April brings one of the most social weekends of the year, with Easter and the spring Bank Holiday giving guests plenty of reasons to gather. It’s the perfect opportunity to showcase indulgent dessert-inspired cocktails, from playful chocolate-led twists like a Mini Egg Espresso Martini to lighter spring serves with delicate floral notes such as elderflower, striking a balance between treat and refreshment for the long weekend.

Grace O’Malley

Grace O’Malley Heather Infused Irish Gin is made with 14 aromatic botanicals from the west of Ireland including heather, wild thyme, red clover, blackthorn, fraughan (bilberry) and rock samphire. A true, traditional-style gin made with modern distilling techniques to capture flavour intensity. Rounded and balanced with a fresh, floral finish.

Silver Spear

Hand crafted, Irish distilled dry gin which is created in small batches. The ingredients are carefully sourced to ensure consistency of its delicate flavours across the year and changing seasons. Time has been taken to purposely create the perfectly balanced gin, for the perfect G&T. It took 140 versions to settle on this recipe. A marriage of 14 botanicals working in harmony to evoke an Irish country garden, balancing flowers and fruit with a touch of exotic spice.

Expertly distilled from the finest Irish potatoes and infused with a curated selection of botanicals, ceating a smooth, layered and sophisticated flavour experience. This incredibly smooth potato gin has a low juniper profile and is infused with a sophisticated blend of botanicals including mandarin, citrus peel, elderflower, juniper berries and rosemary, finished with a champagne extract delivering a harmonious gin with layers of complex flavours. Inspired by the village of Muff in Co. Donegal and the founder’s grandfather, a local potato farmer, this gin embodies tradition, care and Irish heritage.

Grace O’Malley

Grace O’Malley Dark Char Cask Whiskey is a superior blend, combining multiple batches of whiskey of varying age statements of up to 10 years. It delivers a wonderful balance of fruit, age-character, flavour complexity and smoothness. Distinctive in Ireland due to its high content of double-distilled malt, this distinctive blend is finished in deep charred American oak bourbon casks, delivering added smoothness and a long, sweet finish.

Inspired by Granda McClenaghan’s generational family recipe which uses the finest Irish potatoes. The six time distillation process leads to a creamy, crisp liquid with a subtle hint of vanilla.

Grace O’Malley Irish Whiskey is a special blend, combining multiple batches of whiskey of varying age statements from three to 10 years old. Each batch of whiskey is matured in a range of barrel types, including French oak. Casks are hand selected according to each whiskey’s characteristics, including grain whiskey aged in exbourbon casks and malt whiskey aged in ex-rum barrels. The resulting blend delivers a whiskey perfectly balanced between flavour, age character, complexity and smoothness.

Kinahan’s Irish Whiskey was founded on Trinity Street in Dublin in 1779 and the Lord Lieutenant of Ireland subsequently ordered several casks of Kinahan’s, each being marked with an “L.L” to identify the owner. The whiskey received its first royal warrant in 1845 and was one of the first brands to be trademarked. In 2014, Kinahan’s LL Irish Whiskey was relaunched on Trinity Sreet. Kinahan’s 10 year old single malt Irish Whiskey is matured exclusively in ex-bourbon barrels for a minimum of 10 years in Ireland is bottled without the use of chill-filtration.

Only the finest triple distilled whiskey distillates have been hand-selected to perfect Lambay Whiskey Small Batch Blend. Our flagship brand is a blend of malted barley and grain whiskey, is triple distilled, and matured in bourbon barrels before finishing in Cognac casks sourced from House Camus in France. This signature style of cognac finishing is our craft and combined with generations of blending with our cellar Master Yonael Bernard ensures that each bottle is elegant, floral and sweet. Lambay Island’s Trinity Well water is added at bottling stage making it an Irish whiskey as unique as the island itself.

Kinahan’s small batch Irish whiskey crafted in small batches, using only traditional methods, it is carefully matured in two types of American oak casks for a minimum of six years. The matured whiskey is then skilfully blended to deliver the unusually mellow, malty, full flavoured character, which made Kinahan’s L.L. So popular for over a two centuries.

Released in 2015, Oak Devil is blended from Irish malt and grain whiskies aged in ex-bourbon casks and bottled without chill filtration. The name is inspired by the Liberties area of Dublin, the centre of whiskey production during the 18th century.The Dublin Liberties Oak Devil is blended from Irish malt and grain whiskies aged in ex-bourbon casks and bottled without chill-filtration. Using water from the well within the distillery, they will craft 100% malted barley to be laid down for their whiskey brands, the awardwinning Dubliner and Dublin Liberties.

Proper No. Twelve

Blending the finest single malt with sweet golden grain, Proper No. Twelve is aged for a minimum of 4 years in the finest charred ex-bourbon oak barrels with hints of vanilla and honey to produce a smooth & complex Irish whiskey. The Sexton

The Sexton Single Malt Irish Whiskey is made from 100% Irish malted barley, triple distilled for smoothness in copper pot stills. Aged in oloroso sherry butts to achieve a depth of flavour from the wine-imbued barrel that surpasses its years. Created by Master Blender Alex Thomas, it is a modern, accessible Irish whiskey with a 40% ABV, characterized by notes of honeyed malt, dried fruit, nuts, and dark chocolate. The distinctive black, hexagonal bottle designed to be “hand-held” and to resemble the Giant’s Causeway. The brand takes its name from the old-fashioned term for a church gravedigger, acting as a “caretaker” of the spirit in the barrel.

In simple terms, Real Irish is a blended Irish whiskey with a characteristically warm, smooth, round spirit overlaid with the influence of ageing in oak casks. Although quite dry, there is a sense of sweetness from having spent time in Bourbon casks and an underlying nutty complexity. Real Irish emodies all the elements that make Irish whiskey so accessible and so attractive. It doesn’t have any hard edges. It’s smooth but intense, full of character, revealing layers of taste on the palate. A whiskey sour made with Real Irish is every bit as much an experience as having it neat or simply over ice.
