Traveling east from Ellicottville and south from Springville, where Routes 240 and 242 and also two sets of train tracks meet, it’s hard to believe this quiet little intersection of Ashford Junction was once a highly-populated area of Ellicottville. In the late 1800s, the Buffalo, Rochester & Pittsburgh Railway (BR&P) built a passenger stop in Ashford Junction, and businesses began to sprout up around it. It’s almost a case of deja vu for Holiday Valley, where officials there have been keeping an eye to the sky — and perhaps even more so the thermometer — as they anticipate reopening at least two slopes on Friday. Last year, the resort opened right after Thanksgiving for two days and then opened for the season on Dec. 10. This year, the resort opened for three days following Thanksgiving and now plans to reopen on Friday. Jane Eshbaugh, marketing director at Holiday Valley, said on Wednesday afternoon she anticipated the resort to make snow overnight and — if conditions are right — perhaps ‘round the clock on Thursday, as temperatures are expected to barely make it out of the 20s. “We’ll just make snow, as much as we can,” Eshbaugh said. “Natural snow is just a bonus, really, unless we get like three feet.” The plan on Wednesday was to open the Tannenbaum and Yodeler lifts on Friday, the same two lifts that were open right after Thanksgiving. Being open the last weekend in November allowed the resort to make sure it’s ready for the winter season, Eshbaugh said. Eshbaugh added the resort is looking forward to Demo Day, scheduled for Dec. 16, which allows guests to try out equipment from local shops.

The Ellicottville Central School’s senior class trip is in danger of falling through for a third straight year as a movement for a potential alternative trip amongst the class has impacted the cost of the original plan. On Tuesday, ECS Superintendent Bob Miller told the school board only 18 students turned in a deposit for the trip after 35 of the 39 students in the grade originally expressed interest. In November, two students presented to the board plans for the trip, scheduled for May 19- 21 in Lake George. The board later in the meeting approved the trip.

served as high school principal, said he will talk to seniors about alternatives — such as a day trip — if the cost of the trip continues to increase as participation declines. He also added he will work with high school principal Erich Ploetz to find better ways to get stronger commitments from seniors early in the trip planning process. Also at the school board meeting, the board heard brief public comment from John Zerfas, a 17-year veteran of the Ellicottville Town Planning Board and a recent winner of a seat on the Ellicottville Town Board. Zerfas asked the board to keep those, like him, in mind who live within the Ellicottville town boundary but are part of the West Valley school district when making decisions about West Valley’s future. He said about 300 of the 2,700 parcels in the town of Ellicottville are within the West Valley school district. In late October, the West Valley School Board hired a consulting firm to conduct a pre-annexation study to look at options associated with potential future partnerships with neighboring Ellicottville and Springville-Griffith school districts. “It’s in the interest of the town of Ellicottville for those parcels to be represented by this board and any decisions that would affect the future of those properties,” Zerfas told the board. “What I’m personally asking you guys is that you would at least take that into consideration when you do make a decision or make decisions

regarding that issue.” The Ellicottville School Board has taken no formal action concerning West Valley’s decision to conduct the study; Miller told the board in November he has been asked to provide facts and figures to contribute to the study. The board last month discussed potentially meeting with West Valley’s school board to discuss the study in further detail. IN OTHER BUSINESS, • Miller told the board there is potential, due to “proximity and convenience,” Ellicottville could send its swimmers to Salamanca instead of Allegany-Limestone next fall. He said, “that’s nothing against Allegany(Limestone). We’ve had a good relationship with them … we’re happy they’ve let us do that — we are just considering all our possibilities and options at this time.” • All three of the school’s robotics teams that competed Nov. 18 in a regional qualifier at Houghton College have advanced to a competition scheduled for Dec. 10 at University of Rochester, reported Ploetz. The sixth grade team, Disco Bricks, placed first out of 20 schools in overall score at the regional qualifer; the fifth grade team of Fuzzy Logic placed third and the seventh and eighth grade team, Drain Matter, finished fifth. The team is advised by Chris Edwards. The next meeting of the Ellicottville School Board of Education is scheduled for 7 p.m. Tuesday, Jan. 9, 2018 in the high school library.

restaurant in Ellicottville,” Sara explains. “We know how difficult it can be to come by commercial real estate here let alone restaurant space.” In 2014, the Testas took their first crack with The Public House on Hertel, which instantly became a success in the recently rejuvenated area of Buffalo. Next, in 2015 they opened The Public House on the Lake, located on Route 5 in Hamburg. Recently, they were looking for a second home in the Ellicottville area and, as they started their search, they saw there was space for sale. Then they knew it was time to make their initial dream a reality. So on Nov. 24 the doors opened on The Public House of Ellicottville. “We started looking for a place in August, when we found the former Cadillac Jack’s and Hoagie’s location available, it was a no brainer,” Sara said. “The location has this draw to it that is so special, so many great memories and we hope to continue that tradition for a long time.” All their products are made in house from the burgers to the crab cake, even the chicken fingers. “Pizza will be coming soon too!” she said. There will be weekly features that will typically include a steak, pasta and seafood options. Their prices are competitive and fit with their “craft casual dining” essence. The focal point of the bar is the 6 1/2-foot cast iron draft system. It is edgy yet elegant and

As the years went by, and railroads became less necessary for travel, the area saw a decline in population, and it slowly morphed into what it is today—a cozy corner of Cattaraugus County. Today, one thing that still reminds us of days gone by is the Ashford Junction Diner, a quaint little restaurant that sits across from the tracks and will have you feeling nostalgic. The diner, which is attached to the Ellicottville Country Store, has been a store since the turn of the last century. It was also at one time a Harley-Davidson garage. And while the restaurant and building are steeped in history, current owners Jay and Peggy LaCroix are new to the business, proudly getting ready to celebrate their first anniversary. The LaCroixs, who said they “live two minutes” away, discovered the opportunity when driving by en route to a school sports banquet for their son. While Peggy was a social worker, and Jay a painter, both were looking for a change. “We were both ready to do something different,” Jay said. That something different involved carrying on the tradition of the little restaurant in Ashford Junction. Soon, the LaCroixs found themselves using their relevant experience (Jay noted that his father was a food service manager at Holiday Valley, and that he grew up in the business) and re-opened the restaurant, which had been closed for a couple months in late 2016 when it was between owners. They decided to name it Ashford Junction Diner because of its location and because they both had family history rooted in the railroads, discovering through reading material that both their grandfathers and great grandfathers actually worked together in Ashford Junction on the railroad and at the Switch Tower that still remains across from the diner. The newly-opened and newly-renamed diner quickly became a hot spot for breakfast and lunch, which, according to the LaCroixs, are both served from 7 a.m. to 2 p.m. when the restaurant is open Wednesday through Sundays. That means you don’t have to rush out of

the house in the morning to make it in time for breakfast! On the tables, guests can find history books about the railroads, Ashford Junction and other nearby areas. “We want people to know the whole history,” said Jay. Jay and Peggy work together in the kitchen and in the dining room, and their teenage kids even chip in on the weekends, making it a true family business. The atmosphere is one geared toward comfort and family. “It feels like one big kitchen, and everyone feels at home,” explained Jay. Peggy added that she thinks the diner promotes the lost art of conversation. “Everyone shares stories,” she said, adding that there are even a number of board games, like Shut the Box, to encourage families to spend quality time together and to unplug from their phones. While the diner offers many traditional menu items, they also offer some unique eats. “Our top seller as of late has been our Reuben Omelet,” Peggy said. “At first we were skeptical, but people seem to love it. Served with rye toast and a kicked up Thousand Island on the side, people love it! The second (most popular) is the Sweet and Salty, a large croissant stuffed with a folded egg, bacon and Swiss, then drizzled with a homemade maple glaze—a splash of bacon bits makes a surprisingly great dish! People love Evelyn’s Oatmeal and The Gian which is made with our homemade corned beef hash, sausage gravy and biscuits.” The LaCroixs also recently introduced their “LaCroixant”— pressed croissants filled with a variety of deliciousness, such as spinach, feta and egg, or mac and cheese and tomato. “As far as specials, I never know what we’ll come up with. If it pops into my head we’ll make it,” Peggy noted. “Since we serve a majority of breakfast, we have a menu for the table. As for our lunch menu, it is an open made to order menu for patrons to make up what they want. We have a loyal customer from Buffalo and his sandwich creation became so popular we have it on the board as The Michael. So who knows? Someone else could be up there!”

Peggy added that they also offer a limited kids’ menu. In addition to their impressive breakfast and lunch menu, the LaCroixs are bringing back their Friday Fish Fry starting on their one-year anniversary, Friday, Dec. 15. The fish frys, which were offered last spring during Lent, include Yuengling-battered or broiled fish with a choice of salt potatoes or homemade mac and cheese, cole slaw and a roll. They will be available take out or dine-in until 8 p.m. on Fridays throughout the winter and early spring. And as for year No. 2 in business? “We are looking forward to seeing our business grow in 2018 simply by offering a great dining experience for all those who visit!” said Peggy. “So far, according to social media sites like Yelp, and Trip Advisor, we have 4.5-5 stars! We want to keep that reputation so keeping up on what we’re doing by being able to offer more than just a dining experience. Having the antique and gift shop connected on the opposite side is definitely a plus especially when it’s busy! We don’t feel rushed and the customer gets more time to relax and enjoy themselves while preparing their meal. It’s a win-win!” Also, something for visitors to keep in mind, which is also on a hand written sign hanging inside the diner, Peggy said: “We don’t have a fast cook...we don’t have a slow cook... we have a half-fast cook! Jay takes pride in his cooking so don’t expect a fast food experience.” “We just want to give visitors a piece of history and a fun way to begin or end the weekend here,” Jay said. “We want to make everyone feel at home!” The Ashford Junction Diner is located just minutes from the heart of Ellicottville, and a short drive from Springville, at 5364 Route 242 in Ellicottville. Basic Principles

I have had the luxury and good fortune to be a personal trainer for the past 11 years. During this time span, I have had a lot of time to grow, learn and develop sure-fire ways to burn body fat and build muscle. I have also had the pleasure of training some remarkable individuals over the years ranging in age from 9 years old to 92 years old. Each individual requires their own plan and exercises to achieve their goals- but, this rules of thumb stays the same for all of my clients: stick to sound basic principles. Here are some of the basics I have used over the years that have worked for me and my clients: USE FREE WEIGHTS. Although machines can be useful tools to help individuals to start a strength-training program, most experts agree that you can achieve more if you spend most of your time using free weights. Free weights will help the participant discover weaknesses and strengths that can go undiscovered

with machines. When using free weights, your body has no assistance from mechanical devices. Your muscles not only have to lift the weight, they have to ensure that you stay balanced and stable. This requires considerable effort and muscle coordination. When your routines are based around barbell and dumbbell exercises, you can expect to see muscle growth happen more quickly. FOCUS ON COMPOUND EXERCISES. If you want to build as much muscle as possible, it makes sense to emphasize exercises that work more than one muscle group. While isolation exercises have their place, of course, remember that if you are working one muscle group, then that is the only muscle group that will grow (i.e. biceps curl). Compound exercises will multiply the effectiveness and results on your muscles. The following exercises will get you maximum return of the effort invested: Squats, Lunges, Deadlifts, Barbell/dumbbell bench press, Pull-up, Chin-ups, Military press, Shoulder Press, Rows, Dips, etc. EMPHASIZE THE ECCENTRIC PHASE. The eccentric phase of an exercise is the second part where you are lowering the weights, and the muscle in question is lengthening. This is where I tell my clients that “their range of motion” will make all the difference in their results. Also, slow down during this phase; do not let gravity do all the work. And remember,

control is key to doubling the effectiveness of any phase. If you are working the muscles in both halves of the exercise, you will find that makes a real difference. GET YOUR FORM RIGHT! A pet peeve here at CORE PERFORMANCE: If you allow your self to exercise with poor form, you will get little or no benefit from your workout. You may even risk an injury. This is the main reason every trainer/ instructor is fully certified and mentored before working with clients / teaching classes. HAVE REALISTIC GOALS. If you employ all of the above strategies, you can achieve amazing results for sure. But, you need to be realistic. You cannot expect to workout hard for a week and see drastic results. It will take time and consistency. But, if you keep showing up and doing what needs to be done, you will get results. Simple mathematics and biology tell us that if we keep pushing our muscles, they will continue to grow and stay strong. Now, it is time to get your head into the equation and make your own magic. Construction will take place in the coming months. The playgrounds are expected to be ready for use next summer.

Little Valley Lions Club Announces Christmas Lighting Contest

The Little Valley Lions Club will sponsor a Christmas lighting contest for Little Valley village residents this holiday season. Judging will take place the week of Dec. 18, with cash prizes awarded to the top three winners. Club officials said they look forward to seeing the creativity and excitement Little Valley residents bring to the Christmas season.

J-Con Parks operates the retail space within the park, including the gift shops and general stores on both the Red House and Quaker sides. After growing up with parents who ran a state park and ski shops in the eastern part of the state, Marino came to ASP in 1994, and has continued to grow his business there ever since. While the ASP shops enjoy plenty of traffic during peak season, employing about 70 people, this time of year, only the Red House Gift Shop remains open. “As my season winds down at the park, I have a handful of senior staff who I wanted to keep busy,” explained Marino, who

said that was a driving force in opening his new Ellicottville store. Marino, who lives in Ellicottville, noted that as the park stores have continued to grow each year (with 2017 being the best yet), he’d been thinking of opening a store in Ellicottville for a couple years now, but was waiting for the right opportunity to come up. That opportunity presented itself last month, when the former Realty USA office in the Washington Square plaza came up for lease. “It’s a great spot and was move-in ready,” Marino said. He quickly signed a twoyear lease, added a fresh coat of paint, and began filling the 600-sq.-ft. space with a variety of gift items, such as T-shirts, picture frames, mugs, jewelry and seasonal items. “We’ll be able to move stuff back and forth between here and the park,” said Marino, who is

Celebrate the Season: Fun with Snowflakes By Mary Heyl

The first blast of winter weather is finally here, and whether you’re breaking out the snowblower, eagerly anticipating a snow day, or heading to the slopes, you’ve got snow on the brain! Celebrate the season with fun DIY snowflake decorations, recipes and gifts that you can enjoy all winter long. The classic paper snowflake is one of the best activities to keep the kids busy on a cold, snowy day, but if your papersnowflake-making skills are a little rusty, have no fear! Although folding a square sheet of white paper into eighths and free handing a pretty design with your scissors is fun, after several snowflakes you may run out of ideas for patterns. Head on over to Pinterest, where you can find a huge variety of snowflake templates, from elegant designs to Star Wars characters to superhero silhouettes, like Batman. Simply print out the templates, fold on the dotted lines and cut. After cutting out your snowflakes, use a cool iron to smooth them out. From there, you and your family can use the snowflakes for all kinds of projects. Use fishing line to hang them at different heights in doorways and windows. Paper snowflakes are perfect for adorning gifts; using a glue stick or double-stick tape, attach them to gifts wrapped in solid-colored paper. Decorate the living room with garlands

of shimmering snowflakes, perhaps across the fireplace mantel. Just apply spray adhesive or dab a spongetipped glue applicator on the snowflakes and sprinkle with glitter. Shake off the excess glitter and let dry. Thread the snowflakes onto a satin ribbon and attach to the mantelpiece with poster putty. Snowball cookies are the perfect treat to kick-start your holiday baking—they freeze well and are perfect with a nice cold glass of milk! If you’re baking for a cookie exchange or have family members who have allergies, it may be a good idea to skip the nuts; YellowBlissRoad.com has the perfect, easy recipe for this classic, melt-in-yourmouth cookie. Preheat the oven to 350 degrees. Mix 1 box of white cake mix, 1/3 cup of oil, 3 egg whites and 4 ounces of cream cheese (softened) until well combined. Chill for 30 minutes. If dough feels sticky, add ¼ cup of flour or

powdered sugar. Take about 2 tablespoons of dough and roll into a ball. Roll the dough in powdered sugar and place on a parchmentlined cookie sheet. Bake for 9-11 minutes, or until the tops start to crack (but don’t allow them to brown). Let cool on the cookie sheet for a few minutes before transferring to a cooling rack. Dust with sifted powdered sugar and enjoy. For a festive, tasty gift, make your own snowflake marshmallows to give with a batch of homemade hot chocolate mix in a holiday mug. Coat a 12-by-17-inch rimmed baking sheet with cooking spray; line with parchment paper. Spray parchment; set aside. Pour 1/3 cup of cold water into the bowl of an electric mixer. Sprinkle with 2 envelopes of unflavored gelatin; let mixture soften, about 5 minutes. Place 1 ½ cups of sugar, 2/3 cup of light corn syrup, 1/8 teaspoon of salt and 1/3 cup of water in a medium saucepan. Cover; bring to a boil. Remove lid; cook, swirling pan occasionally, until syrup reaches 238 degrees (soft-ball stage)

on a candy thermometer, about 5 minutes. With mixer on low speed, whisk gelatin mixture, and slowly pour the syrup mixture in a steady stream down the side of the bowl (to avoid splattering). Gradually raise the speed to high; beat until mixture is thick, white, and has almost tripled in volume, about 12 minutes. Add 1 teaspoon of vanilla, and beat 30 seconds to combine. Pour mixture onto prepared baking sheet; smooth with an offset spatula. Let stand at room temperature, uncovered, until firm, at least 3 hours or overnight. Coat a 1- or 2-inch snowflake-shaped cookie cutter with cooking spray to prevent it from sticking. Cut out as many individual marshmallows as possible; coat cutter with more spray as needed. Use marshmallows immediately or store in an airtight container at room temperature up to one week.

A Magical Evening ‘Bob McCarthy’s’ Irish Christmas

Ellicottville Brewing Company was magic this past Friday night as Bob’s presence was obvious to all that attended Bob McCarthy’s 12th annual Irish Christmas. The evening started off with Dan Minner, EBC’s Head Brew master, donating $1,141 (The proceeds from their sales of Bob McCarthy’s Celtic Red -$1 from each pint sold around St. Patrick ’s Day). Then MC Phil Bund took over for what proved to be another successful Pie Auction. Deb Burkhard commented that the generosity that this village shows is a constant surprise. Bob’s friends were there from all over western NY, Ohio, PA and Southern Ontario and opened up their hearts and wallets to support Rotary’s Family Support and Santa’s workshop. The event brought in over $14,000, with more donations arriving daily, setting a new record. Beth, Laura, JP and the entire EBC staff provided a dose of Ellicottville hospitality beyond compare. Although the crowd was a little smaller than last year, with the

new layout, clear sound (thanks Devin) and room to move made the night go very well. A special thanks to Dina’s, EBC, Katy’s, Madigans, The Silver Fox and Villaggio, who each donated a special dish providing a low cost “Taste of Ireland” for the crowd to enjoy. EBC also mixed some special Irish Cocktails to get the bidders in the mood. Special thanks to The Gin Mill, which painted and decorated Bob’s wagon and made a generous donation to the event. Thanks to the bakers (too many to thank) whose special desserts were done by Bob’s friends as a tribute to him and this tradition. Rotary thanks their friends who helped make this such a great success - Ed and Deb Frederickson, Phil Bund, Katy and Victor Arena, Tom and Helen Bradish, Kegs Keighley, Tom Kneeland, Sally and Mike Nickolson, John and Anne Northup, Anne Marie Ranger, Judy Brown, Dave Salvucci, Jay Stoddard, Chet Zuchelli and so many others. When asked how did this start, McCarthy would answer, “It started with a

little magic.” Ellicottville’s residents, both permanent and part-timers, attended and bid for the great auction items, which even included a McCarthy original. Ed Frederickson knocked it out of the park again with his unique creations. His wooden chest was the highest bid item at $1,600 (BTW Mike Young bought it and donated it to someone in the crowd), while Ed’s unique birdhouse won by Sean and Erin Cornelius for $550. The real thanks goes to those who attended, those who bid as their form of donation and those who dropped off gifts for Santa’s Workshop to make Christmas a little special for less fortunate families. You know Bob would have been in awe by the donations and creations made by so many generous donors. This year you all helped 29 families and a total of 122 people have a great holiday season— and that is the real magic. Bob, we all miss you, but we will continue your tradition of giving. Thank you Ellicottville!
