Streaky Bacon-Wrapped Leg of Lamb with Honey & Mustard Glaze

Ingredients

For the Lamb

1 DukesHill Bone-In Leg of Lamb (2–2.5kg)

10–12 slices DukesHill streaky bacon

2 garlic cloves, finely chopped

2 tbsp Dijon mustard (optional)

Sea salt and freshly ground black pepper

For the Honey Mustard Glaze

4 tbsp DukesHill Honey & Mustard Glaze

Fresh rosemary sprigs, to finish

To Serve

DukesHill Garlic & Parmesan Mashed Potato

1kg spring green veg (shredded cabbage, leeks, sugar snap peas, asparagus, spinach – any combination)

1 tbsp Ampersand Butter

3 garlic cloves, crushed

Method

Prepare

Heat oven to 180°C (160°C fan). Pat lamb dry, season with salt and pepper, then rub with garlic and Dijon mustard.

Wrap

Cover the lamb with overlapping streaky bacon.

Roast

Place in a roasting tin and cook for:

Medium: ~1 hr 40 mins (50°C)

Medium-well: ~1 hr 55 mins (60°C)

Cover loosely with foil if the bacon browns too quickly.

Glaze

Brush with Honey & Mustard Glaze for the final 20 minutes until sticky and golden.

Rest

Rest loosely covered for 20 minutes, then finish with rosemary.

To Serve (optional but recommended)

Garlic & Parmesan Mash: Heat until smooth and piping hot.

Spring Greens: Toss in melted butter with crushed garlic until just wilted; season with pepper.

Serving tip: Slice the lamb thickly and serve with mash and greens, letting the glaze shine.
