Since then he has removed thousands of hooks from sharks in the warm, clear waters off the Bahamas, and has brought divers to safely encounter these apex predators with the goal of de-stigmatising sharks as mindless killers. Golden Envlope Donation for Coping with CHAOS A West Moors’ couple, Gillian and Alex Clarke, have donated £50 to Coping with CHAOS, run by Diverse Abilities, Dorset’s Disability charity.

The donation started as a golden envelope donation from the new Bishop of Salisbury, Bishop Stephen Lake, when he was welcomed to Salisbury Cathedral in June. Everyone was given an envelope containing £10 with a total of £10,000 given away, donated by two generous benefactors.

Clare Rochford, Children’s Team manager, commented: “We really appreciate this kind and generous donation, it will mean so much for the children and families we support in our school holiday activities, youth club and family support service.”

The instructions given were to make the £10 grow and to give it away so that ‘in an anxious world, it would make a difference’. Husband and wife, Alex and Gillian Clarke chose to donate £50 to Coping with CHAOS to make a difference to the lives of children and young people in Dorset as a gift from St. Mary’s Church in West Moors.

From Downton to Pamela Anderson The evolution of actress Lily James. In terms of career transformations, Lily James has been through many. First Beaver Kit born in Dorset for over 400 years Beavers have bred in Dorset for the first time in over 400 years at Dorset Wildlife Trust’s enclosed beaver site in West Dorset. Trail cameras inside the enclosure have captured images of a young beaver, known as a kit, and its mother, exploring the watery woodland created by its parents since they were released in February 2021. This landmark project for Dorset is hosted by Dorset Wildlife Trust working alongside lead partners, University of Exeter and Wessex Water to undertake a scientific study to assess all the impacts that beavers make on the natural environment including river flow, water quality and biodiversity. Since the beavers were introduced to site, they have built dams, creating a wetland to suit their needs but which also provides habitat for many other species, such as frogs and newts which depend on water. Rivers Conservation Officer, Steve Oliver said, “We have been closely monitoring the pair since their release and it has been clear that they have formed a strong bond in the time they have been on site, and this latest discovery is further evidence of this, alongside their industrious dam building activity. The trail cams have only identified one kit so far, but beavers can typically have one to four kits in a litter, and we are discreetly observing their activity to see if any others have been born.

Don’t lose your vote – residents in BCP area urged to check voter registration details Residents in Bournemouth, Christchurch and Poole are urged to check their electoral registration details or risk losing their chance to vote on decisions that affect them. The (New) Seven Wonders of the World The Seven Wonders of the Ancient World have all but succumbed to old age or natural disaster – with the Great Pyramid at Giza the only survivor. Thankfully, there’s a new breed of mighty manmade monuments around, and all well within the grasp of any traveller willing to seek them out. 1. CHICHÉN ITZA, MEXICO The ancient city of Chichén Itza is located on Mexico’s Yucatan Peninsula. This well-known Mayan city served as a religious, political and economic centre for several hundred years. The Pyramid of Kulkulkán is probably the most recognised ruin of Chichén Itza, standing at 80ft high and incorporating a total of 365 huge stone steps. 2. CHRIST THE REDEEMER, BRAZIL This statue of Jesus is one of Rio de Janeiro’s most widely recognised monuments. It stands 98.5ft tall atop the summit of Mount Corcovado, which itself rises more than 2,300ft. With an outstretched armspan of 92ft, and a weight of approximately 700 tonnes, the concrete and soapstone leviathan is the destination of many a pilgrimage. 3. THE COLOSSEUM, ITALY Gladiator contests, group combat, battle re-

enactments and other productions were staged at the Colosseum to an audience of almost 50,000. Today, even after some renovations in the 1990s, the wear and tear from poor weather, natural disaster and vandalism show, but they can’t take away from this iconic Italian sight. And while you’re there, why not soak up Rome’s unique culture at the same time? 4. THE TAJ MAHAL, INDIA This 42-acre marble mausoleum complex located in Agra is a stunning Indian landmark. Construction started in 1631, spanning more than two decades, requiring more than 20,000 labourers, and costing several million rupees. 5. GREAT WALL OF CHINA, CHINA The Great Wall of China is without doubt a modern marvel and rightfully belongs amongst the other seven Wonders. Contrary to popular belief, the wall isn’t one continuous structure - it’s actually made up of several separate structures that cover approximately 4,500 miles. Pack your walking boots! 6. PETRA, JORDAN Located in south-west Jordan are the ruins of the ancient city of Petra. Massive temples,

tombs and monuments have been cut into the surrounding sandstone cliffs and were immortalised in 1989’s Indiana Jones and the Last Crusade. Perhaps the most impressive Petra structure is the Sik alKhazneh, an elaborately carved and embellished tomb. 7. MACHU PICCHU, PERU Built in the 15th century, this ancient Incan city is nestled between two peaks – Machu Picchu (Old Peak) and Huayna Picchu (New Peak) at an amazing elevation of 7,710ft. It is often called the lost city of the Incas because it was hidden amidst the lush forest and clouds of Peru for more than three centuries. Now rediscovered, it is a sight to be admired, and one that retains every ounce of mystical promise.

Five Alive It can often feel like a perennial uphill struggle when it comes to getting your young ones to consume their ‘ﬁve a day’, so why not try these handy tips below, and see if they don’t help your little ones stave off hunger whilst keeping healthy at the same time. 1. Healthy junk food Try making your own healthy junk food using good quality lean meat for burgers. Kids can join in with the preparation, and if you must relent with a dollop of ketchup then do so. Also consider swapping desserts that are high in reﬁned sugars with easy-to-make fresh fruit ice lollies made from fruit juice and pureed fruits. 2. Proper provenance Some kids can spot a hidden mushroom a mile off, so sometimes it’s best to be upfront about fruit and vegetables. Education is key to any negotiation, so explain to your young ones where their food has come from and why each thing is so good for them. You

may well get them more interested in what they are eating. 3. Appearance Try to make sure your child’s food not only tastes good but looks good too. Mini portions, chicken skewers or bite-sized pieces of fruit will look enticing, even artistic, whilst keeping your kids healthy and boosting creativity at the same time! 4. The fridge shelf Sometimes the fact we reach for junk food or occasional snacks can be simply down to a lack of accessible or appealing alternatives. A low shelf in the fridge with cut-up fresh fruit and other healthy foods means hungry children have somewhere to go that’s easy to get to and packed with nutritious nibbles. 5. Get involved Lay ingredients out in bowls and let your youngsters ﬁll and fold their own wraps, or choose their favourite toppings for tasty homemade pizzas. Even the most uninspiring of meals takes

on another dimension when our young people are involved and can take pride in its creation. It’s amazing how being involved in the planning and preparation of a meal can stimulate a child’s appetite too! And a bonus suggestion… Clear the plate or clear up afterwards! Finally, if all else fails, tell your youngsters that those clearing their plates do not need to help with the clearing away afterwards. While it won’t necessarily endear them any more to some of the greens in front of them, it may sway them into polishing off the portion, so in that respect, everyone wins!

Talbot Village Trust donates £50,000 to help keep Dorset schoolchildren safe Talbot Village Trust, a local grant giving charity that supports worthy causes in south-east Dorset, has donated £50,000 to help not-forprofit organisation 360 Skills For Life keep schoolchildren safe across Dorset through classroom-based interactive learning. The Trust’s funding has helped the charity create Skill City, a high-quality virtual reality environment to address safeguarding issues for Year 6 to Year 9 pupils (10-14 year olds). Rob Hattersley, Founder and Managing Director of 360 Life Skills, said: “Safeguarding children is a matter of huge concern in schools and society generally, especially during the pandemic. Schools and agencies are doing so much in terms of improving processes, but there is an opportunity to use the classroom itself to raise awareness and confidence in children for keeping themselves safe.” Rob Hattersley added: “We are immensely grateful that Talbot Village Trust has enabled us to launch our first phase on safeguarding for 10-14 year olds. The Trust has given us a great foundation on which we can build, extending out to younger age groups and a wide range of additional skills for life topics, such as active travel and the climate emergency.” There are up to 18 age-appropriate safeguarding dilemmas available for teachers to select for students to experience either as a class or in groups. Within different virtual environments, including streets, crossings, parks, shops, police and railway stations, schoolchildren can play out scenarios, assess risks and investigate options. The objective is for pupils to develop transferable skills for every scenario in order to make confident decisions to keep themselves and others safe in real life.

Money on my mind... the Martin Lewis column He’s the UK’s leading money saving expert - a journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers. In this month’s column, Martin Lewis looks at how we can repair our credit score. Let’s be honest, the last couple of years haven’t been kind to our finances. The good news is the ability to rescue and repair that credit rating is within our own hands, and with a concerted plan we can get back to where we want to be. And that’s important – having a good credit rating means gaining access to preferential interest rates; it could be the difference between being able to buy a house, or rent a flat, or not; and it also gives us peace of mind that if an emergency crops up we can lean on financial support. When it comes to improving

our credit score, ﬁrst check your current rating – with the likes of Experian or Equifax – and know what you’re dealing with. When you’ve done that, see about disassociating yourself from others who may be pulling you down with their own chequered credit history - their activity may be negatively impacting yours. Next, get yourself signed up on the electoral roll. It’s a great way for credit agencies to be able to verify who you are and adds a layer of authenticity to any application.

Spring cleaning your ﬁnances is another really sensible option. Many of us have old credit cards or bank accounts that we don’t use. They may seem harmless on the face of it, but they all represent risk as far as your credit score is concerned. Next, start investing in your credit future. Using a credit card may seem a peculiar way of improving your credit, but done sensibly it will. And by sensibly, I mean use it for everyday purchases on the speciﬁc understanding you’ll clear the balance at the end of each month. Doing this will boost your credit rating and prove to any lender that you can be trusted. Finally, if you can’t afford to clear your full balance at the end of the month, at least pay off more than the minimum payment. Mending your credit score won’t be achieved overnight, but your future self will thank you for your efforts today!

Local school’s artwork inspires colourful mural art project in Boscombe A local school student from Kings Park Academy has been presented with a canvas of her artwork which helped inspire the mural project in the underpass near the Sovereign Centre. Angela, along with other school students entered an art competition held in partnership between BCP Council and MBN Arts. MBN Arts were commissioned to artistically regenerate and transform the walls and ceiling of a 78 foot pedestrian underpass by Boscombe bus station. The funding was made available through Bournemouth Towns Fund as part of the arts and culture project within the Boscombe regeneration programme. The school design competition encouraged the school students to contribute to the design process of the mural project. Their challenge was to create artwork to connect with the local community and reflect the wildlife and environment, which would act as an inspiration for the mural artwork that can be seen on the underpass. The children’s artwork showcased some fantastic ideas and creative skills. The artist completing the mural, Humble Cherub, integrated the winning entries ideas into the final artwork, a process which took 12 days and can be seen in the underpass. The feedback from the community both during the painting process and after competition has been incredible, and many communicated that it has really improved the area and has made the space more desirable to travel through. Mike Ness and an MBN Arts student

produced a canvas painting of Angela’s winning entry - a picture of a Rhino - which was presented to her at her school assembly. Councillor Jane Kelly, Portfolio holder for Communities, Health and Leisure said: “I would like to thank all the children who produced such wonderful artwork, and would like to congratulate Angela on her winning entry – very well done! The mural is absolutely beautiful, and it’s all down to the creative ideas from the children who helped inspire this stunning piece of work which all the community and visitors can enjoy.” Mike Ness, Managing Director and creative wellbeing mentor, MBN Arts said: “We have loved collaborating with both BCP Council and Kings Park Primary School, and as a special thank you to the student competition winner, we will be creating a custom painted canvas by one of our artists. Art and expression connects with us all in differently, and can benefit us in so many ways. I hope this mural will inspire the local community and visitors as I know that not enough people can access art exhibitions, however the power of street art is that it goes to people’s daily lives.” Lauren Dean, Principal, Kings Park Academy added: “The children at King’s Park Academy have thoroughly enjoyed participating in this community project and using their imaginations to create wonderful pieces of artwork. Bitcoin energy usage While crypto has become a buzzword for profitability and flexibility, huge quantities of energy are used in the verifying of crypto transactions. However, a new Proof of Stake system adopted by Ethereum will use less than one-thousandth of the energy currently required, and is set to be introduced soon. Carbon removal A factory just opened in Iceland can remove carbon dioxide from the air, with its perceived success potentially opening up a drive to build other plants

across the world. Aging clocks If someone could tell you how long you’re going to live, would you be brave enough to reveal the answer? Aging clocks can do just this. Most work by estimating a person’s biological age based on patterns of epigenetic markers - speciﬁcally, chemical tags called methyl groups that are layered onto DNA and affect how genes are expressed. Others, meanwhile, act more like a speedometer, tracking the pace of aging, with clocks having been developed for speciﬁc organs of the body. Scientists hope our ability to know how long we have left may well spark us into undertaking healthier lifestyles.

Colour Conflict The fashion experts seem to be at odds with one another. Some believe autumn and winter fashion will retain the pastel shades that have patterned so much summer sheen; others are ready to embrace the greys and blacks of rainy days that will surely follow as the months trip by. Which suits you best? Look great in greys Sustainability has been a massive theme on the runways for a good few years now, yet the colours on show have often gone against a mood of caution and care. That’s why the adoption of grey shades is an interesting shift in 2022, with designers intimating the colour represents a change of pace, where thought and intelligence in grey knocks back the buoyant, acidic tones that patterned the shop windows in previous years. Black to basics While, in the past, black has found itself mixed with bright shades to provide contrast, for the latter months of 2022 the message is to embrace the very darkest, deepest and shiniest elements of this moody colour. Ink blacks are the perfect exemplar of this image according to the fashion houses, with a typically neutral

colour being encouraged to take centre stage. Keeping in with pinks and purples Once considered the choice of the very old, the very young or the reckless, pinks and purples is very much in. From dusky and elegant pinks at Marc Jacobs, to more violent blue and peach shades at Matty Bovan, the beautifully coloured tones have spread right the way through to hair colour. Yellows and oranges The lighter the pastel shades you adopt, the more you need to factor in the limitations of paler complexions. That said, lighter tones perfectly complement delicate shades such as dreamy lilacs (whereas darker skins look fab with bold yellows and rich peach hues). Nature’s nod Any kind of green or blue shade generally feels more outrageous when it comes to our clothes colours, but these can still retain a feminine edge, particularly

when you choose a lighter tint. Beige has had its day The move to brown in recent years is as a direct reaction to beige, which many consider has been overdone in the past couple of years. While beige offers a versatility that brown doesn’t, the fashionistas have put their weight behind a brazenly 1970s look. And don’t forget about… white While other colours and tones may be tipped to dominate, the old favourite white will always be cleaning up in the background. Famously versatile, endlessly expressive and with more shades and variations than any other colour, the only downside to white is the washing powder bill!

A Design for Life… The Kevin McCloud Column Designer, writer and television presenter, Kevin McCloud leapt into our consciousness with his vastly successful Grand Designs show on Channel 4. This month, the affable architectural business owner talks about individuality and belief. I think sometimes people look at architecture as something that’s unattainable by us; it’s something by which we feel the need to call in help, to pursue the talents and experience of someone else in order to get us to where we want to be. Yet the reality is very different. Anyone can start with an idea or a concept; slowly, gradually, carefully acquiring skills so as to be able to turn some of those thoughts and ambitions into reality. And the reward from that is two-fold – naturally you can do something that is based on your own timeframe and your own budget; but more importantly, forevermore you can look at

something that you produced and know it came from within, it came from the heart, and it addressed that incredibly special element that exists in all our lives where we invest emotion and energy into what are, otherwise, inanimate objects. And this is a very human trait that is vital where architecture and, by extension, our homes, are concerned. It’s the fact that to anyone else, the space will ultimately mean something else versus how you interpret it; and to some people it may just mean nothing at all. There may be no tangible connection or emotion that comes from it. Yet when we produce, envisage, imagine and create a path for something that is our own creation and our own production, we add into it an element that is bespoke, that is individual and that, you would hope, will still hold a legacy for who we are and who we were in that very moment we created it, for decades to come.

That’s why I always want to encourage individuality in people who are passionate about putting their own ﬁngerprint on their homes. There are really no bad decisions… providing you obey the basics of construction, that is! So rather than just follow the guidelines and the trends and the fashions of the populous, get out there and ﬁnd your own… and more than that, make that reality yourself, if you can, rather than calling in someone else. That, to me, is the biggest thrill when I look in on the projects others have created. To see their own work is to understand the person, and only by understanding each other can we ever truly move forward.

The Modern Magazines Camper Van Daichi, our wonderful “Modern Magazines Campervan” loves a success story. This month he was very excited to be taking us to Marshfield Farm near Bath. The journey there is really quite stunning. Winding roads between beautiful, luscious green hills with views as far as the eye could see. Very soothing and Daichi purred his way there. Having bought an ice-cream parlour just a few months ago, and now serving this delicious ice-cream in our newly acquired “Wafflicious” premises on Weymouth seafront, we were really looking forward to seeing the factory and the farm for the first time. Based around a 17th Century Manor House, nestled in rolling green fields, this really is an idyllic place. Tim, alias Dad, and his wife bought the then run-down farm in 1971 and have created a haven for organically fed cows and now yummy flavoured ice-cream. Daichi is all smiles arriving at Marshfield Farm! son, had a passion for ice-cream from an early age and Dawn his lovely wife laughed about the amount of icecream parlours they visited in Italy on their honeymoon some years ago. In 1988 after returning from agricultural college, Will wanted to diversify the family milk business and took up the challenge to create their first ice-cream – vanilla – which still today remains one of their best sellers. What an achievement. Originally there were around 35 cows, but now, some 30 years later there are 250 cows grazing on the 1100 acres of organically farmed land. The business is thriving. Cows are miked twice a day, once at 5am and then at 4pm, seven days a week. It is a never-ending task. In between these times the happy cows merrily eat the grass in the meadows surrounding the house, factory and newly built warehouses which have been adorned with hundreds of solar panels. in electricity costs (and who would say no to that these days?) but are very eco-friendly. Planting trees, keeping bees and really taking care of the environment is at the heart of Marshfield’s philosophy. It really is a family affair with the grandchildren now running the factory and the farm, with their parents and grandparents. So, we met the cows that eat the grass, that produce the milk that makes the ice-cream, that you eat! What a production line. The dog ice-cream is a real winner. One of the best on the market and full of nutrients for our four-legged friends, Marshfield literally make thousands of these tubbed delights every week. We even met Scoop who is the face of the ice-cream! Of course, it would have been rude not to devour some of the delicious ice-cream ourselves, before leaving. Emma, who works very hard in our parlour, had a little too much and could hardly eat her dinner! I think she can be forgiven as all of the flavours are just delicious. The ice-cream parlour there, with bales of straw to sit on and slowly enjoy the creamy treats, is open at weekends to visitors during the summer, so if you fancy a bit of indulgence and a wonderful drive,

Even the cows are licking their lips! then we highly recommend a trip to the farm. Of course, there is our very own parlour too, opposite the helter skelter on the Esplanade in Weymouth. “Wafflicious Weymouth” is its name and is not only home to mouthwatering Marshfield ice-cream, but also light and delectable waffles. We have some wonderful reviews on Facebook and are delighted with all the smiles and happy faces we see every day. With regular visitors now from near and far, we are extremely pleased with what we have achieved in just four months. We are not quite a Marshfield Farm success story yet, but who knows… time will tell. On the road again With many of the UK’s best roads wind their way through, along and on top of stunning geological features, there are some ‘must-drive’ to be explored. 1. With towering canyon made of Carboniferous Limestone, the cliffs arc above menacingly, yet present absolute beauty. 4. A40, Wales/England Border On the face of it a dual carriageway linking two countries, but the road that skips through Pencraig, Whitchurch and Monmouth burrows deep into the Wye Valley, ﬂanking its river, and can be likened to the

experience of a rollercoaster ride through the Canadian Rockies. 5. A592, Windermere to Penrith Better known as the Kirkstone Pass, this incredible route reaches almost 1,500ft, with spectacular valley views, drystone walls and wonderful winding roads. 6. The Snake Pass Edging through the Peak District towards Glossop, the Snake Pass is true to its name in offering a slithering track often seen on car adverts. The tranquillity of the spot is what draws drivers in, with elevation and adverse camber testing driving skills to the max.

Rainer Becker’s Seared Tuna on a bed of spicy red onions, with a chilli ponzu sauce and fried garlic Introduction Germany-born Rainer Becker honed his craft in Tokyo before making his name in London with the celebrated Japanese restaurant Zuma. I didn’t have the inspiration of a famous chef to become one myself. I think when I first helped my mum, I probably was six or seven years old. I didn’t know anything about cooking, so the inspiration came really from the products. I liked going in the garden, picking strawberries and cherries, and that fascination went up another level when I discovered the incredible flavours and tastes of Asia. That’s why this spicy seared tuna recipe means so much to me – it combines so many intense yet complementary flavours, and every time I cook this it transports me off to a different culture and different place.

Ingredients (serves 4) For the tuna • 800g tuna loin • 500ml ponzu sauce • 100g chilli daikon • 80g spring onions – thinly sliced • 20g deep fried garlic For the chilli braised red onions • 5 red onions • 100ml soy sauce • 100ml rice vinegar

Method

1. Cut the tuna into blocks, season and sear in a very hot pan with a little oil until coloured. The tuna should be raw apart from the outside 2-3mm. Place on a lined tray and refrigerate. For the onions, sweat off the ﬁnely chopped garlic, ginger and dried chillies for a few moments, then add the sliced red onions and cook till semitransparent.

• 100ml sake • 60g caster sugar • 12g ginger – ﬁnely chopped • 2 garlic cloves – thinly chopped • 1½ dried red chillies – large (seeds removed)

2. Add the soy, sake, rice vinegar and sugar and bring to the boil, remove from the heat and strain, then allow to cool on trays. The onions should still be al dente, spicy and a little sweet.

3. Thinly slice the spring onions. Fry off the sliced garlic till crisp and golden brown and grate the chilli daikon. 4. Place a pile of the spicy onions in the centre of a salad bowl, cut the tuna into slices and roll up, then place six rolled-up slices of tuna on the onions in a pyramid shape. Add a little chilli daikon to some of the ponzu sauce and pour over the tuna, garnish with the fried garlic and sliced spring onions. Finally, ﬁnish with a small pile of extra chilli daikon.

relax, and baths generally make your day better! 6. Peppermint chapstick Add 1oz of beeswax and three heaped teaspoons of coconut oil into a saucepan and heat on low until they are completely melted. Next pour the mixture into a container, adding 10-15 drops of peppermint essential oil and stir well. Now decant into a container and dab onto the lips whenever you feel you need a tingly revival. *Benefits: Peppermint has been scientifically proven to offer a range of health benefits, including killing germs, relieving pain, improving mental function, and reducing stress.

Greenfingers… the Alan Titchmarsh column He’s a brilliant presenter, accomplished gardener, talented novelist and all-round horticultural inspiration. This month, Alan Titchmarsh talks about the most common mistakes we make in our gardens. I always say, as a golden rule, prevention is better than cure, so with that in mind here are my top seven gardening mistakes… and how to avoid them! Firstly, you can have too much of a good thing! Less is more when it comes to good gardening, and if you cram too much together it’ll look a mess, or worse still, will die!

Few of us have an endless budget with which to run riot in our green spaces, and it’s better to do a little at a time across the board, than blow it all in one part of the garden, leaving the rest of it looking forlorn and bereft.

Next, always ensure what you’re pulling up are weeds and not slow-developing flowers. We can sometimes find ourselves being particularly ruthless with what grows in our gardens, so remember, everything grows at a different rate and sometimes the most mundane of plants will flourish to become the most beautiful…

Remember, no two gardens are the same, in much the same way that no two gardeners are the same, and you’re never going to get it right all of the time. The most important thing is to be organised and put the effort in – if you do that, the rewards will very often follow close behind.

When the cows come home Can you imagine Liam Gallagher espousing the virtue of a perfectly blended Coquetdale? Or Jarvis Cocker enthusing for hours on the subject of Wensleydale? Maybe not, but Blur’s Alex James has proven that there can be a career after Britpop in the world of artisan cheese. Former Blur bassist and now cheese artisan Alex James is adamant that actually there’s little difference between being at the forefront of the Cool Britannia movement and getting stuck in on his Oxfordshire farm in order to create award-winning dairy produce. “All business is tough; as a musician I had to ﬁght for everything I wanted and now I still have to ﬁght for everything I want,” the 53-year-old begins. “If you do something that’s truly great then that puts you in a very strong negotiating position. So you’ve got to start

with something that you really believe in and which is great, or just tell everyone to go stuff it! I’m happy to play with anyone on that basis.” James can now boast of two separate cheese ranges – the opulent creamy Shropshire blues and soft goats’ cheeses, along with the everyday series that boasts unusual ﬂavour combinations like cheddar and tikka masala, or even ketchup. Yet the move from the stage to the 200-acre plot in Kingham got off to a near-perilous start. “When we bought the farm 15 years ago, it was the worst time in history to be a farmer,” he explains. “The guy I bought it off was a beef farmer and he’d been hit by BSE – Mad Cow Disease – and foot and mouth; it had been a horrendous time for farming and agriculture.

“Thankfully, the whole picture has changed now, and if you can ﬁnd a niche as a farmer there’s never been a better time. If you can ﬁnd something that nobody else is doing and do it well, there’s a real appetite for great food.” While his former band shaped a generation of music that was as indisputably and inherently British as a bulldog drinking a cup of tea, James’ organic inspirations are more inspired by his food love affair with the continent. “I love going to France – you see farmers’ markets with some old boy selling the apples he’s picked and they’re completely delicious,” he explains. “That’s how you want to buy an apple – off somebody who’s been growing apples all their lives and knows everything about it. I love the culture of farmers’ markets. I think we are getting it back here and it’s brilliant for farmers – if you can sell what you make directly to the person who is going to eat it, that’s the best possible way of doing it.”

Welcome to the August Stargazing Page. Highlights this month include the annual Perseid meteor shower, and spotting the centre of the Milky Way.

The ISS can be spotted in the last week of August, early in the morning. To establish exact timings please refer to www.heavens-above.com or a similar webpage for up-to-date information, remembering to set the location to your observing area.

Sun. They haven’t quite accumulated enough mass to shine like a typical star, and instead produce energy by burning a form of hydrogen gas called deuterium. They are very small, faint objects and quite hard to study. White dwarf stars are what remain after a small star runs out of energy and dies. When smaller stars (like our Sun) have converted most of their hydrogen to helium, they puﬀ oﬀ their outer layers in a planetary nebula, and all that remains at the centre is a core of dense material about the size of Earth, which slowly cools over millions of years. Neutron stars are the incredibly dense, weird balls of neutrons that remain after a giant star has exploded in a supernova. They are typically the size of a city, with a mass the same as the Sun. This means that a teaspoon of neutron star would weigh as much as a mountain! Saturn

Raymond Blanc’s Lemon Cake Introduction Lemon cake with tea is a grand tradition at Le Manoir aux Quat’Saisons, and it has been served here for almost 40 years. What I love about the perfect lemon cake is it’s fresh, zesty and as light as a cloud.

Ingredients (serves 8) For the lemon cake • butter, to grease the tin • 5 eggs • 300g caster sugar • 140ml double cream • finely grated zest of 3 lemons • 25ml dark rum • 1 pinch sea salt • 80g unsalted butter, melted • 240g plain flour • ½ tsp baking powder For the glaze • 50g apricot jam, warmed • finely grated zest of 1 lemon, plus 3 tbsp juice • 150g icing sugar

Method

2. Sift the ﬂour and baking powder together, then whisk into the egg mixture until smooth, spooning the mixture into the loaf tin and gently level the surface. Bake for 50 minutes, turning the tin around halfway through cooking. To test the cake, insert a small knife into the middle – if it comes out clean, the cake is cooked. 3. Turn out onto a wire rack and leave to cool for 10 minutes. 4. Lightly brush the cake all over with the warm jam. The jam creates a barrier, so the lemon glaze is not absorbed. Leave for 5 minutes.

5. Now mix the lemon zest and juice with the icing sugar in a small pan and warm over a low heat to 35°C, until smooth. If the glaze is any hotter, it will recrystallise, losing its shine and crispness. Brush the lemon glaze evenly over the top and sides of the cake and leave for a few minutes to set. 6.
