THERE’S
GROUNDING about sharing a table, a place, or even a quiet moment with others. In this issue of Fig Lehigh Valley, the focus is on the spaces and experiences that draw people together and invite connection.
Across the region, connection shows up in everyday ways. It’s found in long meals with friends, the comfort of a favorite activity, and outdoor spots that encourage visitors to linger a little longer. Our Lehigh Valley offers countless ways to spend time intentionally and enjoy being together close to home. Inside these pages, the Food & Drink Guide celebrates destinations where meals are meant to be savored and conversation comes easily. Fig Happy Hour highlights local bartenders and the creativity behind each pour. And our second annual Lehigh Valley
Superlatives feature recognizes a few special individuals making an impact in their communities.
With this issue, we’re also proud to celebrate 50 editions of Fig Lehigh Valley and the countless connections, conversations, and local stories shared along the way.
A special thank-you goes to Gross McGinley as the law firm celebrates 50 years of serving the Lehigh Valley and supporting relationships that strengthen the region.
As readers move through this issue, it serves as an invitation to seek out common ground. Put the phone aside. Stay a little longer. Try somewhere new or return to a familiar favorite. Wherever the next stop may be, may it be a place worth staying awhile.
Together, Ashley Russo

WHILE TRAVELING in New York State, North Carolina resident Drew Katona was struck by a sudden and severe onset of Guillain-Barré syndrome, a rare, incurable condition that damaged his nervous system, completely paralyzed him, and took away his speech.
A social, outgoing person, Drew’s happiness and affable personality shine through in his colorful language and storytelling, so losing the ability to communicate was devastating.
The lingering paralysis still affects his speech, but it hasn’t diminished his sense of humor. Drew is still recovering, having relearned how to communicate and slowly regained mobility—a complex journey that included five months at two Good Shepherd Rehabilitation hospitals.

Drew and his wife, Yvonne, finally returned home in September 2025. A two-day trip became an eightmonth saga.
Drew and Yvonne still have big plans while he continues his physical recovery. They hope to travel to southern France to see the lavender fields in summer. They want to revisit Paris and Rome, their favorite cities.
Pennsylvania is on the travel list, too.
“My goal is to walk back into the rehab up [in Center Valley] and scare the … out of everyone again!” Drew said excitedly.
Laughing, Yvonne added, “We want to thank everyone up there.”

That passion for creativity was recently on display when A-List Salon teamed up with George’s Furs at the Lehigh Valley Hair Showcase benefiting the Boys & Girls Club of Bethlehem. The collaboration brought rich texture, bold hair artistry, and fearless self-expression to the runway.

ArtsQuest is the kind of organization that makes the Lehigh Valley such a special place to call home. We’re proud of their work, their people, and our partnership.”
— Tara Cole

ON BETHLEHEM’S SOUTH SIDE, two organizations have spent years demonstrating what it means to show up for the same community. One fills the neighborhood with music and runs art classes and workshops year-round for people of all ages, while keeping a significant portion of its programming free. The other ensures the people behind that work can do it without interruption.
That is the quieter side of what the BSI Corporate Benefits team does. Benefits consulting is, at its core, about people. It’s about making sure that the educators, event coordinators, artists, and administrators at places like ArtsQuest can go to work without worrying about what might happen if something goes wrong with their health or well-being.
Over the years, the relationship between BSI and ArtsQuest has grown. These two organizations have found that they believe the same things: the Lehigh Valley is worth investing in, the people who live and work here deserve institutions that take them seriously, and showing up consistently matters more than showing up loudly.
In fact, when BSI gathers for CORE, the firm’s flagship annual
summit, it has done so at the ArtsQuest Center—a choice that is intentional. Organizations bring their people to the places they believe in.
Now, both organizations are investing in what comes next. Steel is rising on Third Street, where the ArtsQuest Creative Factory powered by PPL, a $32 million, five-story hub for visual arts, education, and community creativity, is taking shape. The building was designed to carry its history forward. Its brick exterior and steel framing echo the industrial character of the surrounding neighborhood, built in part from materials salvaged from what stood there before. When ArtsQuest launched the Re-Imagine That! Capital Campaign to fund this project, BSI made a ten-year commitment. The fifth-floor balcony will now carry the firm’s name: the BSI Corporate Benefits Balcony at the ArtsQuest Creative Factory powered by PPL.
Two organizations, one neighborhood, and a shared conviction that the best way to support a community is through continued investment. That has always been the foundation of this partnership.

FROM BELOVED TRADITIONS like Musikfest to free concerts, exhibitions, and educational programming, ArtsQuest helps shape the creative energy that defines the Lehigh Valley. Through music, art, film, comedy, and year-round events, ArtsQuest creates experiences that bring the community together.
That work is made possible in part through ArtsQuest Membership. Members enjoy exclusive perks throughout the year, including pre-sale ticket access and discounts on concerts, comedy shows, camps, classes, special events, and merchandise. During Musikfest, members “fest best” with benefits like parking, lounges, and member-only lines. For those looking to deepen their impact and enjoy elevated benefits, the ArtsQuest Circle donor program offers year-round priority parking, complimentary tickets, exclusive event access, meet-and-greet opportunities, complimentary access to the Oasis Flight Deck, and other VIP experiences.

BUT MEMBERSHIP IS ABOUT MORE THAN PERKS. It’s an opportunity to champion the arts and help cultural experiences remain accessible. For music lovers, movie buffs, comedy fans, and passionate arts advocates alike, ArtsQuest Membership brings supporters closer to the experiences they love while helping sustain the arts for the entire Lehigh Valley.

Women are the backbone of our community – their health and well-being strengthen families, workplaces and everyone around them. Yet for far too long, women’s health care has been fragmented, inconvenient or simply not designed for the realities of their lives.
That changes now.
A first-of-its-kind in the region, Women’s Health Center at Tower Place is redefining women’s health care by bringing comprehensive, specialized care under one roof with thoughtful amenities –like a café and on-site child care – to remove barriers and help you prioritize … you.
Put your health first.

ALONG THE WESTERN BANKS of the Lehigh River in Allentown, The Waterfront is transforming a once-industrial landscape into a connected riverfront neighborhood. Built on the former Lehigh Structural Steel site, the updated master plan reimagines 29 acres into a “third place” destination where community naturally gathers.
The first phase introduced 615 Waterfront, featuring Class A office space and street-level retail, alongside River House, a 201-unit luxury multifamily community welcoming its first residents in July 2026. Future phases plan to expand this unified riverfront experience with additional residences, for-purchase townhomes, flexible office space, and a hotel overlooking the Lehigh River.

At the heart of the vision is connection. Public spaces will link the neighborhood and Downtown Allentown to the Lehigh River through a half-mile River Walk, outdoor amphitheater, programming plazas, boat docks, and direct access to the D&L Trail and regional greenways. The result is a destination to gather, explore, and stay awhile, not just pass through.
Carefully designed to evolve with the Lehigh Valley, The Waterfront is creating a place where the Lehigh River, region, and community members will come together for generations to come. Discover more about The Waterfront at thewaterfront.com.

ALONGSIDE ITS STROUDSBURG OFFICE, Gross McGinley proudly supported Pocono Mountains United Way at April’s Spring into Giving fundraiser, rallying community support to raise more than $3,000 for the Hannig Education Achievement Fund. This vital fund helps young people access the resources, guidance, and educational opportunities they need to thrive in and out of the classroom. By investing in children’s academic and personal growth, the fund supports
long-term success in Monroe County, within all areas of life and family. Gross McGinley was honored to partner with the Pocono Builders Association to make the evening a meaningful, community-centered event that blended philanthropy with connection. Together, the firm’s legal professionals helped shine a light on the power of collective giving and the importance of standing behind the next generation of leaders, learners, and innovators in the region.

THIS YEAR, GROSS MCGINLEY was honored to support PBS39 at its Be My Neighbor Day, a celebration of kindness, learning, and neighborhood spirit. As part of the Lehigh Valley Volunteer Challenge, the firm mobilized volunteers for both the preparation and execution of the event, helping local families with young children enjoy a welcoming, engaging day focused on what makes a caring home.
In the days leading up to Be My Neighbor Day, Gross McGinley volunteers assembled 600 take-home bags for children, thoughtfully packing materials that encouraged learning, creativity, and neighborly connection. On event day, volunteers staffed multiple timed sessions to maintain a smooth flow as families took photos with Daniel Tiger, built birdhouses and bug hotels, listened to story times centered on home, decorated kindness cards, and rode the Easton Trolley around SteelStacks. From sponsoring and staffing the birdhouse station to engaging directly with children and caregivers, the firm’s coordinated effort reflected the heart of Gross McGinley: neighbors committed to building a kinder, more connected community, one family at a time.

Save room for dessert at Chop House! The dark chocolate mousse cake and vanilla cheesecake with blueberry compote offer a sweet finish.

AT CHOP HOUSE, the experience is rooted in intention with every detail. Chop House offers a modern interpretation of the classic American steakhouse, with a newly refreshed menu that highlights premium steaks, fresh seafood, and bold, seasonal flavors. Starters like the Blue Crab Cake with sweet ginger or the Oysters Rockefeller, layered with spinach and prosciutto, set the tone for a meal meant to be enjoyed slowly. Guests can move into rich, comforting choices like Lobster Bisque or a Caesar salad before arriving at the heart of the meal: expertly prepared USDA Prime steaks. These indulgent
options include filet mignon, a dry-aged porterhouse, and additions like lobster tail or jumbo lump crab.
Beyond steak, the menu expands into thoughtfully created entrées, from seafood pasta with lobster and short rib to seared sea bass finished with bright truffle cream. The selection offers something for every palate, and every dish carries the same craftsmanship. Meals are meant to be shared and moments savored, making Chop House at Wind Creek the kind of place where dinner becomes the destination.
JUST ACROSS THE CASINO, located in the hotel lobby, MIXX brings a different kind of energy to the table. The lively cocktail bar balances relaxed sophistication with an atmosphere that feels social and effortlessly vibrant.
The newly refreshed cocktail offerings at MIXX invite guests to explore bold, layered flavors with every sip. Drinks like the Penelope Plane blend bourbon, amaro, and citrus for a balanced finish, while a Mezcal Old Fashioned introduces a smoky twist on a classic. For something bright and refreshing, the Pineapple Paradise pairs Brazilian pineapple gin with honey and citrus, while the Lavender Kiss offers a delicate, floral experience with elderflower and lemon. Each cocktail is crafted to elevate the moment.
“Wind Creek Bethlehem continues to be a place where the community comes together,” said
Patrick Ryan, Executive Vice President and General Manager at Wind Creek Bethlehem. “Whether guests are celebrating something special or simply enjoying a night out, we want every visit to feel memorable. We’re proud to create spaces where guests can connect, relax, and savor every moment.”
Together, Chop House at Wind Creek and MIXX reflect what makes the Lehigh Valley so special in the summer: places where time slows down and connections take center stage. University Professor Deirdre Murphy and her class unveiled Steel Rooted/ Wild Bloom s, a vibrant two-panel mural on the deck of Country Club Brewing, to an enthusiastic crowd of community members.
The brewery, located at 323 Pierce Street, sits along the City of Bethlehem’s SouthSide Greenway, a popular walking and biking trail for residents. Deirdre’s class created the mural to highlight the region’s native ecosystems and history while celebrating its beauty, emphasizing the importance of biodiversity and environmental resilience.
Over the spring semester, the class dedicated approximately 750 combined hours to the project. This included researching the subject matter and public art process, gathering resident feedback, and, of course, creating the final design and painting it.
“We commend Deirdre’s students for the respect and care they showed for the community and the public art process,” said Katy Knibbs, Assistant Manager for Bethlehem’s SouthSide Arts District. “This mural is a fine example of what can be achieved when businesses and property owners partner with our local students and educators. It makes something beautiful for everyone to enjoy, and we hope it inspires similar collaborations in the future.”
The mural will be added to Bethlehem’s Urban Arts Trail, which can be found at southsideartsdistrict.com.

WHEN PASSING THROUGH THE HISTORIC
EASTON CEMETERY’S iconic Seventh Street gates, a sense of peace settles over the landscape, welcoming visitors to explore 84 lush acres of rolling hills. While it is a space for grieving, it is also a place to celebrate life—to pause, unwind, and be present.
First opened in 1849, Historic Easton Cemetery was designed to emulate a park. Today, it remains an active cemetery, Easton’s largest green space, and a site listed on the National Register of Historic Places. The grounds are rich with history, from Victorian gravestones carved as angels and obelisks to the stories of notable figures buried there, including Declaration of Independence signer George Taylor.
“I come to life when I walk through these gates each morning,” said Keith Lampman-Perlman, executive director. “Here, we

celebrate all that this space was created to be: a place that brings community together.”
The cemetery is a nonprofit, relying on donations to sustain its 1.9 miles of paved roads and outdoor spaces, which cost over $250,000 per year to maintain. It’s supported by Friends of Historic Easton Cemetery, a foundation dedicated to preserving, protecting, and promoting the cemetery for future generations, along with volunteers and local partners. Long-term goals include restoration of the mausoleum, the chapel, the caretaker’s cottage, a small funerary museum, and an endowment.
Keith enjoys offering personal guided tours and sharing the stories that make Historic Easton Cemetery so special. To learn more or get involved, visit thehistoriceastoncemetery.org or email klp@thehistoriceastoncemetery.org.

St. Luke’s University Health Network has been named one of the nation’s 15 Top Health Systems ®, recognized by Modern Healthcare based on an objective quantitative analysis conducted by Premier, Inc.

In the fall, the U.S. Department of Health and Human Services r anked St. Luke’s as the nation’s top health system for quality, safety, and patient experience.

FOR TINA CONNAR, what began as a long-cherished vacation with her husband, Mark, became an unexpected turning point, one that deepened her gratitude for life, reinforced her trust in St. Luke’s University Health Network, and inspired a generous philanthropic commitment to the place she calls “my hospital since I was four years old.”
In April 2023, Tina and Mark were visiting Anguilla, a place they had loved for more than 40 years. “The people are very kind, and when we saw the water for the first time, we said, ‘Oh, my God! We found our paradise!’” Tina said. But this time, paradise quickly gave way to fear when Tina suddenly collapsed and lost the ability to stand or walk.
Local doctors believed she had muscle spasms, but Tina knew something wasn’t right. Reaching out to longtime friend and St. Luke’s orthopedic surgeon Dr. Patrick Brogle, she received advice that likely changed the course of her life: “Get home as soon as you can.”
“I was very calm, surprisingly,” she recalled. “I wasn’t in any pain. It’s just that I couldn’t stand or walk. I prayed and had
faith that everything would work out, but I could tell that Mark was scared.”
That faith was rewarded when Tina arrived at St. Luke’s University Hospital Bethlehem Campus, where care teams were prepared and waiting. St. Luke’s is ranked #1 in quality, safety, and patient experience by the U.S. Department of Health and Human Services. An MRI revealed a dangerous spinal condition, and within hours, Tina underwent emergency surgery performed by spinal neurosurgeon Dr. Justice Agyei. The operation stabilized her spine and prevented further neurological damage.
“When Tina arrived, it was clear she was facing a serious and rapidly evolving spinal condition,” Dr. Agyei said. “Our goal in neurosurgery is always to act decisively to protect a patient’s neurological function, and in her case, every minute mattered ... but the true success of her recovery is a testament to her determination and the exceptional rehabilitation that followed.”

TINA SPENT SEVERAL DAYS IN THE ICU and more than a month at St. Luke’s, much of it in the Acute Rehabilitation Center (ARC). There, she faced the hard, daily work of rebuilding strength and independence, beginning with learning to walk again.
“The therapists, nurses, and aides all kept me motivated during that time, as well as my own determination. I was not going to just sit back and do nothing. You push yourself for your family, too,” she said.
After months of outpatient neurorehabilitation, she was able to walk on the beach and swim in the pool, as well as host a Christmas party and travel. “Rehabilitation is not just about restoring movement; it’s about restoring confidence, identity, and hope,” said Dr. Jason Davis, Physical Medicine and Rehabilitation Specialist.
For Tina, gratitude goes hand in hand with action. Having volunteered for decades, serving in the Gift Shop, leading the Auxiliary as president, chairing the Auxiliary fashion shows, serving on the Network Board of Trustees, and chairing and co-chairing the St. Luke’s Charity Ball, she and Mark felt

compelled to give back once more. They made a generous donation to The Neurosciences Endowment Fund in appreciation for the care, rehabilitation, and compassionate mission that carried Tina through the most vulnerable moments of her life.
“When Mark and I were first talking, we wanted to make sure it went to the overall program for St. Luke’s Neurosciences, because that fits so deeply into the equation,” Tina said.
“How it gets spent, we’ll leave that to the experts,” said Mark, who, like Tina, has a lifelong relationship with St. Luke’s dating back to both of their mothers having been involved in volunteer work, and both their families’ names on various plaques in the St. Luke’s hospitals.
“I was so happy to give back to my hospital,” Tina said. “It’s been my honor. I’ve done so much at the hospital as a volunteer, and I would trust any of the doctors, nurses, and therapists again, and would recommend them to my friends.”
For Tina Connar, her gift is more than a donation. It is an expression of thanks, faith, and an enduring belief in the power of exceptional care to restore lives.

FOR JESS MIÑO, every breath, cup of cacao, and moment of stillness is an invitation to return to what is real. As the founder of Good Vibes Wellness, she draws on ancestral wisdom to help people reconnect with their self-sovereignty in a world filled with external pressures.
“With the technological world we live in, there are certain things designed to disconnect us from ourselves,” Jess said. “Once you open the door, you get to know yourself more and can begin discovering your actual potential.”
Jess founded Good Vibes Wellness after witnessing the stress of the corporate world take a toll on her coworkers. What began as weekly meditations deepened after Jess experienced her first plant medicine retreat, which clarified that her career path was not aligned with her soul’s purpose. But the path wasn’t only about witnessing others’ pain; Jess was also navigating her own. Grief, fracture, and a long road back to herself became the ground on which her practice was built.
“I hope that through this work, people can tune into what their truth and power actually are,” Jess reflected. “This practice and the wisdom of my ancestors allowed me to reconnect with myself.”
Guided by Amazonian and Andean lineages, Good Vibes Wellness blends centuries-old Indigenous wisdom with modern somatic mindfulness to help people move beyond simply “managing” their stress. Through sound medicine, immersive meditations, breathwork, and cacao ceremonies, Jess plays a pivotal role in helping people return home to themselves. The cacao she works with comes directly from Ecuador, honoring a living relationship between the medicine, the people, and the earth of her ancestors.
Jess also recently launched Anyi Apothecary, a line of botanical mists and oils drawn from Amazonian and Andean plant traditions. Each one is an ancestral ally, created to carry the plants’ wisdom into everyday life long after the ceremony ends.
“It’s been amazing to guide people to the tools they need to grow,” Jess said. “This work is where I feel I’m supposed to be.”
