Easter Sunday – 5th April
Easter Sunday is one of the biggest dining occasions of the calendar, with families gathering for a traditional roast at the heart of the celebration.

Slow Roast Leg of Lamb
DONNIE’S DISHES
Easter Sunday is one of the few moments in the year when diners actively seek out a traditional roast - but tradition doesn’t have to mean predictable. Lamb remains the natural centrepiece for spring menus, yet by leaning into the season’s brighter flavours, chefs can refresh the classic without losing its sense of occasion!
1. Mix garlic, lemon zest, mustard, honey, herbs and oil into a paste.
2. Rub over lamb shoulder and season well.
3. Roast at 160°C fan for 4–4.5 hours, covered for the first 3 hours, then uncovered to caramelise.
4. Rest at least 30 minutes before serving.
5. Parboil potatoes in salted water for 8 minutes, drain and rough up.
6. Heat fat in tray at 200°C.
7. Roast potatoes for 45–55 mins until crisp.
8. Toss with chopped preserved lemon and salt just before serving.
9. Deglaze roasting tray with wine and scrape flavour.
10. Add stock and simmer until reduced.
11. Stir in shredded wild garlic, mint, and butter.
12. Season and strain if desired.
13. To serve: Pull lamb into large pieces rather than slicing.

Hearty Guinness & Lamb Stew
Rich, smoky, and slightly sweet, this is comfort food with an Irish flair. Give the much-loved traditional Irish stew a delicious upgrade with tender lamb simmered alongside earthy parsnips, sweet carrots, and a splash of Guinness. Smoked paprika and Worcestershire sauce add savory depth, while fresh thyme and parsley brighten each hearty, flavorful bite.
1. Brown lamb in olive oil, then sauté vegetables until lightly caramelized.
2. Add lamb back to the pot with Guinness, stock, Worcestershire, paprika, and thyme.
3. Simmer for 1-1.5 hours until lamb is tender.
4. Season, sprinkle with parsley, and serve with warm soda bread.

Classic Irish Soda Bread
No Irish feast is complete without this golden, rustic bread! Soft on the inside with a slightly crisp crust, it’s perfect for slathering with butter, serving alongside your Hearty Guiness Stew, or enjoying fresh from the oven.
Ingredients
» 4 cups all-purpose flour
» 1 tsp baking soda
» 1 tsp salt
» 1 ¾ cups buttermilk
Method
1. Preheat oven to 425°F (220°C).
2. Mix flour, baking soda, and salt in a bowl. Gradually add buttermilk until a soft dough forms.
3. Shape into a round loaf, place on a baking sheet, and cut a cross on top.
4. Bake 35–40 minutes until golden brown.
5. Cool slightly, slice, and enjoy warm.

Method
