Forest Holme mark 25th anniversary with Secret Garden Party at Upton Country Park Forest Holme Hospice has announced details of the biggest ball in the charity’s history to mark its 25th Anniversary this year. The Secret Garden Party will be taking place during Hospice Awareness Month in the beautiful surroundings of the Walled Garden at Upton Country Park on Saturday 8th June. Tickets for this very special event will include a Welcome Drink, delicious 3-course meal, with 1/2 bottle of wine, plus entertainment from Chic and Nile Rogers tribute band Le Freak. Forest Holme Hospice opened its doors in 1994 and since then has provided individually tailored quality care and support to around 1,000 adults each year across Poole, Wimborne and the Isle of Purbeck, with advanced cancer and other life-limiting illnesses such as Motor Neurone Disease, Parkinson’s, heart disease and respiratory illness.
Paul Tucker, Fundraising Manager at Forest Holme, said, “2019 marks 25 years since Friends of Forest Holme - as it was known then - was set up to raise funds for the new specialist palliative care unit. “Since then, donations from supporters have helped the hospice to care for around 20,000 adults and their families and the charity has grown to meet the increasing demand for the hospice services. “Due to it being a special year we wanted to put on a unique event to not only mark the anniversary but also to vital funds so that we can continue to be here for future patients and their families during the most difficult time of their lives.” Tickets are £85 per person (£850 for a table of 10) and can be purchased from the fundraising office or over the phone – 01202 670644. Mayors Mark Launch of Not-for-profit Café to Aid Mixed-Ability Adults Friday 8th March saw the launch of Colin’s Nest Coffee Shop, a not-for-profit café at Birds Hill Nursing Home, attended by local VIPs, including the Mayor of Bournemouth, the Mayor of Poole and AFC Bournemouth. Colin’s Nest Coffee Shop, a not-for-profit café run by Crumbs and funded by Luxurycare Group, welcomed a range of VIPs and Patrons to the launch of the café on Friday 8th March. The café, which is based at Birds Hill Nursing Home, focuses on helping their mixed-ability trainees achieve life skills and professional development, with all profits being invested back in to the charity. The launch of Colin’s Nest Coffee Shop was well-attended by patrons of Crumbs and Luxurycare Group, as well as local VIPs. The Mayor of Poole, Cllr Gabriel and the Mayor of Bournemouth, Cllr Borthwick were both present for the launch of the café. Crumbs is the official Club Staff Charity of AFC Bournemouth who also had representatives present. Poole Mayor, Cllr Gabriel, gave a speech to attendees about the brand-new café. Speaking about the effect the café will have on the local area, The Mayor of Poole expressed how the café will offer a community-orientated experience for people who visit the café. Cllr Gabriel said: “Colin’s Nest is a great addition to Poole. The cafés’ aim to unite people of different ages, cultures, and backgrounds to socialise over the traditional past time of tea, coffee and a slice of cake – is an admirable one and a fantastic community project.” Colin’s Nest is now open for all, with thanks to Luxurycare Group which fully funded the refurbishment of the café which took 5 months
to complete. Luxurycare Group provided tables, chairs and all the furnishings and equipment needed for Colin’s Nest to get started. Luxurycare Group Founder, Kevin Gunputh, said: “To see so many people at the launch is a great compliment to Colin’s Nest Coffee Shop. From speaking with attendees, it was very encouraging to hear the positive feedback on the café and its facilities. I am so glad that Luxurycare Group is a part of it.” Representatives from Lloyds Bank Foundation were also present at the launch. Lloyds Bank Foundation awarded Crumbs a grant of £74,950 to enable the charity to employ a full-time Work Experience Supervisor over the next three years. Ursula Boardman, Training Services Manager of Crumbs, said: “This is a fantastic start to Colin’s Nest, which will be a key hub for training and development. It was very kind of all the VIPs, Patrons and Trustees to attend the event and I hope they will visit us again soon.” Colin’s Nest is located at 25 Birds Hill Road, Poole, Dorset, BH15 2GJ and opens between 10am – 2pm, serving light lunches, cakes, teas, coffees, paninis and more. Dazzle & The Art of Defence This major new exhibition contextualises the artist Norman Wilkinson’s First World War ‘Dazzle’ schemes of disruptive camouflage against the wider contribution of the arts and creative industries to the defence of Britain in wartime. In 1917 when U-Boat attacks threatened to knock Britain out of the war, Wilkinson persuaded the Admiralty that patterns painted on the side of the ships would confuse U-Boat commanders as to the direction and speed of the vessels. A team of artists were then recruited to create the ‘Dazzle’ designs and soon ships were sailing out with bold colourful designs. When? Until 25th April 2019 Where? Voices heard at Poole BID Annual Meeting Poole BID hosted its Annual Meeting at Lighthouse, Poole, on Thursday, February 28, to gather feedback and suggestions from its town centre levy payers, as well as discuss plans for 2019 and the remainder of its five-year term. Presentations were given by the Poole BID manager and its chairman, Justin HundleyAppleton and Adam Keen, to showcase what has been achieved from initiatives laid out in the business plan, which were agreed when the organisation officially commenced in July 2016. Adam Keen, Poole BID chairman, stressed the need for positivity and made a request for all businesses to engage with the BID in a positive manner: “Feedback relating to what the BID does is vital so that we know what to do more of and less of in the future, but what Poole needs is more people to give feedback with associated solutions and better still, people who are willing to get involved and help our great town step up to current challenges.”
Levy payers also had the opportunity to take part in roundtable discussions with the board of 13 directors and share their experiences of trading in Poole.
Justin Hundley-Appleton, Poole BID manager, added: “Overall, the meeting was really positive and gave us plenty of food for thought to take into consideration for the remainder of the term. We were delighted to see some new faces at the meeting and there was a sense of real interest and positivity for our town and its future. It was great for our businesses to be able to sit down alongside our directors and have an open discussion about what was on their minds. Get Dorset Buzzing!
This spring, Dorset Wildlife Trust is embarking on its biggest ever campaign to get over 2,000 people in Dorset doing at least one thing to help pollinators in their garden, and help Get Dorset Buzzing. But, why are we so concerned? It’s widely known that bees are in decline, yet they are arguably one of the most important insect groups on earth, helping to carry out the process of pollination which is responsible for one in three mouthfuls of food we eat, including chocolate, coffee and strawberries. But it’s not just bees that you will see flitting between flowers in your garden; butterflies, hoverflies, moths and some beetles also carry out the pollination process, so it’s important that we create much needed space for them all to thrive. One of the main reasons for the decline of bees and other pollinators is loss of habitat. Wildflower meadows used to provide prime pollinator habitat, but we’ve lost 97% of them since the 1930s. The good news is that there’s something we

can do to help. Our gardens and local green spaces are potential mini nature reserves, so if we can provide the space and the food, they will come! Lighthouse, Poole’s centre for the arts, is delighted to announce Canadian singer k.d. lang will play the Concert Hall on Thursday 25 July as part of her Ingénue Redux – 25th Anniversary Tour, a continuing celebration of her platinum-selling breakthrough album that was re-issued in 2017. Tickets go on sale online at 9am on Friday 1 March and 10am by phone and in person from the box office. As well as performing songs from Ingénue – including the Grammy award-winning hit ‘Constant Craving’, k.d. lang will play highlights from her career that began in 1984 with A Truly Western Experience – the first of three albums she made with country group The Reclines. Her most recent release 2016’s case/lang/veirs, was a supergroup collaboration with Neko Case and Laura Veirs. She is renowned for her live shows, prompting the New York Times critic Stephen Holden to note: “Few singers command such perfection of pitch. Her voice, at once beautiful and unadorned and softened with a veil of smoke, invariably hits the middle of a note and remains there.” k.d. lang has won four Grammy awards, eight Juno Awards, a BRIT, an AMA, a VMA, and four
awards from GLAAD. In 1996, she received Canada’s highest civilian honor, the Order of Canada. In 2013, she was inducted into the Canadian Music Hall of Fame at the Juno Awards and last year received the Alberta Order of Excellence Award.
She has appeared alongside such musical luminaries as Roy Orbison, Bonnie Raitt, Elton John, Loretta Lynn, and Tony Bennett, who observed: “She’s the best singer of her generation.” lang has also contributed to numerous soundtracks, has appeared in many films, and in 2014 made her Broadway debut in the seven time Tony Award-nominated musical After Midnight. Her second solo album Ingénue marked lang’s departure from the country sounds of her earlier releases. It remains her most successful record both in her native Canada and internationally. As well as the UK Top 20 single ‘Constant Craving’, the album’s highlights include the follow up singles ‘Miss Chatelaine’ and ‘The Mind of Love’ and the songs ‘Save Me’ and ‘Still Thrives This Love’ later used in the film Soldier’s Girl. The tour follows the release of a re-packaged, re-mastered 25th Anniversary two-disc edition of Ingénue that includes eight previously unreleased live performances from lang’s 1993 MTV Unplugged episode. Regarded as Australia’s finest guitar duo, The Grigoryan Brothers will open the show. The UK’s largest outdoor Water Sports Park mark their 30th anniversary It was in April 1989, when Mark Jury received the news that his proposed purchase of a 3-lake quarry in Fordingbridge had been completed. Mark says “I didn’t have planning permission, but I had a dream.” Fast forward to 2019 and the Jury family are marking their 30th anniversary of operating one of the UK’s largest outdoor Water Sports Parks. New Forest Water Park consists of a state-of-theart 5-pylon cable wakeboarding system, Wibit’s first UK aqua park, plus stand-up paddleboarding and kayaking. The Park also offers up fishing and has a licensed clubhouse and overnight camping facilities. This is a far cry from the Park’s humble beginnings, which all started with a Mastercraft ski boat, which was imported from America. In 1991, Mark project managed the initial build of the Park’s Clubhouse, which launched on 1st June 1991. Mark recalls “I was trying to do it all and even hired a heavy construction excavator, which accidentally ended up in the lake.” Over the next ten years, four Kawasaki 440 Jetskis were added, increasing to 12, which operated on the smaller lake. Once fish were discovered in one of the lakes, this quickly built to become (and continues to be) one of the best fisheries in the south of England. In 1995, aqua rides were introduced, to include team building exercises such as raft building and laser clay shooting. Camping facilities quickly followed, with a simple five pitch caravan site costing £10 per caravan in 1999. At the turn of the century, the Park launched wakeboarding activities, which called for a bigger variety of boats to achieve larger wakes. Just 6 years ago, New Forest Water Park built the first cable-ski system on the South Coast, through
Rixen Cableways. They launched with two jumps and two rails and this was an instant hit with the local surfing/kiteboarding community. In 2015 a replacement activity was discovered for the water rides in the form of the UK’s first Wibit Aqua Park. Mark, together with his daughter Millie and son Ben, went over to Germany to buy their first set of inflatable modules to create a fun aqua park. At the launch, they accommodated up to 60 persons per hour but this rapidly doubled up to 120, as additional modules were added on. This year, the Park boasts a 150 person Aqua Park, plus twelve wake park features, an extensive campsite, fully licensed bar, several kayaks and paddle-boards. In February, the Park reached the semi-finals of BH Stars Awards for best Attraction in the area. The final word goes to Park MD, Mark Jury who adds “My idea in the early days was to create a fun and safe environment for people to enjoy water activities. I am so proud of what my family have achieved over the past 30 years. We have, and always will, strive to be the best and remain at the forefront of safe family fun”.

The Dorset Directories Camper Van “Daichi, The Dashing Dude” has finally made it! The NEW Dorset Directories Campervan has travelled across barren land and rough seas to get here. All the way from Japan, just to be with us. We love him! He is pearly white and is still wearing his posh kimono. Nellie had long skirts to cover up her rather large thighs, whereas Daichi likes to think he is rather sophisticated, debonair, and has an eye for the girl vans. In fact, “The Dashing Dude” as we have nicknamed him, is a play on words as he believes he is good looking, stylish and fashionable. It is all part of his charm. He also loves to run around and have fun. So, dashing he is, and otherwise known as “Dash” to his friends. Daichi is his official Japanese name, (dai) meaning “big, great” combined with (chi) meaning “wisdom, intellect”. As Daichi is full of himself and a little over confident, this seems rather appropriate. He even speaks Japanese when we switch on his purring, seductive engine. “Ha Dor!” and other words I have yet to discover the meaning of, he expels in a rather high pitched, very cute voice. (Don’t tell him I

Daichi gets the thumbs up! said that, boys do not like it.) We hope you like reading about his exploits and antics as he whisks us to exciting places around England and particularly here on the Southern Coast. Here’s to having some family fun… Our first trip was to Portland just along the coast from Weymouth. We had never been there before, and boy were we lucky with the weather. Dash was extremely happy. So were we. We climbed all the 165 muscle tasking steps up the Portland Bill lighthouse. What views from the top! Currently there is the amazing huge magnifying lamp which shines across the English Channel to warn our ships at sea of potential danger. The lamp will soon be replaced by a more modern system of LED lights. Sad really, but times move on as we all know too well. The majestic lighthouse demanding attention on the clifftop also has that eerie foghorn sound which haunts the waves in times of fog. There have indeed been a massive 113 shipwrecks along this coast, due to its shallow reefs and the strong Portland tidal race. Daichi decided to keep his nifty wheels firmly fixed on the solid ground.

29 A meal overlooking the crystal blue sea was a well-deserved treat after all that climbing. The café was a welcome sight. We ate outside! Portland of course is famous for its Portland Stone. Dash, knowing what boys are like and having empathy with Hayden our 15 year old active teenager arranged a “Geo Cache” hunt for us to do. Geo Caching is a modern-day treasure hunt. There are hundreds of walks you can find online. Some are still free, but there is now a small charge of around £20 for the year for the keener walkers. It is a fun way to follow coordinates and eventually find a box (the treasure!). The stones enroute, carved by artists, were quite amazing. A Falling man, chairs, hearths, octopus, bear, a whale and lots more. My favourite was the mythical Portland Dog Beast, the Roy Dog. Carved by Damien Briggs, this beast has fiery eyes, one green, one red and it was said that he lived in the Cave Hole where he would drag any travellers passing by, into its watery hideout. Brrr…. It even has the eyes of its victims embedded into its stony fur. Daichi is beginning to wonder about us Brits… We love our legends don’t we. Another way to explore our incredible homeland are Treasure Trails. Again, available online to buy at just £6.99

The Roy Dog in Tout Quarry Park per walk. Daichi chose the Pirates Graveyard one for us. (Is he trying to tell us something?). This was an intriguing walk along the coast and through the graveyard with skull and crossbones engraved in the stones. Contrary to popular belief, these are not pirates’ graveyards, but just images to ward off the evil spirits in the afterlife. The cove we passed, Church Ope, was gorgeous. We would love to go back there. There are stunning views from all over Portland. It really is a fantastic place to visit. It has seen busier times, with the Naval Base and the famous 18 mile long Chesil Beach where the American troops embarked on their journey to Nazi occupied France in the second World War. My Dad aged 83 told me that he, his Mum and sister regularly travelled to Portland all the way from Hull to see his Dad who was stationed there in the Navy. He remembered a day when a German plane was flying down the coast, being fired at by our anti-aircraft guns from the beach. The exploding shells got closer and closer, until the plane dived and escaped! Today it is a gorgeous stretch of pebbled beach with crashing waves and wonderful sunsets. Daichi is ecstatic to be here with us. He thoroughly enjoyed his first trip and is very excited about where he will transport us to next… where will that be? By Debbie Corney

Parkstone Detachment: Dorset Army Cadet Force I’d like to take a moment to thank the Publishers of The Poole Directory for giving me the opportunity to share the news about Parkstone Detachment, Army Cadet Force. This month we saw Parkstone’s most senior Cadet, Cdt Cpl Blake take part in the South West Regional Football Championships in Yeovil on the 23rd February 2019 to represent her county. Blake formed a team with the Somerset Senior Girls who competed against Bristol. However, Blake led the team scoring all 5 goals, resulting in a 5-3 victory for her team. The girls were awarded medals for winning their group and Blake was also selected for nationals where she will play against Cadets from Scotland, Northern Ireland, and Wales. Cdt Cpl Blake said “It was a tiring but exciting day. I made myself and my county proud and can’t wait for the next stage in Liverpool” Outside of Cadets, Blake also plays football for the Poole Town Ladies which she is using for the Skill section of her Silver Duke of Edinburgh Award to improve her shooting and to ensure more successful passing during matches. A huge congratulations to Blake and we wish her the very best in her upcoming sporting events. During a successful Annual Inspection, the Commandant, LT Col Garrett presented Cdt Hayward, Cdt Clark, and Cdt Ward with their Basic badges for their efforts in completing the first APC Syllabus level. The Basic Syllabus involves Drill and Turnout, Shooting, First Aid, and Navigation amongst a variety of subjects. These three Cadets were awarded a certificate and a badge which is to be sewn onto their blanking plate on their arm which acts as their collage of success. This badge is a big step for a Cadet as it is often their first addition to their arm. This allows them to pass on valuable skills to the younger Cadets, developing their qualities of a leader and working their way into a future promotion which can go beyond their time in the Army Cadet Force. The Commandant said “The first of many” and I hope to see the same determination in
Cdt Cpl Blake with her regional championships medal and Cdt Clark receiving his Basic APC completing their next APC syllabus level by the end of the year. We also had Cadets from East Company and West Company combine forces for our first Company weekend of the year. This weekend involved Cadets using their skills to navigate the camp to locate ‘Frankie’ a well camouflaged doll, Shooting on an outdoor range, Drill and lots of Fieldcraft which involved cooking in the field and basher building. A basher is a small shelter made from a camouflaged sheet which is designed to be lightweight and to shield you from the wind along with obscuring the sight of enemy patrols. This was our PI Harrison’s first Company weekend and raring to go after her adult Fieldcraft training she said “Sjt Fudge got me yelling drill across a field” also bringing her out of her comfort zone while she works towards her Sjt stripes. We followed this up with Command Tasks and First Aid, progressing our Cadets further to completing the APC syllabus. The Cadets and Adults all had a great time. Plant of the month Pulmonaria
Nothing says “Spring” more than a bright, vibrant, colourful flower and you can find all these qualities in the Pulmonaria plant. More commonly referred to as ‘Lungwort’, the Pulmonaria are wonderful as they can act as both foliage and flower. On Your Plot
April showers to October fun It’s wonderful to see the first fresh, local, asparagus appear for sale this month and if you’ve a bit of space spare on your plot now’s the time to plant this gourmet crop. Buy one year old crowns and plant them immediately into well drained soil. You should be able to take a small harvest next year and they’ll carry on cropping for up to 20 years!

• Keep an eye out for late frosts and cover any vulnerable plants • Harden off indoor sowings before planting out • Start off French beans and Brussels Sprouts under cover • Fancy something a bit more exotic? Try growing some peppers and aubergines - sow this month in a greenhouse or polytunnel • Plant an asparagus bed • Earth up potatoes once the first shoots appear Now is the time for April showers and with the weather warming up all the time and some gentle rain you’ll soon be seeing lots of changes on your veggie plot. It’s a time when any indoor space, be it greenhouse, cold frame, or just window sills, is likely to be filling rapidly with young seedlings. If you are thinking of planting some of your seedlings out then don’t forget to harden them off first. You can move the pots outside each morning, bringing them in at night to gradually acclimatise them to the change. Do remember too that late frosts can still happen in April, damaging plants that are unprotected. Watch the weather forecast and if there’s any danger of frost then use fleece or cloches to protect plants where necessary. On the subject of cloches, save any empty plastic bottles that you may have. Cut the bottom off and you are left with a wonderful mini cloche to protect seedlings that are recently planted out. Push the plastic down into the soil firmly and it will keep off not only some of the chill but also any slugs that may have their eye on tasty young leaves.
Are you a fan of Halloween? Pumpkins can be quite expensive come the end of October and then there’s always the hunt for one just the right size. Why not have a go at growing one (or several!) of your own this year? Pumpkins need a long, growing season to ripen well so now is the time to start them off. There’s lots of different varieties, including some giant ones if you want something really impressive to carve. Look out on the packets for ones that are early ripening for the best chances of success. Pumpkin seeds are huge so it’s easy to sow just one to each pot. I’d sow at least 3 plants, if they all germinate and mature it’ll probably be more than you need (they can take a lot of room as they grow) but it’s better to have spare in case you loose some early on - if they all grow well you can always pass one on to a friend or neighbour and have a competition to see who gets the biggest pumpkin! You’ll need to keep your young plant inside until all risk of frost has passed. When it comes time to plant the pumpkin out it will like lots of nutrients in the soil. Dig out a large hole and put in lots of well rotted compost - or you can even plant your pumpkin straight on top of an old compost heap. They’ll bloom with wonderfully exotic looking, huge yellow flowers and it’s wise to consider removing the growing tip once three fruit have set as this will give a better chance for larger, riper, pumpkins. Support the growing fruits on a bed of straw to avoid them dropping off or becoming mushy. Are you enjoying purple spouting broccoli at the moment? You can buy summer varieties to plant now, or try Calbrese (this has the green heads) which is best planted straight into the beds where they will grow.

Bournemouth & District Concert Band BDCB is a friendly community wind band that rehearses and performs in the Bournemouth area. We have members from all over the area – Weymouth, Salisbury, Southampton, and everywhere in between! Members range in age from 14 to 80+ years. We practise at Queen’s Park Infant Academy Thursday evenings from 7:30 – 9:30 pm, all year round (except in August). We are currently seeking brass, bassoon, and percussion players at a grade 5 standard or higher. Beryl Bikes for Bournemouth & Poole as Bike Share operator announced for Spring 2019 Bournemouth Borough Council and Borough of Poole Council have partnered with preferred operator Beryl to deliver an innovative Bike Share scheme across the conurbation. The Councils and Beryl have partnered for a five-year contract to provide Bike Share across Bournemouth and Poole. The distinctive emerald green bikes will soon be a familiar sight on the streets and will be available for instant hire via the Beryl App. The App tracks the GPS location of the bike allowing users to easily access and unlock any Beryl bike simply using a smartphone. The scheme will be launched in spring/summer 2019, with an initial 50 brand new bikes conveniently distributed for use at key destinations including rail and bus stations, town centre shopping areas and tourist attractions. The gradual roll out of bikes will eventually increase to around 1,000 bikes by the summer months, available for instant hire. The Beryl bikes have three speed gears and a step through design, with fully adjustable handlebars and seats for a wide range of riders, from 4’11” to 6’5”. The App can be downloaded on the Apple app store for iPhone, and the Google Play Store for Android users. Riders can choose to pay each time they cycle, or take up an annual membership. Users will be informed of the location of ‘Beryl Bays’, the preferred parking locations to leave the bikes. However, the scheme is designed with flexibility in mind and will allow users to park the bikes elsewhere, provided they are safely within the scheme area. Operators will keep track of all the bikes and will “rebalance” them as required to maximise availability. Beryl has experience in bike share innovation, having been a lighting and technology partner to Transport for London bike share, and providing lights to the bike hire schemes in New York, Montreal and Glasgow. The British company already operates two corporate dockless bike share schemes in London and is accredited with Bikeplus, which is the agreed standard of Best Practice for the industry. Philip Ellis, Beryl CEO said: “We are really pleased
to be working with Bournemouth Borough Council and Poole Borough Council to bring our bike share system to the area. We will be calling on our experience working with world-class bike share schemes, such as those in London and New York, to provide the best service possible in Bournemouth and Poole.” Councillor Mike Greene, Cabinet Member for Transport, Cleansing and Waste for Bournemouth Borough Council said: “I am delighted that we are partnering with Beryl to deliver an innovative Bike Share solution for our conurbation. The scheme will be a convenient, flexible and affordable option for both residents and visitors to our area.” Councillor Ian Potter, Cabinet Portfolio Holder for Transportation for Borough of Poole stated: “I am looking forward to trying the Beryl bikes and am certain that the ability to hop on and off will prove attractive in encouraging more people to take up cycling.” There is no initial or ongoing cost to the Councils and Beryl will be responsible for supplying the bikes plus associated equipment as well as management and maintenance of the service. Beryl will also be investing in local cycling infrastructure in the area to ensure maximum efficiency for those riding. Future developments include the introduction of a fleet of electric bikes for hire and potential expansion of the scheme into Christchurch. Businesses will also be offered the use of shared electric cargo bikes to assist with local deliveries and help cut both carbon emissions and congestion.

Naturally good... Brown butter and beer braised kale with cranberries and pecans
Ingredients for 4 2 bunches of kale 2 tbsp. unsalted butter 120ml beer of your choice 60ml chicken stock 1tbsp reduced sugar dried cranberries (this is optional) 3 tbsp. roasted chopped pecans Sea salt and freshly ground black pepper to taste
I absolutely love kale. It’s packed with flavour and nutrients and it’s incredibly quick and easy to cook. Braising kale in beer and brown butter gives the finished dish a really nice nutty flavor and the quick method of cooking ensures that the kale retains its vibrant green colour. 1. First prepare the kale by washing it and then cutting out the stem. It is important to cut out the center stem because it can be tough and chewy. Once you have removed the stems, quickly shred the kale by rolling up the leaves into a cylinder and roughly slicing them. Set to one side. 2. In a large frying pan or sauté pan place two tablespoons of butter and cook on a medium heat until starting to turn a light brown colour. At this stage quickly add the beer and chicken stock and turn up the heat to high. Bring to the boil and then add the kale. 3. Cook the kale for approximately 3 minutes until most of the moisture has evaporated and the kale is nicely glazed. Add the chopped pecans and seasoning to taste. Transfer to a serving platter and sprinkle with the dried cranberries. Chef’s tip: Make sure that the liquid is boiling and the heat is on high before adding the kale, you don’t want to slow cook it because it can lose its vibrant green color if it is stewed for too long.
