Welcome Welcome to our 2019 Summer Serves publication. Gin continues to go from strength to strength so in this edition we are focusing on gin cocktails. You don’t just have to serve gin with tonic there are a variety of other great mixes too from ginger beer to elderflower juice. So why not get your team to mix up some of these simple, and tasty, gin cocktail recipes. I am sure they will go down a treat. AULD ALLIANCE Ingredients
Method
50ml Crabbies 1837 Gin • 12.5ml Cointreau • 12.5ml Lemoncello • Squeeze of Fresh Lime • Crabbies Ginger Beer
Shake all the ingredients together and strain into a Collins glass. Top up with Crabbies Ginger Beer or Soda.

Finish: Garnish with a Rosemary sprig, Lemon ribbon and zest of ginger.

CRABBIE COLLINS Ingredients
Method
• 50ml Old Tom Gin • 75ml Grapefruit juice • 25ml Lime Juice • 12.5ml Elderflower Liqueur • Dash of Soda
Shake all ingredients and pour into Collins glass over ice and top up with Soda.
Finish: Garnish with dehydrated orange and edible flowers.

EAST COAST NEGRONI Breathe new life into this classic aperitif, with the briny botanicals in Edinburgh Seaside Gin and a hint of grapefruit to tempt the taste buds.
Ingredients
Method
• 25ml Seaside Edinburgh Gin • 25ml Suze • 25ml Campari • 3 dashes Grapefruit Bitters • Sea salt & rosemary to garnish
Frost the rim of the glass with rock salt and rosemary. Fill the glass with ice before adding all ingredients. Stir with a bar spoon until well mixed.
Finish: Garnish with a sprig of fresh rosemary.

Ellis 75 Ingredients
Method
• 50ml Ellis Gin No.2 Butterfly Pea • 5ml Lemon juice • 5ml Sugar Syrup • Fill with Champagne or Sparkling wine.
Pour gin and mix with lemon juice and syrup - watch the colour change. Then add the sparkling wine to and see the colour change to a luscious lilac.
Finish: Serve in a champagne flute.

FLORADORA Ingredients
Method
• 50ml Brockmans Gin • 5 Raspberries • Half a Lemon (medium size) squeezed • 1 tsb Caster Sugar or Honey (optional) • Ginger Ale/Beer
Put the raspberries in a highball glass. Muddle with barspoon or fork. Squeeze lemon juice over it. Pour Brockmans Gin, then stir together.Add ice and top with ginger ale.
Finish: Garnish with a lemon wedge a mint sprig. Straws optional.

Gin Mojito Originating from the Prohibition years in the notorious ‘South Side’ district of Chicago, this cocktail was reputedly a favourite of, among others, Al Capone. With some describing it as a “Gin Mojito”, it has citrus and freshness at its heart and works best with a gin that fits this style - none more so than Wild Island Botanic Gin.
Ingredients
Method
• 60ml Wild Island Botanic Gin • 30ml Freshly Squeezed Lime Juice • 15ml Sugar Syrup (which you can buy or make at home using two parts water to one part sugar, mixed on a low heat) • 8 Fresh Mint Leaves
Gently muddle 7 of the mint leaves in the bottom of a cocktail shaker. Fill the shaker with ice and add the gin, lime juice and sugar syrup. Shake vigorously for 15 seconds.
Finish: Double strain into a chilled Martini glass and garnish with the remaining mint leaf.

JAGGI SUMMER NIGHTS Ingredients
Method
• 50ml Jaggi Gin • 25ml of Triple Sec • 22.5ml Tequila • 125ml Pomegranate juice • Good squeeze of fresh lime juice.
Place some crushed ice into a cocktail shaker with 2 measures of Jaggi Premium Gin and the rest of the ingredients.
Finish: Shake and strain into a cocktail glass.

kintyre gin fizz Ingredients
Method
• 50ml Kintyre Pink Gin • 20ml Lemon Juice • 20ml Sugar Syrup • 1 Egg White • Soda Water
Dry shake first to set egg white then shake over ice and strain into glass. Top up with soda water.
Finish: Garnish with mint.

The Martinez Made with Edinburgh Cannonball Gin, this bartenders’ favourite is the epitome of classic simplicity.
Ingredients
Method
• 35ml Cannonball Edinburgh Gin • 35ml Cinzano Rosso • 5ml Maraschino • 2 dashes orange bitters • Orange twist to garnish.
Combine all ingredients into a mixing glass with ice.Stir carefully until well combined. Strain into a Nick & Nora or Martini glass.
Finish: Garnish with an orange twist.

MIDSUMMER MADNESS Ingredients

Put all the ingredients in a cocktail shaker and shake well. Serve over ice. Recreate the bliss of lazy summer afternoons with this refreshing blend of citrus and elderflower.
50ml Indian Summer Gin 25ml Chambord Liqueur 50ml Lemon juice 25ml Elderflower Cordial 1 heaped tsp strawberry jam Ice Cubes.
Finish: Garnish with a strawberry and a spring of mint.

THE ORKNEY BLUEBELL Ingredients
Method
• 50ml Orkney Gin • 25ml Lime Juice • 25ml Crème de cassis • 2tsps Caster Sugar • Blueberries • Mint leaves.
Finish: Garnish with blueberries and mint leaves.

Shake the gin, lime juice and sugar with ice. Pour into a glass over ice and slowly add Crème de cassis to create a gradient effect.
RASPBERRY RIPPLE SOUR Ingredients
Method
• 50ml Crabbies Wild Berry Liqueur • 12.5ml Chambord • 25ml Lemon Juice • 12.5ml Aquafaba (or egg white). • 12.5ml Vanilla Syrup.
Hard shake all the ingredients and pour over ice into rocks glass.
Finish: Garnish with Hibiscus dust and 3 x Raspberries through a toothpick.

Roku Blossom Ingredients
Method
• 30ml Roku Gin • 30ml Pink Grapefruit Juice • 10ml Campari • 5ml Sugar Syrup • Sakura flower
Build and top with soda.
Finish: Garnish with a Sakura Flower and serve in a Japanese highball.

SCOTTISH SUMMER Ingredients
Method
• 50ml House of Elrick Gin • 15ml Creme de Framboise • 30g muddled Rhubarb • 7.5ml Sugar Syrup • Rosé Prosecco.
Muddle the Rhubard and mix all ingredients in a cocktail shaker.
Finish: Pour into a tall glass and top with Rosé prosecco.

SUNNY INTERVALS Recreate the bliss of lazy summer afternoons with this refreshing blend of citrus and elderflower.
Ingredients
Method
• 40ml Edinburgh Gin • 20ml Edinburgh Gin’s Elderflower Liqueur • 20ml Freshly squeezed Orange Juice • 20ml Lemon Juice • 10ml Sugar Syrup
Add all the ingredients to a tall glass and stir. Fill the glass with ice. Add a splash of tonic water.
Finish: : Garnish with an orange twist.

VERDANT DRY GIN BREAKFAST MARTINI Ingredients
Method
• 50ml Verdant Dry Gin • 15ml Triple Sec • 15ml Fresh Lemon Juice • 15g (a full bar spoon) Seedless marmalade
Muddle or stir all the ingredients in a cocktail shaker to dissolve the marmalade. Fill the shaker with ice and shake.
Finish: Pour into a chilled martini glass and garnish with a curled strip of orange zest or a wheel of lemon.

Tastes have changed in the past 200 years so we’ve updated the recipes for the modern drinker. Versatile enough for mixing, distinctive enough to be enjoyed neat.
edinburgh gin Cannon Ball Edinburgh Gin Inspired by Edinburgh’s rich naval heritage of cannons and the famous One O’clock Gun, our Cannonball Gin is a Navy Strength gin that lives up to its evocative name. Cannonball resurrects a historic style of gin commissioned by the British Navy, making this gin an homage to Edinburgh’s seafaring past. GIN BO O K

Seaside Edinburgh Gin Originally made with foraged shoreline botanicals, Seaside Gin was the first of our collaborations in partnership with Heriot-Watt University’s Brewing and Distilling MSc course. Marine plants including scurvy grass, ground ivy and bladderwrack are used to create a gin with distinctive minerality. These are complemented with aromatic spice notes from grains of paradise, coriander and cardamom. Classic Edinburgh Gin Launched in 2010, Classic Edinburgh Gin is a modern London Dry gin, with a nod to Scotland in its recipe which includes native plants and botanicals. The unique blend of fourteen botanicals includes lavender, pine buds, mulberries and cobnuts. Orange peel, lemongrass and lime peel contribute lively citrus notes.
Ellis Gin Ellis Gin is a small batch Scottish gin carefully crafted in Glasgow. Mixed with hand-selected botanicals and macerated to create beautiful colours. Ellis was originally created as the base to our really successful Ready to Drink Gin Cocktails – Gin&Mix. Ellis has been launched with two coloured flavoured gins - designed to be different - Ellis is a delight to all the senses. Beautiful vibrant colours that change colour when tonic is added. Indian Summer Indian Summer contains the precious spice saffron, which brings a warm, rich aromatic flavour and golden-yellow hue to our gin, reminiscent of a sizzling summers day.
