Spectators Invited Sunday Bowhunters from around the world have arrived in Ellicottville for the sport’s championship event this weekend at Holiday Valley where the best-of-the-best male and female shooters compete for the top awards in their classes. Holiday Valley reports that well over 1,500 competitors from 12 countries are represented. This is the third year in a row that Holiday Valley has hosted the International Bowhunting Organization World Championship, and it’s the sixth time since 2008. Participation is by invitation only. For shooters who haven’t qualified for the international event, Holiday Valley also hosts a Bowhunter’s Open during the IBO Championships. All shooters will compete both Friday and Saturday. The top five scorers in each class will compete in the championship round on Mardi Gras on Sunday, when spectators are invited to take the Yodeler chair to the site and watch from 9 a.m. until 2 p.m. Advice to spectators: Archery takes concentration, just like golf, so while you’re watching, please pretend that you’re on a golf course and stay quiet. And remember that arrows are flying all over the place! Stand where instructed and hang onto your kids! The public is also invited to visit the Bowhunter Market in the Yodeler parking lot Fri.Sat. from 9 a.m. to 7 p.m. and Sun. from 9 a.m. to 3 p.m. For the complete schedule of events and activities throughout the weekend, see page 6.

Burdick Blueberries: Quietly Making a Difference EVL Rotary at Work A Juicy Morsel of History

Burdick Blueberries has been a staple in the East Otto community since the 1950s, drawing customers from as far as Toronto and as close as around the corner. Although it has changed hands a few times, the blueberry patch has never left the family.
It all started when John Milton Burdick visited a wild blueberry patch in Napoli as a child. He and his family frequented the patch to pick wild blueberries, meeting other families who were enjoying the same experience. In 1937, the Mansfield dairy farmer and his wife Pauline, were looking for something else during the failing economy, so they rented land in East Otto, where they began growing potatoes. During their big crop rotation a few years later, Burdick knew he didn’t want to go back to dairy farming and thought again of his childhood in Napoli. In the early 1950s, the couple gave their dairy farm to their son, Rusty, and bought an 80-acre farm. The Michigan State educated Burdick decided to give cultivated highbush blueberries a try and planted some in the eastern most section of his field. The bushes flourished, and Burdick,

With so many options around, how do you choose the right one? Judy Emerling of Springville noted that she took several factors into consideration when she recently boarded her 1 1/2 year old border collie, Riley. First, “we wanted to make sure he’d have plenty of time to play outside versus being crated,� she said. Other factors were “personality of the staff and being well versed on different breeds and their characteristics.� Emerling was able to take a tour of the facility before she took Riley there. “The setting was important to us,� she explained. “We live in the country, so we wanted a place where Riley could run around off leash.� Location was also key. “We didn’t want to drive an hour to get some place,� she said. Emerling, who ended up choosing a kennel in nearby East Concord, was impressed with how the kennel went the extra mile with certain aspects of Riley’s care, such as texting
her updates and photos of Riley playing and interacting with the other dogs. Rachel Robinson, a vet technician from Springville, noted that other important questions to ask are: How are the kennels cleaned and how often? Do pets get one-onone time or is it feed them, let them out and go? Can they give meds, injections or insulin if needed? “It would be nice to know that the owner of the kennel will be there full time,â€? she added. When families head to places where the pup can’t join them, it’s important to feel comfortable with your dog’s temporary home. Choosing a kennel is an important decision, because let’s face it—dogs are part of the family! Do your homework, talk to friends and ďŹ nd the best option to ďŹ t your dog’s needs. along with hired helper Charlie Stone, soon planted 500 more. As the plants began producing, the Burdicks officially opened Burdick Blueberries, a pickyour-own patch. “Some of these bushes are 60 years old, and the farm’s been in the family for 70 years,” said current owner Amy Edwards, Burdick’s granddaughter. Since its inception, Burdick Blueberries has grown to have 30,000 bushes and has been in the hands of Burdick; his daughter and son-in-law, Helen and Roger Edwards; their daughter Paula Edwards and now, Paula’s sister Amy Edwards. Paula Edwards took over the farm in the 1990s, after her parents retired. Paula Edwards ran the farm, along with Terri Regulski, until she passed away in December 2014, leaving the farm to her sister Amy, who lived in San Diego, and their brother Peter. “Paula brought her own beautiful, creative touch to a farm already flourishing,” reads the farm’s website. “[She] exuded a bursting poetic approach to life. It seems the berries grew sweeter with Paula’s special touch.” After Paula’s passing, Amy Edwards had to decide if she wanted to move home and take over the farm. The sevenyear San Diego resident was
enjoying her life and had a job she loved. “It was a really hard decision to move back from Southern California,” Edwards said. Ultimately, it was the joy customers get when they pick their own blueberries that brought Edwards and her partner Beth Strasser to the farm. Last summer, a customer told her he loved coming here because nothing ever changes. “I thought, he’s right. The only thing that has changed is now we have an electric weighing scale.” The pair pulled in on April 1, 2015, and the next day began pruning the bushes, something that needs to be done annually. Next they dealt with a rainy summer, including the July 14 East Otto flood, which slowed the ripening process and pushed back the season. “That’s the life of a farmer … you just have to be ready for anything,” Edwards said. Although their first season has had its troubles, both Edwards and Strasser said their neighbors and community members have been nothing but supportive, offering to help, with anything, to make the transition smoother for the new owners. “They’ve been so incredibly welcoming and supportive, it’s so nice,” Strasser said. “They
said, ‘What can we do to help? We want you to succeed.’” In addition to the community, Edwards said the joy she sees on customers’ faces when they’re picking their berries makes her sure she made the right choice to keep it open. “That joy it brings people … that’s the really fun part,” Edwards said. “I had someone call me to make sure we were ready. Then they drove two hours to pick blueberries and stayed overnight in a Springville hotel. It’s amazing how far some people come.” Continuing on with what her family has built, including the “you-pick-them” fresh flowers Paula added while she ran the patch, is Edwards’ main goal, for now. “My mom and sister were the gardeners … I just did what they told me to do,” Edwards said. “I’m still adjusting to losing my sister … I have to remind myself she’s not here. This was all her.” With the end of the peak season coming, Edwards said she and Strasser are trying to figure out what they want to do moving forward. They do know, however, that they will continue to sell Amish pies and goat milk fudge – customer favorites – and print the Blueberry Recipes courtesy of Burdick Blueberries, each year. Burdick Blueberries will reopen within the next week or two, for the third pick. Edwards recommends calling before arriving to make sure they have blueberries ready to be picked. Quinoa Fruit Medley -- Courtesy Brittany Lowry, Owner, Wholesome Hideaway, 33 Bristol Lane, Ellicottville
Try this for lunch or serve as a side dish for dinner. Ingredients: Quinoa (based on serving size desired) 1/3 cup blueberries 1/3 cup raspberries 1/3 cup strawberries, sliced 1/4 cup chopped cucumber 1/4 cup tahini 1 Tbsp fresh lemon juice 1 Tbsp extra virgin Olive oil 1/4 cup chopped parsley
Instructions: Rinse and prepare quinoa according to package directions (according to desired serving size). Set aside to cool for 10-15 minutes. Whisk together tahini, lemon juice and oil. Top quinoa with fresh fruit, cucumber and dressing. Garnish with chopped parsley. Add freshly ground pepper to taste. Serve and enjoy.

Kneeland adapted this recipe from one shared with him by Paula Edwards, past owner of Burdick’s Blueberries. Ingredients: For the crust: 5 cups all-purpose flour 2 ½ cups shortening 2 tsp white vinegar 1 tsp salt 1 egg Water For the filling: 1 qt. fresh blueberries ¾ cup cane sugar 2 Tbsp cornstarch ½ cup plus 2 Tbsp water 1 qt. heavy whipping cream
Instructions: Mix the flour and salt in a large bowl. Add the shortening and work together with your hands until just blended. Whisk the egg in a one cup measuring cup, add the vinegar and fill to one cup-full with cold water. Add the egg mix to the flour and blend with a pastry cutter or fork until all the liquid is absorbed. Roll out a single layer of pastry dough on a floured surface and prick with a fork. Place dough in a pie pan, cover with a sheet of parchment paper and fill to brim with uncooked navy beans (to keep dough from sliding down the pan while baking). Bake at 350 for 10-15 minutes. In a saucepan, heat sugar and ½ cup water until sugar is dissolved. Add 1 cup blueberries and bring to a boil. In separate small bowl, mix cornstarch and 2 Tbsp water. Add to the berries while the pan is off the heat. Return the pan to the heat and simmer covered for 10 minutes. Cool and fold in the remaining blueberries. Pour into baked pie shell and chill for at least 3 hours. Top with whipped cream and enjoy.
Blueberry Torte – Courtesy Amy Burdick, Owner, Burdick’s Blueberries, 8267 Thompson Road, East Otto “My mom always made the blueberry torte for me whenever I returned home for a visit.” Ingredients: 1/2 cup cold butter 1 cup all-purpose flour 1 Tbsp sugar 1 8 oz. package cream cheese, softened 1 cup confectioners’ sugar 1 pint heavy whipping cream, beaten to stiff peaks 3 cups blueberries 3/4 cups water, divided 2/3 cup granulated sugar 2 Tbsp cornstarch
Instructions: Mix butter, flour and sugar. Press mixture into a 13x9x2” pan, bake at 350 for 15 minutes or until lightly browned. Watch as it burns easily! Let it cool. Beat softened cream cheese and confectioners’ sugar until light and fluffy. Fold in beaten cream. Spread over crust. Cook blueberries, 1/4 cup water mixed with cornstarch, sugar and 1/2 cup water until berries are thick. Chill thoroughly. Spoon blueberry mixture over cheese mixture. Chill several hours or overnight. Cut into squares and serve with a little whipped cream on top.

State Park Nordic Ski Patrol, works hard year-round to make the park safer. Its members work so hard, in fact, that their efforts were recognized by the National Ski Patrol when they recently were awarded second in the nation for Outstanding Nordic Patrol. Receiving the award was no easy feat. According to Mary MacQueen, who started ASP’s Ski Patrol in 2002, “Each ski patrol usually has an awards committee tasked with applying for and nominating their own patrol for any awards they feel that patrol is qualified to receive. The award is first received by the Region the patrol is located in (ours is the Western NY Region). If the patrol wins the award for their region, they then have to compete within their division to try to win the award at the division level. Our division is the Eastern Division, which includes most of the states in the eastern US. Once the patrol wins at the Division level, that patrol then gets submitted to the National level for consideration for the National award.” MacQueen noted that the criteria and application process were extensive. “Criteria are based on achievements not only of the patrol, but also its individual members,” she explained. “Things that give extra credence to the application include offices currently held by our members in the section, region, division or national level. Candidate
training and results are also considered. Any training hosted by our patrol, for instance ski skills, mountain travel and rescue, avalanche, first aid, search and rescue, etc., also is considered, as is the number of certified testers, instructors and students. Any lectures given to schools, ski clubs, TV, radio, newspapers, etc., and information that shows the patrol’s contributions to the sport of skiing are also considered. Per the instructions on the application, no information dating back more than four years may be used.” And what exactly is the role of ASP’s Ski Patrol? “We are a patrol that offers Allegany State Park first-aid and search and rescue support all year round,” MacQueen said. “We patrol the cross country ski trails during the winter months and offer first-aid support during the summer at local bike and foot races. Our only source of funding is a yearly donation from the organization that hosts the bike races.” The group consists of a number of patrollers who work above and beyond the local level, supporting the region as well as the division as instructors and supervisors in various disciplines, all on a strictly volunteer basis. “In order to become a member, the candidate has to meet the requirements set forth by both the National Ski Patrol and our local patrol,” MacQueen explained. “This includes taking the nationally recognized Outdoor
Emergency Care course. A bit more arduous than an EMT course, this course requires approximately three months of classroom time, as well as an entire ski season of handson practice in the winter environment. Candidates also are required to spend the season honing back-country and crosscountry ski skills. These skills are evaluated at the end of the ski season as well. Candidates also are required to take the National Ski Patrol’s mountain travel and rescue level 1 class.” Although it’s called the “ski patrol,” there really is no off season for these volunteers, as they also work hard in the summer months. “We spend our summer months providing first aid and search and rescue for the many adventure races, mountain bike races and triathlons that take place at Allegany State Park,” noted MacQueen. “Many of our members are avid mountain bikers, hikers and runners who also enjoy using the park for these activities in the summer.” With the Outstanding Nordic Patrol award, the hard work of these dedicated, yearround volunteers has not gone unnoticed. Congratulations to the Allegany State Park Nordic Ski Patrol! These requests might come from teachers or other school staff, friends of the family or others who recognize a need and quietly let the Rotary know about it. “Typically, the families and children don’t know where the assistance comes from,” Cappelli said. “We just arrange to have hearing aid batteries delivered to a child’s home, or another child to be fitted for eyeglasses, or another to get school lunches, or another to be driven to a medical appointment. The bills come to us and that’s that.” The Rotary also purchases school supplies and covers field trip and special project fees or transportation for needy ECS students. Through Family Support for Ellicottville, the Rotary also provides Thanksgiving and Christmas meals for the needy, and collects contributions yearround for Santa’s Workshop, which allows people to privately choose gifts for family members. Not all of the Rotary’s work is behind the scenes, of course. Some of the “not so quiet” work it supports includes extensive assistance to the Ellicottville Memorial Library, where funds are used to pay for a summer intern, the summer reading program, computer upgrades and more. Its focus on children means it also supports Little League, the summer Park Program and an after-Park Summer Reading Program. It sponsors the Ellicottville Young Writers & Illustrators Club, and funds the “Arts in Education Program” at Essex Arts Center and sends two high school juniors or seniors to a youth leadership camp in Ontario each year. It also hosts the annual and very popular Ellicottville Halloween Party at the American Legion. Rotary supports numerous community organizations,
including the Ellicottville Historical Society, the Alley Katz, the Ellicottville Food Bank and Meals on Wheels. It provides aid for the local Women’s Shelter and to families in transition. Recently, the Rotary helped the town of Ellicottville renovate the auditorium in the old Extension Service building, which is now known as the Town Center. The auditorium, which is adjacent to the Nannen Arboretum, is now an affordable and attractive wedding and event venue option and also can be used for community fundraisers, meetings and other uses. The Rotary does not earn any income from space rentals, but the “Ellicottville Rotary Auditorium” was named to acknowledge its contribution. All this quiet and not-soquiet community assistance sets the Ellicottville Rotary apart from many other Rotary clubs around the country, which often look more like social and business networking clubs. Since it was formed in 1999, the Ellicottville Rotary’s membership has dropped to just eight. But those eight dedicated individuals (Jack Luzier, President, Dave Blanchard, Debbie Burkhard, Greg Cappelli, Shannon Carscallen, Michael DiPaolo, Marcia Stoddard, Kathy Trost, John Wisemantle and some “Friends of Rotary” who help with events) get a lot done and have been lauded by the Rotary’s District Governor, who said “I was very impressed with the extent of your engagement in your community, which is incredible for a group your size.” The club knew that it was too small to meaningfully impact the international goals of Rotary International. Instead, it felt it was in a better position to use its funds right here in
the community, so 80 percent or more of its annual budget of roughly $10,000 is spent in the Ellicottville community, which is defined by the Ellicottville School District boundaries. “People outside the area have a perception that Ellicottville is wealthy, but it’s primarily our visitors and vacation homeowners who have the wealth. There is a lot of poverty in our school district, and that makes organizations like Rotary so important,” Cappelli said. Besides occasional donations and membership dues, most of Rotary’s income comes from the Rotary’s one and only annual fundraiser, Tuscan Moon, which began as a tribute to former Rotary member and Ellicottville business leader Michael Kerns. This year’s event on August 29, which offers the best dining extravaganza and silent auction of the year at John Harvard’s Cabana Bar & Pool Complex and Holiday Valley, brings in pretty much all of the Rotary’s income for the Foundation for Youth and Family Support for Ellicottville, so its importance cannot be understated. “Some years the event brings in $8,000 and some years it’s closer to $11,000. The more we raise, the more help we can offer to the neediest among us,” Cappelli said. Tickets are $65 per person and include hors d’oeuvres, the gourmet dinner created by the best chefs in the area and a dessert selection extraordinaire.
