Byron Community College Term 2 2015

In this day and age there are a wide variety of online learning opportunities available to us – both for formal and general courses, blogs, chat rooms and many other online environments that we can easily lose hours of our time moving between. No doubt, online learning can be a useful tool for educating ourselves, especially given the limited time we sometimes have outside of work and family hours. But as much as this mode of adult learning can enrich our lives, it’s also important to reflect on the benefits that you get from personally coming together with others, in a community course. There is a different quality of experience that comes with face-to-face learning in a class environment. You get the chance to meet new and interesting people who live locally which can be especially rewarding if you’ve just arrived to the area.

And there is no way of measuring the satisfaction that comes from having someone show you how to do something, before taking the plunge and celebrating your efforts with your classmates. And when it comes down to it – there are just some things that you can’t learn satisfactorily online. The Byron Community College continues to offer up an enticing and diverse collection of courses that run from a few hours to a few months long. We always aim to provide our local community with opportunities to create, taste, dance, since, grow and most of all, to be inspired. You might choose to do a course with us for pure enjoyment, to keep those cogs turning, to connect with like-minded people or to enhance your employment or career opportunities. This term could be just the time to take that learning leap by doing a course with us. What are you waiting for?

Initial greetings can soon turn into spontaneous conversations or sharing a laugh with the group during hands-on creative activities.

Student profile Dorothy Francis Sour dough bread & Wild fermentation

Although having a few health challenges, I have a desire to be more proactive and contribute to an improvement in the status quo. With a desire to be less reliant on the medical establishment, I enrolled in Jean Martinez’s Sourdough Bread-making & Probiotic Wild Food workshops. These were truly inspiring and I couldn’t wait to get started at home! I now make all my own gluten-free sourdough bread, plus yummy fruit loaves to rival the best in specialist bakeries! My fridge is constantly stocked with probiotic delights such as sauerkraut, ginger carrots & brine pickled cucumbers. I get a real `buzz’ from all aspects of the food – making it, eating it and sharing with others. It is empowering to learn such great new skills that contribute to health and well-being. I am truly grateful for great tutors such as Jean and the Byron Community College for the opportunity to participate in the enrichment of life skills. Byron Community College Term 2 2015

Tutor profile Debra Allard Cheese Making

Multiple jobs throughout her working life gave Debra an ‘all-rounders’ experience for eventually setting up a business of her own. Debra was part owner of Tweed Valley Whey Farmhouse Cheeses where she made and sold fresh cheeses to a local clientele. She gradually evolved the business over 4 years to make gold medal winning cheese and attracted the attention of media Australia wide. By face to face selling (mostly at farmers markets) her customers could identify with the product. Debra told the story of the business and the cheeses they were buying. Debra now runs cheese making classes to demystify the process for home cheese makers. Not only is it a great social day out but it gives the student an insight into the development of milk into cheese. She is also constantly updating her skills by attending cheese workshops and assisting head cheese makers in cheese factories. A trip to the UK in November 2013 visiting 4 cheese factories all over Britain was a terrific experience and Debra returned with many new recipes to try out at home.

Byron Community College Term 2 2015

I grew up in Switzerland and for fourteen years taught at primary and secondary schools and also at colleges. I worked as a language teacher with a personal vocation for career advising. My two big hobbies at that time were travelling the world and dancing. I used to dance Ballroom and Latin until I discovered Argentine Tango, which now has become my passion.

Tutor Profile: Esther Zellweger Tango Argentino

HOLISTIC NOURISHMENT FOR BODY, MIND & SPIRIT with Sandra Kimler

27

I am originally from Israel and have been living in the Byron Shire for the past year and a half. Growing up in Israel, I was always baffled by the violence, racism and conflict that surrounded me and from a very young age I searched for ways to make a difference. In 2004, I began facilitating conflict and dialogue encounters for Palestinian and Israeli youth and adults, and later started working with schools, communities and individuals on how to transform conflicts into positive change processes. I was lucky to learn from some amazing teachers along the way, and learned many different approaches and traditions. All these I have woven together and have written the Nonviolent Conflict Transformation Program, which I now run in schools and organisations across Australia. Besides, being a mum of 2 provides me with daily opportunities to practice my Conflict Transformation skills! www.nonviolentconflicttransformation.org
