EO: What do you love most about living and working in Tropical North Queensland? RB: I love that you can take a walk on an empty beach. Where in the world can you still find empty beaches that are so easily accessible? On my beach walks, I will always see so much nature: turtles bobbing their heads in and out, birds of prey circling the shore, schools of fish jumping, crabs ducking in and out of holes... It is spectacular. Every day here can feel like a holiday before I start work. Jungle Fowl is open evenings only so my work day usually consists of dog walks at the beach, bakery visits and pottering around my garden before heading to the restaurant. EO: What’s your dream day itinerary in paradise for visitors new to the area? RB: When based in Port Douglas, I always send visitors an hour in any given direction for the day. Head east and jump on a daytrip to the reef – a no-brainer. Head north and you will encounter places like Mossman and Daintree with unbelievable freshwater swimming holes. If you head inland/ west, you’ll discover the Tablelands and can go float in one of our beautiful Crater Lakes. If you head south, you’ll discover many beaches and dining spots in Cairns. All in time to get back to Port Douglas for a beautiful dinner out. 6 — Experienceoz.com.au

EO: Any under-the-radar local experiences for visitors? RB: My top pick is Mossman Market, held every Saturday. Mossman is such a beautiful, quaint town and the markets represent the best produce you can find up here. I recommend grabbing a fresh coconut, cut and served right in front of you, picking a treat from one of the many baked-goods stalls and heading to a nearby freshwater spot to soak and relax. EO: How do you usually spend a sunny Sunday? RB: My Sunday mornings always start slowly and are shared with my partner, dogs and chickens. Then it’s time for a leisurely drive down the Captain Cook Highway for a long brunch at our Holloways Beach favourite, Two Blocks. Then it’s hiring a beach

EO: Your go-to spot for a relaxing weekend tipple? RB: As a non-drinker, I honestly can say that the non-alcoholic cocktails at Jungle Fowl entice me in – even on my days off. I’m excited for everywhere to start caring a bit more about the nondrinkers out there! EO: Any tips for creative or artistic experiences in the area? RB: The local council does a great job of hosting amazing live music. I highly recommend catching a show at Tanks or Munro Martin Parklands as they’re such unique venues. EO: Aside from your venues, where do you go to eat out? RB: I’m a sucker for a pub lunch and our go-to is the Central Hotel. I often find myself day-tripping to Cairns and can’t resist a trip to Pho Viet and brunch at Two Blocks. EO: Have you lived your whole life in Tropical North Queensland? RB: I’m originally from the Central Coast and spent many years in Melbourne prior to moving north. When I first came up here, I was so

shocked with how beautiful the wet season or summer is. Yes, we get high humidity but I truly believe it is one of the most magical seasons to witness – everything is green and alive!

EO: Tell us about Walkabout Cultural Adventures in Kuku Yalanji country? JW: I think it is important for visitors anywhere to learn about the First Peoples of that area as it gives them a deeper insight into the place, and also how to look at nature in a more connected and purposeful way. I developed Walkabout Cultural Adventures back in 2010. We are 100 per cent Aboriginal owned, operating in Kuku Yalanji country in the Daintree region of Far North Queensland. On our tours, our aim is to give visitors an insight into Aboriginal history while trying to maintain our culture and heritage in the modern world. We take visitors into the natural environment where we teach them about bush food medicine and traditional hunting practices and lifestyle changes. EO: How do you and your family spend a sunny Sunday? JW: When the weather is nice, I like to take my family out on the sea and have a dive and swim on the reef and catch some dinner. Otherwise, this time of year, it’s nice to just sit by a local rainforest creek with a couple of cold ones and let the kids swim and enjoy our own patch of paradise. EO: Your fave family eating spots? JW: We are very spoilt where we live and have a great variety of restaurants, cafes and takeaways. A great spot to eat in Port Douglas is the Surfy [Surf Club] as it has a great setting right on Four Mile. Otherwise, Zinc restaurant in town has great food and service.

EO: Your go-to beaches? JW: Some of the more spectacular beaches to visit are Wonga Beach, Rocky Point and Myall Beach, which are found on the way to Cape Tribulation. The only problem with these beaches in the north is that they are not too safe to swim due to crocodiles. They are spectacular though! EO: Any surprising facts about your hometown? JW: Not in my hometown but in the Wet Tropics region today, there are at least 20 Rainforest Aboriginal tribal groups, 120 clans and eight language groups – currently over 20,000 people – with ongoing traditional connections to land in the Wet Tropics World Heritage Area. EO: Take us through an itinerary you’d pull together for a dream day in Tropical North Queensland? JW: I’d say our Ngana Julaymba Dungay (We All Going Daintree) tour. Once we pick up our guests, we take them to Daintree to learn about our family history and explain where we are in Kuku Yalanji country, and what is Kuku Yalanji country and the people. We then head to the beach, learn about some beach medicines, throw spears and try some mud crabbing and spear fishing. After the coastal walks, we then travel into the rainforest for a guided walk, learning about cultural practices, and uses for plants and bush foods, and have a swim in a freshwater creek before taking them back to their hotel. EO: Tell us about Oaks Kitchen & Garden and Jungle Fowl? RB: Our point of difference is that we are showcasing what this unique region can grow. We are in a tropical environment that encounters weather patterns unlike most other places in Australia and the seasonal produce is reflective of that. We think this should be strongly represented in the type of food being served in this region. At Oaks Kitchen & Garden, we grow about 70 per cent of the produce we use in our nine-course long lunch and seek local and sustainable for the rest. Our four-acre property also supplies Jungle Fowl with the seasonal offerings we can grow on a larger scale, like rosella, kaffir lime leaf, Thai basil, eggplant and pumpkin. They are true creative expressions of my own art form as an artist and gardener, and my co-owner Benjamin Wallace’s art form as a chef. We break the rules of conventional fine dining, offering an elevated level of food in a relaxed, tropical environment.

This undeveloped destination is a no-frills option – no shops, no cafes, no footpaths, no toilets – but you'll forget all that as soon as you step onto the empty sand and find a place to lay your towel in the shadows of a tilting palm tree. This family-friendly adventure promises shallow swimming at high tide and rock pools to investigate when the water goes out.

The perfect day-trip destination from Cairns. Break the journey with a dip at Babinda Boulders and a cheeky cream bun from the Babinda Bakery. Make the journey during “the crush” – between April and December when sugar cane is harvested from the fields flanking the highway – to see the creeping cane trains following the tracks to the South Johnston Mill.

In Cairns try Mooz – between the Trinity Bay heliport and Marlin Marina – or The Dairy by Mungalli on Shields Street. Numi Ice Creamery is the go in Palm Cove, Daintree Ice Cream Company sits beside the road to Cape Tribulation, and travellers driving between Kuranda and Mareeba should pause at Emerald Creek Ice Creamery to savour a creamy scoop.

The middle months of the year are perfect for hiking, with Far North locals tempted by the Tablelands’ tracks and trails that wind through the region’s numerous national parks. Locations that attract locals on the weekend are the Davies Creek and Dinden national parks, with routes ranging from an agreeable 1km amble to challenging day-long tramps.

Start with brunch at Yungaburra’s Whistle Stop Café before wandering the stores lining Kehoe Place and stroll the Afghanistan Avenue of Honour beside Lake Tinaroo. Pick the fruit at Shaylee Strawberries, savour the scones at Lake Barrine Teahouse, try the cheese at Gallo Dairyland, or catch a movie at Australia’s longest-running cinema in Malanda.

While it’s the markets that are most likely to draw visitors to Kuranda, venture a little further to Barron Falls. Locals will always recommend this trip right after a green-season downpour, when the torrent cascading down from the Tablelands rages over the rocky ledges and thunders dramatically into the mist-covered gorge 250m below. Pondering a freshwater swim in the Far North? Follow our handy hints:

1 If there’s a hike involved take sensible shoes, sun protection, insect spray and plenty of water.

2 Crocodiles must be taken seriously in Tropical North Queensland, with the predatory saltwater croc occupying some of the region’s waterways. Always ask locals to point out the safe swimming places and obey the yellow warning signs if they're on display.

3 Always be careful around waterfalls, with wet rocks making for slippery conditions and steep drops often resulting in severe injuries for those who tumble.

Spots for swimming For something unique to this part of the planet try paddling in one of Mother Nature’s swimming pools. Topping the list is Babinda Boulders – think emerald water surrounded by smooth, round rocks almost covered by a rainforest roof – with this lazy location concealed inside the foothill of Bartle Frere, which is the state’s highest peak. There are spots for submerging below the Davies Creek Falls, but those with a head for heights – and the stamina for a climb – will be rewarded with scenic positions to become immersed between the granite boulders, solitude and memorable golden sunsets.

Josephine Falls boasts a gentle rock slope that serves as a natural side when there’s enough water to flow down the terraced tiers, and locals flock to the sandy beaches inside Mossman Gorge when the humidity spikes during wet season.

Best for family fun While some of the Far North’s more wondrous waterfalls are not suitable for family adventures – we’re looking at you, Windin Falls – there are a few stops near Cairns that appeal to those with junior travellers in tow. Old Weir Falls at Stoney Creek, Crystal Cascades and Fairy Falls are all a short drive from the centre of Cairns and promise shady ponds close to the curated tracks. Malanda Falls is a natural waterhole only steps from parking spots – suiting those with little legs that don’t like walking far – and Tablelands Regional Council maintains concrete edges to make this feel more like a rainforest swimming pool than a section of the wild North Johnstone River. Lake Eacham is another fan favourite, with this dreamy destination featuring concrete steps that descend into the still crystal-clear water, making this polite bathing experience look like something from a Victorian-era story. eyond our beautiful beaches rest a collection of wonderful waterfalls and serene swimming holes, with many perfectly positioned for cooling down on a steamy summer day. Cairns Luxury Car Hire’s Merryn King says the plunges and ponds around Cairns – from the Alligators Nest near Tully to the upper reaches of the Mossman River past Port Douglas, and west to Dinner Falls high in the Tablelands – are the destination’s best-kept secret. “Many of our customers are surprised to learn about the Waterfall Circuit when asking for ideas on holiday driving routes, and they always return raving about places like Millaa Millaa Falls and Mungalli Falls,” the Cairns local explains. “When it’s sweltering, and you're looking for a cool escape away from the sea, there’s nothing better than heading to Babinda Boulders or Davies Creek to float in the freshwater surrounded by rainforest palms.” It’s a combination of mighty mountains – the northern end of the Great Dividing Range winds through the district – and reliable greenseason rains that create conditions for a network of waterfalls in the landscape surrounding Cairns. Those spending any time on social media will instantly recognise Zillie Falls, Millaa Milla Falls and Nandroya Falls. This picture-perfect trio are almost too good to be true, with rainforest surrounding the sheer cliffs and plunge pools ready for a refreshing warm-weather wallow. Millstream Falls is reputably Australia’s widest single-drop waterfall – located conveniently close to Queensland’s highest pub in nearby Ravenshoe – with a prehistoric lava flow creating basalt ledges between tilting eucalypts. Blencoe Falls is a spectacle during the first few months of the year, with water cascading 90m to a pond carved into the cliff before tumbling another 230m to the bottom of a gorge often hiding beneath a curtain of mist. Behana Gorge near Gordonvale is the region’s quiet achiever, with the challenging 3km walk leading to a rocky scar carved through the rainforest and tepid ponds resting between the rushing white water.

Kuranda Scenic Railway Imagine all that natural wonder so close that you can almost touch it, your senses alive with the heady organic fragrance and untamed sounds of the dense rainforest. That’s what it’s like aboard Kuranda Scenic Railway as you unwind your way through a tropical paradise framed by rugged mountains with waterfalls tumbling forever into deep ravines. Rising from sea level to 328m, the journey to Ngunbay (Kuranda) passes spectacular waterfalls, meandering through picturesque scenery, 15 handmade tunnels and across 37 towering bridges. Enjoy winding views of Barron Gorge before exploring the spectacular Din Din (Barron Falls) up close. Being one with the rainforest as you undertake an unforgettable journey is what makes Kuranda Scenic Railway such a must-do experience.
