ROSE FESTIVAL

Celebrate the joy of roses this summer at National Trust Chartwell and Emmetts Garden, near Sevenoaks with their first ever Rose Festival, taking place between Saturday 25 June to Sunday 30 July. See new interpretation, book onto a rose inspired workshop, or experience the roses at your own pace.

oin one of the Welcome Talks taking place every morning to find out a bit more about the gardens and the connection to roses, or there will be extended talks in the Rose Garden on looking after the roses and history later during the day. Roses have long been associated with the Churchill’s and their family home, Chartwell in Kent. The flower was a part of Winston and Clementine’s love story from the very beginning after all. Every year the roses unfurl across the Golden Rose Avenue and Lady Clementine’s Rose Garden, reaching their peak in mid-June but blossoming all summer long. Lady Clementine’s Rose Garden on the north side of the house was designed by Clementine’s close friend and cousin Venetia Montagu and together they created a traditional, formal English rose garden. The rose garden was Clementine’s pride and joy and became the part of the garden she loved the most. Winston had proposed to Clementine in the rose garden at Blenheim Palace, and no doubt the rose garden here at Chartwell bought back some fond memories for her. Today, you can still find varieties similar to the ones Lady Churchill would have used,

like ‘Ice Cream’ and ‘Pink Parfait’ making it perhaps the most quintessentially English feature of the Chartwell gardens. Roses of a very different variety can also be found down in the Walled Garden – on the Golden Rose Avenue. It dates from 1958, the year of Winston and Clementine’s golden wedding anniversary. Their children had the idea of giving them a collection of golden-coloured standard roses to mark the occasion. The original planting had 28 different species of roses within the borders, with the pathways all leading to a central opening containing seating and a Victorian sundial pride of place in the middle. Today it remains a beautiful monument to the Churchills’

remarkable marriage and a love that lasted a lifetime, glowing gold every summer in the sunshine. Over at Emmetts Garden, the Rose Garden – the only formal area – was created for Catherine Lubbock and formed a central feature of the original garden design. It became a frame for one of the key vistas from the house out towards the valley and weald of Kent, originally with a smaller square pond as the centrepiece than the one you can see there today. Pink and white roses continue to grow today, making a perfect spot to stop and relax in. Stepping down into the garden you’ll be surrounded either side with a collection of pink Octavia Hill roses. Octavia Hill was a founding member of the National Trust and these roses were planted in 2012 to commemorate the 100th anniversary of her passing. Moving around the fountain you’ll discover a border bursting with sweet ‘English Miss’ roses, with other varieties on show including the dainty rosa bonica and the fragrant rosa Katherine Zeimet. As the roses blossom across both Chartwell and Emmetts Garden, come and celebrate their beauty from 25 June to 30 July.

Rose photography workshops: Join Roger Bloxham at Chartwell or Emmetts Garden this summer as part of our Rose Festival celebrations, with a photography workshop. Learn how to take beautiful photographs with your camera using the roses as your subject in the idyllic setting of the Rose Gardens. n uncertain times as we are experiencing at the moment it is tempting to diversify your portfolio and invest in a second property. Whether for your own use or to rent out, there are certain things you need to consider. If you plan to finance the purchase, the type of mortgage will depend on what you are intending to do with the property. Will it be a second home, holiday let or investment buy-to-let, the mortgage will be different for each type. With any second home purchase, you might need a higher deposit, most likely a minimum of 25%. You might consider releasing capital from your existing

property or renting out your current property and buying another one to live in (so-called let-to-buy). In each situation, you will be liable for a higher rate of Stamp Duty Land Tax and if you sell a second property with a profit, you might need to pay Capital Gain Tax. Affordability is also key. With buy-to-let properties, the investment needs to be profitable. This means that rental income needs to cover the mortgage payments and potential income tax liability at your current rate. With a second home, your income needs to comfortably cover your current outgoings and the new repayment mortgage. If you are a higher and additional rate taxpayer, you might also consider an investment buy-to-let purchased through a limited company SPV. This new non-trading company will need to be set up for the sole purpose of running the buy-to-let and business costs, including mortgage payments, can be deducted from the corporation tax. As a director, you can also decide what to do with the profits – pay dividends or retain gains to purchase more properties in the future.

2021 saw enormous bonuses across the banking sector and as a result, 2022 bonuses look set to reduce.

ollowing the end of another financial year, bonuses are on many professional’s minds, with some possibly wondering how a divorce might affect their future bonuses. Bonuses can take many forms: Discretionary or contractual. Cash or stock options. Deferred or immediate. Often a very precious and emotionally charged asset, bonuses have always proved to be a point of fierce contention throughout divorce and financial remedy proceedings. Over the past 15 years, the courts have taken contradictory approaches on how future bonuses should be treated. Advising with certainty over future bonuses upon divorce has at times been difficult for family lawyers. The general principle in English law is when dividing assets, the financially stronger party will either share the matrimonial assets or if this is not sufficient, they will provide a package to meet the financially weaker party’s reasonable needs (in line with affordability and the standard of living enjoyed during the marriage). Furthermore, courts are becoming increasingly keen to make a clean break order (in that neither party can seek further sums from the other in the future).

Following the case of E v L in 2021, there is now clear guidance that post-separation earnings should not be considered matrimonial assets and therefore, should not be shared. However, if the financially weaker party’s future capital and income needs cannot be met through an equal division of matrimonial assets, then post separation income (which includes future bonuses) can be used to meet their future financial needs. Therefore, unless the financially weaker party will be unable to meet their future income needs following receipt of an equal share of matrimonial assets, it is possible that the financially stronger party’s future income (including bonuses) might be made available to meet their needs. The courts are now encouraging financial independence and ordering more clean break orders than ever before, but this must always be considered alongside the needs of any minor children. High earners with particularly significant cash bonuses should still be alive to the fact that following separation, there is still a possibility that future bonuses might be required to meet their former spouse’s needs.

Timings: • Before (pre-nup) or after the wedding day (post-nup); • Try to allow two-three months before the wedding day to engage solicitors. Bickley Park School embraces its history with launch of new website

ickley Park was founded by teacher, Richard Brandram, in 1918 with 12 boys. It was Brandram that introduced the ‘bee’ motif which has been retained in the school logo ever since. It is believed that the Brandram family crest included two bees and Brandram adopted it for the school logo as he liked the association the bee has with industriousness and community. The school has recently launched a new website with the strapline a Hive of Activity. Just a quick look through the #SchoolStories Social Wall on the homepage is a window into the breadth of activities and opportunities available for boys and Nursery girls right through from Nursery at 2 and half to 13 in Year 8. Tammy Howard, Head, said ‘We hope that the new website reflects the aspiration, excellence and warmth of the Bickley Park Community. t an exciting stage in Sydenham High School’s history, we are delighted to welcome a new Head to lead the school community from September 2022. Living locally for many years, Antonia Geldeard said, “I have heard lots of wonderful first-hand experiences of the school. What has always stood out for me has been the overriding commitment to the individual; the warm, supportive atmosphere, caring for each pupil and helping each student to benefit from the wide range of co-curricular opportunities on offer; there is a real commitment to recognising each girl’s own achievement and academic success, which particularly resonates with me.” Ms Geldeard studied English Literature at Trinity College and Cambridge University, graduating with an MA, and later a PGCE in English and Drama. After early years spent working as a television journalist she joined Alleyn’s School. In 2017, Antonia moved to Trinity School, Croydon, to take up the role of Head of Sixth Form and then in 2019, she was promoted to Deputy Head. Following 22 years in co-educational and single sex environments, she brings with her a wealth of experience, as well as within a single sex environment. “I can see the importance of nurturing strong, resilient, healthy young women who have the confidence to speak with their own voice and a full range of skills to be well prepared for their futures. Our classrooms must offer the space for girls to grow their interests, take the lead, share their academic discoveries, and explore new things without fear”. Which perfectly aligns with the Sydenham High motto of ‘Fear Nothing’. After visiting the school herself, Antonia observed that the pupils that she will be leading were “happy, confident, and curious – they were quick to ask me questions and volunteered all sorts of stories showing their utter engagement and joy in school life. This is a great testament to the ethos of the school and the atmosphere to which all the community contribute”, something she hopes to further strengthen and build 42 JUNE 2022

CARING FROM THE HEART Opening a new business during lockdown was a tough challenge for Dr Chris Prange and his team, but the hard work has been rewarded with a beautiful, modern, family dental practice that’s attracting five-star praise from delighted patients.

Colour Drenching Colour drenching is essentially choosing one colour to saturate multiple surfaces within the space. Rikke Mitchell, Director at Nordhus Furniture is an advocate of the technique, and she says: “colour drenching signals the move away from white ceilings and woodwork towards a considered cohesive scheme with a contemporary feel. Colour drenching works particularly well in bedrooms such as the Confetti wardrobe we recently made for a client. Hidden Kitchen “Hidden kitchens start at the design stage of a new kitchen”, says Rikke. “Here at Nordhus creating cleverly concealed spaces are part of every kitchen we make.” These hidden workspaces typically hide microwaves, coffee machines, toasters & mixers. It can be closed when not in use to create a tidy and contemporary family space. Waterfall Islands Whilst marble worktops are a classic addition to any high-end kitchen, adding a waterfall end to an island is a contemporary take on this kitchen classic. According to Rikke: “when we make kitchens with waterfall ends, we work with our stone masons to ensure the worktop is mitred correctly and the vein in the marble flows across the worktop and down the waterfall end to enhance the effect.

Integrated Handles Integrated handles no longer mean a boring j handle at the top of a door. At Nordhus Furniture, these can be almost any shape to suit the clients needs. “The circular handles are a lovely tactile detail on all sorts of cabinetry”, says Rikke, “they invite your hands to use them.” Secret Door Nordhus Furniture specialises in designing secret doors into spaces. These allow adjoining spaces to be closed off and hidden entirely or opened back up. They create a sense of anticipation. Rikke says “The secret door allows for a uniform set of wardrobe doors within the bedroom, which when closed creates symmetry and is aesthetically pleasing. Once open, these lead to a further set of wardrobes and master ensuite beyond.”

ntiques are green and demand for vintage pieces is constantly growing,” reports Chrissie Masters of The Design Gallery Edenbridge. “Our clients love the fact that every item tells its own story and that the carbon footprint of period homewares, fashion and jewellery is so much smaller.” A study by Carbon Clear found that annual emissions associated with selling an antique piece of furniture can be as little as one sixteenth of those of its new equivalent. Willow Verney, Fashion & Textiles student at North Kent College explains, “The class was set the theme of Fragile Ocean and researched the collaborations set up by Parley for the Oceans www.parley.tv/fortheoceans,” she says. The 50 Years of Style costume jewellery selling exhibition, taking place at The Design Gallery until 25th June, includes a sustainability section. “In many African countries, jewellery and accessories are crafted from the scant resources available. Bead necklaces are made out of recycled paper, coffee beans, seed pods and upcycled glass”, explains curator Chrissie.

In the universe of Harry Potter, it’s the wand that chooses the wizard — just as for many homeowners, it’s the lounge that dictates the size of the sofa. But what if you didn’t have to be bound by the trappings of architecture? What if, instead, there was a living lounger that could go wherever it sought fit? It’s the premise on which the beautiful On The Rocks sofa was built. Thanks to a series of sumptuous islands, it’s free to move in any direction — be it throughout the centre of a room, or tracing a snug perimeter. The backrest — more of a hug than a formal element — can also be artfully moved and shaped, in service of more deep-seated lounging possibilities. Creating a wildlife-friendly inspired garden is not as hard as you may think.

he bee and butterfly populations have been in steady decline for a number of years now. With a little careful planting and by filling your garden with pollen rich plants you can encourage bees and butterflies to your garden. If the wildlife like the food they find in your garden, they will make it a regular feeding stop! What makes a bee friendly plant? 1. It’s full of food... If the flowers you’re planting are full of nectar and pollen, you can be sure the bees will come buzzing by. 2. It’s the right colour... Bees see the colour blue and purple much better than any other, and they’re naturally attracted to them, so fill your garden with blues and purples. 3. It’s the right shape... The shapes of flowers determine how accessible they are to bees, whether they’re single types or in some cases (like for long-tongued bees) they will seek out tubular-shaped flowers as they can get to the pollen easier. 4. It’s blooming at the right time... While we’re used to seeing most bees in spring and summer, some of them rely on late winter and early spring blooms to replenish their stores, plant pollen rich flowers for all year around. Butterfly garden Butterflies are beautiful to look at in our gardens

and are just as important as bees as pollinators. Their habitats are also disappearing. By planting flowers and shrubs such as Buddlejas, Wildflowers , Borage, Lavender, and Scabious you will encourage them into your garden. Top Tip: place a small shallow dish in a sunny spot for them to drink from, but place some pebbles or stones in so they can rest there and not fall in. Sow plants for seeds You can grow plants just for the seeds to feed your birds, such as Sunflowers and teasel. Giving your birds a natural feed source as well as topping then up with suet treats and seed feeders. FISH UNION Galician Octopus, Onion Soubise, Ortiz Anchovy Dressing

his delicious melt in the mouth dish is a firm favourite amongst Fish Union’s guests, perfect for sharing as a small plate or as a

Ingredients:

Serves 4 Prep time: 15 minutes Cook time: 45 minutes - 1 hour For the octopus: • 4 octopus tentacles steamed • 20mls rapeseed oil • 20gms butter • For the soubise: • 100gms butter • 250gms onion, thinly sliced • 2 cloves garlic, thinly sliced • 20 mls rice wine vinegar For the dressing: • 1 shallot, finely diced • 1 red chilli, finely diced • 1 clove garlic, finely diced • 1 small tin Ortiz anchovy fillets • 100mls extra virgin rapeseed oil*

starter. Now you can try to recreate it at home - pan fried fresh octopus on an onion soubise and drizzled with a punchy anchovy dressing. Delicious!

Method Steam the octopus tentacles until tender (about 45 minutes-1 hour depending on the size) or buy them direct from Fish Union fully prepared with no steaming required! For the onion soubise: 1. Dice the onions and garlic 2. Melt the butter in a heavy bottomed saucepan, add the onions and garlic and cook slowly, cooking without colour. 3. When they are cooked, increase the heat and this will begin to caramelise the natural sugar in the onions. 4. When the onions are a deep brown colour (but not burnt….) add the rice wine vinegar and reduce. 5. Allow to cool for 5 minutes and then blend until smooth. Tip: You can save time and make this a day or two in advance. For the dressing: 1. Add the shallots, chilli & garlic to a heavy bottomed saucepan and cover with the rapeseed oil, confit slowly over a low heat until cooked. 2. Remove from the heat and allow to cool. Tip: As with the soubise, this dressing can be made well in advance to save you some time.

On a medium heat fry the octopus in a small amount of rapeseed oil, with a knob of butter for richness. 2. Warm the soubise in a saucepan. 3. Chop the anchovies and add to the dressing. 4. Spoon the soubise between four plates, top with the octopus and finish with the dressing. Enjoy! *Olive oil can be used but this can sometimes take over the flavours of the dish. We use Rapeseed oil because it is flavour neutral, so allows the flavours on the plate to do the talking.

The Ramblers Rest The Ramblers Rest in Chislehurst, a charming country pub tucked behind a gentle slope beyond the cricket green, has been serving traditional ales since the late 17th century. Here we talk all things food with Head Chef Kevin McKinley.

ow are you enjoying working at the Ramblers Rest Chislehurst? I’m really enjoying it. I used to live in the area and it’s great to be back. So, for me, when I started working at The Ramblers Rest in late November, it sparked some nostalgic memories.

Where do you source your ingredients? I try to source the best and freshest ingredients, so we have used different suppliers for fruit and veg. Our meat is sourced from Cleaver and Twine in Southborough Lane, Bromley. They have the same ethos as I do on quality and they source their excellent meat from Kent farms.

Where Have you worked Previously? I’ve worked all over the place! London, Paris, Rome, I’ve tried to work in places where I will experience different styles and cuisines. My Mum loved Rick Stein, which I guess rubbed off on me and I always wanted to visit Padstow and try his food. I eventually went one better and worked there for his ‘flagship’ restaurant, The Seafood Restaurant on the harbour front.

What type of cuisine do you like cooking the most? Food has always been my passion. We went to Malta, my Mum’s birth country, when I was younger and I had lobster for the first time. Wow! Maltese cuisine is heavily influenced by Italy and after working there its probably my favourite to eat but to cook - it’s a tough one. A bit of everything I’d say, with a strong leaning to classic English dishes and Italian food.

Your menu is gaining quite a following, what was your inspiration for it? I was lucky enough to receive two rosettes whilst working in the south west and working at The Seafood restaurant. Beautiful, fresh, seasonal, local produce is what inspires me, The first time I put Sea Bass on the menu we threw it away as it didn’t sell. Now it sells out! I’m trying things, pushing the boundaries a little bit, and hoping people enjoy the food and come back!

Where do you see The Ramblers Rest in 12 months time? My aim here is to be loyal to our regulars, but also to bring others into the fold. I want to make the Ramblers Menu more of a typical countryside menu. I hope to be able to do Chef ’s nights moving forwards, where we’ll put on more ‘refined’ menus as a nod to the different places I’ve worked in. Game, seafood, vegan dishes that anybody would enjoy eating, rather than vegan to tick a box!

THE OLIVE TREE Bistro & Tearoom

n June 2021, Hospices of Hope were delighted to be joined by local Sevenoaks resident, Gloria Hunniford, who officially opened their newly refurbished bistro and tearoom, The Olive Tree. Located on Otford high street to the back of the Hospices of Hope charity shop, the bistro boasts a deliciously varied menu including brunch dishes, healthy lunch options and of course, a wonderful array of cakes. All are cooked or baked on site by staff and volunteers and all profits directly benefit the work the charity does - pioneering the development of free hospice care in South East Europe.

The pandemic had forced the closure of the charity’s former tearooms, but presented the opportunity to refurbish the premises to the magnificent standard they are today, with the help of supporters and anonymous donors. The light, open space seats up to fifty and in addition, has access to a secluded outdoor heated patio – perfect to sit out all year round. ISTANBUL GRILL, Orpington

Tim Lees shares his top picks for the best local restaurants. Ambiance We visited early evening on a sunny Thursday where we saw a good mixture of families and couples enjoying their meals. There are a number of tables out front for outdoor dining, but it was a tad cold so we dined indoors, where the décor provided a nice Mediterranean feel.

Service We were greeted on arrival at the door with a smile, and taken to our table where the owner and head chef Oscar Budhak, who grew up in Istanbul, attentively asked about our preferences and talked us through some of his favourite dishes.

Food To start we opted for the homemade Hummus and bread, which was infused beautifully with garlic and olive oil without being over powering, along with a marinated chicken breast, which was then coated and fried to perfection and king prawn, served with red and green peppers, tomato, garlic butter and white wine. We accompanied this with an award winning San Giorgio Pinot Grigio which was nicely weighted, with lime and summer fruits, backed up by a clean and crisp acidity. For our mains, my partner selected the grilled Seabass which was superbly cooked with a moist flaky texture. I would highly recommend this for people with a delicate palate that don’t enjoy overly “fishy tasting” seafood. This was accompanied with new potatoes and a selection of seasonal vegetables that complimented well. I went for the meatball kebab. Fried minced lamb prepared with chopped onions and fresh herbs. All of Istanbul Grills spices are sourced directly from Turkey and this really showed in the flavour. This came with rice, cous cous and a delicately prepared salad, the lightness of which balanced well with the weightiness of the seasoned lamb and the rich tomato sauce that came with the lamb. Regrettably our mains were so filling and sumptuous, that there was no room for dessert, however on my next visit I am looking forward to trying the home made Baklava which I saw one of the other diners enjoying and looked delicious! 98 JUNE 2022

Prior to the aforementioned Pinot Grigio, we enjoyed an expertly prepared cocktail each, mine a virgin Strawberry daiquiri, which was thick and mildly sweet, with a refreshing flavor and tartness from the freshly squeezed lime juice.
