The Edible Classroom

The Edible Classroom believes that learning at school does not end in the classroom.

Outside of the physical buildings at schools within Penn Manor School District, Columbia Borough School District and the School District of Lancaster, school gardens exist where students plan, plant, care for and harvest vegetables.

Per its website, the Edible Classroom “cultivates academic achievement, healthy lifestyles and environmental stewardship through garden-based, experiential learning.”

“It’s like an on-site field trip where students come out for their lesson,” said co-founder and executive director Grace Julian. “It’s an opportunity for them to experience in a hands-on way all three parts of our mission statement.”

The Edible Classroom, a nonprofit organization, was founded

in 2017 by Julian and Beth Horst, both residents within the Penn Manor School District. Shortly after, the school garden program began at the aforementioned trio of school districts.

“We found that, as you can imagine, our administrators and our teachers are focused more on the

classroom learning inside of the school building,” Julian said. “We found our ability to support and reinforce what the students are learning inside the classroom … to be very valuable.”

The organization does not have a physical, brick-and-mortar location but instead operates out of its school

Fostering Pets - a Chance to Be Part of

Anne Hendricks, outreach coordinator with All 4 Paws Rescue, a nonprofit, foster-based, all-breed organization located in Malvern, is familiar with the most common excuse potential pet foster parents give. “They all say, ‘I could never foster because I would want to adopt them all,’” noted Hendricks, who has fostered more than 100 dogs over nine years. “We have

all foster-failed at least once,” she added, referring to a foster dog she knew she would be keeping within the first 24 hours of fostering her.

According to Kisha Reinmiller, site director for Pennsylvania SPCA Lancaster Center, many who foster do become adoptive pet parents. “We are always recruiting new fosters,” she shared. “A lot of them adopt for the first time.”

At Stevens & Smith Center, History Teaches Important Lessons

In the area of equal rights, our country has made great strides. But the process continues; there is still much work to be done.

The brand-new Stevens & Smith Center sheds a wider, more colorful light on the issues of equality.

“The center explores the ongoing struggle to expand freedom, equality and democracy in America,” said Jason Traverse, the director of marketing and communications for the Stevens & Smith Center. “Through the stories of Stevens, Smith and countless others, visitors are invited to consider how ordinary and extraordinary people alike have worked to advance these ideals, and how that work continues in America today.

“What makes the center special is that it doesn’t simply present history as something that happened long ago,” continued Traverse. “It asks visitors to consider how the questions that defined Stevens’ and Smith’s lives - questions about citizenship, equality, justice and democracy - continue to shape our lives today.”

Recently, the Thaddeus Stevens & Lydia Hamilton Smith Center for History and Democracy opened its doors at 13-15 E. Vine St., Lancaster, to visitors. The new museum, which is located on the site of Stevens’ home and law offices, is open Tuesday through Saturday from 10 a.m. to 5 p.m.

Open Houses Planned at Friends Meeting House

The Drumore Friends Meeting House, 1470 Susquehannock Drive, Drumore, will be the site of open houses on Saturdays, July 18, Aug. 15, and Sept. 19, from 10 a.m. to 2 p.m.

On July 18, doors will open at 10 a.m. so that visitors may view the historic exhibits. A ceremony will begin at 11 a.m. to install and dedicate a plaque from the Historic Preservation Trust of Lancaster County. The plaque recognizes the value of the Drumore Friends’ stories to Lancaster County’s legacy.

The event will include the premiere of a new 10-minute documentary about the meetinghouse. The film, “A Historic Gem Hiding in Plain Sight,” describes the Drumore Friends’ contributions to local life as well as members’ roles in the Underground Railroad, the Civil War, and the early days of Millersville University. Penn State University professor emeritus Douglas Miller will speak about his research for the book “Drumore Quakers’ Precious Habitation,” which he wrote to celebrate the Drumore Quakers’ 200th anniversary in 2016.

The Aug. 15 open house will feature amateur storyteller and Drumore Friends descendant Elizabeth Dixon, who will embody the role of Sarah Eva “Sallie” Bolton Pyle in presentations at 11 a.m. and 1 p.m. Pyle was in the 1855 inaugural class at the Lancaster County Normal School, which later became Millersville University. The faculty invited her to remain at the school as an instructor, and she did so for three years. She wrote

weekly to her mother, Mary Ann Brosius Bolton, and 60 of the letters are in the Millersville University archives. Pyle’s character will be brought to life through her words, which cover topics such as daily life at school, social concerns of the day, and Pyle’s romantic interests.

On Sept. 19, the meetinghouse will transform into an art gallery for the “Ancestors and Descendants Art Show.” The display will feature both traditional and contemporary works

of art, all of which were created by members of the Drumore Friends and their descendants. The items will include paintings, sketches, pottery, original linocut prints and etchings, quilts, woodworking, handmade books, photography, silk scarves, and historical pewter objects. gardens. It has a Columbia mailing address, but Julian would love to see the organization expand beyond its current three districts.

At the school gardens, students are involved in every step of the cultivation process. Students plant the vegetables, watch them grow, harvest them and then can eat them, something that Julian highlighted as being incredibly important.

“We find that if the student is involved in the process, they’re more inclined to try the vegetable,” Julian said. “Even just the visual of

The gardens reinforce the state’s Science, Technology & Engineering, and Environmental Literacy & Sustainability (STEELS) standards, which were adopted in 2023 to guide the study of the natural and humanmade world.

Within Penn Manor School District, gardens are currently located at Central Manor Elementary School and Hambright Elementary School. At Columbia, gardens are located at Colum-

bia High/Middle School, Columbia Early Learning Center and Park Elementary School.

In May, The Edible Classroom had the opportunity to present at Pennsylvania’s third Farm to Child Nutritional Summit in Philadelphia at Bartram’s Garden and Sankofa Community Farm. The organization was invited by the U.S. Department of Agriculture (USDA), of which it was a grant recipient last year.

“They invited two grant recipients to report on what good things we were able to accomplish thanks to the USDA grant funding,” Julian said. “Our portion of the presentation was

sharing how four schools in our partnerships benefited greatly from additional local produce given to the students, as well as lessons and informal opportunities for the students to engage in their garden.”

“The beauty of our spring is setting us up for the beauty of the fall,” Julian said. “Every lesson in the spring is planting some type of seed, and then every lesson in the fall is harvesting those mature plants.”

Every year, the Millersville Woman’s Club selects graduating seniors to honor for their achievements. This year’s awards were presented during Penn Manor High School’s senior awards night and the Lancaster County Career and Technology Center’s awards night.

The following scholarships for $1,000 each were presented: the Betty Gurtizen Health Careers Scholarship to Chloe Wolf; Jean Roth Academic Scholarship, Maryam Alfayyadh; Evelyn Wild Academic Scholarship, Alexis Blechschmidt; Millersville Woman’s Club Scholarships, McKenzie McPherson and Kylie Collins.

In addition, IzEldeen Salem was recognized as the Student of the Year at commencement. Salem received $100 and a medal. Earlier in the year, Luca Boas was named the 2026 Hugh O’Brian Youth Leadership student.

years in the making - more than a decade,” said Traverse. “It grew from painstaking research, preservation efforts, archaeological discovers and a growing recognition that Lancaster - and this historic landmark in particular - played an important role in some of the most consequential chapters of American history. The center represents a communitywide commitment to preserving and sharing that history for future generations.”

Housed in a multistory building, the Stevens & Smith Center tells its tales through exhibition galleries, original artifacts, educational programs and immersive experiences.

Visitors connect local history to national history through stories about the Underground Railroad, the Civil War, Reconstruction and the Christiana Resistance.

“Many people are surprised to learn that some of the most important stories in the fight against slavery and for equal rights happened right here in Lancaster,” said Traverse. “We want visitors to understand

that Lancaster’s history is not a footnote to the American story - it is American history. Lancaster County’s history is remarkably deep and diverse. Lancaster has long been a crossroads of people, ideas and movements that helped shape the nation.”

An influential statesman from Lancaster County during the 1800s, Stevens actively assisted individuals in search of freedom through the Underground Railroad, and many of his ideals helped form national laws. Steven’s longtime confidante, Smith was a successful businessperson and property owner who shared Stevens’ home.

“History helps us understand how we arrived at the present moment,” said Traverse. “It gives us perspective, context and a deeper understanding of the choices individuals and communities have made. Preserving history allows us to learn from the past while inspiring future generations to engage thoughtfully with the challenges of their own time.”

animal is not complicated. The Lancaster Center application can be found online at www.pspca.org, and the All 4 Paws application is at www.all4pawsrescue. com. Representatives of both organizations noted that the foster application is similar to the adoption application. “We process (the applications), and then we reach out,” said Reinmiller.

Hendricks pointed out that for potential fosters who already have pets, contacting the applicant’s vet is a crucial step. “We talk to the vet to be sure (the applicant’s) pets have been well taken care of,” she stated.

Once an applicant is approved, the organization will want to learn the type of animal the foster parent would like to take in. “A lot of folks have preferences, whether it’s a large or small dog, a cat, or kittens,” stated Reinmiller. Other questions may reference lifestyle and family size, such as whether the home is high traffic.

At All 4 Paws, foster coordinator Melissa Kuchinski will contact the approved applicant to discuss the age and size of a possible foster dog and to learn whether small children or cats are present in the home. “We try to place (animals that)

we think would work in that home,” explained Hendricks. Special attention is given to place animals with medical issues with more experienced foster caregivers, since these animals usually remain in foster care longer than the typical stay, which can range from a day or two to several months.

Meeting the animal that will be fostered is treated much like an adoption meeting at the Lancaster Center. If the meeting goes well, the foster care provider will receive crates, toys, food, and treats, and any necessary medical care will be covered.

“The fosters are not out-of-pocket for anything (at All 4 Paws),” explained Hendricks. “We give them the white glove treatment,” she added, noting that the organization depends on donations to make that possible. Fosters also receive a list of rules that include instructions such as keeping a leash on the dog at all times. “Rescue dogs are a huge flight risk,” noted Hendricks. “It’s easier and safer to grab a leash than a dog.”

Training for dogs and foster parents can also be part of the mix. “We have training partners who work with us,” shared Hendricks, who recalled a dog she

fostered who did not like to meet new people. “A training partner met with us for an hour and gave me hints, and (that dog is) now in a wonderful home,” she shared.

At the Lancaster Center, foster parents are given direct access to SPCA staff members even after hours. “We can counsel, provide handouts, or talk on the phone about what to do with certain behaviors,” explained Reinmiller, who reaches out to fosters weekly to see how things are going.

According to Reinmiller, foster parents are a great source of information about the pet and provide photos and videos that help in the adoption process. “We are a municipal shelter contracted with local police to take strays,” explained Reinmiller, who noted that each dog is assessed at the center. “Foster homes are really helpful for us to get home knowledge for the dogs in our care … especially with dogs that are a little shy or have behavioral concerns or need medical care.”

Hendricks agreed, noting, “We can make a good match (for an adoptive home) using the information about the (pet provided by foster parents).”

Finding foster homes with volunteers who have had pets but do not have any at the moment is especially helpful because those foster parents have experience but are able to focus more on the animal being fostered.

Both organizations accept cats as well. “For the most part (with) cats, it’s mostly kitten fostering,” said Reinmiller. “It’s socializing and housing until they are old enough to come to the shelter for adoption.” Kittens must be eight weeks old or weigh two pounds to stay at the shelter.

At All 4 Paws Rescue, both rescues and owner surrenders that are not immediately adopted go to foster homes the same day. “We like the foster care system because it gives the (pet) a home as opposed to a kennel,” said Hendricks. “It’s about whether we have a foster home (available) that will work,” she added, pointing out that foster homes are always needed.

Reflecting on her own experience fostering, Hendricks stated that she has reaped many benefits. “It’s wonderful to be part of a dog’s journey,” she said.
