that suits you perfectly. n Oily lipsticks, liquid glosses and stains tend to migrate beyond the lip line, so choose thicker, drier and less greasy formulas if 'bleeding' is an issue.

n To achieve the illusion of bigger lips, use a lip liner in a colour that matches your lipstick and outline your lips just a fraction outside your natural lip line. TRIED & TESTED Lauren Taylor tames her mane with a DIY blow-dry masterclass. Like a lot of women, my hair just won't do what I tell it to. If only there was a way to recreate that just-left-the-salon feeling at home... Now Saks are offering a blow-dry menu with the chance to learn techniques you can reuse at home, and I went to watch Saks's creative director Alison Dace demonstrate four different blow-dry techniques. First, the 'Tjuz It' tousled look was created by blow-drying the roots with a rounded brush. Using a only a splattering of mousse, the stylist worked the roots to give lift and volume. A backcombing technique was demonstrated to make sure it looks subtle and sophisticated, by not taking the comb all the way through the hair so the top layer is left straight. Next there was the 'Wrap It' technique - the stylist dries the hair flat and downwards against the scalp, using the shape of the head to wrap the hair around. Another technique was the simple, straight 'Polish It' look, and the final masterpiece was a Kate Middleton-esque 'Bounce It' style; loose curls achieved with a large barrel curling tong. e masterclass was a helpful insight into new things to try with my tresses. It's a great idea to get your stylist to talk through their techniques step-by-step - I recorded my favourite look with my smartphone. When it comes to blow-drying like a professional, a lot of it comes down to investing in a good big round brush, mousse - and lots of practice in front of the mirror. n A Saks blow-dry starts from £22. All that drinking, dancing and pillow deprivation is a wicked concoction guaranteed to ensure you look one fine mess when the alarm clock calls. at's all well and good when it's the weekend and you can hide under the duvet, but during the week that sallow, green-tinged skin needs to be brought back to life - and sharpish. e good news is that you can fake a fresh glow so your boss doesn't clock on to your party animal ways. Invest in some hangover heroics and have a ball minus the morning-after beauty scares. PRE-BASH BEAUTY If invites are mounting on the mantelpiece, take action now to avoid the inevitable partied-out complexion. Prevention is better than cure, so if you're prone to spot outbreaks and lacklustre skin once the party season ramps up, start nourishing your face from the inside out now. "To avoid seasonal breakouts, Omega-3 is essential for making the body less inflammatory. As well as eating oily fish, consider a supplement of fish oils," recommends Jo Givens, treatments expert at Liz Earle. "You can also take a probiotic supplement to help normalise the balance of gut bacteria, as two thirds of the body's immune receptor cells are found there." Kick off the party season with a rosy glow to rival Santa Claus by giving your skin a generous head start. Consult a skin specialist clinic, like sk:n or Destination Skin, and boost your complexion with a course of skin-refining treatments like microdermabrasion or glycolic peels. "Ensure you slather on a generous layer of moisturiser before you hit the pillow." If you're really determined to look 'eight hours of sleep fresh', try using an overnight mask to re-hydrate skin. POST-PARTY SOS Complexions need a radiance boost from the moment you wake from your hung-over slumber. "Other than make-up, a simple tip for brightening up morning-after skin is to simply massage the face using your fingers," suggests Dr Ariel Haus, Harley Street dermatologist. "Apply your moisturiser in firm circular motions to bring the blood to the surface, leaving you with a rosy glow. Exfoliating is also great as it rids skin of dead skin cells and removes excess grease - a common symptom of excess." Eyes are the window to both your soul and lifestyle, so dark circles, puffiness and exaggerated fine lines will give the game away. And why not? ere's nothing wrong with indulging in your favourite festive tipple. But, as the charity Drinkaware - which promotes responsible drinking - points out, alcohol can also lead to serious consequences, including health damage and accidents. ACCIDENTS HAPPEN ough many of us associate alcohol with having fun, it's actually one of the leading causes of accidents. While spilling wine down your top or stumbling over a chair may be minor, and sometimes even amusing, drinking can lead to serious accidents, too. Alcohol slows down the brain's responses, making us clumsier than usual, with slower reaction speed and impaired judgment. It can also make us more likely to take risks - not a great combination. People who have been drinking usually suffer more serious accidents than those who haven't. According to Drinkaware, alcohol is the single biggest cause of accidents in the home. Of the 4,000 fatal domestic accidents in the UK every year, 400 are alcohol-related. Plus, around one in three fires are caused by people under the influence of alcohol,

HOMEWARD BOUNDS If you've just had a good time with your friends, the last thing you want is to come to harm on your journey home. When intoxicated, you're more vulnerable to accidents on the way home - especially in the dark. Another risk factor that can't be ignored is drink-driving. Despite hard-hitting campaigns and the fact that it's against the law, some people still can't resist getting behind the wheel after one too many. ough incidents have fallen by more than three-quarters in the last two decades, traffic accidents are still a leading cause of alcohol-related deaths among men aged 16-24. It's not just a case of the drunk driver themselves being in danger too - it puts other road users and pedestrians at risk too. Even if you've just 'had a couple', and your house is just 10 minutes from the pub, alcohol can dramatically impair your vision and reaction times, not to mention making you more likely to speed. If you think there's a chance you could be tempted to attempt to drive home, leave the car at home, or ask your friends to confiscate your keys and call you a taxi if it comes to it. HANGOVER HELL Hangovers may be temporary, but they can still make you feel awful. At worse, you'll be stuck in bed all day, unable to stand up without vomiting, your head on fast-spin, or you'll have a thumping headache, tired, bleary eyes and a sore throat. Hangovers are likely to affect your mood too and can leave you feeling gloomy, depressed and anxious. ey don't always pass after 24 hours - you could feel run-down for days, or end up more prone to infections like colds, as getting drunk regularly could give your immune system a battering.

According to Chris Day, professor of liver medicine at Newcastle University, consuming more than eight units a day if you're a man and more than five units a day if you're a woman, for two or three weeks, is enough to cause 'fatty liver' - which happens because alcohol stops the liver from sending fat around the body to be stored, instead causing it to clog up. In the short run, this can be reversed, but carry on boozing to excess and it'll get worse. Binge drinking can also lead to heart problems, including a rapid heartbeat and, in some cases, increased risk of heart attack. ere's also the risk of suffering alcohol poisoning or choking on your own vomit after a very heavy booze binge.

TOP TIPPLE TIPS n If you're concerned about binge drinking, make a plan of action at the start of the night - such as setting a sensible drinks limit and asking your friends to support you in sticking to it. n Abdominal discomforts, feeling sick and loss of appetite can sometimes be signs of 'fatty liver'. See your doctor if you are concerned. n If you or somebody else suddenly becomes severely ill during or after a night out, and you're concerned, seek medical help or even call an ambulance. Instead, opt for a soluble painkiller to ease headaches and an antacid to settle your stomach. n Fresh air and exercise helps. "Exercise has been linked to the release of endorphins your 'feel good' hormones that will help get you back to yourself again," says Justin Way, personal trainer at Pure Gym. f you thought dressing the Christmas tree was just a run-of-the-mill seasonal ritual, think again - there's a host of decor styles to choose from. I

have often said that we should emulate the prudent wealthy people of Tudor times who invested their money in tangible things like land, property, decorative arts and items of intrinsic value such as gold and silver. e production of artefacts made of the latter was, by the middle of the 16th century, strictly controlled and as proof of this the Goldsmiths’ Company had instituted a system of marking all items so made which revealed with individual stamps on the surface the quality of the material, the identity of the maker, the place where it was tested and the officer in charge of the testing. As it was an annual office this mark changed each year and, taking its form as a letter of the alphabet, became known as the Letter of the Year Mark or more recently simply the ‘Date Letter’. Originally it was called the Assay Mark - from the French word assai meaning examination - introduced under a statute of 1478 wherein the Goldsmiths’ Company was made liable to a fine if it marked any substandard silver. (A point here is that in this context the term goldsmith applies to silversmiths as well.) In 1545 the fourth mark was added, depicting a lion walking to the left with its right paw raised and known as the Lion Passant. It became known as the Sterling Mark as it took the place of the earlier King’s Mark to denote quality while the latter became recognised as the mark of the London Goldsmiths’ Company and Assay Office. e reason for the change was two-fold. Firstly by the mid 1500’s the coinage had become debased by approximately 50% which meant that a silver crown (5 shillings) had only half a crown’s worth of silver content. To prove the maintained sterling value and quality of wrought plate, that is items made of silver, the Lion Passant mark was introduced. Secondly, by this time and starting as early as 1378, Assay Offices had been established in various parts of the country, particularly at York, Newcastle, Lincoln, Norwich, Bristol, Salisbury and Coventry. While it was imperative that all

silver should be guaranteed to be of the sterling standard and marked as such it was impractical to expect silversmiths from these disparate places to travel to London to have their wares marked and so each adopted a different emblem to equate with the Leopard’s Head of London. All these towns and cities used a letter of the alphabet to identify the Assay Master but they did not all use the same sequence of letters. London used the first twenty letters in the alphabet excluding ‘J’ and when the run was exhausted the typeface or the shape of the background ‘shield’ was changed. In 1560 Queen Elizabeth I restored the value of the coin, a move which set Britain on a steady course to recovery for the best part of 100 years only to be decimated by our civil war (1642 – 1649.) Among the results of this were vast amounts of earlier wrought plate being melted down to pay for it, which in turn caused a shortage of silver for manufacture. Over time this affected the monetary supply to such an extent that by the 1690’s further legislation was necessary. Until the reign of Charles II all our coinage was made by hand, stamped by hammer and die and the edges trimmed with shears. Although trade was often conducted through barter or credit, cash transactions were

common enough and so, before parting with your coins it was only human nature to snip a little bit of the edge of each one. ese little snippets all mounted up - the original ‘every little counts’ – but it had already become a capital offence to clip coins and, with a fake die, forge your own money. However with an increased demand from working silversmiths these scraps could command as high a price as the coins they had been cut from, and with less risk of detection of the crime. So a new type of coinage was called for and a mill was set up in the Tower of London and powered by horses to produce perfectly circular coins. As a belt -and-braces measure an inscription or legend was engraved around the outer edge thereby making illegal clipping virtually impossible. But the authorities failed to see the problem with having both old and new currency in circulation at the same time. Obviously people hung on to the new with its full face value money’s worth, while spending and clipping - the old. Clearly the old coinage had to be withdrawn and the 2nd, 3rd and 4th of May 1697 were the final days for collection at the ten furnaces specially built behind the Treasury, which was then at Whitehall between the Banqueting House and the river. For weeks great piles of coins, mostly half face value and barely recognisable had been collected, melted down and cast into ingots. In one instance some £52,000 of face value coins were melted to produce just over half that amount of silver worth. But distribution of the new coins was slow and while all this was going on another factor became evident; the value of coin clippings to silversmiths had to betaken out of the equation. is was done by raising the silver content of wrought plate to a level above that of coin. Not by so much as to make the material too soft for use and durability but sufficient to be detected by the assay. e figures were a raise from 92.5% pure to 95.84% pure. It was known at first as the New Sterling Standard but – as it

was denoted by a stamp showing the figure of Britannia – it soon became known as the Britannia Standard. is mark replaced the Lion Passant mark and in London the Leopard’s Head was replaced by a mark showing a Lion’s Head in profile, facing to the left with a jagged neckline as if torn from its body. Heraldically this is called ‘erased’ and so the Britannia Standard in London is denoted by the Britannia mark and the Lion’s Head Erased. In all other towns and cities the Lion’s Head Erased is used in addition to their town mark. From 1697 until 1720 the Britannia Standard was obligatory but in the latter year the economy in England had recovered sufficiently for the government to restore the old Sterling Standard while retaining the Britannia Standard as an option which it remains to the present day. In the early days of the maker’s mark, people were less literate and initials meant little or nothing to most, so symbols were commonly used. ese might be a miniature image of the shop or tavern sign where the silversmith had his workshop, such as leathern bottle or a swan, a star or crescent moon. By the 17th century we see the first two letters of the surname being used and by the beginning of the 18th century the silversmith’s initials gradually became the norm. From the 1720’s it can be said without question that the manufacture and sale of English silver was the most proficiently run and tightly controlled of all industries, with the welfare and benefit of manufacturer, supplier and purchaser held in equal esteem. e four marks as described filled every requirement and would surely have survived unaided save for a change in taxation in the 1780’s and the Convention Hallmarks introduced in the 1970’s, nearly two hundred years later. When we’ve dealt with them we really will get onto the silver from the Channel Isles, Scotland, Ireland and other desirable categories where the present day equivalent of the prudent Tudor person should still be putting their money ■

GIVE BIRDS A BOOST OF BERRIES TIPS ON THE BEST PLANTS TO GROW FOR BERRIES WHICH WILL NOT ONLY ADD COLOUR TO YOUR GARDEN BUT ATTRACT BIRDS AS WELL - PLUS, FIND OUT WHAT ELSE NEEDS DOING IN THE GARDEN THIS MONTH. BY HANNAH STEPHENSON

Gardeners should be continuing to refill their bird-feeders and baths during the cooler months, when the birds really need them, but it's worth looking at some berried treasures to plant in borders as well. Indeed, with some plants, such as pernettya and snowberry, the berries are the main attraction as their flowers are small and insignificant. Don't just think of red when you consider adding a shrub with berries to your garden. eir colours range from white to black and most colours in between. As they contain the reproductive part of the plant, berries are perfect for increasing your stock of plants. e birds have a habit of helping with propagation, by spreading seeds all over the garden. And there are quite a few trees which will provide them with food throughout the autumn and winter months. e rowan tree, mountain ash and whitebeam, which all belong to the genus Sorbus, carry abundant crops of berries from autumn onwards and provide some fantastic autumn leaf colour as well. e golden-berried rowan, Sorbus 'Joseph Rock', provides both colour for gardeners and food for blackbirds with its abundant berry crop. For the best of both worlds, plant a Sorbus sargentiana, which has pinnate leaves which turn brilliant red in autumn, large sticky red buds in winter and huge clusters of white flowers, followed by bright red berries for the birds. Another good garden stalwart that provides masses of fruit is the herringbone cotoneaster, with its dense tapestry of branches and small, glossy leaves also providing good nesting sites for small birds and homes to many of the insects on which they feed. It's a compact, deciduous species bearing pinkish white flowers followed by bright red berries and reaches a maximum height of around 1.5m (5ft) and is particularly suitable for training against

a sunny wall. If you prefer orange berries, go for the semi-evergreen C. simonsii, which grows a little taller and produces a new set of leaves in mid-autumn which may last until spring. Of course, no berry-rich garden should be without at least two varieties of holly, as they need a male and a female to pollinate. An abundant crop of scarlet or yellow autumn berries should appear as long as a male form of holly is planted near to every three to five female plants. Often persisting through most of the winter, the fruits provide vital cold-weather food for many types of songbird, while deciduous forms with persistent bright red fruits include 'Sparkleberry' and Ilex verticillata 'Winter Red', with its dark green, toothed foliage. Birds aren't interested in all berries, which is just as well, because if you only plant their favourites, you may have little colour left by Christmas. So plant some specimens which the birds will leave alone, such as Skimmia, Aucuba and the guelder rose (Viburnum opulus), which tend to be their least favourites. Ivy berries, which usually ripen later in the winter when food is scarce, are extremely valuable to bids, while crab apples are also appreciated in winter. When considering your food supply for the birds, remember that fruiting wall shrubs including pyracantha and flowering quince will need to be pruned after flowering each year to keep them close to the wall. You may lose a few young berries, but the rest will ripen better and the shrub will look neater if it doesn't outgrow its space. BEST OF THE BUNCH HEDGEHOG ROSE (ROSA RUGOSA) is is another stalwart for wildlife, as the red hips which appear in autumn provide much-needed food for birds. And it's a great survivor, withstanding neglect and harsh treatment and coming back year after year. Derived from the Japanese rose, it has upright, thorny stems and repeat-flowers, producing fragrant magenta or white blooms with a centre of yellow stamens, followed by large, tomato-like hips. Hedgehog roses will grow in any fertile, moist but well-drained soil in sun or partial shade. Every three to four years, cut out one or two old shoots to the ground in winter. If the shape is becoming untidy, wayward shoots can be shortened at any time. GOOD ENOUGH TO EAT... TIDYING THE ASPARAGUS BED Your tasty asparagus spears harvested from April to June may seem many moons away now, but if you want a better crop for next year, it's time to tidy up the bed and it should only take a few minutes. e asparagus ferns turn yellow as they die down and need to be cut off at ground level to make space for next year's crop. Also remove weeds from the bed as asparagus does not like competition and mulch the soil generously with well-rotted organic matter. Anyone growing asparagus will understand how much space it needs. It's a shallow-rooted perennial crop which doesn't like disturbance and occupies the ground full-time, and it takes a couple of years to settle in. But despite the fact that you can't pick much for the first three years, once established it won't often let you down. If you do get thin spears, it's generally down to weak plants that have been harvested too early, cut too heavily in previous years or not fed sufficiently ■

When it comes to identifying that ‘must have’ product which will top Christmas lists everywhere, the iPad or iPad mini easily earns the top spot. If you were thinking there might be a worthy competitor from an alternative electronic manufacturer then think again. Lets be honest, no-one wants to see their child cry on Christmas morning.

I am of course biased, and have a vested interest in Apple. Still, the truth is universal, and it is universally acknowledged that the Apple iPad is best. It doesn’t matter whether you are buying something for a 5 year old or a 75 year old; the iPad spans generations in a way no previous electronic device ever has. Of course you will still need to decide which iPad or iPad mini to buy and prices range from £399 - £699 for the iPad and £269 – £529 for the iPad mini. You can choose between Wi-Fi only, where you must download content at home (or via a Wi-Fi hot spot) but can play anywhere. Alternative Wi-Fi/Cellular models allow you to download content on-the-go using a mobile data network connection (3,V Vodafone, O2 or o EE) and this obviously costs money. I’d be cautious of signing long term contracts that tie you in for up to 24 months and which does not include using your iPad abroad without incurring extravagant ‘roaming’ charges. The good news is that the iPad can be used with a 58

ARE YOU FAKING IT? AN INVESTIGATION TO FIND OUT IF A KILLER FUNGUS IS LIKELY TO AFFECT SUPPLIES AND PRICES OF THIS YEAR'S CHRISTMAS TREES - PLUS, FIND OUT WHAT ELSE NEEDS DOING IN THE GARDEN THIS MONTH.

owever much fake Christmas trees have improved over the years, I don't think I'll ever allow myself to buy one, as they never match the colour, texture and scent of the real thing. However, it seems I'm in the minority, as according to a new Which? report, less than one in five of us will have a real Christmas tree this year. It's a claim disputed by many garden centres, which say the sales of their real trees haven't diminished and that this year should be a bumper year for quality trees because of the strong new growth they will have made thanks to the heavy rainfall in the past couple of years. ere has been concern that prices of real trees may be higher this year because of a mysterious disease called current season needle necrosis (CSNN) which has hit British-grown Christmas trees, turning needles brown during the summer before they drop off. CSNN is associated with a fungus which is similar to apple scab, causing some of the needles in Nordmann firs to go brown in July and August. However, this year's trees won't be affected as only healthy trees

are cut for sale, according to the British Christmas Tree Growers Association (BCTGA). However, CSNN could affect the number of marketable trees in future years if it continues to hit UK and European trees, the association warns. It has been a problem for Christmas tree growers in the US for many years, but it is only in the last two years that it has become more noticeable in the European crop. e tree fungus scare could be a storm in a teacup, says Tim Clapp, head of trees and horticulture for e Garden Centre Group, which represents 129 UK garden centres. "It won't affect our supplies at all," he says. "Necrosis is nothing new and it's not a killer which would wipe out fields of Nordmanns. Customers need not worry because a tree with necrosis won't be cut and put out for sale, because it looks dead. "I think it's hit the press because of the problem we've got with ash dieback." Necrosis has not affected award-winning garden centre chain Hillier's supplies and in fact it's been such a great growing year for DECEMBER2012 61

trees that Hillier is dropping its prices. A 6ft Nordmann will cost £39.99, £5 less than last year. Pip Bensley, Hillier nursery stock buyer, says of CSNN: "e problem is that no one has identified what's happening. "e fungus has been around for years but without research we don't know if it has changed or what will happen. It's a case of watching and waiting." Work is currently being undertaken by Scandinavian and British growers to better understand the condition. e BCTGA has started fungicide trials on a wood of 1,000 Nordmann firs in the Midlands. It recently approved a CSNN strategy to gain sufficient knowledge over the next year to be able to prevent CSNN currently a relatively minor problem for most British growers becoming more widespread. As for the fake versus real argument, Bensley says: "For us, fake trees don't outsell real trees. When times are tough, people return to childhood values and Christmas is very much a time where the act of going out to choose a tree together as a family is reassuring." e Which? survey did not correlate with a survey of 2,000 people by B&Q, which found that 55% of British people will choose a real tree over a fake one. e advantages of fake trees are obvious - they don't shed needles, can be easily shaped to requirements and last a long time. But Harry Brightwell, secretary of the BCTGA, says the value of real Christmas trees needs to be emphasised, particularly their pine scent. "If people aren't buying a real tree, they are missing out on a real Christmas," he says. "Reports say that looking at a tree has a soothing effect which is going to be helpful over the Christmas period for many people. People are also becoming more green in their thinking. "Christmas trees are a crop which is grown and is helping the environment and wildlife, taking carbon dioxide out of the air. ey're also recyclable.

"e fact that they are grown in Britain means it's giving employment to people in Britain, whereas a lot of artificial trees are made in China and won't be helping our balance of payments. "Going out and buying a real tree as a family is great. Getting an artificial one out of the loft is not going to create a priceless memory. If you get a fake tree, you're giving up on Christmas." Perhaps part of the reason people plump for fake trees is because they don't know how to keep cut trees looking fresh. THIS IS WHAT YOU SHOULD DO: 1. After you have bought your tree, it should be kept outside in a cool shaded place, preferably standing in water, until it is required indoors. 2. Before bringing the tree indoors, cut half an inch off the butt to open up the pores of the tree. 3. Mount it in a water-holding stand or wedge it in a bucket with pebbles, small stones or screwed up newspaper and place it away from direct heat such as radiators. 4. Keep the container topped up with water every day. You will be surprised how much it needs. BEST OF THE BUNCH - BAY LAUREL (LAURUS NOBILIS) e thick, leathery dark green leaves of laurus nobilis make the bay tree a favourite for topiary, especially in potagers and herb gardens. But if you have it in a pot, you can bring it into a cool area of the house, such as a hallway, where you can decorate it with dried fruits, fairy lights and other baubles to bring some festive cheer to your home. As a culinary herb, it has the added advantage of being edible as well as pleasing to the eye. L. nobilis will grow into a pyramid-shaped tree 6m high or more if left unpruned, but it's easier to keep the plant small by trimming it in summer and placing it somewhere where its aromatic, glossy leaves will be appreciated.

It is susceptible to frost, so if you're leaving a pot outside, place it in a sheltered spot near the house. It will grow in any reasonable soil in a sheltered site, thriving in sun or partial shade. Water the tree well before you bring it indoors and don't let the compost dry out. GOOD ENOUGH TO EAT - PRUNING FRUIT TREES It's time to tidy up those apples and pears to give them a head start in spring, as winter pruning them now will promote flowering and fruiting and help to control the shape and size of the tree. Pruning will thin the tree out, letting in more light and reducing the amount of fruit it carries, but the fruit it does bear will be bigger and better quality, with more colour and flavour. Cut out shoots that cross over each other or rub together in windy weather, or any that are dead, diseased or dying and any pointing back into the middle of the tree rather than facing outwards. If you have cordons and espaliers, you're better off pruning them in summer to encourage fruiting 'spurs' to develop, although you can prune new stems growing above your required height, to keep the future harvesting of the fruit manageable. THREE WAYS TO ... BOOST YOUR ROSES 1. If you have a small garden, look for roses that flower all summer long, as a rose that only flowers for a month takes up a lot of space and effort. 2. Save money by buying bare-rooted roses, which means they've been lifted from the fields where they were growing late in the autumn. You can buy them mail order from rose growers much more cheaply than from a garden centre when they are in flower. ey should be dispatched from November to February, depending on the weather, in their dormant state.

WHAT TO DO THIS MONTH l Take cuttings of shrubs, roses and soft fruit bushes. l Continue to harvest leeks and Brussels sprouts. l Dig up remaining carrots and parsnips and store them in the fridge or shed, before winter frost makes the ground impossible to dig. l Clean pond filters and check all cables for pumps and lights if leaving them in the pond. l Plant summer-fruiting raspberry canes. l Pot up cyclamen seedlings sown in late summer, for next year, using John Innes No 1 compost. l Clean gardening equipment including dirty pots, which should be washed in a weak solution or garden disinfectant and stored away for the winter. l Clean out bird boxes, removing old nesting material, before birds start looking for winter roosts. l Protect slightly tender plants from frost, such as kniphofias (red hot pokers), by tying the foliage together firmly to protect the crown of the plant, and penstemons, which can be covered with bracken or straw secured with netting or a loose mulch such as bark chippings. l Cut down grasses and bamboos that are not ornamental in winter before they start looking too messy. l Protect cauliflower curds by snapping the leaves over them and tying them in place n

n the festive flurry of decking the halls and choosing the presents, it's easy to neglect a key focal point - the dining table. Gathering for the Christmas feast is one of the highlights of the celebration, and a well-decorated table will make the meal even more memorable. "A Christmas table should be so inviting and stylish that no one will want to leave it," says Susie Watson, founder of Susie Watson Designs, hand-made home accessories specialists. "Linen for a cloth and napkins really dresses a table and adds character to a setting, while candles are essential for soft, twinkling light. "If you prefer informality, choose an arrangement of seasonal cut flowers in a large jug and opt for hand-painted ceramics. For details, add jewel-coloured baubles or small gifts at each place setting." Tomato and anchovy pressing: • 10 plum tomatoes • 50g marinated anchovies Black olive oil: • 100g black olives • 20gr extra virgin olive oil • 1/2 a lemon, juice For the salmon: • 4 pieces of salmon, skin off 70g each • 1L olive oil • 2 garlic cloves • A bunch of rosemary • 2 lemons, zest METHOD

tomatoes into quarters, then with a sharp knife remove the skin and the seeds. You will just need the petals for this recipe. When all the petals are ready, dry them between two cloths.

e salmon: 1. Put the garlic, lemon zest and rosemary in the oil and heat to 48 degrees. When you reach the desired temperature, add the salmon and cook for 15 minutes.

2. Line a terrine mould with cling film and start building the pressing. Start with two layers of tomatoes before adding anchovies, add two more layers of tomatoes then anchovies again and two final layers of tomatoes. Cover with cling film and press over night.

2. Drain from the oil and serve straight away with black olive oil and a slice of the tomato and anchovy pressing.

FRUIT AND NUT BUTTONS

150g golden syrup

(Makes 24)

150g salted peanuts

200g good-quality dark chocolate

1½tsp vanilla extract

150g freeze-dried fruits

1tsp ground cinnamon

100g chopped mixed nuts

25g soft butter

Place the chocolate in a heatproof bowl over a pan of boiling water. Do not allow the bowl to touch the water. Stir until melted.

1¼tsp bicarbonate of soda

Remove from heat and stir in half the freeze-dried fruit and three-quarters of the mixed nuts. Stir until all the fruit and nuts are covered in chocolate and spoon into button or sweet moulds. Whilst the chocolate is still wet, sprinkle the remaining fruit and nuts over the top of each button. Allow to set completely before removing from the button tray. Top tip: Drop a handful of the buttons into a gift bag and embellish with a customised bag topper. PEANUT BRITTLE (Makes enough to cover 30 sq cm before it is broken into pieces)

Add the sugar, water, honey and syrup to a pan and gently bring to the boil. Turn up the heat and let it boil seriously for 10 minutes. It will be smoking by then so be warned! (Stand over it all the time to make sure it does not catch.) Be very careful as the sugar will be seriously hot. Take the pan off the heat and, with a wooden spoon, stir in the nuts, followed by the vanilla, cinnamon, butter and bicarbonate of soda. You will have a golden, frothy, hot and gooey mix. Pour this quickly onto the waiting parchment and, using an oiled wooden spoon, coax and pull it to make a nut-studded sheet, puddle-shaped rather than heaped.

Leave it to cool, then break into pieces and store in an airtight container in the refrigerator. Eat within 14 days.

Alternatives: If available, you could use corn syrup instead of golden syrup - it is becoming more popular in the UK and available to buy in more supermarkets. is will result in a darker, clearer-looking brittle whereas the golden syrup creates a more cloudy, golden effect. Why not coat the hardened brittle pieces in chocolate? Simply melt some good-quality dark chocolate over a pan of boiling water (ensuring the bowl does not touch the water) and carefully dip each piece of brittle in the chocolate. Leave to harden on a cooling rack placed over a sheet of baking parchment so that any excess chocolate drips away (but you can eat the drips!) SPICED RED CABBAGE (Makes 3 x 250ml jars) ½ red cabbage, thinly sliced 10tbsp table salt 400ml distilled white vinegar 1tsp white peppercorns

35cl bottle of good-quality vodka

1 cinnamon stick

1tsp light mustard seeds

For presentation:

Place the red cabbage in a large bowl, covering each layer as you go with a sprinkling of salt. Cover and put to one side overnight.

1l airtight jar

2tsp mixed peel

250ml presentation bottle

2 cardamom pods

Coffee filter paper or muslin

5 whole allspice

e following day, rinse the cabbage with cold water until all the salt has been removed.

Start by separating all the colours of Skittles. You will end up with five different options for your candy vodka. You could use both red and purple in the same jar - the more sweets you add, the sweeter the vodka will become.

If working with a different colour, remember that green leaves a bitter taste so take those out unless you like a slightly sour tang!

Fasten into a knot and repeat for the remaining corners.

Sterilise the jars and lids by placing face down in a preheated oven at 140°C/Gas 1 for 20 minutes. Meanwhile, place the vinegar and spices into a heavy-based saucepan and boil rapidly for about 5 minutes. Add the cabbage and stir until fully covered with the vinegar and heated through. Spoon the mix into the sterilised jars and make sure the cabbage is submerged in the spiced vinegar. Never put hot liquid into cold jars or cold liquid into hot jars. Top tip: Present with a handmade label and decorative ribbon. Store in the sealed jars for up to 1 year. Once opened, refrigerate and eat within 3 months. CANDY VODKA (Makes a 250ml bottle) For the vodka:

Place the chosen colour Skittles into the bottom of the airtight jar and pour in half the bottle of vodka. Fasten the jar and shake occasionally over the next day or two when the Skittles will dissolve and leave a crystallised layer of sugar on the top of the vodka. Line a funnel with either coffee filter paper or muslin and place in the neck of the presentation bottle. Carefully sift out all of the crystals, leaving a coloured but clear candy vodka.

20cm square of muslin Place all of the ingredients into the centre of the muslin square and bring up two opposite corners.

Bring the ends of the first knot over the second knot and tie again to prevent any knots from slipping. Top tip: Add a swing tag with ingredients and instructions and fasten to neck of a red wine bottle. Do not use died ribbon or string as the colours will transfer when boiled in the wine! WINTER CHECKS FOR YOUR CAR FROM POOLE ACCIDENT REPAIR AVOID ACCIDENTS BY PREPARING YOUR CAR FOR WINTER…

I

t’s extremely important to keep your vehicle in the best condition you can throughout the year, but as winter approaches there are some checks that can really help you to stay safe on the roads and ensure that you’re minimising any potential risks. So, get prepared for the winter weather and reduce your chance of an accident by making the following checks on your car. STAY SERVICED e beginning of winter is probably the best time of year to get your car serviced. A professional technician should be able to diagnose and rectify any potential issues that may cause problems or break downs in the cold weather. It’s good for your peace of mind as well as your car! CHECK AND MAINTAIN YOUR TYRES e legal minimum tread required for your tyres is 1.6mm. However in icy, wet or snowy conditions, your tyres need to be at their best. Consider investing in new tyres before the winter period to ensure you stay as safe as possible. Also look for tears, bulges, cracks and nails or objects stuck in your tyres, and don’t forget to ensure your tyre pressure is correct (this is a legal requirement). Your vehicle handbook or data sticker (usually inside your car door) will tell you the right tyre pressure for your car and you can check this using a tyre gauge. HINT: You’ll save money by ensuring your tyre pressures are correct as this will increase fuel economy. DON’T GET CAUGHT WITHOUT ANTIFREEZE Sub-zero temperatures can seriously affect your car’s engine, and could even damage it. One way to avoid problems is to add antifreeze to the water in your radiator. If you’re not sure how much to add, check your vehicle handbook and make sure you don’t exceed the maximum level (the standard mix is usually 50:50, antifreeze to water). It’s easy to check the protection of your antifreeze by purchasing an Antifreeze Tester from a motoring supplies outlet for a few pounds (alternatively you can take your vehicle to your franchise garage and get them to check for you, although this may be a lot more expensive). LIGHT UP With darker days it’s vital that your lights are in good working order. Check for faulty or loose bulbs in all your lights and check that they’re all working. Get someone to walk around the car whilst testing and ask them tap headlights, indicators, fog lights and reversing lights gently when they’re on. If they flicker then they may need replacing or tightening up. OIL CHECK is one’s a reminder and is just as important throughout the rest of the year! Check your oil on a regular basis and prior to any long journeys, topping up as necessary to avoid causing damage to your engine. Check your hand book to find out the oil grade you require.

WINDOWS AND WIPERS Check your wiper blades - are they damaged? If they are then replace them as you need to be able to see the road clearly. It’s also worth testing them to make sure they are clearing water effectively. Ensure your windscreen is clean and that you have screenwash in your washer bottle. Screenwash contains an agent to stop your washer fluid freezing in low temperatures. DO NOT add antifreeze to your washer bottle as it’s corrosive and can damage your paintwork. BATTERY POWER Check that your battery connections are tight and that the wires aren’t damaged. If your battery has been struggling, now’s the time to invest in a new one. CHECK YOUR BRAKES! Your brakes could save your life. It’s crucial that your brakes are in good working order throughout the year but with icy road surfaces, poor visibility and other winter related weather conditions approaching, it’s even more important to check your brake fluid and check your brakes. Listen for squeaks and look for rust - if you’re worried about your brakes then take your car to your franchise garage for an inspection. PORSCHE 911 CARRERA 4S THE LATEST SET OF WHEELS ARE TAKEN FOR A SPIN. BY MATT JOY

E

verything happens for a reason, if your belief system lies somewhere between the fatalist and the determinist. You could argue of course that this notion merely helps the human brain cope with the completely randomness of the universe but putting the philosophy aside for one moment, it is true that a chance occurrence can help you make sense of something previously confusing. is idea perfectly describes the existence of the Porsche 911 Carrera 4. Whether you plump for the standard 4 or the 4S, you are paying a premium over the two-wheel-drive Carrera 2 and 2S that also nets you subtly different rear bodywork (including a unique light arrangement and a wider track) and the inevitable gains in traction that an extra pair of driven wheels brings. But the question mark comes simply because the two-wheel drive Carrera is a devastatingly effective machine already. If there's one thing it's not lacking that is traction, the rear-engined arrangement maximising the available grip when powering out of a bend. Not forgetting of course that your new 911 comes with the hugely effective Porsche Active Stability Management (PASM) system to help you out in a tight spot. So why would you choose a Carrera 4 then? Well unlike previous Carrera 4s, the 991-generation is a lot closer visually to the two-wheel-drive version. In the past the extra width at the rear has been known to unbalance the overall shape a little and leave it looking like it was carrying a little too much

Christmas indulgence around its behind. But now it's been perfectly judged, and it carries a little more muscle to arguably make it more visually appealing than the Carrera 2. And that rear light signature might seem like a small thing but it catches the eye and makes you wonder why every 911 doesn't have it. Mechanically the differences between the 4 and the 2 are straightforward. You get the same sonorous 3.4- or 3.8-litre flat six engine with two outputs (standard and S model) with a choice of seven-speed manual or seven-speed PDK dual-clutch gearbox. A further trick up its sleeve is a double de-clutch facility which can be switched on or off; essentially in manual-equipped cars it will blip the throttle for you on downchanges to match the revs to the wheel speed, thereby avoiding any nasty locking of wheels when really pressing on. But the majority of this is under the skin, so you climb aboard the 911 and are greeted by the same appealing cabin, much improved over the outgoing car in both ergonomics and material quality. Pinching several bits from the Cayenne and Panamera give it a more grown up feel and make it much easier to live with, and the reassuring snap and click of the switches gives the impression that it will last as long as the bulletproof mechanicals. ere's nothing to indicate that this 911 is four-wheel-drive as you pull away. In fact the Carrera 4 diverts most or all of the power to the rear unless it detects a loss of grip, so you have the four-wheel drive only when you need it. at means that for much of the time it drives exactly how you would want it; namely just like a

two-wheel-drive 911. You sacrifice nothing in terms of the slickness, sensitivity and accuracy in the way that the car responds to your inputs. You don't feel any additional weight, nor that the car is compromised as a result. Sure, there is a modest weight penalty but that's offset by the increased traction. Where you really feel the benefit is when conditions aren't ideal - namely most of the time - and the reassurance of four-wheel-drive gives greater confidence. You can exploit the Carrera 4S's mighty flat-six more of the time, hear that distinctive engine note rise and fall but accelerate harder and sooner out of the bends. On the higher-powered S version you get torque vectoring as standard, which can switch power between wheels on the same axle as well as front to back. It's fiendishly clever but all you really need to know is that it punts you out of a corner with as much traction as it can possibly muster. And when you do get caught out by an unseen change of surface or even something as dramatic as an unhelpful spillage on the road, the Carrera 4 can switch the power from front to rear or vice versa in 100 milliseconds. You still have complete awareness of what's going on beneath you - there's just a little more happening to help you out. It's for this precise reason that the four-wheel-drive version makes the 911 even more of a practical, everyday supercar. Not that the standard Carrera 2 is untrustworthy of course, but with the Carrera 4 you can savour its power, precision and sublime chassis all-year round.
