New President Jan Steps up for Wimborne Rotary For the first time in the history of Wimborne Rotary and with the easing of restrictions, the Presidential Handover meeting was recently held, outdoors, at a gathering of club members at Pamphill. Outgoing President, Neil Hutchinson, handed the chain of office to Jan Baseley, and welcomed her as the new President. Also confirmed were President Elect, Ron Franks, and Junior Vice-President, Graham West. On taking office, Jan addressed members about her aims and hopes for her year in the Chair.

“During the past 15 months all the usual activities of the club have eﬀectively had to be suspended. We have been unable to meet face-to-face, with no social activities and no charitable fund-raising”, Jan said. “But with online Zoom meetings and regular newsletters the club is emerging from a diﬃcult period and anticipates normal activity will resume shortly”, she added “. QUIRKY FACTS by Mica Bale

Have you seen the Grey Mare and Her Colts? Found near Abbotsbury, this impressive Neolithic structure is actually a tomb - a chambered long barrow in nature which was excavated millenia after it was ﬁrst laid around 3400-2400 BC to ﬁnd some human bones as well as some fragments of pottery. Although there are roughly ten such structures along the South Dorset Ridgeway, the history of the Grey Mare and Her Colts is plain to see and is a fantastic landmark from the county’s ancient history.

Congratulations on reaching September, having entertained the kids and creating new memories over the summer and accurately appraising school uniform sizes. Now it's September, the eve of autumn, so why not take a well earned coffee break, pick up the magazine and enjoy a delve into the county’s heritage with another five quirky facts? Did you know that at one time Horton Tower, built in 1750 by Lord of Horton manor, Humphrey Sturt, was considered to be the tallest folly in the United Kingdom? Standing at more than forty metres tall, there are various possible reasons why the folly was built however popular belief is that Sturt, a local landowner who sat in the House of Commons, had it PHOTO: ROGER VAUGHAN built when he became too old to ride in the hunt as so could watch the event from the building’s fifth floor.

Were you aware that Henry Rawlinson, the 1st Baron Rawlinson who was renowned for being one the leaders of the tragic Battle of the Somme and whose military career has since been condemned by history, was born in Trent at the Manor? Away from the battleﬁeld where he served as a general, Rawlinson was also an avid watercolour artist who once travelled to France to paint with Winston Churchill. Churchill himself was in awe of his talent and commented that, “The General paints in water colours and does it very well”! 8

In 1803, Easton, on the Isle of Portland witnessed shocking events when the village was attacked by British Navy sailors attempting to take men from the settlement for recruitment. The marines landed on the ﬁrst of April 1803 and press ganged some men however when they came the second day, the villagers were wise of their plans and would not let the men be taken. Tragically, the captain ﬁred his guns, his marines following suit resulting in the death of three local men and the later death of a woman and also caused several injuries. Although tried for murder, the captain and his men were aquitted and yet the villagers actions prevented the men from being taken from Easton.

Dorset is proud to boast many organic farmers however, did you know that one of the oldest organic farms in the county dates back more than 60 years? Tamarisk Farm, based in West Bexington, was founded by Arthur and Josephine Pearse whose daughter Ellen now runs the farm. Interestingly the farm was largely organic before such titles and grading even existed. Amazingly, the descendants of the shire horses who worked on the farm are now used by the current owners to ride to survey the farm’s 600 acres! ENJOY THIS FEATURE IN EVERY ISSUE!

The name’s Bond...but not for much longer As he bids farewell to every actor’s dream role, we look at the legacy Daniel Craig’s James Bond has left behind. To equate his Bond experiment to the process of the average gymgoer, Daniel Craig is showered, moisturised, halfway towards being dressed and grateful for the occasional glimpse in the changing room mirror… one which flashes back reflections that his 007 persona might casually approve of with a muttered, “good job”. Speculation that the actor was saying his farewell to James Bond has been circling for some years, but now, unequivocally, he is done, as the rather clumsily named No Time To Die hits cinemas. As it does, the 53-year-old emerges with a few things – a life-defining imprint on the CV, a multimillion-pound war

chest, and the knowledge that he has influenced a generation of cinemagoers in refining the definition of the modern-day hero. “I’ve always thought the image of a good actor is someone who leaves the big gestures and sweeping statements for when the cameras are rolling,” he begins. “That should really be the beginning and the end of what we expect of our actors. “I don’t want to be the type who puts himself on a pedestal away from that. What right do I have to comment at length on politics or society or the environment? And why should anyone take any notice of me anyway? I’m an actor!” Back on screen, it has been interesting to see how far removed the modern version of Bond is compared to his immediate predecessors Brosnan and Dalton. Talking about Wildlife...

The dragon of the skies… No summer is complete without experiencing the sights and sounds of a dragonfly as it hunts over a nearby pond. Agile and colourful, dragonflies are a joy to watch with their aerial manoeuvres rivalling the fastest military aircraft as they duck and turn in pursuit of prey, or narrowly avoid the clutches of hungry hobbies. These adaptable insects lord over wetlands, moorland and even woodland glades, feeding on flies, midges and even each other. If you thought butterflies were the only insects worth a second glance, these multi-coloured, iridescent predators demand appreciation too. In addition to occasional visitors from continental Europe, there are 17 species of damselfly and 23 species of dragonfly resident in the UK. They are found in almost every habitat, bringing a splash of colour to the landscape just as the wildflowers and butterflies are winding down – so now is the perfect time to spot them! This year in Dorset we’ve been lucky enough to witness the arrival of the Southern Migrant Hawker dragonfly, which is usually found in warmer climes. Spotted in Lytchett Heath in east Dorset, this is a first recording for the county, most likely due to the prolonged period of warm weather this summer. than the more common migrant hawker, and is often called the blue-eye hawker, on account of its blue eyes. The migrant hawker dragonfly is one of the most exciting dragonflies to spot, and you can often find them hunting along sheltered hedgerows in August and September. Another impressive dragonfly you may see this year is the emperor dragonfly, which is a characteristic dragonfly of new ponds, where for the first few years, their larvae may be extremely common. The males are pale blue, with an applegreen throat and a black stripe running the length of the body. Dragonflies are most active in warm and sunny conditions and are most commonly found near water, but several species also travel to feed in gardens, fields and woodland edges. Recycled Cotton - The big problem with cotton is the amount of water it uses in the production process – around 20,000 litres for a single t-shirt or pair of jeans. Organic cotton still requires this, but at least doesn’t use pesticides, although only 1 in every 100 t-shirts is currently made this way.

Eco-spun - A high-quality, dense and durable ﬁbre made from plastic bottles.

Soya - Use of soya in tofu manufacturing may only be recognised in foodstuffs, but fibres are incredibly soft and can mimic the feel of cashmere, making this an interesting choice. The fibres will typically be mixed with organic cotton. Organic Silk - For many, the texture of silk is irresistible, and the organic version of one of the most expensive textiles out there can wrestle matters back into an acceptable eco space. What makes silk organic is that the silkworm isn’t killed. Instead, the tiny silkworms are taken outdoors to a food tree where they spin their cocoons. Silk is extracted by unwinding or spinning the filaments, and the silk moth emerges unharmed.

From ballerina to racing driver - Emilia is waving the flag for Julia’s House! male-dominated environment. But more and more females are joining the racing world, which is fantastic!” She swapped ballet for motor racing when she was 16 years old, and now Emilia Vincent is waving the flag for Julia’s House Children’s Hospice in the car she helped to build. The former Poole High School student is racing in the Castle Combe Hot Hatch Challenge Series this year. Emilia spent two years building the car along with her fellow student team for her degree in Motor Sport Engineering at Wiltshire College and University Centre, and was later chosen as one of the team’s racing driver. The 24-year-old hopes to raise awareness for Julia’s House with her fast-paced hobby and will be displaying the charity’s logo on her car in every race. Emilia says, “I want to help the charity and the families that are struggling in any way I can, so I’m racing for Julia’s House and I hope that spectators will acknowledge the logo on the car and want to find out more and make a donation, or do some fundraising themselves.” Inspired by Formula E team principal, Susie Wolf, Emilia put her ballet shoes away and decided to start karting with her father as her mechanic. “I’ve since made the leap to car racing and I absolutely love it. Younger girls might be put off seeking a career in motorsport or competing themselves, as it’s seen as 30

A Design for Life… The Kevin McCloud Column Designer, writer and television presenter, Kevin McCloud leapt into our consciousness with his vastly successful Grand Designs show on Channel 4. This month, the affable architect looks ahead to some design trends that might rise to prominence over the next few years. I get asked a lot about future design trends and initiatives, and the truth is I wouldn’t know what a trend was if it hit me in the face! Over the years I’ve come to regard trends as very lucid, irregular things – they come about quickly, are mixed and remixed, then disappear out of nowhere; and with interior design that can be problematic given the semipermanency of how we furnish our homes. It’s not like saying ‘this pair of trousers are out of fashion this year; I’ll wear a different pair tomorrow’. If you’ve added wood panelling to every wall in your home, it’s going to take a while to ﬁx. What I will say is what happens at the beginning of every century in design and

architecture is that people stop and look back at the last century and say, ‘oh my God, we didn’t get any of that, quick, let’s have some’, and you get this rush of building and design and furniture which is kind of retro – we’ve seen it over the past decade or so with a complete craze for anything vintage from 1930-90s. It’s fair to say we’re always looking forward as far as home design goes, both

architecturally and in the patterns and designs within. If I had to put money on a style or theme over the next couple of decades, it would be eco-based. We’re seeing a real retune to very natural, sustainable materials - basic stuff. Yet also, thanks to changes in technology and the way that

we design, often using iPhones, we can survey and model things really cheaply now. So that means we are going to see all manner of goods – from home products right through to personal stuff like shoes – made not in some factory in Germany, China or Portugal, but in a shop round the corner from where you live using really sophisticated 3D printing techniques. Certainly, a look into the future is a view back towards bespoking our homes in our own design. The era of the IKEA mass-market products has helped us a lot, but technology is now freeing us to style our homes in much more personal ways. It will mean we can turn back into being a nation who make things for ourselves, in a bespoke way, which I think is a very exciting future.

The Modern Magazines Camper Van Daichi, our Japanese Campervan, is always looking for new, British experiences, so taking us to see Dad’s Army at the Tivoli Theatre in Wimborne was an extra special treat last month. Were you an avid fan of this Iconic, now internationally renowned British show, in the late 60’s and 70’s? Back in the day this BBC sitcom reached 80 million viewers an episode and with nine series and 80 episodes in total there was a lot to laugh about. I had booked these tickets more than 18 months ago, well before any Lockdown, or hint of international adversity, so you can imagine the crowd, the audience, all seated and eagerly anticipating the

Daichi at the Tivoli Theatre in Wimborne cast’s appearance. When the tannoy announcement welcomed us all back to a “live show”, there was the best cheer I have heard for a long time. The audience was ready. Oh what excitement, oh what a buzz. We were there. We were with the characters. We were on that stage. Fortunately, metaphorically speaking, as the actors themselves were well rehearsed, and I am sure, as eagerly anticipating their performances as we were to watch them. We were all back together. I have been in plays (a few years ago now…) at school, and I take my hat off to these ambitious individuals, not professionals, but ‘ordinary local people’ with working lives and families to support, who work tremendously hard to put on a fully professional show. We salute you! “Don’t Panic!” You did a FANTASTIC job. You were all so in character and fully entertained us. Dad’s Army, as many of you will absolutely know, is situated in a fictional South England seaside town of Walmington-on-Sea, where the Home Guard platoon, manned by volunteers, is on watch. Jimmy Perry, one of the co-writers and creators of the

programme based a lot of what he wrote on his own experiences in the Local Defence Volunteers. Did you know that his mother did not like him being out late at night and worried that he would catch a cold, and as such the character of Private Pike is actually based on himself? How funny is that. The play started with “The Deadly Attachment” and the capturing of a German U Boat Captain and his crew. The unfearing, cantankerous Captain Mainwaring, a bank manager by trade, orders soggy fish and chips for them, much to the German captors’ displeasure. It is good-old British humour at its best. They don’t make ‘em like they used to. Followed by a scene from “Mum’s Army” in which Captain Mainwaring has a wandering eye and takes a fancy to Mrs Gray. It is such a shame that many of our great British lines and innuendos are disallowed and frowned on these days. In my opinion we have one of the best senses of humour on the planet and are able to laugh at ourselves in a healthy way. It is very therapeutic. After the much-loved ice-cream interval break, came “The Godiva Affair” where poor Mr Mainwaring watches his wife cavorting ‘naked’ through the streets (actually in a full cream body suit, but fortunately it was only left to the imagination…), as she poses as Lady Godiva in a fund-raising carnival parade. As my Dad would say, “You couldn’t

Great hilarity in “the office” write it, could you, Deb!” Well, Jimmy Perry and David Croft did - and oh did we all laugh! “The Floral Dance” was the final scene and as the actors gave us their departing lines, and the curtains slowly started dropping we were all smiles and clapped and cheered to our hearts delight. Eleven of us from Modern Magazines had gone to watch this fantastic ‘blast from the past’, literally from ages 17 to 80, and all of us had a fabulous evening. “Project Play” who produces these incredible shows does a great job managing and creating them. Matthew Rock, the Director and Producer, is ever grateful to all the local people who act and spend hours of their time rehearsing, the stagehands who create each scene throughout the show, the dress makers, makeup artists and the whole team which it takes to put on such a production. Bournemouth Music Competitions Festival Some of you may have heard of the Bournemouth Music Competitions Festival – after all it’s been going for more than 90 years. Sadly last year we had to cancel due to Covid, but we’re planning to be back with a bang in October.

If you’re not sure about entering why not come along to watch? A day ticket only costs £3 (£2 for concessions). You’ll be supporting all the wonderful local talent – they really appreciate having an enthusiastic audience.

If you’re interested in the Performing Arts, the Festival deﬁnitely has something for you. If you’d like to take part there are vocal classes for everything from opera to the latest musical theatre hits, a wide variety of Speech and Drama options, plus instrumental classes to suit all grades and instruments. Classes are judged by a professional adjudicator, but don’t worry, the atmosphere is very friendly and supportive and you can learn a lot from watching your fellow competitors. This year we are hosting The Rotary Young Musician of the Year competition, and a new award for younger adult singers, The Hubert Parry award of up to £250.

This year the Festival is taking place at The Knole in Knole Road, a lovely venue with plenty of parking, and light refreshments are available to purchase, so why not make a day of it and bring your friends (and of course make some new ones!) There’s sometimes a sadness when you realise summer is coming to an end, and the leaves certainly seem to be falling earlier this year. My advice though is to embrace the new season and really go after all the potential and possibilities that it holds. After all, we’re actually very lucky in Britain – where plants are concerned we can afford ourselves a different favourite every month; snowdrops in January, daffodils in February, tulips in March and so on. People tend to associate autumn with brown and orange tones, and a rustling underfoot; but it’s about much more than

that. One of the most exciting times is when you wake up on a certain day and you can just smell the fact the season has arrived. It’s something in the air - a kind of sourness, a tang that lingers. You can smell things just beginning to decay, but it’s in a way that is replenishing, stimulating and invigorating because it means things are turning and new possibilities are around the corner.

look at the lovely ferns it’s now growing. Next, perhaps start autumn with a tidy-up of borders, or a clean out of the greenhouse, or perhaps even renew a few tools. Also consider getting your compost boosted with all those leaves suddenly in abundance. And ﬁnally, invest in some evergreens to offer texture and volume in areas of the garden that might start looking a little sparser. Mostly though, look forward to the coming change and admire nature’s versatility. There is tremendous colour still around us, and where the leaves have descended, look at the skeletal, artistic majesty of trees.

So as autumn arrives I would offer the following bits of advice. Firstly, hold on to the last bits of colour and savour them. Next, enjoy what’s there - perhaps you have some raspberries or any number of the late-ﬂowering varieties such as Cyclamens, Begonias, and of course, Crocuses. Also see how your garden is evolving – sure, that asparagus bed is no longer cropping, but

Wimborne Railway Engines Unveiled Wimborne’s Mayor, Councillor Kelly Webb, was on hand to unveil and watch the inaugural run of two special model locomotives on the volunteer run railway diorama at Wimborne Model Town. A West Country class steamer in late 1940s livery, complete with Wimborne nameplates and the town

council’s crest, was revealed together with a late 1950s era Class 31 diesel bearing the Mayor’s name, celebrating her year in office. Greg Hoar, spokesman for the Model Town commented: “We were delighted to welcome the Mayor to introduce these new engines as they provide not only a link with the town council but a reminder of our area’s railway heritage”.

The Copper Kitchen This year’s interior trends are all pointing to one thing: copper. It’s the metal of the moment, and combining good looks with incredible functionality, its place is in the kitchen. So why not give your own scullery a rustic European twist with these classy copper touches. Individual items Why not experiment with a range of copper pots of varying sizes, seen throughout rural Italy as a touch of rural continental class? Consider also a kettle, toaster or even cocktail shaker; and mix between those that have an antique chic, and new items fresh from the shop. Bolder statements Going a step further, consider a copper splashback for a hob, or perhaps a copper worksurface countertop that, on a kitchen island, will provide a real standout look. A splashback or countertop can complement minimally-

styled cabinets in subtle shades of black, white, grey and even green. With its natural anti-microbial qualities meaning that bacteria will only be able to survive a couple of hours after coming into contact, copper makes for a perfect material to fashion a sink from; and by trading out mundane marble or commonplace ceramic for copper tiles you can subvert traditional designs with a bold burnished twist. Upcycling You can even combine fashion with efﬁciency by upcycling – unlike iron or steel, copper is a soft metal that can be repurposed after years of use. Reclaimed traditional materials like old copper pipes can be used to make kitchen taps, or larger sheets can be fashioned into bar stools that can complement everything around them. Gauge your audience When reusing materials you should bear in mind the copper sheet’s ‘gauge’. As the gauge value decreases, the thickness

of the metal increases. If you’re looking to turn that old copper pipe into a snazzy new centrepiece, steer clear of anything higher than a 16 gauge as this will be too thin for long-term use. Find something with a 12-14 gauge, however, and you’ll be able to re-use and re-purpose to your heart’s content. Maintain and marvel The fear with copper items is that they will tarnish or oxidise, though sensible maintenance should mean any ageing over time only adds to the splendid rustic, red effect. In the ﬁrst instance, you shouldn’t heat a dry copper pan. Instead, use warm water ﬁrst – this will prepare the pan for cooking which, given it heats up 20 times as quickly as its stainless steel counterpart, is a wise move! Before polishing, use a soap and water solution; while lemon juice and salt (at a 3:1 ratio) provides a really good solution for ridding any oxidation marks, spots and smears.

Golden Brown Millie Bobby Brown is an actress who, even at 17, is already so well versed in the mechanics of Hollywood, LA and London. Hers is a star shining brightly, when so many others in the industry are discovering the shadow is rather more diﬃcult to emerge from. Millie Bobby Brown, the star of the Godzilla movies and drama Enola Holmes, seems to have a natural draw towards big projects and big locations, even if her roots are rather more beach-based. The actress, who stars in upcoming Netﬂix project The Girls I’ve Been, was born in Marbella in 2004, and her grandparents still own and run a restaurant in the Spanish resort. Perhaps in future years the star can bring some of the A-list with her to sample its unique vibe. Her mobile phone is, after all, awash with big names, thanks in no small part

to her landing the role of Eleven in Stranger Things at the age of 16. Yet while it seems most things have fallen perfectly at the actress’s feet, she hasn’t been without her own struggles. Notably, she was born with only partial hearing in one ear and has gradually lost it totally on one side over time. “We all have to overcome challenges and I’ve been lucky to have something that I’ve habituated to over the years,” she says. “I don’t make excuses for it and I’m certainly not going to let it hold me back.” Perhaps her physical struggles offer an indication as to why, despite enjoying the trappings and riches of the entertainment world, Millie has never turned her back on humanitarian and philanthropic projects

that are close to her heart. In 2018, for instance, she was appointed as a UNICEF Goodwill Ambassador, the youngest person to be selected for such a position. She has always worked for UEFA in togetherness and diversity projects and has a humility that is totally endearing. With a big career laid out in front of her, Millie Bobby Brown is arguably the film industry’s most promising talent, even if progress has been curtailed over the past year by the Coronavirus pandemic. “It has been a tough time but I would like to think we are coming out the other side of it,” she says. “When your life is a constant flurry of activity – and that’s the case for most of us – it can be very easy to forget to take a few moments to reflect and assess where you are. “Perhaps that’s one good thing we can take out of this… we are all a bit more aware of ourselves.”

Welcome to the September Stargazing Page. With the skies now noticeably darker after the long summer evenings we can look forward to seeing Jupiter and Saturn, a Harvest moon, and a fox loose in an aviary! International Space Station This ISS is visible in the early hours of each morning until the 12th. From the 16th onwards sightings are at much more respectable times ranging from 7pm to 10pm. To establish exact timings please refer to www.heavens-above.com or a similar webpage for up-to-date information, remembering to specify your location. Events The Autumn Equinox is on 22nd September, and marks the first of two dates (the second being the Spring Equinox) when daylight hours equal the number of night-time hours, wherever you are on Earth. The term equinox originates from the Latin meaning ‘equal night’. The Autumn equinox marks the point at which days become shorter than nights. Mercury & Mars Both planets are difficult to locate this month. Venus Venus is also very low in the west and quite hard to spot, vanishing below the horizon by 8.30pm. It is joined by the Moon on the 9th and 10th (see figure), which may help you find it. Jupiter and Saturn Both gas giant planets are visible throughout the night, and although not reaching great heights in the sky they stand out magnificently as they are currently in an area with few bright stars. Jupiter on the left is the much brighter of the two. The moon is close by between 16th – 18th.

Moon This month’s full moon occurs on 21st September and is traditionally known as the Harvest Moon; the full moon that falls closest to the Autumn Equinox (22nd September). So-named as farmers would use the moonlight to help gather crops through the night.

At this time of year the southern night-sky consists of faint, watery-themed constellations such as Capricornus (the sea goat) and Aquarius (the water-bearer). Fortunately, much higher in the sky lies a lovely, bright asterism (a familiar pattern of stars) that is visible well into the winter despite its name, the Summer Triangle. The three corners are marked by the bright stars Vega, Deneb and Altair. This part of the sky is dominated by avian-themed constellations, and the triangle can be thought of as a type of aviary. Altair is in the constellation Aquila, the Eagle, whilst Deneb is in Cygnus the Swan. Both birds have mythological origins relating to the Greek God, Zeus. The third star, Vega, is in Lyra, the lyre, which is often depicted in ancient texts as being carried by a swooping bird, such as a vulture. Many of the named objects in this part of the sky derive from the Arabic words for parts of a hen, with stars named after the tail, feathers, wings and beak. To complete the setting, the central dim constellation of Vulpecula, the little fox, was originally known as ‘the fox with the goose’; in old star charts the fox was often depicted with a goose in its mouth. We therefore have in this part of the sky the rather unfortunate example of a fox loose in the hen house!

Luscious Lamb Moussaka Introduction

Colder evenings call for warming comfort food such as this satisfying moussaka. Serve with a fresh green salad or even just a crusty baguette to mop up the rich sauce.

Ingredients 500g lamb mince 2 aubergines (sliced crossways) 4 large white potatoes (peeled and sliced) 1 onion (diced) 1 400g tin of chopped tomatoes 2 tbsp tomato purée

and then rinse them thoroughly before patting dry with kitchen towel. Oven bake as instructed. • Dish can be made ahead by covering your layered moussaka with cling ﬁlm and storing it in the fridge. When ready to bake, simply cook for ﬁve minutes longer in the oven.

2 garlic cloves (minced) ½ tsp ground cinnamon 2 tsp ground oregano 150ml beef stock For the béchamel sauce 40g butter 40g ﬂour 500ml milk 80g grated cheddar or parmesan Pinch of salt and pepper

Top Tips • If you are concerned about the aubergine being bitter – the fresher the aubergine the less chance of this there is – simply place your raw slices in a colander with a pinch or two of salt, leave for 10 minutes

Method Step One Preheat the oven to 200C/180C Fan/Gas 6. Lay your potato slices on one baking tray and your aubergine discs on another with a drizzle of olive oil and a pinch of salt. Bake for 15 minutes or until golden. Meanwhile, put the lamb, onion, garlic, oregano, and cinnamon in a large frying pan and cook over a medium heat for 10 minutes, stirring with a wooden spoon to break up the meat. Once browned, add the chopped tomatoes, beef stock and a pinch of salt and pepper. Cook over a high heat for 4-5 minutes until the ragù

Make this dish vegetarian by substituting the lamb for one 400g tin of cooked puy lentils and using vegetable stock instead of beef.

is reduced to a thick and saucy texture. Step two To make the béchamel sauce, melt the butter in a medium saucepan and stir in the ﬂour. Cook for a few seconds, then gradually stir in the milk. Add half the grated cheese and simmer the sauce gently for 4–5 minutes, stirring regularly. Season with salt and pepper. Step Three Add the potato slices to an oven-proof dish in a single layer. Spoon over a layer of lamb ragú and top this with a layer of aubergine slices. Repeat once more before pouring over the béchamel sauce and topping with the rest of the grated cheese. Bake the moussaka for 35-40 minutes until it is golden and bubbling.
