My first night in Seoul set the tone for the whole trip. We headed straight for Gwangjang Market where I tried a crisp jeon (mung-bean pancake), followed by tteokbokki and gimbap. Our guide, Michelle, talked us through each dish, explaining what was unique to Seoul and what regional variations we’d come across later in the trip. She encouraged us to share plates so we could try as much as possible, and that quickly became the routine for the rest of the week.
I set myself a mission: try everything and never turn down a steaming cup of broth.
In Busan, we tried freshly made fish cakes in every imaginable variation, but the meal that really stayed with me was the banchan feast in Andong. The table was filled with small plates of pan-fried tofu, kimchi, jeon, pickled vegetables, braised fish, and of course, broth to tie it all together.
TOP TIP: Don’t skip the hot pots. Layer in dumplings, vegetables, noodles and even quail eggs, and let the broth bring it all together – it ended up being one of the most comforting dishes to try.

THE CALL OF THE KAIKI GREECE
Aboard a traditional kaiki – a handcrafted wooden boat once used by island fishermen – you follow Symi’s coastline past whitewashed chapels and hidden coves. Overseeing a wave of new Croatian itineraries has meant more than simply planning new routes for Natasha Moore, our dedicated Croatia expert. It’s allowed her to reshape how we tell the story of the country, bringing lesservisited regions, national parks and community-led experiences to the forefront.
Until recently, our itineraries mainly focused on the Dalmatian Coast, but Natasha felt that Croatia deserved a broader canvas. “Dubrovnik is beautiful, of course,” she says, “but it doesn’t encapsulate everything Croatia has to offer. I wanted to design trips that stretched beyond the familiar, weaving in national parks, medieval towns, Venetian-influenced hilltop villages and lesser-visited regions that reveal the country’s true character.”
At the core of this rethink is ‘Discover Croatia’, a new itinerary travelling from Zagreb to Dubrovnik. It balances iconic sites with moments that surprise: the gravity-defying waterfalls of Krka National Park, centuriesold wooden watermills in Rastoke, Venetian palaces in Trogir, and wine tastings that showcase Croatia’s terroir.
Natasha particularly champions Plitvice Lakes, a UNESCO-listed national park set between Zagreb and Zadar in Croatia’s forested interior. Made up of 16 terraced lakes and more than 90 waterfalls, this area was formed over thousands of years by calcium carbonate deposits. She describes it as “ethereal… every person sees it differently because the colours shift with the sediments, the microorganisms, even the time of day. It’s the sort of landscape that lingers long after you’ve left. Your breath hitches when you see it”, she says – and for many travellers, it becomes the Croatia moment.
“We wanted variety,” she explains. “Not just geography, but texture, food, history, nature, all working together.” And that variety begins early in Zadar, where you are introduced to the Sea Organ, a modern architectural installation. Designed by Nikola Bašić in 2005, the structure uses chambers beneath the promenade, allowing the movement of the waves to produce harmonised tones. “You wouldn’t immediately associate something like that with Croatia,” Natasha says, “but it’s unique. No two performances are ever the same. And we stay just a short walk from the waterfront, so you can visit in your own time, taking as long as you wish.”
From Zadar, the trip continues to Krka National Park before reaching Stella Croatica, a familyrun estate outside Split. Here you’ll learn how regional ingredients and time-honoured Dalmatian methods shape the wines you sample. It’s an experience, Natasha points out, that is often missing from competitor itineraries,
which tend to rush past these kinds of local, small-scale productions.
The itinerary then moves on to Split and Trogir, and later to Ston, where you’ll sample oysters straight from the town’s farms and gain insight into a centuries-old tradition of salt and shellfish production that still supports the local community. As Natasha explains, “It’s these community-focused experiences, coupled with the expert insights of our local guides, that bring the country’s stories and landscapes into sharper focus. And whether you choose to cycle the Istrian Riviera, hike the northern lakes and islands, or journey from north to south along the coast, you’ll discover the heart of Croatia: its history, traditions and people.

Ask anyone who’s walked with Thanos, and they’ll tell you the same thing: the islands come alive in his company. To him, it’s because no two corners of the Aegean are ever the same. “These communities all have their own rhythm,” he says. “Different flavours, different stories. You can walk a mile, and everything changes.”
He still remembers helping shape the original routes back in the early 2000s, way before our trips became the long-standing favourites they are today. “Back then, many of the paths were only used by shepherds,” he says. “Now they’re some of the most beautiful walking routes you can do in Greece.”
His favourite walk in Naxos is through the Tragea Valley, among olive trees older than most European cities. “This is where you feel mythology under your feet,” he says, pointing

out the villages tied to stories from Homer’s Iliad. By lunchtime, he’s guiding groups to a tiny taverna beside the freshwater springs in Potami, where 97-year-old Manolis still insists travellers take fruit from his trees “for the road.” “He’s been doing that since my first season,” Thanos smiles. “Some things never change.”
On Santorini, Thanos leads the walk from Fira through Firostefani and Imerovigli, tracing a clifftop path between black lava and white chapels with the caldera spread below. The walk finishes near Oia, just in time for the island’s signature sunset. He says, “Most evenings, someone starts a small ripple of applause as the sun slips away – it’s not something you see everywhere, but here, it just naturally happens; that’s the effect the islands have on you.”
Then comes Paros, with its serene, whitewashed villages and old marble quarries. Thanos leads walkers along the Byzantine Path, an ancient stone walkway linking Lefkes and Prodromos. They often end up in Maria’s café. “Maria and her husband work wonders in their tiny Kallitehniko café,” Thanos says. Stuffed calamari, sun-dried octopus, chickpeas slowcooked with herbs – the dishes may vary, but the welcome is always the same.
If you ask Thanos where his heart lies, however, he’ll take you to Evia, a place
he helped introduce to Exodus more than two decades ago. He particularly loves the dramatic walk through the Demosaris Gorge, a long, winding descent from the cool interior of the island down to the glittering Aegean coast. “It feels like the landscape is changing with every turn,” he says – waterfalls, stone bridges, thyme-scented breezes, birdsong echoing through the ravine. Depending on the season, he lets travellers pick wild cherries, mulberries and blackberries. “They are the perfect elevenses,” he says with a smile.
After a quarter of a century, Thanos still guides with the same warmth and humour that first won travellers over. He notices when a viewpoint deserves a quiet moment, when someone needs a steadier pace, and when it’s time to raise a glass of ouzo as the sun sinks towards the sea. WALKING PORTUGAL’S Wild Algarve
Fresh from her Walking Portugal’s Wild Algarve trip this November, Toronto journalist Cindy Burgess—returned with a deeper appreciation for Portugal’s wild edges and quieter corners. Swapping deadlines for trail signs proved surprisingly addictive, especially on a journey filled with ocean-view paths, quiet hill villages, and local flavours you simply can’t bottle.

Laughter bounces off the stone walls as I dip a chunk of fresh bread into a bowl of golden oil. Our group of nine is seated around a wooden table at Lagar dos Pardieiros, a thirdgeneration family-run olive oil mill in Monchique. We’re eager to taste after seeing the huge syenite millstones that grind the olives old-school before the oil is cold-pressed. The verdict? Liquid gold.
For the past two days, our Exodus guides Francisco and Rafael have led us through the Serra de Monchique mountains, sharing the spectacular views and local traditions of their region, like the filhós we sampled outside a whitewashed house in the village of Umbria. The homemade deep-fried fritters topped with cinnamon sugar were a welcome energy boost during our eight-kilometre hike.
The mountain trails here are lined with olive and orange groves, pine trees and eucalyptus. Not to mention the fascinating cork oak—Portugal’s national tree and the source of about half of the world’s supply. Our guides showed how the cork itself comes from the tree’s thick outer bark, which is harvested every nine years. As I marvelled at the tree’s four-centimetre-long acorns, our group jokingly invented a slogan: “Save the cork industry, drink more wine!”
Then it was off to the Atlantic coast, and the rugged, wind-swept cliffs and golden beaches of the Algarve. Our daily walks along the sandy, undulating trails of the Rota Vicente brought new wonders, like huge white storks and the archaeological ruins of a 12-century Islamic fishermen village. One section of trail had towering cliffs with striated, multicoloured layers of sandstone, slate and limestone dating back millions of years. Francisco even pointed out a fossilized mangrove root, which I mistook for a rock.
Our exploration of coastal culture included a visit to Vicentino Vineyards in Brejão. What would a trip to Portugal be without wine? We learned the sand-clay soil and salt-laden ocean breezes combine to produce wines with a fresh, mineral taste. As a relative newcomer to the scene in 2014, Vicentino prides itself on experimentation. Our tasting featured a Sauvignon Blanc with notes of green bell pepper—so different from any wine I’ve ever tried.

Another long-standing regional tradition is producing medronho—a fruit brandy made from the berries of the Arbutus, or wild strawberry, tree. The Portuguese have been distilling it behind closed doors since the mid-1700s, but it’s now a growing industry with licensed distilleries. At Junior Jacques Distillery in Alentejo, we gathered next to a shiny copper still as the owner explained how he crafts his medronho. At about 45% percent alcohol, it’s strong—but surprisingly smooth and delicious. Certainly not the “hooch” of days gone by!
Our destination on the last day was Cabo de Sao Vicente, the most southwesterly point of mainland Europe. Waves roared to my right as we set out across deserted gorse- and juniper-strewn meadows, past red sandstone cliffs and a solitary fisherman perched on a rocky ledge. I felt wistful, knowing I’d soon have to say goodbye to my fellow travellers. We’d developed a special bond, forged by shared stories during picnic lunches overlooking the Atlantic and countless laughs over fresh seafood dinners.
That bond showed at the lighthouse marking the end of the trail, when Gordon pulled out a flask of scotch and several small cups for a communal toast—only to be topped by Gerry, who produced his mandolin and sang a hilarious handwritten song about our journey.
That night, we celebrated our newfound friendship and knowledge of Portugal with one last dinner and—needless to say—wine. Gotta save the cork industry, you know.

When you’re looking for an escape – a proper escape, without Google Maps or cosy hotels – an adventure paddling down the mighty Zambezi ticks every box. Trading wifi for wildlife, our travel writer Sam Murray visited Zambia for his first sub-Saharan safari, finding hidden hippos, twinkling night skies, and – most importantly – a tour leader who could decode the wilds of Africa.
As darkness settles over our remote camp, the growl of an unseen lion rolls across the river. Somewhere upstream, hippos gather invisibly beneath the surface. I’m new to the Zambian wilderness, and it’s clear I’ll need to learn the rules quickly. It’s my first night on the Zambezi Canoe Safari, an eight-day adventure that will take me 80 miles down the river, wild camping on uninhabited islands, and paddling past hippos, elephants, crocodiles, and an array of birdlife.
I’ll read the African night sky, spot hyenas on a game drive, and learn to live – and enjoy – life without wifi or phone signal. In short: the adventure of a lifetime. But before all that, I need the basics. Gathering the group, as vervet monkeys chatter in the trees around us, local guide Martin Phiri outlines the four essential things to consider: wind; sun; underwater obstacles (tree stumps and rocks); and hippos.

The following morning, after a briefing about the day’s itinerary, I’m in my Canadian-style canoe – Zambia to my left, Zimbabwe to my right – and every swirl of water grabs my attention.
I see a ripple ahead – the tell-tale sign of a hidden obstacle – and point it out to Martin. He had spotted it already, however, and made his assessment. He signals to the canoe behind to follow, and we glide over without an issue.
Later that day, the surface looks calm, but Martin slows the canoes and scans the river from bank to bank. Moments later, a pod of hippos breaks the surface and watches us with quiet interest. It’s one of those classic Zambezi moments: calm, close to nature, and utterly enchanting.
Curious about how Martin learned to read the wild so well, I ask him.
“I didn’t have the money to go to university,” he tells me, explaining that a friend had encouraged him to follow his passion for tourism.
That led him to Conservation Lower Zambezi, a non-profit organisation that trains guides and works to protect the local wildlife and ecosystems.
“I trained for about three years,” he explains. “Before you qualify, you must go with a guide on the river. They teach you the dos and don’ts. How to understand the water.”
Over the journey, Martin proves his mastery. He knows every hippo hotspot along the 80mi (130km) stretch. Sometimes he taps the inside of the canoe, gently or forcefully, to check if hippos are submerged ahead.
“Where I knock harder,” he says, “it means I always find hippos there… and now they’re not. I suspect they’re hiding. Better to warn them so they aren’t surprised.”
And his knowledge extends far beyond the river.
One night, after a hearty sunset dinner on a river island, he teaches us how to navigate using the Southern Cross.
Then, a couple of days later, on a guided walk in the Lower Zambezi National Park, he expertly explains the tracks, dung, grasses, and trees we come across – not just their names, but their practical uses and roles in the ecosystem.

I call my children and show them the river, proudly share my new skills: celestial navigation, identifying elephant tracks, and reading water for hippos.
It’s a proud moment and though I’m not Zambezi fluent yet – that takes years – this trip has been an unforgettable education in how to understand, respect, and live alongside the natural world.

If the Stans have taught me anything, it’s that surprises come from both the new and the familiar. In Uzbekistan, I always return to Bukhara. I first visited around 20 years ago, and although the city has evolved, its character remains unmistakable. A drink by the Lab-i Hauz, one of the old pools that once supplied the city’s water, is still a favourite way to unwind.
That sense of places shifting over time resonated with me elsewhere too. A recent trip through Turkmenistan led to several refinements to our Five Stans of the Silk Road trip. We now spend time in Merv instead of making the long journey to the Darvaza gas crater, whose flames are finally subsiding. We’ve added a Soviet-era train ride across the Kyzyl-Kum desert, and in Kyrgyzstan upgraded the stay at Son Kul so guests now enjoy the comfort and privacy of their own yurt.
Further east on the Tajikistan Expedition: Pamir Highway & Beyond trip, the Wakhan Valley is a highlight for hardy adventurers drawn to the most remote routes. For pure drama, the Flåm Railway in western Norway is hard to beat. Q: How did your Exodus journey begin?
A: I’d spent years travelling around the equator to dive – sharks, octopi, nudibranchs, you name it. But in my 60s, I realised there was a whole world out there I still hadn’t seen. With Exodus, I know I won’t waste a trip. Jordan, Vietnam & Cambodia, Peru, India and Nepal followed, each revealing a new dimension of travel I’d been missing out on.
Q: What makes small-group travel special for you?
A: It’s simply more fun to experience the world with people who are as curious and considerate as you are. I don’t know how Exodus attracts such sociable, punctual, generous travellers – but every group I’ve joined has felt like instant friends. And yes, we’re all still chatting on WhatsApp.
Q: Do you have a favourite travel moment?
A: That’s like choosing a favourite child! But sunrise at Angkor Wat was something else entirely – our guide positioned us with our toes practically touching the moat so no one could step in front of us. As the sun rose, I admit I cried. Quite frankly, that’s what Exodus does best: they string together unforgettable experiences, day after day.
Q: What keeps you coming back?
A: Consistency. Exodus guides are also exceptional, funny, knowledgeable, flexible, and deeply proud of where they’re from. They’re like teachers, shepherds, and friends who make sure no one misses the moment. With each trip I take, my bucket list only gets longer.
Q: Where’s next?

Mayank Khamesra was on the road from Udaipur to Delhi when his manager, Arvind, called with the news: he’d won our coveted annual Exodus Leader of the Year award for 2025.
Once he was home, his father had already arranged the celebrations – with his uncle, brothers and friends. As for the prize money, Mayank’s plans are wonderfully consistent: “more parties and more family trips,” especially in summer when the kids are off school. He’s also putting part of it towards a cause close to his heart: Animal Aid in Udaipur, which rescues and cares for injured street animals, a charity he feels personally connected to.
Mayank’s path into guiding began at 16, sparked by his idol, Adam Hobbs, a tour leader and driver with Encounter Overland. Introduced by his father, Mayank soon joined the group for the India leg of their epic London to Kathmandu journey. It was a fast-track lesson in tour leading: shared jobs, rough camping, and long
days where plans can unravel. But watching Adam steer the group through it all – calmly without fuss – taught Mayank that confidence in guiding is half the job.
The other half? Storytelling. “There’s the itinerary, then there’s my work as a storyteller,” Mayank says. Travellers always arrive curious about India, but Mayank loves the moment that curiosity becomes a hunger to understand. That’s where he takes them: beyond the obvious, into the rhythms and endless folk stories that don’t fit neatly on a schedule.
It’s this combination of experience, calm confidence and storytelling that makes Mayank our Leader of the Year for 2025. He doesn’t just guide – he makes travellers feel comfortable enough to ask questions, laugh at themselves, and lean into the experience.
