Nitrates, a combination of nitrogen and oxygen, are a common compound found in green leafy vegetables, meats and water, and are found naturally in human sewage and livestock manure. In small doses, nitrates have a variety of beneﬁts, ranging from preventing bacteria growth in meats to improving blood pressure, increasing heart function and boosting athletic performance in humans. Nitrates can act as antimicrobials in the human body, helping kill bacteria like salmonella. Many people take nitrate-rich nitroglycerin to prevent chest pains. Nitrates are also necessary nutrients for plants, aiding in growth, development and survival. Nitrates are highly mobile in soil and reach plant roots quickly, so they are often a key ingredient in fertilizers. Using nitrate-rich fertilizer isn’t nec-

The Canadian Paciﬁc Holiday Train will return this holiday season with multiple stops in the Driftless region. The holiday train program, which began in 1999, raises money, food and awareness for local food banks in communities along the Canadian Paciﬁc network. This year, for the train’s 25th annual holiday tour, the musical artists include Seaforth, Kiesza, Tenille, Townes, Breland, Dallas Smith and MacKenzie Porter. The local schedule includes: Ossian – 11 a.m. on Dec. 8 – West Mechanic Street – between Becker Avenue and North West Street Marquette – 1:45 p.m. on

In 1995, middle school children visiting Henderson, Minn., found deformed frogs in the area. Research determined 50 percent of the frogs had deformities. After years of studies and testing, it was determined that the popular herbicide, Atrazine, was linked to the wide-spread deformities. Additionally, it has been linked to cancers, premature births and birth defects. Atrazine, which is banned in Europe, is still used widely in America, with 75 percent of corn cropland receiving treatment.

The Lion’s Pub in Spring Grove, Minn., and Elsie’s Bar and Grill in Caledonia, Minn., are holding a food donation competition this month, and all are urged to bring non-perishable items to either location to beneﬁt the local food shelf. The competition takes the place of two community events: the annual Thanksgiving meal at Elsie’s and the annual Festi-

Karst is made up primarily of porous, swiss cheese-like rock that crumbled and dissolved, creating sinkholes, sinking streams, caves and springs. Because karst soil is so porous, water flows through it quickly and receives very little natural filtering. Karst areas are usual-

ly linked together underground like a conduit ﬂowing with water, that seeps through the soil and collects in large cracks and crevices in rocks. These large crevices full of water are known as aquifers. A private well is created by drilling down into an aquifer and pumping the water out as needed. The well water is replenished over time with stormwater or melting snow as the process repeats. Some of the water in the aquifers gets pushed into cracks and tunnels and ﬂows to the surface naturally, creating springs. Some springs feed into streams which, in turn, can feed rivers. Two-city food donation contest replaces annual holiday events

One pan, weeknight dinner By Jessica Woodward I love me a good lasagna, just like the rest of you… but I can’t stand all of the prep that goes into it. Precooking the noodles… the layering… the added time… the bits of noodles and cooked beef my kid steals off the counter before it makes it into the 9x13 pan. This recipe will cure the lasagna blues and give you all the feels without sacriﬁcing any ﬂavor. I’m not lasagna partial either… to a white lasagna or red lasagna. As long as it has carbs and cheese, count me in! However, there is one debate between the Midwest folk, like most of you, and the east coast folk, like myself. And that is, which cheese do you use in your lasagna? Ricotta cheese or cottage cheese? While the answer should be ricotta, I have found that most people in the Midwest use cottage cheese. This was something that was hard for me to wrap my brain around. Kind of like the cinnamon rolls in chili!? So, if you’re team cottage cheese, I am going to encourage you to put it down, step away from the container, and use the ricotta for this skillet lasagna. Again, a non-negotiable for this recipe. This skillet, one pan meal is the perfect weeknight alternative to this winter favorite dish.

Ingredients 1 pound of ground beef 1 box of bow tie noodles 2 cups of water 1 jar of pasta sauce 2 cups of fresh spinach 1.5 cups of ricotta cheese 1 tsp garlic powder 1 tsp onion powder 1 cup mozzarella, shredded 1/2 cup Parmesan cheese, shredded 1/3 cup fresh basil, chopped Salt and pepper

In an oven-safe skillet brown the meat with half of the onion and garlic powder and 1/2 a teaspoon each of salt and pepper. Drain off fat. Add the dry noodles, water, and pasta sauce, stir and bring to a boil. Reduce to a simmer and cover for 15 minutes. Stir halfway through. Meanwhile, mix the ricotta, Parmesan cheese, remaining garlic and onion powder, and basil. Taste and season with salt and pepper. Remove the lid, and stir in the spinach and mozzarella cheese. Add dollops of the ricotta on top and put the lid back on to cook for an additional 5 minutes. Top with extra basil.

Final Implosion of Lansing Alliant tower held Dec. 1

The final implosion of the Alliant Energy Lansing coal-fired generation station boiler house was held at 8 a.m., Dec. 1 in Lansing. The coal-fired generation station, which closed December 2022, saw the first step in its demolition on Friday, Sept. 29, as part of the multiphase decommissioning process. Earlier this year, pre-demolition crews worked to remove the selective catalytic reduction system and other equipment, coal inventory and materials from the station and coal yard prior to demolition. 47th Annual Candlelight Christmas Festival of Lessons and Carols service in Waukon The Allamakee Ecumenical Choir will present its 47th Annual Candlelight Christmas Festival of Lessons and Carols Service on Sunday, Dec. 10, at 7 p.m. The service will be held at St. John’s Lutheran Church located at 8 Fifth Street Southwest in Waukon. Local clergy will read the Christmas Story, and the carols will be sung by the congregation with organ accompaniment. Choral numbers will be presented by the Men’s Choir (also known as the Heartland Barbershop and Gospel Singers), Women’s Choir and the mass Ecumenical Choir. Music will also be provided by the St. John’s Handbell Choirs, WHS Saxophone Quintet, along with

The public is invited to attend the community celebration of Christmas. A reception will follow the concert for further fellowship. International Owl Center offers free admission days

Residents of Winneshiek and Allamakee Counties, including Luther College students, are invited to visit the International Owl Center for free Saturday and Sunday, Dec. 9-10. The Owl Center is located in Houston, Minn. — just one hour north of Decorah – and is the only all-owl education center in the United States. Four live ambassador owls currently work at the center (Great Horned Owl, American Barn Owl, Eastern ScreechOwl and Burrowing Owl — although the Burrowing Owl sometimes plays hooky). Attendees will also find touchable wings and tails, 19 species of extremely lifelike mounted owls, owl art from children around the world, skulls, eggs, life-size wingspans, cultural items from around the world and more. Highly-trained staff present programs each day at 11 a.m. and 2 p.m. Houston, itself, also features

a Parade of Owls art tour with 12 public owl sculptures, and Barista’s Coffee House is completely decorated with owls. NO3 impacts on health Dr. Aleta Borrud, a retired general physician with a master’s degree in public health in epidemiology, was one of five speakers at the forum. She is a co-owner of a small graze farm in Minn. and focuses on the health effects of drinking water containing elevated levels of nitrates. “Most of the vegetables that contain high nitrates also have beta carotene, Vitamin C and Vitamin E, which completely cancel out the effects of nitrates.” Borrud stressed. Although meats cured using nitrates are a main source of nitrates, she adds, the amount

continued from front from meats “pales in comparison to the quantity of nitrates we get from water that has been contaminated by runoff from inorganic fertilizers or manure that is spread on fields.” According to Borrud, health effects from nitrates became an issue in the 1940s when babies who had consumed baby formula mixed with contaminated water developed ‘blue baby syndrome,’ where high levels of nitrates from the water in the formula combined with babies’ red blood cells and prevents those blood cells from carrying oxygen throughout the babies’ bodies. The babies’ skin turned blue due to a lack of oxygen. As a result, the government set a maximum safe level of nitrogen in water in the 1960s, which was 10.4 parts per million. But according to Borrud, hundreds of studies performed since then have focused on contaminated drinking water since nitrates are absorbed through ingestion, and water is a main source of high nitrates. Many of those studies have since linked elevated nitrate levels (much lower than 10.4 ppm) to spontaneous miscarriages, cleft palate, cancers and midline neural tube birth de-

The programs help families better understand what to expect so they can be prepared to meet the changes ahead, including changes in communication and behaviors, discussing dementia as a family and planning ahead for future financial and legal

considerations. The series will begin on Thursday, Dec. 7, at 12 p.m., via Zoom and continue each Thursday through Dec. 28. Any connected springs or streams will also contain the pollutants. Any water drawn from the aquifers through private wells would contain pollutants, and aquatic life in springs and streams could be affected.

In the 1940’s, infants began developing a disorder where their skin turned blue due to lack of oxygen in their bodies. Investigations showed that well water high in nitrates, mixed with powdered formula, were the cause of the cyanosis known as ‘Blue Baby Syndrome.’ Borrud explained that in the babies, high doses of nitrates prevent red blood cells from delivering oxygen through their bodies. Babies with ‘Blue Baby Syndrome’ suffered trouble breathing, diarrhea, loss of consciousness, seizures and even death. The vast study showed a spike in colorectal cancer in those whose water had nitrate levels of 4 ppm or greater. Cited by Borrud was an agricultural health study published this year that sampled tap water from northeast Iowa farm wells. In eight of 47 wells, “Pesti-

cides were found, no surprise!” she exclaimed, adding, “More than one third had elevated levels of nitrates and dangerous levels of coliform bacteria. People will say it is just the septic system leaking, but this study shows they measured things that might be excreted by humans into the septic system — hormones, pharmaceuticals — but the levels of those were very low relative to the high quantities of pesticides. It’s not the septic systems that are the problem.”

In the 10-team Chris Davis tournament, hosted by Wapsie Valley Saturday, the South Winn boys wrestling team posted a strong finish. The Warriors earned four place with 152 points, while Nashua-Plainfield was the team champion with 235.5 points. South Winn had four grapplers in the finals — Collin Holm, Landen Schnuelle, Kyle Kuboushek and Parker Timp with two standing atop the podium at the end of the day. At 144 pounds, Holm pinned his way to the finals, starting with Waukon’s Garrison Byrnes in the quarterfinal. The Warrior put Byrnes to the mat in 1:34 to advance to the semifinal against Payton Malchow of Rockford, who was turned by Holm in 1:52. In the final, Holm threw Devon Griffin of Nashua-Plainfield in 1:22 to claim the title. It was a trio of falls for Parker Timp for his title at 215 pounds as well. It took the Warriors senior 1:01 to throw Joe Koehler of Rockford in the quarterfinals and 2:18 to dispose of Waukon’s Tryston Johnson in the semifinals. Nashua-Plainfield’s Aiden Sullivan was slightly more of a challenge as Timp took 3:26 to pick up the fall. Taking second at 150 pounds was Schnuelle. Throwing Bralin Regan of Waukon in 3:17 in the quarterfinal, the sophomore took on Brody Sternhagen of HLV, winning an 8-7 decision to advance to the finals. It was there, Schnuelle faced Easton Krall of Wapsie Valley, dropping a 10-4 decision to earn second place. Kuboushek took second at 165 pounds, securing a 4-3 decision in the quarterfinals against Jared Snitker of Waukon. The sophomore then threw HLV’s Max Henstorf in the semifinal in 1:21 before getting edged by a 3-2 decision in the final by Garrett Miller of Wapsie Valley. Senior Aiden Feickert was in the 113 pound round robin bracket and finished second as well, going 2-1 for the day with a 7-3 decision over Sawyer Krall of Wapsie Valley and throwing Jacob Grangaard of Waukon. In his third match, Feickert fell in 1:12 to Nic Brase of Nashua-Plainfield. The Warriors are at Waukon Tuesday, Dec. 5, in a triangular with the Indians and Fillmore

Even though there were improvements made, the South Winn girls’ basketball team (13, 1-2 UIC) still came up short Friday night at home, falling 24-18 to Central Elkader (1-3, 1-2 UIC). NFV tops Trojans 77-39 With two of its top points and senior leaders off the court with injuries, the young Turkey Valley boys’ basketball team (1-2, 0-2 UIC) suffered a loss Friday to North Fayette Valley (3-0, 2-0 UIC) at home, 77-39. Vikings dive into new season with two meets

To kick off the winter season, the Decorah boys swim team traveled to Waterloo Central to compete in a double dual Tuesday, Nov. 28, then faced stiff competition at the Dubuque Hempstead Saturday.

Catching up Tuesday, Nov. 28, Decorah came up against some top competitors in the pool, competing against Cedar Falls and Dubuque Hempstead in a double dual. Three events picked up silver medals, while three others won bronze at the event. Knaack, Cote, Kutz and Hogan put together a time of 1:43.90 in the 200-yard medley relay for a runner-up ﬁnish. That same quartet touched the wall in 1:34.38 in the 200-yard freestyle relay, good for third. Individually, Knaack took second in the 100-yard backstroke in 57.04 seconds and took third in 51.22 seconds in the 100-yard freestyle. Cote won silver in the 100-yard breaststroke with a time of 1:06.69. Bringing home third in the 400-yard relay were Dom Bigalk, Kutz, Hogan and Reid Kuehner. They posted a time of

The Decorah boys’ wrestling team squared off with top teams from throughout the Midwest Friday and Saturday at the Xtreme Arena in Coralville as the Vikes competed in the Dan Gable Donnybrook, finishing with 36 points in 37th place. Chicago/Mt. Carmel came away with the team title, securing 401 points. The Vikes had seven grapplers score points, led by Michael Clement with a 12th place finish at 126 pounds. At 190 pounds, Tommy Sexton was next with a 19th place finish. Bringing home 21st place at 144 pounds was William Fullhart, while Brody Hanson took 22nd place at 165 pounds. In 23rd were Gavin Knutson (106) and Kollin Henry (150), while Kaiden Youngblood finished the weekend in 24th at 215 pounds. Decorah keglers top Waukon

The Decorah bowling teams continue show power, picking up wins over Waukon Friday night. Against extremely tough conditions at Waukon’s Arrowhead Lanes, the Viking boys showed resiliency, topping the home team 2,685 while the Indians put up 2,377. Baker scores were 147, 221, 162, 177 and 199. The Vikes were led by Jordan Sims who had scores of 214 and 212. Following close behind were Cade Averhoff, Brock Christensen and TJ Round. Averhoff produced rounds of 197 and 157, while Christensen had 156 and 192. Round was on the board with a 158 and 185. Also contributing to the win were Beau Newhouse (144, 156) and Tyler Novak (145, 163). “It was a tough day of ‘grinding it out’ with spares winning the day for us,” noted Coach Keith Bruening. Overtime Friday’s game against Western Dubuque (0-2) seemed to be going the Vikings way, until the fourth quarter. Decorah started out with a quick 16-6 lead after the first eight minutes and extended its lead to 29-17 at halftime. The Bobcats scratched into that lead in the third, but the difference was the 15-5 fourth quarter that knotted the game at 47 at the final buzzer. The Decorah boys’ basketball team (2-0, 0-0 NEIC) kicked off the season with a bang, winning Friday night in overtime over Western Dubuque and taking Saturday’s game with ease from Center Point-Urbana. “It was good for our guys to get on the floor to see where we need to continue to improve. We were pleased with our efforts in both games, just had too many careless mistakes versus Western Dubuque so we were very fortunate to come away with the victory. Our guys know what they need to clean up and we will keep working to improve every day as it’s a process,” said Coach Jonathan Carlson.

100+ Women And Men Who Care meet Dec. 5

All welcome to join at King Pin Entertainment Center The 100+ Women Who Care – Oneota Valley will combine forces with the 100+ Men Who Care: Driftless Chapter for their ﬁnal meeting of 2023 to make a big impact in the community. The joint meeting will be held Tuesday, Dec. 5, at King Pin Entertainment Center in Decorah. Registration starts at 5:30 p.m., and the meeting will take place from 6 to 7 p.m.

The event is open to all local community members who are looking to learn about local charitable causes and make an impact.
