Summer Recipes Summer is a wonderful time to share good food – whether it is last minute BBQ with friends and family when the sun comes out, or a picnic on the grass, or even a simple family kitchen supper. Here I have shared some of my favourite summer time recipes that are quick and easy; meaning more time to get outside and enjoy the weather and spend time with your family.

Yoghurt Orange and Lemon Mini Cupcakes

Spaghetti Primavera

Top 100 Finger Foods These Cute Cupcakes are manageable mini mouthfuls for little ones. Adding some yoghurt and citrus fruit keeps them lovely and moist and gives them a deliciously refreshing flavour. They would be great for birthday parties.

From ‘The After School Meal Planner’ You can make this with spaghetti or tagliatelle. The sauce is very simple and quick to prepare. You can use other vegetables like carrot sticks or cauliflower florets depending on what your child likes. To preserve the vitamin c content of the vegetables, cook them in the minimum amount of water until they are just tender.

Ingredients 50g butter 100g caster sugar 1 egg Zest ½ small lemon and ½ lime ½ tsp orange zest 125g self-raising flour 50ml natural yoghurt (not low fat)

For the Icing 225g icing sugar 1 tbsp fresh orange juice & fresh lime juice Method Preheat the oven to 180°C/350°F/Gas 4 and line a mini muffin tin with paper cases. Cream the butter and sugar until pale and fluffy. Gradually add the egg, beating well between additions. Stir in the zests. Sift over the flour and fold in well. Stir in the yoghurt. Divide the mixture among the mini muffin cases and bake for 18-20 minutes until risen, lightly golden brown and firm to the touch. Cool in the tins for 5 minutes then transfer to a wire rack and cool completely. Meanwhile, to make the icing: sift the icing sugar into a bowl. Make a well in the centre and stir in the juices and beat well. Spoon the icing onto the cooled cupcakes and allow to set for up to 30 minutes. Store in an airtight container for up to 5 days.

150g (5oz) spaghetti 100g (4oz) broccoli, cut into small florets 75g (3oz) courgette, cut into strips 15g (½ oz) butter 4 spring onions, finely sliced 100g (4oz) frozen peas 1 tomato (approx 140g/5oz), skinned, de-seeded and chopped 150ml (5fl oz) crème fraiche 75 ml (2 ½ fl oz) vegetable stock Squeeze of lemon juice 4 tbsp freshly grated parmesan cheese Method Cook the spaghetti according to the instruction son the packet. Blanch the broccoli and courgette in lightly salted boiling water for 4 minutes. Melt the butter in a saucepan and gently fry the spring onions for 1 to 2 minutes. Stir in the peas and cook for 1 minute. Stir in the chopped tomato and the blanched broccoli and courgette and cook for 1 minute more. Stir in the crème fraiche, vegetable stock, lemon juice and parmesan. Cook over a gentle heat for 2 to 3 minutes. Season to taste, then stir in the cooked spaghetti.

After School Meal Planner You can add lots of different ingredients to paella. Adding sausage is nice; either slices of ordinary, cooked sausages or chorizo, which has a smoky taste. If you use chorizo, add about 50g of it with the chicken and leave out the smoked paprika and use ordinary paprika instead. Ingredients

1 tbsp vegetable oil 1 onion, finely chopped 75g red pepper (approx ½ a pepper) 1 clove garlic, crushed or finely grated 1 chicken breast (approx 125g), cut into strips ½ tsp smoked paprika or ordinary paprika 200g long grain rice 3 tomatoes (approx 200g), deseeded and cut into 1cm dice 500ml chicken stock 1 tbsp tomato puree Pinch of dried chilli flakes 1/3 tsp salt 75g peeled prawns 110g frozen peas 3 spring onions, finely sliced Method Heat the oil in a fairly large pan and sauté the onion and red pepper for 1 minute, then lower the heat and cook, covered, for about 10 minutes or until softened. Add the garlic and cook for 1 minute. Turn up the heat and sauté the chicken strips for 2-3 minutes or until the chicken turns white. Add the smoked paprika and the rice and cook gently for 2 minutes. Add the chopped tomatoes. Mix together the stock and tomato puree and pour this over the rice. Give it a quick stir and add the chilli flakes and salt. Cover and cook over a low heat for 12-15 minutes or until the rice is tender (check cooking instructions on the packet). Add the prawns and peas for the last 2-3 minutes. Finally, stir in the chopped spring onions.

Luscious Lamb Koftas The Fussy Eaters’ Recipe Book If your child just won’t sit still long enough to eat anything, it might be a good idea to try finger food. Iron is the most common nutritional deficiency in young children so it’s good to make finger food such as these lamb koftas as meat provides the best source of iron, which is important for growth and development and crucial in the production of healthy red blood cells, which carry oxygen around the body including to the brain. A deficiency of iron often leads to lack of concentration and tiredness and ensuring that your child gets enough iron can markedly improve academic performance.

Managing children’s behaviour in the summer holidays

The summer holidays are nearly here! Many parents may be wondering how to keep their children entertained and minimise challenging behaviour, so here are a few tips. Firstly don’t expect too much from your children, their daily routine will have changed. They will have been on a regular schedule and need a chance to wind down and adjust. You can expect challenging behaviour and rule bending for a few days until they adapt to the holiday routine. To help you manage your children on a daily basis it is firstly important to plan your day starting with: ROUTINE An age appropriate routine is still necessary particularly for the younger ones so that the child knows what to expect, this will help minimise melt downs and ensure you gain control of your schedule free children. If you are at home with younger ones it is also a good idea to have a quiet time after lunch. Older children will test you as they are used to having a very structured day. Planning out a schedule for the holiday homework with them is always a good idea. You can start by letting them take a few days break, but then try to do a little bit every day if necessary. Helping them to plan out their homework can teach them how to manage it themselves in the future. Next agree house rules with them to minimise friction. Such as:

• Remember to keep your room tidy and make your bed. • Tidy up after yourself around the house. • Be respectful of other people’s belongings. • Take it in turns to choose games/ activities/movies etc. They can also muck in with the chores. Remember to allow plenty of time to wind down at the end of the day and keep bedtime routines the same for younger children. With older children it is important to terminate screen time i.e. phones, computers, games and television an hour before bed to stop sleep patterns being affected with over stimulation.

MEALS Mealtimes should be at roughly the same time. Younger children will not cope well with too much variation.

Older children can be more flexible. You can start the day with a reasonably timed, if later breakfast. Remember to give healthy light mid-morning and midafternoon snacks such as fruit, crudities, cheese and carbohydrates i.e. rice cakes, with water to keep their energy levels up. Provide sips of water throughout the day in a fun sports bottle to keep them hydrated.

ACTIVITIES. This is a great time to fuel your children’s interests! Younger children need a little more guidance with their shorter attention span. On some days plan morning and/or afternoon activities such as art, cooking, building a play house with

sheets, water/sand play in the garden (if you have one) or a trip to the park or swimming pool. With older children, a holiday project such as a scrap book of places they have visited and the things they have done can be fun, creative and educational. Much older children can write a diary. Encourage them to play outside if possible and limit TV, video games, computer and phones. Any play dates at your house should not be too long. A few hours is sufficient for the younger ones.

DAYS OUT Plan and book days out in advance, the holidays are a busy time! Ensure you allow enough time to get there and back. Play games such as I spy or take

things to keep them entertained on the journey. Pack a bag with snacks, plenty of water, change of clothes, sun cream, hats and equipment you will need for younger siblings. Make sure the activity is age appropriate and donâ€™t make the day too long as they will start to lose interest and become challenging. In all of the above remember not to spend too much time in the sun. This can exhaust them and make them irritable.

SIBLINGS Manage sibling rivalry by using this time to work on activities together such as building a sculpture out of junk or

working as a team to do house chores. Try to mediate when there are issues and help them work through it. With younger children who have even younger siblings involve them in the care of their sibling to give them a sense of responsibility, but also make special time for them if their brother or sister is sleeping. Enlist friends and family help to divide and conquer if necessary so that each child is able to have occasional one on one time. Alternatively arrange some play dates away from home. The holidays are a fun and relaxing time to either chill out at home or enjoy all the wonderful activities London has to offer. So if you follow the basic rules above you should all be able to gain valuable, harmonious family time together for the duration!

Summer Water Safety Tips To Save Lives The UK’s drowning prevention charity gives advice as the weather warms up The weather is hotting up and the UK’s drowning prevention charity – the Royal Life Saving Society (RLSS UK) – has issued water safety tips that could save lives this summer. Around 60 children drown in the UK each summer, and around 75 UK citizens drown on holiday abroad so being aware of the basic principles of open water safety, combined with knowledge and understanding of the hazards, can increase enjoyment and significantly reduce the number deaths each year. And with temperatures on the rise and many people preparing for their summer holidays, ensuring simple advice is followed by all members of the family is just as important as remembering to slap on sun cream or remembering your passport, says RLSS UK Chief Executive, Di Standley. ‘Ensuring you and your family are clear on water safety and steps to take to keep everyone safe in and around water could mean the difference between a happy summer holiday, and a devastating family tragedy. ‘We want people to enjoy all of the fun activities water has to offer at home and abroad during the hot weather but to do so safety by following simple advice,’ she added.

1 Do not allow your child to use a paddling pool without adult supervision

1 When researching your holiday, check the safety arrangements of any waterbased activities

2 Ensure paddling pools are emptied and turned upside-down as soon as they are finished with for the day 3 Check the garden regularly for anything that could collect water, like buckets and wheelbarrows 4 Supervise children closely when in parks or other places that might have a river, pond or lake

Not all water sites have supervision at all times 3 Check bathing sites for hazards, check the safest places to swim and always read the signs – find out what local warning signs and flags mean 4 Make sure the whole family can swim

FRENCH CLASSES IN HACKNEY La Petite Ecole des Crocodiles, the Hackney French speaking school that delivers French classes for francophone children has now opened new classes for English speaking children! Sessions take place in the Round Chapel off Lower Clapton Road, E5 OPU on Mondays, Tuesdays and Wednesdays from 4.15pm and provide: French language education through play, songs, stories for young children; speaking, writing, grammar, spelling, reading and drama classes for older children. Les Crocodiles was set up six years ago by a small group of likeminded French-speaking parents. It now serves over 60 families that are now settled in East and North London with origins as diverse as France, Belgium, Martinique, Canada, Congo-Brazzaville, and other parts of French-speaking Africa. While London boats a large French community, most French-language schools and services are in the south-west London. ‘It was important for us to create an environment where our children could see the French Language come alive,’ says Makila Nsika, local mother of three. ‘Bilingual children need to see the language used outside the home. It’s an important part of maintaining their identity, and of making them feel at home in their community’. Les Crocodiles hopes that the new after-school sessions, led by local native-speaking French teachers, will help these children and encourage more francophone families to get in touch. By opening new classes for English speaking families, Les Crocodiles are delighted to teach and share their beautiful French language and culture! All the families will have access to a large range of French books and resources from the school’s library, which is opening this September 2014. This dynamic Community Group is also planning to launch a festival of French films for all age groups. The Anna Fiorentini Theatre & Film School for 4-18 years The North London branch of the Saturday Anna Fiorentini Theatre & Film School is currently taking applications for the next term and its forthcoming Taster Days. The school originally opened in Hackney in 2001 and now has over 250 students aged 7-18, many of whom have gone on to secure professional work on TV, Film and in theatre. Examples include Charlie Jones and Belinda Owusu, who played Ben Mitchell and Libby Fox in EastEnders and Tahj Miles who currently plays Simba in the West End’s The Lion King. As well as providing professional training, the aim of the school is to also provide a safe and supportive environment for

all children to explore their creativity regardless of what career path they eventually choose to follow. Every week students follow a timetable of drama/film, dance and singing under the guidance of top industry professionals. As well as weekly classes, students are given the opportunity to take part in Voice Idol, Drama and Stars in their Eyes competitions, culminating in a yearly Oscar Night. The school has recruited some excellent teaching staff including: Mike Burnside (actor in The Bill, Bergerac, the RSC), Mark Short (choreograhper to Tina Turner, Peter Andre, Liberty X), Michael Buffong (director of EastEnders, Holby City, Casualty and Coronation Street), Jacob Murray (former associate artisitc director of the Royal

Exchange Manchester and teacher for National Theatre’s educational Department) and Jay Henry (X-Factor coach and voice coach having worked with Craig David, Mariah Carey and George Michael to name but a few). Celebrities such as Joseph Marcell (Jeffery in Fresh Prince of Bel Air) and Dani Harmer (Tracey Beaker), have also been amongst special guests to give master classes at this prestigious school. Students get to work with a variety of casting directors, producers and TV directors. They also get the opportunity to be considered for the agency to audition for professional work.
