s we prepare to send this issue to press, we are excited for the coming months with a range of international boat shows on the calendar. First up is Cannes, where you’ll spot this month’s cover star, the stunning Sail 45 from Aquila Catamarans. Then we’ll be heading to the Monaco Yacht Show for the exclusive press reveal of CRN’s newest superyacht, Amor à Vida – which we highlighted in our last issue. Later in the year, the spotlight will be firmly on our region as first Qatar then Abu Dhabi and Dubai stage their own yachting events, we’re looking forward to reporting back to you on those. For this issue, we headed out onto the roads in the stunning Range Rover SE, the latest model that proved itself more than capable of carrying forward such an iconic name. We visited The Ritz-Carlton, Bahrain, Waldorf Astoria Doha West Bay and NH Collection Maldives Reethi Resort. Whether you’re seeking a short city break or a spot of overwater relaxation in the Indian Ocean, each of these properties comes highly recommended. We’re also happy to recommend our two dining experiences at Ninive at Raffles Al Areen Palace Bahrain and COYA at the W Doha. The response to the extended Horology section in our last issue was positive, so we’ve continued with extra coverage of the latest stunning collectors’ timekeepers. ‫‪The company announced the successful Float‬‬ ‫‪Out of Amangati at the T. Mariotti shipyard‬‬ ‫‪in Genoa, Italy. Following centuries of Italian‬‬ ‫‪shipbuilding tradition, the ceremony marks‬‬ ‫‪the completion of the exterior build and the‬‬ ‫‪transition of Amangati from dry dock to sea.‬‬ ‫‪The 180-metre, nine-deck Amangati now‬‬ ‫‪moves to the outfitting quay in Genoa, where‬‬ ‫‪the finishing of the interiors will unfold in‬‬ ‫‪the months ahead – including the yacht's 47‬‬ ‫‪expansive suites, the Aman Spa (the largest‬‬ ‫‪in luxury yachting), four signature restaurants,‬‬ ‫‪Selora lounge and the Marina – ahead of sea‬‬ ‫‪trials, delivery and preparation for guests.‬‬ ‫‪Amangati will depart Palma de Mallorca on a‬‬ ‫‪six-night voyage bound for Nice on May 7, 2027,‬‬ ‫‪opening its inaugural Mediterranean season with‬‬ ‫‪voyages of between five and eight nights across‬‬ ‫‪the Mediterranean, Adriatic, Ionian and Aegean‬‬ ‫‪seas. Designed for an active life at sea, NETTO II offers a considered arrangement of spaces for both social connection and privacy. She accommodates up to 14 guests across seven suites, including a private 517sq/m Owner’s Deck and six additional cabins on the Main Deck. Her guest areas are designed around a natural connection between inside and outside living. The Main Deck lounge features floor-to-ceiling panoramic windows and opens seamlessly to the exterior Aft Deck, while the spacious Sun Deck offers generous open-air living, complete with an oversized Jacuzzi. Closer to the water, the Beach Club opens to the sea on three sides and incorporates a wellness area with a gym, hammam and sauna. he company’s display will comprise two sail models and five power models with the 45 Sail as a brand-new launch representing the sail range and the 35 Sport, joining the power range. Aquila’s 45 Sport power model will also make its much-anticipated European debut at the show which takes place from September 8 to 13. At 47 feet with a 25'5" beam, the design of the 45 Sail prioritises interior space, exterior social hubs, cruising comfort and sailing capability with more than 1,350sq/ft of upwind sail area. The fixed bow provides additional deck space forward with comfortable seating and sun pad area. Bridge-to-bow access allows movement around the boat from the large open flybridge helm area which features U-shape seating, a coffee table and a forward-facing sofa. The aft cockpit, a social space designed for everything from family dinners to sunset celebrations, flows directly into the 45 Sail’s high-spec salon and galley. Panoramic windows bring natural light into the interior living spaces which offer comfort during extended cruising and a range of home comforts. Buyers can choose between three- and fourcabin configurations, each with private entrances and heads with showers, meaning the 45 Sail can comfortably sleep up to 12 guests. This level of adaptability and personalisation is aimed at suiting the different needs of both private owners and charter operations. Meanwhile, the new power catamaran model from Aquila, the 35 Sport, features the same bold styling as the flagship of the Sport range (45 Sport) in a more compact package. A doublestepped hull delivers strong performance and efficiency, backed by twin Mercury Verado V8300hp (standard) or twin Mercury Verado V10400hp (optional) outboards. With a 14'9" beam, the layout is built for entertaining as much as high-speed cruising. Bow seating comfortably fits four with lots of convenient features and storage areas, while the aft cockpit has a large U-shaped convertible seating area with adjustable backrest. This area also features a well-appointed wet bar with sink and storage, a Corian-topped galley block and a Fusion Signature Series audio system with six speakers throughout the boat. The helm station is highly accessible with clear visibility and four helm seats with flip down bolster cushions, arm rests and adjustable seat positions. Below deck, the cabin sleeps two in a queen berth with a memory foam mattress, accessed via a sliding console door at the helm. Featuring optional climate control and a head with a shower, the cabin is purposefully designed to deliver the comfort, storage, and the versatility needed for everything from all-day adventures to extended coastal cruising. Making its European debut is the flagship of Aquila's Sport range, the 45 Sport, which sets a new standard for the centre console category as a genuinely wide-beam entertainment platform. Launched at Miami International Boat Show 2026, its styling is inspired by luxury SUVs with bold, contemporary lines and a commanding presence. Hydraulic drop-down hull-side terraces extend the 45 Sport's beam from 15ft to over 19ft, opening the aft cockpit into a vast, water-level social space. Two U-shaped seating areas convert into a full-width sunbed and at the bow, another full-beam seating area features large forward-facing loungers for a second social zone. Thanks to its double-stepped hull technology and twin 600hp Mercury Verado V12 outboards, the 45 Sport is capable of speeds in excess of 50mph. Also on show at the event will be the 50 Sail, Aquila’s first sailing model, launched earlier this year, alongside the 50 Yacht, the 46 Yacht and the 46 Coupe, which was developed to set a new direction for cruising catamarans. ange Rover has spent more than half a century shaping the luxury SUV, and the latest SE shows how comfortably that identity can evolve. Mildhybrid assistance joins the familiar mix of refinement and capability, yet the car remains unmistakably Range Rover. We spent time inspecting and driving the new model to see how the latest powertrain fitted into the experience. Given Range Rover’s standing among luxury SUVs, there was plenty for the SE to live up to. Gravity and Grace In person, the new Range Rover has a beautifully sculpted quality. Broad, smooth surfaces give the body real presence without making it look heavy, while the falling roofline, strong waistline and rising sill line create that unmistakable profile. The short front overhang and tapered boat-tail rear lend elegance to its substantial proportions. Santorini Black suited our test car superbly, emphasising the smooth surfaces and clean lines of the bodywork. The Nickel Atlas Exterior Pack added measured contrast, while Pixel LED headlights sharpened the front. To our eyes, the 22-inch diamond-turned wheels gave the car a stronger, more grounded stance. The deployable side steps extended when needed, then tucked themselves neatly away again — preserving the clean lines, along with our dignity on the way in. Luxury in Layers Inside, the Caraway cabin made an immediate impression. Perforated Windsor leather, Noble Chrome controls, Natural Brown Walnut veneer and Duo Tone headlining gave the interior richness and depth. The Extended Leather Upgrade added yet another layer of refinement, while the low, layered dashboard and neatly integrated vents kept the architecture clean and calm. The 20-way electrically adjustable front seats offered memory, four-way lumbar adjustment and cushion extension, while rear passengers benefited from power recline. From the Command Driving Position, visibility was excellent and the Range Rover’s size soon felt easy to judge. Cabin Air Purification Pro could prime the interior before a journey, while the centreconsole refrigerator kept drinks chilled. The latter quickly justified its place in the console. Control With Simplicity The technology matched the cabin’s restraint. The curved 13.1-inch Pivi Pro touchscreen is substantial, but its slim, floating appearance keeps the dashboard elegant, and the functions we used most were generally only a tap or two away. For a luxury SUV weighing around 2.4 tonnes, the acceleration felt almost cheekily brisk.

The Interactive Driver Display presented key information clearly, while wireless charging reduced clutter. The ClearSight interior rearview mirror and 3D Surround Camera proved particularly useful in tighter spaces. Our test car’s Meridian Sound System combined a 400W amplifier, 14 speakers and a dual-channel subwoofer. The sound was rich and beautifully detailed, and generous enough to lend a little credibility to some questionable playlist choices. The Underlying Power On the road, the mild-hybrid system suited the Range Rover exceptionally well. Its 2,996cc sixcylinder setup produces 360PS and 500Nm, channelled through an eight-speed automatic transmission and all-wheel drive. With Dynamic Launch engaged, 0-100km/h took 6.2 seconds. For a luxury SUV weighing around 2.4 tonnes, the acceleration felt almost cheekily brisk. The Range Rover gathered speed with impressive authority, never giving the impression that mass was something it needed to negotiate. Electronic Air Suspension and Adaptive Dynamics maintained the composure we expected, while All Wheel Steering made the SE noticeably easier to place at lower speeds. The 10.95-metre kerb-to-kerb turning circle was especially welcome in town. Terrain Response 2, a twin-speed transfer box, 291mm of off-road ride height and 900mm wading depth preserve this Range Rover’s formidable ability beyond the tarmac. Subtle Assurance The assistance systems were comprehensive and pleasingly discreet. Adaptive Cruise Control with Steering Assist, Blind Spot Assist, Lane Keep Assist, Emergency Braking, Rear Traffic Monitor and Rear Collision Monitor worked together with little intrusion during our drive. Park Assist, front and rear parking aids and the 3D Surround Camera helped in tighter spaces, while Driver Condition Monitor and Occupant Protection Assist added reassurance. The systems made themselves useful when required and then quietly receded from the experience. Happily, none seemed particularly desperate for attention. A Modern Range Rover, Fully Realised The SE left us feeling that the Range Rover formula remains remarkably coherent. There is a great deal of technology beneath the 34

The collection is offered in three editions: ● Stainless steel with a silver dial, limited to 1,022 pieces, offers a balanced take that’s closest in spirit to the original Top Time ref. 2002. ● Steel and platinum with a black lacquered dial, limited to 315 pieces, introduces contrast and depth, with the platinum bezel adding weight and presence against the high-gloss black surface. ● 18k red gold with onyx dial, limited to 250 individually numbered pieces, brings an even more elevated expression. The dial is cut from natural onyx, the first use of the stone by Breitling, revealing a unique depth and luster. Manufacture Performance The engine of the watch is the Breitling Manufacture Caliber 01, a COSC-certified chronograph movement designed for precision and reliability. Its column-wheel architecture and vertical clutch ensure smooth, accurate operation, while a 70-hour power reserve supports extended wear. The date is shown at three o’clock, the month at six o’clock, and the day of the week at nine o’clock. The moon phase is positioned at 12 o’clock. Thanks to a newly calculated reduction gear, the display will deviate by only one day after 1,040 years. IWC’s signature Double Moon ensures the moon is shown correctly for viewers in both the northern and southern hemispheres. The four-digit year display – another hallmark of IWC’s perpetual calendars – is located between seven and eight o’clock on the dial. The Perpetual Calendar ProSet is powered by the IWC-manufactured 82665 caliber, featuring a nickel-phosphorus escapement and a silicon hairspring. The bidirectional Pellaton automatic winding system is reinforced with ceramic components and builds up a power reserve of 60 hours in the mainspring. This Big Pilot’s Watch is fitted on a black rubber strap. Thanks to the integrated EasX-CHANGE system, the strap can be swapped for another option without any tools.

he new BR-03 GMT Green Lum takes the GMT function to a new level. Its original dial stands out with a unique vertical gradient. Transitioning from black to green, from top to bottom, it evokes a night sky illuminated by the glow of the Northern Lights. Powered by an automatic movement and water-resistant to 100 meters, the new, shock-resistant watch is available as a limited edition of only 500 pieces. The new timepiece stands out in the dark with its green hue and intense afterglow. The numerals, hour markers and hands are coated with pale green Super-LumiNova C3, while the 24-hour scale on the bidirectional rotating bezel in polished ceramic is also photoluminescent. More than just a stylistic feature, this property is above all a functional advantage, allowing the time to be read in the dark. The GMT Function For Travellers The BR-03 GMT Green Lum simultaneously displays the time in two different time zones. Local time is read on a 12-hour scale printed on the dial, while the destination time is indicated by a dedicated hand with a large triangular tip, pointing to a 24-hour scale engraved on the bezel.

The speakeasy returns as a focal point – a hive of liberation; a space where conventions of class and identity were disrupted – and the collection draws on the diverse styles of the characters who would intermingle and populate it after hours. Sailor clothing forms a foundational motif bringing to mind those who would go to sea to build better lives for their families. “That’s something that both Salvatore and my own family experienced,” explains Maximilian Davis. “He left his home in Italy for America before returning home, and my family moved from Trinidad and Jamaica to Manchester. They all crossed the water to discover new beginnings.” Sailor uniforms, and the status they signify, are both reconsidered and subverted: forms are deconstructed; buttons displaced; fastenings undone. Their wardrobe is equally reimagined through fabrication: nautical knitwear is needle-punched with chiffon to structure its form; workwear parkas are realised in textured nappa, their hoods lined with shearling. Colours, for the most part, are muted with sharp suiting in navies, blacks and greys but pops of colour, from bright burnt orange to denim blue, in interesting fabrics add a fun element.

he Ritz-Carlton, Bahrain has long been one of the capital’s most recognisable luxury resorts, but three days spent within its grounds reminded the Hadag team just how much it offers beyond the familiar façade. Spread across 20 acres on the edge of Manama Bay, the hotel sits amid lush gardens, golden sandy beachfront and an expansive waterfront setting shaped by its private lagoon and island. The result is a property that feels substantial and established, yet still firmly connected to the coast. That scale is balanced by an atmosphere that feels composed rather than imposing. Space, privacy and attentive service combine with the waterfront setting to create a genuine sense of escape, even with the city close at hand. A Resort with Room to Breathe Accommodation at The Ritz-Carlton, Bahrain spans 260 rooms, including 32 suites, 90 Club Level rooms and 19 three-bedroom seafront villas. The villas raise the stakes with private infinity pools, beach access and 24-hour butler service. Guests can choose between Gulf and city views, while marble bathrooms, rain showers, 600-thread-count linen and twicedaily housekeeping reinforce the feeling that details have been given due consideration. The guestrooms themselves are geared as much towards comfort as display. Coffeemaking facilities, individual climate control and an executive desk sit alongside the more indulgent touches, while the choice between Gulf and Manama skyline views gives each stay a different outlook. It is a practical expression of luxury, where thoughtful design and wellchosen amenities make the experience feel complete rather than overworked. The Club Level adds another layer for guests who value privacy, with its elevated lounge and panoramic views across the Arabian Gulf. What stayed with us most, however, was the ease of the experience throughout the resort. Service felt polished without becoming ceremonial, warm without drifting into over-familiarity. Requests were handled efficiently and greetings felt sincere. Exceptional service is felt in how effortlessly everything falls into place. The Water’s Edge The private beach wraps around a lagoon and island, giving the hotel genuine resort character. With pools, a marina, paddle boarding and kayaking all on offer, guests looking to stay active are well catered for. We, meanwhile, found the combination of water, a shaded lounger and the prospect of lunch made a very persuasive case for taking the morning at an easier pace. The Royal Beach Club adds fitness facilities, tennis and squash courts, an indoor pool, beach, lagoon and marina access. The gym is well equipped, providing everything needed for a proper workout — a useful option to have close at hand during a stay built around rather 68

Beyond the four venues we experienced more personally, the line-up includes La Med for its lavish breakfast buffet; La Plage for ArabianMediterranean fare beside the Gulf; Cantina Kahlo for authentic Mexican cuisine; Nirvana for Indian fine dining; La Table Krug for an intimate ‘Rough Luxury Cuisine D’Author’ experience; Thai Lounge for Asian and Thai influences; Le Jardin by Cantina Kahlo for sustainable beachfront dining; La Dolce Vita for light fare and sunset drinks; La Vie for healthy snacks and beverages; Café Gourmandise for breakfast; Burlington Club for cigars, fine French premium beverages and grapes; The Lobby Lounge for afternoon tea and light bites; and Nikmati, the beachside pop-up whose seasonal concepts change through the year. One evening, Plums gave us a more formal change of pace. The modern steakhouse specialises in premium cuts and fresh seafood, with décor every bit as rich as the menu. The room has presence without becoming theatrical, and there is a pleasing confidence to the occasion from the moment you sit down. It was the kind of dinner that drew us fully into the experience, briefly turning even the most talkative among us into remarkably focussed diners. Primavera brought a distinctly Italian mood to another evening. Its modern Osteria concept centres on seasonal ingredients and reinterpretations of classic dishes, preserving recognisable Italian foundations while giving them a contemporary edge. We enjoyed the balance: refined enough to feel special, yet relaxed enough to let the food remain the focus. There was a confidence to the experience that felt distinctly Italian without ever becoming overplayed. La Terrace offered a different kind of occasion altogether. Set poolside beneath the evening sky, it brings Mediterranean influence together with French classical dishes in an atmosphere that feels lighter and more open. We found it particularly well suited to Bahrain after dark, when the heat softens and an outdoor table suddenly becomes the most desirable seat in the house. The Ritz Gourmet Lounge shifted the mood once more. Inspired by César Ritz and Auguste Escoffier, its Belle Époque character, signature desserts, fine coffees and hookah terrace draw on a more old-world idea of hospitality. We settled in for coffee and dessert and quickly understood the appeal. There is something satisfyingly civilised about a room that treats a well-made coffee and something sweet as an occasion in themselves; some traditions, thankfully, have never needed modernising. Beyond the Expected Dining may be one of the resort’s great strengths, but life at The Ritz-Carlton, Bahrain extends well beyond the table. Families have Ritz Kids, a playground, sanddune play area, beach and pool activities and water sports on request. Business and event guests have more than 40,000sq/ft of indoor and outdoor space, from ballrooms and boardrooms to seaside villas and the private island. The scale gives the hotel unusual flexibility: an intimate gathering can feel genuinely private, while larger occasions have the scale to create real impact. The original Waldorf Astoria is a property of legends. Not just for its iconic art deco façade and décor but also for the sheer glamour of its storied history. I have to admit, I’m a bit of a sucker for all things 1920s and ‘30s, it was such a romantic era, so a trip to Doha’s own art deco gem was a topic of much anticipation. From the moment I stepped from the car into that luxuriant entryway, beneath the hotel’s faithful interpretation of the original’s art deco exterior, it did not disappoint. The lobby is impressive, to say the very least. Black and white floors edged in elegant solid black lines impart a distinct sense of occasion. An oversized Tiffany clock, an homage to the New York City original, is a striking focal point with velvet seating in softest Tiffany blue adding to the overall ambience. To the side of the lobby, the entrance to the ohso-elegant Peacock Alley – named for the alley that joined the two original hotels – peeks out, the white baby grand piano that provides gentle accompaniment to a scrumptious afternoon tea, offering a glimpse of joys to come.

The Suite Life

Check-in was quick and efficient and I was soon headed up to my King One-Bedroom Suite – regal by name and regal by nature. Again, black and white décor with antiqued mirrored surfaces evoked an art deco feel. A generous living room featured a plush sofa, which pulls out to form an extra bed, along with deep, comfortable velvet chairs. A desk was useful for work that really couldn’t wait and a dining table meant I could feast on room service in comfort. Rounded furnishings and abstract artworks imbued an ambience of golden-age elegance and tea- and coffee-making facilities added to a space clearly designed for relaxing. The spacious bedroom featured a speckled floor, velvet tub chairs in palest blue and floor-to-ceiling windows offering views over the city. An An enormous walk-in wardrobe spoke of visitors heading out to high-class events in their finery. While, for me, the bathroom was the ultimate pièce de résistance. A wide, trough-style sink was served by jazz-age taps, walls and floors were in richly veined grey marble and black surfaces and mirrors picked up the bedroom’s décor. A walk-in shower and deep soaking tub completed the setup which almost felt like having my own private spa. The whole space was deeply peaceful and, with 400-thread-count sheets, I could easily have hopped into bed right then and settled in for the night but there was exploring to be done and I wanted to discover if the rest of the property could possibly be as gorgeous as the lobby and my rather splendid room.

I headed down to Peacock Alley, where I was just in time for afternoon tea. The surroundings here are gorgeous, stunning multilevel chandeliers glitter above soft, rounded sofas and chairs with stools in the ever-present Tiffany blue velvet. I 76

‫عد فندق والدورف أستوريا األصلي أسطور ًة حقيقية‪ .‬ليس فقط‬ ‫ُي ّ‬ ‫لواجهته وديكوره المميزين على طراز اآلرت ديكو‪ ،‬بل أيضًا لسحر‬ ‫يمت بصلة إلى‬ ‫مولعه بكل ما‬ ‫تاريخه العريق‪ .‬ال أخفيكم سرًا‪ ،‬فأنا‬ ‫ٌ‬ ‫ّ‬ ‫عشرينيات وثالثينيات القرن الماضي‪ ،‬فقد كانت حقبةً رومانسيةً‬ ‫بامتياز‪ ،‬لذا كانت زيارة جوهرة الدوحة المعمارية على طراز اآلرت‬ ‫ديكو موضوعًا أتوق إليه بشدة‪ .‬منذ اللحظة التي وطأت قدماي‬ ‫المتقن للفندق الذي‬ ‫أرض المدخل الفخم‪ ،‬تحت التصميم الخارجي ُ‬ ‫ُيحاكي تصميم اآلرت ديكو األصلي‪ ،‬لم ُيخ ّيب الفندق ظنّي‪.‬‬ ‫ردهة الفندق رائعة بكل المقاييس‪ .‬أرضياتها السوداء والبيضاء‪،‬‬ ‫المحاطة بخطوط سوداء أنيقة‪ ،‬تضفي عليها طابعًا مميزًا‪ .‬ساعة‬ ‫ُعد تكريمًا للساعة األصلية في مدينة نيويورك‪،‬‬ ‫تيفاني ضخمة‪ ،‬ت ّ‬ ‫ت ّ‬ ‫ُشكل نقطة جذب الفتة‪ ،‬بينما تُضفي المقاعد المخملية بلونها‬ ‫األزرق الفاتح لمسة جمالية على األجواء العامة‪.‬‬ ‫سمى‬ ‫على جانب الردهة‪ ،‬يطل بيكوك آلي‪ ،‬األنيق للغاية ُ‬ ‫الم ّ‬ ‫تيمنًا بالممر الذي كان يصل بين الفندقين األصليين في‬ ‫ّ‬ ‫نيويورك – حيث يعزف بيانو أبيض كبير ألحانًا هادئة ترافق‬ ‫جلسات الشاي بعد الظهر‪ ،‬مما يقدم لمحة عن المتع القادمة‪.‬‬ ‫حياة األجنحة‬ ‫كان تسجيل الوصول سريعًا وسلسًا‪ ،‬وسرعان ما توجهت إلى‬ ‫فخم بكل معنى‬ ‫جناحي الملكي ذي غرفة النوم الواحدة ‪-‬‬ ‫ٌ‬ ‫الكلمة‪ .‬الديكور باألسود واألبيض‪ ،‬مع أسطح مرايا عتيقة الطابع‪،‬‬ ‫تضم أريكة‬ ‫يستحضر روح اآلرت ديكو بامتياز‪ .‬صالة جلوس واسعة‬ ‫ّ‬ ‫فارهة تتحول إلى سرير إضافي‪ ،‬إلى جانب كراسي مخملية عميقة‬ ‫ومريحة‪ .‬مكتب عملي لمن ال تنتظر أعماله‪ ،‬وطاولة طعام أتاحت لي‬ ‫االستمتاع بوجبات خدمة الغرف بكل راحة‪ .‬قطع أثاث دائرية وأعمال‬ ‫فنية تجريدية أضفت أجواء أناقة العصر الذهبي‪ ،‬فيما أكملت أدوات‬ ‫تحضير الشاي والقهوة مشهد فضاء ُص ّمم خصيصًا لالسترخاء‪.‬‬ ‫أما غرفة النوم الفسيحة‪ ،‬فقد تم ّيزت بأرضية مر ّقطة‪ ،‬وكراسي‬ ‫مخملية بلون أزرق فاتح‪ ،‬ونوافذ ممتدة من األرض حتى السقف‬ ‫ّ‬ ‫تطل على أفق المدينة‪ .‬كانت خزانة المالبس الضخمة بمثابة إشارة‬ ‫إلى زوار يتوجهون إلى مناسبات راقية وهم يرتدون مالبسهم‬ ‫الحمام كان تحفة الجناح الحقيقية بالنسبة لي؛‬ ‫الفاخرة‪ .‬لكن‬ ‫ّ‬ ‫حوض غسيل عريض على طراز األحواض القديمة‪ ،‬تعلوه حنفيات‬ ‫بروح عصر الجاز‪ ،‬وجدران وأرضيات من الرخام الرمادي الغني‬ ‫بعروقه‪ ،‬وأسطح سوداء ومرايا تُكمل ديكور غرفة النوم‪ .‬يكتمل‬ ‫بدش واسع وحوض استحمام عميق‪ ،‬مما جعلني‬ ‫التصميم ُ‬ ‫أشعر وكأنني في منتجع صحي خاص بي‪.‬‬ ‫المكان بأسره كان يفيض بسكينة عميقة‪ ،‬ومع أغطية أس ّرة‬ ‫بجودة ‪ 400‬خيط‪ ،‬كنت ألستسلم فورًا للنوم‪ ،‬لوال أن أمامي الكثير‬ ‫الستكشافه‪ ،‬إذ أردت أن أتيقّ ن ما إذا كان بقية الفندق يضاهي‬ ‫جمال الردهة وفخامة جناحي‪.‬‬ ‫وجهات استثنائية للطعام‬ ‫توجهت إلى "بيكوك أليه" في الوقت المناسب لجلسة شاي‬ ‫ّ‬ ‫بعد الظهر‪ .‬المكان هنا آسر بكل معنى الكلمة؛ فثريات مذهلة‬ ‫وكراس ذات انحناءات ناعمة‪،‬‬ ‫متعددة المستويات تتألأل فوق أرائك‬ ‫ٍ‬ ‫مكسوة بمخمل بلون تيفاني األزرق‪،‬‬ ‫تتخللها مقاعد صغيرة‬ ‫ّ‬ ‫وهن‬ ‫الحاضر في كل زاوية‪ .‬تخ ّيلت "بجعات" ترومان كابوتي‬ ‫ّ‬ ‫يتسامرن في النسخة األصلية بنيويورك‪ ،‬وشعرت للحظة أنني‬ ‫لست أنيقة بما يكفي وسط مجموعات من السيدات والسادة‬ ‫األنيقين المنهمكين في أحاديث وأعمال‪.‬‬ ‫سرعان ما وصلت شطائر شهية من دون أطراف الخبز‪،‬‬ ‫بتشكيلة وافرة من النكهات‪ُ ،‬ق ّدمت‪ ،‬بطبيعة الحال‪ ،‬على‬ ‫حامل أنيق ولطيف مؤلف من ثالث طبقات‪ .‬وكانت شطيرة الخيار‬ ‫لدي؛ إذ جمعت على نحو شهي بين لبنه‬ ‫الكالسيكية المفضلة‬ ‫ّ‬ ‫بنكهة حادة وخيار طازج ومقرمش للغاية‪ ،‬تعلوه رقائق شمندر‬ ‫محمصة في الفرن‪ ،‬أضفت لمسة لونية الفتة فوق الخبز ذي‬ ‫ّ‬ ‫النكهة الغنية بالجوز‪ ،‬وجعلت الشطائر تبدو أكثر جماالً‪.‬‬ ‫َهم‬ ‫تلتها مجموعة من الكعكات الصغيرة‪ ،‬التي أخذتها بن َ‬ ‫إلى غرفتي ألفسح مجاالً للسكونز – التي وصلت دافئة‪ ،‬طازجة‬ ‫من الفرن‪ .‬نكهة اللوز كانت األبرز‪ ،‬وقد أضافت لمسات الكريمة‬ ‫الطازجة والمربى الغنية اللمسة المثالية لهذا الخبز الطري‬ ‫مذاق ال يضاهى بحق!‬ ‫الهش‪ .‬يا له من‬ ‫ٍ‬ ‫وخالل إقامتي‪ ،‬زرت أيضًا يون‪ ،‬الذي يقدم المأكوالت الصينية‬ ‫العصرية‪ .‬يقع المطعم في الطابق الرابع واألربعين‪ ،‬في ذلك‬ ‫الفضاء المميز تحت السقف‪ ،‬والذي يمكن رؤيته بوضوح من‬ ‫األسفل‪ .‬وبفضل إطالالته البانورامية المذهلة‪ ،‬يجمع المكان بين‬ ‫أجواء المطعم والصالة‪ ،‬ضمن تصميم معاصر وأنيق‪.‬‬ ‫أضفت لمسات من الذهب المصقول على األثاث القرمزي الداكن‬ ‫أجواء راقية حقًا‪ ،‬وكانت قائمة الطعام‬ ‫لمسة من الفخامة‪ ،‬مما خلق‬ ‫ً‬ ‫على نفس المستوى الرفيع‪ .‬تذوقنا فطائر الدجاج المقلية ‪-‬‬ ‫لذيذة وشهية للغاية بمزيجها المميز من الدجاج المفروم والثوم‬

could imagine Truman Capote’s ‘Swans’ hanging out in the New York original and felt somewhat under dressed as I took my seat among groups of elegant ladies and gentlemen chatting and conducting business. Delicious crustless sandwiches soon arrived with plenty of variety served, of course, on a cute three-tiered stand. My favourite was the classic cucumber which boasted a delightful combination of sharp labneh and very fresh, crunchy cucumber topped by earth roasted beetroot chips which stood out against the nutty bread and made the sandwiches look even prettier. A selection of little cakes followed, which I greedily took to my room so I would have space for the scones – served warm, straight from the oven. The almond flavour was a particular hit, dollops of fresh cream and rich jam adding the perfect accompaniment the lightly, fluffy bun. Heavenly. During my stay, I also visited Yun, which serves modern Chinese cuisine. Found on the 44th floor, up in that very impressive roof space you can spot from below. The outlet, with its incredible panoramic views, functions as both restaurant and lounge with a contemporary feel. The deep crimson furnishings were elevated by touches of burnished gold making for a truly luxe atmosphere and the menu certainly lived up to the high-class feel. We sampled chicken potstickers – deeply savoury and satisfying with their piquant mix of minced chicken, garlic and crispy greens – and the Cantonese dim sum favourite, shrimp dumplings, pillowy, glossy and oh so flavourful. I had breakfast throughout my stay at MURU – and was immediately sad I wouldn’t be there to experience brunch. The place is amazing! Swathes of blooms hang from the ceiling, lighting takes on sculptural forms and an abundance of South American artefacts, books and masks imparts a distinct sense of place. I can imagine that, with a touch of brunch-style sass, this spot would be really hopping. For breakfast though, the feeling was somewhat calmer and the buffet selection super impressive. I went for poached eggs – perfectly cooked, soft and runny – and avocado toast with a light dusting of chilli flakes. I must admit, I was tempted to over indulge, just the sight of a full honey comb is enough for me to lose all sense of reason, but, knowing a trip to the gym and a massage were on the cards, I contented myself with the deeply nutty sourdough and made a note to return after the summer when breakfast will be back in its regular spot at Tribeca, which I am assured puts on an equally sumptuous spread.

The Wellness Factor

After a little post-brekkie lie down – rude not to make the most of the superbly comfortable bed – I headed up to the four-floor wellness area, one of the largest I’ve ever encountered. The gym and indoor pool feature floor to ceiling windows, the incredible views out over the city making a workout, with virtually every piece of kit you can imagine, seem somehow less painful. But I was really there for the spa, where the black, cream and brass of the art deco era carried over into a space of quietly elegant tranquillity. My therapist led me to a massage suite where I settled in for a deeply relaxing treatment with gentle stretching, aromatic oils and some muchneeded silence. from the Alphasphere sensory room to a Lemi quartz crystal bed for warm sand therapy and a rain walk and ice fountain – the latter, along with MURU’s brunch, is definitely in my future. All too soon, it was time to bid farewell to both the spa and to Waldorf Astoria Doha West Bay but I can safely say the whole experience was one that made quite an impression. here is a special silence when the Maldives first comes into view. From above, the ocean shifts through shades of blue that seem almost unreal, while small green islands appear scattered across the water with theatrical precision. Our destination was NH Collection Maldives Reethi Resort, set on the natural island of Fonimagoodhoo in Baa Atoll. Recently reimagined, the resort felt fresh and contemporary while allowing the island to remain the star. Tropical greenery, soft sand and crystal-clear lagoon waters framed our arrival, and check-in was handled with the calm efficiency every traveller dreams of. A Room With a View Our Sunset Beach Villas with Pools quickly became our private retreats. They offered generous space, king-sized beds, living areas, espresso machines, Bluetooth speakers and bathrooms with separate tubs and rain showers. Best of all, sliding doors opened onto sundecks and plunge pools, beach and ocean just beyond. They were the sort of rooms where shoes were quickly forgotten and emails felt like somebody else’s problem. The design balanced earthy textures, soft colours and natural materials, creating comfort without fuss. Although we stayed in this villa category, the resort also featured beach villas, twobedroom family options, 30 overwater villas and the expansive Two-Bedroom Reethi Suite, giving couples, families and groups plenty of ways to experience the island. With 135 villas in total, the resort felt intimate rather than sprawling. The wider property carried the same understated confidence. Villas either hugged the shoreline or sat within lush greenery, while thoughtful sustainability initiatives reflected a resort that respects its remarkable surroundings. Settling Into Paradise Lunch at Jumla introduced us to the resort's dining style. A delicious tuna curry made an immediate impression, while seasonal dishes, international favourites, Mediterranean flavours, Indian cuisine and Maldivian seafood reflected the breadth of the menu. It wasn't long before breakfast there became part of our daily routine. It was also where one of our many memorable service moments happened. On the first day, we ordered a coffee with several very specific instructions. When we returned on the third day for our next cup, the lady who had served us remembered every detail without us repeating it. No reminder. Just the correct coffee arriving with a smile. That tiny moment perfectly captured the attentive service we experienced throughout our stay. Later, Dolphin Quest took us out across clear waters in search of the island's most playful neighbours. They soon appeared beside the boat, gliding and leaping through the wake with the confidence of performers who knew 84

exactly how good they were. Phones came out quickly, but before long we simply sat and watched the spectacle unfold. An Appetite for Adventure Dinner at Caravela became one of the defining moments of our stay. With just 12 seats, the resort's intimate fine-dining restaurant immediately hinted at something rather special. The evening unfolded as The Atlantic Voyage – a thoughtfully curated tasting menu inspired by the Age of Discovery. Each course celebrated the flavours and stories born from ancient trade routes and bold maritime exploration, transforming dinner into a culinary journey rather than simply a meal. Impeccable silver service added another layer of refinement without ever feeling overly formal, while carefully selected grape pairings elevated the experience even further. Conversation frequently paused, first in admiration of each beautifully presented course and then again as everyone quietly savoured the flavours. By the time dessert arrived, in the form of a beautifully prepared Olive Cake, we realised Caravela had achieved something quite special. It hadn't simply served dinner; it had created one of those evenings that guests continue talking about long after they return home. The Rhythm of the Island The following morning began with breakfast at Jumla where, alongside an extensive international selection, we sampled Mas Huni, one of the Maldives' most beloved traditional breakfast dishes. Combining tuna, freshly grated coconut, onion, lime and chilli, it was zesty, vibrant and offered a delicious glimpse into local cuisine. Shortly after, we explored the calm lagoon by kayak and stand up paddleboard. From the water, the resort looked settled into the landscape, with villas tucked between palms and the shoreline curving gently behind them. It was active, but not aggressively so, which is exactly our preferred level of athleticism on a Maldivian island. Lunch at Madumaithiri, the adults-only beach bar by the pool, suited the afternoon perfectly. Wood-fired pizzas, generous burgers, wraps and colourful salads made it a relaxed, sociable stop before the afternoon quietly disappeared. We had planned a short rest. The Maldives disagreed. Two hours vanished far too quickly. That evening, Handhuvaru gave us a livelier change of scene. The mixology-making class introduced us to the resort's special drinkthemed concept, including a distinctive distilled beverage aged beneath the ocean. Guided by the resident expert, we learnt, tasted and attempted to mix our own drinks. Fortunately, enthusiasm counted for almost as much as technique. Dinner at Kaiyo brought us another memorable evening of vibrant Asian flavours. Throughout the meal, we shared plates of sushi, bao buns, satay and spring rolls in the kind of relaxed atmosphere where laughter came easily, and no one wanted to be anywhere else. Where Time Stood Still By Sunday, the resort had worked its quiet magic. Breakfast at Jumla was followed by a treatment at REVIVE Spa & Wellness, a tranquil sanctuary surrounded by tropical greenery. 86

Our 60-minute massage drew on natural local remedies and was tailored with genuine care. Every treatment reflected the same thoughtful attention we experienced throughout the resort, leaving us lighter, calmer and slightly hesitant about returning to normal life. After lunch at Jumla, the afternoon drifted by before we made our way to Atardecer, positioned at the westernmost point of the island, for evening drinks and tapas. As the sky shifted through gold, pink and violet, the mellow DJ soundtrack and relaxed setting created one of the most atmospheric moments of the trip. The chatter around the table gradually gave way to quiet appreciation as the sunset stole everyone's attention. A Feast Beneath the Stars Our final dinner was the resort's signature Adrift experience at Alifaan, providing the perfect finale to our stay. Set in an intimate beachfront setting beneath the evening sky, the seaside barbecue celebrated the finest land and sea ingredients. Freshly grilled fish, premium cuts of meat, abundant seafood and beautifully prepared seasonal vegetables arrived straight from the open fire, allowing the freshness and quality to speak for themselves. It was hearty, generous and every bit as memorable as the setting itself. As the waves rolled gently onto the shore and conversation lingered long after dinner had ended, we found ourselves reluctant for the evening to end. It was a fitting conclusion to our stay, bringing together exceptional food, impeccable service and the effortless beauty of the Maldives.

he recently opened outlet is reached through the property’s fabulous gardens and, as we approached after dark, we were treated to the full spectacle of a design drawn from Mesopotamian mythology and Bedouin architecture, glowing in the light of brass lanterns almost like an ancient desert encampment. We’d arrived hungry and, quickly seated on the expansive terrace, we immediately dived into the menu, which is an inviting mix of favourites from across the Middle East and North Africa. Classic flavours that are right at home in this setting. Deciding to take the recommendations of the helpful serving team, before we knew it our appetisers started to arrive, one after another until the table was a delightful tableau of riotous colours and delicious aromas. First up, Quinoa Tabbouleh with spiced mango brought a modern touch to a traditional staple, and I loved the twist. The bright herbaceous acidity of the parsley and mint were perfectly balanced by the mild earthiness of the quinoa, while the punchy mango transformed a regular dish into something much more interesting and special. Zaalouk, a sharing favourite at every Moroccan table, proved equally as enticing to us. Grilled eggplant, roasted paprika, shallots and tomatoes all slow-cooked into a deliciously mushy, rich red paste. Deeply smoky and flavourful with a faint hint of spice, it was a dish we went back to time and again, scooping it up with chunks of hot fresh bread. The house signature Tamarind Chicken was a definite standout, the deep sweet-tart profile of the tamarind lending itself deliciously to the charred, yoghurt-smothered chicken bites. Each mouthful was a small triumph, an exceptional combination of flavours bursting on the tongue. Maast o Khiar brought us back into familiar territory with the much-loved Persian yoghurt dish. But, true to form, there was a little something extra in the mix. Alongside the standard cucumber and mint, Ninive’s kitchen added raisins and rosewater, giving a lovely bright sweetness alongside the rich sharpness of the yoghurt. Almost at the end of our appetiser journey, we sampled Cheese Briwats, traditional Moroccan triangular pastries stuffed with goat cheese, walnuts and blackcurrants. Not unlike our beloved samosas, these were a winning combination of crunchy, thin dough and rich, salty cheese. The crisp sweetness of the blackcurrants and earthy nuts cut through the slight greasiness of the cheese for a mouthwatering texture and flavour combination. Last up on the starters came a dish that was new to me, but one that traces its roots back to the 10th century! Chicken Pastilla is traditionally a celebration dish, sweet and savoury and served with fanfare. Lightly spiced minced chicken comes in a casing of excellent thin, crispy dough topped with crushed sugar and cinnamon. I must admit that, to my Western palate, the idea of serving a savoury dish with sugar seemed odd. But, I love trying new (to me) things and Hadag Magazine

actually this was an interesting combination. I absolutely loved the pastry, which crackled under my fork, revealing that slightly spicy interior. A taste I feel I could acquire. After the generous selection of appetisers, we took a digestive break and explored the interiors before sampling a selection of mocktails. I have to say, the restaurant is absolutely stunning. Abundant material tenting on the ceiling gives the impression of a desert camp, while dark wood, lush green foliage and brass hanging lanterns lend an air of abundance and quiet opulence. Black and white photographs on the walls recall times past, while a wellstocked bar, which includes a selection of crafted beverages, adds a contemporary twist. There’s an imaginative mixed drinks menu and an impressive cellar but we chose to go with a few of the expertly curated mixology options. Blueberry Note came with homemade hibiscus syrup and blueberry jam – a little sweet for me but I did love the use of jam instead of puree. Lost in Paradise with its mix of Japanese green tea and passionfruit, was cool and refreshing. But the favourite for both myself and my dining companion was Kiss From A Rose, which has been created specially for ladies. Strawberry puree, cranberry juice and rose water, it was served in a Cosmo glass, looking pretty and tasting like summer. Back at our table, the first of the mains to arrive was vegetable tagine – a selection of seasonal vegetables baked in the traditional earthen tagine and served in a complex sauce created from grated zucchini, carrots, tomatoes and spices. 92

Rich and deeply flavoursome, the sauce coated a medley of vegetables, of which I particularly enjoyed the artichokes – big, juicy and lightly smoky – and the black olives which gave a briny bite, cutting through the richness of the sauce. The Turkish Lahmacun was another favourite. To be honest, when we saw the flatbread coming, neither of us expected very much. But, we couldn’t have been more wrong. The bread itself was paper thin and crisply blistered on the delicately charred edges yet soft and chewy further in where the juices from the meat topping had soaked in. The topping of minced lamb was elevated with peppers, onions, tomatoes and chilli. Warmly comforting with the gentle kick of the chilli, it was a clear demonstration of why this is such a popular street food. We both said we’d go back for this dish alone. That was true until we tasted the last of the mains and were each rendered momentarily speechless. Tashreeb is one of the oldest dishes in Arabic cuisine and it has certainly passed the test of time. Seven-hour, slow-cooked lamb shoulder (800g of it) takes on the myriad flavours of spices, such as cardamom and cumin, as the meat braises in its own rich gravy until the flesh literally melts from the bone. Beneath, a base of msemmen bread soaks up all that joyous jus flavour for a dish that’s both slightly sweet and deeply umami. This is truly comfort in a bowl and, if you try just one thing (apart from dessert) at Ninive, this should be it. And, so to dessert. I honestly didn’t think I could eat another thing. But when that thing looks as pretty as our final dish, it’s very hard to resist.

‫وصلنا إلى هذا المطعم الذي افتُ تح مؤخرًا عبر حدائق المنتجع‬ ‫الساحرة‪ ،‬وحين اقتربنا منه بعد حلول الظالم‪ ،‬استقبلنا مشهد‬ ‫بصري مبهر مستوحى من األساطير البابلية والعمارة البدوية‪،‬‬ ‫يتوهج تحت أضواء الفوانيس النحاسية وكأنه مخيم صحراوي أثري‪.‬‬ ‫ّ‬ ‫وصلنا وقد أنهكنا الجوع‪ ،‬وسرعان ما جلسنا على التراس‬ ‫الفسيح لنغوص في قائمة طعام تجمع بين أشهى أطباق‬ ‫الشرق األوسط وشمال أفريقيا‪ ،‬بنكهات كالسيكية تبدو وكأنها‬ ‫ُوجدت أص ً‬ ‫قدم في هذا المكان‪.‬‬ ‫ال لتُ َّ‬ ‫قررنا االنصياع لتوصيات فريق الخدمة اللطيف‪ ،‬وقبل أن نشعر‪،‬‬ ‫بدأت المقبالت تتوافد علينا واحدة تلو األخرى‪ ،‬حتى غدت المائدة‬ ‫فواحة بالروائح الشهية‪.‬‬ ‫لوحة صاخبة األلوان ّ‬ ‫بدأنا بطبق تبولة الكينوا مع المانجو المت ّبلة‪ ،‬الذي أضفى لمسة‬ ‫عصرية على طبق تقليدي‪ ،‬وقد أحببت هذه اللمسة الجديدة‪.‬‬ ‫حموضة البقدونس والنعناع العشبية الزاهية توازنت بعناية مع‬ ‫حولت المانجو ذات النكهة‬ ‫نكهة الكينوا الترابية الخفيفة‪ ،‬بينما ّ‬ ‫القوية الطبق العادي إلى تجربة أكثر تشويقًا وتم ّيزًا‪.‬‬ ‫أما الزعلوك‪ ،‬أحد أطباق المشاركة المحبوبة على كل مائدة‬ ‫مغربية‪ ،‬فقد كان مغريًا بالقدر نفسه‪ .‬باذنجان مشوي‪ ،‬وبابريكا‬ ‫محمصة‪ ،‬وشالوت وطماطم‪ُ ،‬طهيت جميعًا على نار هادئة حتى‬ ‫ّ‬ ‫تحولت إلى معجون أحمر غني وطري‪ .‬بنكهة مدخنة عميقة‬ ‫ولمسة خفيفة من التوابل‪ ،‬كان من األطباق التي عدنا إليها مرارًا‪،‬‬ ‫نغرفه بقطع من الخبز الطازج الساخن‪.‬‬ ‫ّ‬ ‫شك طبقًا‬ ‫كان طبق دجاج التمر الهندي المميز للمطعم بال‬ ‫استثنائيًا‪ ،‬حيث أضفى مذاق التمر الهندي الحلو والحامض نكهة‬ ‫رائعة على قطع الدجاج المشوية المغطاة بالزبادي‪ .‬كل لقمة‬ ‫كانت بمثابة انتصار صغير‪ ،‬انفجار مذهل للنكهات يبهج الحواس‪.‬‬ ‫أعادنا "ماست أو خيار" إلى أرض مألوفة‪ ،‬ذلك الطبق الفارسي‬ ‫المحبوب المصنوع من اللبن‪ .‬لكن‪ ،‬وكعادته‪ ،‬حمل لمسة إضافية؛‬ ‫فإلى جانب الخيار والنعناع التقليديين‪ ،‬أضاف مطبخ نينيف الزبيب‬ ‫حدة اللبن الغنية‪.‬‬ ‫وماء الورد‪ ،‬ليمنح حالوة زاهية جميلة تتجاور مع ّ‬ ‫وقبيل نهاية رحلة المقبالت‪ ،‬تذوقنا بريوات الجبن‪ ،‬وهي‬ ‫معجنات مغربية مثلثة تقليدية محشوة بجبن الماعز والجوز‬ ‫والكشمش األسود‪ .‬وعلى نحو ال يختلف كثيرًا عن السمبوسة‬ ‫المحبوبة لدينا‪ ،‬جاءت هذه القطع بمزيج ناجح من العجين الرقيق‬ ‫المقرمش والجبن الغني المالح‪ .‬فيما قطعت حالوة الكشمش‬ ‫المقرمشة والنكهة الترابية للمكسرات دسم الجبن‪ ،‬لتمنحنا‬ ‫مزيجًا شهيًا من القوام والنكهات‪.‬‬ ‫إلي‪،‬‬ ‫وكان آخر ما وصل من المقبالت طبقًا جديدًا بالنسبة ّ‬ ‫لكنه يعود بجذوره إلى القرن العاشر! بسطيلة الدجاج هي‬ ‫قدم في‬ ‫في األصل طبق احتفالي‪ ،‬يجمع بين الحلو والمالح و ُي ّ‬ ‫أجواء احتفالية تليق به‪ .‬يأتي الدجاج المفروم المت ّبل بخفة‬ ‫داخل طبقات من العجين الرقيق الممتاز والمقرمش‪ ،‬ويعلوه‬ ‫السكر المطحون والقرفة‪ .‬أعترف بأن فكرة تقديم طبق مالح مع‬ ‫السكر بدت غريبة بعض الشيء لذوقي الغربي‪ .‬لكنني أحب‬ ‫إلي‪ ،‬واتضح أن هذا المزيج‬ ‫دائمًا تجربة أشياء جديدة بالنسبة ّ‬ ‫مثير لالهتمام بالفعل‪ .‬أحببت المعجنات تحديدًا‪ ،‬وهي تتكسر‬ ‫برفق تحت شوكتي لتكشف عن الحشوة الداخلية ذات النكهة‬ ‫المت ّبلة قلي ً‬ ‫ال‪ .‬إنها نكهة أظن أنني قد أعتاد عليها مع الوقت‪.‬‬ ‫بعد هذه التشكيلة السخية من المقبالت‪ ،‬أخذنا استراحة هضم‬ ‫واستكشفنا أرجاء المكان قبل أن نج ّرب مجموعة من المشروبات‬ ‫الخالية من الكحول‪.‬‬ ‫ال بد لي من القول‪ ،‬إن المطعم مذهل حقًا‪ .‬فالسقف المغطى‬ ‫بأقمشة فاخرة يوحي وكأنه مخيم صحراوي‪ ،‬بينما يضفي‬ ‫الخشب الداكن والنباتات الخضراء المورقة والفوانيس النحاسية‬ ‫المعلقة جوًا من الفخامة الهادئة والوفرة‪ .‬أما الصور الفوتوغرافية‬ ‫باألبيض واألسود على الجدران فتستحضر ذكريات الماضي‪،‬‬ ‫في حين يضيف البار المجهز جيدًا‪ ،‬والذي يضم تشكيلة من‬ ‫المشروبات المميزة‪ ،‬لمسة عصرية‪.‬‬ ‫هناك قائمة مشروبات مبتكرة وقبو مشروبات رائع‪ ،‬لكننا اخترنا‬ ‫بعضًا من خيارات الميكسولوجي المنتقاة بعناية‪ .‬جاء مشروب‬ ‫"بلوبيري نوت" مع شراب الكركديه المنزلي ومربى التوت األزرق –‬ ‫حلو بعض الشيء بالنسبة لي‪ ،‬لكنني أحببت فكرة استخدام‬ ‫المربى بدالً من البوريه‪ .‬أما "لوست إن بارادايس" بمزيجه من‬ ‫وبارد‬ ‫الشاي األخضر الياباني وفاكهة الباشن‪ ،‬فكان منعشًا‬ ‫َ‬ ‫لدي ولدى رفيقتي في العشاء كان‬ ‫المفضل‬ ‫المذاق‪ .‬لكن‬ ‫ّ‬ ‫ّ‬ ‫مشروب "كيس فروم أ روز"‪ ،‬الذي ُصمم خصيصًا للسيدات‪ .‬بوريه‬ ‫الفراولة وعصير التوت البري وماء الورد‪ُ ،‬ق ّدم في كأس كوزمو‪،‬‬ ‫بمظهر جميل ومذاق يشبه الصيف‪.‬‬ ‫عند عودتنا إلى طاولتنا‪ ،‬كان أول األطباق الرئيسية التي وصلت‬ ‫طاجن الخضار ‪ -‬تشكيلة من الخضراوات الموسمية المخبوزة في‬ ‫طاجن فخاري تقليدي‪ ،‬تُقدم مع صلصة غنية ُمحضرة من الكوسا‬ ‫المبشورة والجزر والطماطم والتوابل‪ .‬غطت الصلصة‪ ،‬الغنية‬ ‫استمتعت بشكل خاص‬ ‫مزيجا من الخضراوات‪ ،‬وقد‬ ‫بالنكهات‪،‬‬ ‫ُ‬ ‫ً‬ ‫بالخرشوف ‪ -‬كبير الحجم‪ ،‬غني بالعصارة‪ ،‬وذو نكهة مدخنة‬ ‫خفيفة ‪ -‬والزيتون األسود الذي أضفى نكهة مالحة خفيفة‪ ،‬تُوازن‬ ‫دسامة الصلصة‪.‬‬ ‫وكان اللحم بعجين التركي‪ ،‬من المفضالت األخرى‪ .‬وألكون صادقة‪،‬‬ ‫عندما رأينا الخبز المسطح يصل‪ ،‬لم نتوقع منه الكثير‪ .‬لكننا لم‬ ‫نكن لنخطئ أكثر من ذلك‪ .‬فقد جاء الخبز رقيقًا كقطعة من‬ ‫الورق‪ ،‬تتخلله فقاعات مقرمشة عند أطرافه المشوية برفق‪،‬‬ ‫بينما حافظ على قوام طري ومتَماسك من الداخل‪ ،‬حيث تشرب‬

OYA's international reputation precedes it. With outposts in London, Ibiza and Monte Carlo, you know what to expect: big Peruvian flavours, a buzzing room and plates designed to be shared. At the W Doha, it's exactly the same energy. No hard rules, the team simply tells us to forget the usual starter-main-dessert routine and let the kitchen take the lead, sending dishes out whenever they're ready. To kick things off, the guacamole arrives with a little tableside theatre. Two perfectly ripe avocado halves are nestled inside a chunky black stone bowl, alongside a basket of oversized corn tortillas, before everything is mashed to order right in front of us. It's creamy, zesty and ridiculously easy to demolish, especially with those properly crisp tortillas that keep shattering with every scoop. Starters follow with the Classic Sea Bass Ceviche – punchy, citrusy, with sweet potato and those giant Peruvian corn kernels rounding everything out. The salmon version goes in a completely different direction with fennel and peach. If raw seafood’s not for you, skip straight to the Prawn Tempura Maki Roll. Crispy prawns, smoky chipotle mayo, sticky teriyaki and lightly torched salmon make this one of the safest bets on the menu. We'd happily order another round. On to the mains with the Miso Chilean Sea Bass Cazuela. Our waitress suggests mixing everything together before taking the first bite and she is so right. The buttery sea bass flakes Hadag Magazine

apart instantly, the sweet corn purée adds just enough sweetness and suddenly the whole thing turns into the creamiest, most comforting bowl on the table. We scrape the pot clean. As good as the fish is, the real winner of the night is the Wagyu Sirloin, sliced and spread across a tabletop grill, still sizzling. Perfectly pink in the middle, lightly charred around the edges and juicy enough that it barely needs the chimichurri sitting next to it. If we had to order again tomorrow, this would be first on the list! The Grilled Baby Chicken deserves a mention too. It would be easy to overlook next to the Wagyu, but that would be a mistake. The skin comes beautifully charred, locking in tender meat beneath, while the ají panca chilli (red pepper) marinade brings gentle warmth. Even the sides pull their weight. Crispy Potato Bravas bring a smoky kick, while the Potato Purée with Truffle is the kind of comfort food you'll be fighting over by the end of the meal. If you've still got room, don't skip dessert. The sharing platter is made for the cameras before it's made for the table, arriving on crushed ice with tropical fruit, berries and a smoking clay pot stealing the spotlight. The Tres Leches Cake is hands down our favourite: ridiculously soft, drenched in milk, finished with salted dulce de leche and topped with vanilla ice cream that slowly disappears into the sponge. The Lime Cheesecake keeps things lighter, with a silky filling, crisp kunafa and a sharp exotic fruit sorbet that resets our palate after a very generous meal. The food may be the main event, but the setting deserves its moment too. COYA is anything but understated. Rich colours, bold 96
