I’ve grown increasingly aware of how important it is to know where our food comes from-and to support our local ranchers, farmers, growers, bakers and producers. In this Farm-to-Table issue, we celebrate those committed to bringing quality products into our lives-and we encourage you to join us in giving them your support! As we move into the holiday and entertaining season, we share a handful of markets, vendors, shops and resources so you can find the freshest eggs, meats, milk, sourdough loaves, honey, seasonings, produce, jams, jellies, canned and pickled foods-also handmade soaps, natural skincare, holistic remedies…fresh Christmas trees and so much more. It's been fun getting to know them! When we live intentionally with thanksgiving, gratitude isn’t just seasonal. It becomes the very fabric of our being. My hope is that as we stay appreciative of our blessings, we also sharpen our awareness of when a neighbor or a stranger may need a helping hand. We have certainly witnessed a giving spirit among our community and for other Texans over the past year. What joy there is in giving and in sharing love and resources with others. Christmas reminds us that we have received the greatest Gift! May this season draw us closer—time spent conversing at a table full of a fresh, local harvest-and closer in community with one another. When a loaf of bread doubles as a beautiful piece of art—
an edible centerpiece in itself—a warm ambiance naturally completes a welcoming and minimalist tablescape for any special gathering. In this issue, The Wander Edit embarks on a baking adventure with Alma Garcia, The Sourdough Señora, to learn the basics of crafting artisanal sourdough bread, rolling out and making homemade skillet tortillas, infusing butter with fresh strawberries, and styling decorative charcuterie arrangements.

SOURDOUGH SEÑORA COTTAGE BAKERY The aroma of fresh-baked loaves filling my kitchen always takes me back to the warm memories of when I first began my sourdough journey. It all started in 2022, during the pandemic, when I set out to bake homemade bread that was both delicious and nourishing for my family. I quickly fell in love with the art and science of sourdough baking. Thanks to its natural fermentation process, sourdough is often considered one of the healthiest breads—it’s easier to digest, has a lower glycemic index than most store-bought loaves, and is rich in prebiotics that support a healthy microbiome. My name is Alma Garcia, and at Sourdough Señora, every loaf is made with love and patience—because good bread should feed both the body and the soul.
BAKING SOURDOUGH WITH PURPOSE I created my own sourdough starter—a natural leavening agent composed of wild yeast and bacteria rather than commercial yeast—and began researching everything I could about sourdough. Baking quickly became both my passion and my therapy. I learned through failures and wins, took a few classes, and baked for family and friends. Before long, people began asking me to keep baking my sourdough bread, and my son convinced me to start selling it. After much prayer, I decided to take that leap of faith and begin offering my sourdough bread to others. Now, I hope to spread not only sourdough love but also God’s Word: “And Jesus said unto them, I am the Bread of Life: he that cometh to me shall never hunger; and he that believeth on me shall never thirst.” — John 6:35
FAITH, PASSION, & THREE BASIC INGREDIENTS Three years later, in February 2025, Sourdough Señora officially came to life. My youngest daughter even drew my logo—a simple sketch of me wearing a hat adorned with a wheat stem. My business complies with Texas Cottage Food Law and I bake in my home kitchen on my days off and weekends while also working a regular 9–5 office job. I began monthly bread drops through Hotplate, sell my sourdough goods at local farmers markets, Hillbilly Nutrition in Waxahachie, Texas, and now offer them on my website. My signature sourdough bread is made with just three simple ingredients: organic wheat flour, salt, and water. In addition to my loaves, I also make sourdough flour tortillas, cinnamon rolls, and cookies—all crafted from my own sourdough starter. An added health benefit is that sourdough freezes well and makes it even more nutritious when you freeze then toast—creating resistant starch which slows sugar absorption and improves gut health.
A JOURNEY OF GRATITUDE This sourdough journey has been one of patience, learning, and most importantly--gratitude. Realizing that I can create something beautiful and nourishing with my own two hands and then seeing my family, friends, grandson and customers enjoy my bread fills my heart with joy and thankfulness. To God be the glory! I’m so grateful for His guidance in every step and decision. Q:
Kenneth...we sure are seeing more and more of you— in publications, online reels, and even on packaging as the Ranch Manager at Rosewood Ranches! About how many others do you work with in making important decisions about the Wagyu beef products? As Ranch Manager, I oversee operations at Rosewood Ranches in Ennis, Texas — but I’m just the face of this work. The truth is, our success comes from four distinct but interconnected ‘lanes’ working side by side — and we know not to get in each other’s lane! The other three are equally as important. We have our Meat Company Manager, our Operations Manager, and our CFO.

How did you get interested in ranch management in the first place, and what were experiences that lead you to Rosewood Ranches?
I graduated from TCU's Ranch Management program and then bounced around a bit while deciding what I wanted to do. I grew up in the dairy world — my dad was a dairy farmer — so I had to get that out of my blood. I was also very interested in embryo transplantation in cattle back in the '70s, when it was brand new. I helped a friend in Van Alstyne (where I went to high school) get his ranch started. I met my beautiful bride, ViAnn, at a dance and married her six months later. Then we moved to Paris, Texas, and started an embryo transplant company, with Carroll Shelby as a partner. He was one of the neatest guys I've ever met, and I was blessed to deal with him for four years. After we closed that company, Rosewood Ranch became part of my life on October 14, 1985. The Rosewood Corporation is all part of the Caroline Hunt Trust. I met and was hired by one of her sons, Bunker Sands, who was all about ranch conservatism and not taking the land for granted. I worked for him for 18 years before he passed away. I sure enjoyed working with him and miss his friendship to this day. His brother, David, took over but passed away two years later. Now the grandson, Wilson Sands, has taken over and is doing a fantastic job. I've been here so long that I'm working with the grandkids! I feel really blessed to work with a family that totally trusts what I am doing, but is still very much involved.
Q:
What is the difference in Wagyu beef from the ranch? What makes it stand apart?
Each animal is pasture-raised and finished with great care. Our beef is always antibiotic-free, it's high in Omega 3, and it's good for you—but everything in moderation, of course. The way we take care of the animals results in marbling, a buttery mouth-feel, rich flavor and texture that we are proud of. We are still big on conservatism and caring for the land. It all starts with the grass and conservatism.
Q:
Now that you've drawn us in with the taste difference, where can our readers find Rosewood beef on menus or at retail locations? Who are a couple of your distributors that have helped in the company's growing success?
Off the top of my head, in Dallas, you'll find our beef at Meridian, Avra, Town Hearth, MFG's No. 1 Steak, Carbone, Evelyn, Al Bernait, and the Dallas Athletic Club. If you're in Vegas, stop by Bazaar Meat or the Foundation Room. When in Charleston, North Carolina, try Halls Chophouse. If you want to stay local in Ellis County, try the Rosewood Wagyu steak sandwich at Fern in the Wild in downtown Ennis. In Mabank, B4 Barbeque (voted a Top 50 in Texas) just switched to all Rosewood Wagyu. As for retail outlets, The Meat Shop in Dallas, Hamm's in McKinney, The Chopping Block in Houston, and; most recently, The Blind Pig Butcher & Market in Waxahachie. Forum Meat right here in Ennis was one of our first distributors and continues to contribute to our success. We are forever grateful for them. Distributing through Allen Brothers has also had a significant impact on our expansion, taking us nationwide, so we are very appreciative to partner with them.
Q:
What are the high quality Wagyu beef products that are sold from Rosewood Ranches?
We have a whole animal to sell, so we try to make use of everything. Of course, we have the finest high-end beef cuts. In our grinds, we offer the best burger meat, beef franks, sausage—including our new jalapeño-queso sausage— plus jerky, and tallow. We even have beef tallow lip and skin balms in various flavors and scents.
Q:
The new ranch website, RosewoodBeef.com, is quite spectacular. You also mention working with top chefs in creating engaging, cinematic online content. I'm hoping readers will peruse your site and see some of their favorite chefs in action! I've had lots of fun with some of the best chefs out there! I love taking quick day or overnight trips to drive or fly out to visit them onsite at their restaurants. I don't like spending too much time away from the ranch, but dining with each of them is a treat. Yes… all the videos are awe-inspiring — a cinematic journey that beautifully conveys our vision of providing the highest-quality beef, coupled with their talent, preparation, and presentation. We sure enjoy it when they come out to the ranch, cook and hang out in the kitchen. You'll find chefs like Kent Rathbun, Matt Ford, Julian Barositti, and Michael Lamping on our site. Getting to know Chef José Andrés has also been a highlight, and the work he has done with World Central Kitchen is remarkable. Michael Lane also uses our products. Taylor Sheridan has become a good friend, and it's been a whole lot of fun being around him. My daughter, Lucy, is a chef, and we had the opportunity to cook for Taylor and Sam Elliott. We are very blessed to have partnerships with all of them. We are committed to operating in pursuit of excellence.
Q:
Give us a snapshot of family life on the ranch...and what lies ahead?
My wife and I have now been married for 43 years. We love living out here on the ranch in Ennis. I always say… why would I want to be gone from the ranch very long when all of this is my backyard? We have three exceptional children and eight awesome grandkids who love hanging out at the ranch with Poppy. In fact, one of our buildings is nicknamed 'Poppy's Meat Room.' I'm 70 and don't see myself retiring anytime soon. Everyone has been asking me about retiring recently, and I don't know the answer—because I sure love what I do.
Q:
We hear some pretty crazy stories about how and why Wagyu beef tastes so delicious and is so tender. Is it true that the cattle get massaged and you feed them beer? (wink)
With a thousand head of cattle and about 10,000 acres, we don't have time for that. This isn't Japan. We have wide open spaces and lots of cattle to care for. This is Texas Wagyu… and we don't waste beer around here! (laughs)

A Garden, a Hive, & a Leap of Faith
If you had told me ten years ago that I'd be managing beehives across Ellis County, Texas, I would have laughed and called you crazy. I was a city girl, far more comfortable with concrete than the countryside. However, when I married a man with a green thumb, I adopted his love for gardening— and soon enough, he convinced me that we needed a beehive "because it would be good for the garden." That's where it all began.

When friends and neighbors discovered that we were beekeepers, the phone started ringing with requests to remove honeybee colonies from homes and trees. Many didn't want to exterminate the bees—they just wanted them safely relocated. With honeybee populations declining, we couldn't bear to see them destroyed either. So began our family's adventure in live bee removals. For the first four years, we specialized in live cutouts and relocations, turning what started as a hobby into a local family business. All my boys suited up, learned the art of beekeeping, and helped in the bee yard—whether they liked it or not.
Growing with Purpose As our apiaries expanded, our mission
evolved from rescuing bees to sustaining them. We focused on raising strong, healthy hives, mentoring new beekeepers, and producing authentic local honey. We made an early decision to stay true to our roots and serve our community by remaining stationary beekeepers—no migratory hives, no large-scale operations. Just local bees, local flowers, and local honey.
Bees That Benefit Everyone To expand our impact,
we developed a hive-lease program that helps property owners achieve agricultural valuation while supporting pollinator health. For an annual fee, we establish and maintain a bee yard on their property; in return, they receive both ag benefits and a taste of the honey their land helped create. Our urban beekeeping initiative also helps commercial properties boost sustainability goals—earning ESG credits and contributing to LEED certifications—all while adding beauty and biodiversity to their green spaces. When honeybees thrive across the country, everyone benefits.
A Calling to Care Now that the kids are grown and gone, I
see clearly how beekeeping filled a space in my life that needed tending. I'm convinced God brought the honeybees into my path to keep that nurturing spirit alive. When you realize that one in three bites of our food depends on pollinators, the work of caring for honeybees becomes more than a hobby—it becomes a calling.

The Waxahachie Farmers Market divides the year into two main seasons to accommodate Texas weather. The Fall/Winter Season runs from November 1st, 2025 – April 25th, 2026, with hours from 9a.m. – 1p.m.
Note: The market will close January 3rd–31st of 2026, for annual building and site maintenance, and will be reopening on Saturday, February 7th. The Spring/Summer Season kicks off May 2nd, 2026, with hours from 8a.m. – 1p.m. The south side of downtown serves up more than just the Farmers Market on the weekends. "From the buzz of bees to Christmas trees... family traditions start here!"
ucked away in the rolling countryside of Ellis County Texas, Hidden Honey Farm has been a local gem since 2011-a place where hard work, family, and a love for the land come together to grow something special. What began with a few rows of vegetables and a handful of laying hens has blossomed into a thriving organic farm known for its warmth, honesty, and community spirit. It all started with a simple “road box” at the end of the driveway-a wooden stand stocked with fresh eggs, honey, apple butter, and homemade jams, all sold on the honor system. Neighbors came for the quality, but they stayed for the connection. Over time, the farm expanded to include greenhouse-grown vegetable plants in the spring and pick-your-own strawberry fields that delighted families from 2014 to beekeeping, which began in 2012 after a neighbor’s casual comment that “you really need bees,” quickly became a beloved part of the farm’s identityand so did the jars of golden honey that now bear the Hidden Honey name.
Owners Tim and Dixie have poured their hearts into every inch of the farm. After Tim retired from construction last year, he and Dixie-the farm’s master gardener, who lovingly tends to every seedling, plant, and flowerfound new energy to bring long-held dreams to life. With Tim’s daughter, son-in-law, and grandson now living and working on the property, the family hosted their first fall festival in 2025-a joyful success that inspired them to keep the spirit growing.

This winter, Hidden Honey Farm is thrilled to announce another new chapter: their very first year offering fresh-cut, premium Christmas trees. Visitors can choose the perfect tree, sip hot cocoa by the fire, and shop for handcrafted holiday treats-creating memories that last long after the ornaments are packed away.
