The Queen in her own words Quiet, impeccably mannered, but always addressing with poise and precision, what Queen Elizabeth II says is always worth hearing. The Queen and Diana The idea that the Queen was in some way unapproving of Diana is one that has permeated the popular press and, it might be said, has left an indelible stain on the reputation of both. Yet many biographers have noted that the relationship between the two was excellent, even after the break-up of Diana’s marriage to Prince Charles. “No one who knew Diana will ever forget her. Millions of others who never met her, but felt they knew her, will remember her. “She was an exceptional and gifted human being. In good times and bad, she never lost her capacity to smile and laugh, nor to inspire others with her warmth and kindness. I admired and respected her - for her energy and commitment to others, and especially for her devotion to her two boys.” Serving her country Upon the Queen’s coronation, she declared herself fully at the service of the nation she was serving, as have all Monarchs coming to the throne. While the words are regularly spoken, the intensity with which they were said perhaps should have given

some indication that Elizabeth truly was giving herself over to the nation, a
efforts, their talents, their insights, their enthusiasm and their inspiration to work together.” fact that has been borne out in the 70 years that have followed. “I declare before you all that my whole life, whether it be long or short, shall be devoted to your service and the service of our great imperial family to which we all belong.” Struggles Taking strength from all around her, the Queen has never professed to have all the answers. “I know of no single formula for success. But over the years I have observed that some attributes of leadership are universal and are often about finding ways of encouraging people to combine their
Family Bringing the royals back to a status where people can empathise and share in the joys and pain of the family unit, is something Elizabeth has excelled in. “Like all best families, we have our share of eccentricities, of impetuous and wayward youngsters and of family disagreements.” Contrition Finally, the Queen has not only had to reference and apologise for events that occurred long before she was born. “To all those who have suffered as a consequence of our troubled past I extend my sincere thoughts and deep sympathy. With the benefit of historical hindsight we can all see things which we would wish had been done differently or not at all.”

Diverse Abilities celebrates one year of STARs This week, Diverse Abilities celebrates one year of its STARs service, supporting SEN siblings with play sessions, advice, support, and most importantly gives them the chance to just be kids. Due to a gap in provision for siblings, Diverse Abilities launched STARs in 2021 following the mental health impact of the pandemic to help the Supportive, Thoughtful, And Resilient children and young people. Over the last year, STARs has delivered 640 hours of support to 19 children. They have enjoyed a range of sessions including arts and crafts, cooking, trips to the cinema, mini golf and playing at the park, all with a chance to develop essential life and social skills. The children have also enjoyed day trips including Chessington World of Adventures, Adventure Pirate, and Insanity Gaming Arcade. The children supported, all aged between eight and 16, have said: “Coming to STARs help me with my confidence.” “It gives me time away from my sister and is something I can do on my own.” “I get to make new friends who understand me.” Matilda, one of the children who attends STARs, was anxious to begin with, but the team were able to ease this anxiety and had regular chats to make her feel more comfortable on arrival and explain that it was great to have her as part of the group 8
and important for her to attend, even if it was difficult. She commented: “I will keep coming because I like it here, it’s my time to be listened to, STARs is safe, fun and friendly.” Matilda’s Mum added: “I am really relieved that there was finally a special place for siblings, I have been looking for years. It’s life-changing for Matilda. She has a lovely bond with some of the adults and the support she needed was there for her. School commented that she would practically bounce into school the morning after her STARs session. For the first time, Matilda had something special to be part of, where her thoughts and feelings where recognised and supported.”
Visit diverseabilities.org.uk/stars for more details about STARs, and how Diverse Abilities support the whole family.

Cloudy2Clear, A Local Service With A Smile. Established for over 16 years, Cloudy2Clear windows have become the UK’s leading company for domestic glass replacement. Customers are no longer needing to risk their windows by using the dreaded double glazing cowboy down the road, instead, now they can join over 320,000 happy customers and have their glass replaced in an affordable and ethical manner. Remember, a failed glass unit may no longer provide you with the protection you need or be energy efficient. Why not spend a few minutes checking your home to see if you have any failed double glazing? If you act now you can avoid any future costly problems. When talking to the Manager of Cloudy2Clear windows Justin Friel it became clear that these values have been held dear for a
number of years. Since starting the business some years ago Cloudy2Clear have remained true to their core values of supporting the local community by providing a service that saves the public money.
All C2C employees operate a strict social distancing policy.
The Cloudy2Clear service only requires the glass to be replaced and not the whole window once the unit has failed. Justin commented “Cloudy2Clear were able to assist our community through the last financial crisis in 2008 due to the savings that can be made in using our service. Unfortunately we might be going through something similar again soon and the public can rest assured that we will be there to help once again”. The Mention of Reinvention Daniel Radcliffe’s ability to embrace new projects across multiple mediums is no less admirable than his willingness to reference the past, and a certain wizard who just won’t go away. Change and reinvention for Daniel Radcliffe has never been in doubt. Of course, the 32-year-old, to some, will always be Harry Potter, no matter how much the genre changes or the boyish good looks lessen. “I learned a long time ago you can’t keep going back to the well,” he admits. “Harry Potter was great but, you know, I was a kid, and I’m definitely not that kid now. “Of course I will always be grateful, and I know to a certain generation they would love me to stay that character forever, but for my own sanity I had to reinvent as far away from that
as I could, and I feel I have done that. “And besides, what film does is immortalises people in that moment… so I will always be there, in one sense.” Since the final Potter film screened in 2011, Radcliffe has extended his range with a series of daring performances in horror films (The Woman in Black and Victor Frankenstein), dramas (Kill Your Darlings and The Gamechangers), and edgy comedies (Horns and Swiss Army Man). He’s also made a name for himself on stage in Equus (famously appearing naked), How to Succeed in Business Without Really Trying, and Broadway play Privacy. “I don’t have any strategy other than to choose projects that make me happy and satisfy me creatively. “It starts with the script, but I’m also anxious to work with actors and directors I admire, and who are going to help me grow as an individual and evolve in my profession.” For a while, it
12
seemed as though Radcliffe, who is in a long-term relationship with actress Erin Darke, was going to head the way of emotive, intellectual independent movies. After all, that would match the headspace he occupied as a kid growing up writing and poetry – two things he loves. “I think my love of words comes from having grown up surrounded by books, scripts, and plays. My father was an agent whose clients were writers and directors and there were always stacks of books lying around the house. “I didn’t read that much when I was a child but suddenly around the age of 14, I began to devour everything, especially books on history. I still read a lot although now it’s mainly nonfiction. Reading and writing are great passions of mine and I think that has helped me in terms of choosing scripts. “Ultimately, whatever it is – TV, film, stage – I know what makes me tick and I look forward to the next job, and making the best of that experience.”

Jennie Bond A portrait of the Queen, by revered royal correspondent, Jennie Bond. Jennie Bond worked as Royal Correspondent for the BBC throughout the Nineties, covering some of the happiest, most tragic and scandalous moments that have befallen the family in recent times. “At the heart of it, I am fan of royalty and a fan of the family unit,” she says. “The trials that the Royal Family have been through are really no different to our own, and that should reassure them as well as us. They are human beings, and fate doesn’t shine brighter on them, because the everyday gains and losses that are just part of being alive. “Ultimately, it is how you come back from the challenges that really matters – and the Queen has, over the past seven decades, truly shown herself to be the most resilient person possible.” Bond is certainly relieved our Head of State has styled and
16
positioned herself with such a brand of quiet authority. “You could arguably look at almost everyone around the Queen and pick out faults and failings,” she says. “We’ve seen so many in recent years, to the extent we don’t need to name the culprits or the dealings. “Yet when you shine that light on the Queen it’s really difficult, at any point, to say, ‘you got that wrong’, or ‘this could have been done better’. “I think with Elizabeth we tend to take that for granted – we tend to just accept she is like that without contemplating what sort of royal landscape we would have with someone less capable at the helm.” As far as privacy goes, the
Queen values it, but respects the need to be visible and approachable. “Elizabeth is funny, charismatic, sharp as anything, but I think worn down at times by the sheer weight of what it is she has to do. It’s no easy task for someone in their nineties and no amount of wealth or privilege will compensate for what is an incredible commitment to her people,” says Bond. “I have had the honour of covering a lot of royal moments of great importance… moments in history I suppose – Princess Diana’s death, the Queen Mother’s death, the divorce of Charles and Diana. All those were very important moments I had to report on. But honestly, I think the jubilee celebrations and the pomp and pageantry is the most important. I know it signifies a simple anniversary – just a date in the calendar – but more than that it’s a way of looking back over the continued efforts of someone so brave and inspiring, and is the perfect way to say ‘thank you’ to a very special lady.”

Take a walk on the wild side in Dorset: 30 Days Wild, the UK’s biggest nature challenge, is back! Dorset Wildlife Trust is inviting everyone to take part in the UK’s biggest nature challenge which kicks off on 1 June 2022 with the Big Wild Breakfast, the first of the ‘random acts of wildness’ designed to bring people across Dorset closer to nature every day in June. Across Dorset, there are so many opportunities to connect with nature from the beautiful Jurassic coast to chalk streams, forests, heaths and meadows. To mark the 30 Days Wild Weekend on Saturday 18 June, there will be a series of events at Dorset Wildlife Trust visitor centres including the opportunity to explore moths at the Kingcombe Visitor Centre or take part in the Brownsea Island early bird walk and breakfast. Find out more here Events | Dorset Wildlife Trust Last year a record 760,000 people took part in 30 Days Wild which is for people of all ages and from all backgrounds. From mums, dads and kids to schools and care homes, participants come from all walks of life. Last year supporters across the UK completed over 16 million acts of wildness; the most popular activities were wildlife-watching, eating outdoors, planting wildflower seeds and listening to birdsong. A survey of 2021 participants revealed that the pandemic positively affected their appreciation of the natural world, and that by connecting with nature, people were inspired to take action for the world around them: 18
• 78% of participants said the pandemic made them value nature more. • 88% said they were very likely to make their garden more wildlife-friendly after participating in 30 Days Wild, or had already done so. • 74% said they had either already taken action to reduce their carbon footprint or were very likely to after taking part in 30 Days Wild. Brian Bleese, Chief executive of Dorset Wildlife Trust, says: “30 Days Wild is a great opportunity to take a little time to do one ‘wild’ thing every day throughout June – whether it’s listening to birdsong, seeing a butterfly, walking on the beach, going to one of our 40 nature reserves and 4 visitor centres across the county or watching our barn owl webcam at Lorton Meadows from the comfort of your own home. The annual nature challenge not only connects you with nature but the research tells us that keeping it wild will actually make you happier and healthier too.” Sign up for 30 Days Wild at: wildlifetrusts.org/30dayswild By Hazel Ormrod, Marketing Projects Officer

MOT Madness The three simple fixes you can do at home to give your car its best chance of making it through the MOT, first time. 1. TYRES Tyres are often the most neglected element of our automotive upkeep – but the difference between decent treads and uncared-for tyres could be a matter of life and death. One of the foremost indicators that your tyre is ready to be changed is when it loses its tread depth. Maintaining this is important because loss of depth reduces grip and traction on the roads, and eventually compromises safety while driving. Keeping a tab on the tread wear indicator, which is built into the tyre, is a good way to measure the tread depth. Also be wary of cracks appearing on the sidewall as the oils and chemicals in the rubber compound degrade. Over time, the rubber loses its tightness and splits begin to appear. At worst, this could result in a blowout, which is a
20
highly dangerous scenario. Finally check for lumps of rubber separated from the tyre. These generally occur when wheels bump kerbs. A small tear is driveable, but anything bigger, particularly when the gauze is visible underneath, means an immediate change is required. The good news for those requiring new tyres is that there are a range of tyre price comparison websites, including mobile tyre-fitting services where your car needs to not even leave the driveway. 2. WIPERS AND JETS When you think about it, your wiper blades go through quite a bit. There’s rain, snow, mud, grit, not to mention full-on, head-on wind resistance, and a whole lot more besides. For basic maintenance, you should clean off your wiper blades every couple of months. Removing residual dirt will keep the rubber in better shape for longer, eliminating the need for regular replacement. If the wiper blade does need to be changed,
most automotive centres will do this for you and at no extra cost. Keep a check as well on blocked washer jets. These can be cleaned out by delving under the bonnet, releasing the supply pipe and washing through. If access is tricky, you may be able to move any organic matter stuck in the pipe by removing the jets and soaking them in a bowl of vinegar. 3. LIGHTS Where headlamps and brake lights are concerned, these are another easy check and easy fix scenario, and will offer you perhaps the biggest saving of all. Bulbs can be purchased online for a fraction of the cost that might be charged at the MOT centre, and in most cases the light unit can be taken apart and the new lamp installed. In bigger vehicles you may find the unit less accessible, although online tutorials are always available to guide amateur mechanics through the task!

Wild Child Four really wild adventures your kids will love this summer. 1. Camp with the animals If your kids are animal lovers, they will relish the opportunity to sleep in close proximity to lions and giraffes (albeit not too close). Having realised that patrons simply can’t get enough of the mighty beasts, several zoos in the UK now offer overnight packages, which generally include access to attractions outside opening hours, and plenty of opportunities to get up close and personal with the park’s residents. Zoos leading the way with this initiative include Port Lympne (Kent), Longleat (Wiltshire), Yorkshire Wildlife Park, London Zoo, Wild Place (Bristol), Camp Baboon (Bristol) and Whipsnade (Bedfordshire). 2. Learn bushcraft What if you could send your little ones on a holiday that could teach as well as entertain? Well that’s exactly what a bushcraft course can offer. Camp Wilderness is one of many companies that offer summer camps all over the
UK, where your tiny tearaways can master everything from fire lighting and wilderness camping, to archery.
elements we should be passionate about reinforcing in the minds of our young ones. There is a real fear nowadays that the conveniences of everyday life have seen human beings lose some of their primal survival instincts, and this is no more prevalent than in our kids. That makes getting it back more important than ever. 3. Push their limits For miniature thrill seekers, it has to be an adventure holiday. Offering any number of outdoor activities – including rock climbing, abseiling, canoeing and circus skills – these experiences boost confidence and offer a unique bonding experience where your child may make friends for life. Activities also enhance teambuilding skills, social interaction and the feeling of having problem-solved – all
22
Go to PGL.co.uk for a comprehensive list of adventures. 4. Get on your bikes For a family holiday that will leave you all considerably fitter whilst potentially checking out some of the most stunning locations in the British Isles, consider a cycling trip. Saddle Skedaddle have a wealth of wonderful options which accommodate both the inexperienced and the Tour de France wannabes, along with guided and self-guided tours. They also cover Europe as well as the UK, so you can explore new horizons while pushing the pedals. For kids, there’s the exhilaration of being out and about, with wind whistling through their hair. For adults, the sight of an approaching pub can arrest even the most severe saddle sore discomfort!

The Queen’s Jubilee: Platinum Pomp The work that goes on behind the scenes to mark Jubilee celebrations. Soldiers, horses and musicians It all starts to come to fruition on the Thursday, as Trooping the Colour marks the Queen’s birthday celebrations. Over 1,400 parading soldiers, 200 horses and 400 musicians will come together in the traditional Parade. This is the first Jubilee celebration in which women will be included in the regiment, so additional preparations have been made to ensure the influx of first-time participants. RAF fly-past The traditional RAF fly-past completes the parade. The routine will have been practised countless times, though contrary to popular belief, this isn’t just a privilege reserved for the Queen. In the lead-up to the event, local communities have been invited to apply for their own fly-pasts. Jubilee beacons A fortnight before the Jubilee, 1,500 Platinum Jubilee beacons will have been distributed across the UK. This lighting
of beacons first took place in 1897 to mark Queen Victoria’s Diamond Jubilee and are a symbol of unity across towns, borders, countries and continents. St Paul’s Cathedral On Friday, June 3rd, attention switches to the Thanksgiving service at St Paul’s Cathedral. Public safety elements come to the fore here, with tens of thousands of well-wishers lining the streets around the Thames as the Queen and family members attend. The Derby A day of leisure follows on the Saturday as the Queen visits The Derby at Epsom Downs. The event itself is over 240 years old and has garnered a different winner every year, and is open only to three-year-old thoroughbred colts and fillies who have qualified for the race in the months preceding it. It remains the race that offers the biggest prize pot in the British racing – over £1.1million. 10,000 charitable tickets In the evening, Elizabeth returns to London for a party at Buckingham Palace. In
24
the months leading up to the event, which features music and drama celebrating some of the most significant cultural moments from The Queen’s seven-decade, over 10,000 tickets have been made available to charitable organisations. This has been two years in the planning. Street celebrations Finally, on Sunday, June 5th, communities across the UK are invited play out their own Platinum Jubilee street celebrations. Named The Big Lunch and launched in 2009, communities have been planning for months how they wish to mark the special day, with up over 1,500 applications made. 200 silk scarfs At the same time, the Platinum Jubilee Pageant sees artistic performers, dancers, musicians, military personnel, key workers and volunteers tell the story of the Queen’s 70-year reign. It includes a ‘River of Hope’ section comprised of 200 silk flags made by primary and secondary school children.

A Tech Generation How our tech habits have changed in the past 25 years. 1. Floppy discs They had a silly name which, for the most part, was factually incorrect. Okay, so the disc inside was floppy, but each one came with a rigid plastic case which was anything but versatile. It’s astounding to think the standard floppy disc available in the Nineties held less than 1.5MB of data. 2. Dial-up internet Many of us who remember the wheezing, whirring, distortionlaced churning of the dial-up connection sound now recall it with an element of nostalgia. Internet connectivity these days is instant, and silent, but in the Nineties the process of stepping out onto the information superhighway was one in which your computer pulled you along every step of the way… and in many cases required more than one attempt to complete that sequence of screeches and squeaks so that you could finally get online. 3. Fax machines It seemed the most brilliant
26
invention, whereby you could effectively teleport a document to someone in another location, using what amounted to a scanner and a modem. Fax machines certainly served a purpose, though many more efficient ways were developed past the Millennium, all of them digital, meaning no more clunky machines, and definitely no glossy fax paper that rapidly faded a lot of the information you were exchanging. 4. Clippy Clippy was the paperclip help tool – AKA an ‘intelligent user interface’ – that Microsoft added to Office as an interactive assistant who could guide people through tasks. Useful in theory, Clippy would ultimately begin to grate on users whose desire to perform simple, straightforward jobs was spoiled by this animated character lingering over a shoulder ready to pipe up with something like, ‘It looks like you’re writing a letter, would you like some
help?’ No, Clippy, we wouldn’t! 5. PDAs A Personal Desk Assistant was the first handheld digital device that offered users real organisation on the move. Pocket computers were certainly en vogue in the Nineties as the follow-on from the Filofax, and the later models housed the likes of digital cameras and MP3 music playback. In the end, it all sounded a little too similar to the raft of impressive smartphones hitting the market, and the PDA had had its day. 6. Pagers A one-way communication device that would nudge you when someone needed to get hold of you. The technology held on through usage in the emergency services but never gained mass-market appeal, once mobile phones emerged with the ability to actually respond to an incoming message!

Money on my mind... the Martin Lewis column He’s the UK’s leading money saving expert - a journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers. In this month’s column, Martin Lewis looks at haggling, and discusses whether it’s a dying art into which we need to breathe new life. We have a real aversion to haggling in this country – in fact, I would say we are some of the world’s worst hagglers. We’ve lost the bravado and confidence we once had to cut a deal, yet if you master haggling, and it is an artform, it’s fun and actually adds a layer of enjoyment to the process of buying and selling. Most people encounter haggling when it comes to their utilities and other service providers, and in simple terms, if you don’t haggle when it comes to renewing your broadband or TV package or mobile contract or car insurance or whatever it is, you are simply costing yourself money that could translate to a meal, or a deposit for a car, or a holiday. The first part of haggling where utilities are concerned is to get on price comparison sites in order to get a benchmark of what is available elsewhere, because that’s your target. Usually these best offers will be
30
in the form of ‘new customer’ initiatives, though as an existing customer who has already paid into the pot, why the hell should you not be qualifying for the same deals. At the end of the day, a lot of haggling comes down to being honest, forceful and confident, but also charming and friendly. Explain your budget, explain the better deal being offered by another provider, or by your own provider to new customers, and make it clear you will leave unless something changes. Of course, many of us know
those best deals come when, as an existing customer, you get put through to disconnections – it’s the point at which your provider is really just one step away from losing you for good, and it is those customer service agents who have the ability to get you a much better price. Ultimately, it is your negotiation here that will count, but if you don’t get the deal you think you deserve, my advice is to walk away. If you can negotiate a new deal, don’t get caught on a long agreement, and do remember to phone back to renegotiate again when any promotional period ends. Mostly, be charming, friendly and forceful, and enjoy the process of haggling!

The Queen in Decades
Buckingham Palace announced recently that it was already beginning plans for Queen Elizabeth II’s 100th birthday, even though she is still over four years from that milestone.
Even now, at 95, Elizabeth still undertakes her seemingly endless list of public and private duties with consummate ease, and to begin the long process of
preparations in the lead-up to her century milestone in 2026, we have compiled a collection of images of the Queen on every decade of her life.

A Design for Life… The Kevin McCloud Column Designer, writer and television presenter, Kevin McCloud leapt into our consciousness with his vastly successful Grand Designs show on Channel 4. This month, the affable architectural business owner talks about the very first and most basic element of any project, communication. I take it as a huge compliment when I see the Grand Designs format taken to foreign shores. In particular, our Grand Designs Abroad project, which is going back well over 15 years now, saw us working with ambitious homeowners in France, Italy and Spain in undertaking ventures to make their design dreams come true. What dawned on me is the fact that anything is possible when you are able to communicate a concept… clearly, concisely, properly. In reality, that’s no more difficult to do in a foreign language than it is in English. After all, how often do we see home improvement shows here in the UK where the concept of what someone wants ends up a million miles from what they get?! It all comes down to interaction and being clear as far as what
34
we want and what we don’t want. I do believe in rural areas it’s a bit easier to harvest contacts and make a difference,
but wherever you are, city or countryside, the Loire Valley or London, ultimately what makes a difference is working on and solidifying personal relations. It’s about sitting down, being firm but polite, offering incentives and trying to get others investing in your project. Above all else, it’s about communicating. And that communication doesn’t end when you’ve had your house extension done; it should carry on over time. When we returned to France to catch up with some of our couples, it was great to see so
many of them fully integrated into their communities. Their contribution wasn’t just about adding to the local economy but learning the language and forming genuine friendships so that they could be really engaged with becoming part of that place. After all, a home is an entity not just in the context of what’s inside it, but what’s around it as well, and that’s always worth bearing in mind. People buy into people, and it’s amazing the extra lengths all of us will go to when we like, trust and believe in the people who come to us for help and support. So as I said at the start, communication is the first step… and sometimes the biggest one you’ll make, as well, so get it right!

The Positive Environment Cutting through the negativity to celebrate the successes of green and eco measures that are being played out across the globe. Virtual conferences are the future A devastating statistic emerged last year which showed the global conference industry produced as much greenhouse gas emissions each year – in the process of attendees travelling to and from it – as the entirety of the United States. Covid has made our acceptance of virtual conferences straightforward, as well as providing a cheaper and more convenient alternative; and the positive environmental impact is understandably huge. That means online-only and hybrid events could majorly benefit the planet. Indeed, according to the 2021 IPCC report, we have around nine years before the planet exceeds the 1.5°C global warming limit; yet moving conferences online could extend that deadline by around 18 months. UN Plastic Pollution Treaty It’s been hailed the most significant environmental deal since the Paris accord, but this spring, the United Nations Environment Agency announced a plan to create the first Global Plastic Pollution Treaty. Never before has a legally binding pact brought together all four corners of the globe in a shared eco revolution designed to tackle the scourge of plastic; and while the plan
36
isn’t expected to be finalised until 2024, the ripple effect on businesses, economies and, ultimately, planet Earth, is expected to be huge. A Cannon for Coal Mike CannonBrookes, the third richest person in Australia, is bucking the trend of billionaires putting profits over the planet, by attempting to buy up three of the country’s coal power plants. His plan is severe but original – his first move will be to shut them all, albeit he’ll replace each with a renewable energy enterprise. His efforts come in the wake of what he declared “painfully slow progress” from Australia’s government in following through with its own moral obligation to make a green difference. “If they’re not going to do it, I will,” he said. Tahiti reef Marine researchers were thrilled recently when they discovered one of the largest coral reefs ever found, off the
coast of Tahiti. The expanse appears completely unaffected by human activity and offers hope that further reefs will be discovered in that part of the Pacific Ocean. While coral reefs occupy less than one thousandth of the ocean floor, they are home to over a quarter of all marine life, meaning celebrating the discovery of new reefs is as important as protecting existing stretches. Banana biomass Finally, recent research has shown blasting banana skins with a powerful lamp can produce renewable energy. The good news is it’s not just the bendy fruit the technique works with – it can also be applied to corn cobs, coffee beans and coconut shells.

Sabrine Ghayour’s Saffron & Lemon Chicken Joojeh Kabab Introduction I became the family cook at 11 years old, because my mum and grandmother couldn’t cook for toffee! My food style now is best summed up as ‘lazy’. I work stupid hours, but I always like to eat simple dishes that aren’t labour intensive. I love whacking things together and coming up with interesting food – the less you treat good ingredients, the more natural they taste. I’m all about need and speed, and a lot of my recipes are born out of me just chucking stuff together. That’s really how I learned to cook, and my Saffron & Lemon Chicken Joojeh Kabab is perhaps one of the best examples of this I can give. This probably features on the menu of every Persian restaurant in the world, and for me what really makes it special is the way in which the chicken is marinated in yogurt and lemon juice, which breaks down the fibres and tenderises the meat beautifully. The addition of saffron and onions creates the signature flavour that makes this a muchloved dish. This is my simplified version of the recipe, which can be made at home in a conventional oven if, like me, you don’t have a barbecue or flame grill.
Ingredients (serves 4) • Four onions, cut in half and thinly sliced into half moons • The juice of five lemons • 4tbsp olive oil • 1tsp ground turmeric • 400g (14oz) Greek yogurt • 3tbsp crushed sea salt • A generous pinch of saffron threads • 3tbsp boiling water • Six large boneless, skinless chicken breasts, cut into 5cm (2in) pieces
Method 1. Put the onions, lemon juice, olive oil, turmeric, yogurt and sea salt into a large mixing bowl and mix well. Using a pestle and mortar, grind the saffron to a powder, then pour over the boiling water and leave to infuse for 5–10 minutes. 2. Add the chicken to the mixing bowl. Mix well to evenly coat the chicken pieces in the yogurt, then add the saffron water to the bowl and mix thoroughly. 3. Cover the bowl with clingfilm and leave the chicken in the refrigerator to marinate for a minimum of an hour or preferably overnight. Once the
38
chicken has been marinated, preheat the oven or grill to the highest setting possible. Line a large baking sheet with nonstick baking paper. 4. Remove each piece of chicken from the marinade using a slotted spoon. Lay out all the pieces of chicken on the prepared baking sheet and bake or grill for 18–20 minutes maximum, or until the pieces have slightly charred edges but remain beautifully moist on the insides. Serve with flour tortilla wraps or basmati rice with a little salad and some yogurt.

Far-flung Fiction This month, a smorgasbord of titles to transport you to wherever your imagination desires. Before Take-off by Adi Alsaid Two teens, James and Michelle, meet and fall in love during a layover-gone-wrong at the Atlanta airport, intrigued by a mysterious flashing green light, which turns out to be a button. Michelle presses it, kicking off a chain of strange and seemingly impossible events, from snowstorms inside B terminal to jungles sprouting up in C terminal, as earthquakes split the ground apart in between. The duo must team up to find their families and escape before it’s too late. Published by Knopf Books on June 7th My Name is Jason. Mine too by Jason Reynolds and Jason Griffin A poet and an artist, Jason Reynolds and Jason Griffin have always pursued a single unity and journey on the way to making their dreams come true. Willing to have a life not un-hard, so long as it wasn’t unhappy, willing to let New York swallow them whole, so long as it gave them their chance, this is the story of how they have gained global recognition through art and creativity.

From lighthearted recollections to deeply thoughtout concepts – “what if painting was a sin, and the poetry became taboo, and no one ever clapped for me again; my question is, would you?” – this is a glowing tribute. Published by Simon and Schuster on June 28th Old Rage by Sheila Hancock At one point, Sheila Hancock looked like she was managing and even thriving in old age, yet shocking diagnoses, Brexit and bereavement seemed to knock her from every quarter. And that was before lockdown. Home alone, classified as ‘extremely vulnerable’, she finds herself
yelling at the TV and talking to the pigeons. Yet in Old Rage, Hancock can at least take a good long look at life - her work and family, her beliefs (many of them the legacy of her wartime childhood) and, uncomfortable as it might be to face, her future. Museum celebrates 70 years of fun and festivities in Dorset The new exhibition at the Museum of East Dorset celebrates seven decades of fun and festivities in the local area. Inspired by Queen Elizabeth’s Platinum Jubilee year, the exhibition examines how local people have observed important local and national events since 1952. The exhibition, opening 4 April, will run until March next year. Celebrating local events Members of the community were invited to contribute to the exhibition by sharing stories, reminiscences, photographs and memorabilia. Celebrations include the Queen’s coronation and jubilees, local carnivals held at Wimborne and Verwood, ‘The Magpies’ (Wimborne Town FC) historic win in the FA Vase final in 1992, and how we marked the millennium. East Dorset towns and villages including Wimborne, Verwood, Witchampton and Shapwick have contributed photographs and artefacts. During 2022, the museum will celebrate other special events including 400 years of Dorset button making and the museum’s 60th birthday. The celebratory theme will be carried through to different parts of the museum, including the garden, the shop and the Tea Room. The museum’s Little Explorers activities over the
summer will include various themed events. Celebrating people Community organisations were invited to create celebratory pennants to represent their groups. These pennants will be displayed in the new exhibition after Easter. The museum has launched a ‘Celebrating Ourselves’ portrait competition inviting local school children to become a part of history and also feature in the exhibition. Children have been asked to create a portrait of themselves as their ‘best selves’ be they artists, scientists or Youtubers. There will be a winner from each age group (KS1, KS2, KS3 and KS4) and portraits will be displayed in May. Celebrating nature Children will also be able to celebrate nature in the museum’s garden by creating ‘Andy Goldsworthy’ inspired pieces of art from a range of natural materials provided. They will be able to take pictures of their art and post them on social media. Chezzie Hollow, Museum Director, said: “This exhibition is very much inspired by, and created with, the local community. For the first time, visitors will be able to ‘experience’ different exhibition elements across the whole site as well as in the exhibition gallery. Interactive elements encourage people to share their own favourite celebration memories, try different scents to discover what a celebration smells like to them, and enjoy party hits from the past 70 years. The exhibition is family friendly and is a fantastic opportunity for all ages to experience the museum in a new way”. The World According to Pharrell The mind, the mess and the spiritual mass of Pharrell Williams. When Pharrell Williams – musician, artist, collaborator, universalist – is good, he is very good. The Neptunes and N*E*R*D*; his infectious, smashed-out-of-the-park hit Happy, for Despicable Me 2; his numerous works with Calvin Harris, Kanye West, Jay-Z, Snoop Dogg, Nicki Minaj, Rhianna and so on. The list of peers bending over backwards to work with the perfectly poised producer is seemingly endless. One could forgive him if he was a little over the top or blasé about his work and achievements… yet he is anything but. He may show a bravado and alpha-male instinct in music videos, but Pharrell is perfectly down to earth for a man used to churning out such hits as Beautiful and Frontin’.
“I am not blind to the fact that I have been granted a gift,” he says. “However, that’s not all it takes. I’ve still had to work very hard, and you don’t achieve much without focus and discipline.” Pharrell is in many ways ageless, and belies the fact he’s only a year away from his half-century. In his music, his connectivity is to multiple generations and an entire cross-section of recognised demographics. “I never cut corners,” he continues, “but I also don’t do things the way many other people might – I know what works for me, and I always do what I feel comfortable with and what will get the result that I want.” It is hard to compartmentalise Williams - he sees himself as a universalist, both in a religious and holistic sense. “We are too smart these days to pigeon-hole ourselves into one way of thinking,” Pharrell admits. “There is nothing in life you think of in the same way as a 10-year-old that you would do as an 80-year-old; even love feels different and means different things to you as you get
48
older. So I want to stay open to new ideas, new perceptions. It’s really important to me.” In recent years Williams’ producer duties have quietened in exchange for rather more philanthropic projects, including the building of a £35million after-school centre in his hometown of Virginia Beach. The artist has also launched a tech-fused music curriculum through US foundation Verizon, with the aim of providing free technology and internet access to under-resourced middle schools. “I was lucky to have so much stimulation when I was young, and that’s where all this creative energy came from,” he says. “We should always be giving, because we are the ones that people aspire to be like. “And believing in being successful is like believing in God. It’s all there if you want it – you’ve just got to decide how much you want to put in… and how much you want to get out!”

Greenfingers… the Alan Titchmarsh column He’s a brilliant presenter, accomplished gardener, talented novelist and all-round horticultural inspiration. This month, Alan Titchmarsh talks about immersing ourselves in the great outdoors this summer.
back that the person isn’t into nature, or doesn’t know where to start when it comes to pruning or trimming.
Get out! Get out! Get out! Yes, you – I’m telling you to get up, put your shoes on, open the door and immerse yourself in what a wonderful country and wonderful landscape this is. Even after my 70-plus years here, I am proud and passionate and loyal to the UK, and I could never live anywhere else; and while those emotions hold firm all year round, in my mind there is never a better time to soak up the majesty of nature than now, with the sun out, the days growing longer, and nature unequivocally at her most resplendent. When I suggest getting outdoors in this way – and I suggest it a lot! – on some occasions I get the answer
In reality, it doesn’t matter. Of course I want our gardens to be at their most beautiful as regularly as they can, but these spaces are as much about what they give us, as they are what we give them. So while our own lawns and beds and trellises are often a priority, in these early days of summer I would encourage you to take the opportunity to sample those of others… in the wild, at a country house, even at a neighbour’s. They say imitation is the sincerest form of flattery, so get out there, get imitating, and get inspired. And by the way, take your kids… every time. Get them off their consoles, prise them away from social media – it’s really good for
50
them to see this whole other side of things. It’s funny, the three big things government are always ranting on about are law and order, health, and education. That’s fair enough. And yet, time outdoors, time gardening, gives us all of them. If you’re letting off steam, you’re less likely to use your anger in a place where it wouldn’t be suitable. If you’re out there, you’re learning about how things grow, so that’s the education element. And the health part is obvious fresh air, exercise, open spaces gardens, parks, woodland, moorland. I know it sounds terribly tribe, but I do think if some of these world leaders just went out and pottered about in their garden for an hour every Saturday letting off steam, the world just might be a better place! So, please… get out!

STAR GAZING WRITTEN BY KATE EARL
kateearlastro@gmail.com
Welcome to the June Stargazing Page. Highlights this month include a Planetary Parade and the hunt for noctilucent clouds. International Space Station
The ISS can only be seen on the 29th and 30th this month, very early in the morning. To establish exact timings please refer to www.heavens-above.com or a similar webpage for up-to-date information, remembering to set the location to your observing area.
Jupiter & Saturn
Both gas giants are visible in the morning. Saturn rises first around 12.30am. Jupiter is visible to its lower left, rising around 1.30am.
Planetary Parade
Late in June there is a rare opportunity for those of you with modest-sized telescopes to potentially see a ‘Planetary Parade’ (with the added bonus of the Moon and Pluto!), as around the 26th, with the help of sky maps freely available in magazines or the internet, it is possible to locate all well-known objects in the Solar System around 3.30am (see figure). Be mindful that dawn advances quickly at this time of year, so ensure you know the time of sunrise in your area and never look directly at the Sun with the naked eye or optical aids. For those of you without telescopes, Venus, Mars, Jupiter and Saturn will be visible in a line all month in our early morning skies.
Moon
June’s full moon occurs on the 14th.
Events
Midsummer, or the Summer Solstice (from the Latin for ‘the sun stands still’) occurs on June 21st. For the northern hemisphere, it marks the day when the Sun reaches its highest point in the sky at noon (GMT). We experience this as the ‘longest day’ of the year (the longest amount of daylight and the shortest night). The early summer months are the best time to try and spot a rare and beautiful cloud-type: noctilucent clouds. If conditions are favourable, these blue-white illuminated clouds are visible thirty minutes after sunset for a couple of hours, in our northern skies. Although the exact cause of their formation is unknown, we know they are composed of tiny water ice crystals and form about 80km up in the atmosphere. Although June itself isn’t well-known for any major meteor showers, in 2014 the UN officially named June 30th as Asteroid Day. This day was chosen as it marks the anniversary of the Tunguska Event that took place in Siberia in 1908. Asteroid Day aims to raise awareness about asteroids, and if you want to find out more head to the official webpage at asteroidday.org.

In
58
the months leading up to the event, which features music and drama celebrating some of the most significant cultural moments from The Queen’s seven-decade, over 10,000 tickets have been made available to charitable organisations.

Paul Hollywood’s Authentic Cornish Pasty Introduction A Cornish pasty is one of those things we almost always buy, yet in baking terms the concept is really very simple. After all, this was a homebaking staple for the tin miners of Cornwall, with its thick crust ready to be disposed of, so ensuring dirty hands wouldn’t contaminate the meat. Delicious, wholesome, and able to be added to vegetables or salad to form a main meal, the pasty really is one of my favourites.
Ingredients (serves 5) For the pastry • 450g plain flour • salt • 115g cold lard, diced • 75g cold unsalted butter, diced • About 90ml ice-cold water • 1 egg, lightly beaten, to glaze For the filling • 1 large onion • 120g swede • 1 large floury potato, such as King Edward or Maris Piper • 400g beef skirt • 50g butter • Salt and pepper to season
Method
1. To make the pastry, mix the flour and salt in a large bowl, add the lard and butter and rub in with your fingertips until the mixture resembles breadcrumbs. Stir in enough
60
water to make a fairly firm dough, then knead briefly until smooth. Shape into a ball, wrap in cling film and chill for at least 30 minutes. 2. Now move on to the filling, slicing the onion finely to start. Cut the swede and potato into small, thin strips; keep each separate. Cut the beef into small, thin pieces and divide into five portions. 3. Heat the oven to 200°C/Gas mark 6. Divide the pastry into five equal pieces. Roll each out on a lightly floured surface to a 3mm thickness and cut out a 24cm circle, using a plate as a guide. 4. Scatter a scant layer of swede on the pastry semicircle, leaving a 1cm border. Add a similar layer of potato, season lightly and top with
some onion. Repeat the swede and potato layers, seasoning as you go. Check the pasty will close, then add the beef. Add a final layer of onion, season and dot with butter. 5. Brush the pastry border with a little beaten egg, then close the lid of the pasty, making sure that the edges meet. Press together firmly and then crimp the edges together by pinching all the way round between your thumb and forefinger. 6. Fill and seal the remaining circles of pastry in the same way. Place the pasties on two baking trays and cut two small slits in the middle of each one. Brush the pastry with beaten egg. Bake for 20 minutes, then lower the oven setting to 160°C/Gas mark 3 and bake for 30 minutes longer.
