Hello January! Ellicottville is now officially in its favorite season of the year. There’s skiing and boarding. There’s tubing and skating. There’s also cross country and snowshoeing, shopping and dining, music and dancing. Want even more? How about some great discounts and the opportunity to support some great causes? All month long, it’s Learn a Snowsport Month at both Holiday Valley and HoliMont. At Holiday Valley, this means significant discounts on Learn to Ski or Ride packages, all of which come with age-grouped lessons, beginner’s area lift tickets and equipment rentals. There also are packages for nighttime skiing/boarding, weekday lessons and for more advanced beginners who want to hone their skills. Discounted lodging packages also are available. The Weekday Experience Pass includes 10 weekday lift tickets with five group clinics. HoliMont’s 17th Annual SkiScape on Jan. 4 Support for Kids Escaping Drugs This Sunday, Jan. 4, HoliMont will be filled with hundreds of skiers and boarders who want to make a difference in the lives of adolescents and their families who are struggling with drug and alcohol dependency. The fundraising event features individual skiing and boarding races, a must-see Lake Effect Fire Fighter race featuring firefighters racing down the slopes in their full fire gear, a silent auction and a post-event party and medal presentation. There’s a minimum donation of $60 for non-members. HoliMont and Ski Patrol members may attend for a $20 contribution. All proceeds support Kids Escaping Drugs, a non-profit organization that works to ensure that quality alcohol and substance addiction education and treatment services are available to adolescents, adults and their families to foster a healthy WNY community. New After-School Programs Provide Extra Support

The District plans to expand the current after school program in an effort to increase the number of days and the students eligible to participate. Currently, the program often referred to as “Homework Club,” runs two days a week for grades 3-6. This has been very effective
in assisting students and providing additional teacher directed support. Students are able to use the time for assistance with their homework and to gain additional help in areas where they may have fallen behind. It expands instructional contact and support by two hours a week. Here are the six (6) main components to the overview expansion: 1. The program will be offered to 7th and 8th graders two nights a week “by invitation.” This could be a way to help students who are on the ineligibility list as well as students who are simply struggling and need some extra time to devote to their classroom work. This would be staffed by two Middle School teachers. 2. The District is implementing the use of iReady Program as a diagnostic program built for the Common Core. It will provide teachers with lessons and students with individualized instruction and practice. The system will also See After-School Programs page 8

Letter to the Editor A Christmas Letter This letter was received by a mom from her daughter this Christmas season. We reprint with Mom’s permission. I’ve been fortunate enough to be blessed with a wonderful family and luxurious Christmases that most people never have. The funny thing is, though, no matter what great presents and awesome toys and gadgets I received growing up, every year I would look forward to the apple and orange my grandma would put in my stocking. It was put there to remind me of how fortunate I am, along with stories of our family tree and how sometimes an orange would be the only or best gift an ancestor received. Could you just imagine? An orange as your favorite Christmas present? This is something unheard of in today’s world, but only because we are fortunate enough to have the wealth to make this idea something of the past. Yet, I plan on having an orange and apple in our family stockings for many generations to come. I am so thankful for that little reminder in my stocking every year because I am lucky enough to not have the orange as my best gift, and the orange kept me grounded and taught me to be thankful – something many kids miss out on these days. Tomorrow night, my grandma will be placing the 20th orange in my stocking, and I look forward to taking it out for the 20th Christmas morning. Alysa Jane Martin

Tractor Trailer Accident in Ellicottville A tractor trailer came to rest in Ellicottville’s Holy Name of Mary Roman Catholic Cemetery on Wednesday morning, Dec. 31 after missing the turn at the T-intersection for Rtes. 219 and 242. The driver was not hurt and no other vehicles were involved. Several headstones were knocked over or damaged. The Cattaraugus County Sheriff’s department and NY State Police responded. 2014. No, They Didn’t Actually Say That!?! Do not for a moment think that professional male athletes said the dumbest things in the past year because they always have, and always will have, Jessica Simpson interrupting them. While having lunch, the American ‘famer’ tweeted her faithful following with the question: “Is this chicken, what I have, or is it fish? I know it’s tuna but it says ‘Chicken Of The Sea.’” President Obama tweeted back that it was indeed fish and unfortunately he was dropping her from his short list of candidates to be his new Secretary of Education. And Jessica Simpson will never win the Oscar for Best Mangled Quote as long as we have microphones and Britney Spears: “I get to go overseas to overseas places, like Canada.” And Mariah Carey: “My mother is Irish, my father is black and Venezuelan, and me, I’m tan.” I’ll bet if you did the genealogy, Mariah Carey and Geri Halliwell are somehow related. Said Ginger Spice: “First my mother was Spanish. Then she became a Jehovah Witness.” That’s like Sammy Davis Junior who was African American until he switched to Judaism. And Christina Aguilera: “So, where’s the Cannes Film Festival being held this year?” And of course, Jersey Girl Snooki: “I’m not good with time. Like if I ask you the time and you say ‘A quarter to 2’ I wouldn’t know. Why can’t you just say 2:30?” Yeah, or three-ish. (Do not get her started on time zones!) So you think Hollywood starlets bested professional athletes by uttering the most ridiculous quotes of the past year? Sorry, as the boys of balls and pucks like to say: “We have come together as a team and we know what it takes to win.” To their credit, men say really dumb things more succinctly. When asked what he would have been if he had not gotten into professional golf, Rory McIlroy summed it up in two words. “A
virgin.” In an NHL game in which the Calgary Flames started the game by putting all their goons on the ice, and Vancouver Canucks coach John Tortorella responded by putting all his goons on the ice, Canucks winger Tom Sestito explained how it happened. “Torts told us they were starting their idiots over there, so we had to match that.” Sestito would know. He was one of the starters. Before the United States played Belgium in last summer’s World Cup, sportswriter Brian Phillips offered his pre-game prediction. “Tomorrow, I will see Belgium put in its place, wherever that is. I don’t know. I have an American public school education.” After Uruguay star Luis Suarez bit the Italian substitute player, Giorgio Chiellini, in the shoulder, blogger Jason Gilbert defended the biter, sort of. “To be fair to Luis Suarez, I can’t resist an Italian sub either.” Keeping it simple, as they say in sports, Kentucky basketball coach John Calipari had a bit of an epiphany when he said: “Walking on the beach this morning, doing a little thinking when I saw footprints in the sand. It reminded me of the poem ‘Footprints In The Sand.’” Doing very little thinking, I think. Stephen Colbert characterized the announcement by a Major League Baseball umpire that he is indeed gay with two words: “I’m out!” And when a woman was spotted stealing the artificial leg of a U.S. military veteran at an Eagles-Giants NFL game, the PA announcer quickly warned: “If you see a female carrying a prosthetic leg that probably isn’t hers, call 911!” And my personal favourite sports guy quote of 2014 comes from Chicago Bulls guard, Aaron Brooks, who has been calling teammate Doug McDermott “Ray” ever since they first met.
Explanation? “I thought that was his name. When I found out that it wasn’t, I just kept calling him ‘Ray!’” You see, right there is why fellow NBA star Ron Artest changed his name to Metta World Peace. He got sick and tired of Doug McDermott calling him “Ray” all the time. Now Doug calls him “Sunshine.” In a classic “he took the pitch but she delivered the punch exchange,” Oakland’s Nick Punto was called out on strikes to end a game against the Seattle Mariners. Yelled his very upset wife, Natalie Punto: “That ball was higher than my boobs ... and not my old boobs either!” Loyalty and plastic surgery - a rare but beautiful combination. Speaking of which, Joan Rivers died last year doing what she loved to do - having surgery. “The Queen Of The Barbed OneLiners” once said she’d had so much plastic surgery that she planned to donate her body to Tupperware. Wow, what a year for the mashed-up message. Maybe we should all follow Mike Tyson’s lead. Realizing he’s at the end of his career, Iron Mike said wistfully: “I guess I’m gonna fade into Bolivian.” Let’s leave the last word of the year to some guy named Bryson Graham: “Happy 2014th Birthday, America! All winter long through April, Canticle’s Winter Market offers a wide variety of certified naturally grown produce. This winter you can choose from all sorts of greens (spinach, lettuce mix, mesclun mix, kale, Swiss chard, arugula, pak choi, mizuna) and storage crops (carrots, beets, many varieties of potatoes and onions, Daikon radishes, turnips, garlic, shallots, kohlrabi, Brussels sprouts, cabbages, etc.). Canticle Farm, a Community Supported Agriculture (CSA) farm in Allegany, N.Y., has been growing winter produce for years and holds public sales every other week. You don’t have to be a shareholder to purchase from the market. Everyone is welcome to buy nutritious produce and related farm products from the market year round. Canticle’s vegetables are Certified Naturally Grown (CNG) following USDA organic principles. CNG is a grassroots organization of mostly farmers and serves smaller producers that sell directly to the consumer. More information about CNG is available at www. naturallygrown.org. How does Canticle Farm grow produce in winter when freezing temperatures and snow-covered fields seem to
make this impossible? The answer is high tunnels. These tall, tube-like greenhouses provide an insulated, coldweather growing environment for cold hardy and diseaseresistant varieties of greens. According to Canticle Farm Manager Mark Printz, the high tunnels create a microclimate that can sustain plant life. They are usually heated naturally through solar radiation, which is converted to thermal energy that remains trapped within the tunnels. In addition to vitamin- and mineral-rich produce, local vendors sell their specialty products on market days. New Horizon Creamery offers fresh eggs, cheese, ice cream and cheese curd processed on location and makes their delicious varieties straight from their own herd of dairy cows. Flanigan Farm of Hinsdale offers naturally raised chicken, pork, turkey and beef. BRD’s Forever Farm sells naturally raised heritage meats (smoked pork, fresh frozen pork, fresh sausage, ground beef, steaks and eggs) from pasturefed animals, which never contain antibiotics, steroids or hormones. Hookin’ Up! Bet that title got your attention, didn’t it? I’m talking the skiing kind of “hook up,”not the après ski kind! I have no creditable advice for that kind. If you have been reading my articles the past few seasons, you will realize I try to give you tasks or tactics intended to improve your skiing. These are not necessarily the finished form we are looking for, but it is generally an exaggerated movement or position to give you a “feel” or give you a specific sensation to enhance your skiing. This week’s tip is to give you a much exaggerated sense of a very subtle key to highend parallel skiing; “hookin’ up” the inside ski to begin your turn. If you watch 10 people who are parallel skiing on Morning Star, you will see four or five or even more ways to initiate a parallel turn; some effective and some not so much. You will see people wedging, stepping, stemming, pushing, twisting – all sorts of techniques to initiate that elusive true-parallel turn. The most efficient parallel turns begin at the tip of the ski, not underfoot and not by pushing tails apart. You’re engaging the tip of the ski and developing a progressive edge that bends the ski in the size arc your pressure and edging dictates. It begins at the shovel – where the ski turns up at the tip. If you want to hear all sorts of tech-terms about sequential,
simultaneous and spontaneous action, I could go on for pages. But basically a parallel turns is a subtle combination of a sequential/simultaneous action. So let’s leap to the extreme and “hook up” that inside ski. What I am going to describe here actually happens in a fraction of a second in a typical parallel turn on relatively groomed conditions. This is not for the “steep and deep” or the “gnarly crud” or bumps, but easy carving cruisers we all love to use to “track up” the corduroy. Beginning in a comfortable, athletic upright stance on moderate terrain and at moderate speed, pick up the tail of your inside ski and slightly roll that knee over to raise your little toe on that foot. You should feel an engagement of the tip of that ski as it “hooks up.” Immediately allow the outside ski tip to match and feel the gradual engagement of both edges with the greater pressure building on the outside ski. Finish that turn, pick up the other ski tip and turn. Nothing
real dramatic here, just react as needed to maintain balance and direction. Now do this same movement without lifting your ski – an almost instantaneous sequence. Soon it will become simultaneous, yet you will still feel the inside tip lead you into the next turn. The knee is a weaker link to the ski, but in the initial phase of the new turn it is a finesse that is nearly invisible in high-end skiing. So in essence you are beginning your turn off the dominant outside ski you used to finish your last turn. As Jean Luc Piccard would say, “Engage.” Hook up that inside tip, allow your body to follow by matching the edge angle with your other ski, then let the pressure build on the outside ski. Basically this is a very subtle knee-generated angle, but soon it will build to a powerful edge created by moving your entire body to the inside of the turn. The technology in skis now gives us the ability to fine-tune our turn initiations to make our turn-to-turn movement appear seamless and effortless. See? It was easier to “hook up” than you thought. While school is on winter break, the boys’ basketball teams have been hard at work practicing and participating in the Frewsburg Holiday Basketball Tourney, which was held on Dec. 29 and 30. Coach Dave McCann took his varsity boys’ team to play Class A Dunkirk Marauders on Monday night and were handed a 62-48 defeat in the first round. It was a back and forth battle for the undersized Eagles, and freshman Austin Grinols helped keep it close with 18 points – four of those by 3 pointers. Senior Phalla Musall chipped in 12 points and freshman Griffin Chudy & Elliot Bowen each had 7 points for the Eagles. The team returned to Frewsburg on Tuesday to play in the consolation game and came home with a 51-45 win over Class B Falconer Falcons.
The team was led by Musall with 15 points, Grinols with 10 and Chudy with 9, while junior Cole Lapi chipped in 8 points and played a tight defensive game for the Eagles. Additionally, Bowen pitched in 7 points and Alex Fisher had 2, rounding out the scoring for the Eagles. The Eagles play again Friday in Hinsdale and next week at Franklinville and Pine Valley. Coach Matt Finn’s JV team fought hard at the Frewsburg Tourney, coming home in 4th place. Playing a much larger team from Dunkirk on Monday, the boys played hard and scraped for all of their 27 points against the Dunkirk Marauder team, who took the game with 72 points. Deric Leiper and Noah Stuve each scored 8 points, while Austin Whitmer and Brennan Finn had 7 and 4 points respectively. Mitchell Sexton and Evan
Palmatier both played a great defensive game for the Eagles as Palmatier had 7 rebounds and Sexton 4 against a much taller squad. The JV team returned on Tuesday and lost a hard fought battle to Falconer 42-35. The team was led by Leiper with 20 points, 6 of them by way of 3 pointers. Stuve and Palmatier chipped in 6 and 4 points respectively. Coach Finn sees progress with the squad and was very happy with their defense and all around play. According to Finn, “they are getting better every day. Their time will come.” The JV team has off until next week when they to take on Franklinville and Pine Valley. The girls’ varsity basketball team plays Friday, Jan. 2 and Saturday, Jan. 3 in the Annual JCC Holiday tournament hosted and played at Jamestown Community College.

Program. The expansion of the program will open up more after school opportunities for students in grades K-8. Jeanne Depke, 1943-2014 Sadly, Ellicottville lost one of its own on December 24. Jeanne Gerstung Depke passed away very suddenly after a short illness. If there was ever someone who had an impact on everyone who knew her it would surely be Jeanne Depke. A wife, mom, grandmother, great grandmother and wonderful friend – she was all that and more and will be sorely missed. Jeanne had an infectious smile and an upbeat personality that was catchy to everyone around her. Whatever she did, she did it 100% and then some and always made it look easy. Jeanne grew up in East Aurora where her family owned the Iron Kettle Restaurant that is still a very popular restaurant today. She graduated from
East Aurora high school and attended Bryant & Stratton College for accounting. Ron and Jeanne raised their family in Holland and moved to Ellicottville in 1995, where
they eventually retired. Jeanne loved to golf anywhere, garden both at home, in Florida and for the Alley Katz in Ellicottville, ski almost every day in the winter and bowl with the Thursday winter league. She loved people, parties and her friends, but nothing meant more to her than her family. Jeanne and Ron were married for more than 50 years and, of course, were high school sweethearts. They have two daughters, Kandie Yoviene (Ron), Cindy Pfuelb (Tom), four grandchildren, Ashley, Andrew, Jordan and Morgan and one great grandson, Brayden. Godspeed Jeannie – you will always be in our hearts.

Health & Fitness: Using Exercise to Relieve Holiday Stress – Part 2

Starting an exercise program is just the first step. Here are some tips for sticking with a new routine or reinvigorating a tired workout. Set SMART goals. Write down specific, measureable, attainable, relevant and timelimited goals. If your primary goal is to reduce stress in your life and recharge your batteries, your specific goals might include committing to walking during your lunch hour three times a week or, if needed, finding a baby sitter to watch your children so that you can slip away to attend a group fitness class. Find a friend. Knowing that someone is waiting for you to show up at the gym or the park can be a powerful incentive. Working out with a friend, co-worker or family member often brings a new level of motivation and commitment to your workouts. Change up your routine. If you’ve always been a
competitive runner, take a look at other less competitive options that may help with stress reduction, such as Pilates or yoga classes. As an added bonus, these kinder, gentler workouts may enhance your running while also decreasing your stress. Exercise in increments. Even brief bouts of activity offer benefits. For instance, if you can’t fit in one 30-minute walk, try three 10-minute walks instead. What’s most important is making regular physical activity part of your lifestyle. Whatever you do, don’t think of exercise as just one more thing on your to-do list. Find an activity you enjoy — whether it’s an active tennis match or a meditative meander down to a local park and back — and make it part of your regular routine. Any form of physical activity can help you unwind and become an important part of your approach to easing stress. Tips on Eating Healthily During the Holidays Being health conscious doesn’t necessarily mean that you can’t enjoy the holiday season and have a little bit of what you fancy. It simply means that you should continue to be vigilant and be prepared for the festivities. There are many ways in which you can help to strike a
balance between maintaining a healthy diet and joining in with the fun and festivities. Eat regularly. If you are going to a big party or dinner, don’t starve yourself all day in anticipation. You’re in danger of arriving at your destination feeling ravenous and eating everything in sight. Instead, have healthy snacks throughout the day. By doing this, you’ll be less likely to over-indulge while you are out. Prepare for outings. If you have some big nights out and meals planned over the holiday season, try and compensate by having some healthy eating days leading up to the event. Many of us are only too eager to think that we may as well forget about healthy eating over the holidays. However, it should not be a case of forgetting about your diet, but simply managing it a little more carefully over the holidays. Moderate alcohol intake. Don’t forget that alcohol is fattening, too. That innocentlooking glass of sparkly wine or that small bottle of beer may look as though it will do no harm. However, alcohol contains calories and lots of them. Try and control the amount of alcohol you consume over the holiday period and, in the same way as food, try not to overindulge regularly.

On December 24, HoliMont officially opened for the season. While it’s been a rough start to winter here in Ellicottville, slowly but surely more and more members made their way to the chalet and took their first turns of the season on the slopes of HoliMont. As the Christmas week progressed, chalet activity became more active and Mother Nature started treating us to some colder temperatures
and even a little bit of natural snow, all of which was a welcome sight to everyone at HoliMont. As of this writing, we are making snow throughout much of the area and should have solid snowmaking opportunities through the beginning of the New Year. We would like to thank all of you who patiently waited for HoliMont to be able to make snow and get the area open. While we never want the season to start off slow,
we are confidently hopeful that Mother Nature will make up the difference for us and treat us to some fantastic snowmaking weather and an abundance of immaculate fresh snow. Finally, we’d also like to thank everyone who came out for opening day. It’s been great seeing people back in the chalet and out on the slopes and we’re looking forward to spending the ski season with you.
SCA Approaches Final Construction Hurdle
Hard-Hat Tours Scheduled Through January In 2012, Governor Cuomo, as part of his economic development initiative, identified renovations at Springville Center for the Arts (SCA) as a Regional Priority Project. As a result, the Art Center was awarded $434,310 from several different state granting agencies. Since that time, most of the planned construction on the former Baptist Church at 37 North Buffalo has been completed. The Vacanti Classroom has been built, a historically appropriate synthetic slate roof with copper flashing and gutters has been installed, critical wood repair has taken place, exterior and interior masonry restoration has been finished, and many structural projects, which are hard to see but critically important, have been completed. An elevator shaft has been constructed, but one hurdle remains before the newly renovated Harold L. Olmsted Gallery, the classroom, and lower level
bathrooms can be opened to the public and made handicapped accessible: an elevator must be installed. To complete construction and install the elevator, the organization is currently raising $100,000. To build awareness and excitement, the Art Center has scheduled Holiday Hard Hat Tours for the following upcoming Saturdays: Jan. 10, Jan. 17 and Jan. 24. Tours will be held at 37 North Buffalo Street in Springville at 10 a.m. Light refreshments and hard hats will be available. The Art Center, whose roots go back to the 1950s, purchased the church, now on the National Register of Historic Places, with an outpouring of community support, in 2007. In addition to individual contributions and
state grants, financial support to make the current renovations at the Art Center possible have come from the SpringvilleGriffith Community Education Foundation, The Community Foundation for Greater Buffalo, the WNY Foundation, the Baird Foundation, and the John R. Oishei Foundation. “This is a particularly exciting moment for Springville Center for the Arts,” noted Executive Director Seth Wochensky. “Our members and patrons have been dreaming of this moment since we bought the church in 2007. I know we can clear this final hurdle because of the support we have received from the community.
