Barbecuing is a great way to bring out the natural flavours of meat, and the right marinade or sauce can make a big difference. Here are three simple recipes, each suited to a different type of meat.
1. Honey Garlic Chicken Marinade
This sweet and savoury marinade is ideal for chicken breasts, thighs, or drumsticks. Mix 4 tablespoons of honey, 3 tablespoons of soy sauce, 2 minced garlic cloves, 1 tablespoon of olive oil, and 1 teaspoon of

paprika. Place the chicken in the marinade for at least 2 hours, or overnight for the best flavour. Remove the chicken before cooking and grill over medium heat until fully cooked. Brush the remaining marinade onto the chicken during the last few minutes of cooking after bringing it to a boil, creating a sticky, flavourful glaze.
2. Smoky BBQ Beef Sauce
This rich sauce works well with steaks, beef ribs, or burgers. Combine 1 cup of tomato ketchup, 2 tablespoons of brown sugar, 1 tablespoon of Worcestershire sauce, 1 teaspoon of smoked paprika, 1 teaspoon of mustard, and a pinch of black pepper. Simmer the mixture for 10 minutes until slightly thickened. Grill the beef first,
then brush the sauce over the meat during the final minutes of cooking to prevent the sugars from burning. Serve extra sauce on the side for dipping.
3. Lemon Herb Marinade for Pork
This fresh marinade is perfect for pork chops or pork tenderloin. Mix the juice of 2 lemons, 3 tablespoons of olive oil, 2 teaspoons of dried oregano, 1 teaspoon of thyme, 2 crushed garlic cloves, salt, and pepper. Marinate the pork for 2–4 hours in the refrigerator. Grill over medium heat until the pork is cooked through. The lemon helps tenderise the meat while the herbs add a light, aromatic flavour. This marinade also works well with grilled vegetables as a side dish.

We survived the wild intensity of the MadCool festival! Though I have to admit, it took me a few days of solid recovery to feel human again. Those late nights definitely took their toll - I’m clearly not as young as I like to think I am! Still, we are already waiting in anticipation for the 2027 lineup to be released, hoping it lives up to the magic of this year.
On a more serious note,
the intense heat we are enduring this summer is taking a massive toll on our society. We’ve all seen the devastating fires breaking out across Spain recently. My heart and thoughts go out to all those who have lost their lives, homes, and livelihoods. Please take extra care out there, stay safe, and be sensible if you are cooking outdoors.
Finally, a bittersweet milestone in our household: our notso-little angel turns 21 this month! People always say they don't know where the time goes, but this takes the feeling of time flying to a whole new level. So proud of the woman she has become, even if it makes me feel a little older! For a drink with a little zing, pineapple and ginger make a winning combination with great flavour.
Ingredients:
400ml coconut water
100ml pineapple juice
Juice of half a lime
¼ teaspoon sea salt
½ teaspoon freshly grated ginger
Simply whisk everything together and serve over ice with a slice of pineapple or lime. Pineapple provides natural sugars for quick energy, while ginger adds a refreshing kick and may help soothe digestion.

While others are sunning themselves on the beach, gracing the sides of swimming pools or hiding away in air-conditioned rooms, the members of the ADAPT Theatre Group are getting ourselves into gear to prepare for this year’s amazing bilingual pantomime “Aladdin”. As anyone who has worked in theatre knows, there is so much more to do behind the scenes than simply turn up on the day and act! As the group now has the use of the new Teatro Geli Albaladejo in San Pedro del Pinatar we have “upped our game” as well to include all manner of special effects to enhance the experience for our audiences. The first job though, of course, is to meet together for a read-through of the original script, for each actor to learn about their role, to be measured up for costumes, welcome newcomers and generally enjoy the great atmosphere we have as a theatre group. Once the summer heat has died down a little we will start our rehearsals ready for another fantastic show on 27th and 28th November. Over the 15 years we have been putting on our pantomimes in San Pedro we have gained a faithful following of both English speaking and local Spanish families and have an excellent relationship with the town. Our dance group comes from a local primary school and the money raised goes to local charities. The 2026 Solar Eclipse how to view it
On Wednesday, August 12, Alicante province will enjoy one of the most spectacular natural events in recent history as a total solar eclipse passes across parts of Spain. Although Alicante itself lies just outside the path of totality, it is still one of the best regions to experience the event, with many areas witnessing an impressive eclipse of more than 99% coverage.
Along the northern Costa Blanca, many towns will experience an almost total eclipse, creating an eerie twilight in the early evening. As the Moon gradually covers the Sun, daylight will fade and temperatures may drop slightly.
OK this may be an overnight stay rather than a day trip.
For those hoping to witness totality, a drive north will take you to Castellón de la Plana or other locations within Castellón province, where the Sun will disappear completely for around a minute and a half. These areas are expected to attract thousands of visitors, so arriving early is highly recommended. If you plan to stay within Alicante province, choose an open location with a clear view towards the western horizon. Beaches, hilltops and coastal promenades provide excellent viewing points, as the eclipse occurs late in the day with the Sun sitting low in the sky.
Never look directly at the Sun without certified eclipse glasses meeting the ISO 12312-2 safety standard. Sunglasses are not suitable, and cameras, telescopes or binoculars should only be used with approved solar filters.
Whether you travel into the path of totality or remain on the Costa Blanca to witness the near-total eclipse, this will be an unforgettable experience. The next total eclipse visible in Spain will occur on August 2, 2027. An annular solar eclipse will be visible on January 26, 2028, completing the triad of Iberian eclipses. It will not be possible to observe another total solar eclipse from Spain until 2053.

EXPLORING THE LOCAL WINE SCENE
Stretching down eastern Spain from the northern reaches of the Valencian Community to the Region of Murcia are six official wine regions, or Denominaciones de Origen (D.O.): Alicante, Valencia, Utiel-Requena, Bullas, Jumilla and Yecla. Alongside these are a number of excellent **Vinos de la Tierra (VT) and Vinos de Calidad (VC), all helping to make this one of Spain’s most fascinating – yet often overlooked – wine-producing areas.
As I mentioned last month, the dominant grape variety across much of this region is Monastrell, famous for producing rich, characterful red wines. However, it is far from the only grape worth discovering. Bobal, another native red variety, is enjoying a well-deserved revival, while white grapes such as Macabeo and Moscatel produce fresh, aromatic wines that deserve far more attention. Although the region is best known for its reds, there are some excellent whites waiting to be discovered too.
The name Levante literally means “the place where the sun rises,” a fitting description for Spain’s eastern Mediterranean coast. Over the coming months, we’ll explore each of these wine regions in turn, beginning close to home in D.O. Bullas, the region I know best.
Beyond the town of Bullas lies one of the Region of Murcia’s best-kept secrets: the beautiful Aceniche Valley. Here, old bush vines weave between pine forests and fragrant monte bajo - the wild rosemary, thyme and Mediterranean scrub that perfumes the hillsides. Many vineyards climb to over 700 metres above sea level, where cool nights and warm sunny days allow Monastrell to ripen slowly, producing wines with freshness, elegance and balance that often surprise those discovering the region for the first time.
Bullas may still be one of Spain’s lesser-known wine regions, but it is increasingly attracting the attention of some of the country’s most respected wine professionals. Murcian sommelier and wine educator Joan Belda Tortosa has described local winemaker Jorge Piernas as “a leading figure in winemaking both regionally and nationally” - high praise from one of the region’s most respected wine voices. Alongside him, former Nariz de Oro winner Pedro Martínez of De Nariz is crafting elegant, terroir-driven Monastrells that are helping redefine what this historic grape can achieve.
Walking through Bullas’ old vineyards with Jorge Piernas gives you a real sense of place. I’ve also come to know Pedro Martínez over the years, and what strikes me most is the quiet confidence they share. There is no desire to imitate Rioja or Ribera del Duero, only a determination to produce wines that honestly reflect this remarkable landscape. Alongside projects such as Pura Viña, and several other talented producers quietly making their mark, Bullas has become one of Spain’s most exciting emerging wine regions.
Few expect such nuance from this corner of Spain. Perhaps that’s exactly what makes Bullas such a rewarding discovery.

THE SOLAR ECLIPSE
I’m writing this a little time before the total eclipse of the sun on the 12th of August, so I don’t know what the weather will be like for the event. Of course this is Spain so we can expect it to be nice, but there is a good chance of cloud on the horizon at sunset when the eclipse starts.
Why all the fuss? Total eclipses of the Sun in a country are a rare event, the last one here was in 1905, over 120 years ago, so it stands to reason that with all the advances in science, opportunities for study are massively improved since the last time. Please make no mistake, Spain has some of the best astronomers and physicists in the world so this event will be very well studied.
One of the odd things to most people is that total eclipses in any given area don’t come on there own, there will be another next year and a third the following January. The reason for this is quite complex and stems from the Moons orbit around the Earth being inclined about 5 degrees to the Earths orbital plane. This is also the reason why we don’t get solar eclipses more often, if you want to look all this up read about the intersection of Lunar nodes
For me the third eclipse will be the most interesting, this will be what’s called an annular eclipse. What is one of those? The moon is not a constant distance from the Earth, this eclipse takes place when the Moon is at apogee, the furthest distance from Earth so appears a little smaller in the sky. The result of this is that the eclipse won’t be entirely total, the moon will cover most of the sun but leaving a fiery ring around it. This is called an annulus, hence the name.
I will be using a specially adapted telescope to look at the eclipses, One with a purpose made solar filter, this protects the telescope and stops me blinding myself. Don’t ever look at the sun directly, you will lose your sight. Purpose made eclipse glasses are cheap and easily available over the internet. I got a few sets for our group a little while ago.

Art, crafts, live music and fireworks in Hondón de las Nieves
On Friday the 7th and Saturday the 8th of August, the traditional craft market will again be held in Hondón de las Nieves, and as always ends on Saturday at midnight with an impressive “correfocs” (literally: fire run) that attracts people from over the whole área. A huge float passes through the streets, accompanied by beautifully dressed devilish figures that set off flares, bangers and other fireworks.
Around twenty-five artisans are expected to set up their stalls in the town centre. This year, Sol Redò will enliven the fair with traditional music, while children can take part in workshops, have a ride on the Merry-go-round, and play board games. This ensures they won’t get bored while their parents settle in at the Argentine tavern, the crêperie, or the Arab tent to enjoy grilled meats, a sweet or savoury crêpe, or a unique kebab.
The artists and craftsmen come not only to sell their items, but also to work in their stalls, so you can see the skill and patience with which they make their things. You can ask them to explain techniques or tools and even place special orders. They all want to share their love for their craft with you. Each stall offers something different, so there is certainly something for everyone.
The organisation of the market is again in the hands of the association Amata. It is not easy for the artisans to make a living from their craft, especially when they have to compete with products from a factory or imported from other countries. Therefore, participants in an Amata fair are only allowed to sell products they have made themselves. In the eleven years that Amata has organised this market, it has got the reputation that you can buy here original handicrafts directly from the maker, at a fair price for both.
